y the time you read this, the long-anticipated Kitchen at Priest Ranch in downtown Yountville, should be officially open, serving up fast casual food, to enjoy on site, or to take away, all day long. From its cozy patio outback, to its novel airy rooftop lounge, this place is sure to become the place to be and to be seen. “Yountville really needs something like what we’re offering,” says Executive Chef Daniel Solomon, a Chicago area native who studied culinary arts at the Kendall Culinary Institute. After working at popular restaurants in one of America’s culinary hotbeds for two decades, he came to Napa to work at La Toque, an upscale Michelin-star restaurant, where he learned the finer points of the French approach to farm-to-table cuisine. Chef Dan told us, “During my time at La Toque, I gained a deep understanding of the relationship between food and wine and how they are ultimately one in the same. When I returned to my hometown, I was determined to bring my newfound philosophy and education to my work, pairing different flavors and ingredients together to create a truly exceptional dining experience that highlights the best of both worlds.” Now he brings that same experience and passion to the

innovative Kitchen at Priest Ranch, where he has a chance to pair his skillful cuisine with excellent Priest Ranch wines sourced from the 1682-acre Somerston Estate in the eastern hills of Napa Valley. Based on fresh ingredients that change with the season, the KPR menu ranges from fun breakfast items like the “Gas Station Sandwich,” which combines a cheesy egg with braised bacon, local jam and B&B pickles on an English muffin, to lunch sandwiches like the ham panini with Jambon de Paris, Marin French brie, caramelized onion, pumpkin seed pesto and Calabrian chili maple glaze on focaccia. You definitely want the 2018 Peacemaker with that. Seasonal soups and salads, including the “Kind of Niçoise Salad,” featuring bitter greens, cherry tomato, shaved fennel, olive, marble potato, crispy ham, egg and mustard vinaigrette. You can top that with the optional market fish of the day or grilled chicken. Be sure to pair with the Priest Ranch 2022 Sauvignon Blanc. There’s also a “Hail Caesar!” with gem lettuce, house dressing, aged Parmesan sourdough croutons and lemon: another candidate for pairing with the 2022 Sauvignon Blanc. While enjoying a meal with a glass of wine typifies the Napa experience, there will also be a grab-n-go area with salads,


sandwiches, cookies and premade charcuterie boards. Good, solid, authentic food: all of it. Chef Dan tells us he’s got a great tomato soup recipe, so expect to see a grilled cheese sandwich joining the menu at some point. “I love food that is homey and nostalgic,” says Solomon. “We’re leaning into cuisine that’s easy to eat and made from the best possible ingredients.” Based on staff feedback during menu trials, the Herb French fries alone with KPR sauce, with their tender moist middle and crisp perfect exterior, along with the “KPR Angus beef Smashburger,” will make this hot new spot the talk of the town. For dinner, enjoy “Steak Frites” paired with 2019 Snake Oil, or the panseared market fish with shaved fennel, Castelvetrano olives and preserved lemon. There’s currently a fresh egg pappardelle with wild mushrooms, pesto and Calabrian chili, with a suggested pairing of 2019 Double Barrel. Chef Dan will also feature weekly additions driven by what’s fresh and in season. While the kitchen is small, the flavors are big, and he takes pride in sourcing from the best purveyors. Solomon already gets his amazing pork belly used in the famous Priest Ranch Wine and Bacon experience — which by the way, is so totally worth it — from Baker’s Bacon. “I believe that food and wine go hand in hand and look forward to creating a casual yet delicious menu that perfectly complement Priest Ranch’s portfolio of wines,” says Chef Dan. “Our collective goal is to create quality, approachable food that just tastes good. We’re not only feeding people, but we’re also providing an experience.”

