La Quercia's borsellino sausage is soft, sweet, porky and even a little earthy. Somewhere between a quarter and a half dollar in diameter, its natural casing is stuffed with pork that's coarsely ground, liberally littered with morsels of fat. The plain is mild but substantial, without the heavy salting that you often find in other salamis. The piccante sausage reminds me a bit of Spanish chorizo—smoky and slightly spicy, but not at all hot. Serve either a cheese plate or toss chunks into pasta or salads. Throw one into your backpack the next time you head out for a hike. It can go for hours—or days—without refrigeration. Like all their meats, La Quercia's salamis are made from hogs raised naturally, without hormones or sub-theraputic antibiotics.

Kozlik’s Maple Mustard

Tarentaise from Vermont We focus a lot of our cheese collection on mountain dairies of Switzerland, Northern Italy, and France where big wagon wheels of extra-aged cheese are common. America has never really had a mountain cheese tradition and the new cheese movement that’s grown in the last two decades is often known for its small, soft, local cheeses. Not so with Spring Brook Farm. Their Tarentaise, made in Reading, Vermont from raw Jersey cow’s milk, has much in common with the classic mountain cheeses like Gruyère and Comté. It's a semi-hard, brine-washed cheese that’s aged for about a year. Its mouthfeel is creamy in spite of it being a hard cheese. The mountain cheese flavors of hazelnut and fruit are there too. In fact it holds its own against Europe’s Alpine heavyweights and can be used in similar ways: melting over vegetables, in omelets, or straight up with a few other top flight choices on a cheese board. Kozlik isn’t the world’s oldest mustard maker, but they have been at it since 1948 which counts as a lot of experience in my book. While the Kozlik name is well known in Canada, most of us in the states have never heard of them. This jar would be a fine beginning to what promises to be a lovely relationship. Yellow mustard seeds are ground fine and mixed with a bit of water, vinegar and Canadian maple syrup to create a sweet mustard that goes great on ham, as a glaze, as part of a marinade, or, as we all arrive at eventually, on a sandwich. Zingerman’s Buttercream Cakes The pastry magicians at Zingerman’s Bakehouse love baking cakes above all else. Wedding cakes, birthday cakes, coffee cakes, everyday cakes—whenever there are cakes to bake you can bet they’ll be excited and what comes out of the oven will be incredibly tasty. The fondant cakes are the showstoppers, with their intricate decorations (see our birthday cake, p. 38). Coffee cakes are our everyday best sellers (p. 48). But here in Ann Arbor, special occasions are marked most often by buttercream cakes. They're something our mail order customers probably don't know about because we’ve never shipped one—until now. This marks the first time these local heroes make the trip out of state. Why the wait? They are delicate, and it took us a couple of years of practice to engineer the packaging so they could travel by UPS. Now they can, and your next celebration is going to be all the better for it.

The showpiece on each cake is traditional buttercream frosting. Swiss style, it's made by whipping fresh eggs and sugar into a meringue, then mixing in real Wisconsin butter and Madagascar vanilla. Our cakes are also marked by what they don't contain: no artificial anything, no mixes, no shortening. These are the ingredients your grandmother would use when she baked. Each cake is six inches in diameter, four inches high, about 1 ¾ lbs and serves 6-8. Ships frozen. Defrost and serve at room temperature for maximum flavor and attractiveness.

kissing vinegar Rozendal Fynbos Vinegar

Pretty much everything what’s behind the Rozendal label is exceptional. Long a grape grower and wine producer, Kurt Amman took the family farm in Stellenbosch on the southwest coast of South Africa organic in 1994, then biodynamic in 2001. From the method of conversion from wine to the decision not to pasteurize (to protect the positive acetobacters) to the many years of patient maturation to the careful selection of herbs and flowers for the infusion into the vinegar—flavor, spirit, and environment are all honored in the Amman’s work. Fynbos vinegar starts with natural conversion of the Amman’s own, already well made, and nicely matured wines. The natural conversion takes months and protects the flavors of the wine and also the natural health benefits of the vinegar. The herbs are then added to the vinegar and the infusions are allowed to mature another four or five years. Fynbos is infused with an array of the region’s herbs and flower—South African honeybush, buchu, wild olive, wild rosemary, and rose geranium. The total maturation is about 12 years, all done in oak barrels. The results are superb! Imagine maybe a great balsamic: the complexity, the soft, round, sweetness, the long lingering finish, all are there in force. Then there's big, slightly tingly, subtly sweet, fantastic flavors with great complexity and a very, very long, very lovely, finish. It's so good that you can—and I have a number of times—sip it straight from the bottle. My exception Manchester Cheese

