D. Barbero Torrone Nougat from Piedmont David Barbero’s family has been making torrone hazelnut nougat—what I call Italian brittle—for five generations, since 1883 in the town of Asti. Neither the history nor repetitiveness seems to dull his passion. When you ask him about torrone his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours. We break for lunch! Honey Figs Pingo de mel figs—”honey drop”–are so named because they drip sugar when they’re ripe. Preserved in sugar by the same nuns who make our Sugarplums, at right. Hold one up to the light. First, notice it’s improbably heavy. Next, look how it glows from within. The texture is like a candied chestnut but not as chalky. Christmas Pudding From the culture that brought you fruitcake comes another muchscorned holiday food tradition: Christmas pudding. But just like how there’s good fruitcake and lame fruitcake, the same goes for pudding. It's not bad, it's just misunderstood. In Victorian England the holiday pudding would be made from brandy soaked dried fruits, sugar, eggs, lots of spice and just enough flour to hold it all together. This particular pudding comes to us from Thursday Cottage in Essex. They craft it in the old way, with dried currants and red and white raisins that are soaked in Cognac to intensify their flavor and give them a juicier texture. They deploy their own orange marmalade (they're a preserve maker first) as well as sugar, flour, citrus peels, cinnamon, cloves, ginger and another touch of Cognac. It’s traditional to steam the pudding for a couple of hours before serving, but Victorians didn’t have microwaves and they work too. The must—freshly pressed juice—of Trebbiano grapes is cooked down in open copper kettles to half its original volume, then put into wood to age for at least a dozen years. During the aging process, the vinegar is shifted from one type of wood to the next. Cherry, chestnut, oak and mulberry all leave their imprint on the vinegar. But that’s just the beginning. It’s then taken out and tested by a panel of judges. The qualifiers are graded gold, then silver, then red. The result is an almost unbelievable concentration of sweet-sour flavor in a dense, intense, brown-black vinegar that hints of berries, grapes, vanilla. There is nothing like it in the world. Since last year, when Zingerman’s Bakehouse started making babka—a sweet loaf, both fluffy and rich, kind of like a light textured coffee cake with a dense filling swirled throughout—I think I’ve sent one to just about everyone on my list. I’ll confess I started giving babkas because I like them so much myself: the swirl of dense, rich chocolate balances beautifully with the juicy raisins that add a touch of brightness, all tied together with a sprinkling of warm cinnamon on top. Stollen, an oblong, football shaped loaf, has been popular as a Christmas treat in Dresden, Germany for centuries. The cake is studded with candied citrus and dried fruit, spiced with cinnamon, and covered in a substantial blanket of powdered sugar. Stollen really took off when Dresdeners Prince Ernst and his brother Duke Albrecht wrote to the Pope in 1450 to see if they could break the church’s baking rules for Advent—they wanted to include butter in their stollen. The Pope refused. They were not easily discouraged, though. For the next four decades they kept writing. Each new pope got a butter request and each new pope turned them down. Finally, forty years of letters and five popes later, Pope Innocent VIII gave in. He sent back the “Butterbrief,” an official document that allowed the bakers in Dresden—and only in Dresden—to bake with butter during Advent. Of course, the pope took his pound of flesh—he instituted a tax on buttered stollen. After paying it, they could bake with all the butter they wanted “with a clear conscience and God’s blessing.” Amen. The tax made stollen expensive—a food for the 1% only. In addition to the butter, bakers started adding expensive ingredients like sugar, exotic spices like cardamom, cinnamon, and clove, and candied fruits and citrus peels. With those additions, the stollen we know today was born. Today, 500 years later, the recipe has changed very little. Our stollen is made by the master bakers at Zingerman’s Bakehouse, inspired by the Dresden traditions. It’s jam-packed with fruit: glacéed lemons, oranges, Michigan cherries, fresh lemon and orange zest, fresh lemon juice, currants, golden raisins, and Red Flame raisins. All of that fruit soaks in Bacardi rum for at least 24 hours before being mixed into the dough. The bakers use so much rum to make the stollen that they have to place their order for it well in advance to make sure there’s enough—otherwise they’ll end up needing to raid all the local liquor stores. In addition to the fruit, the recipe includes almonds, organic Mexican vanilla beans, and a bit of Indonesian cinnamon sprinkled on top. The whole cake is blanketed in a thick coating of powdered sugar. And of course, there’s plenty of butter. (Thank you, Ernst and Albrecht!) All the butter and sugar allow the cake to keep for weeks without any added preservatives. But it tastes so great, you won’t want to hold onto it that long. The 18-ounce cake serves 6-8 generously. Koeze Peanut Butter Jeff Koeze sources great Virginia peanuts, then blanches them to remove the skins and keep them from going rancid. He toasts the peanuts in vintage coffee roasters, adds sea salt, then grinds the mixture to the texture of spun silk (a slightly chunky spun silk, that is). I must confess that I love cheese, and one of my long-time favorites is Manchester from Zingerman’s Creamery. Normally I will not even look at a cheese made from pasteurized milk, but this one is a rare exception—it is that good. It beautifully showcases the seasonal nature and flavors of the local milk used to make it. The cheese is soft and lusciously creamy with a mild tang when young, and gets denser and more flavorful as it ages, with a soft, almost runny rind that is delectable. The Balsamic Vinegars of La Vecchia Dispensa While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of outstanding balsamics under the name La Vecchia Dispensa. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although many believe Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again.

