ven here in the casual atmosphere of wine country, there’s often a slight formality associated with tasting bubbly wines. The sampling experience is, at times, held in a grand salon with formal seating and a rather structured approach to service. Most of the winemaking terminology used to describe sparkling wine production is primarily done in the French language – all of which can be daunting for newcomers to learn about méthode champenoise, a sparkling wine process which uses a natural secondary fermentation in the bottle to achieve the rounded and delicate bubbles in the wine. At Breathless Sparkling Wines in Healdsburg, your foray into the effervescent is never intimidating or ceremonious. The three founding sisters of Sharon Cohn, Rebecca Faust, Cynthia Faust, and award-winning veteran winemaker Penny Gadd-Coster (dubbed sister number four) created the winery in loving memory of the sisters’ late mother, Martha Jane. She imparted the notion to her girls that every breath we take is a precious gift and ought to be enjoyed to the fullest. And so, Breathless Sparkling Wines was born.

SIPPING AL FRESCO

Located within walking distance of the Healdsburg Plaza, the stylish tasting room is where industrial meets glam. Built out of shipping containers, the interior design is reminiscent of the flamboyant Art Deco period of the 1920s. Mixed metals, white marble accents, Parisian blue walls, and glistening chandeliers inside the space set the vibe for a celebratory moment awaiting you. Their outdoor tiered terrace feels secluded and one with nature, allowing you to sip at a leisurely pace under the protection of shade umbrellas and redwood trees whilst overlooking a beautiful drought-resistant garden.

The collection of sparkling wines has grown to 15 different bottlings. Focusing on the finest selection of Pinot Noir, Pinot Meunier, and Chardonnay grapes sourced from Carneros, Russian River, Dry Creek Valley and the North Coast regions, their lineup of varietals continues to expand with the popularity and quality of their wines. From single vineyard Pinot Meunier sparkling, to an incredible Late Disgorged bottling, and a coveted Ratafia dessert wine, the choices of which cork to pop and enjoy are extensive. Behind the Scenes VIP Tour: An educational 40-minute tour of the production facility will take you through the méthode champenoise process. See the original riddling rack, the new gyropallets – huge robotic machines, and the disgorging line –followed by a tasting of their current releases. Caviar Picnic: Treat yourself to this decadent experience with handcrafted, small-batch farmed California White Sturgeon Caviar from Tsar Nicoulai, organic locally sourced crème fraîche and savory gourmet potato chips. Serves up to four people. $55 per plate.

Sabrage Experience: This unique tasting experience gives you one-on-one instructions from their experienced Sabrage Guide who will teach you the proper technique of opening a bottle of sparkling using impact from a Champagne saber. This newly opened bottle, by your own hand and sword, is yours to enjoy on the property with your guests. $75 per reservation. For an additional fee of $139, a French saber is yours to take home for future bottle saberings. Allow 90 minutes.

Bubbly and Bonbons: Add to your sparkling experience with local, crafted-by-hand chocolate bonbons from heralded chocolatier, Chef Nieto at Fleur Sauvage. Their custom-made flavors change with the seasons for a decadent offering yearround. $14 for 4 pieces of chocolate.

BODEGA BAY

History, Ecology and Movie-Making

Bodega Bay, a small coastal village of about 1200 people, is steeped in history and beauty. It offers the traveler endless opportunities to explore nature, dine on fresh coastal seafood, and relax. However, while visiting Bodega Bay, please watch out for the birds.

Situated on the Sonoma Coast, Bodega Bay and the neighboring village of Bodega are possibly best known as the locations for Alfred Hitchcock’s horror film, The Birds. Nearly three years in the making, The Birds was released in 1963, starting an age of horror fantasy films that brought interest to this area that has lasted sixty-plus years.

A lesser-known fact and one of historical importance was an event that culminated in 1964, a year after The Birds was released.

In 1958, PG&E announced plans to build a steam-powered generating plant at Bodega Head, on Bodega Bay. However, as details emerged, the plans were for this to become the world’s first commercially viable nuclear power plant. As information spread, a grassroots movement evolved from the local residents such as a waitress, a housewife with children, a widowed landowner, and others who lived in and were concerned about the community. These ordinary citizens formed a solid opposition to PG&E’s plans. Finally, in 1964, these plans were decertified when PG&E withdrew their application.

