Many of the makers are local, and eight of them work on the premises. The extensive selection of work includes beautiful and unique ranges of jewellery made from a diverse range of materials, from gold and silver to felt and cellulose acetate. Prices start from £17. Antique display cabinets and warm décor provide a relaxed and comfortable atmosphere, allowing you to browse and try things on at your leisure. Sam and Jen, the owners, along with Cara and Holly, are all makers themselves. They are on hand to offer a friendly welcome and provide advice and suggestions, whether for yourself or for a special gift. Solo exhibitions and featured artists ensure a collection of work that changes regularly throughout the year,
while the on-site workshops enable bespoke commissions. Brass Monkeys also offers the opportunity to re-style old jewellery, working closely with customers to create a new and exciting piece. Dear diary Eating started early this holiday season for me at an event hosted at Sabai, the Thai restaurant. I had been told that a relatively new entertainer would be performing there. Although I was run ragged with work details relating to my Russian winter season tour schedule, recording my latest dance track for the Moscow clubs and publishing logistics and edits on my NYC based novel for 2013 release, I found the time, just a few hours and met my wife Karin en route from her office and we both went along to the evening. In our living and breathing city so many deals, opportunities and prospective projects are made available at these PR events and that is no word of a lie. Having said that, a lot of these get-togethers afford a chance to reconnect with faces and places that are mainstays of our social and business making fabric. The city’s circles grow and change and then every now and again the strong societal tides deposit familiar faces, after long lapses of time, back together under one roof or at certain celebrations. Brighton is funny in as much as, although it appears to be small (...as the saying loosely goes ‘some of the best cities are those you can tour easily on foot... end-to-end in an afternoon’), it contains all the chances, chancers and social dancers of any of its larger rivals. The evening also gifted us the equally pleasurable chance to catch-up with some long-time acquaintances and friends like Chris and Anita Ellison, Mike Holland and his partner, the owner of Hove’s Sunlounge, Gemma Garrett, Sabai’s amenable owner Brian, the always effervescent socialite and PR tigress... the flame-haired Stephanie St. James and her daughter Charlotte-Elizabeth who grows more beautiful every year, Igor, the Mendoza publishing duo-Mike and Jennifer were there too as was everybody’s favourite gentleman lenser, Graham Franks and entrepreneurs Jason Palmer and his spouse David Powell and of course, Ambrose Harcourt. There was a great deal of air kissing too between sips of wines and Champagne and mouthfuls of richly flavoured Thai noodles, jasmine rice, green curries, skewered spicy pork strips, satay-style chicken and crunchy battered vegetables. You get my delicious drift. Jenny Dee is the certain someone that we bundled up against the quickly darkening late autumn night to go and see. Jenny Dee is someone you might have already seen for yourself and will more than likely see again. Ms. Dee is a young, blonde, talented and outgoing easy-jazz singer who entertained guests on this evening and was as comfortable mingling with us as she was performing in the intimate surrounds for us. Her enthusiastic and very friendly manager, John Goosens aka Danny Hunter was on hand to fill us in on the progress of his talent, who has quickly become a much enjoyed entertaining fixture in the salons of the city’s best hotels and restaurants. Danny Hunter himself reached the giddy heights of the UK’s pop world back in the late 50’s and early 60’s as a heartthrob rock and roll act signed to HMV with a string of hits across the globe and he knows well enough how best to guide his charge’s talents to greater exposure. So now Ms. Dee’s destiny and more show biz experiences await her further afield in London and foreign cities. She should be very excited! November was also my birthday month and very briefly I would like to thank my close amigos, new and old who found the time in their own hectic lives and in this case, on a busy weekend, to come along to the Connaught Pub and Kitchens for a long afternoon and evening of noise, boys, girls and social whirls with a very nice, if not a bit boisterous, pub quiz for afters! I was charmed to bits too when the internationally well known author Julie Burchill offered the bar staff £100 to string some speakers into our reserved section of the rooms so that we might hear my new dance track ‘Daddy Cool’ and a track Julie brought along as well of her own lyrical creation. I was also in high admiration of the author when she removed her luscious brunette bun and wrapped the two hairpieces around both her wrists. Here we go again! On a sunny day in August, the first one came through – yes, the dreaded first press release about Christmas. Every year, the arrival of this first release gets