There’s been plenty to celebrate in our city this month; from the Brighton Marathon to The Albion’s Accounts: Chris Pugh
win promoting them to the Championship league (see Chief Executive Martin Perry’s comments on page 23). And on top of all this sporting heroism, we’ve been basking in rays of sunshine, feeling more like Brighton and Hove does in midsummer than April and May. We have been spoilt this past month really, haven’t we!

Brighton and Hove continues to be a magnet of theatrical goings on, and it appears this isn’t a new thing that’s been introduced in recent years. Tim Parker took a stroll to Brighton’s wonderful landmark, The Theatre Royal, where he was told of its colourful past and famous faces that have adorned its graceful stage. He discovered that in today’s somewhat ‘tough’ market for most, The Theatre Royal is thankfully continuing to strive… and long may it. Over the last few years, many of our nation’s talented footballers have become more famous for their behaviour off the field than their prowess on it.
One of the most recent was also the most appalling. Chelsea’s Ashley Cole,
As somebody once pleaded to somebody or another in one of those lightweight Rock Hudson/Doris Day movies: “Please, Don’t Eat The Daisies...”, so no don’t, just don’t. Instead bring them to my home in the hills of Beverly Dials, and sew them into my wife Karin’s lush front lawn. This is a keen gardening trend, patches of the tender wild flowers casually dotting otherwise uniformed green lawns of our homes. The other trend on lawns is me somewhat seedily rolling on them after coming home on the first truly hot spring Sunday morning from the Saturday night before. As scores of scorched Brightonites bathed in sunshine in April, we all fetched up in the weekend sun outside of Hove Kitchen to people-watch and enjoy chilled wine and well, one thing led to another. Fortunately for me when everyone tipped out of the ensuing house parties the next morning to pour onto the seafront to watch our famous Brighton Marathon, I headed home to be sprayed with a watering can, while lolling about the feet of an unimpressed Karin as she tended to her plants and flowers. The fab astro-turfed sun terrace at Havana Spoon has been seeing some fabulous social Sundays too, again with their lovely bottles of house Rosé, the hue of pink gold being raised to toasts of thanks for our long-awaited south coast sunshine. Yes, like sizzle on a griddle, the city and suburbs have been hotting up, and things have been big, bold and bouncy of late. Our friends at Alive and Swinging played another blinder to the dinner crowd at Komedia, and Marilyn, Frank and Elvis sexed-up the stage introducing the great Spinnettes, a trio of lovelies, two of which are seasoned West End members of Cats, belted out big band classics in tightly choreographed manoeuvres. Speaking of London, I was invited to, but sadly missed, the launch of the luxury glossy Conquer held at a sleek party at Mayfair’s Babble club. My city socialite friend and bon vivant, Robert Anthony made every attempt to import me to Mayfair for a night of tempting cocktails, Champagne and hardcore networking, but a pesky spring cold that has annoyed all of us recently put paid to that sojourn. I was also invited to enjoy the new menu at The New Stein Hotel as a guest of owner/operator Herve Guyat but a nasty fall suffered by Herve and a subsequent broken leg changed those plans too. Get back on your pins soon Herve! Still we’ve had Hove Hostess Melanie Lyons’ full-on Royal Wedding Street Party at Osbourne Villas with catering by The Connuaght and their great idea of jamjar cocktails! It does seem like everyone’s been enjoying a drink but we are a party town and as you gather, a hot one at that! I have been invited back into the recording studio, too, by the new outfit Audio Hijackers, a producer duo born of the chart topping act Hysteric Ego, to record the new dance track “I’m Dirty”. I was rewarded on the day for my early morning pick-up with a swag bag of designer sunglasses (very useful nowadays too) which I immediately left in their town car on the trip back. In fact, the whole incident has been played down. Now consider this... You turn up at your place of work with a loaded .22 air rifle, the most powerful gun you can own without a licence in this country. You ‘don’t realise it is loaded’ and it goes off and injures a colleague. In any normal company or workplace, you would be sacked, the injured party would press charges and there could possible be a criminal investigation. But the difference is, you and I do not live in the rarefied atmosphere of an industry corrupted by money, fame and egos. We can only speculate about any agreement that may have been arranged between Cole and the injured party. Money talks, money is powerful, and too much money in the wrong hands is corruptive and dangerous. Perhaps, the hapless club, who recently bought a non-scoring player from Liverpool for £50 million, should make it clear when they give instructions to their seemingly dull-witted players – coming in for shooting practice means with the foot, and not with a loaded weapon!
