If I were to give you one word of advice about dates on tinned fish it’d be “Ignore.” The date is arbitrary, unscientific,
Go Old. Go delicious For the past half decade I’ve been importing case upon case of Spanish and Portuguese tinned fish. Most of it was sold and eaten long ago. Some of it wasn't. There remain pallets stored high in our warehouse in Ann Arbor, wrapped tightly in shrink wrap, notes taped to them reading, ominiously, “2014 sardine catch. Don’t open!” Well, the time to open them has come. Let loose the Kraken! Unseal the tinned fish vault! America’s first vintage tinned fish shop is open for business. It’s not lost on me that selling vintage fish may appear to be a sick joke. After all, with seafood, freshness is prized. It’s promoted, touted, bragged about. Old fish is anathema. Now here I come not with not just tinned fish, but old tinned fish. And I’m promoting it as something worth giving your dad. It may ease your mind to know I didn’t invent this idea. Aging tinned fish has been around for, well, ages. A century ago posh

It’s also worth nothing this is not vintage fresh fish. It’s vintage tinned fish. Tinned fish, cooked, stored in olive oil. Put those three elements together and you’ve got a recipe for aging magic. The cooking, the sealed container, the magic of olive oil—they all conspire to make the fish more tasty. Like wine that ages in its bottle, the fish gets simultaneously more subtle and more interesting in its tin.

portuguese sardines Aged sardines have been a thing for at least a century, and, given that sardines were first tinned a century and a half ago, it’s basically been a pastime as long as they’ve existed. After eating some you’ll know why. There’s a particularly delicious brand of magic that infuses this oily, rich, bony, saline fish when it hibernates for years in a wallet-sized metal cocoon. Sardines also happen to be one of the cheapest tinned fish investments so their ROA—Return On Aging —regularly tops the aged fish market indexes. Two other items to note before I let you go. One, our Portuguese sardine fixer Manuel always makes sure the fish we save as vintage come from the biggest, fattest catches of the year, the end of summer haul, so even if you eat these before aging them out they’re the best sardines we have. spanish tuna Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain’s culinary crown. Ortiz’s fish are all line caught—not netted—in the Bay of Biscay, then hand cleaned and tinned in good olive oil. The olive oil is key. It adds flavor and makes the texture rich and smooth over time. Extra aging amplifies the effect. Loin: The loin is the big working muscle of the tuna, and the everyday tuna we’re used to eating in tuna. Loins can get ticky tacky firm when young, but soften up to silk when aged. Belly: Known as toro in Japanese, ventresca in Spanish, the belly is blessed with the most tender meat, the meltingest texture. Aged, it just gets better. Bonito ventresca comes from slightly smaller fish and is a bit lighter in color and flavor. Yellowfin are a larger, more intense fish and their ventresca cuts are correspondingly bolder. A century ago, before refrigeration, you could only have meat when it was very fresh, or very old—that is to say, when it was cured. Curing is an ancient process that makes meat safe to keep by making it inhospitable to the microbes that would otherwise cause rot. Most commonly, this is done by salting, smoking, and drying. When cured slowly and traditionally, these techniques not only make the meat safe to keep, they also make it extra delicious. Our cured meat caves are stocked with traditionally cured salamis, bacons, and hams, cured for weeks, months, or even years. The way they have been for centuries. You really can taste the difference.

Based on a classic recipe, the team at Red Bear Provisions makes this salami from heritage breed, pasture raised pork. The grind is coarse with plenty of snowy-white flecks of fat. The meat is mixed with garlic, pepper, salt, and that’s about it. The flavor is surprisingly complex thanks to the wood smoke it receives before being hung to dry for a few weeks. Fourth-generation farmer Greg Gunthorp not only cures his own bacon—he also raises all the heritagebreed Duroc pigs himself on his pasturebased northern Indiana farm, without antibiotics, hormones, growth promotants or any other modern “improvements.” Durocs are famous for their flavor—it’s so rich it almost seems a little beefy. Greg dry cures the Duroc bacon for a week with salt and celery powder, then smokes it over hickory logs for 12 hours. Lightly smoky, a little sweet and all the way delicious. M-HKD 1 lb $16

Dry curing is an uncommon practice in bacon making, since it takes longer, adds costs and decreases yield. But it creates deep, solid, memorable flavor. Parmigiano Reggiano
Practically all Parmigiano Reggiano is made from milk pooled together from multiple farms. But the fifth-generation cheesemakers at Valserena make a farmstead cheese. That means they not only make the cheese, they also raise the cows, and all of the milk comes from their own herd. Where most parm is made from the milk of Freisian cows, at Valserena they raise brown Bruna Sola cows. They produce less milk than Freisians, but it has more butterfat—and more flavor. After two years of aging, the cheese is outstanding. It has a citrusy, mouthwatering quality, not unlike what you experience when you eat a juicy steak. When you order a sandwich at Zingerman’s Delicatessen, you’re offered a lot of choices. Cinta (pronounced CHIN-tah) is a heritage breed of pig originally from Tuscany. These are the only ones are raised in America, rooting and roaming on Iowa pasture with no antibiotics or hormones. Cinta pork is renowned for its huge, deep, rich, earthy flavor. Each chop has a noticeable fat cap along the chop—don’t discard that, it’s got amazing flavor! They’re great on the grill, or sauteed in a cast iron pan. American Spoon is one of the very best preserve makers I know, working "up north" here in Michigan. Turning maple syrup into something with the consistency of whipped honey is a tricky process. The syrup has to crystallize so it’s spreadable, but you don’t want its texture to be crystalline. The maple syrup masters working with Vermont’s Spring Brook Farm have it figured out: heat the syrup, rapidly cool it about 100 degrees and stir the heck out of it until it’s smooth as butter. Years ago, the gelato makers at Zingerman’s Creamery traveled to Italy to learn how to make great gelato from the undisputed experts. We pretty much do it exactly the same way today. First, we get the best milk we can find: it comes delivered directly from Calder Dairy, one of the last farmstead dairies in Michigan that’s just southeast of Ann Arbor. Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. The Unequaled Balsamic Vinegars of La Vecchia Dispensa While we carry different olive oils from different farms, we only carry one family's everyday balsamic. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics under the name La Vecchia Dispensa. And while I've probably tasted a hundred balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although many believe Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. While balsamic has garnered the publicity, specially aged sherry vinegar sits aging in oak barrels in southern Spain waiting to be discovered. Sanchez Romate draws upon 300 years of experience making sherry and sherry vinegar to blend different ages of vinegar (from three to fifty years old) to create a sweet, soft, mouth-tingling flavor. It became a staple in my home long ago, but for centuries before that it became the choice of the royal family of Spain—and the Vatican. Add a few drops to creamy tomato soup or a cold summer gazpacho. Drop a dash on a salad of ripe, sweet, summer tomatoes. Mix it into a classic cocktail sauce and stand back for the fireworks. Sundried Grape Vinegar with Rosemary and Thyme
The first grapes of the harvest are laid out in the sun in Messinia in southern Greece for a couple weeks. Basking in the sun releases much (but not all) of the water, concentrates their flavor and increases their sweetness. The grapes are made into a very sweet wine, then converted into vinegar over the winter. During the aging, local rosemary and thyme are added—both of which, in Greece, are much more delicate than most of what I’ve tasted in America—and they infuse the vinegar with their soft, piney aromas.
