Koeze Cream-Nut Peanut Butter

The peanut butter that's become a legend. We found this one almost right next door in Grand Rapids, Michigan. Like most of the simple great foods in our catalog like polenta or olive oil, it’s the result of a lot of care and very little processing. Jeff Koeze sources incredible Virginia peanuts, brings them up north in 2,000 pound sacks, then blanches them to remove the skins and keep them from going rancid (a common flaw in a lot of natural peanut butters). He roasts them in vintage coffee roasters, grinds them smooth, then adds a bit of salt. The result is not an air whipped, sugar filled concoction but a natural, intense, velvety, mouthwatering sensation. Get a couple jars, quick. The amount of handwork to get this done is extraordinary, and the care is evident as soon as you open the tin. The placement of each clam, the wonderful sweet sea aroma and the flavor and texture—ocean sweet, meaty, tender and succulent—are clearly a labor of love. This is the kind of tinned seafood that you find almost nowhere besides Spain where it's considered a delicacy. It may take some time to wrap your head around that idea, or wrap your wallet around the price, but if you know someone who loves special fishes, this is definitely worth splurging on. Garum Colatura

This is one of those foods for folks looking for something both old and new–and flavorful. It’s an ancient convenience food that gets deep flavor without much work. I’d never even heard of garum colatura until I visited the Italian coast south of Naples. There I discovered it’s the liquid that’s drained off the barrels of traditionally cured anchovies. Made much the same way it was 2,000 years ago, it’s used as a quick way to give great anchovy flavor to a dish without having to fillet, soak and chop the fish. The best meal of my Neapolitan trip was a bowl of spaghetti cooked al dente that had been tossed quickly with garum, some very good olive oil, chopped garlic and a touch of dried red pepper. Where many fish sauces are chock full of nasty preservatives and whatnots, this has only two ingredients: anchovies and salt. Not all the wheels that bear the world famous Parmigiano-Reggiano name are created equal. There are big differences from one to the next. This cheese is made by a dairy nearly two thousand feet up in the hills outside of Modena, Italy. The high altitude makes for plenty of diversity in the grasses, herbs and flowers growing in the cows’ pastures. This means that the milk–and subsequently, your cheese–has more complex flavors. The wheels are aged for a minimum of two years (33% longer than the Consorzio minimum). Most important, the cheese has a really rich, wonderfully complex flavor with a lovely, long finish. This could be the Holy Grail of secret ingredients. Rangpur limes look more like mandarins than the little green citrus fruit we know, but their flavor is like a smoky lime. This syrup pours easily—like honey—and doesn’t leave sugar crystals as it dissolves in iced or hot drinks, making it excellent for cocktails. Raye’s Mustard A smooth yellow mustard with crystal clear flavors, highly recommended. I think the most interesting part about J. W. Raye’s fourthgeneration operation in Eastport, Maine, is that the seeds are ground in the 105-year-old stone mill. It has a series of eight oneton quartz grindstones that, though I haven’t seen them in person, must be a dramatic sight. As the mustard mash moves from stone to stone, it gets creamier without any addition of heat, which would drive off the aromatics and lessen the flavor.
