With the rst vineyards planted around the early 1830’s, the Hunter Valley is recognised as Australia's oldest wine region. Now, 180 years later we enjoy a wine industry that is made up of more than 125 wineries and a total of 6,000 hectares of vineyard. DUAL EXHIBITIONS...

November at the Cessnock Regional Art Gallery opens with Photovoice: Looking, listening and learning through photography. This exhibi on features photography of the highest standards by proud young Aboriginal school children from the Cessnock Community of Great Public Schools. Photovoice opens on 31st October at 6pm, and runs un l 10th November. This will be followed on November 16th by Hun ng and Gathering, a major exhibi on of contemporary sculpture. This annual exhibi on presents the work of some of the state's most exci ng sculptors who were selected from last year's Sculpture in the Vineyards. Stevie Fieldsend, Jenny Herbert-Smith, James McCallum, Flossie Peitsch, Penny Philpo and Nardja Williams are all steadily building their ar s c reputa ons and Stevie Fieldsend has just been selected as a nalist in this year's Blake Prize.

This exhibi on is bound by the common theme of hun ng and gathering and, even though these ar sts have not exhibited together before, the clarity of their vision and the quality of their work ensures that this will be an exci ng and engaging show not to be missed. Visitors and residents of the Lower Hunter are very lucky to have the opportunity of seeing this exhibi on at Cessnock Regional Art Gallery as Hun ng and Gathering is one of very few gallery exhibi ons in the state that is devoted to sculpture. “Cold Fire” at the Hun ng & Gathering Exhibi on

SCULPTURE IN THE VINEYARDS is an annual exhibi on of large scale outdoor sculptures along the Wollombi Valley Wine Trail. Now in its 11th year, this free to public exhibi on features over 100 works by ar sts Australia wide. Stonehurst Cedar Creek, Undercli Winery, Wollombi Village Vineyard, Wollombi Wines, and the township, will once again be transformed into a spectacular series of sculpture parks. This year also features an exci ng exhibi on of small scale sculptures at the Wollombi Cultural Centre. Professionally curated by Danella Benne , and supported by its three ambassadors, the Exhibi on provides a unique opportunity for ar sts to showcase their work to the public, and con nues to a ract prominent par cipants whilst providing a launch pad for emerging talent. This blockbuster month long event is a celebra on and fusion of art and wine, and includes guided sculpture, wine and local aboriginal history tours, as well as tailored educa onal tours and workshops for groups of all sizes. 2013 also encompasses the inaugural Family Picnic Day! Only 1.5 hours from Sydney, the exhibi on brings over 5000 visitors to the Region. Visitors can expect to see some innova ve works, set in a unique picturesque environment, whilst also experiencing the tradi onal Hunter Valley draw card - a cellar door/wine tas ng opportunity. The calendar of events also features an extensive Educa on Program, and is heavily focused on engagement with the Community, as well as providing families with a handful of opportuni es to nd some together me and immerse themselves in the wonderful world of crea ve arts. The Christmas Lights Spectacular is on again for its seventh year and a quarter of a million extra lights have been added this year, making the display over 1.5 MILLION CHRISTMAS LIGHTS in total. It is di cult to visualise the hardship and di cul es that confronted the rst se lers as they set about building a community in Australia…With the meagre supplies of food fast declining it was inevitable that subsistence style farming would soon become the norm and with that the development of vineyards and winemaking.