“The Birds” may have put Bodega squarely on the map in the eyes of the world due to Hitchcock’s masterpiece; however, Bodega Bay and the surrounding communities had a much more significant national and international effect, showing what activism can do. This small, quaint coastal village may be most important as “the birthplace of the anti-nuclear and environmental movement,” as local concerned citizens took up the mantle of protecting the environment.

Whether visiting the area to steep yourself in the history of movie-making or the environmental movement or to relax, regroup, and recharge your mind, body, and spirit, Bodega Bay offers an atmosphere long lost in most areas. It is a quaint fishing village filled with coastal diners, fish markets, small local stores, hikes, water activities, and beautiful unspoiled views. Check it out for yourself.

Where to Stay, Eat and Play

Six decades after filming The Birds, tourists, film buffs, travelers, and adventurers continue to flock to Bodega Bay to explore this Sonoma Coast fishing village.

Spanish explorer Sebastian Vizcaino discovered the area in 1602, and over 150 years later, in 1775, Juan Francisco de la Bodega y Quadra sailed into the bay, establishing contact with the Native Americans and beginning a fur and agricultural trading center. When you visit Bodega Bay, take some time to close your eyes and visualize the history of this area.

Take a drive out to Bodega Head – where, if it weren’t for visionaries and activists, there could be a nuclear power plant instead of shorebirds, clear water, sheep and cows, trees and scrub brush.

While you sip a glass of wine, watching the sparkling bay stretched out in front of you, with windsurfers and kiteboarders zipping back and forth, you can reach out and touch them. Although a luxury lodging, it is unpretentious and tasteful, with a friendly staff and exquisite grounds.

Located across the street from the Inn is The Tides Wharf Restaurant (which was filmed in The Birds). You can have dinner here and your breakfast, (which is included), sitting bayside and relaxing. The Inn at the Tides is only one of many delightful choices that fit any taste and budget. Newly opened next door is Rockers Oysterfeller’s. The cozy atmosphere, combined with stunning views of the coastal landscape, makes it a perfect spot for seafood enthusiasts. Guests can enjoy the vibrant flavors while soaking in the charm of Bodega. In addition, Bay View Restaurant has just reopened (dinners Thurday-Sunday only) with a new chef and weekly specials.

Seafood, seafood, and more seafood is abundant. Here are a few more choices to consider: Terrapin Creek, Gourmet Au Bay, Spud Point Crab Company, or Anello Family Crab and Seafood

As you drive along the bayside road, you will see fun stores dot the coastal route, so be sure to stop in and visit the following: Patrick’s of Bodega Bay (since 1960) is for the saltwater taffy lover! Candy and Kites (since 1983) features a large selection of kites to take down to the beach and oh-sofun garden art to take home! For beachy souviners, visit the gift shop at The Tides Wharf Restaurant or Harbor View Gifts and Goodies

Sporting opportunities are plentiful: Surfing, whale watching, fishing, hiking, biking, kayaking, horseback riding. Or, just meander around the bay and local areas – you will feel frozen in a wonderful time warp.

Tinned Fish & seafood

Tinned fish boards have become a delicious twist on charcuterie spreads and traditional entrees. As an appetizer, these vibrant platters showcase a variety of flavorful canned seafood, all beautifully arranged alongside an array of accompaniments like crusty bread, pickles, olives, and artisanal cheeses. Cans of sardines, mackeral, anchovies, herring, octopus, mussels, smoked oysters, and squid joined ubiquitous tuna as convenient, delicious, nutrient-packed, shelf-stable, pantry staples. While long commonplace in Europe, tinned fish gained momentum in the U.S. during the pandemic. Over $2.7 billion in sales were delivered last year!

