Giorgio Cravero’s Parmigiano Reggiano from Italy
Our most popular cheese by a wide margin. Giorgio Cravero’s family has been aging Parmigiano Reggiano in Bra, Italy since 1855. He focuses on soft, sweet flavors, the kind of Parmesan you want to eat all on its own (though it’s excellent for grating over pasta, too). And these aren’t just any loins. They come from Spain’s famed acorn-fed pata negra pigs. The acorn diet has a magical effect on the meat’s texture. The New Standard for Easter Hams Peach Wood Smoked Duroc Hams from Smoking Goose Forget the pineapple. These hams, made from heritage Duroc pork raised outdoors on pasture on a single farm in northern Indiana, then cured and smoked by the meat mavens at Smoking Goose, are showstoppers without the extra garnishes. Smoking Goose is a fantastic producer of slow cured and smoked meats, salumi, and sausages in Indianapolis. They are conscientious about the sourcing of the all the meat they use, working only with farmers who meet their standards for ethics and sustainability.
