Free Admission to Historic Sites This Weekend The Nantucket Historical Association (NHA) is offering free admission to its historic sites on Saturday, June 6 and Sunday, June 7 in celebration of Nantucket Preservation Month in partnership with Nantucket Preservation Trust (NPT). On both days from 11 am to 4 pm, visitors can enjoy free access to the following NHA historic sites: the Fire Hose Cart House at 8 Gardner Street, Greater Light at 8 Howard Street, Old Mill at 50 Prospect Street, and Oldest House at 16 Sunset Hill. “The Nantucket Historical Association tells the inspiring stories of Nantucket through its collections, programs, and properties,” says Marjan Shirzad, NHA Director of Visitor Experience. “As such, we are thrilled to partner with NPT during Nantucket’s June Preservation Month and highlight the wonderful array of historic sites and inspiring stories the NHA offers to the public on a daily basis.” While National Preservation Month is usually celebrated in May, Nantucket Preservation Trust is celebrating Nantucket’s Preservation Month in June when more visitors are on the island and able to participate in the many offerings from local island businesses and nonprofit organizations. This year's proposed theme by NPT is "Preservation is the Ultimate Green." “The Nantucket Preservation Trust took the initiative to coordinate Nantucket Preservation Month to achieve our goal, which is to educate, inspire and encourage historic preservation across the island by involving all aspects of our community,” says Marisa Holden, NPT Marketing & Events Coordinator. “Through the support of local business and organizations, our hope is this month-long celebration will engage the island’s community and draw attention the important cause of preservation.”

It Came for My Cherry Trees by Dr. Sarah D. Oktay Director, University of Massachusetts Nantucket Field Station (see yesterdaysisland.com for expanded article, website links, & notations)

I wrote about eastern tent caterpillars a couple of years ago but they are so prevalent around the island, literally spreading out in all directions, that I felt it made sense to write about them again and see if we could figure out why they have returned so soon. Today’s subject could easily be the star of a B horror movie from the 50s. There is no way you have not noticed the hideous bags of caterpillars wrapped around cherry and apple tree limbs, quickly defoliating the leaves during the day, and retiring to their baglike homes each night. No, it’s not a gypsy moth, the dreaded invasive creature released in Medford, Massachusetts in the late 1800s. It’s the Eastern tent caterpillar (Malacosoma americanum). People really hate tent caterpillars. You’ll see folks removing the infected limb or using fire to kill the caterpillars inside. Even my husband, a lover of all natural things but especially fond of tart black cherries, can be found removing the nests of these caterpillars by clipping off the tree limbs. Although tent caterpillars can severely defoliate a tree, they rarely kill it. If you saw the adult fluffy moth, you might feel a bit more empathy for this insect. The moth is reddish-brown with two pale stripes running diagonally across each forewing. The Eastern tent caterpillar (I’ll use the acronym ETC occasionally) oviposit (lay their eggs) almost exclusively on trees in the plant family Rosaceae, with a preference for cherry (Prunus) and apple (Malus) trees. The adult moth lays her eggs in a single batch in summer, typically in late June or early July, depending on the latitude and location. The egg masses contain continued on page 13

