Welcome to the January 2011 issue of Absolute Brighton. So how are your New Year resolutions going? Apparently 9 out of 10 of us make them, yet only 1 out of 10 actually manage to keep them! Accounts: Chris Pugh
Well, at least I have the reassurance I am not alone. Personally I find January to be an already bleak enough time without having to pile on the guilt of not keeping to those resolutions of usually giving up something we love… isn’t persevering with the cold enough? And through the past year of challenges, I am sure most will think a little of what’s not good for us, might not be so bad after all.

So what will 2011 bring our dear city of Brighton and Hove? With many plans applied for new buildings and such, it would be nice if our city could move forward on these and prosper. One such plan that is finally in fruition and in its final stages ready for completion in May this year, is the much awaited and anticipated football stadium at Falmer, The Amex Community Stadium, for our home

ALBION UPDATE SOWING THE SEEDS Martin Perry, Chief Executive of Brighton & Hove Albion FC, tells us the latest on the Amex Community Stadium

he big freeze has made things difficult, but we never give up at the stadium and work has continued apace and we have started to build the pitch! The club has now moved on to the next phase in readiness for the opening of our wonderful new home by putting season tickets on sale. The seats now being made available are separate from the 1901 Club areas. Seats booked by 1901 Club members are secure and the licences are being prepared now and will be sent out shortly. However 1901 Club members who are existing season ticket holders also have the right to purchase 3 extra season tickets at the Amex stadium for friends and family. Brighton & Hove Albion FC head groundsman, Steve Winterburn, will be overseeing the whole operation. The roadworks on the A27 should be completed by now and we aim to have the railway bridge completed by mid-January. Despite the snow, we’re still running to schedule!

CHUBBY NEW YEAR! PJ, aka Peter Jarrette, Brighton’s favourite socialite, on the battle between moderation, indulgence and temperance
Dear diary
Moderation and indulgence make strange, nigh impossible bedfellows and we all know this past month the latter has had the upper hand. This Christmas I drank deep from the trough and had my plates piled high. If I was indulgence and you were moderation and I rolled over, I’d smother you. Would you forgive me? Temperance is Moderation’s skinny little Prada-wearing cousin, and Temperance has thrown the gluttonous Indulgence out of the house... well for the rest of January at least! For me the maddening rush to get tipsy and tubby began in November with the fatteningly great launch of Ben Ranger and Steve Beasley’s Hove Kitchens and the wonderful meals served to the VIP tables at the G-Casino Fashion Night in aid of Marie Curie Cancer Care. Soozie Campbell of Unique Brighton, Brighton Fashion Week’s Liz Bishop and Sophie Corbett threw another memorable fashion event on that night for the city’s charitable, sharp-suited and sharp-eyed social set. Surely the season of good will filled our stretchy stockings bursting with parties and merriment all through a raucous and naughty December! If Santa only visited the homes of good boys and girls this year then it’s no wonder if scores of us had to eat and drink all the untouched milk and cookies left out for him in our living rooms when we hauled our bulks out of bed on Christmas morning! Mrs. Socialitepete (aka my wife Karin) and Mrs. Socialitemother-in-law went off on their annual Christmas buying spree in Germany, giving me the opportunity to scour our Beverly Dials home for Karin’s earlier bought Christmas gifts for me. I found one handwritten note instructing me to stay out of her drawers and informing me that my main gift would be brought back from Germany. Anxious to avoid any confusion I telephoned her to caution that an Angela Merkel is not just for Christmas! She failed to see the humour as at the time she and her mother were enjoying a tray of Germany’s famous Kuchen. In the end I needn’t have laid out old newspaper in a corner of the kitchen for the cuddly German Chancellor, Mrs. Merkel, as my gift was something much more discreet and less unwieldy. Yes, this year the kitchen at Beverly Dials was underused in many ways as we also joined the already corpulent for our scrummy Christmas lunch at Dyke Tavern. Now here is some news quick on the heels of our January diet regimes; this is an event that we can all, hopefully, slink into next month: at the end of February, the Sussex Fashion Awards 2011 (www.fashionsussex.co.uk) are being held at the All Saints Church, The Drive, Hove. Expect crowds to gather in this 800seater venue to celebrate and cheer nominees from the Sussex fashion scene in the categories of Emerging Talent, Eco Designer, Outstanding Achievement, Designer of the Year and Fashion Ambassador. On the 14th of February we will all be hoping to double dip into the chocolate covered puddings of passion and bang! We will all pile back on those five pounds and adding to that, any chaste, sober onlooker will think us all venal, Champagne-soaked inebriates! So, there goes January’s efforts at moderation and that well-dressed, size 0 witch, Temperance, will be wagging her bony finger in our fat faces one more time. Do we care? Church can never be accused of is being a one hit wonder. Time and time again she comes back and knocks out her fans with another fantastic hit, and she’s only 24. In a candid interview she tells Danny Masters how she’s put her turbulent past behind her and how her latest album was an unexpected healing process
Many of the tracks on your latest album are quite personal – was that a deliberate plan? No, I honestly didn’t set out with that in mind, it’s just that the only way I can write music is to be very personal. I have to write about what I know and what I feel. And that’s what I was going through at the time. You have to put a bit of yourself into it. Luckily it wasn’t a heart-wrenching, horrendous emotional turmoil because the whole thing between me and Gav (rugby player Gavin Henson) was mutual. And we’ve managed to remain friends which is awesome, because we’ve got two children and they are the most important thing in both of our worlds. Were you surprised that Gavin volunteered to enter Strictly Come Dancing? I was amazed because when we were together, every time I saw him dance he had not an ounce of rhythm. He’s also painfully shy, so it was a big thing for him to do. Naturally I supported him by voting for him every week! You became a world star at the age of 12. Do you sometimes feel like you never had a proper childhood? Definitely not! Even when I was touring the world, I would always come back to school, so that would always keep me grounded. At that age, what was more important to me was my family, friends and getting home and finding out who snogged who at the school disco. That was the centre of my universe – my career and singing was just something else that I did on the side. Were your schoolfriends jealous of your fame and fortune? They were competely disinterested. Occasionally, like when I met Eminem at the MTV awards, they were curious, asking me what he was like. Otherwise all the talk was of who was going out with who at school. When you’re a teenager, that’s all you’re interested in! If the X Factor had been around before you hit the big time, would you have gone on it? I’m sure I would have. Because by then I’d have thought I’m really good at this and having such a burning ambition it would have been difficult to

