Potato Knish It doesn’t get more classic then the knish: a Jewish pastry stuffed with a savory filling wrapped in flaky, buttery dough. Originating in Eastern Europe, the knish came to America with the Ashkenazi Jewish immigrants who settled in cities like New York around the turn of the 20th century. We’ve been making them at Zingerman’s Deli since we opened our doors in 1982. The inside is made of mashed Yukon Gold potatoes, onions, and herbs. The outside is a tender, flaky, handmade crust crafted from fresh farm cheese from Zingerman’s Creamery. Ready to eat, cold or hot. We like ours served hot with a side of good mustard. The only difference between our noodle kugel and the version made by co-founder Ari Weinzweig’s grandmother is we make ours with much better ingredients. Nostalgia aside, even Ari admits ours tastes far better than what his bubbe made for him when he was a kid. This wild rice—not at all like the wild rice you’ll see in most shops— is one of America’s oldest foods. It was definitely on Native Americans’ diets four hundred years ago, which meant it was probably an early settlers’ food, too. The plants were part of the Great Plains ecosystem, a thousand mile stretch of grasses whose biodiversity was as great as the Amazon. Today, the rice harvest still happens in ways a person from four centuries ago would have recognized. A friend of mine said it best after her first taste of Coop’s Salted Caramel Sauce: “Oh my god... this is what I always wanted salted caramel to be, but it never was...but now it is!” I shared my jar with her, and we ran out of clean spoons. Harvested from the attics and crawl spaces of a haunted chocolate factory, these spider webs give everyone with a sweet tooth a tingle of excitement with each bite. Okay, so maybe they didn’t use a chocolate broom to chocolately sweep the chocolate corners of a chocolate factory to gather these confections, but the evil chocolate geniuses at Veruca Chocolates in Chicago got creative when they came up with these Halloween treats. Cheddars aged in cloth have a complexity and length of flavor that’s unmatched by wax. The wheels we get are made by Cabot Farms in Vermont, and then aged at Jasper Hill Cellars. The Jasper Hill team specially selects wheels just for us. The rinds are brushed with lard, and they have a beefy, brothy flavor. Heritage Turkeys from Judd Culver
There are now a few farmers in American offering heritage breed turkeys which came back from near extinction just over a decade ago. You might even have some available where you live, which would be excellent news and you should order early from your local farmer to try one this year. Heritage birds are in sharp contrast to the modern Thanksgiving turkey, which is a bit of a monster. The modern broad breasted white, as it’s known, was bred to produce a lot of white breast meat as quickly as possible. As everything else got pushed aside in favor of that goal, out went its disease fighting genetics, out went its ability to survive on its own, out went its flavor. Commercial turkeys taste like salt and water, with very little turkey flavor to mention. Not so with these turkeys. They are full-flavored birds, rich with flavor and never mooshy in texture. Part of the reason is that Judd Culver, the farmer raising these birds on pasture in Crozet, Virginia, prepares them in a style called “New York dressed.” It’s the old way turkeys were processed on farms. They are cleaned without water, hung to age like steak. These might seem like small differences, but the flavor will blow you away. This turkey is so tender, so flavorful, it’s so different from what we’re used to it shouldn’t even be called by the same name. None of these flavors are extreme. This is the kind of turkey that everyone at the table is going to enjoy. For many, it’ll be the first time they’ve tasted the real thing, and they’ll be fighting for seconds. Giorgio Cravero’s Parmigiano Reggiano Giorgio Cravero’s family has been aging Parmigiano Reggiano in Bra, Italy since 1855. He focuses on soft, sweet flavors, the kind of Parmesan you want to eat all on its own (though it’s excellent for grating over pasta, too). The cheese we buy comes exclusively from the San Pietro dairy, located high in the hills above Modena. The diverse herbs and grasses at that high altitude makes for especially flavorful milk, which in turn makes for especially flavorful cheese—a quality noted by this Parmesan’s rare designation as a Prodotto di Montagna. Essex Manchego is one of Spain’s only farmhouse, raw milk, unwaxed Manchegos. Unwaxed refers to the rind and for the most part, cheese rinds seem to be one of those cheesemaking details that only get the attention of cheesemongers and makers. They have a tremendous effect on flavor and texture, though. The active cultures in cheese cause it to breathe. When the rind is waxed it holds those effects in, often resulting in off-flavored, harsh tasting cheeses. Unwaxed Essex Manchego, on the other hand, has a lovely, dry crumble and never tastes bitey. Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned by hand in good olive oil. The olive oil is key. Michigan may be known as the cherry capital of the world, but this man from the Mitten picks whitefish spread as Michigan’s greatest culinary legacy. What’s an “awakened” walnut and why would you want them? Awaking the nuts is a fancy name for the process of “sprouting” nuts and grains. The abridged version goes like this: soak raw nuts in water which triggers the germination process. This reduces the walnut’s enzyme inhibitors that make nuts hard for some of us to digest. They still taste like delicious walnuts, just easier for the body to process and more nutrients are accessible. Greece has a looooong history with olive oil, but much of the accolades and acclaim of the past few decades have been showered on Italian, Spanish and French oils. After tasting this oil from Goutis Estate near the village of Kallithea, I think things are finally starting to change. This particular oil (named Bitter Grey for some poetic reason, I’m sure) is made from the pressing of one type of olive only: the local variety Nemoutiana-Horaitiki. Ayako Family Black Pearl Plum Jam Katsumi Taki started his career as a biologist, but today he organically farms a dozen varieties of wild and heirloom plums on a centuries-old orchard in Washington state. He puts his scientific skills to use creating new plum varieties, carefully grafting his trees and then patiently waiting several years until the new plums are ready to harvest. The Black Pearl plum is an exceptional example of his extraordinary new varieties, but since Katsumi’s orchard is the only place on the planet where it’s grown, we might never get the chance to try it if it weren’t for his long friendship and partnership with Ayako Gordon and her daughter, Alessandra. Robert Lambert’s Rangpur Lime Marmalade If I wrote my own dictionary, the entry for “meticulous” would just be a picture of Robert Lambert. During the two decades he’s been making extraordinary preserves, syrups, and fruit cakes (find them all at zingermans.com) from rare California citrus, occasionally Robert has tried hiring someone to help out. But no one ever makes the products just exactly the way he would—they don’t cut every citrus rind to precisely the right, perfectly consistent size, say. Inevitably, before long he’s back to being a one-man operation. Since he does everything himself, you might expect Robert would take the easy route and buy the fruit he zests, chops, candies, and preserves from a local distributor. But remember, this man is the definition of meticulous. Even sourcing ingredients is practically a Herculean feat in Robert’s hands. Take the Rangpur lime, a rare citrus that looks like a mandarin orange but tastes like an intesely sour, smoky lime. It took him years to track down enough folks with Rangpur limes—including one 90-something year old lady with just a couple of trees—to make this marmalade. It was worth the wait, though. The marmalade is spectacular: not too sweet, not too bitter, very fresh and tangy, with a lovely smooth texture. Fairy tale honey Jara Honey
In the Ajara region of Georgia (the country, not the state), a very few hardy beekeepers still practice an ancient, traditional method of making honey. The story reads like a fairytale. The beekeepers start by making a beehive, hollowing out a linden tree log by hand with an axe. The hollowed logs are taken on a steep trek high into the mountains, then placed even higher up on ledges carved into the sheer, rocky face of cliffs, reachable only by ladder. The inaccessible location has two advantages. One, it keeps the honey safe from bears. And two, the diversity of flora in the forests that blanket the mountainsides gives the bees a smorgasbord of nectars with which to make their honey. Once a year in the spring, the beekeepers hike to the hives and carry back half the honeycombs, leaving the other half for the bees. This is the white peacock of honeys, exceptionally rare. It’s almost never seen outside of the Jara region. But it’s not just the story that makes it special. Each jar, filled with a deep, dark honey and a small chunk of honeycomb, offers a deep, toasty flavor with all the richness of the Georgian mountainsides. Puglian Olive Oils
Puglia, the heel of Italy’s boot, is known in Italy for its rustic, rural beauty and beaches, and for being the birthplace of burrata cheese, crunchy taralli crackers (find them at zingermans.com), and the little ear-shaped pasta known as orecchiette. But I’m willing to bet that soon it’ll be known for something else: ceramics. Specifically, gorgeous, hand-crafted ceramic bottles. Each artisan makes only a few per hour, making them as precious as the outstanding olive oil they hold. We have two extra virgin Puglian olive oils, each made on a single estate using a single olive varietal: the local powerhouse Coratina, a coveted varietal for making grassy, bold, peppery oils. The first oil comes to us from the estate of Elia Pellegrino. Called TyPuglia, it comes in a limited edition tomato red ceramic bottle, hand crafted in the studio of Elia’s friend, Michele Cataldo. Calissanne Olive Oil
Put simply: this oil stands alone amidst the dozens of olive oils we sell. Most oil producers press green (unripe) olives because the riper the olives on the tree, the higher the chance you’ll press overly ripe olives and that can lead to rancidity. One bad olive could spoil the whole lot. Thankfully they have their timing down at Château Calissanne. Using traditional Provençal varietals and techniques, they harvest aglandau and salonenque olives late in the season when they’re very mature, and then ferment them for four to five days before pressing. The result is an oil tastes that like no other. Instead of grassy and bitter notes like you taste in many Italian and Spanish oils, this one is deep, earthy, with all the rich, savory quality of excellent black olives.