June 4 - 10, 2015

Washington Muse by Robert P. Barsanti Deep in Nantucket High School, stared at by bored department heads or truculent students, are a series of deeply formal pictures of the graduating class of Nantucket High School. The young men wear jackets and ties, the young women have dresses, and they stare at the camera in virtuous black and white with the dome of the Capital Building behind them. I don’t think the high school sends Seniors on trips anymore. The expense of flying, or bussing, the entire senior class to Washington D.C. would be mindboggling. In addition, we ask more things out of our young people than we asked in the past. We ask them to work various jobs for the visitors that arrive in the first week in May, we ask them to catch and throw baseballs and softballs deep into the spring and past graduation. We ask them to fundraise and volunteer and practice all sorts of other civic virtues. A trip to Washington would be too far, take too much time, and be too expensive. If I remember my Nantucket history well enough, the trip was handed off to the fifth grade until it got too expensive and too unwieldy for them. For a few years, the high school students went to Plymouth and Salem, but that faded as well. We keep to the island. Nantucket exerts a small town gravity on all of us. Every day has its own battles and marches; each demands that we gird our loins and settle into battle with lawns, dirty sheets, and cedar shingles. Adding one more battlefield, be it for fundraising or just for travel, can be that one bridge too far. Moreover, it can be hard to take the mainland seriously. After all, you can’t see it. Boats, planes, and phone calls come from there, but everything else is visible, and quite pressing, right here between the beaches. In addition, family tugs at us. In the spring, the calendar runs short for the seniors in the spring, when the phrase “never again” starts to be a daily occurrence. They sit in the cafeteria and are pulled to the faces that they may never again see. Their mothers and fathers feel those same tugs of time, only they see it at the breakfast table, on the sofa, and on the bunk beds. Taking these young people away for a week, a whole week, at the end of the spring, jerks their heart strings even more. They came back, had prom, had graduation and then… Still, when you look at the pictures on the wall, you see all of those young people dressed up and lined up. When you look closer, these are the people who built the island we live on now: Gardners, Flanagans, Sylvias, Viscos.… They ran the businesses, sat on the committees, and got things done, for good or ill, over the last fifty years. While the Washington trip, by itself, did not bring about their success or our success, I think it may have helped quite a bit. Even more, it would be worth while to reconsider for our modern teens. First, getting off-island, in and of itself, should be its own graduation requirement. We spend so much time on our own little patch of gray and green that we forget how small and provincial our little place is. Every room we enter, from the Yacht Club to the Chicken Box, has at least one familiar face in it. We never travel on a road that we haven’t travelled one billion times before. In Washington, every road is strange. We would know absolutely nobody at the market and at the restaurant. You can be sure of little. When you walk in Washington, you walk as a stranger and as a tourist. Nothing is familiar and everyone is strange; just as it is for just about everyone who lives on the mainland. continued on page 11

As you stroll along the streets of Nantucket this time of year, you would be hard pressed not to find someone wearing a pair of the famed “Nantucket Reds” long pants made of a durable canvas. Made famous here on island by the good people at Murray’s Toggery Shop on Main Street, there are several theories as to how these perfectly and aptly names trousers received their namesake. Nantucket Reds, whose unique qualities make them what they are, are often imitated, but never exactly duplicated. The same can be considered for the plethora of rosé wines that are coincidentally similar in color to the famed pants as a symbol of the season on the island. Look at almost any wine list here and you are bound to find not only find a pink wine by the glass, but also a handful of bottle selections at varying price points from different regions as well. The benchmark for dry rosés originates from the Provence region located in Southern France. This region has been focusing on rosé wine production for centuries. What makes this area stand out as the gold star standard is partly due to their heritage of winemaking, their ideal location on the Mediterranean coast, and also their unwavering production standards. Provence is home to some of France’s oldest vineyards and is the world’s largest wine region specializing in dry rosé. Therefore, a culture has been created around this wine and long-established traditions have maintained the quality of the product produced. The Provence region is highly influenced by its unique sense of place that is full of sunshine, influenced by the wind off the coast and the hillsides covered with herbs. It is a perfect example of the French concept of ‘terroir’ where the wine is greatly influenced by several components of the area that have a much greater influence as a whole. The wine quality is reinforced by the Appellation d’Origine Protégée (AOP), a European system that categorizes wines by their place of origin and sets strict quality standards that are the highest for wines of

NANTUCKET HISTORY

Civil War Shipwreck by Amy Jenness author of On This Day in Nantucket History On June 10, 1865 a ship carrying soldiers who had fought for the North in the Civil War under General William Tecumsah Sherman went aground on Smith’s Point. The ship, SS Satacona, grounded in a thick fog near the head of Hither Creek. For some of the ship’s passengers, this would be their second wreck in two days. Their troop ship Admiral Dupont had collided with the Satacona and sank off Cape May, New Jersey, two days prior. The first word Nantucket citizens had of the June 10th Madaket grounding was when the soldiers marched through town at 8 a.m. and boarded a steamship that was preparing to sail for the mainland. Citizens scrambled to provide food and clothing for the soldiers before they departed and returned to Fort Monroe. Although the Civil War ended on May 9, 1865, the soldiers were still on active duty at the fort and had been on leave when the collision occurred. Located in the Chesapeake Bay, Fort Monroe was a pivotal Union stronghold throughout the war and also became a symbol of freedom when commanders used it to house refugee slaves. They escaped southern slavery and went to the fort after a Union Army decree that all slaves behind their lines would be protected. The policy was called the "Fort Monroe Doctrine.” On May 10, 1865 former Confederate president Jefferson Davis was captured and taken to Fort Monroe where he was jailed awaiting a bail bond issue. Davis would wait two years for the hearing and his long imprisonment in harsh conditions made him a martyr in many people’s minds. He was indicted for treason in May 1867, but was never tried—the federal government feared that Davis would be able prove to a jury that the Southern secession of 1860 to 1861 was legal. Later that month Davis was released on bail, with several wealthy Northerners helping him pay for his freedom. The island had remained mostly neutral during the American Revolution and the War of 1812, with many citing their Quaker beliefs (which condemned the vicontinued on page 12

