It is the distinctive and undeniable flavours and aromas that makes Thai cuisine quintessentially ‘THAI’. And this is due to the use of local and fresh ingredients, which we are fortunate enough to have in abundance. One of the strengths of Thai food is that it is accessible to lots of people in their local supermarkets around the world. There are some excellent curry pastes available so most people can conjure up a home-cooked style Thai green curry, for example, with little more than a tin of coconut milk, some vegetables, jasmine rice and good quality curry condiment. Thai food doesn’t have to be pretentious or “deconstructed”. For sure I adapt dishes, to my own ideas of creativity and to also balance some of the stronger flavours to a western palate. But the appeal of Thai food is that it is inclusive and not exclusive. Now we see the independent creative streak that runs through the younger generation of Thai chefs as something I believe helps amplify the popularity of Thai food globally. It is a bold cuisine. Chefs are becoming more daring now and are confident in mixing flavours, methods and ingredients in ways we never experienced before. Certainly, the success of a new generation of restaurants such as Suay’s is due to the experimentation mixing the composition of Thai traditional tastes and European cooking. Intricate flavours and stimulating consistencies of our dishes underline Thai cuisine. People love something different, yet, well within the comfort zone of the intricate flavours and stimulating consistencies that underline Thai cuisine.

ALIBABA SET TO HELP DRIVE CHINESE TOURISTS TO NEW DESTINATIONS IN THAILAND BANGKOK, THAILAND E-commerce giant Alibaba and its online travel subsidiary Figgly.com are going to team up with the Tourism Authority of Thailand (TAT) to develop an online platform promoting Thai small tourism operators and emerging destinations to Chinese travelers, according to TAT. While complete details are still being finalised, the portal is expected to cover the complete digital experience for Thailand’s tourism. This starts with the visa process through to the complete tourism tax refund service that could be offered to Chinese travellers through Alibaba’s online payment gateway, Alipay. In 2017, Thailand received nearly 10 million Chinese arrivals, an increase of almost 12 per cent over the previous year. Alibaba founder Jack Ma came to Thailand in April to announce the group's investment -worth about 11 billion Baht (US$ 350 million)- in a government’s "digital hub" in eastern Thailand aimed at connecting regional markets and covering sectors such as agriculture, ecommerce, human resources development and tourism.

Celebrated every year in Northeast Thailand, Phi Ta Khon is a ghostly festival, unique to the Isaan culture where musical and colourful processions of masked villagers pack the streets and rockets fill the sky for three days before the villagers meet at the local temple to listen to the monks recite the message of Lord Buddha. The most recognised feature of the Phi Ta Khon, or Ghost festival, is the colourful parade of locals who dance and strike poses while wearing huge masks creatively made from carved coconut-tree trunks, topped with wicker sticky-rice steamers that make them appear taller and more grotesque. The Phi Ta Khon Festival comes along with another colourful event known as ‘Bun Luang’ or ‘Bun Pawat’. Both take place in Dan Sai district in Loei province (about 450km from Bangkok). This year, the Bun Luang and Phi Ta Khon Festival will take place from 16-18 June. It is thought the event has its origins in a fertility festival but these days it’s part of a two-day merit-making event. It is one of the most popular festivals of Isan alongside other events, such as, the Bun Bang Fai rocket festival.

Wai Khru is the ceremony which all fighters should attend to pay respect and gratitude toward their families and teachers who teach them the art of Muay Thai.

O

ver the centuries Thai cuisine has become an amalgamation of tastes taken from neighboring regions, fused with ingredients brought to the country from far and wide. Early Chinese settlers brought with them the now ubiquitous noodle, and also the practice of stirfrying and deep-frying. Prior to this, Thai cooking usually involved the process of baking, stewing and grilling. The cuisine could be said to have been bland when compared to the multifarious tastes we now see in Thailand, but the itinerant nobility in the 17th and 18th centuries brought back from their travels new ingredients and cooking styles. Foreign traders and visitors to what was then known as Siam also helped to expand on the variations of dishes, notably the Portuguese who brought the almost ever-present chili pepper and the British and other European nations who brought a range of spices during the spice trade years. Following the influx of new ingredients, we might say the table was set for Thai cuisine, and the innovative culinary artists of the country began creating some of the most eclectic and daring dishes the world has ever seen.

