Impacting knowledge with a difference Interview by JAMILA DAUDA FREDA

Introduction I am from Kubau Local Government Areaof Kaduna State. I was born in Anchau. I and my siblings were raised by relatives in Kaduna because at that time, the notion of ‘kunya’ and the bond of being brothers’ keepers were strong. My dad being a civil servant and my granddad, a missionary, exposed us to different cultures within and outside Nigeria. This experience has helped me understand the dynamics of interpersonal relations from a young age and to withstand the challenges of being a lecturer and coordinator of the Gender Policy Unit in my place of work, Ahmadu Bello University, Zaria.

Educational background I had four years of primary education at Baptist School, Kawo, Kaduna and completed the rest at Anchau Takalafiya, Kubau LGA. I was among the pioneer students of Government Girls Science Secondary School, Soba.

I completed my A-level (IJMB) at College of Arts and Science in 1974. My journey to ABU, Zaria transformed me into a science educator and a geographer.

Career At a very tender age, my great uncle, Professor Ishaya Audu, would visit and give us chocolate as incentive to ‘read hard’ for admission into ABU. My dad taught me how to read and write in English before I began primary one and my grand-dad, ‘Ajami da Larabci da Hausa’ (Arabic and Hausa). During my training at CAS, Zaria,the determination of all my classmates to excel motivated our positive learning attitudes.

And that was the foundation of my journey to academia. I am an Associate Professor of Science Education; I conduct research and supervise students’ projects, theses, and dissertations at undergraduate and post-graduate levels.

My fascination with physical environment and quest to understand the mysteries of natural phenomena lead to my constant visits to odd locations in search of photographs. That explains the geography in me.

As for the Science in me, I had

no problem with mathematics, comprehending events and processes in the universe. I draw lots of maps from remotely sensed data and assist students bridge gaps between digital and analogous ones. Specifically, I task myself to update.

What was growing up like Very exciting! We visited friends’ homes, ate and played around without being policed. My sister and I have trekked several times from Hayin Banki to Unguwar Sarki, a part of Arewa House just to pluck mangoes; Unguwar Rimi to taste wild berries and old Kawo airport to watch planes ascend and descend. We were also fascinated by how the Gwari women carried luggage on their shoulders. We loved waving at Sardauna when he returned from trips and participating at march past at the Race Course during celebrations. When we attend Islamiyya in the evenings, we follow our cousins to Sunday schools on Sundays. I have also climbed trees, rugged hills, chased monkeys, milked cows and rode horses at Anchau. The sky was my limit then! However, whenever we got naughty, we had nowhere to hide; uncles, aunts, other family members disciplined us.

It is recommended to move to a shady or air-conditioned area and remove tight clothing.

Go local with Benue’s Okoho soup

enue state is i the h food f db basket k off the h nation i and they are known to have many delicacies, Okoho which is peculiar for Idoma is one. It is a soup made from the Okoho stick which is very slimy after preparation. It is usually prepared with fish, meat etc depending on one’s preference and best served with pounded yam (aka Onihi). It can also be eaten with semolina, eba and yam floor. This soup is usually prepared without the use of oil. It is the most respected and demanded food at Idoma events such as traditional weddings, burial ceremonies, birthdays and other festivities. Okoho soup is highly medicinal and also known for its ability to aid digestion.

Recipes and steps 1 medium size stick or stem of Okoho plant - Dried fish (medium size) preferably dried cat fish - Seeds of fresh pepper (tarodo) - Locust beans 2 balls of 2 varieties (dawadawa and iru) - Egusi (one cup) - Onions (one medium size) - A pinch of crayfish - 2 maggi cubes for seasoning.

- ¼ kilo of beef or dried bush meat.

- Salt

Cooking C ki steps: t 1. Wash and peel the okoho stem into very thin strands, wrap into a bunch and place in a medium size bowl of hot water to soak for about 15 minutes.

When the water has simmered a bit to be tolerable to the hand, start squeezing the sap from the strand until you achieve a very thick liquid from the strand.

Remove the strands from the liquid and store the liquid for the soup.

2. You parboil the beef or dried meat with the onions, salt and the ground pepper. When half way cooked, you add the ground locust beans and the dried fish to cook for about 15 minutes.