Eye on Style

by Sarah Morneau

Last week I discovered my new favorite island store when I went to meet with Anastasia Vysotskaya-Ricker, owner of Tellus eco shop. I walked in and my eye was immediately drawn to a sparkling handbag that looked like it was made out of chainmail. On further inspection I realized that it wasn’t chainmail at all, but pull tabs from beer and soda cans intricately woven together by hand! A prime example of how one person’s trash is someone else’s treasure, and part of the idea behind Tellus. Ana grew up in Belarus, where simple and organic was a way of living. Instead of throwing things away, they were repaired or reused; and food was fresh from the source. It was a very agriculture-oriented life, and she helped her family raise the cows and grow the produce they would later eat. When she first came to America in 2003 it was a surprise to her to see the amount of chemicals and artificial ingredients in the food available, and being unaware of its origin she decided to switch to a mainly vegan diet. The concept of the store is going back to those roots in Belarus, to bring eco-friendly products to the island and introduce people to a more thoughtful way of purchasing goods for themselves and their homes. Everything in the store is organic, recycled, fair trade, repurposed, sustainable, or biodegradable. Products have been carefully chosen by Anastasia and range from organic soaps, chemical-free lotions, vegan handbags, organic cotton clothing, jewelry, recycled glass cups and vases, to larger home decor items, and more! On first glance you would never know that the cute handbag on the shelf is made out of recycled inner tubes, or the bracelet in the window was once a beer can. Each item has a story and an artist behind it. I picked up a birthday card for my nephew that was handmade in the Phillipines and signed by the artist, and that purchase will help better the life of the woman who made it. The face wash I bought supports the Woman2Woman Project, helping women from around the world escape extreme poverty and trafficking. I needed to send a birthday card and was out of face wash, but left the store feeling good that my purchases were helping others as well. Tellus is located in The Courtyard at 16 Straight Wharf and is open daily. Shop at Tellus and feel good about your purchases!

Second, and as a result of losing ourselves in the big city, we find ourselves. When we are mucking and muddling through a sodden winter and a mildewed spring out here, our differences cling to the bottom of our shoes. Wrongs grow into grievances, and then sprout the mold of sin. But pluck us off the sand, drop is in a strange city of stranger people and the differences wash away. Islanders make islands. We turn to each other, in our noxious familiarity and wipe away the mud. Finally, the city calls us. Washington, from without, sinks in its own filth and irony. We speak of it in a sneer; it has towers of venality, hypocrisy, greed, and dull bureaucratic stupor. But, once inside the city, the true light burns through; it’s earnestness. Nobody can stand in front of the Vietnam Veterans Memorial and not feel the pain and the honor of that sacrifice. Nor can you stand at the feet of Lincoln, with those two magnificent speeches carved into the walls on each side, and not feel called to the “better angels of our nature. History pauses at each corner, and not just the blood-dappled history of greed and foolishness, but the earnest lives of humble people who came to the city to make a difference. People come to Washington to do something good, whether they come on a march or on an election. As Americans, we laugh off the pomp and ceremony of the older nations. Still, you would need a heart of stone to watch the guard at the tomb of the unknown soldier and not feel the ground raise you up to be something better than we fear we are. All those Nantucket High School Seniors stood at the Lincoln Memorial, at the Capital Building, at Arlington. What did they feel? Did they sense the ground beneath them? Did they feel that it was all some historical joke? Or did they feel that they could do something to make the world, the country, and the island a better place? We don’t know what they felt. We know what they did. They came back and become teachers and coaches, policemen and soldiers, selectmen and committee members. They were grew and were educated in our small community, but, perhaps, a visit to Washington set the ground beneath them.