WHERE TO GET YOUR TINNED FISH

Not only do tinned fish provide a unique culinary experience, but they also bring a touch of sustainability to the table, as canned fish often boasts a lower carbon footprint than other protein sources. Pomme Cider Shop and Tap Room, located steps away from Sonoma’s historic Plaza, recently posted a photo of colorful little cans on its Instagram account, asking: “Have you checked out our tinned fish wall? Over sixty different tinned fish have come through the shop and we’re just getting started. Hang out, crack a tin, stock up for home.”

Pomme Cider, home to eighteen rotating taps and over one hundred ciders, is not alone in its love affair with the eye-catching cans. Also known as conservas, the industry is one of care and cultural tradition. Catch is processed promptly, ensuring straight-out-of-the sea flavor with no taint of “fishy.”

Just off Healdsburg’s central plaza, Ciao Bruto! opened two years ago as a wine shop dedicated to Italy, although you will also find a curated selection of coveted French Champagnes among the hundreds of bottles carried. Spotlighted are the organic and biodynamic wines of Italy’s Piedmont region. Special attention is paid to winemakers who farm their own grapes and produce in small quantities.

Ciao Bruto! is also a small grocery of high-end Italian food products. Among the pastas, olive oils, cheeses, and cured meats are some forty varieties of tinned fish, one proudly noting on its tin that the company has been in the business since 1896.

While Ciao Bruto! does not offer tastings, its nextdoor neighbor Idlewild Wines, of which Ciao Bruto! is an offshoot, does. Idlewild also focuses on Piedmontese varieties – Nobbalio, Dolcetto, Freisa and Arneis – albeit from grapes grown in the hills of Mendocino County.

At The Punchdown Natural Wine + Bottle Shop (located at The Barlow in Sebatopol), tinned fish has become a celebrated staple, perfectly paired with their curated selection of natural wines. Each can offers a delightful burst of flavor making them an ideal choice for a casual snack or an elegant “seacuterie” board. The shop emphasizes sustainable sourcing, ensuring that each bite not only tastes great but also supports responsible fishing practices.

With their ease of preparation and the ability to cater to diverse tastes, tinned fish boards are sure to impress guests, sparking conversation and celebration at any gathering. Whether you’re hosting a cozy get-together or a lively festive feast, these boards are the perfect way to elevate your holiday spread.

WHERE TO ENJOY CONSERVAS

The Shuckery, a seafood restaurant and oyster bar in downtown Petaluma’s historic Hotel Petaluma, lists a menu of fourteen different conservas. Plated with pickled vegetables and toasted baquette, tins come from Portugal, Spain, Alaska, Washington state, and Canada processors.

Bravas Bar de Tapas in Healdsburg includes eleven tinned tapas on its menu. Included are such unusual tastebud tempters as Octopus en Salsa de Ajo, Spiced Calamari in Ragout, and Grilled Squid in Ink.

At the northern end of the Napa Valley, in a charming late 19th-century built Calistoga cottage and its gardens, Lola Wines invites a tasting of its wines with the added on pairing of conservas unique to the winery, those of Cortez Conservas.

Lola’s proprietor and winemaker Seth Cripe is a founding member of family-owned Cortez Conservas, the first producer of Bottarga and Mojama conservas in the United States. Fish are wild caught in the pristine waters off Amelia Island on Florida’s Gulf Coast.

HOLIDAY SEACUTERIE BOARD

Roll back the tops of two to four cans of tinned fish, number depending on the size of your gathering, and place them as the stars of the board. Surround them with accoutrements, aiming for a balance of sweet and salty flavors and soft and crunchy textures.

Include little piles of fruits, perhaps grapes and apple slices, and such colorful vegetables as carrot sticks, radishes, olives, pickled red onion. Unlike a charcuterie board, in which cheeses share the show with processed meats, offer but one soft and one semi-hard.

Crackers and lightly toasted slices of baquette serve as seafood delivery vehicles while providing a bit of crunch, as do the interior small leaves of Little Gem lettuce.

When all is arranged, as a finishing, festive touch, surround the entire board in a wreath of rosemary clippings.

In a process followed since Phoenician times, mullet roe is pressed, salt-cured and sun dried to create Bottarga. A similar process creates Mojama from blackfin tuna. With a texture similar to a semi-hard cheese and considered a delicacy, they are most frequently grated as a recipe’s finishing touch.