Iconic Napa Valley Stalwart Reopens

hree years after the Glass Fire forced its temporary closure. Sterling Vineyards is excited to be able to reopen its doors Sunday, October 29, and welcome visitors back. Over the past three years, the Sterling Vineyards team has dedicated themselves to an extensive renovation project, breathing new life into this iconic Napa Valley estate. The transformation includes the introduction of a new groundbreaking aerial gondola – the only one of its kind at any winery – expanded tasting and tour offerings, as well as a comprehensive commitment to sustainability and fire mitigation. As part of the renovation, Sterling Vineyards replaced its beloved aerial gondola. The new gondola, designed and manufactured by Doppelmayr, offers larger, fully ADA accessible cabins and boasts 360-degree views of the northern Napa Valley – not seen previously. To take advantage of the breathtaking views, Sterling upgraded the gondola’s path of travel, offering guests a slightly longer ascent to take advantage of

now open for tour and tasting experiences the unobstructed views of the Palisades and Vaca Mountains. Sterling remains the only winery with an aerial gondola and one of the few triangular shaped gondolas in the world, making it a one-of-a-kind experience. Recognizing sustainability as a core value for the future of Napa, the Sterling Vineyards team intentionally designed the winery with its environmental impact in mind – the winery, including the aerial gondola is 100% powered by renewable energy. Additionally, drought resistant plants have been placed throughout the property and a new underground water tank was built to enhance sustainability and safety measures. To prevent future disruptions to the land, Sterling Vineyards has taken extensive measures in the preservation and protection of the property, starting with fire mitigation efforts. This includes clearing burnt native hillsides, assessing all at risk wineries in the Calistoga community, and bringing in sheep to graze the land regularly.

New Experiences

With new and improved attractions and the core identity of the original winery, Sterling Vineyards welcomes long time visitors and newcomers alike to the property with four new experiences: The Sterling Stroll, Tour and Terrace Tasting, Hilltop Tasting, and The Founders Experience. Guests interested in hosting private or corporate events can also book the St. Dunstan’s Room. Named after the signature bell’s that ring throughout the property, the St. Dunstan’s room welcomes up to 30 guests for an intimate wine tasting experience. All experiences include a round trip ride on Sterling’s Aerial Gondola. Guests are now able to book tours and tastings. The property is open Thursday through Monday from 10 am to 5 pm. Sequoia Grove Winery

Reaching New Heights with Mount Veeder AVA Acquisition Since its founding in 1978, Sequoia Grove Winery has become one of the most recognizable and critically renowned familyowned producers of Cabernet Sauvignon in the Napa Valley. Through the years, its label has become synonymous with Rutherford Estate wines ... crafted through grower partnerships into elegant wines that express the indelible characteristic from prestigious vineyards and premier AVAs including Atlas Peak, Coombsville, St. Helena, Calistoga, Oak Knoll, and Howell Mountain. Now, for the first time in its storied history, the winery is excited to announce that it has acquired 104 acres of land within the prized Mt. Veeder AVA. “Mt. Veeder represents an exceptional area for winemaking in Napa Valley and is the first mountain estate owned by Sequoia Grove,” notes Rick Bonitati, President of Sequoia Grove Winery. “We’re extremely enthusiastic for how this acquisition helps diversify our estate properties, our grape sourcing, and the wines we will produce. It is especially important for us to invest in cooler climate sites like this one to help pave the long-term success of our winemaking program, opening up a new chapter and unique opportunity to express this compelling hillside terroir.” This new property, which sits above the fog line and was originally owned by winemaker Donald Hess, is a distinguished addition from both a viticultural and visual perspective. The vineyard reaches elevations of over 1,700 feet and straddles northeastern slopes of the mountain within the Mayacamas Range, unfolding via a steep road that meanders through a forested area and eventually opens to an expansive vista that spans from the Sonoma Coast to the Golden Gate Bridge. Mt. Veeder is the coolest of Napa Valley’s Mountain AVAs, enjoying gentle morning sun and cool marine breezes in the evening pulled in from San Pablo Bay. This, combined with the unique soils that are remnants of an ancient seabed, result in vines with small berries that are full of concentration and complexity. In the glass, they produce vibrant, mineral-driven Cabernet Sauvignons with a well-defined structure that emphasize balance and invite long-term aging. After taking an initial selection of fruit from the 2023 vintage,

