At Gloria Ferrer, visitors will find everything they could hope for in the way of holiday décor and shopping experiences – with loads of gift options –through the month of December including a beautifully decorated 17-foot Christmas tree.

The winery is also here to remind you that the reasons for sparkling wine go far beyond Christmas, Hanukkah, Kwanza and New Year’s. Once the holiday dust has settled, visitors to Wine Country often find that they’ve got the place to themselves. The post-solstice months mean fewer folks in tasting rooms, restaurants, and vacation rentals, making it the ideal time to plan a long weekend or extended getaway, taking advantage of all that Wine Country has to offer.

Be sure to put beautiful Gloria Ferrer at the top of your list. These magical months brings a calmness to the valley and the vineyards. The unleafed vines are a stark contrast to the lush green hillsides. Just after the 2024 olive oil vintage is released, the mustard cover crop will begin to flower, and sheep will start to dot the vineyards. At the winery, the chef refreshes the menu come January just as a host of new wines are released.

The relaxing atmosphere lends itself to discovering new tastes while savoring old favorites. Weather permitting, seating can be accommodated on the terrace overlooking the property while the covered vestibule affords a cozy spot to unwind.

The winery’s Culinary Journey brings a taste of Wine Country with the ultimate food and wine experience. This experience includes an estate grown and local, seasonally curated tasting menu featuring five small bites that are artfully paired with limitedproduction sparkling and still wines.

The Reserve Expedition is an immersive tasting journey through the winery’s vintage wines, including several extended tirage library offerings that illustrate the remarkable complexity that develops in sparkling wine with age.

ESPRESSO HOT CHOCOLATE

Made with Hanson Organic Espresso Vodka

Ideal for the holiday season, Espresso Hot Chocolate offers a sophisticated, delicious treat for sipping by the fireplace or with loved ones during holiday festivities.

Hot organic milk and powdered hot chocolate create a rich, creamy base, enhanced by bold espresso vodka then topped with sweet, fluffy marshmallows for a cozy holiday cocktail, perfect for colder months.

INGREDIENTS

• 2 ounces Hanson Organic Espresso Vodka

• 4 ounces hot organic milk

• 2 tablespoons organic powdered hot chocolate

• Marshmallows (for garnish)

DIRECTIONS

1. In a small saucepan, heat 4 ounces of milk to the desired temperature for hot cocoa.

2. Stir in 2 tablespoons of organic powdered hot chocolate until it is completely dissolved.

3. Add 2 ounces of Hanson Organic Espresso Vodka to the mixture and stir well.

4. Pour the mixture into a mug.

5. Top it off with marshmallows.

HOLIDAY DUNGENESS CRAB BITES ON BRIOCHE CRISPS

Enjoy with Breathless Brut Serves 8

Late fall is Dungeness Crab season and we love this yummy little bite of crab on buttery brioche deliciousness. It’s a simple and light bite for the holidays.

INGREDIENTS

• Sliced brioche bread

• Melted butter

• 1 cup fresh Dungeness crab meat

• 1/3 cup creme fraiche

• 1 teaspoon lemon zest

• 1 teaspoon minced fresh parsley

• Pinch of salt

• Pomegranate seeds

DIRECTIONS

Toast: We use Trader Joe’s sliced brioche … it’s amazing! Then you can use a cookie cutter and make any shape you like. Place the toasts on a sheet pan and brush with butter.. place in a 300° oven and watch closely as you toast them up and make sure you turn them over once and re-brush with butter. After they are done … nice and golden brown on each side … set aside.

Crab: (Buy the best Dungeness crab possible!) Mix crabmeat with creme fraiche and

TORTELLINI EN BRODO

Pair with 2021 Benziger Oonapais Red Blend

INGREDIENTS

• 1 shallot

• 1 clove garlic

• 1 ounce dried mushrooms

• 3 cups vegetable stock

• 1/2 cup water

• 1-1/4 cups 00 flour

• 2 whole eggs

• 2 egg yolks

• 1/2 tablespoon olive oil

• 12 ounces whole milk ricotta

• 1 packet Balinese Truffle Salt (optional)

• 1 oz Parmesan cheese

• 1 jar Truffle Carpaccio

DIRECTIONS

1. Fill a large pot with water and cover it with a lid. Bring to a boil over mediumlow heat.

2. To make the mushroom brodo, peel and dice the shallot. Crush the garlic with the palm of your hand.

3. Place the diced shallot, crushed garlic, and dried mushrooms in a 2 quart pot. Add the vegetable stock and water and bring to a simmer. Cook, adjusting the heat to maintain a gentle simmer, while preparing the rest of the dish.