Lola, however, presents the conservas in their purist form, atop a slice of baquette smeared with premium butter.

Priest Ranch Tasting Room

Part one begins at the winery’s Yountville tasting room where Priest Ranch wines, produced from fruit grown high in the hills of the Vaca range on Somerston Estate acreage, have been showcased since 2010.

In 2020, the tasting room emerged from renovation, its wine bar atmosphere replaced with the sophisticated, yet comfortable, lounge-like like setting enjoyed today. • 2.5 pounds ground lamb

• 1/2 pound yellow onion

DIRECTIONS

Blend all ingredients, except for the ground lamb, in a blender. Once blended, fold ingredients into the ground lamb mixture. Once mixed shape meatballs and roast in the oven at 500° F degrees until fully golden brown (about 10-15 minutes). Serve these meatballs with your favorite tomato sauce and pasta or just serve as a meatball appetizer with a glass of Reserve Cabernet.

BUTTERNUT SQUASH SOUP WITH YOGURT DRIZZLE

Pair with 2022 Imagery White Burgundy

INGREDIENTS

FOR THE SOUP:

• 2 tablespoons unsalted butter or coconut oil

• 1 apple, diced

• 1 yellow onion, diced

• 2 carrots, diced

• 1 large butternut squash, diced

• 1 can coconut milk (13.5 ounce)

• 1/4 teaspoon cayenne

• 1 lemon, juiced

• salt and pepper, to taste

• 32-ounce carton vegetable broth, use as needed

FOR THE TOPPINGS:

• ¼ cup plain yogurt

• ½ cup pomegranate seeds

• ½ cup black sesame and/or toasted pumpkin seeds

FOR THE GRUYERE TOAST:

• 1 6-ounce package gruyere

• 1 baguette

DIRECTIONS

1. Preheat the oven to 425°F. Toss the diced butternut squash in about a tablespoon of oil and place into the pan and add salt—cook for about 45 minutes to 1 hour. Cook until the squash has a golden hue. Alternatively, you may skip this step and use frozen butternut squash and cook in vegetable broth, along with the following step.

2. I n a large pot place over medium-low heat, sauté the diced onion, apple, and carrots in the butter or coconut oil. Once cooked and the onions are translucent, add in the cooked butternut squash. After a few minutes, add everything in the pan to your blender along with the cayenne (optional), lemon juice, salt, and pepper. Add the coconut milk to a small pot and bring to a simmer, then remove from heat. Slowly pour the warm coconut milk into the blender. Add the vegetable broth in until it just barely covers the more solid ingredients. The broth could be optional if you’re looking for a thicker soup.

3. Carefully, with a sealed blender, pulse the soup until smooth. Alternatively, use a hand immersion blender right in the pot. Once smooth and creamy, cover and set aside until it’s time to serve.

4. If you wish to enjoy with toast, slice the baguette and add to the oven or toaster to toast. Add the shredded gruyere to the top and finish off with a broil until the cheese melts. This should take just a couple minutes, so be sure to keep an eye on it.

5. Pour the soup into individual serving bowls. Drizzle the yogurt above the surface of the soup, and use the tip of a chopstick or bamboo skewer to pull the lines of the yogurt apart, and to create playful branches of swirling patterns. If working with a thicker yogurt, you may wish to thin it out with a touch of water to get a more flexible texture. Sprinkle all the seeds across the surface of the bowl. Add a touch of flake salt and freshly ground black pepper just before serving.

PUMPKIN RAVIOLO WITH SHAVED BLACK TRUFFLE

FOR PASTA DOUGH:

• 1 cup ‘00’ flour

• 4 egg yolks

• 1 whole egg

• 1 teaspoon olive oil

• 1 teaspoon white wine

• 1/2 teaspoon salt

FOR FILLING:

• 1 pie pumpkin

• 2 tablespoons olive oil

• Kosher salt and fresh ground black pepper to taste

• 3 sprigs thyme

• 8 ounces Bellwether Farms Basket Ricotta*

FOR SAUCE:

• 1 cup high-quality chicken or vegetable stock

• 4 ounces unsalted butter, cubed

• 2 tablespoons finely grated Parmesan, best done fresh during sauce preparation

• 1 tablespoon flat leaf parsley, chopped

• 1/2 ounce fresh black truffle**

DIRECTIONS

1. First, make the pasta dough, as the gluten in the flour will need time to rest. Place flour and salt in a stand mixer with the dough hook attachment. Make a small well in the center of the flour and add the liquid ingredients.