“How I long for the days of the footballing gentlemen...” More recently, the ‘pride’ of Manchester United, Wayne Rooney, let out a foul-mouthed rant straight into the camera. Those who defended him said that he was caught up in the emotion of the moment, but that doesn’t really wash, as this would only have been the case if the camera had happened to catch a few swear words in his celebrations with team mates. Instead, he deliberately put his face into the camera several times to utter his obscenities. His ‘apology’ was luke-warm and insincere, instigated by his wife and others around him. Luckily the fall-out from this incident has been more severe – as well as two match bans, Coca-cola are not renewing his sponsorship deal, and his Street Striker programme has been axed by Sky. In the football world, a talent that can be bought for ridiculous amounts of money propels players into an almost godlike position, which many can’t handle and therefore abuse. How I long for the days of the footballing gentlemen; Geoff Hurst and the boys, who were not swimming in money or basking in fame when they achieved the ultimate prize of winning the World Cup for England. They were, and still are, revered for their prowess on the field, and not remembered for off-the-field antics. Real men, and

The rather kooky star disclosed that the reason is so that when viewed from certain angles she has one ‘normal side.’ She went on to say, “All of my tattoos are on one side as per my father’s request. He asked that I remain, on one side, slightly normal, so I only have my tattoos on my left side. I think he sees the right as like my Marilyn Monroe side and the left as my Iggy Pop side.” She then continued, “So I think from a neurological standpoint, because I’m creatively driven by my left side, that’s why I chose it.”
George Clooney’s Bizarre Sleep Pattern Apparently Hollywood actor George Clooney sometimes
sleeps in the walk-in-wardrobe of his LA home. Speaking about this strange habit, he explained: “Even though I have several spacious bedrooms in my home, I find them too light and so sleeping in my closet is often the only solution that works for me.” So George is officially in the closest!

t has been an exciting month for the Albion; a seven-goal thriller against Dagenham and Redbridge at Withdean Stadium, secured promotion to the Championship for the Club, the first Football League team to be promoted this year… and still with five games to spare. This was followed just four days later with a convincing win against Walsall at the Bescot Stadium taking the Club’s tally to 93 points and beyond reach of second placed Southampton, meaning that the Albion have won the League One Title; the third League Title that they have won in a remarkable period of twelve seasons at Withdean! We’re thrilled to be back in the Championship after five years. Gus Poyet paid tribute to the club’s achievement, and then called on the squad to break the 100-point barrier. He said, “I never expected that we would be promoted with five games to go... I’m over the moon because we made it and the players and fans deserve to be celebrating!” Meanwhile, the seats are now being installed and the pitch has begun to turn green as the seed germinates; it’s all coming together as we march on to the opening date at the American Express Community Stadium! As I wrote in last months column (for Absolute Brighton), we continue our promise to support local companies; this time by awarding our bottled water contract to Brighton-based Life Pure Water, with the added benefit that we can support their drop4drop charity, helping provide clean drinking water to

Life Pure Water founder Simon Konecki, who is also a Brighton & Hove Albion fan, said: “We are thrilled to win this contract for so many reasons! Not only is it great for our company to win such a major contract, but the stadium will help us to provide clean drinking water to over 100,000 people in developing countries every year, saving many lives.” Our events team at the stadium is also getting ready for the first wedding to be held there on 9th July this year. Absolute Brighton talks to Alan Margetts about his thriving business in Lancing, The Kitchen Store, and the importance of expert and friendly service Alan, please tell us a bit about your business background? I trained as a Quantity Surveyor working in Rochester near my home town until my early twenties when I got my first taste of business ownership and set up a Chartered Building Company with three former colleagues. I discovered very quickly that regardless of what you did or didn’t know it is shear hard graft that makes your business succeed or fail and so much of what I do now I learned in those early days. After arriving on the south coast in the nineties, my surveying background got me a position at Manhattan Furniture, which ultimately led to the establishment of The Kitchen Store as Manhattan’s retail distributor in 2004. How does service received within your showroom differ from other kitchen companies? Our customers often comment on the friendliness of our staff and we place a great deal of importance on having super people who really know what they’re talking about and make the process as enjoyable as possible. The showroom itself is one of the largest in the area and there is a lot to see as well as several places to sit with a coffee, and play around with doors and worktops or to talk to our designers. I hope our customers walk away feeling inspired and have met someone who they really like and trust. What style of kitchens can you offer? We have a real mix. New for 2011 we have become dealers of Metris, a really excellent range of British designed contemporary doors which have featured in our adverts with Absolute Brighton. Within the Manhattan ranges we have a wide range of gloss, timber grains, painted shaker and curves; along with some great priced doors all built onsite here in Lancing. Alongside the furniture we are major suppliers of appliances, granites and quartz worksurfaces and we have a large selection of these on display. Do you specialise in bespoke kitchens by in-house designers? Yes, all our kitchens are designed in-house by one of our design team. Our designers are design graduates and have an interiors background so as well as understanding the products they’re generally full of ideas when it comes to style and practicality and are happy to work with our customers on preparing illustrations of different design options. What are the benefits of having your factory and showroom in one place? For many people buying locally is very important and we’re one of the very
