Opposing Takes in AAN’s Guilty Pairs Join the Artists Association of Nantucket (AAN) as they open the Cecelia Joyce and Seward Johnson Gallery to their latest exhibition, Guilty Pairs, on Friday June 7. This special exhibition is based on the theme of two different takes on the same subject, diptychs, or subject-paired works. Each participating artist will present contrasting pieces he or she created. AAN Artistic Director Bobby Frazier, who created the exhibit, chose the intriguing title Guilty Pairs as a way to capture the idea of opposing themes: “As many variations as you could think ofâ€? he says, speaking to the ways in which artists could present, â€œâ€Ślight and dark, night and day, study and final piece.â€? Gallery attendees will have the chance to see artist’s work through June 17. Guilty Pairs will also feature a Solo Show Spotlight by artist Casey Sayre Boukus on June 8 at 10am in the gallery at 19 Washington Street. Bokus will demonstrate as well as talk about her art. All are welcome to attend the Spotlight Artist talk as well as the opening exhibition reception for Guilty Pairs on Friday June 7 from 6 to 8pm. The Artists Association of Nantucket has almost 300 local artists that participate in 15 exhibitions throughout the year. Close to their 75th year, AAN continues to provide exhibitions, classes, and opportunities for artists of all ages to share their work with the Nantucket Community. Guilty Pairs will run in conjunction with the 8th annual painting festival Plein Air Nantucket that begins Tuesday, June 11. Plein Air captures the spirit of Frank Swift Chase, a supporter of Plein Air painting and mentor to the founders of AAN. Both onand off-island artists will create and complete works against the scenic outdoor backdrop of Nantucket, which will be displayed on the 2nd floor of the Cecelia Joyce and Seward Johnson Gallery, an additional treat for art lovers who are looking to view the fresh paintings of Plein Air and the Juried Exhibition of Guilty Pairs. The Cecelia Joyce and Seward Johnson Gallery at 19 Washington Street is open Monday-Saturday 10am- 5pm and Sundays, 11am-4pm. For details about the AAN, visit nantucketart.org or call 508-228-0722.

Nantucket is steeped in the history of whaling. Even our school sports teams are The Whalers. We sometimes struggle with that history and how to represent that legacy today. The Nantucket Historical Association, in particular, has recently added a focus on whale ecology and conservation among the displays of harpoons and scrimshaw. North Atlantic right whales were one of the species previously sought after on Nantucket that are now much in the news. These large baleen whales (Eubalaena glacialis) can be up to 56 feet long and weigh up to 70 tons. In fact, they were called “Right Whales” because they were the right whale to harvest. Their high blubber content made them float when they were killed, and they produced high yields of valuable whale oil. During the early years of colonial whaling, most of the hunting was done from shore. The whales at that time were relatively abundant and frequent enough that a spotter could see whales from the beach. After several shouts from the spotter, small boats would be launched from shore. From here, whales were harpooned and followed until death. The carcass would be towed back to shore, where the whale would be processed for meat, blubber, and the prized oil. Despite the seemingly primitive and labor-intensive means of hunting, the right whale was eventually hunted out of the waters surrounding Nantucket, so they were no longer a reliable source of whale oil; a precious commodity at the time. As whale ships began going further afield (or rather, a-sea) to hunt whales, their main prey switched to sperm whales, a much larger species with, thus, much more oil to harvest. Today, many whale species are still suffering the consequences of the continued on page 15

Papa’s Bag by Robert P. Barsanti I passed through another birthday recently. It all went well; everything was beautiful and nothing hurt. My wife took me out to dinner, my fellow teachers signed a card, and eight members of the student orchestra showed up with violins and played Happy Birthday to me and my first period class. In my declining years, birthdays slip down the list of High Holy Days of the year. Dinner, cake, and a cascade of well-wishers on Facebook mark that day. On the next morning, we get leftovers. My youngest son’s life rhymes with mine. He also recently celebrated his birthday, and I was at a loss as to what to get him other than a gift card and cash. He doesn’t have a favorite Lego set or Tank Engine anymore. His stuffed animal collection is complete, as is his funny t-shirt drawer. I would take him to a Red Sox game if I could figure out a two-day period when he wasn’t working. It appears that a moment comes for your children when there simply isn’t anything you can wrap and give them after cake. My wife has a far more practical and thoughtful way of looking at gift giving. She looks at whatever I am using that is just too dingy, dinged, or decrepit to be of use, then she replaces it. (I hope she doesn’t take that philosophy to its logical conclusion). This year, she saw the horrible Boat-nTote L.L. Bean canvas bag that I have been taking to the gym and she retired it. My old bag had “Papa” stenciled on the side, and the wife had thoughtfully had the same word put on the new bag. I have no particular emotional supports placed in my old canvas bag, and most of its physical supports have worn away. One handle has given in entirely, the other has seven threads left. The body of the bag is dotted with black mildew, the bottom is scraped and torn, and it smells like the tomb. The bag has been dredged through almost twenty years; it contains sand, torn up receipts, a heart shaped stone from Cisco Beach, Harry Potter’s Lego head, and one half empty tube of sunscreen. Years ago, Leith gave it to me as a beach bag. The “Papa” embroidered