2. In a separate container, combine the egg yolks, whole egg, olive oil, and white wine. Whisk to combine. Add this wet mixture to the well of the flour and turn mixer to a slow speed until dough has formed. If dough is too dry (crumbly) add a small drizzle of water to help it come together. If the dough is too wet (sticky) add a small amount of flour. Dough is the correct consistency when it is firm and smooth, similar to modeling clay. Increase speed to medium and allow mixer to knead dough, or knead dough by hand on a floured surface for approximately 5 minutes. Wrap dough in plastic wrap and place in refrigerator to rest at least two hours or overnight.

3. To make the filling, pre-heat oven to 400°F. Cut pumpkin in half and remove seeds and pulp. Drizzle the “meat” of the pumpkin with olive oil, and season with kosher salt and pepper. Place pumpkin sliced-side-down on a parchment lined baking sheet and bake in preheated oven until soft, approximately 30 minutes.

4. Allow pumpkin to cool to room temperature, then scrape flesh into a food processor with ricotta and leaves from the thyme. Discard thyme stems and pumpkin skins. Pulse until smooth. Check flavor and add additional salt and fresh ground pepper if you like.

5. Scrape filling into a piping bag, and chill in the fridge at least 1 hour.

6. To make the raviolo, roll out the pasta dough into thin sheets using a pasta machine. Transfer to a lightly floured surface and cut out 4-inch rounds with a pastry or biscuit cutter. Pipe a ball of filling into the center of half of the pasta rounds, then brush the edges with water. Place another pasta round on top of each one and press the edges together to seal, stretching the dough slightly and molding it around the filling with your fingers to make sure there are no air gaps. Use a pair of kitchen scissors or a slightly smaller biscuit cutter to cut around the ravioli to neaten the edges.

7. When you are ready to cook and serve the raviolo, bring a large pot of salted

water to boil. In a separate large sauté pan, add chicken stock and allow to reduce by half. Turn heat to mediumlow, and slowly whisk in butter until incorporated. If your stock begins to break (separate) add a small amount of cold water to bring it back together. Using a micro plane or small grater, grate parmesan into the sauce, then whisk to combine.

8. Blanch the raviolo in boiling water for 3 minutes, remove, then add to the sauce. Allow sauce to simmer in the pan 1 additional minute to thicken, then add parsley.

9. To serve, gently spoon raviolo into bowl, and top with a spoonful of sauce. Grate fresh truffle overtop and serve.

* If Bellwether Farms Baskett Ricotta is not available, you can substitute a different brand. Just be sure to drain any excess water from the cheese if necessary.

** If using canned, preserved, or truffle butter in place of fresh truffle, incorporate into the sauce as the heat will make it more aromatic.

FILET MIGNON WITH PORT WINE REDUCTION

INGREDIENTS

• 4 filet mignon steaks (6-8 ounces each), about 1-1/2 inches thick

• Salt and black pepper to taste

• 2 tablespoons olive oil

• 2 shallots, finely chopped

• 2 cloves garlic, minced

• 1 cup beef broth

• 1 cup port wine

• 2 tablespoons unsalted butter

• Fresh thyme sprigs for garnish (optional)

DIRECTIONS

1. Preheat your oven to 400°F.

2. S eason the filet mignon steaks generously with salt and black pepper on both sides.

3. H eat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the filet mignon steaks and sear on both sides until golden brown, about 2-3 minutes per side.

4. Transfer the skillet to the preheated oven and roast the filet mignon steaks to your desired level of doneness, about 5-7 minutes for medium-rare (or until the internal temperature reaches 135°F). Remove from the oven and transfer the steaks to a plate.

