Bucket List: Skydiving, bungie jumping off a skyscraper, climbing a mountain, and visiting the Great Wall of China. Describe your typical day on the job. As soon as I walk through the classroom door, I am welcomed by all of the children giving me hugs and screaming, “Mr. Eric!” I can barely walk because the kids are climbing all over me before I can even get the day started. Throughout the day, I provide kids with a variety of learning activities. They love to socialize and tell me about their weekend/week with their family. Since joining FSS, what has been your most rewarding experience? Being able to make a difference in the lives of children. I love seeing the children grow and learn each and every day. It’s a wonderful feeling knowing that the children and parents appreciate all that I do. Even though there are times when the job can be stressful, seeing the kids smiling faces makes my day. They also say and do the most hilarious things, so you can’t be stressed out for too long.

Top Five Fall Foods You Should Be Buying –With Chef Hannah Smith–
Autumn is here and with it comes a variety of delicious fall foods. From season favorites such as sweet potatoes and fresh fruits to newly harvested rice and in-season fish; there is something for everybody. Check out Chef Hannah’s top five fall foods below and learn where to buy them as well as how to use them.
1. New Rice (Shinmai)

That’s right, the harvest has happened in Japan and rice can not get any more fresh. Get it now until the end of the year for the fluffiest, tastiest rice you will ever have in your life. Look for Shinmai (新米) on the label or display in the grocery store. Fun Fact: First harvest rice is kept for sale in Japan only. Exported rice are the remaining year’s crops, making shinmai extra special.
These hearty, roasted sweet potato treats can be found hot off the coals in some grocer’s produce departments as well as at street vendors. Look for the softest potatoes that have “burnt caramel” looking spots on them. You can also make these at home, but with the cost of sweet potatoes being the same as their roasted version, why not save yourself some time, right?

These will cost more than your average mushroom varieties in Japan, but they are worth it! With more umami (savory flavor) than any other Japanese mushroom, use sparingly as a topping for steak, soups, or that delicious new rice you bought. Look for Matsutake Mushrooms on the label and the higher price to distinguish them.
Possibly the sweetest fruit on the planet when they are at their ripest, Chef Hannah prefers the Fuyu variety. They are the squat version versus the acorn shaped Hachiya counterpart. Look for bright orange color and some give to pressure (like how a ripe avocado feels). You can eat the skin if you like or peel it with a vegetable peeler.
5. Pacific Saury (Sanma) Sanma is the symbolic fish of autumn in Japan. Its pointy head even resembles a Japanese sword and literally translates as, “autumn knife fish.” As with purchasing any fish, look for bright, clear eyes and no funky smells. Purchase these buttery yet intensely flavored fish the day of cooking. They are also usually small, so plan on one per person for your meal. Here’s how to do it:
Recipe Grilled Pacific Saury
• 1 Whole Pacific Saury/Person • 1-3 Tablespoons Olive Oil • 1 Teaspoon Sea Salt/Fish
• Lemon wedges, fresh herbs, or soy sauce (optional)
Instructions: Preheat your grill to medium high heat. If using charcoal, keep a hot side of coals and cooler side with less coals since you cannot easily adjust the heat. This will allow you to “turn down the heat” by simply moving items over. You can also cook saury on your stovetop in a cast iron pan on medium heat. Place the fish on its side on your cutting board and insert a sharp knife into the stomach side from top to bottom. Remove the gut and wash under cold water. Saury is usually eaten with the intestine, but it’s a little bitter for me so I remove it. Blot the entire fish dry (inside and out) with paper towels. This will allow the salt to adhere. Line a grill pan with foil and wipe it with a little olive oil to prevent sticking. Place the fish onto the foil and sprinkle both sides as well as the interior generously with salt just before grilling. Don’t salt too far ahead. It will draw moisture out of the fish. Grill until the surface is blistered, brown and crispy, about five to eight minutes. Flip carefully, making sure the fish skin is intact, then grill the other side until the cavity of the fish is cooked through (it should be white), about three minutes. Serve with lemon wedges or your favorite Japanese soy sauce or dipping sauce and maybe that new rice you bought. *Optional: You may also stuff the cavity with lemon slices and fresh herbs before cooking for a less traditional, but delicious alternative. Chef Hannah provides monthly cooking classes which aim to teach cooking enthusiasts how to efficiently navigate their kitchen. These classes feature a wide variety of topics; from learning about different types of chocolate and how best to use a whole chicken to picking fresh produce. Hiroshima is a historic site in southern Japan which highlights two UNESCO World Heritage sites. Every year, millions of people travel from all over the world to explore the famously reconstructed city. If you are a history enthusiast, then this is a city that you have to check off your bucket list while in Japan. Although Hiroshima boasts a rich history in the years since it was founded in 1589, the city is famously recognized internationally as one of the atomic bombing sites of World War II. The city was bombed on 6 August, 1945 toward the end of the war. In memoriam of the event, the A-Bomb Dome of the Hiroshima Peace Memorial Park was designated as a World Heritage Site in 1996. The Peace Memorial Park now stands as a physical representation of lasting peace. In addition to the A-Bomb Dome, Hiroshima holds a centuries-old shrine, Itsukushima, which lies on the coast of Miyajima island. Built during the end of the sixth century and modified in 1168, Itsukushima is one of the most significant shrines in Japan – being recognized by the UNESCO as a World Heritage site. Itsukushima shrine, along with its torii gate, is unique in that it floats elegantly above the sea as opposed to being posted on land. The beautiful scenery, combined with the vermillion-lacquered shrine, green forest as a background and the blue sea, symbolizes the Japanese sense of beauty. This history-filled trip includes roundtrip airfare and bus transportation, two nights’ accommodation with breakfast, sightseeing to Hiroshima Castle and Miyajima Island, Kintaikyo Bridge, Iwakuni Castle and more.

RISK MANAGEMENT Risk management is the responsibility of everyone involved in aviation. It is understandable from an economic point of view that the mail, checks, boss, passengers, etc., must get through. It is important to assess whether the success of the task outweighs the overall risk. A good tool to use in making good aeronautical decisions is the Decide Model. This model, comprised of a six step process, is intended to provide the pilot with a logical way of approaching decision making. The six elements of the 1. 2. 3. 4. 5. 6.

Decide Model represent a continuous loop decision process which can be used to assist a pilot in the decision making process when he/she is faced with a change in a situation that requires a judgment. This Decide Model is primarily focused on the intellectual component, but can have an impact on the motivational component of judgment as well. If a pilot practices the Decide Model in all decision making, its use can become very natural and could result in better decisions being made under all types of situations.
The decision maker detects the fact that change has occurred. The decision maker estimates the need to counter or react to the change. The decision maker chooses a desirable outcome (in terms of success) for the flight. The decision maker identifies actions which could successfully control the change. The decision maker takes the necessary action. The decision maker evaluates the effect(s) of his/her action countering the change.
