FROM THE Editors As we speak, Winter has finally arrived in the Hunter Valley. We can finally stoke the open fires and bunker in with our favourite Reds or possibly a sweet dessert treat (not that we needed an excuse). This month we look at Sangiovese – also known as the most “food-friendly” of wines. Or for a real winter warmer you should check out our recipe for Gl�hwein – guaranteed to put a tingle in your toes! Hunter Valley Gardens is fully into the winter spirit with “Snow Time in the Garden” - the second largest feature event for the Gardens (second only to the Christmas Lights Spectacular). Who needs to head south to enjoy a spot of tobogganing or outdoor ice-skating when you can enjoy it all right here! Get the kids off the couch and head out for some family fun. July is also the month for that unique Australian tradition— Christmas in July. Some our favourite restaurants will be hosting this traditional feast – with all the yuletide treats and traditions. You’ll need to book ahead at Ridgeview Restaurant, Esca Bimbadgen or Harvest as these yummy events generally sell out fast.

Speaking of delicious dinners, is there a better time of the year to top off a meal with a dessert tipple? From Muscat to Botrytis Semillon and everything in between, we look at our top picks for a cold winter night. To top it off we’ve teamed these treats with some delicious dessert recipes from Sabor in the Hunter Dessert Bar and Twine Restaurant. Sweet! This issue is the “Gardens” issue and it wouldn’t be complete without mentioning the Rose Pruning event which will continue throughout the second half of the month. With over 35,000 rose bushes to prune (can you imagine it - we struggle with our dozen bushes), Sean O’Brien could possibly be Australia’s most experienced Rose Pruner. We caught up with Sean to get some tips and we also find out his favourite rose variety. Enjoy (and stay warm!)

With 13 snow related activities on offer in the one place until July 12th, it is guaranteed fun for the whole family. In its fourth year, the snow spectacular gives children and adults alike the chance to enjoy all things winter, without having to travel to the snow. Whether you want to explore the new Giant Snow Globe, race down the real ice toboggan or frolic in the Snow Time Play Zone, this really is the perfect school holiday fun for everyone! Giant Snow Globe Daily 10am-3pm. Step into the Giant Snow Globe and enjoy the ‘snow’ without the chilly atmosphere! A new addition this year, the life-size snow globe can hold the entire family to get some great family happy snaps! Go Ice Skating Daily 9.30am-9pm. Kick off your Snow Time fun with a spin around a real ice skating rink, fitted with disco lights and music! Skating sessions will run for 20 minutes and can fit up to 200 skaters at any time. With sessions starting at 9.30am every day, and skating equipment provided, make sure you don’t miss out!