I must confess that I love cheese, and one of my long-time favorites is Manchester from Zingerman’s Creamery. Normally I will not even look at a cheese made from pasteurized milk, but this one is a rare exception—it is that good. It beautifully showcases the seasonal nature and flavors of the local milk used to make it. The cheese is soft and lusciously creamy with a mild tang when young, and gets denser and more flavorful as it ages, with a soft, almost runny rind that is delectable. Manchester is amazingly versatile and tastes great with Violet Mustard (online) whose crunchy texture and sweet and spicy flavors balance the softness and richness of the cheese (we call this perfect pairing The Purple Russian). I use it to add richness to a roasted turkey sandwich on grilled farm bread, with perhaps an avocado spread or roasted piquillo peppers. The first thing I've done every morning for the last twenty years is turn on the espresso machine. I enjoy savoring the rich, silky body that only espresso has offer. The tiny mesh of aromatic bubbles—the crema—coats my tongue releasing aromatic compounds as they burst. An espresso should have a balance of sweet and bitter and should be a pleasure to drink by itself. It should be complex, smooth and superbly balanced. To achieve this, the type of coffee beans have to be chosen and roasted to bring out these characteristics. Making an espresso will amplify whatever is going on with the beans. If the beans are super bright and lively they will probably make an unpleasantly acidic espresso. Zingerman’s Espresso Blend #1 is crafted to accentuate sweetness and body with refined notes of nuts (think hazelnut or roasted Spanish peanuts). A two ounce “double shot” can be slowly sipped, lasting as long and be as satisfying as a bigger cup of filter brewed. eight centuries and counting Tiburtini Olive Oil

We sell about three dozen different olive oils—so how does one go about picking a favorite? For me, the choice was made almost as soon as I met Emanuele Lolli, the man who makes Tiburtini olive oil. In the foothills to the east of Rome, the Lolli family has been tending their groves of olive trees for the past three centuries. They grow more than 15 varieties of olives, and some of the trees are seven or eight hundred years old—two factors that help to create a bold, complex olive oil. Emanuele does all the little things right: the olives are picked by hand, and pressed into oil within 24 hours. But what really sold me on his oil was the incredible lunch that his wife, Rita, prepared for the three of us when I visited their home in Tivoli, Italy last spring. Tiburtini olive oil was featured everywhere: in the well-dressed salad; over a plate of mozzarella and tomato; in a spaghetti dish with garlic and wild asparagus. The flavor of the oil is assertive but smooth, a little grassy, with a warming peppery kick in the finish. It pairs well with just about everything I want to use it for, whether in salads, over meats, atop soups, or—my very favorite— poured generously over paesano bread (p. 28) with a sprinkle of sea salt. French Mountain Bread

