This is one of the country's last traditionally dry cured country bacons. Eating it is like having a really big tannic red wine at the end of your meal or an extra-aged 4 year cheddar for lunch. The folks who make it start with fresh pork belly slabs that are dry cured with salt, sugar and nitrite for a week. It never goes into a brine solution, so moisture actually leaves the slabs while they cure, intensifying the flavors of the meat. The slabs are then smoked over hickory for three or four days. Ibérico Bellota Cured Pork Loin Shocking. There’s no other way to describe the experience of first tasting cured bellota pork— in this case, the loin made from heirloom Ibérico pigs who’ve feasted on bellotas (acorns) the last months of their lives. Even in Spain, where bellota pork is more common, eating it is a very special event. The acorn diet has a magical effect on the meat’s texture. It appears to lower the fat’s melting point to body temperature. Eating a thin slice is like placing a piece of chocolate on your tongue. It immediately puddles, the flavor releasing itself in the process. A cut of loin is about a foot long, the thickness of a baseball bat handle. It’s riddled with fat: tiny, creamy white flecks among the rosy flesh. Outside it’s coated in paprika which, while not spicy, gives each bite a tiny peppery tingle. Unbelievable stuff. Ibérico Bellota Cured Shoulder Ham

While hind hams are more popular, front shoulder hams—called paleta—are revered among jamón aficionados for their darker, more intense meat. When Sam Edwards, the third-generation American ham curer visited Spain, time after time he chose paleta as his favorite. I also think paletas make a better choice for a home ham since they’re about half the size and won’t dry out as quickly. This is cured heirloom black Ibérico hog, made from the legendary pigs who spend their final months living in the Dehesa oak tree forest on a diet of acorns (bellotas)—up to twenty pounds per pig per day. The fat created by that diet, when cured, melts in your mouth in a way that seems completely surreal. One of our staff’s favorite foods. It's made by Ronnie and Beth Drennan, from Anna "Grandma" Broadbent's recipe, who started selling it from the family barn in 1909. They mix a batch of fresh pork, sage and red pepper and stuff it into cloth bags that are cured by air drying for a week or so. Before shipping to us, it’s smoked over green hickory for 24 hours. Kept in the cloth bags, it lasts for a long, long time—there’s no rush to use it up. Ronnie eats his sausage for breakfast with eggs and biscuits. Try it in omelets. It also makes some serious sausage gravy. While this yummy sausage is air cured, it is not actually cooked. Warm it, brown it, cook it up and enjoy. M-BRB 1 lb bag was $9 NOW $6

Spreadable pork Iowa White

If the name sounds more like a drug than a food, that’s probably intentional. This is spreadable cured pork fat. It’s not lard but more like lardo, the revered Italian cured fat. The flavor is just this side of sweet, the texture is pure velvet, and the porky aroma, tinged with clove, nutmeg, coriander and rosemary, lingers long afterward. Herb from La Quercia, the dealer trafficking it, told me, “Anything you use butter for you can use this.” That might be stretching it, but you could definitely go to town with it. Inspired by the late, great Chris Duckett’s recipe for traditional Welsh Caerphilly, Landaff has a moist and crumbly texture, with an earthy, buttery flavor, enhanced by a natural rind created by the 3-4 months of aging at the cellars at Jasper Hill in Vermont. While Gouda is made everywhere in Holland, there are major differences between goudas from different regions. This is one of those foods for folks looking for something both old and new–and flavorful. It’s an ancient convenience food that gets deep flavor without much work. I’d never even heard of garum colatura until I visited the Italian coast south of Naples. There I discovered it’s the liquid that’s drained off the barrels of traditionally cured anchovies. Made much the same way it was 2,000 years ago, it’s used as a quick way to give great anchovy flavor to a dish without having to fillet, soak and chop the fish. The best meal of my Neapolitan trip was a bowl of spaghetti cooked al dente that had been tossed quickly with garum, some very good olive oil, chopped garlic and a touch of dried red pepper. One bottle is enough to season a score of pasta or vegetables. P-COL 100 ml bottle $16

If you’ve ever eaten at a Vietnamese restaurant and or­dered the spring rolls, you probably got a small dish of this style of sauce for dipping. But where many fish sauces are chock full of nasty preservatives and whatnots, this one has only two ingredients: anchovies and salt. It's very similar to our garum colatura, the anchovy sauce from Naples at left, though the aging and fermentation are different. If you cook Southeast Asian food you'll find lots of uses for it. In Western dishes you can add a dash while sautéing onions or to the base of any sauce to give the flavor a kick. The same goes for soup. Anchovy Stuffed Peppers from Northern Italy