resist. When you don’t get anywhere and see everyone else getting some exposure it gives you extra drive. So I’m sure I would have been bang on for it. You’ve met and sung for royalty, Popes and Presidents – who made the biggest impression on you? For a Catholic girl, meeting the Pope blew me away. But on a personal level, I was most impressed with Bill Clinton. He had this charm and charisma that makes you feel like you were the most important person in the room. He actually seemed genuinelly interested in me and what I had to say.

I don’t get ashamed or embarrassed very easily. I once said on stage in Canada, “I love America!” That didn’t go down too well but I was on a big tour – it happens. I love my mum but Christ, she can be embarrassing. She liked to tell all my friends that she breastfed me until I was 18 months old. There was me trying to establish myself as a serious artist while she told everyone, “Oh Char was forever pleading, ‘Titty Mummy!’” When you hosted your own chat show, who was the dullest guest you had on? Probably Gwen Stefani. I loved her song ‘No Doubt’ and thought she was super cool back then. But she was this slick, perfectly groomed beautiful person who had absolutely nothing to say. She was tough to get anything

out of at all! And Avril Lavigne was just a spoilt kid. All she would say was, ‘yeah’, ‘no’, ‘maybe’, or ‘dunno.’ I thought, “Christ, give me something to work with here love.” Any other disappointing run-ins with stars? I once met Britney Spears at a party in LA. I was 15 at the time, and her PA came over and said, “Oh Charlotte, Britney’s a really big fan of yours. If you wouldn’t mind going over and saying ‘hi’ she’d be so pleased to see you.” So I went over, and she just said ‘Hi’ and carried on talking to her friends leaving me standing there like I was some sort of stalker. The PA said: “Oh that was so sweet of you, that was the highlight of Britney’s night.” I thought, ‘why did I even bother?’ You are well travelled. Can you tell us where the best bar in the world is? I’ve been to some amazingly fancy ones in Athens and Ibiza but the best without doubt is the Laleston Inn in Bridgend! The place is full of proper vintage hats – nazi hats, fireman hats, coalminer hats. And when you’re p***ed there’s nothing funnier than trying on hats, is there? Got any New Year resolutions? Yes I’m going to try and give up smoking. Again! Although I must say whilst I have been smoking for the past year I have enjoyed the different tones
it’s given my voice. It’s now a bit more gravelly and low and more suited to the sort of music I’ve been doing. But I know if I keep smoking it will start to affect my voice in a bad way – it’s only a matter of time before it will affect my top end. Besides, I don’t want my kids remembering me smoking so I’d like to give up before they’re old enough to remember their mam puffing like a train. You’re only 24 now but do you think there will be a time when you go down the road called ‘Botox’? I can never say never because I don’t know how I’m going to feel or look when I’m 40. But I think growing older gracefully is surely the way to go. Older people who look like older people are much more beautiful than somebody who looks like a funny slightly waxy 70 year old! I suppose it depends how mentally strong you are because this industry can pressurise you. But I hope I manage to remain as strong as I am now because I am who I am.