Tent loosely with foil and let them rest for about 5 minutes.

5. I n the same skillet used to cook the steaks, reduce the heat to medium. Add the chopped shallots and minced garlic. Cook, stirring occasionally, until softened, about 2-3 minutes.

6. Pour in the port wine and beef broth, scraping up any browned bits from the bottom of the skillet. Allow the liquid to simmer until it reduces by half, about 5-7 minutes.

7. Stir in the unsalted butter until melted and the sauce is thickened and glossy. Season with salt and pepper to taste.

8. To serve, place the filets on plates and drizzle with the port wine reduction sauce. Garnish with fresh thyme sprigs if desired.

BRAISED BEEF SHORT RIBS

with Romesco, Salsa Verde and Roasted Seasonal Vegetables – pair with Robert Mondavi Winery 2022 The Estates Merlot Oak Knoll

Short Ribs

INGREDIENTS

• 4 pounds boneless beef short ribs

• 2 quarts beef broth or chicken broth

• 1/2 bottle red wine

• 1 onion, sliced

• 5 cloves of garlic, sliced

• 1 tablespoon black peppercorns

• 1 bunches English thyme

DIRECTIONS

1. B raising liquid — sauté onion and garlic, add wine, reduce by half, add spices and stock, reduce by half. Chill until ready to use.

2. S eason short ribs with salt and pepper.

3. Roast short ribs in convection oven at 400°F for 10 minutes until browned. Transfer to a braising pan and add the braising liquid. The liquid should come to at least halfway up the meat. Cover with foil and cook in an oven at 325°F for 2 ½-3 hours. The meat should be fork tender when done. Cool in the refrigerator. Once cool cut into 4-5 oz portions and put in a new braising pan with a bit of the liquid, cover with foil to reheat. Reduce the rest of the braising liquid by half to use as a sauce.

Romesco Sauce (yield 2 cups)

INGREDIENTS

• 1 can Spanish Piquillo pepper, 15oz (425g), roasted and peeled

• 1 clove garlic, chopped

• 15 grams toasted skin on sliced almonds

• 15 grams toasted bread

• 2 teaspoons sherry vinegar

• 1/4 cup water

• 1 teaspoon salt

• 1 tablespoon extra-virgin olive oil

DIRECTIONS

Combine first 7 ingredients in a highspeed blender. Blend on low increasing to high until smooth, about 1 minute.

Turn down to low and drizzle in the olive oil. Taste and adjust seasoning as desired. Transfer to a container and store in the refrigerator until ready to use. Before using, pull from the refrigerator and allow to come up to room temperature.

Salsa Verde

INGREDIENTS

• 2 teaspoons minced garlic

• 1/2 cup chopped fresh parsley

• 3 tablespoons chopped fresh marjoram

• 3 tablespoons minced chives

• 1/4 teaspoon chili flakes

• 2 tablespoons capers, rinsed & chopped

• 1 cup extra virgin olive oil

• 2 lemons, zested and juiced

• Pinch of salt

DIRECTIONS

Mix all the ingredients together in a bowl.

Seasonal Vegetables

Best to use what is the freshest seasonal vegetables to accompany the short ribs. For this fall photo shoot, maitake mushrooms, purple cauliflower, carrots, turnips, and butternut squash were used. Toss the vegetables in olive oil, salt and pepper; roast in a 375° oven until tender.

TO FINISH

Heat the short ribs in the oven until hot, heat the reduced braising liquid on the stove. Plate the dish when the vegetables are ready. Spoon a circle of the romesco onto each plate, add one short rib piece, some seasonal vegetables alongside the short rib, spoon the sauce over the short rib and top with salsa verde and a pinch of flaky finishing salt. Serve immediately alongside the Robert Mondavi Winery 2022 Merlot.