Snow Dogs On Show Every Saturday & Sunday from 10am – 2pm. Each week will feature a different breed of cold climate dogs on show, including Siberian Huskies, Darcalsbella Border Collies and Bernese Mountain dogs. This activity gives you the opportunity to interact and spend time with these rare and beautiful animals. Snow Ball Challenge Daily 10am – 9pm. Always wanted to know what a real snowball fight is like? Make sure you head to the Snow Ball Challenge zone. It’s set up similar to a game of volleyball and gives family members the chance to have a bit of friendly competition as they throw snowballs at each other over the net. Perfect for all ages. Ice Sculptures Every Saturday & Sunday 11am and 2pm. Come and watch international ice sculptor Kenji Ogawa as he uses a chainsaw to create large-scale sculptures out of ice. Do not miss out on seeing Kenji in action sculpting moose, penguins, bears and kangaroos live on stage! Real Ice Toboggan Daily 10am – 9pm. Have you got a need for speed? It promises to get the adrenaline pumping as you speed down the 25-metre toboggan track. This super fun ice slide has toboggans provided and is designed for both children and adults. The family fun doesn’t stop here! Other activities throughout the event include Snow Time Face Painting, Storybook Garden Jumping Castle, Roaming Entertainment, and a mechanical Snow Board. The Northern Hemisphere’s cold, snow blanketed Christmas season provides a great excuse to cook up a warm winter feast for family and friends and the opportunity to enjoy winter produce in true Christmas style. While we may not get snow in the Hunter Valley, Christmas in July celebrations allow us to get close to experiencing a Northern Hemisphere Christmas. Here in the Hunter Valley, July is our coldest month, with average temperatures between 5°c and 17°c, making Christmas in July dinners increasingly popular annual events. This year, on the 25th of July, RidgeView Restaurant is ensuring diners can embrace the frosty weather with a mid-winter festive feast. The Dinner includes four courses, as well as Executive Chef Donna Hollis’s selection of canapé’s to start, accompanied by a glass of RidgeView’s 2013 Traditional Cuvee to get everyone in the festive mood. The first course is a fresh prawn martini followed by confit garlic squid with a micro herb salad. The main event is the third course, a trio of roast meats including pork, lamb and beef served with roasted root vegetables and steamed vegetables with a rich stock jus and traditional condiments. The feast concludes with the renown Scott family traditional Christmas pudding with brandy custard and vanilla bean ice cream. The cost is $65pp or $85pp with matching RidgeView wines. Opened to the public in 2003 and spanning over 60 acres, the spectacular gardens amaze visitors year after year with its eight kilometres of walking paths, more than six thousand trees, one million ground covers, six hundred thousand shrubs and sensational sights, colours, and fragrances of a standard not found elsewhere in Australia. The creation of Hunter Valley Gardens was a lifelong dream of retired couple Bill and Imelda Roche, who established Nutrimetics International in Australia in 1968 before later acquiring the worldwide interests of Nutrimetics International in 1991. Together, Bill and Imelda wanted to create a garden that would be enjoyed by generations. Looking back, it is hard to believe that one couple’s dedication has resulted in what is now one of the largest privately owned gardens in the world, receiving in excess of 200,000 visitors a year. It took a talented crew of up to 50 gardeners almost 5 years to construct the gardens and the effort, measured in terms of blood, sweat and tears, was nothing short of extraordinary. Add to this the massive amount of materials used in its construction. Over 600,000 cubic metres of soil had to be moved and 300,000 cubic metres of soil brought – not to mention the thousands of trees, shrubs, ground covers, over 100km of irrigation and 8km of walking paths. The 10 stunning feature Gardens covering a total of 25 acres, allow visitors to ‘’take a trip around the world’ as they explore each new garden with an air of discovery at every turn - a true testament to nature’s beauty. A visit to Hunter Valley Gardens heightens the senses with a wonderful display of colour and fragrance. The Formal Garden is the largest of its type in Australia and influenced by the formal gardens of France and England. A lavish array of colour and perfume can be found in the magnificent Rose Garden, with more than eight thousand roses on display. The Oriental Garden features a two-story traditional pagoda surrounded by natural Australian granite and winding streams full of spectacular water lilies and irises, while a 10-metre waterfall plummets into the Sunken Garden.

On entering the Indian Mosaic Garden, visitors get to pass through 180 year old antique Indian Elephant Gates and bronze elephant statues as they wind their way through Syzgium Australe hedges to discover a superb mosaic of ground covering plants and pebbles. Visitors to the Garden also get to explore the Chinese Moongate Garden by entering through a traditional Moongate - guarded by two bronzed temple guardians to ward off evil spirits. For those wanting to experience a taste of the Mediterranean, there is an Italian Grotto Garden, which also features a statue of Saint Francis of Assis - the patron saint of animals and the environment. For many, a visit to the gardens is also an opportunity to re-visit childhood memories and step back in time with all the favourite fairytale characters spaced throughout the Storybook Garden. The Gardens, however, are only part of the completed works making up Hunter Valley Gardens - establishing it as a NSW Premier Tourist Attraction for 3 years in a row, eventually placing it in NSW Tourism Hall of Fame. The Shopping Village just adjacent to the Gardens is home to 23 boutique and speciality shops, restaurants and cafes. The grounds also include a wedding chapel, a children’s playground, extensive picnic facilities and a putt-putt and aqua golf driving range to keep the kids, big and small amused. Over the years, the concept of having annual events at Hunter Valley Gardens has seen a significant increase in the number of visitors flocking to the Hunter Valley - establishing it as more than just a wine destination. A few of the diverse range of events feature amongst the pages of this issue - such as Winter Rose Pruning and Hunter Valley Running Festival, which are all July Events. Of course there is also ‘’Snow Time in the Garden’’ - now in its third year and which will run for the first half of the month attracting families from all over NSW wanting to experience the joys of ice-skating, tobogganing and playing in snow. The Spring Festival of Flowers, October Rose Spectacular, Easter Egg Hunts and of course the annual Christmas Lights Spectacular top off an events calendar that provides the visitor with a unique and exciting experience each and every time they visit. RUN AND A RED… A WINNING RECIPE With recreational running events coming and going, this year’s Winery Running Festival, to be held on Saturday 25th and Sunday 26th July, has stood the test of time, as it celebrates its 10th anniversary. Now one of Australia’s biggest regional running events, this years Winery Running Festival is expected to attract more than 3000 participants and over 5000 spectators. With runners already entered from New Zealand, Hong Kong, Dubai, New York and all states in Australia, the formula seems to be working and will be quite a win for local tourism. Local Event Director, Paul Humphreys of H Events, puts the events success down to the interesting and picturesque course, which meanders through some of the region’s most famous vineyards and golf resorts. “We have a great host venue and with the start and finish lines just 100m apart, it makes spectating easy,” says Humphreys. With six running and walking events on offer, the festival caters for both novice and serious participants. Races on offer include 2km Kids Marathon, 5km Winery Wander, 10.3km Vineyard Run, Half Marathon, Winery Marathon and the Ultra Marathon. If you need a little more motivation, by participating in the running festival, you will also be raising money for Transplant Australia - the events offical charity partner. Transplant Australia is a national charity representing transplant recipients, donor families, living donors and all those touched by organ and tissue donation and transplantation.