Sequoia Grove will begin a two-year replant with a focus on Cabernet Sauvignon and other Bordeaux varieties. Along with its work in the vineyards, Sequoia Grove will maintain the 73 acres that are currently forested as part of its ongoing commitment to preserve Napa Valley’s natural landscape “Mt. Veeder produces wines of both power and elegance,” says Jesse Fox, Winemaker at Sequoia Grove. “The elevation and highly desired soil profiles produce balanced, structured, and complex wines that have remarkable hillside diversity. This new acquisition is incredibly exciting to me as a winemaker as well as for the future of the winery; it is a privilege to incorporate this site into our vineyard estates.” Sequoia Grove’s holistic approach to its place within Napa Valley has continued to evolve over the last decade. A complete re-imagining of the winemaking facility and hospitality space culminated in 2018, and all estate vineyards have been or are undergoing complete replants. The recent Mt. Veeder acquisition adds to its 2021 acquisition of the State Lane Vineyard in Yountville, bringing their total farmed estate vineyards to 120 acres. Further, the winery continues to build upon its commitment to precision farming techniques, viticulture, and sustainability. Deeply invested in environmentally responsible practices throughout, Sequoia Grove is certified as a Napa Green Winery and its estate vineyards are certified Napa Green Vineyard and Fish-Friendly Farming.


Winery Favorites for your Thanksgiving Table Thanksgiving is a time for culinary indulgence and the perfect occasion to explore the art of food and wine pairing. For squash dishes like pumpkin and butternut, the buttery creaminess of a Chardonnay will complement the same subtly sweet, nutty flavors whereas a bright Sauvignon Blanc or fruity Syrah will offer a nice contrast against the squash’s sweetness. A Mushroom Risotto gets an earthy boost with the addition of Pinot Noir in the recipe, and it’s also our choice for your glass to emphasize the fungi’s umami quality. The sweet-tart flavors in an Apple Cranberry Crisp mimic the crisp apple note in a blanc de blancs sparkling wine. It’s the perfect sip to cap off a festive meal in style.

These traditional Sicilian risotto balls are the perfect make-ahead Thanksgiving appetizer. While labor intensive, these delicious arancini can be made up to two months ahead of time and kept frozen until your holiday guests arrive. This recipe is creamy, cheesy, and has the perfect hint of pumpkin.

Pumpkin Purée

Ingredients

1 pie pumpkin 2 sprigs thyme Olive oil, to taste Kosher salt, to taste Fresh ground black pepper, to taste 1/4 cup chicken stock

Directions

1 Heat oven to 400°. 2 Slice pumpkin in half and remove seeds. Place on a parchment-lined baking sheet, drizzle with olive oil, salt and pepper to taste, and place thyme sprigs in cavity of pumpkin. Roast cut-side up until soft and cooked throughout, approximately 45-60 minutes. 3 Scrape cooked pumpkin into a blender or food processor, add just enough chicken stock to process until smooth. NOTE: Purée can be made a head of time and frozen for up to two months.

Risotto

Ingredients

2 tablespoons olive oil 1 large shallot, minced 2 cloves garlic, minced 1 cup Carnaroli rice 1/4 cup Chardonnay 3-4 cups chicken stock 1/4 cup pumpkin purée 2 ounces butter 2 ounces mascarpone cheese 1/8 cup Parmesan Reggiano, grated Kosher salt, to taste Fresh ground black pepper, to taste

Directions

1 Heat oil in a large straight walled sauté pan. Add shallots, sweat until translucent, then add garlic, and cook 1 additional minute. 2 Add rice, and parch, coating the grains in the fat for 1 minute. Add in Chardonnay and allow to reduce for 1 minute or until pan is almost dry. 3 Add 1 cup of stock, and let simmer, stirring occasionally. When the stock is reduced to nearly dry, add another cup of the remaining stock. Repeat the process a third time, checking the rice to make sure it is tender. If not, add more stock and repeat the process a fourth time. Season with salt and pepper. 4 When rice is cooked, and stock is reduced, stir in butter, mascarpone cheese, Parmesan, and pumpkin purée. Season to taste. 5 Continue to cook until the consistency has a slight flow, but most of the liquid is reduced.

