As we enter into the second month of 2012, I always think that this time of the year can be such an optimistic and upbeat period; there’s Spring on the horizon (and boy have we missed it), the evenings are getting longer (and hopefully a few degrees warmer), Brighton’s festivals are getting closer… and of course this year we have Olympic fever as well as the Queen’s celebrations for her Diamond Jubilee. So, all in all it looks like we are set for a few months of frolics and fun! And as we all know, our country needs it right now, so it couldn’t all happen at a better time. For some couples, this month may be especially special for them as they plan their weddings. For February, I am informed, is said to be one of the busiest months in the wedding industry, as brides and grooms-to-be ponder over all the exciting and beautiful items they will need for their big day. And with most weddings said to take place in the summer, now is their time. (Page 55) Bearing this in mind, we have put together a wedding section that we hope will inspire and help couples and families planning that extra special day. We discuss why orchids are such a popular choice for bouquets, and why traditional tiered cakes are fashionable once again. We also feature an article on favours. From jewellery to mini gumball machines and silver plated pens and wine stoppers, favours have become a big (and rather expensive) craze in our country. However, we scoured the shops and found that the more traditional and smaller offerings given as favours can actually be more special and sentimental for guests. We also discovered why the original favour of simply giving guests five sugared almonds wrapped in tulle nets, has such a lovely meaning. (Page 58) And whether you’re married, or single, Valentines Day is a great time to show that special person you care. Whether they know it’s from you or not, there are some lovely gifts available this year. From elegant and romantic to full-on Valentine’s tackiness we have put together a selection of ideas that we hope will suit all lovers (or soon-to-be lovers). (Page 36)

Peter Jarrette with Welcome to flirty February; the month of Laura Nixon mouth-to-mouth merriments. As we are all taking not-so-sneaky sidelong glances at members of all the sexes, you might well be interested in knowing of cosy places to do a spot of carnal canoodling this Valentines month. The wonderment that is Laura Nixon (best known to date as the Brighton-based UK Marilyn Monroe impersonator/performer) and her manager partner Sam Eddison have revealed the gem that is the city’s darkly sparkling new nightspot, The Jive Monkey at Number 5, Stein Street just on the ‘lip’ of Kemptown. Arranged over three floors, The Jive Monkey has all you need for an evening out; fabulous bar staff making top flight cocktails, soft corners to park with your paramour and friends. And upstairs the best of the city’s entertainers are crooning and carrying on for you through the night. I went along to the exciting opening not so long ago and was so pleased to see that a good swathe of the city’s social set had already caught on to the club and cabaret’s easy ambience. Lately too I’ve been part of the cast in the reality docu-com TV pilot show being filmed around our town, in London and soon some further afield locations, called The Wedding Experiment. The Wedding Experiment is the brainwave of both music producer Rob White (Hysteric Ego/Audio hijackers) and his fiancé, Absolute’s very own Fashionista Columnist, Natalie Wileman. Doubtless you will see us being filmed also soon at the glitzy opening of Bohemia, which by the way has already become the hottest, most sought after invite in town! With so much to do it’s our good fortune that the days are getting longer!

Enough is enough
Some years ago I used to get great pleasure from watching This Week, a BBC political talk show. Two old friends, former conservative MP Michael Portillo and Labour MP Diane Abbott used to share a small sofa together and discuss political issues of the day. Two very different people in every way, yet both intelligent and articulate, providing constructive comments and varying views in an entertaining way. It was good to watch them both, and I thoroughly enjoyed this refreshing and informative format, with two excellent players. In 2003, Diane took the decision to send her son to the private City of London School. Being a Labour MP, this understandably caused great controversy and criticism, as she was completely undermining all she stands for by taking this course. Some time prior to that, she made a comment at her local hospital about the unsuitability of “blonde, blue-eyed Finnish girls” as nurses at her local hospital, because they had “never met a black person before.” This was a terrible comment on several levels; first it shows ignorance of the breakdown of the people of Scandinavia, it is stereotyping, and, say a nurse had never seen a black person before – does this mean she wouldn’t, or couldn’t look after a black patient? Is Diane suggesting that black people need different care from white people? A massive faux pas on her part. She has also made other comments, one suggesting that taxi drivers don’t pick up black passengers. More recently, last month she let herself down by comments she made on twitter that “white people like to divide and rule.” Her defence was that she was referring to earlier colonial ways, but someone of her experience and intelligence should have realised that this comment would be taken on face value and not be acceptable. Criticism of these remarks has come from people of many ethnic backgrounds, and if a white MP had made a similar generalisation about black people, everyone - including Diane - would rightly be appalled. Her credibility now seems at an extremely low point and she appears to be doing an admirable job of showing she has a huge chip on her shoulder. The scourge of racism has recently been highlighted by the trial of two of the hideous racist thugs who cut short the life of a young student, Stephen Lawrence, because he was black. Racism issues have also been rife in sport, both on and off the field. As a country, we have always tried hard, and are still trying, to eradicate the cancer of racism in all its forms from our society. Diane Abbott’s comments have no place in this process. Personally, I am disappointed. I have always admired this bright, charismatic and energetic woman, who has been praised by many for her front bench performance, and has achieved so much in her life. But I, like many others, eventually have to say – enough is enough.