Following these influences of taste came changes in eating propriety in the 19th century. The Kings of Thailand, notably King Mongkut (Rama IV) and King Chulalongkorn (Rama V), brought back from European visits what could be called modernizing influences such as eating with cutlery rather than hands, and the use of furniture designed for the dining room.

Thais today eat mostly with a fork and spoon, a practical application given that most Thai dishes don’t require large pieces of meat to be cut. Traditionally chopsticks were only used by the ThaiChinese, although today the use of these utensils is found mostly in small roadside restaurants selling variations of noodle dishes. Such noodle restaurants you will find in any corner of the nation, but each region of Thailand – the North, North-East, Central and South – cast its own spell on Thai cuisine.

Northern Thai food or Lanna cuisine 泰北美食、兰纳美食 Northern Thailand, with its capital in Chiang Mai, borders Myanmar and Laos. Before it was annexed into the kingdom of Siam, this region was known as the Kingdom of Lanna, a reason you may hear people calling traditional food, “Lanna cuisine.”

T

his cuisine is largely influenced by the various ethnicities coming from surrounding areas, such as the Shan people, Lao, Burmese and several hill tribes. This mountainous area of Thailand is rich as a source of vegetables, fruits and herbs, although it’s not known as a source of coconuts. This is the reason why the traditional curries in the region tend to be bitter, spicy, and often quite intense. They might be served with one of the region’s abundant freshwater fish, grilled meat, and gelatinous (sticky) rice. A northern Thai staple is, “nam prik”, which transliterates roughly as “chili dip”. While variations of

this dip can be found all over Thailand, the north’s main additions to the palette of Thai dips are “nam prik ong” and the “nam prik num.” The former is tomato based, containing mashed chili, garlic, shallots, shrimp paste and ground pork, and the latter is made of roasted green chili, onions and garlic. Not surprisingly these can be spicy, so are often accompanied with cold boiled cucumber, eggplant, lettuce or any number of green vegetables. As an addition, you’ll usually find pork crackling nearby or “sai oua” – an often-spicy pork sausage mixed with herbs. The Burmese introduced two dishes that offer some respite from the intense spice and bitterness, those of “geng hanlay” – sweet stewed pork curry with ginger, tamarind juice and peanuts - and “khao soy” - a sweet yellow curry with fried and boiled egg noodles, coconut milk, pork or chicken.

The cuisine of the south tends to be influenced by Malaysian and Indonesian tastes. Many of the dishes consist of watery or thick coconut-based curries, and many of those are incredibly spicy. Given the proximity to the ocean you’ll find plenty of seafood in the dishes, with perhaps the most traditional southern dish being “gaeng tai pla” – a very hot and pungent curry made with fermented fish.

he reason for its pungency is “tai pla” sauce, a combination of shrimp paste – a southern specialty – as well as various herbs and spices. The dish will come with vegetables and may or may not have coconut milk added to it. “Gaeng som”, known as Thai sour curry (the tamarind gives it the sourness) can also be hard on the unfamiliar palate. These spicy, strange-smelling curries are usually off the menu, so to speak, to foreigners due to their heat and sourness, but some southern dishes have been successfully exported into the mainstream of Thai cuisine. One of those is “gaeng matsaman” – a dish quite similar to some Indian curries due to the familiar taste of coriander. It’s often served with stewed beef and potatoes and is generally not too spicy. Another popular dish, comparable to the Indian biryani, is “khao mok”. Chicken or pork satay served with peanut sauce, also originates in the south.

Central Thai food also includes arguably Thailand’s most eaten dish in “phad krapow” – stir-fried meat with Thai holy basil cooked with soy sauce, chili and garlic. It also includes the composite dish, “phad pak ruam”, which is basically any number of stir-fried mixed vegetables served with or without meat.

