David Barbero’s family has been making torrone hazelnut nougat—what I call Italian brittle—for five generations, since 1883 in the town of Asti. Neither the history nor repetitiveness seems to dull his passion. When you ask him about torrone his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours. We break for lunch! All of this makes our texture crumbly, not hard and tough. Here, take a bite, you can taste.” First off, you gotta love the fact that he mentions lunch as a factor in how they make better food. Sometimes it seems like every country in Europe has a national Christmas dessert: fruitcake from England; beigli from Hungary; stollen, lebkuchen, and pfeffernüsse from Germany, panettone from Italy and so on. Despite the difference in the cultures they come from, the desserts tend to share some common ingredients, like candied fruit, nuts and exotic spices. (They were meant as a splurge when those items were rare.) Today we don’t have to take the grand tour to taste them all. We don't even need to import them. More and more American bakers are firing up the ovens to turn out old world holiday cakes here at home.

A spicy sweet German tradition

Lebkuchen

Sandy Lee fell in love with lebkuchen, the traditional German Christmas cookie, while living in Berlin. “It was like nothing I’d ever tasted,” she recalls. “I couldn’t get all those complex flavors out of my head.” She became obsessed, learning all she could about them before returning to the states and starting her own lebkuchen bakery. The recipe dates back to Medieval times and has many steps. The dough is made from almond and hazelnut flours, whole almonds, egg whites, honey, marzipan and a bevy of spices. The dense dough rests for nearly a day before heading to the oven. The finished cookies are hand glazed and studded with almonds (classic variety) or cloaked in dark chocolate. You will find three classic and two chocolate cookies in this fire engine red tin. Each is about four inches across and an inch tall. They’re thick, moist, slightly spicy, sweet and very nutty. The consistency is a cross between cake and marzipan, making them the perfect after dinner treat with coffee or tea. Although traditionally intended to keep for months, I think these sweet, spicy, nutty treats will only last a few days (or hours!) at your house. Full disclosure: the price on these fruitcakes may cause sticker shock. While England's holiday cake has become cheap, somewhat industrial, a laughing stock, these are another species altogether. Crafted by Robert Lambert in California from rare citrus that he picks and candies himself. A slice cut thin while the cake is cool—I recommend serving it chilled—looks like a stained glass window and is a revelation.

Robert's classic cake, the one we've offered for many years. It's by far the best of its kind I’ve ever tried. Blood oranges, bergamots, Rangpur limes and more, many that he picks himself. Wild Cherries and Hand-Picked Apricots in Syrup It’s been a dozen holidays since I found wild Italian cherries from Piedmont. I remember bringing the first jar to Christmas at home, spooning out individual fruits to top a crisp of cracker slathered with a gooey triple crème cheese whose name I forget. I kept at it for an hour—I have a big family and everyone wanted seconds. We barely made a dent in the jar. Prepared in small batches so they do not bruise, packed with syrup in a resealable glass jar, we've been bringing in a small quantity every holiday since and their fans gobble them up. We also offer soft, tender apricots, hand harvested and rushed into a simple syrup bath within hours. The speed is important, it protects the texture and flavor of the fruit. The longer they wait around, the more their texture breaks down, the mushier they get. But that’s the only rushing allowed. The apricots take their time once they reach their bath, allowing the sugar to slowly soak into the fruit, preserving them and freezing their flavor at its peak. An elegant gift. Muraglia Olive Oil From Puglia, the heel of Italy’s boot, comes this spicy, racy extra virgin olive oil. Made from 100% Coratina olives, this one ain’t for everybody. But the oil aficionados who crave intensity will be blown away by its big, bold body and grassy, peppery finish. Fittingly, the bottle is just as intense as the oil within. Ceramic artists create each bottle by hand, about three per hour, which makes up quite a bit of the cost. The glaze is vibrant, a swirl of bright stripes. Not only is it beautiful to look at, it’s good for the oil, protecting it from light which causes olive oil to lose its flavor. Keep it around and you can fill it with new oil when you run out. A religious experience Springerle Cookies