few kitchen suppliers in the area where you can actually see your kitchen being built - our customers are often taken aback by the size of the factory when they see it. An obvious benefit of our set-up is cost. We’re building and selling from the factory and we don’t have the overhead of a high street so the savings are passed on to our customers. The second great advantage is if our customers or installers need things quickly the factory is only a few steps away. What do you think the secret is to someone choosing a dream kitchen? Without a doubt it’s working with a good designer. They’ll quiz you, probe, play devil’s advocate and you end up with a really great looking and practical kitchen at the right price. Do you offer a consultation in customers’ homes? Yes, we visit all customers at home. Our designers measure and talk through layout options, which appliances are available, type of worksurfaces and offer any advice that is required. From there we’ll go away and work on a design which we’ll present back to the customer in our showroom. There is no charge for this service. What is the current trend for kitchens? Rich and vibrant wood grains, such as our Zebrano Metris doors, are very popular for us right now as well as curves. We have introduced a new range of handleless kitchens which look superb and I’m sure will be very popular. Real timber is still in demand, but now simple horizontal grained oaks rather than more ornate framed doors. And all of these are often in combination with each other. For example a gloss cream on the wall and a wenge wood grain on the base. Also, this year there is much more emphasis on what’s inside the unit and we have a great many pull out mechanisms, wire drawers, larders, bin options – for better and easier storage. And finally, where do you see The Kitchen Store in 5 years time? Another couple of branches would be great...! Prevention is key so if you want to spare yourself the time, cost and stress of trying to repair damaged and frazzled hair after the sun has done its worst; now is the time to put that sun awareness into action. Tooth whitening, also known as tooth bleaching, is a procedure that lightens teeth and helps to remove stains and discolouration. Whitening is among the most popular cosmetic dental procedures because it can significantly improve the appearance of your teeth at much less cost and inconvenience than other techniques. Every day a thin coating forms on your teeth and it picks up stains. Also the outer layer of each tooth, called the enamel, contains pores that can hold stains. Whitening is not a one-time solution. It will need to be repeated periodically if you want to maintain the brighter colour. If teeth are heavily stained significant improvement in their appearance can sometimes be achieved following a procedure as simple as a scale and polish from a dental hygienist. How Does Tooth Whitening Work? Whitening procedures change your natural tooth colour, usually anywhere from five to seven shades brighter. In-office (chair side) whitening and at-home (tray) whitening both rely on bleaching. Bleaches contain an active ingredient, most often carbamide peroxide or hydrogen peroxide in concentrations of 3-35% which helps remove both deep and surface stains. All whitening techniques work in one of two ways: A light-activated whitening session in a dentist’s office, sometimes called chair side whitening results in instantly and often dramatically whiter teeth. Custom made trays and whitening gel created by your dentist for athome whitening, and you typically wear it several hours a day or overnight for two weeks. Some cosmetic dental practices offer a combination of both methods to achieve a desirable result. Why Should I Whiten My Teeth? Maybe you’ve always wanted a beautiful white smile. Or your teeth have yellowed over time. Or you’re not happy with the staining that results from drinking coffee, tea or red wine. Whatever your reason for wanting whiter teeth, you’re not alone.
Just like we all have different hair and skin colour, people also have different tooth colour. Some teeth are more yellow than others, while others yellow with aging. Your natural tooth colour can also be affected by many factors. Surface stains and internal discolouration can be caused by: • The natural aging process • Using tobacco (smoked or chewed), drinking coffee, tea or red wine and eating pigmented foods such as cherries and blueberries • Accumulation of plaque and tartar deposits • Trauma to the teeth that may cause a brown, gray or black colour It is also possible to have stains that are inside the tooth. These are called intrinsic stains. For example, intrinsic stains can be caused by exposure to too much fluoride as a child while teeth are developing. This gives teeth a “mottled” look. Other causes include tetracycline antibiotics taken during the second half of pregnancy or given to children eight years old or younger when the teeth are still developing. Tooth whitening is most effective on surface stains caused by age, foods or drinks. There are many reasons for whitening your teeth, including: • The boost to your confidence and self-esteem that comes from a great smile • A younger appearance • A special event such as a wedding, job interview or class reunion • To make a positive first impression on others • To simply reverse years of everyday staining and yellowing Before beginning any whitening procedure, be sure to consult with your dentist. Absolute Brighton’s Rishma Patel visited Marina Dentalcare to try tooth whitening for herself
