FROM THE EDITORS Nothing announces Christmas more in the Hunter Valley than the flick of one little switch at Hunter Valley Gardens! That one switch ignites millions of lights around the Gardens and signals to all of us that it’s time to dust off that Christmas Spirit and start thinking about the festive season. Of course Christmas Lights Spectacular is back bigger than better than even last year, and when they flick the switch on November 3, the kids will want to rush to their favourites – like Cinderella's Castle or the 12 Days of Christmas display set to music – truly magical. The lights will run until Australia Day – and Santa is in residence right up until Christmas Eve for photos and lists! Sculpture in the Vineyards has returned with a month-long celebration of art, wine and culture. This event is one of Australia’s longest-running regional sculpture events and showcases large-scale and site-specific works at various boutique wineries and gardens in Wollombi. The 2018 Concert Season has kicked off, and we’re all gearing up for another

bumper season of outdoor concerts featuring local and internationally renowned stars. Names like Paul Young, Go West, Stevie Nicks, Chrissie Hynde, LIVE, The Cat Empire and Xavier Rudd – just to name a few – will hit the stage throughout November. Nothing goes together like Seafood & Semillon and this month we’ve tasted and dined throughout the Hunter Valley (someone’s gotta do it!) to find our favourite Semillons to go with some of the best Seafood on offer in Wine Country. For the past three years renowned local chef, Matt Dillow has been introducing small groups of foodies and wine connoisseurs to the gastronomical delights of Tasmania, and in more recent times, the south island of New Zealand. Adam and Alexys Elbourne bought the property behind the Elfin Hill Motel in Marrowbone Road, Pokolbin, in 2009. Today their 22-hectare property contains 5 hectares of Chardonnay and Shiraz vines, from which they hand pick only the best fruit available in any given vintage to ensure quality is maintained from year to year. VINDEN ESTATE Vinden Estate might have been around for a few years, but James Halliday has just given them a 5-star rating and named them as one of Australia’s Ten Dark Horse Wineries for 2018. Vinden Estate Wines is a family-owned, boutique Hunter Valley winery in Pokolbin established in 1990 by Guy and Sandra Vinden and now run by their eldest son Angus. All their wines are handcrafted on-site from hand-picked grapes using the traditional methods of open fermentation, hand plunging and basket pressing, as well as incorporating the best of modern winemaking techniques. The Hunter Shines! The Hunter region held its own at this year’s Good Food Guide Awards with Muse Restaurant retaining its two hats, while Muse Kitchen gained one. Bistro Molines, Margan Restaurant and Newcastle restaurants Subo and Restaurant Mason also held on to their respective hats. Megan Rhoades-Brown, of Muse Restaurant, was a finalist in the Citi Service Excellence Award for restaurant service – proving that front-of-house service is just as important as a restaurant’s food when it comes to a good night out. And the awards just keep coming! For the second year running, Muse Restaurant has also been named Best Fine Dining Restaurant in Australia on TripAdvisor. Troy Rhoades-Brown was thrilled, thanking everyone involved for helping the Pokolbin based restaurant win this coveted award and also reach number 22 in this year’s TripAdvisor fine dining restaurant world rankings. Some familiar Hunter Valley names popped up at the 2017 Restaurant and Catering Awards for Excellence this month in the NSW regional restaurants category. Amongst the winners are Circa 1876 (Fine Dining); Locavore Dining at The Sebel Kirkton Park (New Restaurant) and Esca Bimbadgen (Restaurant in a Winery).

Now in its 15th year, Sculpture in the Vineyards is one of Australia’s longest-running regional sculpture events. The free exhibition showcases large-scale and site-specific sculptures through the vineyards, tree groves and gardens of the boutique vineyards in the Wollombi Valley and historic Wollombi Village. Alongside the outdoor event, this year will see indoor sculpture exhibitions at the Fireshed Gallery, Wollombi Cultural Centre and a curated exhibition of sculptural practices by Leesa Knights titled ‘Salvaged’ in partnership with Cessnock Regional Art Gallery. Experiment with a range of natural fibres and found materials, textures and aesthetics, combine objects using assemblage, random weave, wrapping, binding, stitching and shaping techniques. Using your hands and imagination, build loosely woven nests and free-form sculptures, as the bower bird builds its bower to lure a mate.