STICKY DATE PUDDING 400g Pitted dates 150g self-raising flour 100g plain flour 3 eggs 140g caster sugar 100g butter (room temperature) 1.5 teaspoons bicarb soda 330ml of boiling water BUTTERSCOTCH SAUCE 250g thickened cream 80g unsalted butter 200g brown sugar 1 tsp vanilla extract METHOD

250g chocolate 190g butter 190g sugar 4tbs whisky 6 eggs - separated 190g almond meal METHOD 1. Preheat your oven to 160째C. 2. Melt chocolate, butter, sugar, and whisky together over low heat, once melted take off heat. 3. Whisk the egg yolks into the melted chocolate mixture. 4. Next mix in almond meal. 5. In a separate bowl, whisk whites until stiff then fold through the chocolate mixture.

1. Preheat your oven to 190째C.

6. Once well-combined pour mix into desired baking tray and bake for 30-45mins, depending on the size of tray you use.

2. Grease a deep 8 muffin pan and line the pan with baking paper (or use non-stick baking cups).

7. Serve with ice cream or with a raspberry compote and fresh cream.

3. Mash dates with the back of a fork then mix in the boiling water and bi-carb soda in a mixing bowl. 4. In a separate bowl put the caster sugar, and softened butter and beat till combined and creamy, individually add the eggs while beating between each one.

5. Fold in both flours as well as the date mixture until well combined. 6. Divide the mixture between the 8 muffin inserts then slightly tap the tray on the bench to smooth out the tops. 7. Bake for approx. 28-32 minutes or until the tops bounce back when you press down on them, then place aside. 8. Place the brown sugar, thickened cream, unsalted butter and vanilla extract in a saucepan over low to medium heat for approx. 7 minutes or until it's golden brown and smooth (to thicken leave over medium heat for an additional 3-5 minutes or until it starts to thicken up). 9. Remove puddings from moulds plate up and pour warm butterscotch sauce over. 10. Serve with a vanilla bean ice cream or dollop of whipped thickened cream.

