Raspberry Vinegar If you’re a fan of cooking with vinegar like I am, this one is a must-have for your collection. The flavor is between the sweetness of balsamic and the tartness of apple cider vinegar, and once it hits the back of your tongue you really taste the raspberry. It’s a really special taste, and it kind of tingles in the mouth. It packs such a flavor punch that you don’t have to use a lot—a little goes a long way. I’ve used it in vinaigrettes, in place of lemon juice in a glaze for coffee cake, as a marinade, and more. Mx Green Sass Hot Sauce The first time I tried the Mx Green Sass Hot Sauce I was BLOWN AWAY by the depth of flavor. From the first taste, I immediately had a ton of uses in mind for it. RoastedGolden GoldenSesame SesameOil Oil Roasted Sesame oil used to be something that I’d add if a recipe called for it, but I wouldn’t reach for it on my own. It existed in the part of my kitchen (and my brain) that neutral canola oil does - the functional but not exciting part. Wadaman’s dark roasted golden sesame oil changed all that. It’s somehow both super rich and delicate, with a deep toasty, nutty flavor that I keep thinking about. I first tasted true English Farmhouse Cheddar in 1992. That was the year Neal’s Yard Dairy began exporting it to America. Zingerman’s was the first customer. It was featured in the first mail order catalog we made too. That’s a lot of firsts, but the reason I chose the world-famous clothbound cheese made from single farms in Somerset is that it never lets me down. I love cheddar cheeese in all its forms. None, however, compare with the original. It tastes like fresh grass and cool stone aging rooms. The beefy flavor goes on and on and on. It’s more complex, more flavorful, more everything you want in cheese. A handful of English farms continue to make cheddar this way; the one we offer today is from Jamie Montgomery. Jowl Bacon from Smoking Goose At my house we definitely have foods that we treat as “special.” This jowl bacon is on that list. We unceremoniously but lovingly call it face bacon. It’s the bacon of choice for holiday celebrations, so when planning menus I always hear, “Don’t forget to order some face bacon.” It is simply incredible tasting. I had one bite at an event and I immediately bought some. This meat is deeply flavorful on its own, then seasoned with coriander, black pepper and maple syrup and smoked over applewood. All together it has a sort of pastrami flavor. Although nicely fatty, it cooks in a way that leaves crispy yet tender pieces. Hake & Prawn Stuffed Piquillo Peppers from Spain Saying prawns from a tin can be really delicious sounds like I’m really tired or I’m really drunk. But the hake and prawns together taste like crab, with this soft texture that’s really approachable. Then they’re stuffed in a roasted pepper, and honestly, every food should have the option of being peppered. “Would you like your lasagna peppered?” Yes! The stuffed peppers are tinned in a tomato sauce that is simple enough to be able to adjust as you like. I like to add cheese or peppers. This is an instant meal straight from the can, yet it has such flair. It’s really impressive when I “make” it for people, but it’s so easy! Just buy it and eat it and don’t worry about it. Couscous from Tunisia The Mahjoub family’s hand-rolled couscous is seriously amazing. Memorable and world-class could well be understatements. It’s so flavorful that when I tried it for the first time 10 years ago it completely altered my expectations of what couscous could taste like. It’s terrific with just about anything: Ari's Favorite food vegetables, fish, chicken, lamb, any sort of sauce. Urfa Red Pepper Flakes from Turkey A jar of Urfa Pepper is my ever-present kitchen companion. I often have more than one jar—just to make sure I don’t run out. The earthy sweetness and gentle heat work together to add a surprising, subtle layer of complexity. A sort of kitchen alchemy happens when you add urfa to your tomato-based soups and salads. In the wintertime, I roast squash with shallots, garlic, and jenny's Favorite food urfa. When I need a spice rub for fish, veggies, or meats, of the last 40 years I combine it with coarse gray sea salt, wild fennel pollen, spicy Pimentón de la Vera, fennel seeds, and celery seeds. Kolsvart Blackcurrant & Raspberry Cod Gummies from Sweden Typically gummies are not my favorite thing—they just taste sweet. But the blackcurrant and raspberry gummies from Kolsvart are different. They are much more nuanced, and the flavor is good—it’s fruity, not just super sugary. I like that there are two flavors in the bag, and while Ian's Favorite food I thought I would like the raspberry better I was surprised to of the last 40 years learn I prefer the currant. New Food Finds Exceptionally Fruity Iio Jozo Premium Rice Vinegar
Come Into Chew Coconut Taffy
Most rice vinegars are one-note extremes: either very mild and flat, or excessively acidic and overwhelming. This rice vinegar from Kyoto-based Iio Jozo is unlike any I’ve ever tried before. They start by making their own sake using locally sourced rice. Although that takes more time and effort than buying pre-made sake, it allows them to brew the highest quality sake with a cleaner, more refined taste. After the sake ferments into vinegar, it’s aged for 8 months to round out any sharp, harsh notes. Overall, each batch takes about a year from start to finish. All of these steps add up to an exceptionally fruity and complex vinegar that you can swap in whenever you’d normally use a white wine vinegar. V-IJR 500 ml bottle $55