Winemakers Dinner The monthly Winemakers Dinner at Nanna Kerr's Kitchen has become a favourite on the Hunter Valley culinary calendar. Held on the first Saturday of every month, diners are invited to enjoy a fabulous five-course organic dinner prepared by the skilled team at Nanna Kerr’s Kitchen. Each course is perfectly matched with delicious wines and commentary from the Winemaker. Guests will also be given the opportunity to purchase the wines directly from the Winemaker on the night. This month’s Winemakers Dinner will be held on Saturday 4th November and will feature Tamburlaine Organic Wines and their Chief Winemaker Mark Davidson. It’s no secret that the Hunter Valley has earned the reputation of being one of the ultimate outdoor concert destinations in Australia. Each year thousands of music lovers are attracted to the area to see world famous bands and musicians that include Fleetwood Mac, Elton John, Neil Diamond, Rod Stewart, Bruce Springsteen, Dolly Parton, Cyndi Lauper, Simple Minds and the Rolling Stones, just to mention a few. This month, the Hunter Valley is preparing to experience one of the most diverse musical line-ups that the region has ever seen, ranging from the queen of rock n roll to some of the biggest acts of the 80’s, as well as Australia’s favourite country music stars.

Paul Young is best remembered for his unique singing voice that has quite a distinct tone. His hit singles including Love of the Common People, Wherever I Lay My Hat, Come Back and Stay, Everytime You Go Away and Everything Must Change, all reached the top 10 of the UK Singles Chart. Inducted into the ARIA Hall of Fame in 2009, John Paul Young is undoubtedly one of Australia’s most loved and iconic music acts. The Scottish-born singer/songwriter enjoyed worldwide chart success in the 1970’s with Love Is In The Air – still one of the most requested and loved songs in the Australian songbook. Pseudo Echo are best known for their synthesised pop songs that put Melbourne’s pop music scene on the map. Australia is living and eating in the Burger Age. Mass produced or artisanal, a healthy burger or a towering indulgence that can terrify your cardiologist, we just cannot get enough of burgers. They have managed to fight off the rise of the fitness and wellness trend, which has recently embedded itself in Australian culinary culture and have continued to increase in popularity. The Hamburger: A History. In it, he argues that the hamburger is an “irrepressible economic and cultural force”. Its history, Mr Ozersky writes, is “entwined” with the history of American business and consumerism. It is also hard to deny the distinct (and delicious) taste of Americanstyle burgers. They are overtly greasy, amazingly meaty and salty yet also sweet (thanks to mustard or relish and those brioche buns). But it isn’t just our infatuation with America that has prompted Australia’s love affair with burgers. For many years a burger was just something you got at McDonald’s or Hungry Jacks, where the price was low, the quality lacklustre but you knew what you were going to get. Diners are becoming more educated about nutrition than they were ten years ago and now want to eat healthier, but this hasn’t diminished their love of burgers. Instead, it has led consumers away from fast food chains, towards gourmet burgers joints like Grill’d, whose burgers contain fresh and unprocessed ingredients. With new gourmet burger restaurants opening every week and burgers continuing to pop up on menus around the country, it is safe to say Australia's burger consumption is not going to slow down any time soon. Izzy & Ow WORDS Michelle Meehan Danielle Walters’ mother spent years trying to get her daughter interested in learning to sew. But it wasn’t until she had grown up and had a family of her own that the Cessnock woman finally picked up the needle and thread to create something of her own. These days Danielle and her mother Leann work side-by-side selling their unique hair accessories and handbags at the Handmade in the Hunter markets under the banner of Izzy & Ow. “Growing up I had no interest in sewing, but my mum was always trying to teach me. Both my mum and grandmother are very talented ladies,” she said. “Mum and I started Izzy & Ow back in 2013, not long after I’d had my youngest daughter. “I was making hair accessories for my two daughters and mum had designed her own bag to place into Marthaville House, as she volunteers there with my grandmother along with some other local artisans. “I had commented to her that I thought they would sell well in a market environment and from there it all snowballed! “We started out at the Maitland Markets, until Karen Rowe from Handmade in the Hunter noticed our products and invited us to be a part of her market family, we haven’t looked back since. “Izzy & Ow joined the Handmade in the Hunter market family in 2014, we now only attend this market as we find it to be the best environment!” The accessories label was named after Danielle’s youngest daughter Isabelle and her eldest niece Willow, and includes a range of handcrafted hair accessories for all ages, unique handbags and messenger style bags, cute kids’ bags and custom enviro bags. Danielle said while it was hard to pick a favourite, she particularly loves their Kiara collection bags, which are named after her eldest daughter. She said she and her mother have been working on a few alterations to the range and were always looking for inspiration for new products. You can check out more Izzy & Ow creations at their stall at this month’s Handmade in the Hunter markets, which will be held at Kevin Sobels Wines from 9am to 3pm on November 4, 11, 18 and 25.