Before the Hunter Valley was established vines were planted in all sorts of strange places. In the rst few years of the 1800’s Bathurst had as many hectares of vines as did Sydney. One can only assume that weather and perhaps spring frosts put an end to these aspiring vignerons. Vines arrived in the Hunter Valley at the end of the 1820’s with the rst major plan ng taking place in the 1830's when James Busby, an amateur vi culturalist returned to New South Wales a er travelling throughout Europe and South Africa collec ng cu ngs from over 500 vineyards. Some of these cu ngs were sent to the newly established Royal Botanical Gardens in Sydney and the rest planted at the family estate named Kirkton situated on the Hunter River between Singleton and Branxton - establishing what was arguably the rst vineyard in the region. Although Busby is widely regarded as the founder of the Australian wine industry, another pioneer George Wyndham also planted vines in 1830 with cu ngs given to him by Busby. His rst a empts failed, but he persevered and made his rst vintage in 1835. By this me there were 10 vineyards in existence varying in size from less than half to li le over one hectare. From these humble beginnings the Hunter Valley wine industry grew rapidly and soon established itself as the most important wine making region in the state. At rst vineyards were established along the fer le, alluvial plains of the Hunter River, but by the 1860's plan ngs of vineyards began to move toward the foothills of the Brokenback range near Pokolbin and Rothbury (Lovedale) where many of the most well established and highly regarded vineyards of the Hunter can be found today. It was at this me that the familiar names of Audrey Wilkinson, Tyrrell, Drayton and later Tulloch and Mount Pleasant appeared on the scene. Between 1866 and 1876 the Hunter Valley wine industry grew at a spectacular rate – much like the boom that followed a 100 years later. While plan ngs started to decline a er 1876, the industry con nued to be prosperous right up un l the economic depression of the 1890’s. Sydney was a lucra ve market for the Hunter Valley, largely due to regula on in place at the me that placed prohibi ve du es on wines from other areas such as Victoria and South Australia. The Australian Federa on in 1901 put an end to these trade barriers and allowed wine to enter the state free of tari s and the Hunter found it di cult to compete against the higher yielding regions such as South Australia. This coupled with the arrival of downy mildew in 1917 and the rise in the popularity of for ed wines, signalled a period of fast decline for the Hunter Valley with vineyard area reduced to 552 hectares in 1936 and 187 hectares by 1956.

Many returning soldiers from WW1 were given land grants in the Hunter Valley but the Great Depression and devasta ng hail storms between 1929 and 1930 caused many of these new landowners to abandon their vineyards. Some of the land was bought up by the larger and more established land owners at the me who would later become the driving force behind the Hunter Valley's wine industry. The turning point came during the 1950's and 1960's which once again saw a shi in consumer tastes, but this me toward the drier styles of wine. This brought about a signi cant increase in demand from private family and corporate investors seeking to acquire vineyards. What followed was a drama c increase in plan ngs and expansion into the area of Broke-Fordwich and into the Upper Hunter north of Singleton. Wineries such Belbourie, Chateau Francois, Dawson Family Estate, Hungerford Hill, George Hunter Estate, Lakes Folly, Saxonvale, Rothvale, Tamalee, Allandale, Brokenwood, Peterson’s, Rosemount, Tamburlaine and Terrace Vale all appeared in the few years that followed. Unfortunately some of these wineries have since either changed name, ownership or simply closed down. While, Semillon, Shiraz and Chardonnay remain the principal varie es of the region, other popular varie es amongst the whites include Verdelho which is planted in large quan es and Viognier which is proving a good variety for the Hunter as is Gewürztraminer. Amongst the reds are Cabernet Sauvignon, Merlot, Pinot Noir and Chambourcin. In recent years, there has been an increased interest in Italian Grape varie es in the Hunter Valley - mainly due to their ability to adapt to certain climates in Australia, high natural acidity, lovely texture and ability to adapt to heat spikes. Popular Italian varie es include the hugely successful Pinot Grigio, Sangiovese, Nebbiolo considered the most noble of Italy's varie es and Barbera which is the most widely grown grape in Piedemont. Today the Hunter Valley is recognised as Australia's oldest wine region with a wine industry that is made up of more than 125 wineries and a total of 6,000 hectares of vineyard. Total annual wine produc on exceeds 40 million litres with an es mated sales value of over $275 million - sold throughout Australia and exported to over 50 countries worldwide. It’s amazing what has been achieved in 180 years—wonder where we’ll be in another 180 years?

Some consider it to be ''living the dream'.� Sounds great, but being a vineyard owner and manager can o en also mean having to work a seven day week‌..

With a reputa on for producing a complete range of premium Hunter Valley wines and ''big gutsy reds'', the historic property known as Ivanhoe Estate has been owned and operated by Stephen and Tracy Drayton since 1996. Son of the late Reg Drayton, Stephen is a h genera on member of the pioneering family to be involved in winemaking in the Hunter Valley.

Another key task in the vineyard at this me of the year is weed control and canopy management - which involves raising the canopies and trimming excess leaf cover to allow for more air ow and to enable sunlight to reach the fruit for ripening.

Viognier

The most oral of whites, Viognier is your ideal choice for a warm spring or summer day.

