The Pokolbin North Trail stretches from Broke Road to Hermitage Road and Old North Road and encompasses the Around Hermitage group, whose vibrant red signs you will see along the Trail.

The Pokolbin South Trail is located on the southern side of Pokolbin, stretching from Broke Road to Oakey Creek Road and encapsulating the Parish of Pokolbin.
Officially established in the 1880s, the ‘Parish’ is the oldest wine region in Australia, encompassing some of the region’s best viticulture sites. Although much of the Hunter Valley region is labelled ‘Pokolbin’, the Parish of Pokolbin is a very distinct area lying at the foothills of the Brokenback Range in the southern part of the Valley. As a result, the area includes the names of some of the early pioneering families who continue to leave their mark on the wine industry.
Unsurprisingly, it’s home to many of the area’s most popular places to wine, dine, shop, stay and play – and back in 2010, several such destinations came together to form the Parish of Pokolbin group and build on the area’s solid foundation of history, heritage and unique character.
The ideal viticultural conditions of the Pokolbin South Trail produce some of the most highly regarded examples of the acclaimed Hunter Valley wine styles of Shiraz, Semillon, Verdelho and Chardonnay, promising an authentic and unique curated wine experience for both the novice and expert wine enthusiast.

French Provençal Glamour
A testament to the passionate, hard work of owner Gayle Meredith and her family, as well as the extraordinary talents of winemaker Daniel Binet and viticulturist extraordinaire Dave Grosser, the vineyard has gone from being a holiday home that sold grapes to other producers to being a destination cellar door that was a finalist at the 2021 Cellar Door of the Year Awards just one year after opening.
"Talits Estate is a special place," says Gayle.
"I realised it the very first time I set foot on the property and every day since. Our guests have felt it. It's a place where time slows, your senses are overwhelmed by nature, the turning of the seasons and the exciting spirit of winemaking."
Gayle purchased the estate ten years ago, following a dream that she'd had since she first visited the vineyards of Burgundy as a teenager and developed a passion for wine and winemaking. Gayle loved Broke Fordwich as a village, and when she saw Talits Estate, she instantly knew it was the right one.
The homestead is famous for being a replica of a French homestead just outside of Aix En Provence. The original owner of Talits fell in love with the house and endeavoured to recreate it in Broke, shipping back authentic antiques, window frames and light fittings until the truly magical Provençal masterpiece was complete. Gayle and the family
have continued the work by renovating the homestead and adding the swimming pool and the impressive cellar door in 2018 just before the pandemic struck. Built towards the front of the property, the Talits Estate Cellar Door offers a more contemporary take on the old-world glamour of the estate's homestead whilst staying true to the French-inspired legacy.
Initially, all the grapes were sold to local wineries until Gayle engaged Daniel Binet to begin creating the Talits Estate wine brand. Daniel understood the family's undying appreciation for and commitment to old-world winemaking methods. He champions the Burgundian style of Chardonnay and the Provençal style of Rosé that they strive for. Daniel has twice been nominated for The Wine Society's Young Winemaker of the Year, Hunter Valley Rising Star, and the Hunter Wine Excellence scholarship. Over time, Talits Estate's own wine brand grew in popularity with restaurants, wine bars and wine stores across Sydney, Newcastle and Canberra stocking the wines, and a passionate member base grew. In 2018 Gayle and the family took the plunge, building a cellar door to enable old and new fans of the wine to experience them in person. The wines are now only available through the cellar door, on the website and for members.
"Over the last ten years, I have truly loved making wine with Talits Estate," said winemaker Daniel. "The vineyards produce
incredible grapes and enable the production of high-quality complex wines. I have always said great wines are made in beautiful places, and they don't get much more beautiful than Talits Estate in Broke Fordwich. I look forward to working the Talits Estate for many years."
In 2022, the property produces over ten different types of wines and specialises in old-world style winemaking with the occasional twist to align to terroir and what unique scenario the vintage and climate provide.
"Every year, we make a Rosé and Sparkling Rosé reminiscent of our favourite style from the Bandol region in Provence," said Gayle. "Our Chardonnays are stylised off Burgundian malolactic ferment with high-quality French oak. Our reds are stylised off Bordeaux Merlot-based blends, Tuscan blends, and some innovative styles like our Pinot Syrah blend - iconic to the Hunter region. Our wines are not uniform - they are not exactly the same every year - they're unique to the vintage and expression of our (and our member's) interests every year."