Cellar Door During Winter, the most important job carried out in the vineyard is pruning, which aims to check excessive growth and provide enough fruit bearing shoots for the coming season. Pruning is done after leaf fall but before budburst when the vines are dormant and there is virtually no sugar transfer from shoots to roots. One of the reasons for pruning is that grape bunches only grow on new shoots and it is necessary to get rid of most of the old growth from the previous season. Don't forget to stop... AND PRUNE THE ROSES! Roses have a very long and colourful history. According to fossil evidence, roses are over 35 million years old. In that time, they have been used for various functions and have been symbols of love, beauty, even war and politics. During the Roman period, they were used as confetti at celebrations, for medicinal purposes, and as a source of perfume. In ancient Egypt, Roses were regarded as the most sacred of flowers and were used as offerings for the Goddess Isis. Today, roses are still considered one of the most popular flowers in the world and it is easy to understand their appeal. Apart from their fragrant blooms, they flower for up to six months of the year and are among the toughest and most forgiving of all plants. They will continue to flower even if you neglect them, but they do benefit with a good winter prune. Pruning roses is important because it encourages air circulation, helps to reduce disease and increases light exposure. The plant can then focus its attention and energy on producing beautiful blooms for next season. By visiting Hunter Valley Gardens between July 13th & 31st, visitors will learn that anybody can grow beautiful roses with the correct knowledge on planting, pruning and striking cuttings. Hunter Valley Gardens annual winter rose pruning entails pruning over 35,000 rose bushes in 186 different varieties. If you’ve ever wondered how it’s done then there no doubt that the person to ask is Sean O’Brien – Horticulture Manager at Hunter Valley Gardens. Over the past 11 years, Sean has handled the management of all horticultural aspects of his “office” – a 650-acre property, of which, 60 acres is made up of exquisite international display gardens. Sean and his colleagues will be presenting daily demonstrations during the Winter Rose Pruning, which will help you be sure you are caring for your roses correctly. We thought we would get in early and ask Sean, some pointers about caring for our roses.

What is the optimal month to cut back roses? Depending on where you live will determine this but in the Hunter the best time is July.

How far back should roses be pruned? Your common garden variety rose can be pruned back by up to two thirds, but it is more important to take the dead and diseased wood out rather than focusing on how far you cut them back. You should always prune back to an outward facing bud as well, which will determine the height of your canes.

Should climbing roses be pruned in the same way? Climbers are a little different and should only have a light prune during winter. The best time for a hard prune is straight after the main flowering time around January.

What is the best way to protect roses during winter? Roses don’t need any special protection through winter, but a spray with lime sulphur helps to keep fungal diseases at bay and should be applied before the new growth appears.

How long does the Winter Rose Pruning take? How many people does it take? We generally start in mid-June and it takes about six weeks with more than 15 staff taking on the challenge.

Do you have a favourite rose variety? Just Joey would be my personal favourite in terms of bush roses with its perfume.

Why do vineyards place roses at the end of rows of grape vines? This was used as a practical method to identify fungal diseases in the grapevines as the roses share similar diseases with grapes and would get the disease before the vines and this would indicate the time to spray. These days it is used more for show than anything.

Sangiovese - The Most Food Friendly Wine Sangiovese is the most planted red grape in Italy and is the most important grape variety used in the production of Tuscany's greatest red wines. Perhaps it's best-known role is in the Chianti red wines of Tuscany, but it is grown widely in other regions throughout Italy. Now this exciting Italian variety is becoming increasingly popular in Australia where the variety is known for being adaptable to many types of vineyard soils and has proved suitable for cultivation across many Australian wine regions. Although Sangiovese has been planted in Australian vineyards for the past few decades, it has only recently become a serious competitor to the classic powerhouse red varieties. With the quality steadily improving and Australians increasingly focusing on enjoying wine with food, Sangiovese has definitely found a permanent place in our wine scene. The variety produces elegant wines with powerful aromas and is notoriously high in tannin and acidity but lighter in fruit. The distinguishing flavours of Sangiovese range from cherries and red plums to herbs, spices and tea like flavours. The wines tend to be medium bodied, dry and usually quite savoury. The use of oak has become increasingly popular and used to draw the richer flavours from the grapes. While Italian styles tend to have more acid and tannin, the Australian Sangiovese wines tend to be a little more fruity, with riper flavours and higher alcohol. However, there is a trend for the styles to converge. Sangiovese is also a component in many of Tuscany's "Super Tuscans," where it is blended with various proportions of Cabernet Sauvignon, Cabernet Franc, Merlot, or Syrah. With its dryness and high acidity, Sangiovese is extremely food-friendly and the perfect accompaniment to Italian dishes, dishes containing tomatoes or acidic tomato sauces. It’s also well-matched for the flavours of chicken, grilled red meat, lamb, pork, pasta, stews or well-aged cheeses. Lighter styles of Sangiovese have proved to be useful red wines to pair with fish, especially when grilled or roasted.
