As major sponsors of the event, Emmas Cottage Vineyard has been awarded the rights to exhibit 50 of these amazing photographs throughout October at their vineyard gallery in Lovedale. David Oliver was one of the few photographers in the world to be invited back to Rwanda for the 10 year anniversary of the horrific genocide carried out in that country. The photos taken by David are amazing and confronting. History is recorded through photography, we have all seen photos depicting breathtaking scenery, stunning wildlife and awardwinning photos and People and Places shows many of these.

The award-winning Horticultural Manager at Hunter Valley Gardens, Sean O’Brien says, “This time of the year is one of our favourites as visitors take in the colour and fragrances of our Rose Garden. Watching their delighted faces, excited by the sensational sights, colours and fragrances makes our work throughout the year so worthwhile. This is definitely the best time to see the roses at their peak.” During the Rose Spectacular, garden enthusiasts and those who enjoy nature will be able to experience activities and interactive presentations about the history of roses and how to successfully plant and grow your very own. Visitors will also be able to take part in a programme of daily demonstrations and talks by the highly knowledgeable and qualified horticultural team at Hunter Valley Gardens. “This incredible experience shows visitors that anyone can grow a beautiful rose garden with the correct knowledge. Tips on planting, treating pests and diseases, how to use fertilisers and pruning methods will all be addressed to show that roses are actually easier to grow than many other flowers. All you need to do is follow a few simple rules,” says Mr O’Brien. For further information about the Rose Spectacular, visit www.hvg.com.au
DID YOU KNOW? • Roses can live a very long time. The oldest recorded rose bush covers the wall of the Cathedral of Hildesheim in Germany, and has done so for over 1000 years. • The first rose in space - In 2002, the miniature rose named Overnight Scentsation had a trip to space to help in studies about the effects of low gravity on the roses scent, and to learn how to improve fragrances used in consumer products.

• Roses are a good source of vitamin C - they can be added to salads, used in desserts and cakes, made into jam, jellies and marmalade, and rose syrup can be used to make marshmellows and flavoured ice cream.

Up, Up and Away!
2016 BALLOON FIESTA There is no better way to experience the true beauty of the Hunter Valley, than up in the air with the 360 degree views that hot air balloons offer. Balloon Aloft will once again host its annual Hunter Valley Balloon Fiesta and organisers are expecting this year’s event to be the biggest yet. Over thirty hot air balloonists from around the country will take to the skies in a beautiful display of colour on the weekend of the 22nd and 23rd October. Joining them will be local pilot and two time Women’s World Hot Air Ballooning Champion Nicola Scaife. Nicola, who is married to event organiser and Australian National Ballooning Champion Matthew Scaife of Balloon Aloft, said the company was staging the event for the sixth time. “Prior to our first fiesta, an event such as this had never been staged before over the Hunter Valley. It really is a breathtaking experience to be on board one of the many balloons as they float together at dawn over the vineyards. We are looking forward to the opportunity to do it all again,” she said. With beautiful weather conditions usually experienced in the Hunter Valley during springtime, those taking part in this year’s event will no doubt take in some spectacular and memorable views.
There's no better way to spend an early morning!
Balloon Aloft is hoping to have close to 200 ballooning enthusiasts take part as passengers on board one of the 30 balloons flying in the fiesta. There are limited flight vouchers available, so if you are interested in taking part, you are encouraged to book as soon as possible as last year’s event sold out in the weeks prior to the event. Traditionally, each time a hot air balloon lands, champagne is shared. It is said that this indulgent tradition dates back to the 1700’s in France, when local farmers believed that hot air balloons that were landing in their fields may have been dragons or demons descending from the skies. To soothe the farmers’ fears and make peace, the hot air balloon pilots would share a bottle of champagne with the farmers whose land they have disturbed, and a tradition was born! The tradition will continue when the Balloon Fiesta celebrations continue after the flights at Peterson House with a gourmet breakfast and Champagne tasting. “There will be live music and a real party atmosphere,” said Nicola. Whether flying or just wanting the chance to view the fiesta from the ground, passengers and spectators will have an early start, meeting at Peterson House at around 5am. For more information or to purchase a flight voucher, call 4990 9242 or visit www.balloonaloft.com.

ROCK SYMPHONY in the Vines
Widely regarded as one of the most influential writers in pop music, David Bowie shaped a generation of music lovers with his creativity, extravagance and a vision well ahead of his time. So it seems fitting that the inaugural Rock Symphony in the Vines at Hope Estate on Saturday 15th October pays homage to one of the world’s greatest and most important artists of all time, in full symphonic sound.