6 Year Aged Cognac Vinegar
It’s not too often you see the French taking a page from the Italians when it comes to cuisine, but they did just that in crafting this intense, complex vinegar. It’s made from the same grapes (Trebbiano) balsamic vinegar makers use in Modena, Italy. Just like the Italians, they reduce the fresh pressed juice in copper kettles, then age the concentrated juice in oak barrels formerly used to age Cognac, which gives it a French twist. Like its Italian cousin, this vinegar is smooth, complex, a little sweet with a finish that seems to linger for hours. Ortiz Tunas from Spain
Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned by hand in good olive oil. The olive oil is key. All chunks of Parmigiano Reggiano aren’t created equal—but you wouldn’t know that by looking at them. One 80-pound wheel of parmesan looks pretty much like another. But there can be a world of difference in flavor between parmesans made by different dairies. They’re all going to be good—but only a few are fantastic. The best advice I can offer to tell between them is to taste a lot, and when possible, to learn more about the story behind a particular wheel of Parmigiano Reggiano: where exactly it comes from, who makes it, and what’s unique about what they’re doing. A good example is Giorgio Cravero’s selection of Parmigiano Reggiano. Giorgio isn’t a cheesemaker. His family has been selecting and aging cheeses in the town of Bra for five generations, since 1855. While Giorgio isn’t the one producing the cheese, he has very close relationships with the cheesemakers. For the cheese we sell, he selects his wheels of Parmigiano Reggiano from a dairy called San Pietro. They’re located in a village called Benedello di Pavullo, situated over 2,300 feet above sea level. At that high elevation, there’s a lot of diversity in the grasses, including plenty of wildflowers and herbs. Compared to the lowland valleys with the lush but uniform grasses that most of the parmesan cows eat, the greater variation in the forage makes for more interesting, more flavorful milk. The San Pietro cheesemakers use their milk to make a grand total of six wheels each day. When the wheels are 12 months old, Giorgio collects them from the dairy and brings them to his aging cave in Bra. There, the cheeses age at cool, ambient temperatures. That allows the cheese to mature slowly. Giorgio and his team also flip the wheels over more frequently than at most cheese caves. The low temperatures and frequent flipping help to keep the cheeses moist. While some Parmigiano Reggianos can be quite hard, Cravero Parmesan tends to have a slightly softer, more creamy texture (though it’s still a hard cheese). The slow aging also helps develop a sweet, delicate flavor. And unlike most parmesan makers and agers who only taste the cheese if they suspect there’s a problem, Giorgio regularly tastes his Parmigiano Reggiano to ensure it has those soft, sweet notes he prefers. Forget the pineapple. These hams, made from heritage Duroc pork raised outdoors on pasture on a single farm in northern Indiana, then cured and smoked by the meat mavens at Smoking Goose, are showstoppers without the extra garnishes. In the Piedmont region of northern Italy, a “cremino” (plural cremini) is an ultra-smooth cube of chocolate and hazelnut gianduja. You’ll find them in the cases of every fancy chocolate shop. These cremini come from Guido Gobino, a bean to bar chocolatier in Torino, Italy, the heart of gianduja country. The cremini are super silky smooth, each dotted with a few toasty hazelnut crumbles. The origin of rugelach, the most popular Jewish pastry in America, dates back several hundred years to a cookie in Vienna. The general format of rugelach has been the same for generations: a pastry rolled around a sweet filling to make flaky cookies just big enough for two or three bites. Though the standard form of rugelach has stayed the same, over the last century the recipe has gotten a big overhaul. Throughout history, as Jews moved they brought their food traditions and adapted them to make use of new local ingredients. At the end of the 19th century, many Jews fleeing the pogroms of Russia and eastern Europe arrived to the lower East side of Manhattan. Within a couple of generations schmaltz spread on dark rye bread had been replaced by schmear on a bagel. The story of rugelach is no different. When Jews made rugelach in the old country, they would have been pareve—that is, prepared with no dairy or meat—so that they could be served as dessert on the Sabbath or on holidays. But in New York in the mid-twentieth century, they had new ingredients to play with, like cream cheese. The addition of cream cheese to rugelach pastry comes, perhaps surprisingly, from the Kraft Foods Home Economics department, which was launched in the 1920s to produce and distribute recipes using Kraft products. The method worked: in a generation cream cheese went from being an unknown oddity to a kitchen staple. Delis started serving New York cheesecake in the 1920s; by the 1940s the trendy new Sunday brunch was bagels, cream cheese, and lox. Today, the standard recipe for rugelach dough looks awfully similar to a cream cheese pie dough recipe from a Kraft pamphlet distributed at the 1939 World’s Fair. There’s a reason that cream cheese dough took off—and has stuck around. The cream cheese and butter come together to make an incredibly crisp, flaky pastry that crackles as you bite into it and then melts in your mouth. About as soon as it does, you’re sure to find yourself reaching for another. The fillings are another story. Back in the old country, rugelach might have been filled with nuts, dried fruits, poppyseed paste, or jams. Our classic rugelach, made with half toasted walnuts and half dried currants, is a combination that great-great-great bubbe back in Austria would recognize immediately. Likewise, apricot and raspberry, filled with really flavorful jams, probably wouldn’t have been too unfamiliar. Chocolate, however, is another 20th century innovation. Given that it tastes like a crisp, bite-sized pain au chocolat, I bet bubbe would go for that one, too. Chocolate Covered Orange Peels For fifty years the folks at Dolci Pensieri di Calabria have been preserving their famed local citrus. They start with fresh, aromatic Calabrian oranges. The peels and pith are removed by hand, the peels cut into strips. They’re candied in a sugar bath and put in an oven at low heat for hours to caramelize. Finally, they’re hand dipped into a bath of 40-percent cacao chocolate. The slight bitterness of the orange peel is tamed by the smooth coat of chocolate, leaving a clean, fruity finish in your mouth as the chocolate melts.