Rich, Sensual and Voluptuous, Viognier wine is fast growing in popularity and has, in a rela vely short period of me, become the choice of drinkers and growers alike. The last decade has seen a massive increase in Viognier produc on throughout the world and is currently considered a real challenger to Chardonnay. The origin of the Viognier grape is unknown, however it is presumed to be an ancient grape, possibly origina ng in Dalma a (present day Croa a) before being transported to Rh么ne by the Romans in 281 AD. Considering its 2000 year history, it is interes ng that this variety was only recently rescued from almost certain ex nc on - when in 1965, the grape was limited to less than 10 acres in Northern Rh么ne and producing less than 2,000 litres of wine. But the word about this almost forgo en variety soon spread and thanks to modern vi cultural prac ces Viognier is now widely planted in many other wine producing countries throughout the world including vineyards in the United States, Canada, Italy, Chile, Argen na, Brazil, New Zealand, Greece, South Africa and Australia where it is now one of the most popular grape varietals going around. In Australia, the variety was imported from Montpellier and the rst commercial plan ng was made by Yalumba Wines of the Barossa Valley in South Australia in 1980. Although a rela vely new white grape variety to Australia, it is rapidly gaining a strong following and has made a signi cant impact on the Australian wine industry. Most wines produced are very fruity and richly avoured however the variety also has the capacity to be made into extremely complex and well-structured wines and is also blended with juice from Marsanne and Roussanne grapes to produce a Rh么ne-style white wine and also with Shiraz to make a red wine - Shiraz Viognier. The most dis nc ve a ribute of Viognier is its stone fruit character, most notably that of apricot or peach and its generous alcohol content (o en over the 13% mark) and low acidity. There are other powerful ower, fruit and spice aromas evident in these wines - which are dependant on where the grapes are grown, the weather condi ons and age of the vines. Most of these wines are intended to be consumed young, although some - especially those from old vines and the late-harvest wines, are suitable for aging. Viognier shows its nest colours when paired with food. The lighter more re ned styles suit seafood, par cularly prawns, lobster and mussels. Richer wines are well matched to spicy Thai cuisine, Chinese and Mexican dishes, medium to strong and salty cheeses, strong avoured sh dishes, also pork and chicken based meals and fresh fruit.

The fruit for this wine was sourced from the Mar ndale Vineyard in the Upper Hunter. The 2013 Viognier was aged for 7 months in 500lt French puncheons. Cellar Door This is the perfect me of the year to be in the vineyards with the buds developing new shoots and leaves triggering the start of the grape owering process. As the days get warmer, the shoots grow longer and the grape ower begins to form grape berries - known as ''berry set''. The vineyard team now get busy monitoring the vines and canopy thinning where necessary to ensure air and sunlight gets to the new fruit. Here are some of the latest happenings on the local Wine Scene. Two Hunter Valley wines triumph at the 2013 Six Na ons Wine Challenge. The Gartelmann 2009 Benjamin Semillon and the Lakes Folly 2011 Chardonnay were among four class trophy winning wines that made Australia the top na on of the 2013 Six Na ons Wine Challenge in October. An Award well deserved. Iain Riggs - Managing Director and Chief Winemaker of Brokenwood was recently awarded the Len Evans Award for Leadership at the 2013 Gourmet Traveller Wine Magazine Awards. Bou que Wines - Se ng the standard. Bou que wine producers in the Hunter claimed 9 of the 14 trophies at the 2013 NSW Small Winemakers Wine Show at Forbes. Major trophy winners were: Mistletoe Wines who won 3 awards with their 2009 Reserve Semillon winning the award for best white wine of show, the best bou que white and the best 2011 and older Semillon. Leogate Estate also won 3 awards with their 2011 Brokenback Shiraz and the Leogate Estate 2011 Creek Bed Reserve Chardonnay. Other awards went to First Creek for their 2013 Winemakers Reserve Semillon and Ernest Hill for their 2012 Chicken Shed Chardonnay. David Hook claimed the Best Dry Red Table Wine Italian or Spanish Varie es with the 2012 David Hook Wines Barbera. Semillon the Winner at this years 2013 Hunter Valley Bou que Wine Show. Karl Stockhausen who has made some of Australia’s greatest and most sought-a er Hunter Valley wines awarded the trophy named in his honour to Allandale Wines for the Allandale 2007 Aged Release Semillon which also won trophies for the best white wine of the show and the best open vintage Semillon white. Ever wonder why roses bushes are so common in vineyards - most o en at the end of vineyard rows? While beau ful, the purpose of plan ng roses in a vineyard are not purely for aesthe c reasons. Roses are more suscep ble to the same type of fungal disease (e.g. powdery mildew and downy mildew) as the grapevine. Having roses in the vineyard serves as an early warning sign to the vineyard manager that ac on needs to be taken soon, or the grapevines will be infected next. Roses also a ract those good insects that prey upon insects that can prove harmful to a vineyard. With modern technologies and techniques used in vineyard management this method of early detec on is not used as much as it was in the past. Now roses are included in vineyards to maintain the tradi on and of course they always look great!