HONEY GLAZED WARM BRUSSEL SPROUTS with Beaulieu 2018 Reserve Pinot Noir

INGREDIENTS

• 1 -1/2 pounds brussels sprouts, trimmed, halved

• 1/4 cup extra-virgin olive oil

• 1/4 cup honey

• 1/3 cup red wine vinegar

• 3/4 teaspoon crushed red pepper flakes

DIRECTIONS

1. Preheat oven to 450°F

• 3 tablespoons unsalted butter

• 3 scallions, thinly sliced on a diagonal

• 1 teaspoon finely grated lemon zest

• 1/2 teaspoon kosher salt, plus more to taste

Freshly ground black pepper

2 Toss cut brussels sprouts and oil in a large bowl and season liberally with salt and pepper

3. Place brussels sprouts cut side down on a baking sheet and roast on bottom rack until tender and deeply browned, about 20-25 minutes.

4. While the brussels are roasting, bring honey to a simmer in a small saucepan. Reduce heat to medium-low and cook until honey is a deep amber color, being careful not to burn it. Remove from heat and add vinegar and red pepper. Whisk until smooth. Set saucepan back over medium heat and add butter and ½ tsp salt. Whisking constantly, cook until the glaze is glossy and bubbling, about 4 minutes.

5. Transfer roasted brussels sprouts to a large bowl and toss with glaze until well coated. Transfer to serving dish and top with scallions and lemon zest.

SPICED GINGER & BITTERSWEET CHOCOLATE CAKE

Pair with St. Francis Winery & Vineyards Port

INGREDIENTS

• 1/2 cup of molasses

• 1/2 cup of sugar

• 1/2 cup of water

• 1 whole egg, whipped

• Zest of half an orange

• 1/2 cup of grapeseed oil

• 2 ounces finely chopped ginger

• 1-1/4 cups of flour

• 1/4 teaspoon ground cloves

• 1/4 teaspoon black pepper

• 1 teaspoon baking soda

• 1/2 teaspoon ground cinnamon

• 1/3 cup bittersweet chocolate chips

DIRECTIONS

1. Preheat the oven to 350°F

2. M ix the molasses, sugar and oil, add whipped egg.

3. S ift the flour and baking soda, fold in spices, and add dry ingredients to the molasses mix alternating with water.

4. Fold in ginger, orange and chocolate chips.

5. Use pan spray to coat 9" pan, pour cake mixture into the pan, bake for 35-40 minutes

Garnish: Let rest for five minutes then garnish with a dollop of whipped cream before serving. Serves 8-10.

Chateau St. Jean Introduces New Winemaker Lisa Evich at Cinq Cépages Event at the Estate

Chateau St. Jean’s newly appointed winemaker Lisa Evich was recently introduced to wine club members, community leaders and media at an intimate dinner celebrating the new release of Chateau St. Jean’s highly coveted Cinq Cépages.

Chateau St. Jean helped solidify Sonoma County as one of the top wine regions in the world with Cinq Cépages, the winery’s flagship wine. The red blend has consistently earned the respect of wine critics and consumers since its inaugural 1990 vintage. Cinq Cépages is French for “Five Grape Varieties” denoting the five classic Bordeaux varieties of Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec and Petit Verdot.

Hailing from Santa Rosa, Lisa fell in love with food and wine at an early age. While at Sonoma State University, her focus was on Environmental Studies and Planning, but there was something about the vineyards that called to her. It wasn’t just the science of winemaking, it was the art and the craft that could translate a place into a bottle. Lisa says “when crafting exceptional wines, the key is to keep the big picture and the details in focus all at once.”

Lisa joined Foley Family Wines & Spirits in 2024 as the Winemaker for Southern Sonoma, crafting vineyard driven wines for Chateau St. Jean and Sebastiani. She began her career at SIMI, spending nine years with the winery before diversifying her experience with positions at Pine Ridge and Arrowood. SIMI welcomed her home in 2015 as Winemaker, and in 2022, she became

the Director of Winemaking, carrying on the winery’s historic legacy of female-led winemaking.

Lisa received a BA degree in Environmental Studies and Planning and a Wine Business MBA from Sonoma State University, and a Winemaking Certificate from the University of California, Davis.

