Rózsavölgyi Csokoládé (say that three times fast) is a Hungarian bean-to-bar chocolate company that makes some incredibly tasty confections. They source, roast, winnow and mix their own chocolate for their confections, which is a huge amount of work. But I’ll confess, it was the packaging that caught my eye first: brightly decorated paper Hungarian designed paper, folded into a colorful cone. Inside are roasted, salted almonds, caramelized in a sweet, crisp jacket of cane sugar. The nuts are covered in 77% dark chocolate and dusted with cacao powder and a touch of Himalayan salt. Each bite is sweet and slightly salty, nutty, crunchy and just a bit chocolate-y. A beautiful, delicious gift for your valentine or anyone that likes to get a little nutty with their sweet treats. New Deli Crumb Cake

Coffeecakes are Zingerman's perennial best-sellers. But we create a new one on average just twice a decade. That’s the mark of how hard it is to break into the ranks. You’ve gotta be good. The newest kid on the block's size, shape and topping are akin to our Blueberry Buckle: moist crumb made with lots of sweet butter and topped with a butter-crumble crust. The flavor is far from American. For inspiration, we took our cues from the subcontinent and devised a recipe that's imbued with the exotic flavors and aromas of India: pistachio, cardamom, ginger, clove and even a little coconut. The result is a crumbly, sweet, exotic and slightly spicy coffeecake to make your mornings more interesting. If you’re looking for an earthy, nutty pork chop with loads of flavor you’ve found the right place. We’re working with Heritage Foods to get a limited supply of big, fat, porterhouse pork chops from Duroc breed hogs. These chops have the steak and loin attached, joining at the bone like a T Bone steak. Each measures an inch and a quarter thick and tips the scales at fourteen ounces. The hogs are raised impeccably: not confined, they have access to the outdoors and never receive antibiotics or hormones. M-DUR-4 four 14 oz chops $80 M-DUR-8 eight 14 oz chops $140

When Pigs Fly: American Bacon Club

Six to date. That’s how many vegetarians I know who’ve fallen off the bandwagon thanks to bacon. I’m not using that as a proposal for torturing anyone. I’m just saying any food that’s so good it can break a strong will has to be worth trying. Our bacon club has been lauded by chefs, sous chefs, home chefs, pork-o-philes and bacon freaks all over America. It’s our most popular food club by far and it’s not just the novelty of bacon-by-mail that makes it so loved. The bacons are downright amazing. It’s hard to find any of these bacons in most shops, let alone all of them. They represent the pinnacle of American bacon making and, let’s be honest, this is one food that no one in the world does better than us.

Gelato is Italy’s suave version of ice cream. It is to American ice cream what Gucci is to Levi’s. Italian ice cream shops, called gelateria, display at least a dozen flavors, everything from sexed up standards like super dark chocolate to more exotic tastes, like Marron Glacé (candied chestnut) or Torrone (nougat). They’ll paddle your choice into a tiny little cup. You’ll eat it with a tiny shovel smaller than a toddler’s spoon. Why is everything so small? Because the flavor is so big. You don’t need a lot of gelato to have an out of body experience. When gelato is made the air is squeezed out so it’s more dense, more delicious than the ice cream we're used to. Incredibly, it’s also lower in fat. How? Who cares! That’s how amazing Italy is.

Calder Dairy, about an hour from Ann Arbor in Carleton, Michigan, is one of the few remaining farmstead dairies in Michigan. (There aren’t many left in the whole USA, either.) Farmstead means they raise the animals and make their own dairy products to sell from them—milk, cottage cheese, and so on. Calder’s herd of just over one hundred cows are known by names, not numbers. They never receive sub-theraputic antibiotics or hormones. The milk we get for our gelato is gently pasteurized but not homogenized. That gentle treatment makes its texture more luscious.

Zingerman’s Buttercream Cakes

The pastry magicians at Zingerman’s Bakehouse love baking cakes above all else. Wedding cakes, birthday cakes, coffee cakes, everyday cakes—whenever there are cakes to bake you can bet they’ll be excited and what comes out of the oven will be incredibly tasty. The fondant cakes are the show-stoppers, with their intricate decorations (see our birthday cake, p. 28). Coffee cakes are our everyday best sellers (p. 31). But here in Ann Arbor, special occasions are marked most often by buttercream cakes. The showpiece on each cake is traditional buttercream frosting. Swiss style, it's made by whipping fresh eggs and sugar into a meringue, then mixing in real Wisconsin butter and Madagascar vanilla. Our cakes are also marked by what they don't contain: no artificial anything, no mixes, no shortening. These are the ingredients your grandmother would use when she baked. Each cake is six inches in diameter, four inches high, about 1 ¾ lbs and serves 6-8. Ships frozen. Defrost and serve at room temperature for maximum flavor and attractiveness.

Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned in good olive oil. The olive oil is key. It adds flavor and makes the texture silky over time, unlike water, which tends to leach flavors from the fish. We went to Spain and selected a single great batch of Bonito loin, our best seller, for fullness of flavor, siky texture, and lingering sweetness. A Zingerman's exclusive. Kosher.

Decades ago chefs used to select their preferred tuna batches from the factory at Ortiz, Spain’s highly esteemed fifth generation tinned fish titan. Cheesemongers still do this with cheese, in fact it’s a specialty of some exporters like Neal’s Yard Dairy and Essex Street Cheese. But it’s something that hadn’t been done for decades with tinned fish until we started two years ago. I went to Getaria, a fishing village in Northern Spain off the Bay of Biscay, to taste all the batches of tuna Ortiz had tinned that summer for America. I nabbed the most flavorful, a single shoal of amazing fish that resulted in some 40,000+ tins. We’re going to age some of it and sell the rest for as long as we have it. It was the first time in a generation this has been done and I think it’s resulted in a great tinned tuna.

Little sardines

It’s almost a forgotten bit of history, but it was Napoleon we have to thank for tinned sardines. He was looking for a portable, shelf-stable food for the troops fighting in his various wars. He conducted a contest and sardines won. It wasn’t long after when Connetable went into business. The firm is still there today, and the sardines are fished in the same cold Atlantic waters off the Breton coast of France. They are now bedded in extra virgin olive oil which I think is the only upgrade this tinned fish has seen in 162 years. Extra virgin olive oil makes them silkier. The saline sea edge of sardine is still there, but less sharp. P-CNS 4 oz, about 4 sardines $9

These wonderful, traditionally prepared sardines are packed by the Gonidec family in the old Breton port town of Concarneau under the name Les Mouettes d’Arvor. Currently in their third generation—a relative newcomer next to Connétable (left)— they remain true to old methods. The fish are fresh, never frozen. As per the old Breton way, the newly landed sardines go into a bath of ice and salt water. Called "pickling" this process firms the flesh of the fish. The fish are then laid out on racks and dried slowly in kilns then fried. Drained, they're hand packed in extra virgin olive oil. P -LMA 3½ oz, about 4 sardines $11

The Portugese call these “sardinhas”— little sardines. They’re about half the size of a typical tinned sardine. While the fish’s dimensions have been reduced the flavor is not. They’re every bit as rich and even more silky textured. Ramon Peña hand packs their tins with flair, the fish so artfully laid out you’ll feel totally comfortable bringing a just-opened tin to the table to snack from directly. “The taste is not fishy or salty but soft and delicate and dark.” Kevin, Plymouth, Michigan Portuguese Sardines Tuna is our best-selling seafood, but sardines are no slouch. We sell loads of our house sardine—these Pilchards fished in the Atlantic. I’m beginning to think it’s not a fluke because the growth rate rises in a way that would make the Chinese economy jealous. There are few other foods that taste this good that are so unequivocally good for you. I like to serve them simply, laid on a slice of toasted farm bread and dressed with great olive oil. Add a pinch of salt, a twist of black pepper, a squeeze of lemon and eat ‘em up. close shave

Razor Clams from Ramon Peña

Razor clams, named for the way their shell resembles a straight razor—are the red headed stepchild of the clam world. Littlenecks, manilas and cockles get all the attention, while razor clams languish, rarely seen on restaurant menus or at the fish monger’s. Lucky for us Ramon Peña specializes in overlooked sea creatures, especially ones that are tasty. And razor clams are indeed tasty. Their shape makes their texture a bit different than a regular clam, a little more like octopus or squid. The flavor is deep and briny. Tinned simply in olive oil these are a great gift for a curious seafood seeker. P-RCL 205 g tin $39

nifty trick

Octopus from Ramon Peña Octopus is a tricky fish to tin. We’ve never sold it and it’s not from lack of trying. I’ve probably tasted octopus from twenty different companies. Those fish suffered a range of maladies: overly gelatinous, too cat-foody, or they had what I refer to as “rubber hose phenomenon.” I came to Ramon Peña’s octopus with low expectations born from experience. What I tasted was a treat, a surprise that ranks at the top of my new food list this season. Peña’s round tin holds over a dozen slices of tentacle, suckers intact. Octopus is never a melt-in-your mouth food and these are appropriately meaty with a satisfying ticky tacky bite that never once veers to garden hose. They have a scent of the sea so clear it’s disarming. A tin serves 4 as an appetizer. And since one of those 4 people probably doesn't eat octopus there’s more for you. tapas bar treat Berberechos