olence of war) as the reason, but nearly 400 Nantucket men fought for the North in the Civil War and 70 ultimately died in combat. Many Nantucketers opposed slavery and the island hosted several anti-slavery conventions in the 1840s. As during previous wars, the Civil War disrupted the island as dozens of whaling vessels were put into service by the Union, or sunk in southern harbors to blockade Confederate vessels. In addition, Nantucket’s already suffering whaling industry declined further as able men left to fight and as other whaleships were destroyed by Confederate raiders. When the war ended in 1865, Nantucket whaling would never be able to recover. The island celebrated the end of the war. The April 15, 1865 edition of the Inquirer & Mirror reported, “Considerable excitement was manifested in our usually quiet town, on Thursday afternoon last, upon the reception of the glorious news of the surrender of Gen. Lee and his army. Salutes were fired, flags were displayed from public and private buildings, and the bells on various churches were rung in honor of the glorious event. In the evening Young America collected its materials, and kindled a huge bonfire on the centre of Main Street, fireworks were displayed, the room of Engine Co. No. 8 was brilliantly illuminated, and several of our citizens made speeches in front of the Customs House (Pacific Club); the demonstration closing by the singing of patriotic airs. In the same issue, the editor wrote, “Richmond has fallen! This stronghold of rebel treason, with its manifold forms of pretended nationality, its bogus system of finance, its mock legislation, has yielded to our advancing armies. For four long years, it has menaced the North; its formidable intrenchements, sheltering a powerful military force, have baffled the generalship of our officers, and severely tested the endurance of our loyal troops. But it has surrendered at last, and black soldiers – negroes – of whom Chief Justice Taney once famously declared: “They have no rights which a white man is bound to respect! What an astonishing picture to hold up before the aristocrats of the Old World! What a revolution of ideas in the New? The nucleus of the rebellion invested and throttled by Gen. Weitzel’s colored brigades! Governor Andrew speaks truly, in his congratulatory dispatch to Secretary Stanton, “The colored men, received late, got in first, and thus is the Scripture fulfilled. The nation is glad of it.

on average 150-300 eggs. These masses are covered with a shiny, black varnish-like material and encircle branches that are pencil-size or smaller in diameter. There is only one generation (egg- caterpillar- pupa- adult) per year. Within three weeks, fully formed caterpillars can be found within the eggs. But the small caterpillars lie quietly until the following spring (this is called diapause), chewing their way through the shells of their eggs just as the buds of the host tree begin to expand. As soon as they emerge, they start to build their tent on the warmest southerly facing part of the tree, usually in a crook between limbs. These caterpillars are extremely light orientated and build their tents (the largest of any tent caterpillar) so that the broadest face of the structure faces the southeast, taking advantage of the morning sun. The caterpillars typically add silk to the structure as they walk back and forth over it at the onset of each of their daily activity periods. The silk is laid down under slight tension and it eventually contracts, causing the newly spun layer of silk to separate from the previously spun layer. The tent thus consists of discrete layers separated by gaps within which the caterpillars rest. The tent has openings that allow the caterpillars to enter and exit the structure. Basically they are building a screened in porch. These are some of the most advanced and social of caterpillars. They build their bags as a way to protect themselves, as a resting place, as a little “glass house” for basking, and as a home base for feeding, not unlike bee hives. Since these guys are early spring caterpillars, they have some adaptations to the cooler weather. They can’t digest their food unless they are warm, so they huddle together at night for warmth, bask inside their tents in the day, and will wander about on the outside of the tent, sometimes stretching out and waving their hairs to cool down. The caterpillars feed three times a day: early morning, midafternoon, and in the early evening. Tent caterpillars secrete silk from a spinneret (similar to spiders) wherever they go and their frequently used pathways can be seen