Just the thought that I can’t let anyone down. If I’m to complete this trip, it’s now or never. This is my time! I’m relatively young and fit, so I just can’t allow myself to fail. As uncomfortable and arduous as this is, I keep remembering that there are people who cope with much worse for all their lives. This is just a short amount of time and

It’s all dehydrated ration packs and tastes like boil-in-the-bag sawdust. My Christmas dinner on Christmas Day was dehydrated goulash. Lovely! Because it’s so cold we eat in the morning so we don’t have to stop. And we cook again at night when we stop to make camp. To keep energy

t’s the month of love and you might find yourself drawing little hearts on your letters or feeling your heart flutter as you look at your love. Perhaps this is also the month when all of us must think about our own hearts. Since heart disease is the number one killer on the planet, how can we love our hearts more to ensure our own health and well being? Nutrition to show your heart you care Adding in some key nutrients into our diet nurtures and supports our beloved heart. Cayenne is sometimes referred to as the ‘King of Herbs’ and is one of the most powerful heart-healthy substances. It strengthens, stimulates, and tones the heart, balances circulation and blood pressure, and calms palpitations. Along with cayenne, hawthorn is a favorite herb of the heart. Hawthorn is rich in flavonoids that protect small capillary vessels from free-radical damage. It normalizes blood pressure, lowers cholesterol and fat deposits in the liver and aorta and helps conditions such as angina, arrhythmia, arteriosclerosis, blood clots, and hypertension. Magnesium helps prevent heart attacks, regulates high blood pressure and helps ease heart arrhythmia, in addition to having a great many other vital health benefits. Thanks to today’s SAD diet and mineral depleted soils, it is estimated that anywhere from 80 to 95 percent of us are deficient in magnesium. CoQ10 is an essential primary heart protector while the mineral selenium is essential for the body’s natural production of CoQ10. It was noted over a half century ago that the mineral silicon was abundant in healthy hearts and deficient in diseased hearts and heart vessels. Silicon is responsible for both the strength and elasticity of cardiovascular tissue. It is a semiconductor that is involved in nervous system message transmissions and is likely important for the heart’s electrical functions.

Vitamin C induces the natural repair of the blood vessel wall in cardiovascular disease, which can lead to a halt in progression of vascular lesions. Traditionally used to treat a racing heart caused by nervous tension, longterm use of this herbal sedative may reduce the formation of clotting factors, lower total cholesterol and triglycerides, and strengthen the heart muscle. Motherwort is typically consumed as a prepared tea throughout the day. And last but certainly most exciting, cacao! That’s right, pure chocolate is a natural source of heart-healthy theobromine, and also contains the flavanol epicatechin, which improves blood vessel function. Raw chocolate is becoming increasingly popular, so this year treat your love (and your heart) to some chocolate in its most delectable and healthy form. Pump it up! Exercise is key to the wellbeing of your heart. Whatever form of exercise you choose, make sure to get the heart pumping at least a couple of times per week. Walking is one of the safest, most effective forms of exercise that will assist with successful weight loss and future weight, health and heart maintenance. This is because it is able to lower the low-density lipoprotein (LDL or otherwise known as bad) cholesterol and raise the high-density lipoprotein (HDL or good) cholesterol levels in the blood. Studies have shown that those who walk for an average of 30 to 60 minutes per day, have an almost 40% less chance of developing heart disease and cancer. Take a walk in nature and look for ways to walk rather than drive. Your heart will shower you with love and life! Forgive and Find the Love Everyone knows that being angry feels terrible. When we feel angry at someone, we get a tight feeling in our chest and body, and our minds aren’t free. Feeling angry at someone who cuts you off when you are driving is bad enough. Long term, chronic anger can ruin people’s lives, not to mention their precious hearts. Feeling angry for something that happened in childhood can literally make people prisoners of their own emotions. If we have people in our lives who we feel resentful of, the time is now to work through these emotions and take responsibility for our lives and our health. By continually forgiving our parents, those we feel have treated us poorly, and most importantly ourselves, our lives become freer and our hearts calmer. Love yourself and your heart forgive!