SUMMER

Graduations aren’t just for kids anymore, and it doesn’t always mean with a four-year diploma. Many adults are returning to school to get new degrees, refresh their skills, or advance in their current positions. Being a student as an adult is typically harder work than when you were younger. You have more responsibilities to manage, along with most likely working full-time while attending classes, along with balancing family obligations as well. Some may describe you as strong, solid, hard working. You should mark your accomplishment with a Brick House Double Connecticut Mighty Mighty cigar. This smooth, creamy cigar is made by the J.C. Newman Cigar Company, one of the oldest cigar companies still family owned and operating in Tampa. It has a Connecticut Shade wrapper and Connecticut Broadleaf filler that create a pleasant balance of spice, sweetness and strength, hence its moniker. In your other hand, enjoy a well-balance blended snifter of Nikka Japanese Whiskey “From the Barrel.” This artisanal spirit is a classic of its region, yet new to the American palate. The allspice and clove aromas are followed by wisps of smoke and sea salt on the palate. This is a perfect combination to enjoy while overlooking Nantucket’s waters. continued on page 9

WHEN TWO

BECOME

June 6-12, 2019

ONE...AND THREE

Nantucket is heralded by many as the ultimate wedding destination. Yet before the extravagant nuptials comes the well-thought out surprise proposal. Just like two families joining as one, the Rocky Patel “The Edge” A-10 Robusto cigar is unique in that it has two different wrappers binding together to create one truly amazing smoke. The Corojo and Maduro wrapped create a barber pole-style combination that adds great complexity to its flavor. This cigar was originally released as a limited edition. As all good things, the tradition continued and this is a celebration of the 10th year of this specific cigar. While the wedding may be months away, one of the first things people may ask you after the big day is, “When are you going to start having children?” Enter Hudson Whiskey “Baby Bourbon.” This little guy is made from New York corn and is stored in first-use charred American oak barrels until this baby is ready to pop, explaining the dark color for such a young dram. It is produced by Tuthilltown Spirits, located in the Hudson Valley. Superb on its own with flavors of vanilla and caramel, this can also be used to make a tasty cocktail with Tempus Fugit Gran Classico bitters garnished with an orange peel. Great combination to cheers your engagement while enjoying Nantucket sunset on a Hinckley.

CELEBRATING COOPER A family milestone that may not be documented quite as much as others, yet is still very important to the timeline of your life, is when you get your first dog. Who doesn’t love puppy kisses and dogs walks along the beach? After taking your dog Cooper for some exercise at Sanford Farm, kick back and relax with an Alec Bradley Maxx Culture cigar. This is a four-country blend of tobacco, perhaps a little bit like your rescue mutt, and delivers a toasty, earthy flavor that will remind you of your walk during the Nantucket Conservation property. Pair this puppy with a sip of Sagamore Rye Whiskey. Not to be confused with the area around the Sagamore Bridge on the way to Nantucket, this spirit flows from a springhouse at Maryland’s Sagamore Farm. Here the spring water is naturally filtered and fed from a limestone aquifer. This same water