earlier and earlier, and always brings out the Ebenezer Scrooge in me. All the commercial outlets in the country are starting to plan how they can make more money out of the coming festive season, scheming and plotting to make you part with your well-earned money. Bah humbug! From the time that first press release pings onto my screen, the floodgates are then open and they all pour through. Cosmetics, clothes, accessories, toys, gadgets, Christmas events, meals, parties etc etc. It’s all just one big commercial racket – a time to suck the consumer dry, all under the pretence of pertaining to celebrate a religious festival, which most people hardly relate to. I hate Christmas. Steady on, I hear you say. Are there any good things about this unique time of year? Well, I suppose so. As the winter nights get darker and colder, there is the thought of this special holiday break to look forward to. It is quite nice to get together with friends and colleagues you haven’t seen much of all year, to relax and enjoy the festive surroundings. Christmas decorations seem to be getting more and more stylish and sophisticated each year – it’s lovely to see the towns lit up in the dark December nights. I wonder if that Santa will be out singing carols in Montague Street in Worthing this year? Always cheering to hear those lovely songs in the cold night air. Perhaps I might send some cards this year. Perhaps to people I’ve lost touch with – maybe pick up a friendship again. It really will be good to get together with my family this Christmas. We are all so spread out throughout the year, so I’m looking forward to seeing them all – actually I can’t wait. I must try and get some good presents this year – you don’t have to spend too much to let someone know how much you care. It will be fun going shopping and it’s exciting if you hit on the right gift for someone – it gives you a warm feeling. Actually... I love Christmas..
Now then, guys and girls Most Absolute readers will remember the larger-than-life DJ and TV presenter Jimmy Saville, who passed away last month. Love him or hate him, you couldn’t ignore him. I remember how much I enjoyed his show Jim’ll Fix It, where he enabled children to realise their dreams. He seemed to get genuine pleasure from organising these special treats for wide-eyed kids, and gave so much pleasure to many people. The virtuoso violinist Nigel Kennedy made his first television appearance on the show, and has been thrilling us with his talent ever since. Jimmy worked as a porter for many years at Leeds Infirmary, and was heavily involved in charity work all his life. He was one of a kind and definitely a great British eccentric. ALBION UPDATE The Food and drinks Awards are being held at the Amex Stadium in January 2012
Paul Rogers, former Albion captain and Head of Commercial Services at the American Express Community Stadium, gives us an update on the latest events and developments at the stadium
W
e are finally getting back to the traditional Saturday afternoon match with 3 o’clock kick-offs and are back to our winning ways with a solid 2-0 win against Barnsley last month. The npower Championship this season is a much tougher proposition than League One, with most of the teams containing players that have played at a higher level. But our players are certainly rising to the challenge being helped enormously by the sell-out crowds at the Amex. The noise generated by the home fans inside the stadium has been tremendous and long may it continue. We have received very positive reviews from the visiting clubs too; the opening of the concourses post match has been a huge success with home and away supporters circulating throughout the stadium. We also hosted our first international match when England under-19s took on Denmark, and a near 17,000 strong crowd saw England win 1-0 with West Ham United striker Rob Hall scoring the decisive goal. We were also able to showcase the 1901 Club with the hospitality packages on offer in the Bupa Lounge where we had over 400 diners. We had former Albion players Gary Chivers hosting the evening and were
delighted with how it went. We have regular ex-players hosting the 1901 Club lounges on match days including Andy Rollings, Kerry Mayo, George Parris and Bob Booker who has performed a number of roles within the football club and it is great to have them on board. We all watch the game and sit there very envious of the magnificent facilities the players have. Our events team have had a very busy period with a number of high profile events taking place with over 5000 people attending the Brighton Baby Expo on Sunday 13th, we also had the launch of the brand new Range Rover Evoque hosted by Caffyns with the vehicles showcased in our concourse areas. The Amex also hosted the Young Sussex Chef of the Year competition in anticipation of the Sussex Food and Drinks Awards being held at the stadium in January. Six local young chefs took part and will eagerly await the outcome in January. We have also hosted a photoshoot for Profile, one of our lounge sponsors who dressed Albion skipper Gordon Greer as well as Will Hoskins and Romain Vincelot in a range of their clothing.