When Mark, who has an ardent interest in all things to do with good food, showed Peter the extensive range of hamburger recipes he had been collec ng and re ning over the past 4 years, they made the decision to share these recipes with the public and open Tuk Tuk Hunter Valley Burger Company. And yes - they do have a Tuk Tuk, which is currently being restored and will be on display from December! For Mark and Peter it's all about the burger and the crea on of burgers with a di erence. The di erence being the balance of ''umami avour'' purported to be the h taste (besides sweet, sour, salt, and bi er). For chefs and food lovers alike umami is a sense of gustatory completeness and of balanced avour. Foods that are rich in umami present a full

Tuk Tuk has a wide range of burgers, hot dogs and skewers that are made to order. The beef burgers range from the straight up Umami Burger to the ul mate in burgers - the Top Shelf Umami Burger. There are also chicken burgers such as a Chicken Caesar Salad Burger and a Tandoori Chicken Burger as well as pork burgers that include the Chilli Pork Burger and the Pork 3 Ways Burger. Even herbivores are catered for with a Field Mushroom Burger and Falafel Burger. A PERFECT MATCH

Wine & Pasta Classic Italian pasta dishes such as Linguine with pesto sauce, Orecchie e pasta with broccoli or Spaghe all'Amatriciana con nue to rest comfortably on many menus throughout Australia - if not the world. A er all, these lling dishes are synonymous with casual dining and comfort food.

Matching wines with pastas used to be a rela vely simple ma er in the age of tradi onal sauces. Pasta gets all its avour from its sauces - hearty red meat sauces, creamy sauces, simple garlic and oil as well as all the tasty addi ons. It is this adaptability and divergence of avour that makes pasta a universally recognised and loved dish, but it also makes pairing with the perfect glass of wine a challenge. Given the signi cant diversity that typi es both sides of the pasta-wine equa on, the rule of matching them is that there is no rule, instead there are some guiding principles. As many sommeliers remind us (even when we're not talking about pasta), think about the sauce. Bu ery sauces o en require bu ery wines and lighter sauces call for lighter bodied wines - such as Pinot Grigio. Similarly acidity also needs to line up between the dish and the wine as, generally speaking, foods with high acidity are inclined to overwhelm wines that don’t have a complementary level of acidity. For example, the fresh acidity of Sangiovese wine makes it a good match for anything involving tomatoes, from a simple marinara sauce to sauces like pu anesca or amatriciana ....the list goes on. Fortunately you don't have to be a sommelier to pick the perfect wine for your pasta feast - so if you're making the pasta at home have fun and use your imagina on for the ingredients and don't be afraid to experiment with the wine.