on the side wasn’t meant to identify the bag so much as it was to remind me who I was and chide me on who I wasn’t. I was now a man who went to the beach with a bag filled with a toypedo, six comic books, juice boxes, Goldfish, and four containers of sunscreen. So, we would go to the beach with everything that we would need. When you become a parent, you learn a long string of difficult skills that become irrelevant moments after you have mastered them. I no longer need to put a baby to bed, entertain a toddler for hours, assemble the Undersea Base, or demonstrate a flip turn. The mile markers just line up in the rear view mirror into one long and undistinguished line of lights. One day you are hanging a piñata and assembling goody bags for birthdays, the next you are throwing all that candy out in the trash. Filling trash bags is an unappreciated parenting skill. Over the years, you buy, use, and treasure thousands of THEIR items. All of those Christmas presents and little fingered art doesn’t get whisked out of sight without parental or children’s tears. On some Sunday morning, you have to let all those train engines, stuffed animals, Matchbox cars and Webkinz move on to new homes. The greatest gift the dump ever gave me was a place where we could send all of those beloved tokens to new children, be they here or in Jamaica. Some items just refuse to go; I have a large red ghost from kindergarten in my office and several cartoon drawings in the classroom. The old “Papa” bag, dotted with mildew and torn with time, didn’t get a chance to remain in the museum. It was deaccessioned into a dumpster. So it goes. Minute to minute, day to day, dawn to dusk. Some events have sign posts. You see them coming, you prepare, you take pictures and eat cake. Here comes prom, here comes college applications, senior ball, graduation. At Nantucket’s Senior Ball, the passing comes with the brutal finality of last call. You sit for a slide show, chat with your friends, and then get ushered out the door of the yacht club as the music starts.. Every single father looks back and says “Wait.” But the moment is gone into the rear-view mirror. We cruise past other moments while we are day-dreaming, or looking in the mirror, or trying to find the Sox game. I don’t know when the trains were played with last, nor when he was kissed, nor when I took that bag to the beach for the last time. It just happened and it’s gone, like everything else. Papa has a brand new bag. Bright, green, and clean: it is ready for its dirty future. I have learned that you never stop being a “Papa.” You have to carry something for them, although it may no longer be swim diapers and beach toys. Instead, you just carry different things to different places. I am not sure what I will need moving forward, but I know what I will carry it in. And I will carry sunscreen.

Spending time on Nantucket with the grandkids, boating to Tuckernuck for the day, or playing golf at Miacomet Golf Course with your spouse may be a few of the items on your post-retirement agenda. What better way to celebrate your hard work than with the Ashton Aged Maduro No. 10 cigar? This dark, sweet cigar has been aged to perfection, just like you. heyday of whaling. It is the North Atlantic right whales, however, that are the closest to extinction. According to the Center for Coastal Studies (CCS) Right Whale Research Program, the current population is estimated to be just 411 and in decline, primarily due to high mortality and low calving. The principal causes of current mortality are ship strike and entanglement. More than 80 percent of right whales carry scars that indicate that they have been entangled in fishing lines, and nearly 60 percent of those are entangled more than once. Not all entanglements drown whales. Some prevent a whale from feeding, increase the energy a whale needs to swim and feed, and cause pain and stress to the animal, which weaken it. Biologists believe that the additional stress of entanglement is one of the reasons that females are calving less often; females used to have calves every 3 to 5 years, and now are having calves every 6 to 10 years. In 2017 and 2018, 21 right whale deaths were confirmed and documented. Low reproductive rates continue to contribute to the slow recovery of this species: there were five births in 2017 and none recorded for 2018. In 2019, nine calves were seen leaving the calving grounds with their mothers. Seven of those have since been confirmed with a few spotted in the waters around Cape Cod. The whales typically arrive to feed in Cape Cod Bay in late winter and leave by the end of April, along an annual migratory path that stretches from Florida to Canada. This year, however, they’ve been hanging on later into the season, with whales still being picked up at the end of May. Work by CCS last year found right whales in mid-November, a time of year not known for this species in Cape Cod. In response, the National Oceanic and Atmospheric Administration (NOAA) issued an alert for vessels to slow down and maintain lookouts. Charles “Stormy” Mayo, Director of the CCS’s Right Whale Ecology Program, states that while the number of North Atlantic right whales is increasing in Cape Cod Bay, the total number of whales is still in decline.