Christmas Dining Wow your guests and be creative this Christmas by designing a table display fit for a king. These useful tips from interior design experts will help give your table that added wow factor when guests enter your dining room
Be Artistic (left) Originality when deciding upon the style of table your are creating for Christmas, is always a good thing to bear in mind. Think of your table as a blank canvas; you can create on it whatever style you wish. So try to come up with some quirky and notbeen-seen-before ideas. We love this white and black table theme (pictured) using rope to tie the plates and cutlery together, as if they are presents. Colour Theme (above) It is always a good idea to choose a colour theme for your table display and then stick to it. Too many colours can look messy and old fashioned. A good tip to remember is, if it makes your eyes go everywhere too fast, it is confusing; it should be easy on the eye. Also, select a colour that will blend well with your existing colour dĂŠcor of the dining room. Statement Pieces (right) Having a statement piece either in the centre of the table or several smaller statement pieces, will give you something to work around. Either place it down as your first item (or items), or alternatively just bear it in mind when designing your table and then place it down as the final touch to your exquisite table (just like you did when you placed your fairy on the Christmas tree recently)!

Power of the Iconic red lip this Christmas If there’s one thing every woman should have in their make-up bag, it’s a classic red lipstick especially this party season. For centuries, women have been painting their lips red to enhance their appeal; a practice that dates back as far as the ancient Egyptians. Some of the boldest, most beautiful women in Hollywood have used red lipstick to make their own unique statement, and now you can too. It’s official! A group of scientists at Manchester University found that men notice lips far more than other features on the face. Scientists used eye-tracking software to show that in ten seconds, men will spend more than half of that time staring at a woman’s lips. Geoff Beattie, who led the investigation says “Our research suggests that red lips and perceived attractiveness are still inextricably linked, with red lipstick the most powerful attractor, and one that significantly increases visual fixation”. The study also showed that there is little discrimination between full-mouthed and thin-lipped girls in regards to make-up, as those who wear lipstick were considered more attractive than those who did not. So there you have it - whether you have very fine, bee-stung, rosebud or downright pneumatic lips, everyone wins. By simply changing your lipstick shade, you may not only give your face a lift, but your pulling power too, this Christmas!
❅ Follow these simple rules to a perfect pout and go grab some mistletoe! 1. If your lips are even slightly chapped, gently exfoliate with a gentle sugar scrub to make them smooth and flexible. Just mix a dash of olive oil with a pinch of brown sugar and dab on lips, massage for a minute. Then, take a damp face cloth and gently rub back and forth on the lips for sensuously smooth skin. 2. Before applying lipstick, blot lips with a tissue to remove any lip balm or moisturiser, as the oil will stop lipstick from sticking. 3. Pick a formulation that looks moist but not super-glossy. Lipsticks that are moisturising and creamy will glide on easily. 4. If you’re fair, a classic red is best. Brick flatters dark complexions, opt for orangey shades on olive or golden skin. Try mixing up your own shade of red, mix orange and dark pink together and have fun with it, discover your own signature colour!

5. Take your time. Trace your mouth with natural-coloured liner, then smudge. Follow with lipstick, define and enhance the curves by using a tiny brush for precision. 6. Prevent your lipstick from bleeding and creating creases around your mouth, by applying foundation and a bit of concealer to the edges of the lip line. Dust your lips with translucent powder to set, then re-apply a second coat. 7. Be sure to avoid going beyond your lip line, as this will look outdated and unnatural. Tone everything else down. What to do about gaps in your smile? David Letterman has one. So does Chris Rock. But, for most people, there’s nothing funny about having a gap-toothed smile. When your teeth have wide spaces between them, you’ll find yourself embarrassed to talk, laugh, or enjoy life the way you should. A natural, healthy looking smile Gaps can occur between any of your teeth, on both the top and bottom rows. They’re usually genetic, although they can also occur because of injury. Gaps can be quite embarrassing; they are, rightly or wrongly often associated with poor dental hygiene. Aside from being aesthetically unappealing, gaps between teeth are also a breeding ground for bacteria, and can be the precursor to a host of dental problems, like gingivitis and cavities. There are numerous easy, painless, and quick ways to repair a gap-toothed smile. The most popular method I use in my two practices is porcelain veneers - thin shells of ceramic that can close the gaps between your teeth. Porcelain veneers: Porcelain is an easy solution. They look and feel very much like real teeth, and they can be used to correct a variety of smile problems cracks, chips, discolouration and gaps. You can close those gaps in about a week, over the course of two dental appointments.