4. S et aside 1/2 cup of flour for bench flour.

5. Lay the remaining flour onto the countertop and form a well in the center.

6. Add the eggs, egg yolks, and olive oil into the center of the well. Mix with a fork.

7. Using your index finger, slowly incorporate the flour into the eggs, then form into a shaggy ball.

8. Knead the dough for 5-6 minutes. Cover with plastic wrap and set aside to rest.

9 Place the ricotta into the mixing bowl and add ¾ of the whole egg to the bowl. Add a pinch of Balinese Truffle Salt, grate in half of the Parmesan cheese and 1 tablespoon of chopped Truffle Carpaccio. This is the tortellini filling.

10. Roll the dough out into a very thin sheet with the rolling pin.

11. Cut the pasta into small rounds, add a dallop of the ricotta mixture to the cut circles, form the tortellinis, and transfer to a dusted baking sheet.

COOKING DIRECTIONS

1. Adjust the seasoning of the brodo with Balinese Truffle Salt. Strain into another pot or bowl and keep hot.

2. Lightly season the pot of boiling water with salt and cook the tortellini for 3 minutes.

3. Remove the tortellini from the pot and plate them in your favorite serving bowl.

4. Using a ladle, ladle some of the mushroom brodo on top of the tortellini.

5. S have some Parmesan cheese over the tortellini and top with Truffle Carpaccio.

6. Add one last sprinkle of Balinese Truffle Salt and dig in!

BLUE CHEESE CRUSTED FILET MIGNON

Pair with Ledson 2019 Howell Mountain Cabernet Sauvignon Reserve Serves 4

The bold flavors of blue cheese need a wine that can stand up to their intensity, while the filet mignon’s richness pairs beautifully with a structured, full-bodied red. The Cabernet Sauvignon Reserve from Howell Mountain has vibrant fruit notes, blueberry, blackcurrant and ripe cherry with velvety smooth tannins, which complement both the savory flavors of the beef and the tanginess of the blue cheese. The balance between acidity and fruit in the Cabernet Sauvignon also cuts through the richness of the dish, making every bite and sip harmoniously satisfying.

INGREDIENTS:

• 4 (6-8 ounce) filet mignon steaks

• 2 tablespoons olive oil

• Salt and freshly ground black pepper

• 4 ounces blue cheese, crumbled

• 2 tablespoons unsalted butter, softened

• 2 tablespoons panko breadcrumbs

• 1 teaspoon fresh thyme, chopped

• 1 teaspoon fresh rosemary, chopped

• 1 clove garlic, minced

DIRECTIONS

1. Preheat the oven to 400°F. Pat the filet mignon dry with a paper towel and season generously with salt and pepper on both sides.

2. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the steaks for 2-3 minutes on each side, until a golden-brown crust forms.

3. In a small bowl, mix the blue cheese, softened butter, panko breadcrumbs, thyme, rosemary, and garlic until well combined.

4. Once the steaks are seared, remove from heat. Spread the blue cheese mixture evenly on top of each steak. Transfer the skillet to the preheated oven and bake for an additional 8-10 minutes, depending on your desired doneness (8 minutes for medium-rare). Let the steaks rest for 5 minutes before serving to allow the juices to redistribute.

CLASSIC MASHED POTATOES

Pair with Beaulieu Vineyard 2018 Reserve Pinot Noir

The slightly edgy Bing cherry and delectable berry cobbler flavors in our 2018 Reserve Pinot Noir create the perfect balance to the richness of the potatoes.

INGREDIENTS

• 3 pounds. mix of Russet and Yukon Gold potatoes

• Kosher salt

• 1/2 cup unsalted butter, plus two tablespoons for garnish

• 1/2 cup whole milk

• 1/2 cup sour cream

• Freshly ground pepper

DIRECTIONS

1. Add potatoes to a large pot, cover with water and add a generous pinch of salt. Bring to a boil and cook until soft, about 16-18 minutes. Drain and return potatoes to the pot.

2. Use a potato masher and mash until potatoes are smooth.

3. Melt your butter and milk together in a small saucepan. Mixture should be thoroughly warmed

3. Pour warm milk mixture into mashed potatoes and stir until well-combined. Add sour cream and season to taste with salt and pepper.

4. Transfer potatoes to a serving bowl and top with remaining 2-tablespoons of butter. Season with more salt before serving.

CASSOULET

Pair with Etude Heirloom Pinot Noir

For a down-to-earth take on a revered classic, try this simplified French cassoulet for two. Full of creamy white beans and rich sausage, it’s the perfect complement to the expressive flavors in Etude Heirloom Pinot Noir.