WHERE THE OCEAN MEETS THE VINES

Semillon & Seafood

While seafood is a meal to be enjoyed all year around - Spring is the perfect season to enjoy this bounty of the ocean with the warmer evenings inviting us to spend more time dining outside. Good-quality seafood, whether bought or caught, deserves a bit of effort where the matching of wines is concerned. As a general rule, the more delicately flavoured the fish dish is, the more subtle the wine should be. Pairing wine with seafood isn't a difficult task. When thinking in terms of weight and substance, delicate raw fish and light shellfish go best with equally delicate, light white wines. Similarly, a piece of grilled swordfish or salmon will go better with a richer, more substantial white. At the end of the day it is the type of seafood that will determine the best match for the wine glass. Semillon is the Hunter's classic white variety and is typified by a bouquet of lemon zest and is the perfect match for a wide selection of fresh seafood. As a cellaring wine, it is one of the greatest whites in the world, and can live for a good 20 years, often much longer, mellowing from a fresh, tangy, fruity, pale-coloured white wine into a deeper-coloured, softer, richer, fuller (but never full-bodied) wine. A young zesty Hunter Valley Semillon is wonderful with delicately flavoured seafood dishes such as raw and lightly cooked shellfish - especially those with Asian flavours, oysters, fresh crab, clams and sashimi. When aged at 10 or so years, it becomes a rich and more complex wine that is wonderful with fully flavoured dishes, such as smoked trout or salmon and grilled fish or lobster with burnt butter.

Grilled Salmon on Chorizo and Mozzarella Croquetta with Salsa Verde Ingredients: Salmon 4 x 240 grams, 4 medium sized desiree potatoes, 2 chorizos, 1 cup mozzarella, 1 tablespoon smoked or Spanish paprika, 1 bunch parsley, 2 eggs, 2 cups plain flour, 3 cups panko crumbs, 1/2 bunch mint, 1 bunch basil, 1 cup capers, 5 cloves garlic, 300 mls olive oil, 80 mls lemon juice, 1 tablespoon dijion mustard, 1/4 cup red wine vinegar. Salmon For the salmon heat a pan or bbq flat plate until hot. Add a good sprinkle of salt and a good splash of oil and place the salmon skin side down, leave this on the heat until the skin is brown and crispy then turn and cook until your liking. Chorizo and mozzarella croquetta Boil and mash all the desiree potatoes and set aside. Dice chorizos and sautee in frying pan, once cooked add to the mash with mozzarella, paprika, 1/2 bunch chopped parsley and season with salt and pepper. Mix well and roll into around 100 gram size squares and let cool then flour, egg wash and breadcrumb. These croquettas will last 5 days in the fridge and you can make them to canape sizes too if you wish...great for parties, medium size great for tapas style sharing plates or bigger size for a main dish as we are using for this dish.

All Tintilla Estate wines are 100% Estate made with this Semillon grown in creek bed soil, along a tributary of the Rothbury Creek. The grapes were handpicked in early harvest, destemmed and pressed with minimal skin contact to avoid bitterness and only the free run juice is used. TASTING Pale straw in colour, this wine has a crisp clean flavour with a lovely balance of lime/lemongrass and typical tight vibrant fruit flavours and textures. SEAFOOD MATCH Wonderful with grilled barramundi and ocean trout, lobster, oysters, barbecued prawns and sushi.

MOUNT VIEW ESTATE Reserve 2017 Semillon The fabulous 2017 vintage was near ideal - producing ripe grapes with great flavoured varietal character, albeit reduced yields. This wine is made entirely from Semillon grapes grown on the Mount View Estate vineyard "flat" block, which is located at the lowest and most southerly section of the vineyard, and is characterised by sandy loam soils. The grapes were handpicked in the cool of the morning, fermented cold and matured on yeast lees for 4 months to build palate weight. TASTING This wine has vibrant lemon, lime and sherbet flavours culminating in a cleansing, citrus and zest finish. SEAFOOD MATCH Ideal with seared fillet of kingfish, oysters, blue swimmer crab, baked clams.

