There’s a reason this is our top selling bacon. It is perfectly balanced between softly, pleasantly sweet and salty/smoky. To me this is the Platonic ideal of bacon. If I were to choose one bacon to eat every day, which pretty much sounds like heaven, this would be it. The Nueskes start with Pietrain-breed pork. They wet cure the bacon for 24 hours, dry it for 24 hours, and then smoke it over applewood for—you guessed it—24 hours. Nueske’s slices it thickly just for us.

Giorgio Cravero’s Parmigiano Reggiano

Our most popular cheese by a wide margin. Giorgio Cravero’s family has been aging Parmigiano Reggiano in Bra, Italy since 1855. He focuses on soft, sweet flavors, the kind of Parmesan you want to eat all on its own (though it’s excellent for grating over pasta, too). The cheese we buy comes exclusively from the San Pietro dairy, located high in the hills above Modena. The diverse herbs and grasses at that high altitude makes for especially flavorful milk, which in turn makes for especially flavorful cheese—a quality noted by this Parmesan’s rare designation as a Prodotto di Montagna.

Comté from France’s Fort St. Antoine

A few years ago I travelled to Marcel Petite’s Fort St. Antoine in Jougne, France where they age Comté cheese. This was a dream come true for me. Comté from Fort St. Antoine is the crown of the king and a trip there is like a cheesemonger’s Hajj. The Fort is special because it’s an ideal environment for very slow maturing of the wheels. Inside, the cheese can develop and express its individual flavors. Plus, it’s cool because it’s really a fort! It was built into the side of a hill in the 1800s and abandoned after it failed at its job stopping Germans in World War II. I love this cheese because I think it’s just about perfect. It’s a wonderful balance of flavors that include hazelnut, brothy French onion soup and butter. It has the most delicate hint of sweetness and a super long finish. C-COM 1 lb was $37.50, now $20

Jowl Bacon from Smoking Goose

At my house we definitely have foods that we treat as “special.” This jowl bacon is on that list. It’s the bacon of choice for holiday celebrations. It is simply incredible tasting. I had one bite at an event and I immediately bought some. The meat is deeply flavorful on its own, then seasoned with coriander, black pepper and maple syrup and smoked over applewood. All together it has a sort of pastrami flavor. Although nicely fatty, it cooks in a way that leaves crispy yet tender pieces. English Chocolate Peppermint Candies

These mints are undoubtedly the BEST chocolate mint candies I have ever tasted. My favorite candy growing up were those little chocolate covered mints in a box and the bigger mint patties. The Summerdown mints are SOOO much better. I actually dream about them!! From your first bite, you can actually imagine that you are in another place where all you have to worry about is enjoying these mints. I love both the creams and the crisps. Mountain cheeses often have two qualities in common: big wheels and big flavors. These are no cute little rounds you can lift with one hand. They are often the size of wagon wheels. Three feet across or more, they take two people to crack open. Big wheels can age longer before drying out which means a cellar full could feed a village during winter snows, a practical historical reason behind their size. More aging also means less moisture and that means deeper flavor. Mountain pastures are renowned for their biodiversity. The high altitude herb and flower aromas find their way into the cow’s milk. Cheddar is the single most popular cheese in the world. Once it was a single type of cheese, made in one place: a cheese aged wrapped in cheese cloth, with curd cut in a way that became known as “cheddaring,” produced on farms in Somerset, England. One such cheese still exists, from Jamie Montgomery's farm in Somerset. Closer to home, Cabot and Jasper Hill in Vermont make a traditional, clothbound cheddar, too. This is as good chance as any to take advantage of the sale and try a bit of each to see which you prefer.

Gouda is irresistible. The style of the “make” (the word cheese people give to the process of creating solid cheese from liquid milk) creates butterscotch caramel flavors that nearly everyone adores. If you are doing a good job aging gouda you retain its sweetness and never let it drift into acrid bitterness—something that afflicts many goudas I taste in the states, especially those aged for too long. It's never an issue with these expertly-aged wheels from L'Amuse in Amsterdam.