PHAD KRAPOW Often, you’ll find people in this region eating the dish with an omelet (sometimes stuffed with ground pork) or simply with an egg on top. The food is accessible to most people, which is the reason it’s the staple cuisine served in tourist areas.

till, the center of the country can lay claim to perhaps Thailand’s most famous curries: “Gaeng kiew waan” – the sweet, rich, curry cooked with green chilis and Thai basil; “gaeng phanaeng” – an even richer curry (but very mild), cooked with special phanaeng curry paste, coconut milk and a mix of herbs and spices; “tom yam” – the famous hot and sour soup mixed with a redolent combination of healthy herbs and spices (with or without coconut milk).

Issarn is the area in the North-East of Thailand, a dry and hot part of the country influenced by Lao and Khmer cultures. Like the North of Thailand, in a traditional sense, they are sticky rice eaters, rather than jasmine rice eaters.

he food tends to be spicy and pungent, with “pla ra” (an acrid smelling fermented fish) finding its way into many of the curries. The region’s cuisine is sometimes said to be more simple than other region’s cuisines, perhaps a consequence of an arid landscape and a harsher climate.

Issarn’s greatest export might be green papaya salad (“somtam”), which is shredded unripe papaya, tomato, long beans, peanuts, lime, fish source, sugar, salt and chili, all bashed-up in a mortar. There are many variations of this dish, sometimes with the added taste of “pla ra”. Another Issarn favorite is “lap”. Originally a Lao dish, it’s minced meat (sometimes raw for the brave) flavored with herbs and spices and fish sauce. Again, there are many variations of the dish. The people of this region are also known culinary risk-takers (perhaps a force of necessity at times), eating snails, field rats, insects, lizards, frogs and geckos. Water buffalo is also eaten in this region more than in the rest of Thailand. At the same time the much more prosaic grilled pork and chicken, which you find all over the country, originates in Issarn.

Thai cuisine and fusion cuisine 泰国美食的融合 Many dishes in Thailand defy regional ancestry, and perhaps none as well known as “phad Thai”. It’s an omnipresent present street food throughout the nation, consisting of stir-fried noodles, meat (sometimes vegetarian), tofu, eggs, shallots, garlic, sugar, chili and garlic.

These days, you’ll find a handful of restaurants, mainly in Bangkok, serving Royal Thai Cuisine. Perhaps the most well-known of the dishes is “Kao Chae”, which was originally a dish of the Mon people. This is white rice that is soaked in scented cold water. It’s served with a variety of small mixed dishes you can add to the cool water (these days, Thais use crushed ice). The dish is renowned as the prandial prescription to a stiflingly hot summer day in Thailand. Adding savory to the sweet Thai crepes are popular, served with meringue and sweetened egg yolk, while you’ll find street vendors all over Thai cities selling pancakes filled with bananas and doused with sweet condensed milk. Food For You Cook specially for you

Chef Tutu, the owner chef of Food For You, is well-known for his attention to even the smallest detail of cooking, yet he loves to keep his dishes as simple as possible. He began his cooking experience at home when he was 8 but his professional experience took off in USA where he worked various F&B jobs, including a chef position. Chef Tutu now operates his own Food For You restaurant and it allows him to freely and creatively bring ingredients together with love – just like how he would cook for his family. The open-air Thai wooden house is surrounded by lush garden, giving the restaurant a cozy and homely atmosphere, but the real highlight is Chef Tutu’s original fusion Thai cuisine. His Mixed Spring Rolls were a delightful start and they were served along with Thai style salmon salad. Main dishes showcase various meat and the chef’s refined cooking skill. Crispy duck with honey sauce may look simple but to cook the duck so perfectly is harder than you think. Thai herbal chicken highlights his knowledge on Thai herbs and spices while stir-fried beef tenderloin with special house sauce, stir-fried seafood with crispy holy basil, and Crab soup really shine a spotlight on the ingredients. Just like its name says, Food For You pays careful attention to everything requires for a great dining experience, so feel at home and enjoy delicious dishes cooked specially ‘for you’.