H
aving heard so many mixed reviews about tooth whitening and a great desire to have it done myself, I decided to investigate; I booked an appointment at Marina Dentalcare and had my first consultation. Farrokh, who owns the practice immediately made me feel comfortable; he took me through the procedure step by step. I was having the popular Zoom Whitening which is a bleaching process that lightens discoloured enamel and dentine. On my first consultation I had moulds taken of my teeth for the tray whitening system which can be done in the comfort of your own home. At my second consultation, Farrokh matched up my teeth with a colour chart to measure how effective the treatment would be. I was pleasantly surprised to hear that my teeth were the whitest shade possible naturally. The procedure was very simple; firstly my lips were covered in Vaseline to allow my mouth to stretch open, a blue guard was then fitted to ensure that my mouth stayed open, my lips and gums were covered leaving only my teeth exposed. 42
Farrokh then applied the Zoom Whitening Gel to my teeth, the gel containing Hydrogen Peroxide and this is activated by the light and helps penetrate the surface of the tooth. As this is broken down, oxygen enters the enamel and dentine, bleaching coloured substances while the structure of the tooth is unchanged. Each session lasts 15 minutes and during my treatment I was Zoomed 3 times, I did experience minimal sensitivity whilst undergoing the treatment and Farrokh immediately applied some gel to ease the sensation. You can have your teeth professionally Zoomed in only an hour, my teeth are now eight shades whiter and I have had so many envious comments on my new pearly whites. helpful in offsetting stress, and a primary reason they work is because they are a distraction. The important thing to do is to ‘change the pattern.’ A very simple and great way to offset stress is to stroke a cat - yes it really does work. Alternatively, walk a dog. However, if you don’t have a pet, you could foster one or become a walker for your local dogs rescue association. Being around animals and nurturing them, has also been proven to lower blood pressure as it naturally calms us down. If you feel you are out of the habit of relaxing and can’t get off the treadmill of life, or at the opposite end of the scale, you are a couch potato or with no job, no relationship or no energy, read on and try this mental exercise that we find helps a lot of our clients: Exercise Sit comfortably. Think yourself back to a time in your life when you have previously enjoyed yourself or succeeded in something you are proud of. It can be anything from getting a job to having a baby or passing an exam. Now close your eyes and allow your imagination
to run riot focusing on this achievement. Next, visualise yourself in that same situation. Whatever the memory you have chosen, hold it… stay with it and enjoy the experience all over again. Keep with this experience and loose yourself in the memory of it. Smile to yourself and feel proud again- you achieved this! Now relish in this and slowly open your eyes remembering that feeling and what YOU did. Keep it with you for the rest of the day. This exercise alone is guaranteed to get the endorphins moving; natural stress and pain relievers that we all have in our bodies. NATURALLY GOOD Over twenty years ago, our future King, Prince Charles, risked being called mad when he announced that he was growing organic produce and stating he thought it was the way forward. Now, with so many of us growing and buying it, he must be bursting to say “I told you so.” Our health expert Sheryl Waters looks at why this modern day phenomenon is so much healthier for us

y now most of us know that buying organic is absolutely essential if we want to put the best food possible into our bodies. It is just plainly and simply better for our health, and better for the environment, which are inextricably linked anyway. Study after study show that organic food has a higher nutritional content than conventionally raised food. A study published in the Journal of Agricultural Food Chemistry, for example, found that organic foods are more likely to help you fight cancer. Yes, cancer. And another study found that rats that ate organic food had far better health compared to rats who ate non-organic food, including: * Improved immune system * Better sleeping habits * Weighed less and were overall slimmer than rats fed other diets * Higher vitamin E content in their blood
“A study found that organic foods are more likely to help you fight cancer…” Dr. David Thomas, a physician and researcher, has studied and compared the United States government guidelines and tables for the nutritional content of various foods. These tables have been published by the government first in 1940 and again in 2002. Dr.Thomas has noticed a trend that supports the decline in the nutritional quality of fruits and vegetables produced via modern farming practices in recent decades. Through his research, he has noticed that you have to eat four carrots to get the same amount of magnesium as you would have done in 1940 with one carrot.