From Fromagerie L’Amuse, Amsterdam’s premier cheese shop, come a pair of exceptional goudas. The Pril (meaning young) gouda is aged for about six months and has a milky sweetness with a bit of caramel tang. The Signature gouda is aged over two years. In that time, the color deepens to a spectacular burnt orange speckled with big, crunchy flavor crystals. The flavor deepens, too, with mouthwatering notes of toasty butterscotch.

Sheep’s milk cheeses always top my fromage-favorites list. They have a gentle, sweet nuttiness that I find irresistable. Sheep tend to thrive in places that are inhospitable for cows. Rocky, craggy hills. Salt marshes in sight of the sea. Bone dry plains. Rough landscape is a kind of built in job security for them. Their milk is released in tiny quantites, a fraction of that of a cow, but when crafted into cheese it’s remarkable.

Soft cheeses are some of the trickiest cheeses to sell. Their window of deliciousness is precious and short. Eat them too soon and they can be rubbery, bland, chalky. Eat them too late and they can be a funky sludge of moldy goo. But just right, ah, Goldilocks, then you have a luscious treasure. We offer just a few soft cheeses, which makes it easier to tend them in our cheese room. We can select a plump white specimen that’s ready to eat. Unwrap it and let it warm for twenty minutes at least—soft cheeses really benefit from being served at room temperature.

When a career in law lost its appeal, Inessa Lysenko decided to get in on the family profession: curing meats. She learned the ropes from her father, who has been making salamis to serve Chicago’s Eastern European community for two decades. But when Inessa opened Red Bear Provisions a few years back she decided to start from scratch. For her recipes, she draws inspiration both from her Ukrainian heritage and her travels throughout Europe. She is a stickler for detail, as focused on getting the best humanely raised meats and importing the best spices she can as on the quality and design of the paper she uses to wrap her salamis. ZINGERMAN’S BAKE

Zingerman’s Bakehouse first fired up their ovens in 1992 with one goal: to bake full-flavored loaves for the sandwiches served at Zingerman’s Deli. Almost overnight, customers were beating down the bakery’s doors to buy bread.

Jewish rye

Traditional Jewish rye bread is still an endangered American species. Though it’s been more than 30 years since we started baking them, you’ll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. This is different. This is bread like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. It’s the bread I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

Sesame Semolina

A traditional loaf in Sicily, this bread has a lovely golden yellow color thanks to the base of freshly milled whole grain durum semolina flour. Durum is the wheat commonly used to make pasta and couscous. When used for breads it creates a lightly sweet, nutty flavor that pairs remarkably well with the layer of roasty, toasty sesame seeds that coats the outside of this loaf.

Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with those from the Tintoris. This shoyu—the Japanese word for “soy sauce”—comes from Suehiro, a firm that’s been making soy sauce since 1879 in Tatsuno, Japan. They start with Japanese soy beans and wheat, plus water and sea salt. Once they’ve made those ingredients into soy sauce, to make a “double brewed” shoyu, they start as if to make a new, second batch with more wheat and soy beans, but this time they replace the water and salt with the first batch of soy sauce. The result is remarkably smooth and soft compared to the harsh saltbombs of most soy sauces. It’s equally great blended into sauces or used for dipping or sprinkling.

Iio Jozo Premium Rice Vinegar

Since 1893, the Iio family in Miyazu, Japan have been making exceptional rice wine vinegar. It’s unlike any I’ve tried before, with a remarkably fruity and complex flavor. They start by making their own sake using locally sourced rice. Although that takes more time and effort than buying pre-made sake, it allows them to brew the highest quality sake with a cleaner, more refined taste. After the sake ferments into vinegar, it’s aged for 8 months to round out any sharp, harsh notes. Overall, each batch takes about a year from start to finish. Keisaburo Koda emigrated from his native Japan to California in 1908. In 1927, he moved with his family to the San Joaquin Valley to start a rice farm. An innovator from the start, Keisaburo developed new techniques for rice planting that are now the standard practice in California. That spirit of innovation was passed down to Keisaburo’s sons. In the 1960s, they worked with rice breeders to develop Kokuho Rose rice. Red Haven Peach Preserves from Michigan

The Red Haven peach was developed in South Haven, Michigan in the 1920s. American Spoon gets their peaches from Joe Daly and his orchards along Lake Michigan. They hand-peel and destone every supple peach before cooking the fruit with cane sugar in copper kettles. The preserve is thick and chunky with pieces of peach. It tastes like summer sunshine. Not too sweet, its texture is the best I’ve ever tasted in a peach preserve. I never get tired of spreading it on morning toast, or even using a bit to glaze pork tenderloin. It’s awesome stuff.