Galician cockles—berberechos, in Spanish—are tiny, coveted clams, hand-shucked and tinned in simple brine. The amount of handwork to get this done is extraordinary, and the care is evident as soon as you open the tin. The placement of each clam, the wonderful sweet sea aroma and the flavor and texture—ocean sweet, meaty, tender and succulent—are clearly a labor of love. This is the kind of tinned seafood that you find almost nowhere besides Spain where it's considered a delicacy. It may take some time to wrap your head around that idea, or wrap your wallet around the price, but if you know someone who loves special fish, this is definitely worth splurging on. Just open the tin and serve, like it's done at the best Barcelona tapas bars. No shells. P-CLM 4 oz tin $40 SHIPS FOR FLAT RATE

LEt’s skip the beach And eat some anchovies Anchovies from Don Bocarte

Santoña is a village in Northern Spain facing the Cantabrian sea. It’s got a great crescent shaped beach, which means it’s thronged with tourists in summer. It’s also got a well protected port, which has meant, historically, it’s thronged with anchovy boats during the spring season, April, May and June. There are fewer boats today, but Don Bocarte buys from them regularly, salting, aging, then tinning up prized Cantabrian anchovies in Spanish olive oil. These are big, meaty fish, the kind a real anchovy lover (you know who you are!) will cherish. P-BAC 100 g tin $20 SHIPS FOR FLAT RATE

I'm convinced that one of the main reasons people dislike anchovies is they've only had bad ones. And one of the reasons for bad anchovies is room temperature storage. This is a sin perpetrated by even the best retailers. Anchovies don't go bad quickly, but their texture turns to moosh if they're out on the shelf for months. Keep yours in the refrigerator where they'll last about a year.

Italy's classic balsamic, why we only carry one The Balsamic Vinegars of La Vecchia Dispensa

While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic: La Vecchia Dispensa. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel—both of which contribute to more intense flavors. Although aged for only 25 percent longer than the 8 year balsamic, the intensity of flavor is almost double. As you move up the age range—to 16 year and 30 year—the liquor thickens, the sweetness enhances, the carmelization takes you on a wild ride of flavor. EACH SHIPS FOR FLAT RATE

new england's balsamic

a kind of white balsamic

Like the tradition of balsamic in Modena, Italy, cider vinegar in the northeast was a family cure-all for various ailments, smooth and easy to sip straight from a glass. You can of course employ this vinegar that way, but it's also great when you're looking for flavor, not medicine. Made in Pittsfield, Massachusetts from local honey, organic cider vinegar and a blend of roots, fruits and herbs. It's a tad bit spicy—I wouldn't call it fiery, though—dazzling in vinaigrettes, sauces or to deglaze a pan. V-FCV 8 oz $20

Agrodolce vinegar has been selling at incredible rates. Maybe it's because we've been noting how it tastes like balsamic but it's a white wine vinegar. More than anything else, I want to chalk up its success to its flavor. It’s exceptionally delicate, subtly sweet and really delicious. Agrodolce is super smooth, light on the tongue, subtle and very, very long in the finish. You can use it in place of balsamic since it’s similarly soft and sweet. It’s crafted by Sante Bertoni on his family estate outside of Modena, Italy. Described as a bit of a mad scientist, Sr. Bertoni is giving the vinegar extra maturing just for us, making its flavor more complex before it hits your kitchen. V-AGV 500 ml $25

from the birthplace of pesto Ligurian Basil Pesto You can make fresh pesto on your own. But let me tell you, even in a jar, Ligurian pesto is absolutely delicious and usually beats homemade. Basil grows easily in that region's temperate climate. It's harvested very young, when just two leaves have sprouted on the plant. That's something very difficult to do in America unless you have your own basil farm. Yet it's the trick to keeping it sweet and herbaceous. Roi's Ligurian pesto doesn’t suffer the hot anise flavors you get when basil is harvested later in its life. Ligurian olive oil is also delicate and sweet, a good match for basil, whose flavors would be overwhelmed by a more robust oil. Last but not least, the pine nuts are the very flavorful Italian variety, not the cheaper, blander imports from China. When we ask for pesto from Franco and Rosella at Roi, the century old farm near the coast, it’s made to order with their own excellent olive oil. P-PTO 180 g jar, 10 servings $12 SHIPS FOR FLAT RATE

Original: Made with vine ripened tomatoes, carrot, celery, onion, herbs and a generous amount of great Umbrian extravirgin olive oil. My favorite starting sauce. You can jazz it up any way you'd like (my favorite: add a tin of Ortiz tuna).