Lettings agency Leaders, was named Sussex Company of the Year with Higgidy Pies and Brighton Institute of Modern Music both runners up - although neither were to be disappointed as BIMM went on to win The Creative Industries Award and Camilla Stephens of Higgidy was named Entrepreneur of the Year. Her award was presented by Redsevenâ&#x20AC;&#x2122;s Ian Lucas, himself a previous Entrepreneur of the Year (2008) and Paul Craig, Absolute Brighton, last yearâ&#x20AC;&#x2122;s winner. he Sussex Business Awards turned out to be great fun – despite the arctic conditions. We were first alerted to the seriousness of the
situation by our audiovisual team who said most of the staging was stuck in a warehouse down a back street and what did we want to do? We sent out a message saying “There is no such thing as bad weather - only bad clothing”, and received an email back from Robbie Raggio. Robbie was one of our finalists, and the surprise winner of the night with the Award for Outstanding Support of Sussex charities. He said he would not miss the event for the world. So our minds were made up. Regardless of whether we had to use a couple of stage blocks and a pop up stand, the event would go ahead. And it did. Robbie and his friends played a blinder, turning up with 4x4s in snow chains to transport the goodie bags whilst the staging company, AVT, struggled for up to three hours to get through the snow to put on the event. That’s the Brighton Spirit. 2011? See you in the summer!

innoVAtion in bUsinEss Brighton Swimming School was the first swim school in Sussex to offer sea swimming courses, and their high profile will increase with the coming of the 2012 Olympics, which is set to include two open water events. In 2009, the Pool 2 Pier initiative started with 13 participants and there are now 140 people signed up for 2011. This initiative has given the swimming school a new business stream, and now accounts for a significant proportion of its income. The Sussex Business Award judges could see the potential and value of Paul Smith’s brilliant idea. He has been running Brighton Swimming School profitably for over 23 years and sees the introduction of sea swimming as a project with plenty of scope for continuing innovation in the future. Paul is planning channel swim relay training, developing a teenage programme and organizing swimming breaks with a local hotel. Training is also being developed for more open water swimming coaches and welcomes applications from sea swimmers with a swimming teaching background. Open water swimming is healthy, free and carbon-neutral. There is no doubt that Brighton Swimming School has caught the mood of the day at exactly the right time.

Leading salad and fruit manufacturer, Natures Way Foods (NWF), has been recognized for its excellent green credentials at the 2010 Sussex Business Awards - walking away with the top environmental award for Most Sustainable Business. Based near Chichester, West Sussex, this Award follows a number of environmental accolades for the company, including the Carbon Trust Standard which NWF received in September this year in recognition of the work it has done in measuring, managing and reducing its carbon emissions. This certification sits alongside the company’s ISO 14001accreditation (achieved in 2001), where NWF was the first produce company to achieve and subsequently retain this certification. NWF also recycles 99.5% of all process water used, and all roof and grounds water is captured to maintain natural habitats on its grounds. Over the past year, the company has recycled or reused 94% of all dry waste and improved its energy usage per tonne of product produced by 13%, and water efficiencies per tonne of product produced by 16%. Year-on-year, water consumption has been reduced by 5% with no increase in electricity consumption – resulting in a net cost saving of over £75,000 last year. “We are very proud of our ‘green’ achievements and want to ensure that our environmental policy touches all areas of our business. For example, to reduce noise and fuel consumption in the local area, we have consolidated our transport requirements with other local companies and reduced the number of Lorries on local roads. Floral and herbal scents have long been recognised for their health and wellbeing benefits such as memory boosters, stress relievers and stimulants. So popular are these scents that almost two thirds (68%) of people in the UK purchase floral and herbal scented products on a monthly basis (PlantforLife Nature’s Remedy – a guide to growing a Scentsational garden). An all-yearround herb that can be grown in any size garden or in a pot is Rosemary, which has many amazing properties including providing energy, stimulation and conditioning hair. The Greeks and Romans also used it to improve their concentration. Try making your own shampoo by adding a large pinch of rosemary to a bowl of hot water, stir and leave to cool for 20 minutes. After washing your hair rinse with the mixture to give your hair an extra shine. Even in the depths of winter there is something interesting going on in the garden. A fragrant addition is Sarcococca (commonly known as Christmas Box or Winter Box) that has sweetly scented pure white flowers. It’s an evergreen shrub that can be planted in borders or containers and flowers from December through to March, despite any inclement weather. A wonderful Winter flowering, dense plant, Sarcococca is perfect for a shady border or woodland garden. To fully appreciate the vanilla like fragrance, plant in moist well-drained soil close to a doorway or path. It is slow growing, but gives years of interest in the depths of winter and is a robust plant that can cope well with dry shade and urban pollution once established.You can cut shoots and bring them inside to add to flower arrangements – the scent given off by the flowers is superb.