cockles, spanish style Berberechos Galician Cockles—berberechos, in Spanish—are tiny, coveted clams, hand shucked and tinned in simple brine. The amount of handwork to get this done is extraordinary, and the care is evident as soon as you open the tin. The placement of each clam, the wonderful sweet sea aroma and the flavor and texture—ocean sweet, meaty, tender and succulent—are clearly a labor of love. This is the kind of tinned seafood that you find almost nowhere besides Spain where it's considered a delicacy. Bayley Hazen Blue A stellar cheese that reminds me a bit of raw milk Stilton, which is not too much of a surprise since its maker, Mateo Kehler of Jasper Hill, learned some of his craft working with Neal’s Yard Dairy in London. This rarely tasted traditional cheese made high in the mountains of northern Italy has been one of my favorite eating cheeses for years. We buy wheels with a little more age on them than most. Piave has the smoothness of cheddar, the texture of Parmigiano-Reggiano and the mellowness of sweet mountain butter. L'Étivaz is made essentially as gruyère was one hundred years ago. It’s made only when the cows are doing their summer grazing in Alpine pastures in mountain meadows filled with wild flowers and herbs. Savignola Paolina from Tuscany Everyone forgets the name of this oil. It’s long and nearly unpronounceable. Luckily, it has an alias that no one can forget: "The silky, sexy oil from Tuscany." We couldn’t have given it a more accurate moniker. Savignola Paolina olive oil is unfiltered, giving it a thick, creamy, buttery texture. The house bread at our restaurant, Zingerman’s Roadhouse and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. I’d have a tough time picking between this and Farm Bread for top spot on my European-style favorites list. French Mountain Bread has a chestnut colored crust nearly a quarter inch thick, a dense wheaty crumb inside and a toasty, long lasting flavor. It’s totally terrific for toasting. We offer it in two sizes, a .75 kilo loaf (about 1.65 lbs) that’s good for munching and a 2 kilo (about 4.5 lbs, illustrated) work of art. I love the 2K loaf. A good foot and a half across and four or five inches high, it’s decorated with a hand-cut “Z.” The size is significant because bigger loaves almost always taste better. We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and Tellicherry Black Pepper. Every bite has a bit of sourdough tang and a lot of the sweet, smoky meatiness of bacon, plus a little spice. I’m sure it makes great sandwiches, but I’ve never had a loaf around long enough to try. Tunisian Preserved Lemons I’ve always liked the concept of preserved lemons. But I get stumped at the same place you probably do: what do you do with them? You can research recipes and get an idea, but I wasn’t truly inspired until I ran into a friend who lived in North Africa who said, “I love them in everything!” Everything? Simple enough place to start. Simply cut off a slice or two (return the rest of the lemon to the brine where, refrigerated, it will last almost indefinitely) and mix into your favorite sauces. Toss with salads. Garnish grilled meat. Add a slice to a martini. Grown and preserved on the wonderful Mahjoub farm in Tunisia, where we also get great harissa. Mr. Mahjoub recommends slipping a few slices of preserved lemon in a whole fish before baking, then putting a couple more slices on top before serving. P-LEM 2 lemons per jar $10

Marash Turkish red pepper flakes are the most impressive, flavorful dried red pepper flakes I've ever tried. They have an amazingly full flavor with just a moderate amount of heat. You can add them to your food while it's cooking. Or sprinkle on a finished dish for extra flavor. Personally, my kitchen hasn't been without a jar of Marash for the past ten years . I use it in all sorts of ways. In vinaigrettes. On eggs. In pasta sauce. Blended with lemon juice and spread on chicken, lamb, fish. Dried in the sun by day, then wrapped and sweated at night for over a week, Urfa pepper flakes have a rich, earthy flavor and smoky aroma that's ravishing. In Italy, they're called carciofini selvatici, which is the name you'll see on the label. They're a variety of artichoke that grows wild in Calabria during April and May. Picked by hand, they’re dethorned and cleaned, then blanched for just a few minutes so their texture remains firm. About the size of an acorn, they’re bottled with olive oil, wine vinegar, salt, black pepper and a little bit of red chili pepper— a spice you find in many Calabrian foods. The red pepper is so subtle you won’t notice its faint spice until you’ve had two or three, a feat that’s way too easy to accomplish with artichokes this good. Throw a couple in a pasta dish. This violet mustard caught my eye almost five years ago. It seemed like a gimmick—“The most exciting new mustard innovation in ages,” I thought to myself. I suppose it's no surprise—even though it was to me—that it's actually a very old combination. Moutarde au violette has been eaten in French grape growing regions for centuries. It used to be made each autumn by blending freshly pressed red grape juice with just ground mustard seed. It was a lost art until Elie-Arnaud Denoix worked for a year to revive it. Violet mustard is coarsely ground and crunches when you bite, like caviar. It's naturally sweet and spicy, making it ideal for serving with meats of all sorts.