The porcelain veneers are permanently attached to the front surface of your teeth with special dental cement. Porcelain veneers are custom-created from a model of your mouth, and custom-coloured to match your natural teeth. Once the veneers are applied, they are permanent, and you treat them as you would your natural teeth. Porcelain veneers cover the gaps between your teeth and you will be able to smile with confidence.

O HO HO! It’s Christmas time, the most wonderful time of the year. Unfortunately, it can also be the time of year to plump up, get toxic and become exhausted. So how can we have a joyful season while staying healthy physically and emotionally? Use sugar alternatives in your baking Sugar is a toxin that creates incredible imbalances, and is the number one problem. It causes a whole host of illnesses including diabetes. We have so many alternatives these days which make delicious sweetening for our food without the side effects simple. Here are a few possibilities: Date syrup or date sugar (not sugar at all) is made from dates, so it contains all the vitamins, minerals and fibre of the fruit. Xylitol is a widely approved sweetener; even people with diabetes can put this on their healthy food list since it doesn’t create a sugar intolerance for people with diabetes. The best part is that it is actually known to reduce the incidence of tooth decay and offers protection against cavities.
“Coconut oil is a delicious and healthy oil. It`s been shown to protect against or eliminate numerous diseases, including heart disease - a problem it once had an undeserved reputation for creating.” Stevia is a South American herb that has been used as a sweetener by the Guarani Indians of Paraguay for hundreds of years. It has a delicious and refreshing taste that can be 30 times sweeter than sugar. Stevia is caloriefree and doesn’t upset blood sugar levels. In fact, it can actually assist in regulating blood-sugar levels. Hydrate Water and herbal tea will take up space and fill you up, lessening the desire for more food and too many holiday drinks. It is vital that when we are indulging in alcohol that we fully hydrate ourselves, since drinking impacts our kidneys. Drinking one pint of water for each beverage will help you be aware of how many you are knocking back so you can still feel jolly the next day.
Graze, don’t gorge People who eat little and often throughout the day are more likely to lose weight without hunger than people who eat all at one or two sittings. Having healthy snacks, such as fruit or chestnuts (not mince pies), in between meals is a good way to keep from becoming hungry and overeating. This will also keep your blood sugar levels even so you have more energy. Use coconut oil Another easy tip to add health to your holidays is to simply start using coconut oil as your primary cooking oil, and consume coconut oil liberally each day. Coconut oil is a delicious and healthy oil. It`s been shown to protect against or eliminate numerous diseases, including heart disease - a problem it once had an undeserved reputation for creating. Coconut oil is known to reduce threats to our immune system and aid in detoxification - which are two important keys to health. Because let`s face it, if you are going to succumb to eating junk or processed foods on occasions during the holidays, don`t you want to be sure your body can effectively remove the residues? Scent your home with essential oils Use essential oils to add a festive feeling to your home. Evergreen is emotionally grounding, harmonising, and elevating - perfect for the holidays, especially when family gets together. Holiday spices are stimulating and uplifting - and are considered aphrodisiacs, as well. Cinnamon is a holiday favorite that is available in several varieties. Clove bud has a warm sweet scent that works well by itself or combined with other spice or citrus oils for a holiday zing. Frankincense and myrrh are two of the famous gifts offered to the Christ child by the Three Wise Men. They are known to inspire the spirit and enhance meditation. Get some exercise Take a brisk walk when you get a few minutes. This is a great time of year to get bundled up and take a long walk in the countryside, or even to walk around the decorated city and do some shopping. Walking gets our heartbeats up and helps us to detoxify any extra holiday snacking. It also helps us to clear out emotional stress that may be felt this busy time of year.