From southern Sicily, this super concentrated tomato paste called strattu or estrattu is the secret Sicilian chefs use to turn sauce from typical to terrific. L’Etivaz is old school Gruyère. It is made essentially as Gruyère was one hundred years ago. It may be made only when the cows are doing their summer grazing in Alpine pastures in glorious mountain meadows filled with wild flowers and herbs. It must be made in traditional copper cauldrons, and only over old-style, open wood fires. The resulting cheese is superb, with a flavor harmoniously balanced between notes of rich bone broth and bright fruity sweetness. Aged for over a year, L’Etivaz has a firm texture, a melt-in-your-mouth butteriness, and a lingering lilt of succulent Swiss mountain cream on your tongue.

Roi Ligurian Basil Pesto

You can make fresh pesto on your own. But let me tell you, even in a jar, Ligurian pesto is absolutely delicious and usually beats homemade. Basil grows easily in that region’s temperate climate. It’s harvested very young. When just two leaves have sprouted on the plant they’re picked. That’s something very difficult to do in America unless you have your own basil farm. Yet it’s the trick to keeping it sweet and herbaceous. Roi’s Ligurian pesto doesn’t suffer the hot anise flavors you get when basil is harvested later in its life. Each year in early July, hillsides across Provence are blanketed in purple lavender flowers. The bees that visit the lavender blossoms produce this perfectly perfumed, richly flavored honey. The nearly tropical climate of the landlocked Republic of Zambia keeps the country warm all the time. The summer season (November to April) is the wettest time of the year and it feeds the forests and woodlands and grasslands of the country before the drier ‘winter’ season. This particular harvest of honey happens during the wet season when the bees feast on the variety of herbs and grasses and flowers exploding around the virgin Miombo forests in the center of the country. Amber in color, the flavor has hints of anise and fennel, with one or two bitter notes that give way to a floral flavor and character. A perfect companion to cheeses and wherever you want to add depth and character along with the honey sweetness.

Kugel and Knish

What do you think of when you think of comfort food? Here are a few things that come to mind for me. Something warm and hearty. Something with familiar, easy to love flavors—nothing too complicated or fancy. Something that sticks to the ribs. Something that tastes like grandma would have made. With those descriptors in mind, I can think of little that’s better as comfort food than kugel and knish. They’re both an ideal choice for a gray, chilly day when you want something to warm you from the inside out.

For the uninitiated, let me introduce you. I’ll start with the knish. Unlike the word "knife," for knish you pronounce the k, so it sounds like “k’nish.” It’s a palm-sized pastry with a flaky, buttery crust wrapped around a savory filling. The knish came to America with the Ashkenazi Jewish immigrants who settled in cities like New York around the turn of the 20th century. It’s a convenient, filling and delicious meal designed to be eaten by hand on the go. Our knishes are made by hand at Zingerman’s Deli. The outside is a tender, flaky, handmade crust crafted from fresh farm cheese from Zingerman’s Creamery. Inside is a savory blend of mashed Yukon Gold potatoes, onions, and herbs. Warmed up and served with a bit of mustard, it’s hard to beat.

They are conscientious about the sourcing of the all the meat they use, working only with farmers who meet their standards for ethics and sustainability. Greg Gunthorp is a 4th generation pig farmer. He raises heritage Duroc breed pigs that spend their whole lives out rooting around on pasture. He never uses any hormones or antibiotics. The team at Smoking Goose takes the raw Duroc hams and cures them with pepper, coriander, mustard seed, honey, bay leaf and Shelby Blue Ribbon Cider, a strawberry-rhubarb cider from local New Day Meadery in Indianapolis. Then they slowly smoke the hams over pecan wood.