ime out on the slopes can wreak such havoc on the hair. The combination of cold temperatures, wind and harsh sun rays weaken and even damage the structure of the hair and the effects can be seen and felt sometimes almost immediately. Throw into this the vanity of also trying to look as cool as possible, all the while juggling various pieces of headgear along with obligatory eyewear and ski-chic may seem like an unattainable concept. But there are steps you can take to minimise something of a hair disaster. It does require a little more time and effort but your hair will thank you for it in the long run. Problems: - The cold air dehydrates hair, and can leave it brittle, frizzy and unmanageable. - The temptation to put on and take off microfleeces during breaks can add further trouble by making the hair even more static. - Wearing a hat or helmet for long periods of time traps heat and sweat so the hair constantly feels damp and greasy. Not ideal après-ski hair. - Constant goggle-tugging can trap hairs between the straps and rip them apart if you’re not careful. This weakens the hair and can lead to dreaded split ends.
Solutions: The key to tackling the first three points is to cleanse and reintroduce moisture back into the hair by washing it with a moisturising or strengthening shampoo and conditioner on a daily basis. Even those with fine hair should condition to ensure that moisture levels are topped up – just use a conditioner specifically formulated for fine hair so it doesn’t feel heavy. I’d also highly recommend a concentrated hair treatment every couple of days to add a surge of moisture and nourishment to the hair. Applying some Electric Intensive Treatment Masque to the lengths and ends and leaving for 10 minutes will ensure your hair is sufficiently hydrated and protected from the elements until the next treatment. When brushing the hair, make sure you do so as gently as possible with an appropriate brush. It is also important to curb flyaways which could get caught up between helmet and goggle straps. Fix any stray hairs into place with a dose of L’Oreal Professionnel Fix Anti-Frizz Spray.. A simple headband should do the trick or if you have time and the know-how, why not French plait the shorter layers so hair stays in place for longer. This also means you’ll have one less accessory to manoeuvre around. If you condition your hair properly, there’s no reason you can’t show it off by leaving it down. Plus, it keeps the neck warm and cosy whilst the winds blow around you. All tied up: This is practical on all levels as it keeps most of the hair away from the face altogether and makes less of a statement if your hair isn’t at its best. Wear it low slung so there is no interference with hats, helmets or goggles. Wrapping the ponytail into a bun will also help to reduce kinks and knots afterwards. FINDING YOUR WAY IN THE DARK Sandy Bone, Hygienist at Marina Dentalcare explains the importance of using your senses to help with the well being of your mouth
L
ast month I was trying to introduce the idea that self awareness was vitally important for your ability to maintain your own dental health, and that when we talk about techniques and ways of self help in oral hygiene, these things can only be effective if we can raise your awareness and help you apply these ideas. Raising your own awareness of your ability to maintain your mouth in a satisfactory plaque free state is not easy. How do you do it? Which one of your senses is the most effective? Yesterday, a patient said to me “I guess you are going to put that dye all over my teeth again, and I shall be amazed at how much I have not achieved, there will be stain (plaque) everywhere!” He then went on to explain that he had looked that every morning in the bathroom mirror, and everything looked fine. But somehow, when I looked it was not! He found this depressing and disappointing, as he was trying very hard to get it right. I pointed out to him that in the surgery we use a very powerful light to see clearly into the mouth as it is pitch dark in there. I, for one, can see nothing without said light, and I would be surprised thatm even with the best intention in the world, he probably would not be able to see much ether! Just to add to the difficulties the colour of plaque appears to be the same as the tooth. This is why we use a dye to show both our patients and ourselves what is clearly there rather than just guessing. The added advantage of the dye is that it differentiates between recent deposit of plaque and older more damaging deposits. Your sense of sight is in fact a very limited way for you to raise your awareness. It can be helpful if you have a magnifying mirror with a very good light shining into the mouth (a south facing widow