each appellation. These factors combined allow the consumer to be confident that a rosé wine from Provence will designate consistent quality. Within the Provence region, there are three major Provençal appellations that offer a stylistic uniqueness based on their microclimates. Côtes de Provence is the largest and most well-known, followed by Coteaux d’Aix-en-Provence on the western side of the region, and the least known Coteaux Varois en Provence located more inland. You are probably wondering just how does a winemaker make rosé wine from Provence, or anywhere in the world for that matter? Red grape varietals that are traditionally grown in the region are harvested and then pressed off their skins. This allows for minimal color extraction of the skins and juice in contact together. The wine is fermented into single batch lots. Once the wine has completed fermentation, the lots are then blended in a process called “assemblage” in order for the winemaker to create the final product. This is commonly a consistent style house-blend wine that, while it reflects the soil, climate and grape varieties that it comes from, is consistent from year to year production. The main grape variety used in this region is Grenache, also known as Garnacha in Spain. This is a thin-skinned varietal that offers little color to the wine, but results in a spicy, red berry flavor that is relatively high in alcohol. Cinsault grows well in the sunny area as it is heat tolerant and will add softeness and a fresh bouquet quality. Syrah, also known as

Shiraz, is considered a thick skinned, blackish-blue hued grape that produces a more intense color concentration and fuller bodied wine on the palate. Mourvèdre grows well in the heat and thrives being near the ocean. It offers smooth, yet structured tannins and spicy characteristics. Tibouren may be the one grape you are not familiar with as it is the one grape variety that is seldom seen outside of its homeland. Highly aromatic, this is what offers the wines of Provence an earthy component. While this grape is greatly valued by producers, it is the least planted in the region due to its susceptibility to vineyard diseases. Rounding out the list of approved grape varietals is the structured carignan, which is a great base for blending, and the least commonly used but probably most well known cabernet Sauvignon. Just like warm summers on Nantucket, Provence is known for its open skies, brisk winds, and plentiful sunshine. The climate is especially welcoming in the early fall months of September and October. The outdoor lifestyle of sunbathing, walking outside, and participating in water sports is also similar between the two regions. People tend to enjoy outdoor activities that revolve around the beautiful surroundings of the area, the fresh cuisine of bounty from the local farms and surrounding waters, and a glass of crisp, dry, refreshing wine that makes the trifecta complete. Many would like to say that rosé wines are coming back in style, but they have never been out of style. They are part of a lifestyle that is reminiscent of what we experience here on Nantucket and also in Provence. The slogan for Nantucket Reds, “Guaranteed to fade” (as in the color), is just like a picturesque Nantucket sunset. It is no wonder we enjoy the wines of Provence so much here on Nantucket. Cheers to that!

by obvious silk trails. As the caterpillars move about the tree, they largely confine their movements to these trails. The silk makes it easy to see their trails, but instead of using touch they use their sense of “smell as they follow a pheromone secreted from the posterior tip of their abdomen (insert sixth grade joke here). Caterpillars deposit exploratory trails by dragging the tip of their abdomen as they move over the tree in search of food. Caterpillars that find food and feed re-mark the exploratory trails they follow back to the tent,

it to do all the work. None of this is all that difficult considering their home is right on the food source. These caterpillars are very pretty, overall hairy with areas of blue, white, black (dominant color) and orange. I was enthralled to learn that the blue and white colors you see on an eastern tent caterpillar are structural coloration, not pigments. They use tiny microtubules to fool our eyes into seeing blue and white by selectively filtering light. Many colorful creatures such as peacocks and hummingbirds and butterflies incorporate structural coloration to ward off predators, attract mates, or simply look fabulous with a flexible wardrobe. Tent caterpillars, like many other species of social caterpillars, vigorously thrash the anterior part of their bodies when they detect predators and parasitoids. With apologies to “Men Without Hats,” it’s literally a “safety dance”! They may do this either inside or outside of the tent, kind of like a caterpillar dance party. This can be extremely creepy. Such bouts of thrashing, which may be initiated by a single caterpillar, radiate rapidly though the colony and may result in group displays involving dozens of caterpillars. Such displays create a moving target for tachinid flies, wasps and other small parasitoids that lay their eggs on or in the body of the caterpillar. They also clearly deter stink bugs and other timid predators. Groups of caterpillars resting on the surface of the tent constitute aposematic displays, which is a fancy way of saying they display warning colors. Few birds other than the cuckoo find the hairy caterpillars palatable, although many birds eat the adult moths. One of the reasons that the caterpillars are rarely eaten (and therefore more obvious to us) is that they often feed on the leaves of the cherry tree which are cyanogenic (contain a poisonous cyanide compound). The caterpillars will regurgitate cyanide-laden juices when disturbed—and nothing is more disturbing than being eaten. After the feeding and dancing and basking, when they are full-grown, larvae leave the host trees and disperse to form loose cocoons in protected continued on page 22