It takes a unique and extroverted performer to do justice to the music and image of David Bowie. Jeff Duff, Steve Balbi and Brydon Stace are some of Australia’s most captivating performers and have just concluded their award-winning and highly successful show, Ziggy – Songs of David Bowie. The shows sold out across the country and received rave reviews, so there are arguably few more qualified to take audiences on the musical journey to explore the creative genius of Bowie’s songs. Expect to hear all of his greatest hits including Changes, Let’s Dance, Space Oddity, Life on Mars, Heroes, Starman, Suffragette City, Golden Year’s and many more. Adding another exciting element to Rock Symphony in the Vines, is world renowned conductor George Ellis as he leads the charge with the Australian Symphony Orchestra. George is one of today’s most talented Australian conductors, composers and orchestrators. Excited for the upcoming show, George said; “the Thin White Duke’s music lends itself beautifully to the array of colours of the orchestra. Rich textures and harmonies weave in and out of his songs making them perfect to decorate and embellish with lush symphonic sounds.” Hope Estate is the ideal setting for this spectacular evening under the stars, with owner Michael Hope saying; “having had Sting and the Sydney Symphony Orchestra on our grounds 3 years ago, we see it as a natural progression to present David Bowie’s music with the Australian Symphony Orchestra – it’s the perfect fit for Hope Estate and Hunter Valley Wine Country. The combination of rock and symphony is a match made in heaven – in the vines and under the stars.” For more information or to purchase tickets, visit www.hopeestate.com.au

Flying the Rainbow Flag With marriage equality a hotly debated topic in government and in the media currently, there has never been a better time for people from Newcastle, the Hunter and further afield to join lesbian, gay, bisexual, transsexual and intersex communities and celebrate everything the Hunter Valley region has to offer. From Thursday 20th to Monday 24th October, rainbow flags will be flying throughout Wine Country for the inaugural Pokolbin Pride Festival. The festival is the brainchild of Matthew (Matty) Kerr, brother to supermodel and business woman Miranda Kerr. Matty and his fiancé, Jimmy Wright, a former Board Member of Sydney’s Gay and Lesbian Mardi Gras, moved to the Hunter Valley in June 2015 having quit corporate careers in Sydney to open their organic restaurant Nanna Kerr’s Kitchen. In May this year, while reflecting on their accomplishments over the past twelve months, both Matty and Jimmy realised that they had been so busy that they had neglected cultivating new friendships in their new home. It was around the time of the hugely popular Lovedale Long Lunch, when it occurred to Matty that there should be a similar type of event for the LGBTI community. The Facebook page ‘Pokolbin Pride’ was then created to get an idea of the type of support this kind of event would attract, and to Matty and Jimmy’s surprise the page gained about 400 followers overnight. After 10 days, the page had notched up 3100 followers, all voicing their excitement that someone was creating a gay and lesbian festival in the Hunter Valley. After extensive community and business consultation, the first Pokolbin Pride Festival was born. The Festival will include a smorgasbord of events across five-days and is open to everyone. Over the five days there are a number of free family friendly events open to everyone that are open every day, including an art exhibition at Tamburlaine Organic Wines, markets at Drayton’s Family Wines and picnic spaces at Eagles Rest, Tinkler’s and Moorebank Vineyards. The festival also features comedy wine tasting, degustation dinners, bubbly lunches, a drag queen and king volleyball match, and cocktail parties across the 15 plus Pride partner businesses throughout the Hunter Valley. TYRRELL’S WINES 2013 Vat 47 Chardonnay Winner of Trophy for Best Two Year Old and Older Chardonnay and Trophy for Best Chardonnay Vat 47 Chardonnay only ever comes from the best and oldest Chardonnay blocks and the fruit handpicked, basket-pressed and matured for eight months in high quality, tight grain French oak barriques. This is a great example of Hunter Chardonnay with its backbone of tight acidity and citrus, an amazing length of flavour and fantastic mouth feel, with strong secondary characters derived from the slight solids ferment. Drinking beautifully to 2023. Food Match Perfect with lobster with a butter and garlic sauce, fresh seafood such as ocean trout and salmon, and richer foods such as chicken and mushroom casserole.