Arancini

Ingredients

20 each, Sottocenere al Tartufo Cheese, 1 cup seasoned flour* 4 eggs, blended with 1 teaspoon milk and a pinch of salt 3 cups Ritz cracker crumbs *Seasoned Flour Measurements do not need to be exact and can be adjusted to taste. For 4 cups flour, use 1 tablespoon sugar, 1 tablespoon salt, 1 teaspoon or 40 turns of fresh ground black pepper, 1 teaspoon paprika, 1 tablespoon garlic salt, and 2 shakes of cayenne.

Directions

1 Make risotto ahead of time, and chill overnight. It is much easier to work with when it’s cold. Take a small amount of risotto and mold around the cheese to cover completely. Use just enough risotto to cover the cheese for the best rice to cheese ratio. 2 Lay balls out on a sheet tray and freeze until solid enough to bread – approximately 2 hours. 3 Bread arancini by coating first in a layer of flour, then egg wash, then Ritz crackers. For best results, double bread by repeating the process a second time. 4 To cook arancini, heat a deep fryer filled with canola oil to 350°F or use a pot with enough oil to submerge arancini. Fry arancini 3-5 minutes until golden brown. Use a thermometer to make sure arancini have reached an internal temperature of 165°F. If not, heat in oven until desired temperature is reached. 5 Serve arancini either by themselves or with a dipping sauce such as left over pumpkin purée, marinara sauce, or butternut squash pasta sauce. NOTE: Breaded arancini can be frozen for up to 2 months prior to use. Do not thaw arancini or they will become soggy.

Pumpkin Soup Ingredients

1 onion finely sliced 2 tablespoons extra virgin olive oil 1 pound of pumpkin pulp, cut in cubes 1/3 cup rice milk Water as needed Salt and pepper as needed 1 tablespoon extra virgin pumpkin oil (garnish)

Directions

1 Place pumpkin cubes in one layer on parchment lined oven sheet pan. Season cubes with a drizzle of olive oil and a pinch of salt. 2 Bake in the oven at 320°F for about 30 minutes, until soft. 3 Add rest of oil to a medium saucepan, add the onions and cook them on low heat until soft. Add the baked pumpkin and cover with water. Simmer for 15 minutes then blend with a hand blender until smooth. Add salt and pepper at taste. Keep warm.

Pickled Pumpkin Skin Ingredients

• 1/4 cup pumpkin skin, julienne sliced • 1/4 cup rice vinegar • 1 tablespoon Sauvignon Blanc • 5 peppercorns • 2 coriander seeds • 2 cardamom seeds • 1 small piece of cinnamon stick • 1 pinch of salt

Directions

1 Blanch the skins in salty boiling water for 5 minutes. Cool in an iced water bath. 2 In a small saucepan, add vinegar, wine, salt and spices and bring to a boil. Add the pumpkin skins, turn off the heat, and let the pot cool down to room temperature. Best to prepare the pickled skins a couple of days in advance and keep refrigerated.

Pumpkin Seeds

Ingredients

Seeds of one pumpkin, washed and dried 2 tblsp of extra virgin olive oil 1 pinch of salt

Directions

Toss pumpkins seeds with oil and salt until evenly coated. Place seeds in a single layer on a parchment covered sheet pan. Roast for 20 minutes at 350°F. Cool down to room temperture and removed shells by cracking.

Pumpkin Chips

Ingredients

12 thin slices of pumpkin pulp

Directions

Set the pumpkin sliced pulp on a parchment covered sheet pan. Dehydrate at 220°F for 2 hours. Allow to cool and reserve in a jar.

Presentation

Divide the hot soup into four bowls. Add the pumpkin seeds and a drizzling of the pumpkin oil. Top each with pickled pumpkin skin and finish with the pumpkin chips.

