Wild Cherries and Hand-Picked Apricots in Syrup It’s been a dozen holidays since I found wild Italian cherries from Piedmont. I remember bringing the first jar to Christmas at home, spooning out individual fruits to top a crisp of cracker slathered with a gooey triple crème cheese whose name I forget. I kept at it for an hour—I have a big family and everyone wanted seconds. We barely made a dent in the jar. Prepared in small batches so they do not bruise, packed with syrup in a resealable glass jar, we've been bringing in a small quantity every holiday since and their fans gobble them up. We also offer soft, tender apricots, hand harvested and rushed into a simple syrup bath within hours. The speed is important, it protects the texture and flavor of the fruit. Straight from the rhymes of The Night Before Christmas, Greengage plums are harvested in Portugal in late summer then submerged in sugar syrup, where they rest for six weeks, slowly absorbing sweetness. Finally, they’re laid in the sun to dry. The long, complex process—similar to what happens with Marrons Glacés, below—makes a candied plum. Slightly sweet, green and fuzzy on the outside like a peach. They have a pit, so watch out. Remarkably, the texture is firm, like a fruit you’ve just picked. A venerable British Christmas tradition. Pingo de mel figs—”honey drop”–are so named because they drip sugar when they’re ripe. Preserved in sugar by the same nuns who make our Sugarplums, at right. Hold one up to the light. a spicy sweet german tradition Lebkuchen Sandy Lee fell in love with lebkuchen, the traditional German Christmas cookie, while living in Berlin. “It was like nothing I’d ever tasted,” she recalls. “I couldn’t get all those complex flavors out of my head.” She became obsessed, learning all she could about them before returning to the states and starting her own lebkuchen bakery. The recipe dates back to Medieval times and has many steps. The dough is made from almond and hazelnut flours, whole almonds, egg whites, honey, marzipan and a bevy of spices. The dense dough rests for nearly a day before heading to the oven. The finished cookies are hand glazed and studded with almonds (classic variety) or cloaked in dark chocolate. You will find three classic and two chocolate cookies in this fire engine red tin. Each is about four inches across and an inch tall. They’re thick, moist, slightly spicy, sweet and very nutty. The consistency is a cross between cake and marzipan, making them the perfect after dinner treat with coffee or tea. The St. Benedict Monastery of Ferdinand, Indiana was founded in 1867. For more than half that time, the sisters that live and work there have baked and sold cookies to support the Monastery. Chocolate Covered Caramelized Almonds Rózsavölgyi Csokoládé (say that three times fast) is a Hungarian bean-to-bar chocolate company that makes some incredibly tasty confections. They source, roast, winnow and mix their own chocolate for their confections, which is a huge amount of work. But I’ll confess, it was the packaging that caught my eye first: brightly decorated Hungarian designed paper, folded into a colorful cone. David Barbero’s family has been making torrone hazelnut nougat—what I call Italian brittle—for five generations, since 1883 in the town of Asti. Neither the history nor repetitiveness seems to dull his passion. When you ask him about torrone his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours. We break for lunch! All of this makes our texture crumbly, not hard and tough. Here, take a bite, you can taste.” First off, you gotta love the fact that he mentions lunch as a factor in how they make better food. More importantly, he’s spot on, especially when it comes to texture. Barbero torrone is gently crumbly, in a shattering, delicate way. From the culture that brought you fruit cake comes another much-scorned holiday food tradition: Christmas pudding. But just like there’s good fruitcake and lame fruitcake, the same goes for pudding. It's not bad, it's just misunderstood. In Victorian England the holiday pudding would be made from brandy soaked dried fruits, sugar, eggs, lots of spice and just enough flour to hold it all together. This particular pudding comes to us from Thursday Cottage in Essex. They craft it in the old way, with dried currants and red and white raisins that are soaked in Cognac to intensify their flavor and give them a juicier texture. They deploy their own orange marmalade (they're a preserve maker first) as well as sugar, flour, citrus peels, cinnamon, cloves, ginger and another touch of Cognac. It’s traditional to steam the pudding for a couple of hours before serving, but Victorians didn’t have microwaves and they work too. Why we carry only one brand of balsamic The Balsamic Vinegars of La Vecchia Dispensa
While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics under the name La Vecchia Dispensa. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although many believe Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and Tellicherry black pepper. Traditional Jewish rye bread is still an endangered American species. Twenty-four years after we started baking them in Ann Arbor, you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. They’re the breads I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

Spanish Line-caught Tuna Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Our heritage breed porterhouse pork chops are cut an inch and a quarter thick, have the tenderloin attached like a T bone steak, and usually cause the table to hush when they arrive. Bacon endures so many short cuts. Shocking. There’s no other way to describe the experience of first tasting acorn fed pork. In the oak forests of southern Spain, heritage Ibérico pigs spend their lives rooting around on pasture. American Cheese Club
Twenty years ago you could count the number of great American cheeses on two hands. Maybe that’s exaggerating, but not by much. Back then, being a small-scale cheesemaker was like being a beekeeper—a strange hobby with little reward or recognition. Half the cheesemakers crafted nearly identical tiny wheels of goat’s milk cheese, which, given that we had no American goat cheese tradition to speak of, cheese shops insisted on calling chèvre, the French word for goat. If you went into any serious cheese shop in America in 1994, chances are the only American cheeses you found were chèvres and cheddars. Have things ever changed. This monthly club celebrates some of our favorite cheesemakers. Some are new. Some of them have been around for a long time. And while their cheeses may not be traditional in the European sense of having been made the same way for over a century, they’re all made by hand, using traditional methods, often with milk from the herd they milk themselves, something fewer and fewer Europeans makers can claim.