If you are thinking of moving a few established shrubs in your garden now is the time to do it and if the ground is not frozen then it’s also a good idea to get digging and turn the soil. Once done, using a mulch, such as home made compost to cover the soil, will really cut down on the amount of weeding, you will have to do later on in the year. It’s also a good time to plant bare root trees and plants so that root systems get established before summer. Choosing bare root trees and plants – especially fruit trees – can make a real cost saving and if you head off down to your local nursery or garden centre you might also be able to take advantage of some ‘off peak’ plant sales (which is when National Garden Gift Vouchers come into their own!). Finally, it’s important that birds and wildlife have food and a water source during the winter months, so it’s a good idea to make sure that your pond or birdbath doesn’t completely freeze over and to put bird food out.

They certainly make a lovely couple, and news of the engagement of Prince William to Kate Middleton last year certainly brought a lift to the country. The Prince proposed in October last year, while on a ten-day trip to Kenya, and has presented his fiancé with his late mother Princess Diana’s diamond-encrusted engagement ring. The wedding has been set for April 29th, to take place at Westminster Abbey. The date will become a bank holiday, making the May day bank holiday break a four-day one!
Usually royal men receive a dukedom when they marry, so William could possibly become the Duke of Sussex. Katie will be a duchess. For ten years, our summers have seen the reality soap opera that is Big Brother on our screens every night. At the end of the last series in 2010, the show was laid to rest (literally, with a funeral service and coffin), and has left in its wake a string of ‘celebrities’ who owe their fame purely to the fact that they were chosen to enter the House. 3D MOBILES
There are reports that mobile phone company HTC are aiming to be the first to offer an Android smartphone with a 3D screen. They actually showed off demos of 3D phones at Mobile World Congress last year, but it seemed unlikely at the time that any would go into production in the forseeable future. But HTC insiders have reportedly said that they hope to have a device on the market before 2011 is out. They’re not the only ones looking at bringing 3D to Android phones - Motorola, Acer and Sharp are also interested in adding more dimensions to the phone experience, with Sharp currently looking like they might win the race to get the first device to market.

DESIGNER OR BUDGET? FOUNDATION: Skin care is important as most foundations generally work well if applied to an even base. However, achieving the right shade and coverage is always an issue as our complexion changes through the seasons. I would suggest investing a few extra pennies, buying two different shades of a lesser brand so that you can mix throughout the year and adapt to suit. EYE MAKE-UP: A great eyeshadow has little to do with price and everything to do with pigment, which gives the colour its depth and longevity. Look out for products that have a good depth of colour when you apply them - try before you buy! Also, many cheaper brands of Eye make-up remover are just as effective at wiping away your war paint and even work on waterproof mascara. BROWS AND LASHES: Mascara has a short shelf life, so when it comes to that extra flutter power, length
or thickness, you can always save on expensive brands. Opt for an eyelash and eyebrow tint for that every day look. It will last up to a month, and is well worth the investment. LIPS AND CHEEKS: Low priced lipstick colours normally fade quickly, but cheap lipgloss is fine as it just comes off anyway. There is a lot to be said for wearing lipliner all over your lips with Vaseline on top, it lasts and looks natural. If you can’t forgo the lipstick, try using it as a blusher as it works very well on the cheeks. NAILS: Nail polish chips no matter how grand the brand, so you can afford to save a pound or two. A clear nail polish will double-up as both a base coat and a top coat, as well as protecting your nails from staining, it will also extend the life of your polish. Though with very dark shades I suggest you invest in a pricier polish if you want an even, shiny coverage that lasts.