Mayo and colleagues from several other research organizations are working with state and federal agencies to determine how best to manage and protect the remaining population. So far, CCS has confirmed 267 individual right whales seen by either plane or boat for the current season, making that roughly 65 percent of the photo source: NOAA

findings that connect recent changes in the movement of North Atlantic right whales to decreased food availability and rising temperatures in Gulf of Maine's deep waters. Right whales have been showing up in unexpected places in recent years, putting the endangered species at increased risk. This misalignment between conservation measures and the whales' current behavior makes them much more vulnerable to lethal encounters with ships and fishing gear. However, the researchers believe that the strong connection between water temperature, the primary whale food (a tiny zooplankton, Calanus), and right whales makes it possible to predict where new right whale habitats develop, and to plan accordingly. In late April, a group of approximately 60 fishermen, scientists, conservationists, and state and federal officials gathered to discuss ways to further reduce serious injury and mortality of endangered North Atlantic right whales caused by trap/pot fishing gear. The Atlantic Large Whale Take Reduction Team was able to reach nearly unanimous consensus on right whale survival measures. The measures in the package include reductions in vertical buoy lines as well as gear modifications to reduce the strength at which lines will break. Reduced breaking strength lines would allow entangled whales to more easily break free of gear. Additionally, an expansion of gear-marking to create larger and more frequent marks on U.S. lobster trap/pot buoy lines throughout U.S. East Coast waters was supported by most team members. This expansion should improve the ability of whale scientists and managers to better determine the source of gear seen on or retrieved from endangered whales. Hopefully, with these measures in place and continued research, right whale populations will have a chance to improve. To learn more about North Atlantic right whales in our area, check out the Center for Coastal Studies right whale research field notes on their website: coastalstudies.org/right-whale-research/field-notes/ — researchers post regular reports and blog posts about their findings. Boaters, kayakers, paddle-boarders, swimmers, and light aircraft and drone pilots are reminded that it is illegal to approach North Atlantic right whales within 500 yards (1500 feet) without a Federal Research Permit. However, the right whales often feed very close to shore, offering whale watchers on land unbeatable views of one of the rarest of the marine mammals.

Featured Restaurant: TOPPER’S at the Wauwinet Where Even the Ordinary is Extraordinary by Carl Oscar Olson Time is relative, and so is distance—what might be a short drive in other places can be an adventure on Nantucket. The sun was shining in Surfside when we made our departure, but as we rolled on, the fog rolled in. The day was different and full of wonder when we arrived at TOPPER’S at The Wauwinet. The light was waning and the temperature was falling, so the heaters above the deck provided some welcome warmth. The interior is even more spacious and inviting, but we dine outdoors whenever we can. A lightship basket of bread graced our table featuring still warm milk rolls, herbed loaf, and Boston brown bread with molasses and black currants, all made from scratch. Silky sweet homemade butter was smooth beyond words and we couldn’t pass it quickly enough. While we made some dining decisions and before the basket was depleted, Chef Zachary sent out another treat. The Gruyere Cheese Puffs were as light as a feather and a scrumptious, savory starter. They were still warm with a crispy crust that gave way to an airy, delicate interior. Deciding on starters was no easy task, due in part to the fact that there are multiple menus to choose from at TOPPER’S. For more casual courses, the Deck Menu is simple and satisfying, designed with relaxation in mind. If you prefer the more formal approach, the Dinner Menu offers several options for each course. Order the 3Hudson Valley Foie Gras course prix fixe for $96, or indulge as you go a la carte. For the top notch evening, the TOPPER’S Grand Tasting never misses. Bask in the best with a 7-course tasting menu for $125 a person, add $115 for the complete vintner’s experience. Naturally we couldn’t settle on just one menu, so we dabbled in all three. Seasonal Morel Mushrooms were packed with pureed chicken liver, tender spruce sprigs and truffle and created an illusion of the forest floor with the aroma to boot: a table-side pour of consommé brought it all together. The dish was transformed into an earthy, savory stew before our eyes and we couldn’t get enough. The roasted corn relish served under the Lobster and Crab Cakes had us dreaming of summer harvests, both from land and sea. The sweetness of the two were a perfect pair, while jalapeño stuffed olives and a mustard

cream balanced the dish out with a salty, spicy kick. A splendid satchel of Gioia Burrata came recommended by Chef Zachary. The fresh, white cheese had a slight bitterness which enhanced the sweetness of the fresh green asparagus. La Quercia proGioia Burrata sciutto Americano was a fitting addition and crunchy hazelnuts just added to the fun. Our favorite first was the Hudson Valley Foie Gras, served two ways. One was a delicate mouse sandwiched between crispy cousillant and dotted with strawberry elderflower puree. The other was sublimely seared atop vibrant pickled strawberries with a pistachio paste. Deep richness met fruity acidity in this match made in heaven, every flavor being marvelously mirrored by its counterpart. TOPPER’S and The Wauwinet have had a very busy off season. Not only was the kitchen fine tuning its menu, but the hotel was undergoing a full demolition and redesign of the interior. Every room is brand new, so for a truly exceptional Nantucket experience, you should see for yourself. With the first course behind us, we took a moment to relax and enjoy the scenes surrounding us. 50 Day Dry Aged Beef