2007 Vat 8 Shiraz Cabernet Winner of Trophy for Best Museum Red Wine
The Hunter Valley
Wine Show
TROPHY WINNERS
As one of the first wine shows in Australia, the Hunter Valley Wine Show has been held continuously since 1974 and is considered one of the leading wine shows in Australia – attracting the highest calibre of Australian and international judges. The 158-year-old Tyrrell’s family wine company dominated the prize list, winning 17 of the 59 gold medals and 10 of the 24 trophies. The Tyrrell’s 2005, 2013 and 2016 Belford Semillon whites won the Iain Riggs Wine of Provenance award, which is designed to recognise and celebrate wines of exceptional origin, reflecting consistency of style and quality over time. Other awards worth mentioning are Silkman Wines for Best Shiraz and Best Two-Year-Old Shiraz for their 2014 Reserve Shiraz, and little known producer Dimbulla Estate who took out Best Red Wine of the Show and Best Other Red Trophy for their 2014 Tempranillo Shiraz.
thb 14 | OCTOBER 2016
Other trophy-winning wines were the Tempus Two 2016 Copper Rosé Shiraz and Margan Family Wines 2011 Breaking Ground Ripasso Shiraz. One of the unique aspects of the Hunter Valley Wine Show is the ‘‘named’’ class of judging, where an exhibitor produces wine from a specific piece of land that the winemaker considers to have an intrinsic quality. In this category, the trophy for Best Named Vineyard White Wine went to Meerea Park for their exceptional 2009 Alexander Munro Semillon, and trophies for Best Named Vineyard Red Wine and Best Named Vineyard Wine went to Lucy’s Run for their 2014 Shiraz. Much like previous year’s awards, this year’s results reaffirmed Hunter Valley Semillon as one of the most cellar-worthy white wine styles on the planet and Hunter Valley Shiraz as being Australia’s finest example of medium-bodied Shiraz.
A more modern style of Hunter Shiraz, Vat 8 is a bigger wine than other Shiraz in the Tyrrell’s stable. The small oak influence is apparent with chocolate and vanillin aromas. On the palate the wine shows intense fruit sweetness and the darker fruits and chocolate characters associated with the Brokenback and Weinkeller vineyards. Food Match A wonderful accompaniment to any meat dish.
2009 Vat 1 Semillon Winner of Trophy for Best White Wine of the Show; Trophy for Best Semillon and Trophy for Best Mature Two Year Old and Older Semillon A superb and special wine from two amazing blocks, the 2009 is fuller and softer in style than the 2008, with an abundance of powerful citrus fruit flavours. The palate is impeccably balanced with its strong citrus characters and a crisp acid structure which leaves the wine with a clean finish. Food Match A delight on its own or perfectly matched to any seafood dish.
Hungerford Hill 2016 Classic Hunter Valley Verdelho Winner of Trophy for Best Verdelho A wonderful example of Hunter Valley Verdelho where flavour ripeness is achieved and expressed early in the growing season, allowing a fuller flavoured aromatic white wine. This wine is a brilliant youthful green in colour with a pungent aroma of spicy citrus, musk stick and hints of lavender, whilst the palate is constant and complemented with hints of lemon and passionfruit with a subtle linear acid structure. Drink now or age for 3 years. Food Match Ideal for summer or lunchtime meals - pairing well with seafood, lighter meats such as veal, pork, or chicken and hard cheeses.
Meerea Park 2009 Alexander Munro Semillon Winner of Trophy for Best Named Vineyard White Wine
Lucy’s Run 2014 Shiraz Winner of Trophy for Best Named Vineyard Red and Trophy for Best Named Vineyard Wine A small boutique owner operated winery, producing consistent medal-winning wines from around 2006 to current and providing fun and informative wine tasting in a wonderfully relaxed setting. This 2014 Shiraz is deep cherry red in colour, with complex aromas of plums, aniseed, spice and flint. The palate is medium-bodied with blackberry fruit flavours and an interesting note of menthol, and finishes with soft and drying tannins. Drink now to 2030. Food Match A wonderful accompaniment to any meat dish or Sunday roast.
Drayton Family Wines Heritage Vines Liqueur Verdelho Winner of Trophy for Best Fortified Wines From one of the Hunter Valley’s pioneering winemaking families, this Liqueur Verdelho is tawny in colour with an aged green tinge. The primary aromas are of coffee, chocolate and toffee with citrus peel offering great intensity. There are great textures and layers of spice rancio and citrus acid – all complementing the aged spirit warmth at the finish. Food Match A wine to be savoured on its own or with a cheese selection.