“Thoughtful stewardship of this winery and brand is important to my family, and we are proud of our ongoing efforts to restore CSJ and our winemaking operations to reflect what put the site on the map to begin with,” noted Courtney Foley, EVP and secondgeneration vintner for FFWS. “We hired Lisa to guide CSJ through the next phase of its story and are excited to see her impact on Chateau St. Jean’s winesespecially Cinq Cépages.”

Visitors can experience the Cinq Cépages’ legacy with a newly launched vertical tasting at the Chateau St. Jean hospitality center for $180. Consumers can purchase Cinq Cépages at the chateau, online, and in fine wine shops and fine dining establishments for an SRP of $100 (current vintage).

Flips the Switch to Solar, Generating 75% of the Winery’s Electricity

Frank Family Vineyards has announced the installation of more than 800 solar panels on its property, enabling Frank Family to generate at least 75% of the winery’s electricity needs, including powering the winery, tasting room, and new hospitality space, The Miller House. Through a combination of on-site solar and purchased renewable energy, Frank Family Vineyards is powered by 100% renewable electricity.

Frank Family Vineyards, a part of the Treasury Wine Estates (TWE) family of brands, contributes to TWE’s global commitment to sustainability, with the company setting ambitious goals for 100% renewable electricity by the end of 2024 and net-zero carbon emissions by 2030. Frank Family took the initial step toward these goals in 2022 when it became the first of TWE’s Napa wineries to enroll in Marin Clean Energy’s (MCE) Deep Green Program, allowing the winery to source 100% renewable energy from local wind and solar power.

“Sustainability is a key part of our winemaking philosophy at Frank Family Vineyards, and we’re thrilled to start generating our own energy,” says Senior Winemaker and General Manager Todd Graff. “We’re always seeking new ways to minimize our carbon footprint and carefully consider the impact every winemaking and business practice has on the land we care for and the community around us. This investment is another milestone in our sustainability efforts, and we are proud to say 2024 will be our first vintage powej8 red by the sun! ”

Frank Family’s solar array installation is the latest in the winery’s “Green to our Roots” philosophy. The historic Sonoma Plaza – once a Mexican military outpost, fleeting frontier republic, and Spanish Mission village – is now a gorgeous historic landmark and “slow” culture capitol. Sonoma Plaza radiates romance around every corner, cafe and cobblestone. Whether you’re here for a day trip or extended stay, Sonoma Plaza offers the picture-perfect start (and end) to your adventures. It’s a pedestrian paradise, so ditch the car keys and discover real wine country on foot or bicycle. The Plaza’s old adobe storefronts, meandering alleyways, sunlit courtyards and historic landmarks hum with an eclectic mix of restaurants, hotels, tasting rooms, cafes, artisan boutiques, galleries – even a vintage movie house. As for the nature lover, wildflower hikes and stunning hilltop vistas abound within just a short distance. Anchoring it all is the tranquil Plaza itself, whose vast green stretches of lawn and immense tree canopy create a lush setting for picnics, cultural activities and weekly farmers markets.

Historic Landmarks

Sonoma Plaza boasts a rich tapestry of historic landmarks that beckon visitors to immerse themselves in the region’s storied past. The Plaza’s crown jewel is undoubtedly the Sonoma Barracks, erected in the early 19th century under Mexican rule. These barracks witnessed pivotal moments in California’s history, including the Bear Flag Revolt of 1846, commemorated by the Bear Flag Statue, which stands across the street in the park. This stirring monument pays homage to the bold pioneers who sought California's independence. Nearby stands the Mission San Francisco Solano, the last of California’s 21 missions, founded in 1823. Its graceful adobe architecture and tranquil gardens offer a glimpse into California's Spanish colonial era. Strolling further, one encounters the Toscano Hotel, a testament to Sonoma’s early days as a bustling trade hub. Sonoma Plaza stands as a living testament to California’s diverse heritage and enduring spirit.

Just behind the Plaza is Depot Park, located on the bike path with Sonoma Valley History Museum, bocce, petanque and volleyball courts, picnic tables and playground. Friday mornings you’ll find the Farmers Market in the parking lot. Tuesday evenings, May through September, the Farmers Market also takes place in the Plaza with live music and food trucks.