Mezzanotte:

Tomatoes, extra-virgin olive oil with garlic, parsley and hot cherry peppers. It's not very spicy but great if you're looking for a quick, zesty, late-night snack.

Diavola:

Tomatoes, anchovies, tuna, extra-virgin olive oil, medium-hot cherry peppers, garlic, salt and herbs. If you like your flavors deep, lusty and strong, then this one's for you.

Mushroom:

Tomatoes, dried porcini mushrooms, extra-virgin olive oil with red wine, shallots and spices. P-ILL-PLA P-ILL-MEZ P-ILL-DIA P-ILL-MUS

"A deeply beguiling, sweet-tart taste" John Willoughby, New York Times

Middle eastern secret Pomegranate Molasses

Pomegranate molasses is a syruplike reduction of pomegranate juice and sugar that has a really unique, tart-sweet flavor and is colored a gorgeous, deep reddish purple. It’s as thick as maple syrup with sweet and sour flavors that combine the best of balsamic vinegar with lush fruit. Great as an ingredient in an array of Middle Eastern dishes, it’s the sort of addition to sauces and stews that adds enormous depth of flavor but no one can ever identify. "That sorghum is too good on vanilla ice cream or biscuits. Yum. Not so great with wine, however." Kermit Lynch, Wine Importer

southern sweetner

Sorghum Molasses Most of the twenty-four hundred acres that produce sorghum in the U.S. are in Tennessee or Kentucky, where the Old Order Amish Yoder family settled in the 1970s. The Yoders plow their farm with a team of mules and the family works the land without machine. The cane is cut and pressed to extract the juice, then it's boiled and evaporated in a process similar to the production of maple syrup. Sorghum molasses is sweet with exceptional depth. Notes of burnt sugar and caramel are there, and the flavor is very long lasting. It's a great topping on biscuits or bread. It's also good when used to sweeten up bitter vegetables: roast some brussels sprouts and drizzle a bit on them just before serving.. P-SGM 1 lb jar $10 SHIPS FOR FLAT RATE

Wild Mugolio Pine Syrup Cacao Honey Syrup The syrup collected from cacao beans, the fruit that's the base of chocolate. Its flavors are bright and closer to balsamic vinegar than honey, so use it in your vinaigrettes, marinades, maybe drizzled in yogurt, wherever your curiosity takes you. Eleanora Cuancia harvests young cones and buds each spring from mugo pines in Italy. She stores them in the sun till fall, and during that time they slowly expel syrup. In fall she cooks the syrup down over a low fire with sugar till it's hazel brown and smells deeply of resinous pine. A drizzle enhances fresh goat cheese or fruits like pears and apples. The search is over Coop’s Hot Fudge I’ve been patiently searching for a great hot fudge ever since Zingerman’s Creamery started making gelato a decade ago. Till now it’d been a sickly sweet, unlucky quest. Most have too much sugar. Many have a laundry list of unpronounceable ingredients. Then along came Coop’s. To be honest, the jar caught my eye first. A wax seal drips from the top looking like chocolate that leaked out of the vat. Usually when I see clever packaging like this I’m suspect. It often overshadows the food. To my surprise the hot fudge inside was good. Not just good, pretty great. Sporting just six ingredients, all of which I promise you’ll recognize, Marc Cooper’s hot fudge is milky and chocolaty without being overly sweet. Microwave for less than a minute and you’re in business. P-HHF 10.6 oz jar $16 SHIPS FOR FLAT RATE

Darkly sweet, not too heavy nor too goat-y. From Looking Glass Creamery in North Carolina, where it’s a twelve hour day for Jen and Andy Perkins and Ashley, their sole employee, to make and jar a single batch. P-GTC 7 oz jar $15

A glimmer of white ginger gives this thick butter caramel a spicy, prickly character to balances its dark sweetness. From Robert Lambert's amazing kitchen in northern California. P-HGC 8 oz jar $20