"We offer a high-quality small-batch expression of the Broke Fordwich terroir that our members and cellar door guests return time and time for. We recognise that wine can be intimidating, and we try and make the process of buying highquality wines fun and accessible. Ultimately, we try and provide unique wines that respect the terroir, climate, the tastes of our members and are conversation starters for great friends and families creating special memories together."
A typical tasting at the cellar door will take you through eight wines, including the popular Rosé (still and sparkling), Blanc de Blancs, Chardonnay, Arneis, Semillon, Sangiovese Merlot, Estate Merlot and Pinot Syrah. Tastings are $15 per person; however, Wine Club Member tastings are complimentary. Visitors are also welcome to purchase a glass/bottle of wine or a draught schooner of the craft beer "Broke Brewing" and take in the view of the lake, fountain and wildlife. The cheese and charcuterie are sourced from local providores, Binnorie Dairy (Lovedale) and Hungerford Meat Co (Branxton). Cakes are lovingly homemade in the cellar door kitchen, perfect to be paired with a barista coffee. Walk-ins are welcome; however,
pre-booking is advised to avoid disappointment. The cellar door also features a rotating selection of contemporary art collected by Gayle. Children will love some of the notable residents onsite - Rufus and Ruby the Miniature Schnauzer's, Beatrice the Swan and a family of constantly hungry Egrets.
The business has experienced many challenges over the last few years; flooding, bushfires, the pandemic to name a few. In 2019 they lost a whole vintage of wine due to the bushfires, which was a huge setback. Viticulturist David Grosser worked tirelessly to protect the vines from danger.
"Dave is a Broke Fordwich icon and multi-generational viticulturist for the village. Nothing is ever too much trouble - he knows our vineyard like the back of his hand and passionately cares for the vines. We couldn't be luckier to have Dave," said Gayle.
The future is bright for Talits Estate, with many exciting new wines on the horizon including their first 100% Estate Grown Chardonnay, the Talits Estate – Estate Chardonnay, that they are particularly proud of.
"This wine comes from the Chardonnay we planted in 2020 (amid the pandemic)," said Gayle.
"It's the first wine from vines we have planted since acquiring the property. For us, it means much more than another wine - it represents the output of hard work and commitment and our journey as small winemakers navigating from mere growers to selling all our wine directly to our passionate members and then having to plant more vines to keep up with the demand."

Home to some of the oldest vines and biggest names in Australian wine, the Hunter Valley is a mecca for lovers of quality red wines that have been crafted in this region for over 180 years. Hunter red wines are renowned for their thoroughly unique and distinctive style and ageing ability.
SHIRAZ – The Hunter's premium red variety and the most widely planted grape variety in Australia. The Shiraz grape is said to originate from the Rhone wine-growing area of France but is now grown throughout the world and used primarily to produce powerful red wines which can be varietal or blended. The typical young Hunter Valley Shiraz is a medium bodied wine showing red and dark berries, spices and a great deal of tannin. However, its real character is seen in wines with longevity. With age, these wines become far more complex, full bodied, yet smooth and richly flavoured with earthy tones.
PINOT NOIR – Described as "the most romantic of wines'' due to its sensuous and gratifying perfume, Pinot Noir tends to be light to medium in body with a broad range of textures and flavours, including a variety of complex aromas reminiscent of black or red cherry, raspberry, currant and black berry. While widely considered to produce some of the finest wines in the world, it is also highly reflective of its terroir, with different wine growing regions often producing quite different wines.
MERLOT – Merlot is renowned for its wonderfully fruity, well rounded, even fleshy character and is grown in just about every wine growing region of Australia. The Summer heat of the Hunter is considered to provide the ideal growing conditions for this versatile grape variety. Hunter Valley Merlot has experienced a surge in popularity and is often considered to be more robust and fleshy than other well regarded varieties with a rich bouquet.
CABERNET SAUVIGNON – The world’s most recognised red grape variety famous for its ability to age for decades at a time. This classic red variety of Bordeaux is second only to Shiraz in importance in Australia and can be medium to full bodied, typically leafy with ripe cassis like flavours, well structured and elegant and powerfully aromatic. The bouquet can be rich with fruity and herby notes.