sill on a very bright day will help) and you use your fingers to pull the lips away from the side of your teeth. Remember to focus your awareness (or attention) onto the millimetre of tooth and gum that adjoin one another. But even with all of these things in place, it can be difficult to see and interpret what you can see. So sight is a very limited way of improving your plaque awareness,
“...Don’t just say that feels good, actually feel it! Be more specific and try to feel accurately the curves and shape of your teeth...” A better way is to develop your sense of awareness of feeling or touch. Try this: using your tongue find the last tooth on the bottom of your mouth on the right hand side. Make that the left hand side if you clean your teeth with your left hand. Find the gum and find the side of the tooth. Can you distinguish between the two ? Clean enamel is very smooth and there is a definite line of gum end that you should be able to distinguish. If you cannot, try to make sure that your toothbrush goes exactly to that area. Remember to feel the toothbrush position, and when you are doing it, be specific. Then try to feel again. With practice you will be able to feel if you have achieved a plaque free status in that difficult area. Still finding it in the dark? Try this: assuming that you are not wearing any crowns on your front teeth, find on the upper front teeth numbers 1,
2, 3 counting from the midline. If you are right handed on the right hand side, vice versa for the left handed. Does the area of tooth that is closest to the biting tip feel any different to the area in between or closer to the gum? Again you should feel an allover very smooth feel if plaque free. but it will feel fluffy or furry if there is visible plaque in that position. (If you can feel it with the above mentioned light it may be possible for you to spot it now but still difficult.). Again, target this area with your toothbrush and see if you can feel a difference. It may be helpful on those three teeth to use your toothbrush in a vertical position so that you can accommodate the outer curve of the teeth more effectively. But perhaps the most effective time to do this test is when you have just had your teeth professionally cleaned. Don’t just say that feels good, actually feel it! Be more specific and try to feel accurately the curves and shape of your teeth and locate difficult teeth that may be out of alignment, and the extra curves that they present you with. This exercise will help you to choose your tools for the job in hand as it will rapidly become obvious that a small, often single tufted toothbrush, will give you the results that you would like. Why would you like those results? Mainly because achieving them will give you the smile that you want, the ability to use that smile with confidence, make it much more likely that you will stay pain free and and save you a small fortune on dental fees! O
ne of the country’s longest serving crew members, Lifeboat Coxswain Peter Huxtable MBE has retired from the Shoreham Harbour Lifeboat after 43 years of service to the station. During that period Peter, aged 60, has been involved in the rescue of 449 people. “During my period on the lifeboat I have seen many changes. I remember the older boats that went at the speed of 9 knot’s with very little technical back up. Now we have the latest technology on the station’s new Tamar lifeboat that has a speed of 25 knots,” he said. Family traditions were very strong also in the early days, as Shoreham was a thriving fishing port, and Peter himself was a fisherman. Many of the crew then were sons following on fathers and grandfathers. Sadly, with
the decline of the fishing industry in the region things have changed. “We are lucky that we have new young crew members living in the region not associated with fishing who are keen to learn while being able to take the new technological advances on board.” Peter will still be helping out at the station as a shore helper. There is also a massive photo archive that needs to be collated and updated with many images provided by past crew members that Peter is keen to put on file. “That’s going to keep me busy,” he added with a smile. In his other role Peter is Manager of Monteum Fishing Company at Shoreham who have a new Buccaneer Fishing Boat being delivered in the next few weeks, “Exciting times for all,” he said. ABSOLUTE