VEGGIE DELIGHTS An alternative dish for your Christmas table, and some great vegetable side dishes bringing to life that seasonal favourite - Brussels sprouts
Parsnip, cranberr y & chestnut loaf A modern take on the nut loaf, this makes a great vegetarian centrepiece for Christmas Day or a special dinner Ingredients: 4 tbsp butter , plus a little extra for greasing 3 onions , chopped 15g pack sage , 6 leaves reserved, the rest shredded 200g pack cooked chestnuts 100g walnuts 100g breadcrumbs ½ tsp mace 1 egg, beaten 500g cranberries 175g caster sugar 550g parsnips, choose long, thin ones if you can, peeled then halved lengthways 1 tbsp honey Method: 1. Melt 1 tbsp butter in a large non-stick pan, add the onions and gently cook for 10-15 mins until very soft. Stir in the sage for 1 min, then tip into a large mixing bowl. Pulse the chestnuts in a food processor until chopped
into small bits, then tip these into the bowl with the onions and repeat with the walnuts. Now add the breadcrumbs, mace, beaten egg, 1 tsp salt and some pepper and mix everything together well. 2. Tip the cranberries and sugar into a pan and simmer for about 8-10 minutes over a high heat. The sugar will melt and cranberries will pop and become saucy - keep bubbling until sticky. Set aside to cool. 3. Grease a 900g loaf tin, line with a long strip of baking parchment that covers the bottom and two ends, then grease. 4. Bring a large pan of salted water to the boil, and boil the parsnips for 3½ minutes. Drain well. From the thinner ends, cut off lengths of parsnip that fit widthways across the bottom of your loaf tin. Keep going until you have enough to snugly line the base of the tin. Roughly chop all leftover parsnip and mix into the nut mixture.
5. Heat oven to 180C/160C fan/gas 4. Mix the parsnip lengths with 1 more tbsp butter and the honey to coat, then fit them into the tin. Top with ¹/³ of the nut mixture - pack it down well and smooth the surface. Spread ¹/³ of the cranberry sauce on top, leaving a small gap around the edges. Top with the remaining nut mixture and pack down as before. Cover with foil then bake for 1 hour. 6. To serve, melt the remaining 2 tbsp butter in a small pan and sizzle the reserved sage leaves for a minute. Splash water into the remaining cooked cranberries until saucy. Loosen around the sides of the loaf with a round-bladed knife if you need, then turn out. Drizzle with the sage butter and leaves. Serve in slices with extra cranberry sauce.
Roasted shallots, Brussels sprouts, Ruby Red pomegranate and pan-fried hazelnuts Serves 4-6 Preparation time: 10-15 minutes Cooking time: 30 minutes Ingredients: 12 shallots, peeled 2 tbsp rapeseed oil Sea salt and freshly ground black pepper 500g Brussels sprouts 60g Butter 1 red skinned pomegranate seeded 50g chopped toasted hazelnuts

Method: 1. Preheat oven to 190°c gas mark 5 or 375°f. In an ovenproof dish toss the shallots in the rapeseed oil, to coat and season well with sea salt and black pepper. 2. Put dish into the oven and roast until the shallots are golden brown and tender for approximately for 20-25 minutes, stirring occasionally. 3. While the shallots are in the oven, trim the Brussels sprouts of any discoloured outer leaves and cook in boiling salted water for 7-10 minutes or until just soft, drain and plunge into cold water. Creamed Brussels Sprouts with Nutmeg
Serves 4 Preparation time: 5 minutes Cooking time: 15 minutes

Ingredients: 650g Chopin potatoes chopped into quar ters 6 rashers back bacon finely diced 250g Brussels Sprouts shredded Oil for fr ying Ground black pepper
Ingredients: 450g fresh sprouts, outer leaves and ends of stalks removed 30g butter 100ml double cream 1tsp grated nutmeg Small bunch fresh parsley, roughly chopped Black pepper
Method: 1. Place the potatoes on a large pan of water and bring to the boil then simmer for 8-10 minutes or until tender 2. Fr y the bacon in a fr ying pan with a dash of oil till crisp then remove with a slotted spoon and set aside. Then tip the shredded sprouts into the same pan and stir until wilted and tender. 3. Once the potatoes are done, drain them and roughly crush them with a potato masher or a fork. Tip in the bacon and potato into the fr ying pan with the sprouts, over a low heat season with black pepper and stir to combine making sure you incorporate any meaty bits from the bottom of the pan.
Method: 1. In a pan of boiling water simmer the sprouts for 8-10 minutes until just done. Drain then tip into a food processor. 2. Add the butter, cream, nutmeg and 他 of the parsley and season to taste. Whizz until semismooth so it still has some texture. 3. Check the seasoning then spoon into a warm serving dish and scatter with the remaining parsley and a good grind of black pepper. NB. You can also add some diced crisp bacon to this recipe if you like. Also, any leftover brussels sprouts can be used in bubble and squeak the next day.