YOUR TEETH ARE WHAT YOU EAT Dr Farrokh Sharifzad from Marina Dentalcare, discusses how what you eat can make a vast difference on how your teeth develop and their continuing health
E
very day, your body renews itself, building new muscle, bone, skin and blood. The foods you eat provide the building blocks for these new tissues. Since our bodies are not able to manufacture all the nutrients we need, especially certain vitamins, we must get them from food or supplements. If your diet is low in the nutrients your body needs, your mouth may have a more difficult time resisting infection. Your body is like a complex machine. The foods you choose as fuel and how often you ‘fill up’ affect your general health and that of your teeth and gums. Many dentists are concerned that their patients are consuming record numbers of sugar-filled fizzy drinks, sweetened fruit juices, and non-nutritious snacks that affect their teeth. These items generally have little if any nutritional value, and over time they can take a toll on teeth. A poor diet can lead to gum disease and tooth decay. Foods high in carbohydrates, sugars and starches greatly contribute to the production of plaque acids that attack tooth enamel. Eventually, these acids can cause tooth enamel to break down, forming a cavity. Choosing the right foods in your diet is an important aspect in having healthy teeth and good oral hygiene. Eating patterns and food choices among children and teens are important factors that affect how quickly youngsters may develop tooth decay. Establishing good nutritional habits in kids and teenagers can be especially beneficial for good eating patterns and food choices throughout their lives. How Nutrition affects oral health It has long been known that good nutrition and a well-balanced diet is one of the best defences for your oral health. Providing your body with the right amounts of vitamins and minerals helps your teeth and gums-as well as your immune system-stay strong and ward off infection, decay and disease. Harmful acids and bacteria in your mouth are left behind from eating foods high in sugar and carbohydrates. These include carbonated beverages, some kinds of fruit juices, and many kinds of starch foods like pasta, bread and cereal. A poor diet and nutrition problems (including obesity and overeating) can create conditions that make gum disease easier to contract.
The foods that you eat come in contact with the germs and bacteria that live in the mouth. If you don’t brush, plaque will accumulate on the teeth. Plague thrives on the starches and sugars that are found in a great deal of foods. When plaque combines with the sugars and starches, an acid is produced that attacks enamel on the teeth, and eventually causes cavity. The acid attacks the teeth for 20 minutes or more. Choosing a healthy diet may sound easy. However, fruits, milk, cereals, bread and some vegetables contain sugars and/or starches. Carbonated drinks, sweet fruit juices and sugary snacks should be limited. You don’t have to avoid these foods, just keep in mind that you should eat a balanced diet, brush your teeth twice a day and floss daily. What is Proper Nutrition? Proper nutrition means eating a balanced diet so your body can get the nutrients needed for good health. A balanced diet consists of the following nutrients: • Some carbohydrates • The essential fatty acids (found in fats) • The essential amino acids (found in proteins) • 15 vitamins • Approximately 25 minerals • Water Children’s Nutrition and Teeth Good eating habits that begin in early childhood can go a long way to ensuring a lifetime of good oral health. If children do not eat a balanced diet, their teeth may not develop properly. In order for them to develop strong, decay-resistant teeth, children need a balanced diet with emphasis on calcium, phosphorous and proper levels of fluoride. Children should eat foods rich in calcium and other kinds of minerals, as well as a healthy balance of the essential food groups like vegetables, fruits, dairy products, poultry and meat. Allowing your children to eat excessive amounts of junk food (starches and sugars), including crisps, cookies, crackers, fizzy drinks only places them at risk for serious oral health problems down the road, including obesity, osteoporosis and diabetes. The carbonation found
in some drinks, for example, can actually erode tooth enamel. Encourage your child to use a straw when drinking soda; this will help keep at least some of the carbonated beverage away from the teeth. Adult Nutrition and Teeth There’s no discounting the importance of continuing a healthy balanced diet throughout your adult life. If you develop a weight problem, change your diet and get regular exercise. Be aware that some socalled fad diets have been known to cause serious deficiencies in recommended levels of minerals and vitamins. Crash Diet Crash dieting can affect more than your figure. With the focus of the media on diets, exercise equipment and personal care products, people are more concerned with their appearance and physical health than ever. Crash dieters who excessively fast, or diet on an on and off pattern, tend to have a lack of, or decrease in certain vitamins, most notably Vitamins D, B12 and calcium. They also tend to lack certain minerals and proteins in their diets. These are very important vitamins especially for the health of the teeth and gums. Dieters also tend to take diet pills that may cause a decrease in saliva flow as a side effect. This decrease in saliva flow tends to increase the acid levels in the mouth, which may cause an increased level of cavity formation. What may be recommended is that dieters consult with their GP or nutritionist to determine what type of diet they should be on. Vitamin levels and a balanced diet with all food groups should be evaluated. As always, sound oral hygiene and regular visits to the dentist help decrease oral health problems. Intense Lifestyle Changes Required to Prevent Diabetes Tests by the Institute of Internal Medicine show that intense lifestyle changes including diet and exercise demonstrated significant decreases in body weight and lowered blood pressure and A1C blood glucose readings. Cardiovascular health also improved as blood pressure was reduced and HDL cholesterol levels increased. The study continued over the course of four years and found that compared to a control group the lifestyle intervention participants experienced a considerably lowered risk of cardiovascular disease, as well as biomarkers which predict diabetes. The study also found that the prescribed lifestyle intervention group also lost an average of 7% of their body weight. This is significant as research has shown that losing as little as 5% of total weight can reduce the risk of mortality from all causes. Diabetes can be Caused by Poor Diet and Inactive Lifestyle Other studies conclude that the majority of cases of Type II diabetes could be prevented by the adoption of a healthier lifestyle`. Diet is the single most important factor which leads to metabolic dysfunction, loss of blood sugar and insulin control and excessive levels of triglycerides which become stored as abdominal fat. Many other factors contribute including lack of physical activity, smoking and environmental pollutants and toxins. Diabetes is a lifestyle disease which can be prevented