Sweetly Southern Spotted Trotter Sorghum Cured Bacon
As Good as Italy, Made in Michigan Carosello Gigli Pasta
Atlanta-based Spotted Trotter adds a uniquely Southern twist to their bacon. They start with pasture-raised, hormone and antibiotic-free pork belly from Kentucky and Tennessee that is slowly smoked over pecan wood and then cured in Georgia sorghum syrup. Sorghum syrup is made by pressing the cane stalks of grain sorghum to extract the juice, which is then boiled and evaporated into a thick syrup. It’s sweet, but with a distinctively umami, slightly sour flavor that adds complexity to anything it touches. Mike Carosello grew up in Missouri, but spent years living the vagabond life in Italy. He fell in love with food (who wouldn’t?) and set out to learn the art of pasta making from the masters in Florence. He discovered the importance of using bronze dies to extrude the pasta (it holds sauce better that way) and how to properly dry the dough. When he decided to set up pasta shop in Dexter, Michigan, he found the best durum and semolina wheats he could find and had them freshly milled. It’s just as toothsome and chewy and nutty and flavorful as any pasta I’ve had in Italy (and I’ve had lots). Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. Ortiz Tuna from the Bay of Biscay Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Tradizionali Balsamics from Acetaia del Cristo
Balsamic vinegar has been made in attics all around Modena, Italy, for centuries. Balsamic barrels were (and still are!) made to celebrate the birth of a daughter, and later used as her dowry. Such a precious resource was eaten only rarely, and then only on the richest of foods: sizzling roast meats or sumptuous stuffed pastas. Today, though, practically all balsamic on the shelf bears only a fleeting resemblance to these treasured family heirlooms. Our balsamics from Acetaia del Cristo in San Prospero, just north of Modena, Italy, are the traditional product, aged for decades, judged in a blind tasting to make sure they meet the local standards of excellence. Only a tiny amount is released each year, so our quantities are very limited. These are special occasion balsamics, offered with a rarely seen discount.

To qualify as Tradizionale, a each balsamic is evaluated by a panel of judges. Those awarded the White label have been aging at least a dozen years; the Gold label balsamics must have started aging at least 25 years ago. During the aging process, the vinegar is shifted from one type of wood to the next. Cherry, chestnut, oak and mulberry all leave their imprint on the flavor of the vinegar. The result is an almost unbelievable concentration of sweet-sour flavor in a dense, intense, brown-black vinegar that hints of berries, grapes, vanilla. There is nothing like it in the world. Fifty years ago, as word started to get out about the delicious vinegar found in every home around Modena, Italy, entrepreneurs looking to make a quick buck looked for shortcuts to make cheap balsamic and sell it for a profit. Years of aging in wooden barrels were out, and various additives were in. Unfortunately, with those changes, most of the flavor was out, too. Imagine you’re making a broth from scratch. When you start, it’s thinner and lighter in flavor. As it simmers, the liquid gets progressively thicker and the flavors get more and more intense. The same thing happens as balsamics age, only it takes years instead of hours. In general, a younger balsamic will have a consistency similar to wine and a bright, acidic flavor. As balsamics age for years at ambient temperatures in wooden barrels, each summer’s heat evaporates a bit of the liquid, giving the vinegar a thicker, more syrupy consistency and a sweeter, more complex flavor. Try a sip from a couple of different bottles and you’ll taste the difference right away. One age isn’t “better” than another— instead, different ages of balsamics are ideal for different uses in the kitchen.

The hot cocoa coffee cake was one of the first things I tried when I first started working at Zingerman’s. It isn’t just a breakfast food, I love to nibble on it any time of day. The best way to eat it is to warm it up slightly so the chunks of chocolate inside start to melt. I like to share, too—it’s my favorite gift to give to other chocolate lovers. It never disappoints.