A study published in the Journal of Applied Nutrition lists many nutrients that appear to be altered based on how they are farmed. The study looked at various organic fruits and vegetables and compared the levels of certain nutrients in relation to the commercially-available counterparts produced via modern farming practices. The study lists the macronutrient chromium as being found at levels 78% higher in organic foods. The study also showed that calcium is found at a level 63% higher in organic foods and magnesium is found at a level 138% higher in organic foods. Other studies have shown that the use of pesticides can also alter the levels of certain vitamins including B vitamins, vitamin C, and beta-carotene in fruits and vegetables. In 2003 a study was published in the Journal of Agricultural and Food Chemistry which found that organic corn had 52% more vitamin C than the commercially available counterpart which was grown utilizing modern farming practices. This study also found that polyphenol levels were significantly higher in the organic corn. However, there is a common argument that organic food is more expensive. Of course, to me the best investment that any of us can possibly make is in our health and wellbeing since without our health we can’t optimally do all of the other things that we want to do in our life. Who cares about a financial investment in the stock market if you won’t feel good enough to enjoy it? Okay, but I will be realistic for a minute. Sometimes organic food is just crazy expensive, and to buy every single item organic is just not possible. Fortunately, new studies show that some foods are less affected by pesticides and herbicides than others. The Environmental Working Group is a non-profit organization that advocates for policies that protect global and individual health.They have currently tested 43 different fruits and vegetables, and found
that these 12 carried the least amount of pesticides when grown conventionally: * Broccoli * Eggplant * Cabbage * Banana * Kiwi * Asparagus * Sweet peas (frozen) * Mango * Pineapple * Sweet corn (frozen) * Avocado * Onion Of the 43 different fruits and vegetables tested, the following 12 carried the highest amount of pesticides when grown conventionally, and are therefore the most important to buy organic: * Peaches * Apples * Sweet bell peppers * Celery * Nectarines * Strawberries * Cherries * Lettuce * Grapes (imported) * Pears * Spinach * Potatoes So there you have it... if you aren’t going to go 100% organic in aid of saving a few pennies, you now know which fruits and vegetables to make absolute sure are organic, and which ones you can save a little on when necessary. It is not easy as the ‘new girl’, trying to watch fellow experienced participants, or more importantly, the teacher, while in an asana (posture) with one’s head on the floor! However, being one to never say never, I decided to try another class, albeit three years later. On entering the room, I immediately felt the rising panic of suffocation due to the room’s temperature being 105 degrees fahrenheit! My partner Clive reminded me to breathe slowly in and out of my nose . The dizziness and nausea one is expected to experience while performing Bikram was a little premature I felt, as I’d only just entered the room and hadn’t even begun the yoga! However, within a couple of minutes, I had adjusted. The teacher for my class was an amazing American lady called Bridgette Ane. From

the offset my confidence was gaining. I felt completely safe and excited by the idea of actually performing all of the asanas correctly. Bridgette Ane had the ability to talk through each move so expertly that I didn’t once have to look up to validate that my positioning was correct. The class was extremely busy, but she managed to ensure that every person was safely performing the moves, and she managed to run the class smiling throughout. Bikram yoga, in my opinion, is not for the fainthearted. It is a procedure of 26 asanas repeated twice along with two breathing exercises. The repeated movement (as Bridgette Ane promised) was so much easier than the first - quite incredible how one’s body can rapidly adjust. By the end of the class, I truly felt that I was working on a higher level with all disciplines... physically, mentally and spiritually. An uplifting experience for sure. The following morning, I awoke with a panic - I couldn’t move my body . Due to the fact that I

have had spinal surgery with another possibly pending, I thought that I had been foolish in pushing my body into positions that seemed completely unnatural, using muscles that I didn’t even remember having . However, slowly stretching in the shower left me feeling so exhilarated. I am now a Bikram convert and am ensuring that I manage at least three classes a week. Healthy OPTIONS Eating healthily doesn’t have to be boring. These colourful dishes are tasty and exciting and easy to prepare (and perfect for vegetarians). Enjoy!
ZESTY PESTO TOFU WITH MEDITERRANEAN SALAD Serves 4 Preparation time Marinating time Cooking time
5 minutes 1-12 hours 45 minutes
Ingredients 1 pack (250g) tofu 6 cloves garlic, crushed 1 tsp olive oil 1 tsp salt 80g fresh basil 1 lemon, finely grated zest and 3 tbsp juice 2 cloves garlic, crushed 25g pine nuts 2–3 tsp vegetable/vegan stock
pinch caster sugar salt and pepper to taste 6–8 tbsp low fat natural yoghurt or soya yoghurt Mixed Mediterranean salad such as frissee, strips of red and yellow pepper, halved cherry tomatoes, thinly sliced fennel
Method 1. Drain tofu. Wrap securely, like a parcel, in several layers of kitchen paper and place on a board. Press gently to extract as much liquid as possible without crumbling the tofu. Repeat this process until there is only a little moisture coming through the paper. Carefully cut tofu in half horizontally and then in each direction 4 times to make small cubes. Place in large bowl. 2. Put 6 cloves of crushed garlic in a small bowl with oil and salt and mix well. Dot the mixture over the tofu cubes and, taking care not to break the cubes, coat them with the garlic paste. Cover tightly and marinate in fridge for between 1 and 12 hours.
CHICKPEA AND CASHEW KORMA WITH SPICY RICE
A
mellow, spiced and vibrantly coloured dish.