Inspired by Marcia Kiesel, foodandwine.com, updated with local ingredients . 12 servings

Butternut Squash and Polenta Gratin Ingredients One 1 ½ pound butternut squash Extra-virgin olive oil, plus more for drizzling Salt and fresh ground pepper 8 cups of water 2 cups dry instant polenta* 8 tablespoons (one stick) unsalted butter 4-5 ounces Teleme Cheese* (or you can substitute with 1 cup grated Asiago or Parmesan) ½ cup grated Asiago or Parmesan cheese Pinch of nutmeg 1 teaspoon of fresh thyme * Follow the directions on the instant polenta package for water to polenta ratios as it may vary from our recipe. * We love the tang and creamy richness of Teleme, a cheese whose roots are in our own backyard of Northern California. If this cheese is hard to find at your local market, please substitute.

Directions 1 Preheat the oven to 375°. Butter a large ceramic baking dish. Cut the neck of the squash off the bulb end and halve it lengthwise. Reserve squash neck. Scoop out and discard the seeds. Drizzle the halves with olive oil and season with salt and pepper. 2 Set the squash halves on a small baking sheet, cut side down, and bake for 30 minutes, or until tender. Scrape the flesh of the squash into a mixing bowl and smash with a fork or wooden spoon. 3 Peel the squash neck and halve it lengthwise. Using a mandolin or sharp knife thinly slice the squash cross-way (about 1/8 inch thick). Lightly oil or spray a large rimmed baking sheet and arrange the squash slices. Cover with tin foil and bake for 12–15 minutes, or until tender. 4 Remove the soft rind and cube Teleme cheese. Reserve. 5 Remove the sliced squash neck from the oven when done and reduce the oven temperature to 350°. 6 In a large saucepan, bring the water to a boil. Add 2 tablespoons of olive oil and slowly add the dry polenta, whisk constantly until smooth. Reduce the heat to low and whisk until thickened, 3-5 minutes. If the polenta seems too stiff, simply add more water until you reach the desired consistency. Fold in the smashed squash, 6 tablespoons of butter and the Teleme cheese. Season with salt, pepper and nutmeg. Spread the squash and polenta mixture in the prepared baking dish and overlap the squash slices on top. Sprinkle with fresh thyme. Dot the top with remaining 2 tablespoons of butter. 7 Sprinkle the ½ cup of Asiago cheese over the top and bake until golden brown and bubbling,

Pinot Noir & Mushroom Risotto Ingredients 2 tablespoons olive oil 2 cups Carnaroli or Arborio Rice 1 cup yellow onion, minced 1 tablespoon garlic, peeled and minced 1 cup Ferrari-Carano Pinot Noir, reduced to ½ cup 3½ cups mushroom stock, hot 3½ cups chicken or roasted vegetable stock, hot 1 pound Brown Clamshell mushrooms, roasted To taste, Kosher salt To taste, black pepper, freshly ground

Directions 1 Heat the chicken and mushroom stock and reserve. 2 In a large pot or sauté pan on medium to high heat, add the olive oil. Toast the rice for 2-3 minutes then add onion, sweat the mixture for another 4-5 minutes and add the garlic. 3 Deglaze with the Pinot Noir reduction, then immediately add about 2 cups of stock. 4 Continually stir adding more stock as it is absorbed into the rice. This process will take 20-25 minutes. 5 When all stock is incorporated, add half of the roasted mushrooms, both cheeses, chopped parsley and the butter. 6 Remove from the heat, adjust seasoning with salt and pepper. 7 Scoop into serving dish and add remaining mushrooms for garnish.

Get in the holiday spirit with these Thanksgiving-friendly sips. DeLoach Vineyards 2020 Estate Pinot Noir, $90 Pinot Noir is a classic Thanksgiving wine due to its lighter-bodied style and bright acid — wine qualities that help to enrich culinary flavors and textures, instead of masking them. This estate Pinot from DeLoach gives quintessential Russian River Valley aromas of cherry, raspberry, and orange zest; the palate delivers a silky texture juxtaposed by vibrant acidity, with flavors of spiced plum cake, strawberry, and vanilla. It’s a stylish Pinot Noir fit for Thanksgivings full of friends and family.