The ‘Alexander Munro’ Semillon is Meerea Park's flagship Semillon - made from their best ‘individual vineyard’ parcel of Semillon fruit each year. The wine was bottled under screwcap in July 2009 and was cellared for 5 years prior to release in April 2014. A delicious Semillon of the highest quality. Pale strawgreen in colour this exceptional wine is bright, fresh, youthful and lively. It possesses captivating lemon curd aromas and the beginnings of bottleaged straw and toast flavours, leading to an ultra-long palate. Although drinking well now, this wine has all the hallmarks that are required for further medium to long term cellaring. Food Match Pan-fried fish.
Peter Drayton 2015 Semillon Winner of Trophy for Best One Year Old Dry Semillon This is a classic Hunter Valley Semillon with intense flavours and perfectly balanced natural acidity. A vibrant pale to medium straw colour leads to fresh lemon and lime citrus aromas. Fine and delicate lemon fruit flavours combine with a flinty minerality to provide a fruit driven flavoursome wine with a beautifully crisp and dry finish. Appealing on release, and has sufficient structure for 6-8 years of careful cellaring. Food Match Fresh seafood such as prawns, oysters, shellfish and light white fish.

Taking it Outside
Dining Al Fresco
BY QUENTIN VON ESSEN
“Show me how people dine and I’ll tell you their rank among civilised beings,” said Charles Darwin.
“Let’s face it, if I was in Tuscany, I wouldn’t want to be sitting inside four walls; I would want to be outside, enjoying the views”, he says.
With its roots deep in the fertile soils of Italy, al fresco literally means “in the cool air” in Italian.
Matt is, of course, not the only restaurateur in the Hunter making the most of the appeal of eating outdoors.
For me, “al fresco” is a phrase that creates an inner smile – conjuring up images of a setting somewhere in the hills of Tuscany, with rustic tables groaning under the weight of a feast of cheese and breads, local wines and olive-oil drizzled dishes.
Located on one of the most beautiful properties in the Hunter Valley, and also tapping into the European roots of the al fresco experience, is RidgeView Restaurant. Their renowned Cypriot Meze menu provides the ultimate al fresco experience – a sumptuous banquet designed to be enjoyed over several hours whilst taking in the wonderful views and has diners coming back for more.
Eating “al fresco” has been a traditional form of dining in European countries for centuries – particularly in the warmer summer months. The practice slowly made its way to America and other parts of the world, when rooftops and side-walk cafes began to appear in the mid-20th century. Today, it is a style of dining enjoyed all over the world, with most restaurants and cafes in temperate climates such as Australia, offering outdoor dining options. Al fresco dining is simply “eating outdoors” and is a style of dining that is casual and often party-like in its atmosphere. It adds a lively and enjoyable dimension to dining and gets you outside into the fresh, open air, encouraging a good appetite and an appreciation for the slower pace of life. The beauty of al fresco dining is, of course, that it provides a feast for the senses and the opportunity for diners to take in the beauty of their surroundings. It’s therefore little wonder that in the picture perfect setting of the Hunter Valley, with its seemingly endless vineyard vistas that al fresco dining has established such a strong following. You would have to travel far to find a more ideal setting. With Spring temperatures in this region sitting in the early 20’s, now is the perfect time to soak up the sun, or revel in the balmy night air, at one of the many al fresco options spread throughout the Hunter Valley. Here are a few local favourites for you to try:
Similarly, the tempting flavours of the sun-drenched Mediterranean regions have also infused the rustic fare on offer at the popular and centrally located The Cellar Restaurant. With its quaint outdoor dining area seating up to 40 people, it is just perfect for the warmer months and a long lazy lunch. Another local favourite dining venue is Epicure Café at the Small Winemaker Centre in Pokolbin. Owned and operated by Norma and Andreas Burri, and with views over a picturesque dam, Epicure Café is the perfect place to relax and enjoy a delicious breakfast, a cup of coffee, or an informal lunch after a morning of wine tasting. The coffee is out of this world and they keep it local by using beans from Newcastle roasters - Peaberry’s. A restaurant that has long attracted a regular crowd and another favourite amongst locals and visitors alike is Oishii Japanese and Thai Restaurant located at Roche Estate, where diners can choose to sit outside under the covered terrace overlooking the vines and architecturally designed amphitheatre.
A regular visitor to the tapas dens of Spain and Italy, local restaurant owner Matt Dillow clearly understands the appeal of dining outdoors, making al fresco dining options a key feature at his restaurants – The Deck Café at Gartelmann Wines and The Verandah Restaurant at Calais Estate.
