Aged sardines have been a thing for at least a century, and, given that sardines were first tinned a century and a half ago, it’s basically been a pastime as long as they’ve existed. After eating some you’ll know why. There’s a particularly delicious brand of magic that infuses this oily, rich, bony, saline fish when it hibernates for years in a wallet-sized metal cocoon. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain’s culinary crown. Ortiz’s fish are all line caught—not netted—in the Bay of Biscay, then hand cleaned and tinned in good olive oil. The olive oil is key. It adds flavor and makes the texture rich and smooth over time. Extra aging amplifies the effect. Loin: The loin is the big working muscle of the tuna, and the everyday tuna we’re used to eating in tuna. freshly milled whole loaves Zingerman’s Bakehouse began milling many of their own flours in the fall of 2018. That’s allowed for two huge improvements. First, we can work directly with local farmers to get heirloom grains straight from the source, like the Breslin family in Ottawa, IL who supply our rye. Secondly, the flours we mill are truly whole grain. Unlike most “whole grain” flour in the US, which is actually processed like white flour and then has some of the bran added back in, our flours never separate any part of the grain. We haven’t switched over to milling all of our own flour in house ourselves, yet. But month by month, we keep growing the number of products we make with freshly milled whole grain flours—including all of the loaves on this page. The result is ever bigger and better flavor, but don’t take my word for it. Try for yourself. You really can taste the difference.

“Miche” is French for loaf and typically refers to the large size and round shape in the style of traditional French country bread. Ours is made from a mix of Michigan wheat, rye flour, whole buckwheat, and spelt flour, all whole grain and freshly milled on our stone mill at Zingerman’s Bakehouse before being mixed into a dough and naturally leavened by its own unique starter. This extra virgin olive oil comes from the southern end of the southern island of Peloponnese peninsula, from the village of Vatika in the Laconia region. It’s a blend of Koroneiki olives and a very special olive that only grows in the area called Athinolia. All the olives are hand-picked and rushed to the press within 24-hours. The mountainous, rugged region of Trás-o-Montes—“beyond the mountains”—is in the far Northeast of Portugal. The hills are planted with groves of trees, primarily the native Portuguese varieities most of us—even olive oil veterans—haven’t heard of, like Cobrançosa, Madural, Verdeal and Cordovil. The olives are picked and quickly pressed while young, which leaves the telltale green grassy aroma and artichoke bitterness of a great olive oil. There is also a sweetness to this oil, though, and it’s a bit more tender than the big brassy olive bombs of central Italy. Use it on more delicate dishes like fish: drizzle a big splash over steamed cockles like they do in Portugal. Or pour a swizzle on a bowl of hot soup. Dress some roasted vegetables with a swig. Green Peanut Oil Green peanuts aren’t a kind of peanut. Instead, “green” refers to the fact that the nuts are raw, just harvested, not yet dried—a step practically all peanuts go through to prevent spoilage. Unlike bulk peanut oils for cooking, this oil is cold pressed in small batches by Clay Oliver on his farm about 150 miles south of Atlanta. This silky oil from upstate New York is made with butternut squash seeds that are roasted, pressed, filtered and bottled. The first smell is a blast of fall, redolent of toasted pumpkin seeds and roasted nuts. Each bottle is made with the seeds of nearly ten squash, and the oil is intense and rich, which is why I think of it as the foie gras of oils. Just a drizzle over a salad—nothing else needed—and the dish is transported. It’s also outstanding poured on soup, especially if it’s made from squash. Lake Garda is the northernmost point on the Italian map where you can make olive oil. Although the area is in the foothills of the Alps, the microclimate around the lake allows olive trees to thrive and bear fruit. This oil is made by Antonio Brescia, who only produces about 2,000 bottles a year. The aroma is grassy and hints at pepper, like arugula. The oil is incredibly creamy in the mouth. Roi Olive Oil
On the Italian Riviera, delicacy, not strength, brings an oil acclaim and honor. Roi is one of the best Ligurian extra virgin olive oils I’ve tried. It’s been made in the mountain town of Badalucco by the Boeri family since 1900, exclusively from the thumbnail-sized Taggiasca olive. This oil is the favorite of many of our crew. Pugliese oils get little credit on the international oil scene. The region’s reputation is that of a producer of affordable bulk oils. But hidden in the shadows of the huge industrial producers are artisans like the Pellegrino family. I visited their farm a couple of years ago, and I keep coming back to their fullflavored extra virgin olive oil again and again. There’s a nose tingling grassiness that adds a depth of flavor to food. It’s especially good in spicy pasta dishes or any place you want a really robust olive flavor. Aged Balsamic Vinegars from La Vecchia Dispensa Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with those from the Tintoris. Txakoli (pronounced tchuh-KOH-lee) wine is one of my favorites. It’s enjoyed young, has a bright, fresh flavor with small hints of apricot and a dry finish. It’s hard to find outside of Spain’s Basque region, probably because they drink most of it. It’s rarely made into vinegar, so this bottle is about as common as an albino rhinoceros. The flavor of the vingar is light, lovely, lingering. It’s not sweet, and there’s an airiness to it that makes it refreshing. It’s very nice on simple salads of most any sort.