CHAMBOURCIN – Relatively new to Australia, Chambourcin wines have a lovely, deep red colour. Most are big and fruity with a lot of raspberries, plums, prunes and even cranberries on the palate. It is not as heavy or robust as Shiraz or Cabernet Sauvignon, which can make it quite attractive to people who don’t like red wine.
SANGIOVESE – This star amongst Italian wine grape varieties, Sangiovese is now making its mark in Australia where it has become increasingly popular over the last few decades. The variety produces elegant medium-bodied wines with powerful aromas and with moderate to high natural acidity. The characteristic flavours are cherries, tomatoes, herbs, spices and tea-like flavours. Australian Sangiovese wines tend to be a little more fruity, riper flavours and higher alcohol.

The PGA 18-hole championship golf course features stunning panoramic views of the vineyards and surrounding Brokenback mountain range from every tee and green, and it has won Best Australian Golf Hotel Resort in both 2018 and 2019. As if this wasn’t enough to draw the visitors and the locals alike, the food and beverage options at this worldclass facility are undergoing a quiet transformation that aims to be a significant drawcard for foodies, families, locals and international visitors.
As with most businesses, the covid pandemic provided the team at Cypress Lakes an opportunity to rethink the food and beverage offering and how it is delivered. The aim is to provide guests with more than they expect by offering a cleaner, more family-oriented approach to the leisure market and a more outdoor, festival-like approach to the corporate conferencing market.
Driving this new approach is Daniel Quitto, Executive Chef at the resort. Daniel has previously worked at the Hilton Hotel,
Sydney, the Harbour View Hotel, The Rocks, and the hatted restaurant Mosaic at the Westin Hotel, Sydney, and has won awards for his designer cake business, Cake Evolution. As part of the executive chef team that catered to the Pan Pacific Games in Vanuatu, Daniel had the experience of cooking for the athletes for over a month and being in charge of a 30-person team of cooks, chefs and kitchen hands. His broad experience makes him ideal for heading up a facility with several dining offerings, large-capacity conferencing, and events.
“When I was a kid, eating out was a big deal. These days, food is very accessible, with endless options, and people know what’s good – they have high standards. We want to take a leadership role in how good food can be, providing healthier options, utilising local produce and ensuring that even with our most casual dining experience, it’s still of the finest standard possible,” says Daniel.
“When it comes to being a successful chef, it’s not just about the food, but the culture that is in the kitchen. Without a supportive team that feels valued, a kitchen cannot thrive. Our team is not only extremely talented, but they are also from a very wide range of multicultural backgrounds. I encourage
them to share their food influences through our specials. Chef Vinnie (Vinura de Silva, Executive Sous Chef) at our fine dining restaurant, Oak & Vine, takes that one step further with food influenced by his native Sri Lankan background, offset by his refined French techniques. No one else is doing this in the valley, and it’s exciting – it pushes the envelope.”
Chef “Vinnie” began his hospitality journey at the Hilton Colombo as his work placement during his studies at the Sri Lanka Institute of Tourism and Hotel Management at the age of 17. What followed was ten years of 5-star, global experience in Bahrain with the Rotana chain of hotels, Kandima in the Maldives, Bannisters in Port Stephens and then finally, to Oaks Cypress Lakes in 2019.
“At first, I added a few Sri-Lankan dishes to the menu and noticed that diners were really enjoying them. Daniel was keen for me to expand the concept, utilising Sri-Lankan flavours with my classical French training and taking it to another level, and diners loved it. I would love to have as many people as possible come and try the dishes that mean something so special to me,” says Vinnie.
Recently the team were put to the test with a significant corporate event that catered to 700 people per day for five weeks, all staying in the accommodation and eating all meals at a cost of almost $5 million. There was a focus on health and wellness coupled with indulgence and fun. Special dietary considerations for such a large group were an exercise in logistics for the kitchen staff.
Luckily for Oaks Cypress Lakes Resort, the neighbouring Elysia Wellness Retreat, purchased by the Oaks Group two and a half years ago and previously known as the Golden Door Health Retreat, is now also part of the Oaks Resorts family and Chef Corryne Parkhill, Executive Chef at Elysia, is part
of Daniel’s team. They worked together on the project, which has inspired them to make healthier options available on all the menus at Cypress Lakes.
Chef Corryne is passionate about healthy food and the difference it can make in people’s lives. She works with a nutritionist to ensure that every meal offered at Elysia is personalised for the health needs of their guests, managing the dietary requirements of individuals with a giant blackboard and an enormous knowledge base of what each type of diet should contain.