Michigan maple syrup Maple Syrup From Michigan

Maple Moon is a family affair. Since 2012 both mom and dad Peterson and all four kids have been working their eighty acres in Petoskey, Michigan to create some of the purest tasting maple syrup I’ve enjoyed in years. “Our entire grove is nothing but maples,” said mom Christi Peterson. “Birch, ceder and maples grow in this area, but the only trees we have are maples.” While the cause of why only maples strive in the grove are debated, what it means is the only trees influencing the soil are maples. The terroir (the French term meaning things taste like where their grown) is only maple, so the flavor of the syrup isn’t complicated by other arboreal influences. We’ve selected syrup produced towards the end of the season, when there’s less water in the sap, and therefore more sugars. The color is dark-amber and the flavor is robust, sweet, thick on the tongue and smells like the forest. It’s like taking your tastebuds camping and serving up one of those breakfasts you remember and recant around the campfire. All in the comfort of your own dining room. roadhouse bread

The house bread at our restaurant, Zingerman’s Roadhouse and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. Excellent with cream cheese and smoked salmon. B-ROA 1½ lb handmade loaf $9 B-2K-ROA 2 kilo round $25 SHIPS 2 BUSINESS DAY

farm bread Imagine sitting around a French farmhouse table waiting for dinner. This would be the bread the family would serve. Like French pain au levain, it's a white-wheat mix made with a sour starter. Its crust is crisp, its flavor subtle and never tiring. The one and a half pound loaf is pictured, but the three pound round is my favorite. Cut into quarters and freeze what you don’t eat. french mouNtain I’d have a tough time picking between this and Farm Bread for top spot on my European-style favorites list. French Mountain Bread has a chestnut colored crust nearly a quarter inch thick, a dense wheaty crumb inside and a toasty, long lasting flavor. It’s totally terrific for toasting. We offer it in two sizes, a ¾ kilo loaf (about 1.65 lbs) that’s good for munching and a 2 kilo (about 4½ lbs, illustrated) work of art. I love the 2K loaf. A good foot and a half across and four or five inches high, it’s decorated with a hand-cut “Z.” The size is significant because bigger loaves almost always taste better. Baked to last, you’ll still be enjoying 2K Mountain Bread ten days after the loaf has left our oven. B-MON-A ¾ kilo handmade loaf $12 B-MON-B 2 kilo handmade “Z” loaf $26 SHIPS 2 BUSINESS DAY

paesano

Our most popular bread. Spreading out like the cap of a wild mushroom, its thin, snow white crust surrounds a soft, savory crumb filled with lots of holes (we work hard to put the holes in). This is the traditional bread of Puglia—the heel of Italy’s boot—and the best one to eat alongside a pasta dinner. Recommended for ripping and dipping in olive oil. chocOlate cherRy

A chocolate lover's fantasy come true—the best Belgian and French chocolate and dozens of dried Michigan cherries. A few minutes in the oven, the chocolate chunks begin melting, the aroma of cocoa fills the air. Spread it with just a hint of sweet butter or set a scoop of vanilla ice cream on top of a warm slice. You'll be sitting in front of the most decadent dessert you've had in years. B-CHO 1 ¼ lb handmade loaf $18 SHIPS 2 BUSINESS DAY

Craquelin Bread

The national bread of Belgium. It’s a buttery brioche rolled up with fresh orange zest and sugar cubes soaked in Grand Marnier®. The additions form a sweet swirl inside each slice like a cinnamon roll and their dark orange flavors seep into the surrounding dough. Some of our crew call it “coffeecake bread” which gets to the spirit of the loaf, though its texture is much lighter. B-QUE 1½ lb loaf $22 SHIPS 2 BUSINESS DAY

chocolate sourdough bread It’s simple: our sourdough bread stuffed with chunks of dark Belgian chocolate. Like most of the school children I know, I like to rip off a hunk and eat it as soon as I open the bag, but it's best when you pop it in the oven for about fifteen to twenty minutes. Your entire kitchen is likely to be filled with sensuous smells—warm chocolate, good bread. This is one loaf that's very hard to keep around the house. pePpered bacon farm Bread

parmesan pepPEr heretic's loaf

We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and Tellicherry black pepper. Every bite has a bit of sourdough tang and a lot of the sweet, smoky meatiness of bacon, plus a little spice. I’m sure it makes great sandwiches, but I’ve never had a loaf around long enough to try. B-BAC ¾ lb handmade loaf $13 SHIPS 2 BUSINESS DAY