Clearly we are spoilt for choice when it comes restaurants in the Hunter Valley, but when it comes to dining al fresco and also finding a great spot to enjoy a leisurely breakfast, Restaurant Cuvee at Peterson House is up there with the best. The epitome of casual elegance and with its large outdoor deck overlooking the vineyards and cottage gardens, Restaurant Cuvee is an excellent option when it comes to enjoying a quick bite between vineyard tastings or sitting back and enjoy catching up with friends over a long lunch.
Each venue is superbly designed to allow diners to make the most of the exceptional views of the surrounding countryside and vineyards, while enjoying everything from delicious cafe-style food at The Deck Café to tempting tapas at The Verandah Restaurant.
Of course, the choice of great dining venues in the Hunter does not start and end here. With over 45 great restaurants and cafes to choose from, no matter where you are in the Hunter Valley, there is always somewhere to stop and soak up the sun as you indulge in the local fare.
“When people come to the Hunter, they want to experience and explore the area they have travelled to, they don’t want to sit inside,” says Matt.
Saluti e buon appetito !

Robert & Sally Molines of Bistro Molines
TOP CHEFS
AN APPETITE FOR
Excellence
Troy Rhoades-Brown of Muse Kitchen and Muse Restaurant
BY MICHELLE MEEHAN
The Hunter’s reputation as a wine region is among the best in the business – but there’s nothing hotter right now than what’s cooking in our kitchens.
After a brief sojourn in the French Bistro at the old cellar door at Beltree, they made the inspired decision in 2008 to start Bistro Molines – a one chef hat rated traditional French bistro located at Tallavera Grove Vineyard in Mount View.
The Hunter is home to some of the most creative and edgy restaurants making their presence felt on the regional culinary stage, with the muchcelebrated hatted trio of Muse Restaurant, Muse Kitchen and Bistro Molines leading the way.
It is here that Robert has truly been in his element, and it shows – he was inducted into the JK Walker Culinary Hall of Fame alongside other legendary Australian chefs and has received Sydney Morning Herald Good Food Guide chef’s hat awards each year since 2010.
Hot on their heels are a mix of new and established venues including Hunters Quarter, Circa 1876, RidgeView, The Cellar, The Verandah, Harvest and EXP. Restaurants – all of which are taking dining excitement to the next level.
But his enduring legacy must be the way he has nurtured a generation of the Hunter’s top chefs, including Lesley Taylor (Robert’s first apprentice) and Troy Rhoades-Brown.
There really is no other wine region in Australia with such a large number of quality restaurants – a fact that has been embraced by Australian and international visitors alike. So to help you understand why the Hunter has become one of the nation’s most exciting culinary destinations – not only to visit, but also to work in as well – The Hunter Blackboard has taken a peek behind the kitchen doors to learn more about the Head Chefs orchestrating this culinary charge.
Troy is the perfect example of the top class chefs currently creating gastronomical delights in the Hunter. After taking out the title of Young Restaurateur of the Year 2014 at the Appetite for Excellence Awards, he was named the Next Gen Chef in Delicious Magazine’s 10th annual Produce Awards in 2015, cementing his status as one of the nation’s most exciting culinary talents. Troy began his cooking career at the age of 16, working for a small familyowned Italian restaurant, Pascalles, in Newcastle before moving to the Hunter Valley to work for Robert Molines at Robert’s Restaurant.
One of the most respected names in Australia’s food scene is In 2005 Troy was awarded the Brett Graham Scholarship, a highly coveted undoubtedly Robert Molines. Valley Gardens, where he was also involved with the kitchen set-up for Harrigan’s Irish Pub. He and his wife Janet became part owners of The Cellar Restaurant in 2002, before taking control completely in 2005. Another chef adding his European heritage to the international mix in the Hunter is Harvest Restaurant’s Executive Chef Mert Tansu. Born in Ankara, Turkey, Mert’s passion for cooking began in his grandmother’s kitchen where he learnt at a very young age to appreciate the value of fresh ingredients. As his passion for food and wine grew, he spread his wings to join the culinary team at Chateau Elan Winery and Resort in Georgia, USA. Working under award-winning chefs, Mert’s skills flourished as he progressed through the seven restaurants and premier catering services at the world-renowned resort, before moving on in 2007 to work at some of Atlanta’s elite kitchens, including the Four Seasons and Villa Christina.
