D

ambun shinkafa is a northern delicacy widely enjoyed by the northerners, which is gradually finding a space in the hearts of many outside the north. It gives something different from the everyday conventional rice dishes and takes very little effort to make. But with this recipe of dambun shinkafa, we’ve added something new to the mix with seafood to keep the dish nice and appetizing. Ingredients • 2 of cups rice, washed, strained and coarsely ground • 4 peppers, crushed • 1 onion, finely chopped • 2 handfuls of spinach or moringa leaves • ½ cup of groundnut paste • Assorted vegetables (carrots, peas, etc) • Seasoning cubes

container or pot and combine all other ingredients with seasoning to taste. Return the rice to the fire and steam once again until it is nice and fragrant and the seafood is well cooked. Serve while hot and you can be sure that you’ll be going back for a second portion. With additional information from the internet

Agbalumo sorbet

ith agbalumo in season, it is only right to seize the opportunity aand enjoy it before it ddisappears again. Here, w we’re sharing a simple yet ta tasty recipe of agbalumo ssorbet to enjoy on a hot dday or as a treat. Ingredients • Agbalumo

Mint (optional) Sugar to taste ½ cup of water

Directions Pit and spoon out the flesh of the agbalumo and set aside. In a small pot, boil the sugar and water together until sugar dissolves to form a syrup.

When the syrup has cooled, pulse the agbalumo, mint and syrup in a blender until thick and smooth. Transfer into a container and freeze for at least four hours before serving. Enjoy it alone or with the dessert of your choice.