Christmas Waltz Neil Geraghty discovers the spirit of Christmas past in magnificent Vienna
I
f any city could be described as a living Christmas card then it’s Vienna. The city simply wallows in nostalgia and on a recent visit there, it didn’t take me long to succumb to Vienna’s sentimental love for times gone by. I’d arrived on a breezy November’s evening and after checking into the wonderfully cosy Hotel Altstadt decided to take a stroll over to Vienna’s historic centre. This took me through the magnificent Hofburg Palace where drifts of autumn leaves were swirling around giant bronze equestrian statues and gilded copper domes were sparkling in the floodlights. As I walked down the palatial shopping street The Graben, I stumbled across Peterskirche whose elegant curved facade and onion domed towers make it one of the prettiest Baroque churches in Vienna. The doors were open and inside, forests of flickering candles were softly illuminating the sumptuously ornate interior. By coincidence, a free classical music concert was about to begin so I grabbed a seat on an embarrassingly creaky wooden pew and sat back to admire the beautiful church. Above me, a huge oval dome was covered with pastel frescoes of fluttering angels while to my left a delicate painting of a Madonna and child surrounded by a golden halo shimmered in

the candlelight. To complete the Christmas atmosphere the organ suddenly broke out into a tinkling festive sonata. After the concert I decided to visit Cafe Hawelka, one of Vienna’s best loved cafes. A delicious baking smell was wafting out of the kitchen and I asked one of the waiters what it was. He told me that the chefs were cooking traditional evening snacks called buchteln which are crispy dough balls, filled with apricot jam but I’d have to wait 20 minutes before they were ready. I ordered an einspänner, a black coffee topped with a mountain of whipped cream and settled back to soak in the atmosphere of this enchanting cafe. With its comfy red and white striped sofas, rickety pink marble tables and mellow lighting I could almost imagine Freud and Jung thrashing out their psychoanalytical theories a 100 years ago. After 20 minutes, like magic the waiter brought a plate of steaming buchteln to my table. Biting into one, I gasped as the piping hot jam sizzled on my tongue. They were absolutely delicious though, similar to the lightest fluffiest doughnuts you’ve ever tasted. Christmas is all about comfort food and in Vienna comfort food is second to none.

Out on the streets workmen on cranes were busily adding the final touches to the city’s Christmas decorations. Virtually every Baroque house in the city centre is festooned with stone carved garlands and cherubs so it’s only natural that Vienna’s Christmas decorations have a classical feel. This year, sparkling chandeliers are draped elegantly across the shopping streets providing a perfect counterfoil to Vienna’s magnificent St Stephen’s cathedral. It’s almost as if Vienna’s medieval stonemasons had Christmas on their mind when they built this Gothic masterpiece. The delicately tapering spire resembles a giant Christmas tree while its steeply pitched roof is covered in colourful patterned tiles giving the odd impression that the cathedral is covered in festive wrapping paper. Austria is a staunchly Catholic country and Vienna’s churches always display beautiful cribs. St Stephan’s is no exception and the softly lit interior is home to one of the country’s most enchanting examples. As erstwhile capital of the mighty Austro Hungarian Empire, Vienna is built on a truly imperial scale and is full of magnificent public spaces. These provide fabulous stage sets for Vienna’s Christmas markets which by mid November can be seen popping up all over the city. The markets are conveniently located near to all of Vienna’s main tourist sites and there’s
nothing better than strolling out of a palace or museum and refuelling with a steaming mug of spiced glühwein and a kartoffelpuffer (crispy potato rosti). Vienna’s largest Christmas market is held in front of the spectacular Neo Gothic town hall which at Christmas is decorated in glittering tiers of fairy lights. The festive backdrop is heightened by Vienna’s tallest Christmas tree which each year is donated by a different Austrian province, the honour falling to Burgenland this year. As you wander around Vienna you’ll find Christmas markets catering to all different tastes. One of the most traditional is held on the cobbled lanes of Spittelberg, one of Vienna’s most picturesque neighbourhoods which still retains much of its 17th Century village charm. Here you’ll find a treasure trove of hand made Christmas baubles and mouth watering arrays of lebekuchen and stollens. Spittelberg is also home to some of the most atmospheric eateries in the city. Look out for the beisls, the Austrian equivalent of Italian trattorias which serve up paprika spiced wursts, soups and schnitzels; heart warming food for a teeth chattering central European winter.