“I remember visits to farms to source produce as a kid, and my mum (also a Chef) was always focused on health and wellbeing, so it’s ingrained in me. I love that I’m always learning as our knowledge of health evolves. Our approach at Elysia is personalised and holistic, and I’m excited to be working with Daniel to deliver some of these healthy wholefood offerings to Cypress Lakes,” says Corryne.
With so much happening at Cypress Lakes, it’s worth a visit. The Bistro is family-friendly with both indoor and alfresco dining and serves up classics along with a full buffet breakfast every day and includes live entertainment over the weekends. The Member Bar is open Thursday to Saturday and features a chilled, laid-back sipping environment for all, especially members of the golf course. For fine dining, there’s Oak & Vine, also open Thursday to Saturday, serving up authentic Sri-Lankan and French fusion dishes. And finally, for the strictly health-conscious who happen to be enjoying the wellbeing programs at Elysia, attendees can order breakfast, lunch and dinner a la carte, catering to all allergies and dietary requirements.
As Daniel says, “We want everyone to know that we’re open again and that we want locals to feel as welcome as our visitors from further afield. We’re excited about our new approach and showcasing that to everyone.”

Gianni Moretto is an extraordinarily talented young chef carving a name for himself globally. Currently working as Head Chef at Sebastian, located in Spicers Tower Lodge in the Hunter Valley, the food experience he offers has been inspired by his work in San Sebastian in the Basque region of Spain, focusing on the highest quality ingredients sourced as locally as possible.
Moretto was born in Italy, in the countryside around Venice but grew up in Chile. He would spend many family summer holidays in Italy, where he enjoyed the traditional foods of the region that his family hailed from. Growing up in Chile meant helping out in his parent's restaurant, Tio Jacinto, in the city of Antofagasta from a young age. The family has run Tio Jacinto for over 40 years, and although Moretto claims that it is a humble establishment, it has still been acknowledged as one of the top 100 restaurants in Chile for five years running.
"Antofagasta is a port city not too far from Peru," said Moretto.
"I remember waking up at 5:30am every morning to walk down to the port to talk to the fishermen and help choose the best fish and seafood for the day. They would keep the best for us. It was my grandfather that opened the restaurant. I was scaling fish from the age of nine, and my mother taught me how to cook seafood."

"I loved cars when I was growing up, and Italy is famous for its luxury car brands. I used to create models of cars. My family are very creative people. My father was a photographer who would travel to Europe for work assignments. All I knew in my life was hospitality and art. In the end, it was cooking that became my creative outlet, my craft, my art."
Moretto has worked in Santiago in Chile, Mexico, San Sebastian in Spain, Perth and now the Hunter Valley, and he's only 30 years of age. His time in San Sebastian has perhaps proved most inspirational in his work, although there are also South American influences at play. Moretto was Head Chef of Rekondo in San Sebastian overlooking Concha Bay from 2017 to 2018, where the focus was on the highest-quality ingredients, and the cellar is reputed to be one of the world's best.
He was tempted to Australia by an offer he couldn't refuse from a Peruvian friend, chef Alejandro Saravia who runs the South American fine-dining restaurant Morena in Sydney – to work at Uma, the Peruvian restaurant at Pan Pacific Perth. Uma was incredibly successful and became a destination restaurant. Moretti went on to create the awardwinning Ten Acre Block vegan fine dining restaurant, ⊲
also located in Pan Pacific Perth. In 2019, he was nominated for Mentor of the Year by the Western Australia Hospitality Training Group for his work nurturing young talent.
"I want to pass on the knowledge, to light a fire in our young hospitality workers. There is not enough training in Australia. I want to create a passion and teach young people to love what they do. We have two apprentices already at Sebastian, and I would take more, but our kitchen is not big enough."
Again, Moretto was lured away from a good thing, this time by Andrew McKenna, Spicer's Regional General Manager, to take on a new challenge and create Sebastian for their new resort in the Hunter Valley. He was involved with everything in creating the new restaurant – how it would be structured, how the building would look, equipping the kitchen, designing the menu and how everything would be presented.
There is already a contemporary Spanish mission style to the retreat, a water feature in the hacienda-style central courtyard, a striking stucco tower and warm terracotta tiles so that it is easy to imagine yourself in the Basque country, and it is the Basque country traditions of pintxos bars that are part of the dining offering that Moretto has created at Sebastian.
