FORT SAN PEDRO Built by the Spanish under the command of Miguel Lopez de Legazpi, the fort is significant for having been the first Spanish settlement and served as a military defense structure.
Preparations are underway for 2021 as Cebu celebrates the 500th year since the image of Sr. Santo Niño arrived. To recall, it was March 1521 when Ferdinand Magellan along with his troops colonized the island. In 2021, Cebu will celebrate the 500th year since Portuguese explorer Ferdinand Magellan, sailing under the Spanish flag, brought Christianity to our shores. He gave Cebu’s queen a baptismal gift—a statue of Santo Niño—and since then, the island has shone gloriously. Walking around the city’s downtown is like taking a refresher course in history. Here you can visualize the glory days of old Cebu, still evident in the structures that were built centuries ago but remain standing until today. We in Zee fell in love with downtown as we share our favorite spots for a great #OOTD post. As I spent my birthday with friends up on hillside overlooking Cebu City by night, we came up with a list of restaurants also offering glorious views. And speaking of restaurant, Kate Tiffany brings to the table unique food offering with the opening of Skillet. With this issue, the last one for our layout artist Jean Lim, we send her off with our best wishes that she too will find her glory days in the land Down Under.

Walking around Cebu, particularly downtown, is a good cure-all for the heart and the mind—a panacea maybe, proven effective for me these past years. Perhaps mirrored in these places is the state I sometimes find myself in: disoriented, bewildered, and frenetic. SKILLET JAPANESE CAFÉ & BISTRO With a game plan of finding ways to serve food that's uniquely their own, Skillet Japanese Café and Bistro brings color and excitement to Cebu’s dining industry. by Carlo Rivera photography Oliver Echevarria In an effort to introduce modern Japanese cuisine to Cebu, young Filipino-Chinese businesswoman Kate Tiffany Yu set up Skillet Japanese Café and Bistro. Partnering with Japanese gourmet chef Masaki Tsuji, Skillet offers food choices of the high-end type that local Japanese residents love—yoshoku or Western-influenced Japanese food. Yoshoku first emerged in the Meiji era over a century ago when Japan started to open its doors to Western influence and trade. This paved the way for changes to come in, even to its culinary traditions. “I want people to know that Japan has unique fine dining-worthy dishes too,” says Kate. Apart from that, Filipino dishes are given a Japanese twist as well at Skillet. Kate sees her creativity come alive as their dishes are brought to the table (in a skillet, of course) and served to the discerning Cebuanos. And while there are a number of hole-in-the-wall Japanese restaurants opening up around the metro, Skillet delivers something quite out of the ordinary. Don't expect your usual sushi, ramen, and tempura on their menu, they go way beyond that. There’s Omelet Rice with Hamburg Steak in demi-glace or tomato sauce, Sisig Quesadillas, Spaghetti Pescatore which is a seafood pasta, a Chicken Pot Pie with
a very good crust filled with chunks of chicken. Definitely worth a try is the Angus Beef Steak with demi-glace sauce. Of course, there’s always a room for dessert and at Skillet, dessert is a must. Together with Chef Masaki, Kate created desserts that have been catching everyone’s attention. They have the much-hyped Dew Droplet Cake and the super fun-to-eat mango dessert ramen topped with assorted fruits. As matcha faces much demand in the city these days, Skillet recently offered an all matcha dessert buffet with different variations—cakes, shakes, puddings, and more. Watch out as they will be bringing this dessert buffet back again soon. Skillet can seat up to 35 persons with an exclusive room that can be booked for 12. The restaurant’s wall features a good conversation starter—a painting done by Japanese artist Aito Kitazaki whose work of art truly speaks meaning to many. Belonging to a Filipino-Chinese family, Kate learned everything she knows about running a business first hand as this is the world she grew up in. Now at 28 and venturing on her own, she brings the skills and all that she has learned from her parents to build her own brand of business.
As she is constantly searching to serve her restaurant patrons something new, Kate takes up the challenge to always offer the unique and exciting, thereby making her distinct mark in the restaurant industry. With Kate and Chef Masaki together at the helm of Skillet, there’s no denying—Cebu’s food landscape will never go out of style.

For most of my 20s, I never understood the big deal about getting older. Age, I often declared, was just a number–as I turned 25, 26, 27 and so on, I insisted that you were only ever as old as you wanted to feel. Then, I hit 30 and getting older hit me like a ton of bricks. Binge drinking on a Friday night now required a whole weekend’s worth of recovery, I found myself wanting to go to bed by 10:00 PM, and a McDonalds cheeseburger for lunch now stays forever on my hips. Now, the bad habits haunt me like a guilttripping poltergeist, and now as my birthday (and the rest of my 30s) reaches out for me with old lady hands, I once again make the resolve to eat and live healthier. Thankfully, it’s a lot easier to do in Cebu these days. I hope to follow in the lead of Chip Lopez–The Lazy Chef has been advocating plant-based eating in the

city for years, and she’s been hosting cooking classes to create a lasting effect in the local lifestyle. And on days when I’m too lazy to cook for myself, I can always get a taste of her dishes via Nourish Cebu’s meal delivery service–the beetroot burger is definitely bomb. Also taking after Chip’s amazingly holistic healthy lifestyle, a few hours clocked in at Zink Studio every week is something that I have decided to commit to (as opposed to my very casual relationship with spinning right now). Getting hyped up on the bike is really one of the most enjoyable workouts I’ve tried, and maybe I can do well to add some HIIT and dance classes to that repertoire. A recent weekend in Shangri-la’s Mactan Resort and Spa helped reinforce this notion to integrate health and wellness into our every day life. Celebrating Global Wellness Day, we were treated to a

delicious vegetarian dinner, where no one was asking when the pork was arriving, and a healthy breakfast that introduced us to some of the best muesli I’ve ever had. This was interspersed with activities that included an early morning tour of the resort, aqua aerobics and an all-organic beauty session with Racquel Choa of The Chocolate Chamber. In the end, deciding to keep our lechon binges to special occasions might actually be easier to do than we think it is. So, as I venture into this new decade, I am hoping to bring with me a better resolve to be healthy–as long as I get to indulge in dishes like The Weekend’s Fat Bastard pork chops every once in a while. I may want to eat better, but I’m not crazy.

MOUNTAINS TO CLIMB IN CEBU

Ride a bus from South Bus terminal and tell the driver to drop you off at Mantalongon Public Market. From there, a habal-habal can bring you to the base of the peak. From there, the trekking begins.
MT. MANUNGGAL The mountain is accessible via the road connected to Cebu Transcentral Highway at Barangay Gaas. From Ayala terminal, ride a van headed to Balamban. Start the trek in GL Highland Resort in Barangay Gaas, Balamban.
MT. LANAYA From Cebu South Bus terminal board for Bato, Samboan, tell the driver to drop you iff at town proper of Alegria. From there, register to tourism’s office and they will guide you to the trek.
MT. KAPAYAS Start at North Bus terminal and ride bus going to Catmon. Make sure to drop off at Barangay Kabangkaya. Register first at the local police station, ride a habal-habal that would bring you to Sitio Kampanya. The driver will lead you to the peak.
CHURCHES YOU NEED TO VISIT WHEN IN CEBU These churches are truly sights to behold. BASILICA DEL STO. NIÑO Founded in 1565, this is the oldest Roman Catholic church in the country. It was built right on the spot where the image of Santo Niño was found unscathed among the ashes of a burned-down shanty.

As inscribed on its church marker, San Guillermo de Aquitana was also a place of refuge for the townspeople against the Moro attacks. An example of Filipino-Spanish architecture, it stands as one of the remaining church-fortress complexes in the country.