Donna Hollis of RidgeView Restaurant
In 2010, he left behind his role as Executive Chef with the prestigious City Club of Buckhead to re-join the Chateau Elan family in the Hunter Valley, before taking up his current position at Harvest. But it’s not just international chefs who have been drawn to the Hunter to make their mark, with the region also proving an appealing destination for those closer to home. Born and raised in Sydney, Matt Dillow discovered his passion for food at a young age, indulging in his love of cooking when he was just 15. After undertaking his apprenticeship with Rydges Hotels and Resorts, Matt went to work as a full-time chef at the stylishly-restored Hotel CBD Sydney and the multipurpose Slip Inn in Sussex Street, before finding himself back at the Rydges Hotel in North Sydney in the position of Head Chef. A desire to sample the flavours of the world saw Matt travel through Europe to experience the cultures and cuisines of Spain, Greece, Portugal, Prague, England, Germany, Demark and France. He returned to Sydney to undertake the challenge of revitalising the historic Barrenjoey House as Head Chef of the Palm Beach venue before heading north to the Hunter to take the reins of his own establishment, opening The Verandah Restaurant in the picturesque surrounds of Calais Estate in 2007. The move came with its own challenges as the vineyard restaurant had been closed for 12 years. But Matt relished the task as he put his own stamp on both the restaurant building and its menu to create a modern Australian tapasstyle dining experience that has seen him recognised as a finalist in various Awards for Excellence, including Best Tourism Restaurant and Best New Restaurant in the Hunter Region. Never one rest on his laurels, it wasn’t long before Matt was exploring additional dining ventures in the Hunter.
Matt Dillow of The Verandah Restaurant and The Deck Cafe
And just as Brian sources many of his ingredients locally, so too have many of the region’s dining hotspots been created by home-grown Hunter chefs. RidgeView Restaurant’s Executive Chef Donna Hollis was born and raised in the Hunter Valley where she began her apprenticeship at Il Cacciatore Restaurant in Pokolbin, before leaving to take up a role at Monte Pio in Maitland. She returned to the vineyards as Head Chef at Casuarina Estate, working there for more than three years as she discovered her passion for the flambé style of cooking.
After taking up the role of Executive Chef at RidgeView Restaurant, Five years after opening The Verandah Restaurant he also launched Twine Donna unleashed her inventive, passionate and driven side to create a Restaurant at Wynwood Estate, before later going on to establish the refreshingly different style of dining with a menu that includes traditional popular The Deck Café at Gartelmann Wines in Lovedale. and contemporary Middle Eastern and Mediterranean influences, as well as the popular Cypriot Meze. Whether tapas, mezedhes, antipasto platters or family-style dishes in the middle of the table, sharing small plates of food while unwinding after a long day and talking with friends over drinks or a glass of wine has tremendous social appeal. While small "divvy" dishes have been all the rage in inner-city wine bars, and suburban eateries for some time, many restaurants also specialise in this highly popular and relaxed take on dining. Convenient, easy to eat and quick to serve, meze (or mezedhes), have made their way from the bars and restaurants of Greece, Cyprus and the Balkans to gradually capture the attention and appetites of diners all over the world, and are a joy to share with family and friends.
Food for Sharing One bite at a time!
Restaurants are increasingly featuring small plates on their menus, enabling diners to share the food amongst themselves and explore a variety of flavours and ingredients. This trend in "shared plates" is one of the hottest trends on the restaurant scene right now – taking its cue from traditional Spanish tapas and also mezedhes, where guests can relax and leisurely graze from many different dishes at once.

Meze is a word with its roots steeped in antiquity. The word and its usage came to Greece from Turkey and is a dish - hot or cold, spicy or savoury, often salty - that is served, alone or with other mezedhes, as a separate eating experience. A meze is a big part of the dining experience in Eastern Mediterranean, Middle Eastern, and Arab countries. The word "meze" means "taste" or "snack" and the concept is very similar to the tapas of Spain, but with different ingredients. When served with alcohol like anise-flavoured liqueurs such as raki, ouzo or wine, a meze is a main meal and the perfect addition to any group gathering. Popular meze dishes include babaghanoush which is eggplant mashed and mixed with seasonings, Halloumi cheese sliced (then grilled) or fried, afelia which is diced pork marinated in wine with coriander seed then stewed, and souvlakia or bite sized meat cubes, grilled on a skewer over charcoal (of which lamb is very common). Seafood dishes such as grilled
Spanish Churros at The Verandah Restaurant, photo by Brent Leggett.
