I have a few dishes in my culinary repetoire that I like to use when entertaining a crowd. Dishes that produce a bit of theater while cooking/serving are my favorites and this pastor sauce (paired with a couple pounds of pork butt and some pineapple) is ready for a Tony award. Slow roast the pork with pineapple and a jar of pastor for a couple hours, then serve with cruncy slaw, lime wedges, corn tortillas and fresh salsa. I’ve used this roasted garlic spread as the base for a vinaigrette in place of a dab of Dijon. I’ve stirred it into mashed potatoes and tomato sauces. But most often, I use it every week at my family’s bruschetta night. We get a loaf of Paesano bread (page 16) and fry thick slices in olive oil, then lightly spread the garlic on like butter. The spread is creamy and smooth, and it has really good roasted garlic flavor. It’s rich, dark, and really savory but just a little sweet from a bit of balsamic vinegar. The Amarelli company in southern Italy has officially made licorice for nearly 300 years, but family records go back to the Friedrich Morgenroth is the eighth generation to make Broadbent Morgenroth Ortiz early 1500s, making them one of the oldest family-run firms in Almnäs Bruk so named for the 700-year-old Kleinhettestedt mustard, village curing meats making mustards tinning fish making cheese the world. Italian Black Olive Tapenade Spread
Caricato is a business living in the last century, and by that I mean the one before the last one. The farm is a mixed planting field, rows of olive trees were interspersed with artichokes and grapes. It’s the only time I’ve ever seen an Italian farm planted that way, they’re almost all monoculture now. The olive press is stone and that was the last time I’ve seen one, they’re all stainless steel now. This spread tastes just like I imagine it did a century and a half ago, too. It’s just black olives, crushed and salted. There’s a big difference between the smoked salmon of Alaska and the Scottish-style Atlantic smoked salmon you find on a bagel with cream cheese. Unlike the oblong pears we’re used to here in the States, the Japanese version looks like a golden apple with white freckles. It’s very spherical, very firm, and very flavorful. This particular variety, Subarashii Kudamono (which means "wonderful fruit" in Japanese), began with pears brought from Japan to Pennsylvania in the 1970s and carefully selected over the decades to develop a new, delicious American take on the classic. After harvest, the pears are sliced and dried, which concentrates their flavor; it’s a darker kind of sweetness like toffee and fig and date. Smooth with a lovely chew. Cabot Clothbound Cheddar
Cheddar was originally wrapped in cloth, not dipped in wax. To my mind it has a far more compelling flavor that way. Cheddars aged in cloth have a complexity and length of flavor that’s unmatched by wax. The wheels we get are made by Cabot Farms in Vermont, and then aged at Jasper Hill Cellars. The Jasper Hill team specially selects wheels just for us. The rinds are brushed with lard, and they have a beefy, brothy flavor. Aged at least 9 months, it’s a sturdy cheese with a complex, lingering finish you can’t shake. A great cheese for serious snacking or on a world class cheese platter. Essex Manchego
Essex Manchego is one of Spain’s only farmhouse, raw milk, unwaxed Manchegos. Unwaxed refers to the rind and for the most part, cheese rinds seem to be one of those cheesemaking details that only get the attention of cheesemongers and makers. They have a tremendous effect on flavor and texture, though. The active cultures in cheese cause it to breathe. When the rind is waxed it holds those effects in, often resulting in off-flavored, harsh tasting cheeses. Unwaxed Essex Manchego, on the other hand, has a lovely, dry crumble and never tastes bitey. It goes down smooth, with the unmistakable sweetness of sheep’s milk and a long savory finish that pairs well with almonds and plums and, of course, Spanish ham. Giorgio Cravero’s family has been aging Parmigiano Reggiano in Bra, Italy since 1855.
