“Miche” is French for loaf and typically refers to the large size and round shape in the style of traditional French country bread. Ours is made from a mix of Michigan wheat, rye flour, whole buckwheat, and spelt flour, all whole grain and freshly milled on our stone mill at Zingerman’s Bakehouse before being mixed into a dough and naturally leavened by its own unique starter. Inspired by our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining freshly-milled rye flour and cornmeal with wheat. ryes Traditional Jewish rye bread is still an endangered American species. Twenty-four years after we started baking them in Ann Arbor, you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. They’re the breads I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

One of the amazing things about olive oil is that tastes like where it’s from. The French word for this is terroir and it’s the unique flavor that the soil, climate, and environment impart to food. The specific terroir for this oil is the Mendoza province of Argentina. The Laur estate was one of the first to cultivate olives in the region, beginning in the early 1900s. They planted the Arauco olive which they brought over from Spain and that’s the only olive used in this oil. The juice is allowed to convert to vinegar slowly and naturally and then spends two years in French oak barrels, where it mellows and matures. Tuna is our top-selling tinned seafood, but sardines aren’t too far behind. It’s surprising to me since sardines are not a big part of the popular food scene in America. This is perhaps the classic case of tinned food seen as poor, low-quality food. Before college students ate 75 cent ramen, they ate 10 cent sardines. Forget that stereotype. Sea urchin is an acquired taste. But once acquired it haunts you. For me, there is nothing else I can eat that evokes the sea as strongly as it does. Mussels are close. Oysters are closer. But sea urchin is briny and funky in a way that, as soon as the first bite hits, I can recall what the summer wind off the ocean felt like. I first tasted Paolo Licata’s sugo di ricci—sea hedgehog sauce, the Italian word for sea urchins—in Sicily a decade ago. When we got the first shipment of a few cases it was just as I’d remembered: a sweet, delicious Sicilian classic tomato sauce, spiked with shrimp and anchovies, with a deep current of urchin flavor running throughout. It’s a smooth sauce, homogenous, no chunks of fish, and I adore it on a plate of just-cooked Rustichella bucatini (online) with nothing else except a glass of cold white wine nearby. The sauce’s flavor is strong enough that a little goes a long way, which makes the expense of such a luxury easier to bear. A few spoonfuls per person is enough, so a jar can easily serve 8. Broadbent Breakfast Sausage Ronnie and Beth Drennan make this sausage from a recipe from Grandma Anna Broadbent, who started selling it from the family barn in 1909. Just like Anna did, they mix a batch of fresh pork, sage and red pepper and stuff it into cloth bags that are cured by air drying for a week or so. Then it’s smoked over green hickory for 24 hours. Spiced Cashews Cyrilla Suwarsa grew up in Indonesia eating her grandma’s roasted cashews. Decades later, inspired by grandma’s recipes, Cyrilla and her sister began roasting and spicing cashews.