places where they pupate. The adult moths emerge about two weeks later. They are strictly nocturnal and start flying after nightfall, stopping to hang out and rest a few hours before dawn. Mating and oviposition typically occur on the same day the moths emerge from their cocoons; the females die soon thereafter, with an average life span of five days for the moths. If it is any consolation (obviously not for the moth), the Infestations tend to be cyclic in severity, worsening for several years until their populations crash to low levels, then slowly rebuild. As bad as the damage looks, ETC rarely kill the trees they are defoliating. I hope all this info make you detest these guys less. I have met people who are petrified of them, and their handiwork is alarming, but healthy fruit trees will survive and they are providing food for other things. Their intricate and socialized survival techniques imply that Eastern tent caterpillars will stick around for a while. And speaking of social survival skills, nature walks now are being held Monday-Friday at the UMass Boston Nantucket Field Station at 180 Polpis Road at 10 am. Call 508-228-5268 for more information.

Vol. 45 No. 5 • Our 45th Season!

June 4 - 10, 2015

Featured Restaurant: The Ships Inn

Exceptional from First Bite to Last Once every couple of years we enjoy a meal that is top notch from soup to nuts. It happened last week here on the island, only in this case it was from soup to souffle. We’ve always loved The Ships Inn for the way the owners of this inn and Fried Calamari restaurant combine style and modern amenities with a location steeped in Nantucket history... for their warm hospitality... for their superb cuisine that is sometimes subtle, sometimes bold, and always very good. Our recent dinner at Ships Inn was exceptional! Chef Mark Gottwald owns The Ships Inn with his wife Ellie, an island artist. For 25 years, Gottwald has used his classic French culinary training polished in stellar restaurants across the country to serve ingredient driven dishes that are carefully conceived and refined yet approachable. Years of cooking have honed this chef’s skills so that his taste is flawless and his technique is perfect. Chef Gottwald updates his menu seasonally, and nightly specials often feature ingredients that are fresh and local. It’s not unusual for the chef to have caught the fish he prepares, and many of the herbs he uses are grown on the property. From the moment we stepped through the door of the bright and airy lower level dining room on Fair Street, Manager Bob Moulder and his staff guided us through a meal to remember. Service here is very well done: waitstaff is intimately familiar with each dish offered and ready with descriptions and suggestions for pairings from the international wine list. Every item on the menu at Ships Inn is made in-house. We nibbled on a variety of freshly baked breads—cheddar focaccia, pumpkin bread, and Ships Inn rolls—as we perused the menu of salads, soups, appetizers, and entrees. Kelly, our server, reminded us that souffle of the evening (strawberry) must be ordered when we order our meal so that the kitchen can perfectly time this grand finale. Chef Gottwald’s soups are masterpieces of focused flavor. He’s known for his fabulous Seafood Chowder, but this visit we sampled his Cauliflower Soup with Vermont cheddar and found it every bit as good. Creamy yet delicate, it’s the lightest full-bodied soup we’ve ever had. The first course choices are appealingly varied from casual to haute cuisine. Fried Calamari has been served at The Ships Inn for as long as we can remember—it has always been extraordinarily good, and we know it always will be. Chef Gottwald’s remarkable consistency keeps customers fiercely loyal. The tender rings and tentacles of calamari are enveloped in a

