Betty Koster is the opposite end of the spectrum. She’s the Dutch champion of the smaller cheesemakers who milk their own herds, and the opleggers (cheese agers) who employ more traditional techniques. They often collaborate with Betty to create special, one-of-a-kind cheeses. She sells them at L’amuse, the shop she started in 1989. Lucky for us she’s been exporting a handful of them to the USA for the last decade. They’re some of my favorites.

Old Kiev Salami Based on a classic Ukranian recipe, the team at Red Bear Provisions in Chicago makes this salami from heritage breed, pasture raised pork. The meat is coarsely ground with plenty of snowy-white flecks of fat, then mixed with garlic, pepper, salt, and that’s about it. On the Rue de Rivoli in the heart of Paris, just across the street from the gardens outside of the Louvre, sits the jewelbox tea salon Angelina. You could go there for a pastry or a coffee, but if you do that you’re missing the point. Angelina serves the best hot chocolate in Paris—and, I’m ready to throw down and say it, maybe the world. Served in a small ceramic pitcher with a mound of freshly whipped cream as big as your fist so you can make your own beverage as decadent as you can bear, the hot chocolate at Angelina is incredibly rich, with deep, intense chocolate flavor. Sipping a mug of it is an event to remember. But if a quick jaunt to Paris for a cup of hot chocolate isn’t an option, the next best option is to sip a bottle of it at home. While we think of fruitcake as a cheap, industrial holiday laughing stock, these are another species altogether, crafted by Robert Lambert in California from rare citrus that he picks and candies himself. Taking a cue from its native England, where fruitcake is eaten for special occasions (including royal weddings) year round, Robert made a special batch of cakes just for us for Mother's Day. He bathes each cake in liqueur, garnished with a slice of candied fruit and wrapped gently in cheese cloth. Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. freshly milled whole loaves Zingerman’s Bakehouse began milling many of their own flours in the fall of 2018. That’s allowed for two huge improvements. First, we can work directly with local farmers to get heirloom grains straight from the source, like the Breslin family in Ottawa, IL who supply our rye. Secondly, the flours we mill are truly whole grain. Unlike most “whole grain” flour in the US, which is actually processed like white flour and then has some of the bran added back in, our flours never separate any part of the grain. We haven’t switched over to milling all of our own flour in house ourselves, yet. But month by month, we keep growing the number of products we make with freshly milled whole grain flours—including all of the loaves on this page. The mountainous, rugged region of Trás-o-Montes—“beyond the mountains”—is in the far Northeast of Portugal. The hills are planted with groves of trees, primarily the native Portuguese varieities most of us—even olive oil veterans—haven’t heard of, like Cobrançosa, Madural, Verdeal and Cordovil. The olives are picked and quickly pressed while young, which leaves the telltale green grassy aroma and artichoke bitterness of a great olive oil. There is also a sweetness to this oil, though, and it’s a bit more tender than the big brassy olive bombs of central Italy. Use it on more delicate dishes like fish: drizzle a big splash over steamed cockles like they do in Portugal. Or pour a swizzle on a bowl of hot soup. Dress some roasted vegetables with a swig. Aged Balsamic Vinegars from La Vecchia Dispensa Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. In Reggio Emilia, everyone makes the same kind of vinegar: balsamic. They’ve been making it for centuries, all following the same recipe starting with nothing but grape must, the fresh-pressed fruit juice with skins and seeds still included. But after winning accolades for his balsamic, Andrea Bezzecchi wanted to expand his horizons. Using local, organically-grown grapes, Andrea began making vinegars from wines, too. I like this rosé vinegar because it balances very nicely between sweet, bright, acidic, yet light and easy. It’s ideal for vinaigrettes. Comté aged in Fort St. Antoine is the crown of the king and a trip to their aging vaults is like a cheesemonger’s hajj. The Fort is special because it’s an ideal environment for very slow maturing of the wheels so each can develop and express its individual flavors. Plus, it’s cool because it’s really a fort! It was built into the side of a hill in the 1800s and abandoned after it failed at its job stopping Germans in World War II. I love this cheese because I think it’s just about perfect. Wild Fennel Pollen I love cooking with (and growing) herbs and spices. In fact, it’s an interest I’ve had for a very long time. When Koeze’s peanut butter first appeared in our catalog, I think I stopped buying any other peanut butter. My kids love it—they’re 12 and 9 years old, and they’ve grown up with it.