CLEANSE THE BODY
After the excesses of Christmas and new year, with resolutions in mind, what can we do to detox and get our bodies back into shape?

ating certain foods can have a cleansing effect on the system and get everything working normally again; they can be delicious too. Magnesium levels in our bodies can be
depleted by drinking alcohol, making you feel tired and sluggish. So try eating lots of leafy green salads, which will replenish the levels. An increase of magnesium can also help to curb chocolate cravings! Using more herbs and spices with your meal will help boost your wellbeing, as well as adding flavour and texture to your food.
MINT TEA
T
his is one of the best reasons to keep a pot of mint growing on your window sill. Whether you make a whole teapot or just a cupful the recipe works the same. Mint tea is a great post meal digestive. You will need: Two good sprigs of fresh mint per person Freshly boiled water Honey to sweeten to taste
Method 1 Place the sprigs of mint in a heatproof mug or teapot. Pour the just boiled water over the leaves and stir well. 2 Leave the leaves to steep in the hot water for 3-5 mins depending how strong you like your tea. Add honey to taste and serve. If you prefer you can strain the tea before drinking.
SWEET POTATO AND BROCCOLI SALAD
Containing a whopping four of your five-a-day, and packed full of antioxidants, this sweet potato and broccoli salad will help you on your way to a healthy new year. Ingredients: 1 (145g) bag watercress, spinach and rocket 15ml/1 tbsp olive oil 350g/12oz sweet potatoes peeled and cut into wedges 2 orange peppers, deseeded and cut into wedges 2 cloves garlic, unpeeled 150g/5oz broccoli 1 (400g) tin of chick peas, drained 150g/5oz cherry tomatoes, halved 25g walnut pieces For the dressing: 30ml/2 tbsp olive oil 15ml/1 tbsp tahini paste juice 1 lemon pinch of caster sugar salt and ground black pepper Method: 1. Preheat the oven to 200°C/18°0C/Gas Mark 6. Place the potatoes and peppers and unpeeled garlic cloves in a large roasting tin, add the oil and toss together. Roast for 20-25mins or until the potatoes are tender and golden. 2. Remove the garlic cloves then slip them from their papery skins and place the flesh in a small bowl. Use a spoon to crush the garlic flesh to a paste and mix in the olive oil, tahini, lemon juice and sugar. Season to taste. 3. Cut each stem of broccoli in half, then cook in boiling salted water for 3 mins until just tender. Drain and rinse in cold water and drain again. 4. Empty the salad leaves into a large bowl, add the broccoli, chick peas, tomatoes and walnuts. 5. Drizzle over the dressing and toss to mix. 52

SALMON WITH CORIANDER SAUCE Preparation: 5 mins Cooking: 25 mins Serves 4 Ingredients: 50g/2oz coriander, chopped 4 (175g/6oz) salmon fillets zest and juice of 1 juicy lime salt and freshly ground black pepper 150ml/1/4pt dry white wine 6 tbsp half fat crème fraiche a pinch of sugar Method: 1. Preheat the oven to 180C/Fan 160oC/Gas Mark 4. Remove the stalks from the coriander and roughly chop them. Roughly chop the leaves separately. Place a large sheet of baking parchment on the work surface; place the salmon fillets on one side of the sheet. 2. Scatter over half the coriander leaves, the lime zest and juice. Season with
salt and pepper. Fold over the paper to enclose the salmon and scrumple the edges together to seal. Place on a baking tray and bake for 20 mins. 3. Meanwhile, place the wine and coriander stalks in a small pan and bring to the boil, simmer until the wine is reduced by half. Strain and return the wine to pan, discard the stalks. Now add the crème fraiche, sugar and chopped coriander leaves and gently reheat. When hot remove from the heat and set aside. 4. To make the herb salad, place the watercress leaves in a bowl, add the chives, oil and lemon juice and toss until coated. 5. Remove the salmon from the oven and arrange the fillets on four plates, tip any juices from the baking paper into the sauce and finally season the sauce to taste. Serve with rice.