Serves 4 Preparation time 10 minutes Cooking time 30 minutes Can be vegan Ingredients 2 tbsp vegetable oil 1 red onion, finely chopped 3 cloves of garlic, crushed 1 tsp turmeric 1 tsp paprika 1 tsp grated ginger ½ tsp mild chilli powder 1 sweet potato, peeled, cut into 2cm cubes 1 small cauliflower, cut into florets 1 red pepper, cut into pieces 1 yellow pepper, cut into pieces 1 standard can of chickpeas, drained 100g roasted cashew nuts (unsalted) 1½ vegetarian stock cubes, diluted in 1 litre of boiling water 100ml coconut milk 150g frozen peas 30g fresh coriander Salt and pepper to taste
1 tsp of cornflour (to thicken the sauce) 200ml low fat natural yogurt (or vegan yoghurt) Method 1. Gently heat the oil in a large pan and fry the onion. After 5 minutes add the garlic, and continue to cook for another 2 minutes. 2. Add the turmeric, paprika, ginger and chilli and cook for another 2 minutes. 3. Add the sweet potato, cauliflower, peppers, chickpeas, cashew nuts, stock and coconut milk then bring to the boil. 4. Reduce the heat and simmer for 20 minutes stirring occasionally. If you would prefer a thicker sauce, mix 1 tsp of cornflour with a little water to make a paste. Add this to the Korma and gently stir in and cook for five minutes. 5. Add the peas and most of the coriander, saving a little for garnish, and cook for five minutes. 6. Add seasoning to taste and serve with a spoonful of natural yogurt and coriander to garnish. 7. Serve with spicy rice. (See opp page)
3. Preheat oven to 180C/350/F/Gas 4. Line baking tray with baking parchment/non-stick baking paper. 4. Place tofu on lined baking tray and cook for 30 minutes, stirring after 20 minutes. 5. Put basil leaves, lemon zest and juice, garlic and pine nuts into a processor and blend until a paste is formed. Add stock powder, sugar, salt and pepper and process again briefly. 6. When the tofu is cooked turn off oven. Put half the pesto into a large bowl. Add cooked tofu and gently turn it over to cover all cubes. Put tofu back onto baking tray and return to oven for 5 minutes. Remove from oven and leave to cool. 7. Mix yoghurt with 6–8 tsp of remaining pesto. Arrange the salad on individual plates, scatter with tofu cubes and dress with a little of the yoghurt. Serve the remaining dressing separately.

SPICY RICE Serves 4 Preparation time 5 minutes Cooking time 30 minutes Vegan Ingredients 1 tbsp vegetable oil 1 onion, finely chopped 1 cinnamon stick ½ tsp cumin powder ½ tsp coriander powder 250g brown rice 1½ litres of water 50g peas Method 1. Heat the oil in a large pan and gently fry the onion.
2. After 5 minutes add the spices and continue to fry for 2 minutes. 3. Add the rice and cover with water. Bring to the boil, and then simmer for 20 minutes until the water has been absorbed. 4. Finally add the peas and cook for another 5 minutes. Depending on the size of pan used, you may need to add a little more water. 5. Drain off any excess water and serve.
SWEET POTATO BURGER WITH GRIDDLED PINEAPPLE, AND A CHILLI SALSA Serves 4 Preparation time 10 minutes Cooking time 40 minutes Vegan Ingredients 600g sweet potatoes 2 tbsp olive oil 1 onion, finely chopped 2 cloves garlic, crushed 1 tsp ras el hanout (Moroccan spice mix) 5 pineapple rings 1 tsp rose harissa (or harissa) 100g breadcrumbs 50g almonds, coarsely chopped 100g pumpkin seeds, crushed Gram flour (chick pea flour) to coat the burgers For the relish: 3 Bird’s Eye chillies, finely chopped (will be hot, you may wish to use milder chillis) 2 spring onions, finely chopped ½ lemon, juiced 1 tbsp tomato puree 4 wholemeal rolls Method 1. Preheat the oven to 220C. Cut the sweet potatoes in half and bake in their skins on
a lightly oiled baking tray for 30 minutes. When they are soft scoop out the flesh and set aside. 2. Meanwhile gently fry the onions in 1 tablespoon of olive oil until soft. Add the garlic and ras el hanout. Continue to fry for another 30 seconds, stirring continuously. 3. Chop one of the pineapple rings into small cubes and put in a big bowl, with the cooked sweet potato flesh, fried onions, rose harissa, breadcrumbs, almonds and pumpkin seeds. Season to taste. 4. Form the mixture into burgers.You can make four thick or eight thin burgers as preferred. Coat them in the gram flour and shallow fry until golden on each side. 5. While the burgers are frying, make the relish by mixing all the ingredients together. 6. Griddle the remaining pineapple rings on each side. 7. Assemble by placing one burger in each roll, followed by the griddled pineapple then the relish. Add the second burger on top if using and serve with a simple salad.

The beautiful Regency exterior of The Theatre Royal
I
n 1806, the Prince Regent gave permission for a theatre to be built in New Road. The landowner, one Hewitt Cobb, had little interest in plays and that kind of thing, but he had one of the best plots of land in Brighton. Close to the Royal Palace, it was an excellent site for a theatre. As the Prince Regent was spending more and more of his time in Brighton, Cobb sensed it was a money-making proposition and got to work. Within a year he had built the Theatre Royal. The Theatre Royal opened for business in 1807. The first production was Hamlet; the Regency audience would have enjoyed every moment of it. ‘Alas poor Yorick, I knew him well.’ It would be quite wrong of me to dwell too much on the past - the future is more important. But, our theatre has survived for over two hundred years, giving pleasure to many, so it is only right that we acknowledge the debt owed to the visionaries who kept the theatre going in good times and in bad. Now it seems that difficult times have come again. I am sure the Theatre Royal will survive, but that could depend on the admission prices. When my wife Beth and I came to live in Brighton in 1960, a seat in the back row of the stalls was nine shillings 45 pence. Alright, that’s a hell of a long time ago, but a medium-priced seat in today’s market will cost £22. Quite rightly the theatre is trying to attract new and younger audiences, and there are price deals suitable for young people, standby tickets and special prices for school groups. The seat prices generally are excellent value compared with London west end prices, where they cost double or even triple those charged by The Theatre Royal.