Vol. 49 No. 5 • YesterdaysIsland.com smiling faces on other guests, and of course, the vast Atlantic sprawling into the mist. Then, our faces fixed on the dishes coming our way. The Bay of Fundy Halibut (cover photo) hit every mark. The thick, moist, flaky fillet was like a blank canvas, and the other components were the paint. Flavorful fennel was sweet with its mild herbal quality, while bitter notes were shared with the grapefruit and picholine olives. Tarragon united the two

sides, every aspect working beautifully with the fish. Petit Gris snails were masquerading as mushrooms on the 50 Day Dry Aged Beef, tender and meaty and serving the same purpose. Colorful carrots and ramp puree contrasted the richness of the steak, and bonus bone marrow elevated this dish to new heights. We saw asparagus from every angle in Asparagus “Near and Far” (cover photo). Purple Passion from Pumpkin Pond Farm was united with white asparagus grown in the Netherlands. Tender, sweet, and vegetal, it was all served in varying degrees of doneness; steamed, shaved, and pureed. Bright orange cordyceps from Tibet resembled noodles in look and feel, and all of it met in the middle with a complex vin jaune sauce. We were glad we went with another Grilled Block Island Swordfish one of Chef Zachary’s suggestions, because the Grilled Block Island Swordfish was one succulent steak. The gorgeous grill marks sat proudly atop sweet roasted tomatoes, creamy chickpeas, and pickled fennel. Acidity was provided by preserved lemon and an olive vinaigrette tied it all together.

One of our favorite parts of each plate throughout this meal was the varied use of each ingredient. Some would be presented in multiple preparations, adding different dimensions while keeping things simple. When asked how he does it, Chef Zachary said, “we just keep on pushing!” Even the ordinary is extraordinary at TOPPER’S. After our plates were cleared, we were greeted with a surprisingly daring pre-dessert. Its dramatic Maracaibo Chocolate presentation included a birds nest and ceramic eggs, each containing mango jelly mimicking yolk and almond blancmange posing as the white. The texture was uncanny, and a small sesame brittle was good to the last crunch. If taste had been turned off, it might as well have been a soft boiled egg. For a trip to the tropics with a drink in hand, go for the Baba Rum. Creamy coconut custard dolloped the plate and a fragrant guava sorbet had our mouths watering. Roasted pineapple would’ve been enough, but the star was the rum soaked cake. Intoxicatingly delicious. If you have to have chocolate, the Maracaibo Chocolate will not disappoint. A spiraling swirl of caramel showcases milk chocolate cremeux and caramelized white chocolate ice cream. Differing densities and temperatures made this treat good to the last bite. The Rhubarb Soup looked too good eat … almost. Pinks and reds of rhubarb and strawberry supported a merengue raft, and perched on board sat a scoop of basil sorbet. It’s a sweet symphony of summer flavors that we’d order again and again. We had the most fun figuring the flavors of the Sorbet. Three separate scoops mingled with fresh fruit, each silky smooth and never icy. After much deliberation we were right about two of the tastes, so hold off on asking to test your own palate. Emerging out the back of the restaurant, we paused to reflect on the flawless execution of our meal. Ghostly silhouettes of homes and boats emerged through the fog where would otherwise be the best sunset spot on the island. Though it might have been the only thing missing from this meal, the view is breathtaking no matter what. We’ll no doubt be thinking of this evening long into the summer and all year long, and we eagerly await our next chance to visit. Do yourself a favor and join in on the experience that is TOPPER’S. The greater coastscape, which includes the federally owned Great Point Lighthouse and Nantucket Conservation Foundation land, is a double-fingered peninsula jutting northward between the Atlantic Ocean and Nantucket Sounds is so much more: a blend of sandy beach, rolling dunes, and forest uplands both rugged and serene. The refuge provides multiple habitats for an array of coastal plant and animal species, including heather and beach plum, a maritime oak forest and savannah of red cedar – the largest of its kind in New England – which offer shelter to deer. At the beachfront, watch for horseshoe crabs advancing in extremely slow motion, seals basking in the sun, and shorebirds skittering above the surf line.
