Tips for Roasting the Perfect Bird –With Chef Hannah Smith–
Thanksgiving is just around the corner which means now is the time to start planning your delicious feast. The number one component to any Thanksgiving meal is the turkey. There are plenty of ways to prepare a turkey including smoked and fried, but Chef Hannah is going to explain how to roast a turkey to perfection.
1.
One hour before roasting, take the turkey out of the fridge just to take the chill off. Don’t attempt to completely bring it to room temperature and don’t put it in the oven right from the fridge.

Leave your turkey unstuffed! Stuffing must be cooked to a minimum of 165 degrees Fahrenheit, and when turkeys are cooked with stuffing, your bird will end up overcooked by the time your stuffing reaches the minimum temperature. So bake your stuffing to perfection separately.

The rule of thumb for cooking a turkey is 15 minutes per pound. However, some factors, like brining the bird or leaving the legs untrussed, will contribute to a little faster cooking time. Begin checking the temperature of your turkey about halfway through the scheduled cooking time to gauge how fast it’s actually cooking.

Every 30 minutes, remove the turkey from the oven and baste it all over. Pan juices actually cool the surface of the turkey, which keeps the breast meat cooking at close to the same rate as the legs and thighs. In the last 45 minutes or so of cooking, you can also baste the turkey with melted butter or olive oil. This helps crisp up the skin and turn it a beautiful deep golden brown.

Let it rest! Lift the whole turkey (still on the rack) and transfer it to a cutting board. Tent loosely with foil and let it rest for 30 minutes. This gives time for the juices to be absorbed into the muscle tissue, making your bird juicier and easier to slice.

She will discuss what the different labels mean when purchasing, whether to brine or not and alternatives to roasting. Must be 18 years or older to participate. Sign up in advance as seating is limited. Chef Hannah provides monthly cooking classes which aim to teach cooking enthusiasts how to efficiently navigate their kitchen. These classes feature a wide variety of topics; from learning about different types of chocolate and how best to use a whole chicken to picking fresh produce. Greet guests with this charming alternative to a fall wreath. Simply apply a layer of chalkboard paint to the inside of an old tray, then add autumn branches and bittersweet berries for a seasonal finish.
Nothing says fall like maple leaves. Create this seasonal bowl and fit it with your favorite candies or spice it up with a festive candle. Simply super glue the fake or dried leaves and cover the entire bowl with leaves.

What you’ll need: chalkboard paint ($7; A&C), tray (various prices; BX), faux leaves/garland décor (various prices, A&C)
What you’ll need: fake leaves ($8; A&C) or real Japanese maple leaves, plastic bowl ($7; BX), clear glaze ($15; A&C)
How to do it: If you chose to go with real leaves, begin by tinting the leaves you collect with red, yellow or orange food coloring to make them pop! Next, Mod Podge (use super or tacky glue for fake leaves) the leaves onto the jar, making sure to cover every inch of the jar. Once the Mod Podge has dried, add twine or straw around the jar for an extra flare. Lastly, place your favorite candle in the jar and voila, you have your very own candle holder! What you’ll need: glass jar ($7; A&C), Mod Podge ($8; A&C) or tacky glue ($4; A&C), fake maple leaves (various prices; A&C) or real Japanese maple leaves, sponge brush ($3; A&C), twine ($4-10; A&C), flameless candle ($7; A&C)
Metallic Pumpkins
Festive Fall Basket
Paint paper mache pumpkins with metallic paint for festive decor that is sure to impress your guests.
Simple wooden baskets are wonderful for creating beautiful fall décor. The best part is you can either dress them up or down – whatever fits your own personal style.
How to do it: Lay down thick paper and create a mini paint palette, pouring a generous amount of paint onto the paper. Dip a sponge brush in the paint and coat the pumpkins with one layer of paint, ensuring to cover the entire pumpkin (except for the stem). Once the pumpkins have dried, paint the stem of the pumpkin with another metallic color. Afterwards, add an additional coat of paint. Allow the pumpkins to dry and then place them in a mini basket alongside acorns or marbles. For a more personal touch, use a metallic pen to add fun designs onto the pumpkins. What you’ll need: paper mache pumpkins ($5/Four Pack; A&C); burnt orange and gold metallic paint ($4/Each; A&C), mini faux acorns ($3/Pack; A&C), metallic pen ($3-4; A&C), mini basket ($2.50; A&C), sponge brush ($.50-$3)
How to do it: Select a small to medium sized basket. Cut out a piece of Styrofoam to fit the base of the basket. Super glue the piece to the bottom of the basket. After the glue has dried, stick your flower arrangement into the Styrofoam and glue to secure. For a little fun, paint acorns with a metallic gold and add a little glitter to the tips. CHICHIBU NIGHT FESTIVAL TOUR DATE: Sun • 3 Dec Cultural Connection
Every year in early December, the mountainous city of Chichibu holds one of the most famous float festivals in all of Japan. Historically dating back 2,000 years ago, this two-day festival lights up the night sky with hundreds of lanterns and a beautiful firework display. If you missed the opportunity to try delicious, traditional Japanese festival food during the summer, here’s your second chance. Wander the booth-lined streets of the city and immerse yourself in the food and culture of Japan. Try the festival staples like yakisoba or okonomiyaki and countless other delectable options. Brace the cold weather by indulging in an additional treat and warm up with a cup of hot and sweet rice wine called amazake, a traditional drink dating back to A.D. 500. Once you have sated your appetite, you can begin searching for a comfortable spot to view the parade. There are six floats which are incredibly detailed works of art. They are carefully handcrafted and decorated with tapestries, paintings, woodcarvings and rows of lanterns. These floats are completely man-powered and weigh approximately 10 to 20 tons each. With wheels made of wood, moving these massive structures calls for intense teamwork between dozens of people. It is an impressive sight to watch such beauty be pulled through the city with incredible dedication. Eventually, make your way to city hall where all the floats will begin to line up. From there, the floats will transform and wings will unfold to create a stage for traditional Japanese performances. Watch talented performers as they take part in traditional Japanese dances and Kabuki plays. Finish the night off with the rare occurrence of fireworks outside of the summer months in Japan. Sip your amazake, listen to traditional taiko drums and flutes while you enjoy the impressive two-and-a-half hour firework display.