The St. Benedict Monastery of Ferdinand, Indiana was founded in 1867. For more than half that time, the sisters that live and work there have baked and sold cookies to support the Monastery. Springerle cookies originated in the Swabia region of southwestern Germany at the start of the Renaissance. Images and icons are pressed into the dough before baking and allowed to dry. The extra time gives the cookie a hearty texture and they taste slightly of anise without being overly sweet. While Sbrinz may not be a household name here, it’s one of Europe’s most ancient cheeses, having been made for over two thousand years. It's also one of the longest aged cheeses—the hundred pound wheels we have were in caves for three years after having been made in the summer of 2013 from the raw milk of Brown Swiss cows foraging high in the Swiss Alps. Despite its age, Sbrinz tastes remarkably light, sweet and even a bit bright. Texturally, it'll reminds you of Parmigiano-Reggiano, with crunchy flavor crystals in abundance. Why we carry only one brand of balsamic The Balsamic Vinegars of La Vecchia Dispensa

While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics under the name La Vecchia Dispensa. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although many believe Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel—both of which contribute to more intense flavors. Although aged for only 25 percent longer than the 8 year balsamic, the intensity of flavor is almost double. The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and Tellicherry black pepper. Every bite has a bit of sourdough tang and a lot of the sweet, smoky meatiness of bacon, plus a little spice. I’m sure it makes great sandwiches, but I’ve never had a loaf around long enough to try. My Italian friends would probably think this bread is heresy, but that’s their loss. It’s a natural for me because I love bread, parmesan and good black pepper. Traditional Jewish rye bread is still an endangered American species. Twenty-four years after we started baking them in Ann Arbor, you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. They’re the breads I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

Spanish Line-caught Tuna Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. I'm a big fan of the baked bacon style: cooking slices on a parchment-lined sheet pan in the oven.

Bacon endures so many short cuts. I’m talking commercial bacon, grocery store bacon: bellies injected with water to add weight; curers, if you can call them that, who speed up the process with too many chemicals; excess sugar and salt to overcome a lack of flavor; liquid smoke! Shocking. There’s no other way to describe the experience of first tasting acorn fed pork. In the oak forests of southern Spain, heritage Ibérico pigs spend their lives rooting around on pasture. In the fall when the ground is littered with acorns (bellotas in Spanish), they gobble them up. The acorn diet has a magical effect on the meat’s texture. It appears to lower the fat’s melting point to body temperature. Twenty years ago you could count the number of great American cheeses on two hands. Maybe that’s exaggerating, but not by much. Back then, being a small-scale cheesemaker was like being a beekeeper—a strange hobby with little reward or recognition. Half the cheesemakers crafted nearly identical tiny wheels of goat’s milk cheese, which, given that we had no American goat cheese tradition to speak of, cheese shops insisted on calling chèvre, the French word for goat. If you went into any serious cheese shop in America in 1994, chances are the only American cheeses you found were chèvres and cheddars. Have things ever changed. In the last decade there’s been a renewed interest in old fashioned grass-fed beef. Not all of it is great in part because not every rancher goes to slaughter at the right time. Just like tomatoes have a season, so does grass fed beef. Lush summer grass makes for great tasting beef. Winter grass makes for less flavorful—and less tender—beef. Osso Buco is a nineteenth century Milanese dish that, luckily, has never gone out of style. It’s a cut of shank, cooked for hours in a slow braise of wine, tomato, carrots, celery, and onions. After that long, slow cooking, the meat falls off the bone with the slightest nudge of a fork, and the flavor is deep, rich, intensely savory, huge. Heritage Turkeys from Frank Reese and Bill Niman There are a handful of farmers who, in the past twenty years, have been instrumental in changing the course of America’s foodways and this year we've got two of them. Their names may not be wellknown to most people, but you can say them to almost anyone in the food world and they’re instantly recognized: Frank Freese and Bill Niman. If you’ve tasted, bought—or just read about—old breed turkeys in the last ten years it’s been thanks to Frank Reese’s work. He’s been the most important farmer to revive and raise turkey breeds like Bourbon Red and Bronze at his Good Shepherd Poultry Ranch in Lindsborg, Kansas. Bill Niman, who's no longer part of his namesake Niman Ranch, has had a similar effect on beef and pork. He's now working with heritage turkeys, too, at his new company BN Ranch. Why is this all important? Well, to start with, the modern Thanksgiving turkey is a bit of a monster. It’s been bred to have a gigantic breast and little else. (The breast gets so big, in fact, the turkey can’t breed naturally.) As everything else got pushed aside in favor of the breast, out went its disease fighting genetics.