Tim Parker looks at the colourful past of Brighton’s historic Theatre Royal and discovers how this remarkable landmark is thriving through current tough economic times Of course it is easy to be nostalgic about the good old days - there were no such thing for the vast majority - but I liked the coal fire in the foyer and the lady who used to play the piano before the performance. Bring her back, Mr Baldock, and you will be astonished by the number of compliments you receive. I am pleased to tell you that Mr Baldock is the new General Manager of the Theatre Royal and I wish him well. Last Thursday I rang the theatre to ask for some information about what was on and how things were going. I was spoken to very nicely and sent a bundle of stuff; top marks to the Theatre’s marketing staff. “So what’s on this week?” I asked. “Journey’s End.” “The play by R.C Sherriff?” “Yes, that’s right.” Good heavens! So in the first week of April, Brighton’s Theatre Royal went back to the First World War and the trenches at St Quentin. It was not the kind of play I had expected for the spring programme, but thinking about it, why not? Maybe it was an inspired choice; it is a magnificent and very moving play. I must remember to ring Rachel and ask her how things went. As it happens, an uncle of mine was in one of the West End productions of the play. Older readers may remember him, Cecil Parker. Cecil appeared in Brighton on a number of occasions. Twice he was leading man for the summer season at the theatre at the end of the Palace Pier, which for some obscure reason has now changed its name. “It was good fun,” he told me. “As part of my agreement I got a decent room with a sea view at the Albion Hotel and a full English breakfast. it was a short amble to work, nothing too strenuous.” Cecil’s last film was Oh What a Lovely War, which was largely shot on the West Pier. In February 1999 the Ambassador Theatre Group bought the Theatre Royal. The sale came at a time when the old playhouse needed a helping hand. It is good to report that the purchase has been a happy arrangement: new ideas, new contacts, investment and, perhaps most important, security. There is quite a buzz about our theatre nowadays. I have their summer programme in front of me and there is much I would like to see, including one that brings back memories, Joseph and his Amazing Technicolor Dreamcoat. A show for all the family, and one to which Beth and I took our daughters not once but twice. Another play I would like to see this summer is Alarms and Excursions by Michael Frayn, a wonderful playwright. It’s a very funny look at technology, so do book, especially those of you who, like me, are not technically minded. I dread the day when, all too frequently, I press the wrong button and lose the plot. And why does my printer always break down when I change the ink? As it happens I have just finished reading one of Frayn’s novels, Headlong, written in 1999; a great read. There’s another recommendation for you. My final choice is The Pitmen Painters, a moving play about a group of NorthEast miners who achieve extraordinary success when they begin art classes. The play has been performed at the National Theatre and on Broadway and I am looking forward to the day when it arrives in Brighton. So, let’s support the Theatre Royal, it’s our theatre and it is up to us to see that it remains open to delight and entertain us for another two hundred years.

ynne Moore celebrates the calm majesty of elephants in her summer exhibition at Frost & Reed, London. There will be wild landscapes, grouse moors, powerful waves and the odd antelope and lion, but the glorious blue elephants steal the show. Lynne saw elephants for the first time on holiday in Botswana and became determined to return. Five years ago she joined a scientific field trip in Namibia, a ‘collaring’ expedition to monitor their health and strength. Last March came the Big Adventure when she stayed at the Elephant Watch Centre at Samburu National Reserve in Kenya with Iain and Oria DouglasHamilton, founders of Save the Elephants. Their camp was all but washed away by a terrifying flash flood when the nearby river burst its banks, and waters rose to thirty feet in less than half an hour. Lynne lost all her painting equipment, but a battered sketchbook survived and her camera, drenched in mud, but images intact. Lynne works from her studio in Belgravia, London SW1. Her paintings are based on the hundreds of close up photographs she took of elephants eating, playing, splashing or just resting in the sun. Sporting chances Hurst’s reputation for sporting excellence goes from strength to strength

urstpierpoint College has long been renowned for its love of sport and friendly atmosphere but recent years, under the leadership of Headmaster Tim Manly, have witnessed a revolution in the school’s
ambitions across the board; academically, culturally and of course in sport. “We have made extraordinary efforts to widen the franchise” said Hurst’s Director of Sport Rob Kift, “to ensure the reality of Tim Manly’s commitment that no-one is left unwillingly on the bench. In the Senior School alone, we now put out nearly twice as many teams as we did 5 years ago with many B, C and even D teams performing well, and regularly. At the same time, we have put the right resources in place to ensure that the quality of our play improves at every level.” The results appear to confirm his confidence; Hurst has performed exceptionally well. In netball, Hurst’s U15 and U19 teams won both the Sussex Independent Schools Netball Association (SISNA) competition and then the even tougher County Knock Out Championships at both U19 and U15 categories. In boy’s hockey, Hurst’s U14’s first became West Sussex Champions and then - by beating traditional and traditionally skilled rivals Eastbourne College - all County Champions. This sequence of success was swiftly followed by the U15’s and then by the U16’s who just defeated a highly skilled and fiercely competitive squad