“We always say we come as strangers and we leave as friends.” Matt and Andy’s next “Tastebud Adventure Tour” is set to take them to Tasmania in April next year, with an itinerary that includes cooking classes, a salmon farm tour, wine tasting, cider tasting, hands-on cheese making and more. The tour will explore Hobart and surrounding areas, with the highlights of the trip according to Matt including the salmon farms of the Huon Valley and Willie Smith’s apple cider orchard. “There’s two favourite places in Tasmania, going to Huon salmon, in Huonville, some of the best salmon in Australia is grown in Huonville in Tassie,” he said. “It’s so sustainable, they’ve got very good measures in places with the way they farm, which is very nice to see and get an understanding of that. “The other place that I absolutely love is Willie Smith’s organic apple cider, it’s pretty cool to hear his story, he’s a fifth generation apple farmer. He’s one of the biggest organic apple suppliers to Woolworths and he’s in the apple cider market - he’s got an amazing organic apple cider and he does a few different styles. “We actually go to his apple shed, we go on a farm tour, we go through the cider factory, we have an apple cider tasting and we have an apple-inspired dessert, which is pretty amazing.” Matt and Andy will head to New Zealand with another group in July, taking in the amazing food, wine, produce and scenery at the top of the south island around Nelson. While a cooking class, wine, cheese and beer tastings, and a spot of salmon fishing are all on the menu during this trip, Matt said the highlight of this tour actually has nothing to do with food.

"In New Zealand we do something a little bit different on one of the days, we jump on a helicopter and we fly just under an hour to the Marlborough region, where we do a cliff landing" he said. “We land on a mountain, on a cliff around 3200m high, and take some photos on top of this unique mountain, which is pretty much untouched because it’s hard to get there. “Then we fly over all the mussel farms and land on a winery and have a beautiful lunch. It’s pretty amazing.” Having spent several years travelling to his current locations, Matt said he is looking at potentially adding a few new destinations to the list in 2018, including Launceston in Tasmania and the famed winemaking region around the Barossa Valley in South Australia. Of course he’ll have to squeeze these in to an already hectic schedule, which also includes running his Hunter restaurant and accompanying his long-time friend, renowned Sydney chef Tony Carter, on two food tours to Tuscany in Italy. Tony has been running these international experiences through his business Culinary Interludes for around eight years, with Matt jumping on board to help run the cooking classes during the tour for the past three years. Matt said these trips formed the inspiration behind his own food and wine tours, with all of them providing the hard-working chef with “a bit of fun to get me outside of the square and keep me interested in what I do”. Matt and Andy’s Tastebud Adventure Tour to Southern Tasmania will depart April 16, 2018, while their trip to the South Island of New Zealand leaves July 23, 2018. When is a glass,

Just a glass? On a recent visit to my favourite gift gallery - The Wine Glass Gallery at Hunter Valley Gardens Shopping Village, I was taken aback by the overwhelming selection of wine glasses that filled the shelves. So many shapes and sizes, some with and some without stems. There are many reasons why wine glasses come in different shapes and it is important to understand the characteristics of some basic wine types and the way we taste. Apparently, wines have needs too, and all good wine glasses are shaped in a way that will direct the wine to that part of the mouth where its flavour can be most appreciated. Therefore, for those who wish to expand their enjoyment and appreciation of wine, the choice of a wine glass can become a little more intricate with specific types of glasses to match certain wines. Although they come in many shapes and sizes, there are four basic types of wine glasses; red, white, sparkling and dessert. Every wine glass will have a slightly different shape, depending on the type of wine that particular glass is to be used for, but it is the bowl of the glass that serves the most important purpose, and it is here you will find most of the variation in wine glasses. In all types of wine glasses, both red and white, the bowl must be large enough to swirl your wine, opening it up to more air and allowing its aromas to be released.