ABSOLUTE LOCAL HISTORY “And while all this was happening, seafront traders removed their winter shutters and shopkeepers hoped that the old ship would be on the beach until Easter!” summer and that first weekend - Saturday 26th and Sunday 27th January - was bathed in glorious sun shine. The world-famous Volks Railway was brought out of mothballs for the occasion and, in the middle of winter, conveyed its passengers along the seafront so they could get an elevated view of the old ship. Hundreds of artists turned up with their sketch pads to capture this most unusual event. British Rail advertised their Awayday fares to Brighton to view the wreck and the Southdown Bus Company, not to be outdone, suggested that, particularly for photographers, a trip along the seafront on one of their buses afforded the better view of the ship. And while all this was happening, seafront traders removed their winter shutters and shopkeepers hoped that the old ship would be on the beach until Easter! Some suggested that the ship be made into a permanent attraction on the beach; and converted into a restaurant or a children’s playground. It was sad, but during the storm the Athina’s back had been broken. There was no future for her. A scrap yard beckoned, but first she had to be floated off the beach. Easier said than done. The pumice from her holds had to be removed by a fleet of heavy lorries and the ship made ready for the next spring tide. As all these preparations were being put in place, her popularity showed no sign of diminishing. Athina B had a sad history. Her name had been changed four times and it is almost certain that her different owners had not looked after her as well as they should. But in the end, she was beloved by the people of Brighton, and in particular by Bonnie Manzie of the Concorde who had doubled his takings. It was almost a month after her grounding on Brighton Beach that the old ship slid into the water in thick fog. Those of us on the beach, and I was one of them, barely saw her go. We had been promised bands, flags and a choir but there were none of these, she just slipped away. But the old lady of the sea had not quite disappeared. Three days later the BBC reported that the Athina B had gone aground off Rainham in Essex. Perhaps she wanted to get back to Brighton.

Judged to be one of the great plays of the decade, The History Boys by Alan Bennett is set in a school in the North of England where a boisterous bunch of bright, funny, sixth-form boys are attempting to gain entrance to Oxford or Cambridge whilst evading the distractions of sport and sex. Staffroom battles and the anarchy of adolescence provide a rich vein of comedy. The headmaster has his eye on the league tables but the endearingly eccentric English teacher, Hector, (played by Philip Franks) has very different ideas about how the boys should be prepared for exams and for life. Taking them through an eclectic timetable encompassing everything from the great poets to Edith Piaf, Hector insists that learning is for life, not just for the exam room. When the Headmaster brings in Irwin, a bright junior master to coach the boys, the pupils’ allegiances are divided. This drama had a phenomenal impact upon its National Theatre debut in 2004, winning 30 major awards, including Olivier, Tony and Evening
Standard Awards for Best Play. In 2005, a film was made with the entire original cast, several of whom, including James Corden and Dominic Cooper, have subsequently become household names. Alan Bennett is one of the most distinctive, popular and acclaimed writers in British theatre. stadium health! Plans for a new Health and Wellbeing Centre at The American Express Community Stadium
T
he Community Stadium Ltd and The Healthy Company Ltd have confirmed plans to accommodate a purpose-built health and wellbeing centre at the American Express Community Stadium, in Brighton. The facility, located in the East Stand, will be used to deliver a range of services to local people, businesses and the wider community, including: physiotherapy, osteopathy, podiatry, sports medicine, psychological therapies, life coaching, private GP clinic, travel clinic and occupational health services. Community health and wellbeing initiatives will also be run from the centre, delivered in partnership with local third sector organisations. Planned activities include match-day health screening, and community programmes. The Occupational Health Service located at the Health & Wellbeing Centre will provide a single point of access for local businesses to support the health and wellbeing of their employees. The annual Electric Winter Sessions, held recently in London, saw the Brighton Salon win majority of awards. The Electric winter sessions are always an event highly anticipated by the whole of the Electric group, and this year was no different. Firstly founder and creative director Mark Woolley welcomed over 150 people to the day and then they were introduced to the highly acclaimed and recently launched electric hair care range. T
here was a great deal of excitement on Friday 10th December 2010 off the coast of Shoreham when Coxswain Peter Huxtable MBE brought the new Tamar lifeboat from Poole in Dorset to its new home.
The boat, named after the deceased donor Enid Collett, whose generous legacy funded most of the £2.7 million cost, has a speed of 25 knots covering a range of 250 nautical miles. Made from fibre-reinforced plastic (FRP) it has a crew of six, and an overall weight of 30 tonnes. Peter was made coxswain in 1991 and has now been at the station 41 years making him the longest serving crew member. In 2005 he was awarded the MBE for his work for the RNLI and other local charities. During that period he has been awarded the Institute’s Thanks in Vellum on two occasions. “It is a great feeling of achievement to see the new Tamar boat arrive at Shoreham after a lot of hard work to get the new lifeboat station and slipway rebuilt to house it,” Peter said. “There has been a lot of heart-searching at times when problems have developed but we got there in the end and today makes it all worth while,” he added with a satisfied smile. As the Tamar appeared from the West, the relief lifeboat went out to greet it with Charlie Hubbard, 2nd coxswain, at the helm along with current crew members on board and invited guests. It was an ideal opportunity for some photographs to be taken before it was escorted into the harbour entrance for the first time to be rehoused in the new boathouse. Over the next few months there will be a lot of crew training going on to bring those involved up to date with all the new techniques. The Tamar has a computerised Systems and Information Management System (SIMS) that enables the crew to control many of the lifeboat’s functions remotely from the safety of their seats. Using the system also allows better tasksharing between crew members as various functions can be monitored and controlled from virtually any location on the boat. SIMS is built using solidstate technology and incorporates a chain of back up systems. Like modern aircraft if this should fail the lifeboat can still be operated using conventional systems. Other features include advanced ergonomics, that reduce the impact on the crew as the lifeboat crashes through waves, and a powered Y boat stored behind a transom door to allow immediate deployment. Like all other RNLI all-weather lifeboats, the Tamar can self-right in a matter of seconds offering protection to all on board should extreme weather knock it over. The new purpose-built lifeboat station is one of the most advanced in the United Kingdom and offers all the facilities to provide safe launching of the boat, along with training rooms for the crews and changing areas for them before and on return from a call. “A little bit of luxury compared with the old days,” said Peter. “Mind you I have fond memories of them and the