All change at the Dyke Family friendly and pizza passion arrives from The Stoneham

f you’ve been anywhere near Portland Road, Hove, in the last twelve months you’ll have noticed that it’s become very chic and funky with The Stoneham Pub leading the hurry to hip. It’s full of buggied up yummy mummies and the sort of crowd you’d normally expect to find eating at our city centre hotspots – maybe it’s their famous homemade rustic pizzas that keep the crowds smiling and coming back for more. Apparently, they’re made to a secret Sicilian recipe that’s kept locked in the safe. Whether that’s true or not, they’re delicious, huge and importantly in these days of culinary austerity, amazing value for money. Well, just to show that you can never get too much of a good thing, the Stoneham concept is migrating up the hill to the Dyke Pub and Kitchen on Dyke Road. The move places the Dyke full square in the market for families, which is pretty sensible considering that there are six schools within a two minute walk. The idea is to make the Dyke the sort of place you want to

eat at twice a week rather than just on special occasions. And with those lovely big pizzas starting at just £7.95, this looks like a pretty astute move. Martin Webb, the co-owner of the Dyke said “we listened to our customers. They’ve asked for a more family friendly offering that’s easier to afford in these tricky financial times. We knew we could deliver that because that’s exactly what we’re already doing at the Stoneham.” All this pizza passion kicks off with a big party on Thursday 23rd February. Everyone’s welcome and apparently there’s going to be loads of delicious food to sample and see if the reality matches the hype. Sounds like a date for the diary! HEART’S DELIGHT Treat your Valentine to a special dish, prepared with love
Scallops with Asparagus Tips and Vanilla Hollandaise Heavenly Hear t-Shaped Pancakes With Pancake Day just a week away from Valentine’s Day this year (February 21st), combine the two occasions with this special dish! Prep: 10 mins Cooking: 5 mins
Ready in 30 minutes Ingredients ½ tbsp olive oil 100g pancetta, cubed ½ small fennel, very thinly sliced 16 asparagus tips 12 scallops For the hollandaise: 2tbsp white wine vinegar 3tbsp water 1 bay leaf 8 peppercorns 3 free range egg yolks 160g unsalted butter (must be at room temperature), cubed 1 tsp Nielsen Massey Vanilla Bean Paste Method 1. For the hollandaise, put the vinegar, water, bay leaf and peppercorns into a pan and simmer gently until reduced to about 1 tbsp, strain and add 1 tbsp water to it. Transfer to a glass bowl. 2. Whisk in the yolks and vanilla. Place the bowl over a pan of barely simmering water.

3. Add a knob of butter, whisking until melted and the mixture has thickened slightly. Gradually add the remaining 150g butter a cube at a time, whisking after each addition until all incorporated. Cook for a fur ther 1- 2 mins, until smooth and thickened, be careful not to overheat, add seasoning to taste. Remove from the heat and keep warm while you cook the scallops. 4. Heat the oil and butter in a large heavy based frying pan, add the pancetta and fry over a medium heat for 2-3 minutes until begin to release some fat. When golden and crisp, remove with a slotted spoon to a plate. Then drain off the fat, add ½ tbsp olive oil and add the asparagus and fennel to the pan. Fry for 1-2 minutes stirring occasionally. 5. In a separate frying pan, heat ½ olive oil with a small knob of butter, when hot add the scallops and sear for 30 seconds-1 minute on each side depending on their size. Return the pancetta to the pan with the veg. Divide this between 4 star ter plates and serve with scallops on top with the vanilla hollandaise drizzled over.
Ingredients for 18 pancakes: 2½ cups all-purpose flour 1 cup (6 ounces) Nestle® Toll House® Semi-Sweet Chocolate Mini Morsels 1 tablespoon baking powder ½ teaspoon salt 1¾ cups milk 2 large eggs ¹/³ cup vegetable oil, plus more for the griddle and cookie cutters ¹/³ cup packed brown sugar 3-inch hear t-shaped metal cookie cutters (optional) Powdered sugar Method: 1. Combine flour, morsels, baking powder and salt in large bowl. Combine milk, eggs, oil and brown sugar in medium bowl; add to flour mixture. Stir just until moistened (batter may be lumpy). 2. Heat the griddle or skillet over a medium heat; brush lightly with oil. Pour ¼ cup batter onto hot griddle into the shape of a hear t; cook until bubbles begin to burst. Turn, and continue to cook about one minute longer or until golden. Repeat with remaining batter. 3. For perfectly shaped pancakes, brush inside of hear tshaped biscuit cutter with oil; place on griddle. Pour about 1/4 cup batter into the cookie cutters and cook until bubbles begin to burst. Remove cutter. Turn, and continue to cook about one minute longer or until golden. 4. Sprinkle with powdered sugar before serving.