Markham Vineyards 2019 Oak Knoll District Merlot, $57 This is a classy Merlot from a producer who champions the varietal. The 2019 Oak Knoll District Merlot from Markham Vineyards sees 26 months of aging in a balanced 57% new French oak, which gives it the extra oomph the varietal likes from time in barrel. It has a soft profile with texture and finesse, and offers up aromas of plum, Rainier cherry, and baking spice. On the palate cherries and dried blueberry coalesce nicely with the hints of oak-influenced vanilla and tinges of garrigue. This is a lovely Merlot and one that will please all palates alongside a scrumptious Thanksgiving meal. Mount Veeder Winery 2017 Reserve Red Blend, $135 Thanksgiving feasts dish up a bevy of cuisine, which is why a balanced red blend can go a long way when it comes to versatile pairing. The 2017 Reserve Red Blend from Mount Veeder is a fantastic selection, as it has five years of bottle age on it and as a result, it shows off some nice savory qualities. Sage and black tea mingle with still-ripe fruit flavors of black cherry, blueberry, and dried figs. Sweet vanilla and baking spice provide an extra layer or complexity in this well-balanced, Cabernet Sauvignondominant blend fit for fine Thanksgiving fare. Small Vines Winery 2021 TBH Vineyard Pinot Noir, $100 The 2021 TBH Vineyard Pinot Noir from Small Vines Winery is made from estate vineyards in the Sonoma Coast appellation. The growing site is heavily influenced by the cool coastal winds and the grapes are harvested in multiple passes, allowing for an incredible balanced Pinot Noir that is unmasked by heavy oak — the barrel program for this wine is 15 months on fine lees in 8% new French oak, 92% neutral. The producers are really focusing on the terroir and fine selection of clones (Calera, Swan, and Pommard are a few), and it shows in every sip. This unadulterated expression is beautiful with notes of raspberry, cranberry, forest floor, and subtle minerality. It’s elegant and fresh, and lingers long after the sip. This is a stunning wine and will liven up any holiday feast.

And, if you order any dish where a side is offered, upgrade to the light, fluffy biscuits. Sit outside and enjoy the morning and when the food is presented, you may just want to take a picture before you lovingly take that first bite, BOUCHON BAKERY, YOUNTVILLE which will be as good (or better) than it looks. Local favorites include the Eggs Benedict with Country Potatoes, or the Kitchen Sink Skillet Scramble with everything but the kitchen sink! The lunch menu is as enticing as the breakfast menu from fresh and light salad options (Strawberry Beet Salad) to traditional sandwiches and burgers with a twist (Jalapeño Popper Fried Chicken Sando). In addition to using fresh, local, sustainable ingredients, Sunflower Caffe has a “no tipping” policy. Dedicated to their employees and community, they apply a 15% “health and happiness” surcharge to your order to benefit their employees. So, start your day off with tasty food that’s good for you, while you “do good” for the people of the community that are serving you.

Valley Bar + Bottle | Sonoma Valley Bar + Bottle is a a neighborhood restaurant, wine bar, and bottle shop. Open Thursday through Monday, from 9 am to 9 pm with a small break from 3 to 5. Valley offers simple house-made pastries and light breakfast items every morning from 9 am to 11 am, including granola, bagels and breakfast sandwiches. Mount Veeder Winery Celebrates Milestone 50th Anniversary The iconic Napa Valley winery rings in 50 years of winemaking excellence Mount Veeder Winery, a pioneer in crafting distinctive wines that capture the essence of the rugged Mount Veeder appellation, is thrilled to announce its 50th anniversary as a beacon of quality, innovation, and terroirdriven winemaking. Since the first vines were planted in 1970, the winery has been committed to producing wines that perfectly express their unique mountain terroir while preserving the integrity of the land. This year marks 50 years since Mount Veeder Winery’s first vintage in 1973. Mount Veeder Winery was born from a labor of love when Michael and Arlene Bernstein first discovered the rugged Mayacamas Mountain territory overlooking the Napa Valley in 1964. Encouraged by their friend and Napa legend Robert Mondavi, they purchased a 20-acre prune farm on Mount Veeder and established its first winery. They soon made history as the first vintners in Napa Valley to plant Petit Verdot, and the first to plant all five of the classic Bordeaux varieties on the same property. “Fifty years is an incredible accomplishment, as the wines of Mount Veeder Winery are known for their graceful evolution with time,” says General Manager Jason Smith. “The power and structure they are known for in their youth turns into layers