"In the Basque region of Spain, it is the tradition to move from place to place, bar to bar, eating one small dish at each stop, enjoying a drink and then moving on to the next. This is called Txikiteo (pronounced chee-kee-tay-o). Each dish is a
micro version of a main course with concentrated flavours. The food is unpretentious, healthy, hearty, seasonal and as local as possible. It's all about fun, gossip, socialising and movement, and we try to give this to our guests."
"At Sebastian, we present the food to our guests, and we move from one environment to another. We talk about the origin of the food, what is good to try, where the inspiration has come from, and how it's been prepared. We try to keep the ambience casual, relaxed, and less structured. Our salads are harvested on the day we serve them. We use aged beef because the flavours are more developed. We use whatever we have here, sourcing many wild and foraged ingredients locally. A great example is wattle. It was one of the first things I noticed about the Hunter Valley. There was wattle everywhere. I now create a wattle dessert with the flowers. Wattle flower miso ice cream with burnt honey and milk textures."
Diners can expect to enjoy a five-course set dinner menu with three choices for each course, which changes daily on a four-day cycle. The Spring menu includes Abrolhos scallops, edamame, rhubarb tigers' milk and rosella flowers as one of the snacks; grilled asparagus, fresh cheese, bottarga and cured egg yolk for one of the starters; an entrée of Spanner crab salad, pickled kohlrabi, sea lettuce and 'Gloria's' garden leaves; a main of Txuleta 1886 beef, roasted piquillo peppers, smoked potatoes and wild greens and the delicious sounding wattle ice-cream mentioned above. The Hunter Valley's proximity to the sea, mountains and rural farming lands, well known for their exceptional produce, aligns well with the Basque tradition of proximity equalling quality.

WHITES Of The Hunter
The Hunter Valley is one of Australia’s best white wine areas – consistently winning a large number of awards in National Wine Shows. While the area is famous for its long lived Semillon white wines, the Hunter Valley is also known for producing Australia’s first Chardonnays and the popular single varietal wine – Verdelho.
SEMILLON – Hunter Valley Semillon is considered to be of the highest quality and best example of a dry Semillon produced anywhere in the world. Classic Hunter Semillon has piercing acidity and citrus flavours, renown for its ability to age well and evolve through an array of flavours, slowly developing into richer and more honeyed characters.
CHARDONNAY – Planted in the Hunter since the 1970’s, this adaptable and hearty grape flourishes easily in most climates and conditions. It is now one of the most widely-planted grape varieties worldwide, and is an important component of many sparkling wines around the world, including Champagne.
VERDELHO – The characteristics of Verdelho vary significantly according to the climate, growing conditions, the winemaker’s skill and the timing of the harvest. The Hunter Valley produces very distinctive styles of Verdelho wine displaying a spiciness, both on the nose and the palate.
PINOT GRIGIO (or Pinot Gris) – Although they are the same grape, the two names have over time come to infer two different styles of wine. The popular Italian style Pinot Grigio wines are typically lighter-bodied, crisp, fresh, with vibrant stone fruit and floral aromas and a hint of spice. In contrast, Pinot Gris wines are more full-bodied, richer, spicier, and more viscous in texture.
VIOGNIER – Although a relatively new white grape variety to Australia, it is rapidly gaining a strong following. The most distinctive attribute of Viognier is its stone fruit character, most notably that of apricot or peach and its generous alcohol content and low acidity. There are other powerful flower, fruit and spice aromas evident in these wines – dependant on growing conditions and vine age. Mostly intended to be consumed young, some (especially those from old vines and the late-harvest wines) are suitable for ageing.
GEWÜRZTRAMINER – In Australia this variety is also known as Traminer, especially in the warmer regions where it is most commonly used as a blending companion for Riesling. The bouquet is intense and complex, offering an explosion of exotic fruits such as lychee, passion fruit, pineapple and mango characters with rose petal, gardenia, honeysuckle and even spicy (gingerbread, peppermint, cloves and pepper) aromas. The name Gewurztraminer literally translates as spicy Traminer.
FIANO – This variety is relatively new to the Hunter Valley, and also Australia. This Italian native from the Campania region is low yielding and early ripening and produces crisp, wellbalanced wines that offer floral and honeyed flavours that are complemented by tropical fruit and spice nuances. A great pick for all white wine lovers.
