eal love is akin to getting married, having babies, or even getting a dog. Many people have some romantic fantasy about all these things without looking at the work involved or the responsibility or the commitment required. Some think more about the DJ they want at the wedding, the gurgling and happy baby, or the fun-loving puppy. They don’t think about how to live with a person every day, deal with a colicky newborn, or manage a “mouthy” puppy who keeps eating the sofa.

You must help each other fulfill your hopes and dreams as individuals and as a couple. Figure out what you‘ve always wanted to do— and do it. Find out what your partner wants in life and out of life. It is important that you figure this out early on.

. To find the right person, be the right person. Before you get back into a relationship, build your life. Finish your unfinished business. Become objective about what went wrong in your last relationship, and in the relationships before that. Do a relationship inventory and a life inventory. You must discover the patterns and habits that torpedoed previous relationships before you get into a new one. If you‘re in a relationship and trying to salvage or save it, you—both of you—must figure out and heal that which has been hurting you and your relationship.

Valentines Day isn‘t just for couples anymore

ebruary 14 is Saint Valentine’s Day that is celebrated all around the world. It was originally a Christian ritual to celebrate two martyrs called Valentine. The first St. Valentine lived in 3rd century Roma. He was beheaded by the Roman Emperor Claudius II for performing Christian wedding ceremonies instead of worshipping the 12 Roman gods. While imprisoned, he fell in love with his jailor’s youngest daughter whose vision he helped restore after being blind. Christians started celebrating love to their partners in the 18th century.

he day has many rituals. People exchange greeting cards, flowers and chocolate along with other expensive gifts. The heart symbol was started by St. Valentine himself who cut the shape from parchment and gave it to soldiers. lthough it is usually celebrated among lovers, the day is for all types of love. It can be the love you have for your family and friends. You could also give them presents and express your gratitude for their continued affection and support. You can even use it to express the love you have for yourself. Make it an excuse to pamper yourself and perhaps treat yourself to something you thought too extravagant.

t’s true that Valentine’s Day is not always a happy occasion to many. For one thing, single people are often depressed around this holiday. They feel less than complete because they haven’t the validation of a partner. And even with couples, it can create much friction. The day is romanticized in an almost ridiculous fashion. The expectations are too high and therefore disappointment is a very common occurrence. Some of those advocating against the holiday only do it to cover up their anxiety and insecurity.

t’s true that the holiday has been commercialized and has lost some of the meaning. However, I believe we still need Valentine’s Day. It’s so easy to get caught up with daily pressures of life. We often need some excuse or another to force ourselves to take a step back to breathe and let loose. If you don’t like the rituals of the day, stick to the real meaning.

o not get caught up with the hype. Use it as a day to celebrate the love you have in your life. Tell your lover and partner just how much they mean to you. Let all those who are close to you realize how special they really are. Don’t let commercialism rob you of a bit of happiness.

Parm-Risotto

with Roast Shrimp

GOODFOOD Parmesan Risotto with Roasted Shrimp Serves 6 1 pound large shrimp 1 tablespoon olive oil 1/2 teaspoon paprika Salt and freshly ground black pepper 8 cups chicken broth 2 tablespoons unsalted butter 1 small white onion, diced 4 cloves garlic, minced 2 cups arborio rice 1/2 cup white wine 1 1/2 cups grated Parmesan cheese 1 cup finely chopped Italian parsley, divided Heat the oven to 400°F. Rinse the shrimp and pat them very dry. Toss them with olive oil and then the paprika and a generous quantity of salt and pepper. Spread them in a baking dish and return them to the refrigerator. Warm the broth in a saucepan set over low heat. In a separate Dutch oven or wide, deep sauté pan, melt the butter over medium heat. Add the onion and garlic, and cook until they are soft and beginning to brown around the edges, 2 to 3 minutes. Add the rice and stir thoroughly to make sure it is coated with the butter and onions. Cook the rice for an additional 1 to 2 minutes. Deglaze the pan with the white wine, stirring and scraping the pan until the wine has evaporated. Begin incrementally adding the warm broth one ladle at a time, stirring frequently. Wait to add another ladle until the liquid has been almost completely absorbed by the rice. This gradual addition of liquid is key to getting the rice to release its starch and create its own delicious sauce, so don‘t rush this step. If the broth is evaporating very quickly, or the rice is boiling hard, turn the heat down so you just see a gentle simmer and occasional plop.

DEVELOPED BY EARLY BAHAMIAN SETTLERS, KEY LIME PIE APPEARS TO HAVE BEEN AROUND FOR MORE THAN 100 YEARS. DEBATING THE HISTORY, THOUGH, IS CHILD’S PLAY COMPARED TO THE ARGUMENTS THAT CAN ERUPT OVER THE MECHANICS OF THE PIE.

Although this dish was made for a romantic couple‘s lunch, feel free to invite your friend‘s over to enjoy the festivities! For a special side, enjoy a mixed green salad and finish the meal with a fruity dessert such as peach crumble or key-lime pie! Expect this stage to take about 18 minutes, and to add most of the broth.

OPINIONS DIFFER ON WHETHER IT SHOULD CONTAIN EGGS OR EVEN IF IT SHOULD BE BAKED—AND THAT’S JUST FOR THE FILLING! YOU COULD PROBABLY INCITE A RIOT DISCUSSING KEY LIME PIE‘S TOPPING AND CRUST. SHOULD THE TOPPING BE MADE OF WHIPPED CREAM OR MERINGUE? DOES IT CALL FOR A GRAHAM CRACKER CRUST OR A PASTRY CRUST? KEY LIME PIE IS NEVER GREEN, BUT RATHER A NATURAL CREAMY YELLOW. IT’S ALWAYS MADE FROM KEY LIMES NOT THE PERSIAN VARIETY.

Begin tasting the rice after about 13 minutes to gauge how far it has cooked. The risotto is ready when the rice is still a bit chewy, and the dish has the consistency of thick porridge. In the last 5 minutes of cooking the risotto, put the pan of prepared shrimp in the oven. Bake for 5 minutes or until the shrimp are pink. When the risotto is ready, turn off the heat and stir in the Parmesan and about 1/2 cup chopped parsley. Taste and add salt and pepper as needed. Serve immediately, spreading risotto in pasta bowls and topping with shrimp and a sprinkle of chopped parsley.