but also creates the kind of happy and even noisy atmosphere for which Greeks are renowned. Similarly, the word "tapas" is derived from the Spanish verb "tapar" meaning "to cover." Tapas are not a particular type of food and there are no rigid rules defining their taste, design or structure. In general, they consist of hot, cold and marinated dishes that are often spicy and flavoured with cumin, chili peppers, paprika, garlic, saffron and the highest quality olive oil. Typical tapas dishes include chorizo, gazpacho, appetizers, meatballs, battered squid rings, stuffed peppers, Spanish omelettes, frittatas, marinated olives, Serrano ham, stuffed shellfish, crab, oysters and mussels, and toasted breads with various toppings. Tapas offer the perfect combination of all things that Spaniards hold dearest to them - which is food, drink and great conversation. When you bite into tapas you are sampling not only the foods of Spain, but taking a journey through over 700 years of Spanish culinary history. Whether it’s called tapas, divvy dishes or meze, just about every culture has their version of these tasty little dishes. Italy has the antipasto platter, in Turkey and Cyprus it's meze, Mexico it's antajitas, Argentina has the picada and Venice, the cicchetti which are typically eaten for lunch or as late-afternoon snacks. The common theme amongst them all is that they are designed to be shared and served at ease and encourage conversation because people are not so focused upon eating an entire meal that is set before them.

octopus, may also be included, along with salads, sliced hard-boiled eggs, garlic-bread, Kalamata olives, fava beans, fried vegetables, fresh Greek sheep, goat or cow cheeses. Other dishes may include fried sausages and meatballs like keftédes. Unlike appetizers which are intended to whet the appetite for the meal to come, it is common for groups of family and friends to gather or go out for mezedhes and share several of these delightful dishes - which not only provide a wonderful variety of flavour and texture sensations,
If you're in the mood for a fun and social meal with a loved one or a group of friends then local favourites serving tapas, meze or divvy style meals include RidgeView Restaurant on Sweetwater Road and The Verandah Restaurant at Calais Estate.

WINE VARIETY
Chenin Blanc Chenin Blanc is a white wine variety that has been cultivated in France for nearly 1300 years. It is arguably the most versatile of all wine grape varieties – easy to grow, productive and high in acidity, making it suitable for use in many different styles of wine ranging from dry and crisp to slightly sparkling and also sweet late harvest dessert wine. Although the grape fell out of fashion somewhere in the early 20th Century, recent and renewed interest in the 1980’s has reinvigorated Chenin Blanc's position as a classic and noble grape variety. Chenin Blanc is an aromatic wine that has great fruit concentration and yet shows an outstanding ability to age. Flavours associated with all styles of Chenin Blanc include honey, melon and grass, with dryer wines becoming richer, rounder and more honeyed with age. Outside the Loire, Chenin Blanc is found in most of the New World wine regions and in particular South Africa, where it is the most widely planted variety and also known as Steen. It is thought the grape may very well have been one of the first to be grown in South Africa by Jan van Riebeeck in 1655, or it may have arrived with the Huguenots fleeing France after the revocation of the Edict of Nantes in 1685. Here in the Hunter Valley, Hart & Hunter on Deasy’s Road in Pokolbin have a wonderful example of Chenin Blanc produced from one of very few parcels of Chenin Blanc remaining in the region. When it comes to food, a fresh crisp young zesty Chenin Blanc is ideal with all kinds of fresh seafood including crab, prawns and especially oysters as well as light seafood pasta dishes and risottos. More mediumbodied smooth or old vine Chenin Blanc will work with scallops, most

fish dishes, fishcakes and mild cheeses. Richer, fullerstyled wines pair well with almost anything with a creamy sauce as well as lobster, roast chicken, roast pork belly and roasted root vegetables.
2015 Hart & Hunter Chenin Blanc The fruit for this beautiful 2015 Chenin Blanc has come from the block at Cellar Door, where in the 1980’s it was a local icon made by the Sutherlands. This Chenin is made with a lot of mouth-feel and textural properties, yet also retaining a crisp, juiciness on the palate. There is a honeydew, lanolin, almost nutty aroma followed by a wilde concentrated palate. Flavours of straw, dried herbs, apple and lanolin allow this wine to finish with a savoury, zesty twang that keeps on giving with a beautiful crisp long finish. FOOD MATCH Vietnamese pulled pork rice paper rolls, with spicy dipping sauce. CELLARING A beautiful wine to enjoy now, but if you can wait it should reward for 5-7 years.

