Roadhouse Bread

Even if you weren’t baking your own loaves in 2020, bread was a stay at home staple. Roadhouse bread from Zingerman’s Bakehouse, based on an early New England recipe combining rye, cornmeal, and wheat, is one of my favorites for its versatility. Slightly sweetened with molasses, it’s great for toast at breakfast. Slightly tangy from a sourdough fermentation, it’s excellent alongside cheeses or smoked salmon for dinner.

I didn’t know what, if anything, people might come to us for when the pandemic arrived. But I learned quickly: Ortiz tuna, and lots of it.

It’s a stock-up item for many of our customers. It might be the first food I decided to sell by the case and it’s definitely the one people bulk up on the most. Still, it went fast. It’s been the house sauce at Zingerman’s Roadhouse restaurant for almost two decades, and this year, for the first time, we put it in a bottle. That’s not to say we sent it off to a co-packer factory to produce in bulk like many restaurants do when they want to “leverage their brand.” We kept it in our kitchen. We make a few gallons at a time.

We did buy an electric label roller, our one nod to automation. Everything else is done slowly, by hand, just like good barbecue should be.

Holm Oak Honey

Holm oaks are an evergreen oak native to the Mediterranean region. In the fall they drop boatloads of acorns that feed Spain’s famous Ibérico pigs. But pigs aren’t the only animals the acorns feed. When the oaks grow at higher altitudes, the acorns secrete a bit of sap on cold autumn nights. Bees love this sweet oak sap. The honey they make from it has notes of caramel, blueberry, and toasty tones. It’s silky, and almost never crystallizes.

At the storybook castle Château de Born in southwestern France, they grow fabulous plums. After harvest, they dry them just enough to preserve them, then whip them into a luscious cream with a bit of vanilla bean. The flavor is bright and clean and fruity, and the texture is silky and rich. Spread it on toast or croissants or crêpes, dollop a spoonful on ice cream or into your oatmeal.

Red Bear Provisions’ has quickly become one of our favorite salami makers. Working just outside Chicago, Illinois, salami maker Inessa and her crew use premium cuts of beef and pork to create their salamis, and this little stick packs a wallop. Zanzibar Curry Simmer Sauce

Quick, easy to prepare, and really delicious, simmer sauces like this complex curry have cut my time in the kitchen without sacrificing flavor. Zanzibar is a blend of spices like cloves, paprika, chiles, star anise and more mixed with coconut milk, ginger, garlic, spinach, and peanuts. Sun-Dried White Mulberries

The breakout fruit of 2020. These white mulberries grow wild in the foothills of the Hindu Kush mountains in northern Afghanistan. Locals sun dry the berries to concentrate their sweetness. Each berry is about the size of a large raisin, with a satisfying crunchy bite and a deep, honeyed sweetness that grows and grows as you nibble on them.

The first time I heard The Clash’s London Calling, I was hooked.

Something clicked inside and it sent me down a musical path I enjoy to this day. Around the same time, I first tasted pâté. You see how that ended. This classic terrine from the folks at D’Artagnan—a staple of the specialty food world since the mid-80s—is made from hormone and antibiotic-free duck and pork. This particular style is inspired by the recipes of southwestern France where they like their pâté to be a coarser texture that lets the ingredients shine. The addition of dried plums and Armagnac adds to the texture and balances the savory notes with a touch of sweetness. A bit indulgent, definitely delicious.

White Cat Popcorn

Popcorn people are particular. I say this knowing I am cut from that cloth myself. It started when I was young. My mom and I at the TV, she’d say, “You know what I could go for?” and I knew exactly what she meant. Popcorn.

I made it on the stove with the one pan that made it best and topped it with melted butter and salt. We tried an air popper exactly once. Italian Valserena Parmigiano Reggiano Practically all Parmigiano Reggiano is made from milk pooled together from multiple farms. But the fifth-generation cheesemakers at Valserena make a farmstead cheese. That means they not only make the cheese, they also raise the cows, and all of the milk comes from their own herd.

Where most parm is made from the milk of Freisian cows, at Valserena they raise brown Bruna Sola cows. They produce less milk than Freisians, but it has more butterfat—and more flavor. Maussane is made using the old-fashioned Provençal fruité noir, or “black fruity” method.

Instead of picking olives green and pressing immediately, Maussane is picked late, when the olives have ripened to near-black, and they are left to ferment a few days. While many oils were pressed this way in the past, early picking and pressing is the norm today.

This makes Maussane stand out. It has virtually none of the grassy bitterness that you may find in other oils. Our most popular bread. Spreading out like the cap of a wild mushroom, its thin, snow white crust surrounds a soft, savory crumb filled with lots of holes (we work hard to put the holes in). This is the traditional bread of Puglia—the heel of Italy’s boot—and the best one to eat alongside a pasta dinner. Recommended for ripping and dipping in olive oil.

Its crust is crisp, its flavor subtle and never tiring. The three pound round is my favorite. Cut into quarters and freeze what you don’t eat.

“Miche” is French for loaf and typically refers to the large size and round shape in the style of traditional French country bread. Bigger loaves have bigger flavor, a moister crumb and longer staying power.

My Italian friends would probably think this bread is heresy, but that’s their loss. It’s a natural for me because I love bread, parmesan and good black pepper.

Years of aging in wooden barrels were out, and various additives were in. Unfortunately, with those changes, most of the flavor was out, too. Tradizionali Balsamics from Acetaia del Cristo Balsamic vinegar has been made in attics all around Modena, Italy, for centuries. Balsamic barrels were (and still are!) made to celebrate the birth of a daughter, and later used as her dowry. Such a precious resource was eaten only rarely, and then only on the richest of foods: sizzling roast meats or sumptuous stuffed pastas. Today, though, practically all balsamic on the shelf bears only a fleeting resemblance to these treasured family heirlooms. Our balsamics from Acetaia del Cristo in San Prospero, just north of Modena, Italy, are the traditional product, aged for decades, judged in a blind tasting to make sure they meet the local standards of excellence. Only a tiny amount is released each year, so our quantities are very limited.

The regal, Rare ones Tradizionali Balsamics from Acetaia del Cristo These are the vinegars about which legends have been woven. Tested by a panel of judges, the qualifiers in Modena are graded gold and white. During the decades-long aging process, the vinegar is shifted from barrels of one type of wood to the next. Cherry, chestnut, oak and mulberry all leave their imprint on the flavor of the vinegar. The result is an almost unbelievable concentration of sweet-sour flavor in a dense, intense, brown-black vinegar that hints of berries, grapes, vanilla. There is nothing like it in the world. An amazing treat you'll always remember. All traditional balsamics from Modena are bottled in Ferrari designer Giorgio Guigiaro's streamlined, sexy bottle, then gift boxed. They may all look the same, but the vinegar is not. We buy ours from Acetaia del Cristo. I think their vinegars are consistently fantastic—and the juniper aged version is unique.