batter that is light but adds a tasty crunch. A tangy housemade ponzu sauce is served alongside for dipping. New to the menu this summer is Lobster and Avocado Tempura. Sometimes it’s the simplest dishes that reveal the most about a chef, and this is simple dish is simply delicious. Sweet lobster meat (and a lot of it: tail, Lobster and Avocado Tempura claw, and knuckles) and wedges of ripe, creamy avocado are cloaked in a shatteringly crisp tempura. They must have been somehow been fried without oil because there was not a hint of grease. A cool salad of baby kale and carrot is tucked underneath, and a spicy thai dipping sauce adds a spark of heat. We were delighted by the amount of flavor this chef can coax out of lettuce in his Charred Boston Lettuce with Rock Shrimp. In all the dining out we’ve done, this is the first time we’ve been s e r v e d charred lettuce so we were a bit skeptical. We should never have doubted. Grilling develops a sweetness in the lettuce and the char adds a deliciously smoky summer cookout taste. This Charred Boston Lettuce with Rock Shrimp dish is served

with rock shrimp tumbling out of the folds of lettuce, the plump morsels enhanced by squiggles of balsamic reduction and sriracha aioli. Your first bite of this should be just the lettuce to make you a believer, but after that you’ll want a bit of everything on each forkful. Our team could not decide if that was our favorite appetizer or if we liked the Sauteed Wild Mushrooms the best. For this mushroom lover’s dream, a mix of baby shiitakes and chanterelles, shown just enough heat to make them tender, are tossed with herbs and tamarind sauce for a tinge of sweet and sour. We would have happily devoured this woodsy toss all on its own, but Chef Gottwald takes it up a notch by serving it over warm goat cheese. We couldn’t get enough! In many restaurants, a first course this good would have been hard to follow, but not at The Ships Inn. The main course selections we chose reinforced our faith in the impressive talents of this chef.

Grilled Shrimp

As we saw in the first course, the selection of entrees also spans a range of styles and flavors. Each dish is very different from every other in preparation and accompaniments—there truly is something here for every palate. Grilled Shrimp has a Spanish flair on the early summer menu in what we think of as a deconstructed paella. Four enormous, succulent shrimp are grilled and nestled together on a tomato saffron sauce vibrant in both color and taste. The shrimp are flanked by a deeply flavorful saffron rice and by a delicious mix of English peas, baby littleneck clams, and bits of spicy chorizo. We enjoyed combining different elements of this dish; each forkful can be a little different from the last. We love Chef Gottwald’s Sauteed Halibut entree. The fish was perfectly seasoned and cooked—we would expect no less from this chef—and served with a creamy wild mushroom risotto below and earthy morel sauce on top, which made the mix of land and sea nothing short of sublime.

Mustard Crusted Colorado Lamb Loin

June 4 - 10, 2015

Page 31

Given the choice between beef and lamb, choose we’ll lamb every time, so it’s nice to have a dish that is not the usual chops or rack or stew. Mustard Crusted Colorado Lamb Loin is supremely satisfying. The lamb, medium rare at the suggestion of the chef is sliced and fanned out over lentils with sweet roasted carrot and Grilled Chicken onions. A delicious lamb demi reduced with pomegranate and a hint of rosemary is spooned overtop for whispers of tart and sweet. In the hands of Chef Gottwald, even Grilled Chicken becomes something irresistible. Crisp skin over succulent breast meat, the chicken is bathed in a meuniere flavored with garlic and lime. Both rustic and sophisticated, this glorious dish has layers of bold flavor—it alone is reason enough to make your reservations today at The Ships Inn! The Ships Inn is famous for their dessert Souffles, whether the featured flavor is chocolate or raspberry or Grand Marnier or butterscotch or strawberry (as we had last week), this is a dessert you don’t want to miss. The evening specials sometimes include a special dessert, and we were lucky to be offered a light and flavorful springtime treat: Strawberry Rhubarb Cake in phyllo with strawberry ice cream. The individual Key Lime Tart is another good choice for a light finish: the crust is buttery and flaky, the filling is bracingly tart, and the whipped cream is just sweet enough to mellow the lime. It was the Flourless Chocolate Souffle Cake that we loved best. Moist and tender with deep chocolate flavor, two small cakes are served with chocolate sauces, pistachio ice cream, and a single tuille. We intended to have just a taste and ended up cleaning the plate. Excellent coffee and vintage port were our final sips of the evening. In the mood for a rare treat? Order a bottle of the Offley 1985 to share. Start to finish, our meal here was magnificent. If you have only one night to go out to dinner on Nantucket, go to The Ships Inn!