Loving
FOOD 5 WAYS
LUNCH TIME BY CAITLIN ROSSER
Lunch may only be the second meal of the day today, but it was the last of the three daily meals to rise above its snack origins to achieve that status as it wasn't until the 19th century that the word to describe our favourite mid-meal of the day, (luncheon or the abbreviated lunch), became part of our everyday vocabulary. Historically, from the Roman times to the Middle Ages, the sunlight defined when food was to be eaten, which generally involved ‘dinner’ consumed as the one and only meal. Lunch, as we know it today, really is an urban invention – the former snack only became a fixed meal as society urbanised and workers were unable to return home for dinner until late at night. The beginning of the Industrial Revolution saw workers taking a break to eat bread, cheese, meat and pickles in the form of a ‘sandwich’, no bigger than something that could fit into your hands – no crockery required! Fast forward to the 21st century where preparing, tasting and devouring food has become an art form and the humble lunch has risen to become almost as important (or as some would argue, more important) than dinner. Of course, ‘luncheon’ doesn’t have to be a formal, sit down affair. There’s plenty of ways to enjoy your mid-day refuelling that don’t necessarily involve linen tablecloths and silverware! As the weather warms up, it may just be time to take your lunch outdoors, and you’ll find there are a vast array of different lunchtime experiences for you to enjoy in Wine Country – Here is our pick of five different eating experiences on offer in the Hunter Valley... 1. Cypriot Meze Located at one of the most beautiful properties in the Hunter Valley, RidgeView Restaurant is renowned for their Cypriot Meze menu. Linger for longer over lunch with a collection of small dishes influenced by the Middle East and Mediterranean to share with family and friends, designed to enhance the flavours of the matching estate wines. Options include a feast of dips, salads and fruits from locally grown producers, seafood and slow-cooked meats. Finish with a coffee or something sweet! Bookings are recommended (especially if you want a table outside) by calling 6574 7332. 2. Tapas Tower A favourite at The Verandah Restaurant is the Tapas Tower (serves two people). Similar to a Spanish Tapas style of eating, The Verandah serves up portable tapas in the form of a tower that can be taken into the gardens or BBQ area of Calais Estate to enjoy lunch in the sun. The current selection consists of house made dips with crisp flatbread, orange and spice mixed olives, charred red capsicum filled with house labna, rocket and parmesan salad, prosciutto wrapped watermelon, pan-fried halloumi with rhubarb and orange compote, cumin and cayenne baby calamari with garlic aioli, sweet pea and mint croquettes, chicken saltimbocca with ‘MP’ Smokey BBQ sauce, Asian marinated crispy skinned pork belly and char-grilled spicy Spanish chorizo sausage

with crispy paprika chat potatoes. The ‘tower’ showcases seasonal produce so it’s a good idea to check the availability with the restaurant and pre-booking is recommended by calling 4998 7231. 3. Pasta or Sushi Making Classes (Followed by Lunch) Visit Sandalyn Estate and bring the Tuscan Hills of Italy into your own kitchen by learning to make pasta the traditional way! Their pasta making workshops held in the underground cellar will teach you the generationsold technique of making fresh pasta, and will also give you the chance to enjoy your own creations with a two-course al fresco lunch out in the garden. Also available on Sundays are sushi making classes for lovers of seafood. Classes must be booked in advance on 4930 7611. 4. Pick up a Picnic Enjoy the Spring weather by picking up a Picnic Pack from the Two Fat Blokes Gourmet Kitchen. Available pre-packed, or you can customise your own with a free cooler bag. A romantic option for couples, those attending a concert or festival, or simply just to indulge and enjoy one of the many beautiful vantage points scattered throughout the vineyards! Packages available for two people include an Antipasto Tower, Cheese Box, Cheese Escape, Cheese Picnic or a Picnic Hamper. For more information, contact Two Fat Blokes on 4998 6699. 5. Oyster Bar on the Deck If a light lunch with a glass of bubbles is more your style, then the Oyster Bar at Peterson House may just be the ticket! While absorbing the views from the picturesque deck, enjoy a glass of bubbles with an oyster platter, prawn platter, antipasto plate or a selection of local cheeses – the choice is yours! On Sundays, you can combine this delectable treat with live music from 11am to 3pm. For more information, call Peterson House on 4998 7881.