3. Prepare the egusi by blending till very smooth and add the crayfish to it. Thereafter, add very little water to make a very thick and stiff paste till you can see oil being produced. You may add a pinch of salt to the egusi mixture for taste.

4. Carefully drop small balls of this mixture into the boiling broth and cover to steam till they are firm to the touch.

5. You carefully remove the meat, egusi balls and fish and also carefully pour in the okoho sap and set the heat on low for about 10 minutes.

Add the meat, egusi and fish and stir briefly and set aside for the pounded yam and soup meal.

Note that because of its drawing nature, eating okoho soup may require some skill to properly enjoy it. It should never be eaten with a fork and knife!

A

ll mooncakes have two components - the crust and the filling - and the difference between baked mooncakes and snow-skin mooncakes is, you guess it, baked mooncakes are baked to cook the crust and give it a golden brown exterior, while the skin of snowskin mooncakes are made from sticky rice dough.

Making mooncakes is a precise science, and mooncake recipe is a traditional Chinese dessert, usually eaten during the midAutumn festival.

For the dough • Flour100g, all-purpose variety • Golden syrup 60g • Alkaline water1/2 tsp, • Vegetable oil 28g For the filling • Lotus seed paste 420g • Egg yolk, 6 each, salted • Rose-flavoured cooking wine 1tbsp For the egg wash • Egg yolk 1 • Egg white 2 tbsp Preparation FOR THE DOUGH To prepare the Chinese mooncake dough use a large bowl, mix the golden syrup, alkaline water and oil well. Sift in the flour.

Use a spatula to combine all the ingredients.

Don’t over stir. Knead into dough. Cover with film wrap and rest for 40 minutes.

Mix egg yolks with wine. If the salted egg yolks are homemade and freshly broken from the shells, you’ll see the egg whites turn opaque after mixing with the wine a few minutes later.

Wipe the yolks dry with kitchen paper. Cut each into two halves.

Set aside. Roll the lotus paste into a long tube.

Roll each portion into a ball sshape. Set aside and preheat the o oven to 180°C. FOR THE EGG WASH Whisk the egg yolk with the egg w white. Sift through a fine sieve.

FOR THE FILLING Divide the dough into 12 equal p portions. Roll each portion into a ssmall ball shape. Cover a dough p portion with a plastic film and roll iinto a thin disc. Then take a lotus p paste ball and poke a hole in the m middle with your finger.

Place the egg yolk inside and rroll and shape into a ball. Wrap a and seal the lotus paste ball with tthe dough disc.

Spray the mooncake mould a and place the stuffed mooncake iinto the mould.

Lightly press the mould handle, tthen remove the mooncake from tthe mould. Transfer the stuffed m mooncake onto a lined baking ttray.

Repeat this step to finish the remaining dough and lotus paste.

Bake in the preheated oven for about 10 to 12 minutes.

Brush the mooncakes with egg wash, at about five minutes, before removing from the oven.

Continue to bake until the pastry turns golden brown.

Remove from oven and leave to cool on a wire rack. Store in an air–tight container. The pastry will become soft and shiny in one or two days: the mooncake recipe is ready to be enjoyed.

Healthy and juicy Wheatgrass juice

heatgrass juice is an effective healer because it contains all minerals known to man, and vitamins A, B-complex, C, E, l and K. It is extremely rich in protein, and contains 17 amino acids - the building blocks of protein.

Wheatgrass juice contains up to 70% chlorophyll, which is an important blood builder. The juice contains crude chlorophyll (as opposed to pure) and can be taken orally and as a colon implant without side effects.

Steps: 1. When wheatgrass is ready to harvest (4-6 inches in height), the stalks are cut with a sharp scissors above the roots.

2. Use special extractors that resemble meat grinders. These are used to crush and grind wheatgrass and extract juice.

3. After this, the juice is bottled or flashfrozen.

4. If you prepare wheatgrass juice at home you can use a regular blender or a special wheatgrass juicer.

5. If you are using a blender, pulverize the grass. Then strain using a fine cloth or filter.

6. If you are just adding water, add more to mask the taste of the juice 7. Stevia (sweet herb) and agave (sweet plant syrup) are both natural sweeteners that do not contain glucose or fructose. You can use either, depending on your preference 8. Any citrus juice has a strong flavour and adding something like orange juice to wheatgrass juice can make a delicious drink.

9. Serve and enjoy a healthy drink!