INGREDIENTS

• 2-1/2 tablespoons olive oil

• 2 slices hearty white sandwich bread, torn into ½ inch pieces

• Salt and pepper

• 2 bone-in chicken thighs, 6-ounces each, trimmed

• 8 ounces bratwurst or garlic sausage

• 1 onion, diced

• 1/2 cup canned diced tomatoes with juices drained

• 3 garlic cloves, minced

• 1 tablespoon minced fresh thyme

• 1 cup chicken broth

• 1/2 cup dry vermouth

• 1 15-ounce can cannellini or navy beans, rinsed

• 2 tablespoons minced fresh parsley

GLORIA FERRER OLIVE OIL CAKE

Pair with Gloria Ferrer 2012 Carneros Cuvee

INGREDIENTS

• 2 cups Gloria Ferrer Extra Virgin Olive Oil

• 6 whole eggs

• 1-1/2 teaspoon baking powder

• 2 cups Greek yogurt

• 2 cups granulated sugar

• 3/4 teaspoon baking soda

• 1 orange, zested and juiced

• 3-3/4 cups flour

• 3/4 teaspoon salt

DIRECTIONS

1. Preheat the oven to 325°. Grease a 9x13 or 10-inch round baking dish

2. Combine all dry ingredients in a large mixing bowl. Mix together.

3. In a separate bowl, whisk together all wet ingredients.

3. Using a rubber spatula, add the dry ingredients to the wet ingredients. Mix until smooth.

4. Pour the batter into the greased baking dish. Bake for 1 hour or until a toothpick inserted into the center comes out clean.

5. Once bake, allow the cake to cool. Serve and enjoy.

DIRECTIONS

1. Heat 1-1/2 tablespoons oil in a 10-inch skillet over medium heat until shimmering

2. Add bread and 1/4 teaspoon salt, stirring frequently until golden and crispy, about 5-7 minutes. Set aside.

3. Pat your chicken dry and season generously with salt and pepper. Heat the remaining 1 tablespoon of oil in the same skillet. Add chicken, skin side down, and sausage, and cook until both are well browned about 5 minutes. While cooking, rotate the sausage occasionally while leaving the chicken undisturbed. Transfer to a plate and set aside.

4. Add onion, tomatoes, and ¼ teaspoon salt to the empty skillet and cook until softened and just brown. Stir in garlic and thyme and cook until fragrant. Stir in the broth, vermouth, and beans.

5. Add chicken, sausage, and juices to the bean mixture and bring to a boil over high heat. Reduce heat to low, cover, and simmer until chicken registers 175 degrees, about 10-15 minutes.

6. Remove lid, increase heat to medium-low, and continue to simmer until sauce is slightly thickened about 10 minutes. Off the heat, top the stew with toasted bread and sprinkle with parsley. Let rest for 10 minutes or until thickened. Serve warm with Heirloom Pinot Noir.

The Napa Valley Wine Trolley’s Holiday Lights Tour is back this festive season, promising an unforgettable journey through the city of Napa’s most radiant holiday displays. The tour, which has become a beloved tradition for locals and tourists alike, commences on December 6 and runs until December 22 each Friday, Saturday and Sunday. “Each year, Napa Valley transforms into a holiday spectacular with dazzling light displays that highlight our unique architecture and beautiful landscapes,” said Mark Leonardi, General Manager for the Napa Valley Wine Trolley. “We are thrilled to continue this cherished holiday tradition and offer residents and visitors an extraordinary way to experience the magic of the season.”

The tour departs each evening from The Napa Yard, 585 1st St. Napa, taking passengers on a journey through the decorated areas of Napa. This year there will be two departure times to select from, 6:30 and 8 p.m. “We aim to provide a family-friendly holiday experience that combines the beauty of Napa with the joy and excitement of the holiday season,” said Leonardi. “We encourage everyone to join us this year, arrive early and enjoy a beverage at The Yard, or dinner at one of the many local restaurants.”

Attendees are urged to book early, as the tour is popular and spaces are limited. Tickets cost $35 per adult, with children under the age of 10 being $25 per ticket.

Owner Trina Madrigal insists on as much “from-scratch” as possible with an emphasis on fresh ingredients. While decisions are often difficult, customer favorites include breakfast standbys like huevos rancheros served in a homemade tortilla bowl with both roja and tomatillo salsa as well as scrambles, omelets and Benedicts, or “bennies,” including a keto version served on ham and veggies rather than an English muffin. For lunch, the grilled chicken sandwich on homemade focaccia with pesto aioli is a big hit. Or, try the Petite burger which comes topped with all the fixings.