My Italian friends would probably think this bread is heresy, but that’s their loss. It’s a natural for me because I love bread, parmesan and good black pepper. There’s a quarter pound of parmesan in every loaf, along with a load of cracked black peppercorns. Leaves your mouth pleasantly aroused from the heat of the pepper and salivating from the savory sweetness of the parmesan. It’s fantastic when toasted. B-PEP 1¼ lb handmade loaf $16

I love this bread: savory, lusty, delicious and dangerously close to addictive. Softly spicy, fire-roasted New Mexico green chiles and raw milk Nor'easter Cabot cheddar blended into the Bakehouse’s tangy Farm Bread. Great on its own or as an accompaniment to dinner. Traditional Jewish rye bread is still an endangered American species. Twenty-two years after we started baking them in Ann Arbor you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. They’re the breads I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.

June 2014 Harvest

new zealand

Moutere Grove

The aroma is grassy with some green banana. The texture is buttery. The most notable difference from past bottlings is the finish. Pepperiness is there, but it doesn't leave your mouth tingling or tickle your throat with as much bitterness as 2013's harvest.

A truly excellent extra virgin olive oil that comes from New Zealand. Amazingly well rounded and complex, especially for one that’s only been in the works for less than a decade. Ed and Liz Scott use Tuscan olive varieties on their certified organic farm to lend their oil boost of spicy green olive flavor with a generous dose of pepperiness. That flavor is balanced with a touch of South Pacific lushness that—I swear—hints of tropical fruit in the finish. Try a bottle and bring this fresh set of olive oil flavors to salads, pastas, full-flavored fish or some nice New Zealand lamb grilled with garlic and fresh rosemary. ...a bevy of hard-to-find new American cheeses that we've sourced and aged until they're just right. Featuring the soft and gooey ones you want to have with a bottle of bubbles for Valentine's Day. Now through the end of February only. Online at zingermans.com.

Harbison Cheese from Vermont I love soft-ripened cheese, but we don’t ship many of them. Cheese aficionados love ‘em too, but they are often hard for novices to appreciate since they may have an offputting, strong aroma. Not so with Harbison. This is one soft-ripened cheese I readily suggest to folks looking to spread their cheesy wings. Made by Jasper Hill Farm in Vermont, these small wheels of pasteurized cow’s milk cheese are wrapped with the inner bark of spruce trees. It holds the cheese together as it ages and imparts a woody, slightly piney flavor to the spoon-able cheese inside. Keep the bark around the wheel. The cheese is sweet, with bright citrusy notes and a luscious texture. Scoop it out, spread it on something warm and crusty, then sit back, savor and let your eyes roll back into your head. It’s that kind of eating experience and a great introduction to how incredible soft-ripened cheeses can be. C-HAR 10 oz wheel $23 SHIPS 2 BUSINESS DAYS

You pick the country. We’ll head to our cheese cave and take care of the rest. We take deep pride in sourcing and offering a small but excellent collection of cheeses, tending them in our cave, cutting them to order by hand and sending them with careful packaging so they arrive in great condition. We never use cryovac to seal the cheese—it can create off flavors. We wrap them with paper we import from France that's like cashmere for cheese. It keeps them feeling great (and tasting great). Makes a great gift for any cheese lover you know, including you.

FoOds from around the five Great Lakes Great Lakes Artisan Gift Box

Twenty years ago it was a tough task to build a collection of great American artisan foods, let alone one strictly from the Great Lakes. My, how times have changed. Today the difficult job is not finding enough foods, it's editing the selection. Here are seven delectables that I think represent some of the ingenuity and resources of artisan food makers from our region. We stuff our cartooned gift box with Peanut Butter from Koeze in Grand Rapids, Jam from Farrell Fruit in Ann Arbor, Freshly Roasted Zingerman's Coffee, Mo’s Bacon Chocolate bar from Vosges in Chicago, Marieke Gouda from Thorp, Wisconsin, Nueske’s Applewood Smoked Bacon from Wisconsin and our Pecan Raisin Bread. In Spanish, tapas sort of means snacks, but that's an inexact translation. In English you wouldn't eat a meal of snacks. In Spain there's no problem doing just that. There, tapas can start a meal or substitute for it entirely. The ingredients in this collection of openand-serve delectables here are not all Spanish but the idea is. Eat them as the Spanish do, as evening makes its way indoors, with a glass of crisp wine. The gift box includes Zingerman's Farm Bread, La Quercia’s Cured Ham, Mediterranean Olives, Spanish Olive Oil and Anise Tortas, Spanish Marcona Almonds, Portuguese Sardines and Italian Taralli crackers.