The star winter attractions in Vienna are the snowy white Lipizzaner stallions who prance and pirouette under the giant chandeliers of the Spanish Riding School conjuring up all the splendour of the long vanished Habsburg Empire. If you’re on the snow covered streets of Vienna at 2 o’clock in the morning in January, don’t be surprised if you stumble across ladies dressed in sparkling ball gowns tucking into hot dogs. They’ll have just left one

hree young chefs came out of the Amex Stadium kitchens victorious after what judges have described as the most exciting cook off yet seeking the Sussex Young Chef of the Year 2011/12. Six made it through a rigorous process of assessment and public voting to reach the cook off and were required to create a three-course meal in just 90 minutes using Sussex produce, which was judged by an expert panel chaired by Clive Beddall OBE. The three declared finalists are Craig Holden from The Mill House in Ashington, Paul Peach from The Horseguards Inn in Tillington and Rob Lightbody from Jeremy’s Restaurant at Borde Hill Gardens near Haywards Heath. They will all attend the Sussex Food & Drink Awards dinner and find out who will be Sussex Young Chef of the Year 2011/12 on 26th January, at the Amex Stadium, where a seven-course Sussex banquet will be served to 350 foodies and leaders in the industry, created by top chef Fred Tobin. Glen was visited by the national magazine’s mystery shopper some months ago and was awarded an unsurpassable 10 out of 10 for his knowledge, presentation and general helpfulness, beating all other Brighton electrical stores visited on the same day. Glen was eventually shortlisted from all winning entrants from the whole of the country and was invited, along with two other candidates in the category to the prestigious London final, where ERT magazine’s expert panel finally selected Glen as their top choice for 2011.

he Christmas tree has its dramas. Is it too large? Maybe it’s too small. Where is the fairy doll and the box of baubles? Damn it, the lights are not working and they were new last year. But of course in the end, the tree will be finished, decorated with glittering ornaments, lights, and topped with a star which, in our case, is held up high by a fairy doll. She has blue eyes, is over fifty years old and still looks good. From time to time my wife Beth will make her a new dress. At the bottom of the tree there will be the presents, parcels to be opened on Christmas day when children, and some adults, will try to guess what they have been given from the shape of the parcel. It’s not easy to wrap a scooter! The end of the year has been celebrated for centuries. The early Vikings marked the season with the lighting of great Yule logs to celebrate the triumph of light over darkness and the rebirth of the sun. The winter solstice is the darkest time of the year but the Vikings knew, as we do, that after the solstice each day would bring a little more light and the sun would grow warmer day by day. Yule logs in pre-Christian times were very important especially during the darkest days of the year when their burning gave essential warmth and would lift the spirit, a promise of better times. Evergreens, too, were a sign of life, when other trees were bare and brown and even the sun was dying, evergreens that bore berries, holly, ivy, mistletoe and laurel, were venerated. And what, I wonder, did the Ancients make of the Christmas Rose that miraculously flowers in the deep mid-winter? The Romans, a superstitious lot at the best of times, decked their halls with evergreens and nailed boughs of laurel to their door posts, laurel being a symbol of victory in the Roman world. Martin Luther has been credited with the creation of the Christmas tree. It is said that he was so moved by the sight of stars shining 72

Tim Parker discovers some of the best places in Sussex to find that special Christmas tree through fir trees on a winter’s night that he tried to reproduce the scene for his children by decking a fir tree with candles. Alas, for most of us living in towns and cities, light pollution is such that we rarely have the opportunity of seeing the heavens in all their glory. Christmas trees did not become popular in England until the 1840’s when Queen Victoria asked Prince Albert to decorate a tree for their children. Now Christmas trees are everywhere in towns, cities and villages. And in London’s Trafalgar Square there is always a great tree presented by the people of Norway. So, what about your tree? Who are you going to buy your tree from this year and what kind of tree are you going to choose? Well I have done some research both on your behalf and mine. First you need to decide what type of fir you want. It depends of course on what shape of fir you find most attractive but the following species are highly recommended: Noble Fir, Nordman Fir, Norway Spruce, and Frasers Fir. However, the most important consideration is to make sure your tree is freshly cut. Some trees are sold in pots; a nice idea but not always successful.