Honeyed Duck with Pea and Potato Mash with Shallots Glazed in Red Wine Sauce Serves 2 Ingredients 6 shallots 50g butter, melted, 125ml red wine 100ml chicken stock ½ tsp sugar, 1 sprig thyme Sea salt and freshly ground black pepper 300g peeled potatoes for mashing 150g frozen peas 1 tbsp double cream, pinch of nutmeg 2 duck breasts ½ tbsp local runny honey 1 tbsp cooked cranberries (optional) Method 1. Peel the shallots, trim tops and root ends. Heat half the butter in a heavy saucepan and add the shallots. Cook until lightly golden on all sides. Add the wine, chicken stock, sugar, thyme and a little salt and pepper. Over a fairly high heat, reduce until it forms a glossy liquid which coats the shallots, approx 20 – 25 minutes. Check seasoning. Remove from the heat, stir in the cranberries if using, and keep warm. 2. While the shallots are cooking, place the peeled potatoes, cut into medium sized pieces, into a pan of boiling salted water for about 15
minutes until nearly tender. Add the peas, bring to the boil and simmer for a further one minute. Drain in a colander, meanwhile return the pan to the heat, melt the remaining butter and add the double cream and nutmeg. Then add the peas and potatoes back to the pan and mash well. 3. Meanwhile, score the skin of the duck breasts in a criss crossed pattern going through the skin nearly to the meat. Place a frying pan on a low heat. Season the duck breasts with sea salt and black pepper and add, skin side down, to the cold pan and slowly heat the duck breasts. Cook for 3 -4 minutes or until the skin begins to crisp. Turn and seal the duck breasts on the meat side for a further 1 minute. Remove them from the pan and place in a small roasting tin and brush the duck breasts with the honey. Pre heat the oven to 200C gas mark 6. Cook in the top half of the oven 10 – 15 minutes for pink, 20 minutes for medium basting with the honey mixture as necessary. 4. To serve, let the duck breasts rest for a couple of minutes. Place a spoonful of mashed potato on a warm plate, slice the duck breast into three or four pieces, and place on top of the mash. Arrange three of four shallots at the side of the duck breast and drizzle with the red wine sauce.
Chocolate Fondue You will need Fondue dish and forks. Tea light 100g Dark chocolate 2 tbsp Whole milk 8 tbsp Double cream 2 tsp Nielsen-Massey Vanilla Extract Marshmallows Assor ted fruits for dipping Method 1. In a pan gently heat the milk, cream, vanilla extract and chocolate until melted, stir to combine and then tip into the fondue dish with the lit Tea light underneath 2. Cut the fruit into bite size chunks, place on a plate with the marshmallows 3. Dip and enjoy

he London Philharmonic Orchestra returns to Concert Hall, Brighton Dome in February with a concert featuring some of the most touching and heartrending music from the composer who arguably did both those qualities better than any other, Serge Rachmaninoff. Written at the turn of the 20th century, Rachmaninoff ’s Piano Concerto No. 2 established the composer’s fame, and has become one of his most enduringly popular pieces. It’s well known for featuring in David Lean’s 1945 film Brief Encounter and the theme from the slow movement was also used by Eric Carmen in his 1975 ballad All by Myself. The Concerto will be performed by rising star, Israeli Russian pianist Boris Giltburg. Still in his

righton & Hove City Council’s Register Office is revamping appointment times to make the busy service easier to access. The city is a popular wedding destination with venues attracting happy couples from near and far to tie the knot by the sea. In 2011, Brighton & Hove registrars conducted more than 1100 marriages and more than 200 civil partnerships. The Register Office is active throughout the year, with the traditional busy summer wedding season now stretching from April to October. At present, appointments for pre-ceremony meetings run from 9.30am to 4.30pm Monday to Friday. Many couples ask for a wider range of options to fit in with work and other commitments. The Register Office has responded with plans for additional premium appointments available earlier and later in the day, as well as weekend options when the ceremonies schedule allows. Two types of pre-ceremony meeting - giving

notice and ceremony planning - can be booked as a standard or premium appointment. Every couple is legally required to give notice of their intent to marry or enter into a civil partnership at least 15 days before their ceremony. There are more than 40 licensed venues to choose from in the city, each with different styles and facilities.