and all who sail...
crew members, some sadly who are no longer with us. I am sure they would have been very proud of us to-day. The late Peter Lowe will be remembered with his donation of a handmade chart table in the boathouse along with a very impressive pair of binoculars.” Not only will it be the lifeboat crews who need to train; the launching teams play a key role in any lifeboat station so they will be learning new skills working with a much larger boat. By the time the boat is ready for the official naming later in 2011 there will be ample time to put their skills to the test ready for this important occasion. Exercises will also take place with the Maritime and Coastguard Agency (mca) coastguard helicopter based at Lee-on-Solent who works with all the established stations along the south coast. Already many of the local schools along with other organisations have booked up for visits to the station and it will be open to the public most days with an excellent souvenir shop on site. “Lifeboats are still run by volunteers and all the funding comes under the RNLI Charity so we still need money to keep running,” said Chris Bunby, Shoreham Lifeboat Operations Manager. The RNLI operates 235 lifeboats stations in the UK and Ireland and has more than 140 lifeguard units on beaches around the UK. Paul Craig of Absolute Brighton was also fortunate enough to be invited to spend an afternoon at sea for the arrival of Shoreham’s brand new £2.7m lifeboat: “Being a trained skipper myself (for 15 years now) the RNLI has always been a charity and body that I have taken an avid interest in. And being a Shoreham lad, the Shoreham RNLI has always been close to my heart, as well as on one occasion helping me out in my boat some years ago when I was a foolish 21 year old! For the lifeboats’ arrival journey, me and a few of the Shoreham RNLI guys took to the latest Tamar Class lifeboat up to Brighton Marina where we met the Brighton lifeboat rib and team, and the impressive Arun class Newhaven lifeboat; they came alongside us for our journey back. Then as we all approached Shoreham, the Littlehampton lifeboat joined us. With trepidation we all waited at sea for the orange dot on the horizon of the new lifeboat heading up from the Solent. We were joined at that time by several other local skippers on their boats. There were also a few other ribs and lifeboats that joined our small regatta. The atmosphere was fantastic, a real feeling of camaraderie. As we arrived at the new and impressive home for the lifeboat, we could see people waving and cheering her on. The whole day had been a day of celebration for local skippers and rescuers alike. A well deserved new boat to grace the newly built £4m lifeboat station for these guys that do such a fantastic voluntary job every day of the year!”