Hands down, this is my favorite bread and probably my favorite food period. It is my desert island food for sure. I love it for just eating, salami sandwiches, grilled cheese and breakfast toast with tons of butter and preserves. This bread is so good with a fried egg on it. The big loaf holds well on the counter all week till you can get another one. How could you not like a loaf designed to sit around and get better? I’m amazed that we sell it for less when it's “day old” at the deli—we should charge more for it after a day! Really Wild Wild Rice It’s hard for me not to fall for a story, especially when it’s true. This wild rice–not at all like the wild rice you’ll see in most shops–is one of America’s oldest foods. It was definitely on Native Americans’ diets four hundred years ago, which meant it was probably an early settlers' food, too. The plants were part of the Great Plains ecosystem, a thousand mile stretch of grasses whose biodiversity was as great as the Amazon. Today, the rice harvest still happens in ways a person from four centuries ago would have recognized. The grasses are gathered by hand in canoes, threshed by simple machines and parched over open fires. To cook some I sweat half a sliced onion in a pan, add the rice and warm it, stirring it into the onion and oil, then pour in chicken broth and cook it for half an hour with the lid open till the grains crack and split and fray. The flavor is absolutely stunning. It’s mild but extremely complex, with woody, green and grassy flavors mixed in with nutty, yeasty, earthy notes. Last year I travelled to Marcel Petite’s Fort St. Antoine in Jougne, France where they age Comté cheese. This was a dream come true for me. Everyone acknowledges that the French make great cheese and Comté is king in France. Comté from Fort St. Antoine is the crown of the king and a trip there is like a cheesemonger's haj. The Fort is special because it’s an ideal environment for very slow maturing of the wheels. Inside, the cheese can develop and express its individual flavors. Plus, it’s cool because it's really a fort! It was built into the side of a hill in the 1700’s and abandoned after it failed at its job stopping Germans in World War II. Before I ever visited the Fort or even knew of it, I was already a Comté convert. I love this cheese because I think it’s just about perfect. It’s a wonderful balance of flavors that include hazelnut, brothy french onion soup and butter. It has the most delicate hint of sweetness and a super long finish. Perfecto! Maffé Sauce

You may not know this but I am the Leif Erikson of trends, a cultural trailblazer of food, fashion and fads. Humility prevents me from listing all the gifts I’ve discovered, but a partial list of my discoveries includes wearing Oxford shirts around the waist; saying "redic" instead of "ridiculous"; small batch bourbon. This year my great find was Maffé sauce. A regional sauce of West Africa, maffé goes by a multitude of different names depending on where you’re from and is enjoyed weekly by millions. Now it’s the darling of the culinary world, but it was me that gave Maffé its big break and made it the star it is today. At least that’s how I remember it and I'm sticking with my story. Portuguese Sardines

Tuna is our top-selling tinned seafood, but sardines aren't too far behind. It's surprising to me since sardines are not a big part of the popular food scene in America. One thing to know is there are actually dozens of different fish sold as sardines in the U.S. Most are either brislings from Norway or herring from the North Atlantic. While they aren't bad, they don't come close to the flavor of true pilchards like these. And unlike Norwegian sardines, these are never smoked, so the full flavor of the fish comes through. Four or five tender, perfect sardines, nested in a tin of olive oil. Garum Colatura and Red Boat Fish Sauce These two come from opposite sides of the world, but they’re made to do the same thing: add a splash of umami richness to a dish. Garum colatura is an ancient Roman anchovy elixir, made much the same way it was 2,000 years ago. It’s the saltier of the pair, the flavor is clean, clear anchovy. Why we carry only one brand of balsamic The Balsamic Vinegars of La Vecchia Dispensa

While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic: La Vecchia Dispensa. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel— both of which contribute to more intense flavors. Although aged for only 25 percent longer than the 8 year balsamic, the intensity of flavor is almost double. As you move up the age range—to 16 year and 30 year—the liquor thickens, the sweetness enhances, the carmelization takes you on a wild ride of flavor.

There’s no shortage of new jam makers in America. I probably taste more preserves than any other category of food—a dozen or more in any given month. Most are new and quite good. I thought I’d tasted every jam that existed in America and then I got this surprise. The Tarshish family has been making date jam at their bakery in Golden Valley, Minnesota for nearly fifty years. The recipe is simple: dates, cane sugar, lemon juice and just a touch of citric acid, but the finished spread is anything but ho-hum. It’s a haunting balancing act, facing the dates’ cedar earth sweetness against the tart tang of lemon juice. It’s excellent, and among the hundreds of preserves I’ve tasted in the last couple years it really stands out. Date jam pairs extremely well with a wide range of foods, but it’s especially good with fresh cheeses or over grilled meats. A magic trick moonlighting as an Easter sweet. It started its life as a perfectly proper egg. Then the insides were removed, deployed for dinner, the shell rinsed. My toddler asked me where bacon chocolate eggs came from. I confessed I didn’t know, but I bet it’s the most delicious animal that ever lived. In truth, these chocolate-y, bacon-y eggs come from Vosges Haut-Chocolat in Chicago. Pieces of hickory smoked bacon are folded into soft, buttery caramel then covered in dark chocolate and formed into the shape of (half) Easter eggs.