of complexity with age.” Today, Mount Veeder Winery has three vineyard ranches nestled high in the Mayacamas Mountains above Napa Valley, including Rosenquist Ranch and North Ranch. The vines are planted on wide terraces of earth at elevations ranging from 1,000 to 1,600 feet. This high elevation provides diverse microclimates for a wide variety of growing conditions and fruit profiles and allows all the key Bordeaux grapes to prosper. These high-altitude grapes contribute to extraordinarily expressive wines renowned for their intensely concentrated bold and rich flavors. The Mount Veeder profile consists of Cabernet Sauvignon and Bordeaux blends. In an already celebratory year, Mount Veeder Winery is also thrilled to announce their new winemaker, John Giannini. Calistoga Winter in the Wineries Passport Two Months of Napa Valley Wine Tastings

isit Calistoga’s “Winter in the Wineries” Passport gives wine lovers over two months of one-time complimentary tastings at nineteen local wineries for just $75. From December 2, 2023, to February 4, 2024, visitors and locals alike can use their passports to discover something new or revisit a favorite winery. Collectible hard copy passport booklets and virtual passports are on sale on now and may be purchased online at visitcalistoga.com and at the Calistoga Welcome Center at 1457 Lincoln Avenue in Calistoga. With nineteen diverse participating wineries spread across the 12,000-acre Calistoga AVA (American Viticultural Area) and beyond, there’s something sure to please everyone. Most wineries are family-owned and a mix of boutique and larger operations. The warm and welcoming charm of Calistoga make its wine experiences authentically and uniquely their own. Each $75 passport provides over $750 worth of tastings alone, and exclusive access to complimentary tastings is just the beginning. In addition to the participating wineries, restaurants, hotels, spas, and boutiques are offering special discounts, deals, and experiences just for passport holders, making an immersive weekday or weekend getaway even more appealing. “A Winter in the Wineries Passport encourages guests to return again and again to try different locations, from elevated to cozy and casual. Guidelines and Etiquette to Enhance Your Wine Tasting Experience Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Following the guidelines and etiquette tips below will help enhance your experience as you travel through wine country. Due to Covid-19, there have been changes to the wine tasting adventures. So please before you go: • Plan in advance. Most wineries are now by appointment and in some cases “as space is available” (should you not have made reservations). Don’t be shy to ask at the last minute, but understand they may be full or be reserved. • Understand that there may be a time limit • Ask about the different tasting experiences and costs. • If you plan to “share” a tasting, ask if it is okay. You may still be charged per person. • If this applies, ask if the winery is dog/child friendly. • Be sure to adhere to individual, local and state guidelines in place at the time (i.e. mask wearing until seated, etc.) • Be flexible • Don’t be self-conscious to share a tasting (*if appropriate) with your companion – it’s not looked on as being cheap, in fact, it’s smart. • Don’t worry if you think you don’t know good wine. “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those little sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass … and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will!

• Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)? •A sk questions! Remember … there are no stupid questions. You are there to enjoy and learn, and your server is there to help. •D on’t feel pressured to buy a bottle or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bottle). • L eave a tip if you have had a nice experience ($5-$20 is a general rule, depending on the type of tasting). • Don’t wear scents into a tasting room (cologne or perfume), and best not to wear white! •A sk your server to recommend their favorite wineries to visit. •S eek smaller, out-of-the-way, boutique wineries. • Eat breakfast before you leave for the day and … hydrate – hydrate – hydrate! Hint: Drink one glass of water for each glass of wine. •B ring something to snack on such as crackers, breadsticks or a baguette, (but inquire in advance if outside food is okay to bring in). Take time for lunch. When picnicking at a winery, never bring wine from another winery •D on’t try to do too much. In general, three to four wineries will fill your day. • I f possible have a designated driver (or use a driving service). If staff feels you have had enough to drink they may refuse service, it’s for your own well-being. •T rust your palate. Don’t worry if you don’t like what your friends or companions like.