Sparkling wine glasses (or flutes) are tall and thin, and because sparkling wines are carbonated, the flutes are designed to encourage carbonated bubbles to remain active in the glass. If sparkling wine is served in a shorter, fatter wine glass, it is exposed to air more quickly, causing the sparkling wine to go flat. And where would the fun be then? White wine glasses are tulip shaped and are typically medium in size, ranging from eight to fourteen ounces. The bowl of this glass is more U-shaped and upright with the rim tapered inward to a slightly narrower opening directing the white wine's aroma to the nose, greatly enhancing the wine's flavour for the drinker. With white wines, there is a choice of two types of wine glasses, one for younger, crisp whites and one for more mature, fuller wines. The wine glass for younger white wines has a slightly larger opening directing the wine to the tip and sides of the tongue to taste its sweetness, while the glass for more mature white wines is straighter and taller - directing the wine to the back and sides of the tongue where the bolder flavours can be tasted. Red wine glasses, on the other hand, are slightly larger than white wine glasses and hold up to sixteen ounces. The reason for this is that the complex aromas and flavours of red wine require a glass with a larger surface area to allow the wine to come into contact with more air. As a result, the bowl of red wine glasses tends to be rounder with a larger opening to allow the drinker to easily dip their nose into the glass to detect the aroma. For red wines, the choice is between a Bordeaux or Burgundy glass. Bordeaux glasses are taller than a Burgundy glass, but the bowl is not quite as large. They are designed for heavier and fuller bodied red wines such as Cabernet and Merlot. The tallness of the Bordeaux glass allows the wine to proceed directly to the back of the mouth to maximise its flavour for the drinker.

The Burgundy glass was designed for lighter, more delicate wines such as Pinot Noir. It is not as tall, but the bowl is larger than the Bordeaux glass, directing the wine to the tip of the tongue where its more delicate flavours can be tasted. A dessert wine glass should be smaller to more easily direct the wine to the back of the mouth - where it is less overpowering. Dessert wines have a higher alcohol content, making the small glass perfect for a smaller serving. These basic “rules” relating to wine glass selection are not necessarily universal. For instance, when travelling through Italy or France, you may see wine being served traditionally, in small, simple water glasses - with no concern of shape, size or type of stem and the wine still tastes great. I suppose this would be one of those moments when a glass is just truly a glass….

Vineyard... What's Happening in the Vineyards at This Time of Year? WORDS Quentin von Essen

The annual growth cycle of the grape (and grapevine) in the vineyard commence each year with budburst taking place in Spring and culminating in leaf fall in Autumn followed by Winter dormancy. From a winemakers perspective each step in the process plays a critical role in the development of the grape which is the responsibility of the viticulturalist and vineyard manager. These responsibilities include monitoring and controlling pests and diseases, fertilising, irrigation, canopy management, monitoring of fruit development, deciding when to harvest and pruning post harvest. Viticulturists are therefore intimately involved with winemakers as vineyard management and the resulting grape characteristics provide the basis from which winemaking can begin. With Budburst (September) and a period of rapid shoot growth behind us (October) the grapevine enters the stage known as ''flowering'' which typically takes place in November when flower clusters start to bloom and seed formation begins. This process of ''flowering'' takes place when average daily temperatures stay between

15–20 ° with small flower clusters appearing on the tips of the young shoots. After a while the flowers start to grow in size with individual flowers then becoming evident. Pollination and fertilisation of the grapevine now takes place resulting in a grape berry, containing up to 4 seeds. This is also a time of ''fruit set'', when the berries start to develop on the vines. Come December - the start of Summer and bunches of grapes are now very obvious on the vine although green and hard with very little sugar and high in organic acids. The viticulturists and vineyard managers are predominantly concerned with vine and fruit protection - protecting the grapes from birds and insects. This is the period when véraison, or berry coloration and softening, typically begins and the grower starts to estimate the total amount of fruit for the current vintage.

Come Waltzing with Matilda... The winemaker then uses this information to calculate how much tank and barrel space will be needed once the grapes are harvested. In January the grapes are filling out as they ripen and develop full colour. Sugars are gradually building and viticulturists start to taste and monitor the grapes for sugar content and acid level in preparation for harvest. This is time when harvest and crush equipment is tested for problems and pickers employed. New barrels are soaked in preparation for the new harvest. The period January to February is when harvesting of the fruit typically occurs with the winemaker and vineyard manager working closely to determine the optimum time to pick the fruit to ensure the best wine quality. Here in the Hunter Valley because of our warmer conditions, vintage can commence very early in January with Semillon being the first variety to be picked - being low alcohol (between 10.5% and 11.5% alcohol). Harvesting may continue into March for late picked wine varieties and depending on the temperatures and how the vintage year developed over the summer period.