As to where you can find your perfect tree, well there are three retailers and growers that I can recommend, two in Brighton and one in Balcome. I would be happy with a tree purchased from any one of these specialists. Their prices are competitive and, crucially, the quality of their trees excellent and they are from Sussex First there is Johnny Woodford, a remarkable and interesting man who in addition to his Christmas tree business is a well known wood sculptor. He grows his own trees twelve miles north of Brighton but sells them from his cabin in Ovingdean. Turn north at St Dunstans on the Brighton seafront road and his cabin is the first building on the right. He will be open for business from 1st December and cuts his trees according to demand so you can be sure of new stock. Telephone 0777 0758393. My next choice is Jonny Anstead of the Hannover ChristmasTree Company. They sell locally grown trees of good quality and have a very good reputation. They also offer an excellent service: they sell the majority of their trees by email and offer a delivery service in the Brighton, Hove and Lewes areas. Additionally, they will collect your used tree after Twelfth Night, a real bonus. At weekends Hannover Christmas Trees can be found at the Hanover Community Centre. It is, of course quite a drive from Brighton but is well worth a visit. It’s a great place to explore: sixty acres of beautiful woodland set on the Sussex High Weald. Wilderness Wood is a family run enterprise with a fantastic collection of trees and it is one of those rare places where you can choose your own tree while it is still growing in the ground. From 1st December Wilderness Wood throws a Christmas festival. It’s magical and there is more to see and do than I can describe in this article. Maybe I will see you there. When I was eight the proper candles we had always used on our Christmas tree were, much to my disgust, replaced by a chain of electric bulbs, My father couldn’t get them to work so he told me to climb a step ladder of some nine feet to check the various bulbs. Near the top of the tree I replaced a green bulb. There was a bang and a crash and I landed in a heap on the floor. My father had forgotten to turn off the electricity. He picked me up, shook me, and cried “Don’t tell your mother.” A very Happy Christmas to you all!

o since my last column, which mentioned solar panels we have now heard the news that the Feed In Tariff (FITS) has been drastically changed. The amount paid back through the energy companies for each unit of electricity you generate through solar panels has effectively been halved. To be honest, I’m not surprised it has happened, as you only have to look at the history of FITS in other countries to see that it was inevitable that the tariff would be reduced. It will slow down the number of solar panel installations, but the market will pick up again - panels are becoming cheaper, installation will be cheaper and energy costs are still rising. A solar installation will pay back at a rate of 5%; even under the new rates, it’s still better than money in the bank. Plus this is only the very start in terms of the government encouraging home owners to invest in energy efficiency and energy production. Next Autumn, The Green Deal arrives, the basics of which provide funds to upgrade your home to be more energy efficient. The funds are borrowed against the potential savings in energy costs, and will be placed as a charge on your property. This will probably last 25 years, and if you move the purchaser takes on the charge. Whether it will all work or not it is difficult to say but the principle of upgrading your home to massively reduce energy bills is a good one, and one we have already embraced as architects. We have a brilliant software system in place at Yelo that allows us to survey a house, enter the results into an extensive database and create a bespoke home energy masterplan. The masterplan tells you exactly how your home is performing

When is family law ever out of the headlines?

rises in the adoption system and big money divorce settlements. There is never a dull moment. Behind the news stories lies the reality of grief, anger, and stress caused by the loss of a home, a relationship, and possibly contact with your children. The stakes don’t get much higher. The political and economic backdrop does not help: a slow, inflexible family court system; the Government’s determination to kill Legal Aid; a £2 billion budget cut for the Ministry of Justice. Around 18 months ago, the Government asked David Norgrove to chair an independent review panel to examine all aspects of the family justice system. The Review now recommends: • Overhauling the family justice system so that the professionals involved work together for the benefit of children and families. • Significantly reducing the time taken for cases where children may be taken into care. • Empowering families to make their own arrangements for their children when they separate with the use of the family court being a last resort. David Norgrove, in his previous life as a director for clothing at Marks & Spencer’s, was well positioned to declare the family justice system shabbily dressed, and in danger of coming apart at the seams. Agree with his recommendations or not, there are few who would challenge this view. Whilst David Norgrove was still in menswear, the Family Law Partners’ team knew that the family justice system was not fit for purpose.
