GWYNETH OLSEN Talented winemaker Gwyneth Olsen joined Briar Ridge as their new winemaker vintage at Briar Ridge where she was involved in everything to do from the vineyard to the bottle. Raised in Cairns, Gwyn’s interest in travel saw 5 / ? 5 N 5 5 ? 5 / - : ) - N = ( % O - kO - - O - ) / V 5 5 / - 5 / V O would be far more fun! This then led to Gwyn studying Oenology at Roseworthy University in Adelaide. After gradu ! kO O V ) - M 5 U #/ ? > 5 N O - H O � O - ) - N - - O � O - ( kO 55 5 /- - ) N 5 5 -- O � H ( % O - 5 /- kO W- passion and enthusiasm for wine saw her Z 5V - V- - O / V ( % - ccepted the position of Chief / V ? N O 5 -- O / V Gwyn was recently awarded the 2014 Gourmet G ) % # G I / V U a fantastic achievement for Gwyn who at just 31 years old has achieved so much in a relatively short period of time. SOMMELIER Apart from sounding pretentious, the word ‘‘sommelier’’ is a French word meaning ‘‘wine steward’’, and they are for the most part super passionate about what they do. Sommeliers can be an interesting bunch and are generally only found in our better restaurants, and those restaurants that specialise in all aspects of wine service as well as wine and food pairings. For many reasons, the role is much more specialised and informed than that of a wine waiter and in the - - - 5 - / - that of the executive chef. Most people’s dealings with sommeliers are limited to a brief conversation at a restaurant table whilst - 5 O O O their food, but there is a lot more to the sommelier’s X 5 V- ) -5 - N O ( G / - / O V N sommelier is in the areas of wine procurement, wine storage, wine cellar rotation and providing expert service to the restaurants clientele. A sommeliers duty may also include responsibility for the development of the restaurants wine list which in itself can be complex, involving constant