♦ Creamy sauce based dishes match well with delicious un-oaked Chardonnays

MICHAL BLANK

HEAD CHEF | GOLD FISH HUNTER VALLEY

Driven and ambi ous Michal loves the adrenaline rush that comes with the chaos and demands of a busy kitchen. Since accep ng the role of se ng up the food opera ons at Gold sh in 2012, Michal has since established Gold sh at the Tempus 2 complex in Pokolbin as a highly regarded dining venue, serving an excep onally high standard of food and making the Na onal Finals of the Restaurant & Catering Awards this year - with the results to be announced this month. Born in Poland in 1983, Michal moved to Australia with his mother in 1989 where he grew up in Balmoral before later moving to Manly where he lived un l making the decision to join Gold sh in the Hunter Valley. Michal's early passion for good food and cooking was very much in uenced by his grandmother who was an inspira onal cook throughout his childhood. Coming from a family with an Eastern European background, the whole family would come together each Sunday for the tradi onal family lunch. As a result, he has fond memories of picking fruit and vegetables and helping his grandmother in the kitchen. Surprisingly, Michal's decision to become a chef came later in life. One night, while enrolled at University and working part me behind the bar at a wood red pizza restaurant, Michal was asked to assist with food prepara on in the kitchen. Despite his ini al misgivings, Michal discovered that he loved the camaraderie and energy that came with the fast paced and busy kitchen. Needless to say Michal deferred his studies and never worked outside a kitchen again. For the next few years, Michal was exposed to a wide variety of cooking techniques and culinary in uences from all around the world while he worked alongside respected chefs such as Steven Lloyd from Pier 26 in Sydney’s Darling Harbour and Serge Dansereau at the iconic Bather’s Pavilion at Balmoral Beach. In 2005 Michal joined one of Manly’s high-end restaurants - Whitewater as a Sous Chef before leaving to gain valuable experience at the hugely successful Hugo’s Manly working with inspira onal chef Massimo Mele who also appears on the television show ''Ready, Steady, Cook''. Now 13 months a er arriving in the Hunter and establishing the new culinary direc on for Gold sh, Michal has designed menus that are predominately Italian and French in uenced, with great pizzas and a blend of re ned Mediterranean cuisine. The restaurant decor has a 1920's old New York theme - is open 7 days a week and just perfect for that long lazy lunch or relaxed dinner a er a day of wine tas ng. Food is available ll closing.

WINE’S THE WINNER d o o w n y W @ It's been an exci ng 2 years for Wynwood Estate who are about to celebrate their 2nd anniversary since opening in November 2011 . With the renova ons of the original building - consis ng of a cellar door, private tas ng room, museum and restaurant completed, as well as the extensive landscaping of the surrounding grounds, Wynwood Estate was opened for business in November 2011. This was the start of yet another chapter to this proper es, unique and colourful history. Wynwood Estate's roots goes back to the 1800's when the property was rst se led by George Wills and called Clayton Winery. The property has since played a signi cant role in the history of Pokolbin and the Hunter Valley and developed a reputa on for producing some of the regions nest wines. Early records show that in 1866 the vineyard on Oakey Creek Rd, then known as Happy Valley Vineyard, was planted by James Connolly with the property eventually passing into the hands of Barrie Drayton during the super heated wine boom of the 1960's. From 1969 un l 1971 the Happy Valley Winery was then owned by a short- lived public company known as Pokolbin Winemakers Ltd which then became the subject of a reverse takeover / merger from a group of investors and the property became part

of Saxonvale Wines Ltd which also had large holdings in BrokeFordwich. In 1973 the very rst restaurant in the area was opened at the Happy Valley Winery. Robert Molines - then a rela vely unknown chef, was recruited to take over the restaurant and its management. Today, Robert Molines is one of the most awarded chefs in the Hunter. Saxonvale Wines including the Happy Valley Vineyard and winery were later sold to Sydney trading company Gollin Holdings Ltd in August 1975 and within 12 months became embroiled in one of the most sensa onal nancial failures in Australian corporate history with the collapse of the Gollin Group of companies which included Saxonvale Vineyards and the subsequent arrest and jailing of its two directors for fraud and embezzlement. Saxonvale remained in receivership, although ac vely trading, un l 1978 when it was sold to the McDougal Brothers who kept the Saxonvale brand alive and thriving and sold to Wyndham Estate in 1985. The Happy Valley Vineyard and winery on Oakey Creek Rd were sold to the German wine company Pieroth in April 1985. In 2011 the 42 hectare property on Oakey Creek Rd by then renamed Golden Grape was purchased by its current owners who spent a signi cant amount of money restoring the building to its original glory - by rebuilding and renova ng the original cellar door and restaurant now known as Twine Restaurant and owned by local restaurateur Ma Dillow. The cellar door also boasts a wine museum that features, among other interes ng examples of old winemaking tools, the oldest wine press on the con nent. Since its opening in 2011, it has been the inten on of the Wynwood team to nurture the original vines and apply their years of experience to return the wines to the quality of the old Saxonvale days - producing tradi onal, premium quality wines from the grand 90 year old vines. As a part of this process, new wines have been released and new vines planted. Currently 45 acres are under vine with inten ons to almost double this over the next few years. Plans are underway to introduce the immensely popular Spanish variety Tempranillo and to include Durif wines (also known as Pe te Sirah) in their selec on of tas ngs. Now 150 years later, Wynwood Estate remains one of the most beau ful and historical vineyards in the Hunter Valley and along with its refurbished cellar door and restaurant retains its reputa on for producing great wines and providing one of the most spectacular restaurants and wine and food experiences in the Hunter Valley.