How has the first term been for you as Headmaster of Handcross School? Walking into a school as a Headmaster is always a fascinating experience. You get to know the people better and what is interesting and exciting about the school and what we can do to make it even better still. I am loving the challenge. Please tell us a bit about yourself and your background in education. I am married to Nita and we have two wonderful children. I came into education after being inspired by one of my own teachers to do so. After training at Brunel University I spent seven years at Feltonfleet Prep School before moving into senior education, working at both Wells Cathedral School and as a housemaster at Wellington College. I spent three years working out of education as a rugby coach both in Australia and in the United Kingdom. In my spare time now I still love playing sports, mainly golf, cricket, squash and the occasional ski trip! Now that you have been able to enjoy a full term as head of Handcross Park School, have you put any changes/ improvements in place? It is extremely important that a headmaster does not walk into a school and make immediate sweeping changes without getting to know the school properly, which is what I have been doing in this first term. However, we are currently working on an exciting Development Plan to take Handcross Park forward. It focuses on a wide variety of areas and we are due to launch the plan later this year. Watch this space! Do you think it will be successful? I think the plan will be very successful indeed. It focuses on 10 core themes in education that we want to be known for and which the staff here are committed to. It is not only capital projects but areas of education we want to excel in. What has been the best part of your new role so far? Without any shadow of a doubt getting to know the children. I try to lunch with the children and it is the best time of the day for me. Hearing what they have enjoyed that day and what they think about the school in general makes for interesting conversation. I am a big believer in educating children how to use mealtimes as an opportunity to develop their social skills. How have the pupils taken to you? I think you had better ask them! I like to think I am a good listener but at the same time provide clarity for the children in terms of my expectations of them. It is important that children have clear boundaries and that everything they do in school is underpinned by an atmosphere of kindness. And you to them? The children are fantastic – I just have to see the smiles on their faces to see that! They achieve a great deal here and I am proud to be their Headmaster. Being only a short 15 minute drive from Brighton, are you hoping to gain even more pupils from the city as part of your new role? Absolutely! We are looking at launching a bus service in the near future. We also have a boarding house which is being revamped and so we are not only looking at Brighton but London also.
What is your ethos to a well managed and happy school? As I mentioned before, I believe that a school should focus on two main areas – kindness and a broad curriculum. Children thrive in this kind of environment, where they feel safe and secure and are afforded plenty of opportunities to succeed both in and out of the classroom. A well managed school is one where trust exists within the community. What do you think distinguishes your school from other independent schools? Our recent inspection feedback spoke about our outstanding pastoral care and that the children achieved well above expectations. We are proud of that more than any other element of the report. Happy children are at the centre of any outstanding education. What do you think has been the secret to Handcross Park School’s ongoing success in Sussex? Of course we have a wonderful location and stunning grounds which helps, with easy access from Brighton and many other surrounding towns. However, there are some excellent teachers here and at the end of the day successful schools come down to people and we have some very committed and passionate educationalists. And finally, what has been the best piece of advice that has helped you in your career, and who was it from? The best piece of advice I ever received was from my previous headmaster and mentor at Wellington College – Dr Anthony Seldon – who always said that to be a good leader you must “be yourself”. BMW has had considerable success with its 4x4 X models. The X1 is an attempt to bring the formula to a new audience. Steve Walker reports
W
e’re used to seeing the word ‘sport’ attached to 4x4 vehicles but how many of them can really justify the association? Sport, when used in car circles, suggests a link to motor sport and the practice of going quickly around corners and down straights. Handicapped by its high centre of gravity and the weight of its all-wheel-drive mechanicals, the 4x4 is inherently ill suited to such tasks - unless the course happens to be marked out across a ploughed field. That doesn’t stop manufacturers referring to their off-roaders as SUVs (Sports Utility Vehicles) or SAVs, (Sports Activity Vehicles) but in reality, very few can entertain on the level of conventional road-biased alternatives. BMW has had more success than most when it comes to building some dynamism into its 4x4 products and with the X1, it’s confident of making sure that the sport tag sticks. The X1 is a 4x4 but BMW has designed it to thrive on the road rather than off it. Both rear-wheel-drive and four-wheel-drive versions are offered, powered by the marque’s excellent diesel engines. The pick of the range is probably the sDrive20d which marries 53mpg economy with 0-60mph performance of 8.1s. 72
BMW entered the 4x4 market with the X5 in 1999, the car quickly establishing a reputation as one of the sharpest-handling luxury 4x4s money could buy. In 2004, the X3 followed with a similar tarmac focus and 2008 saw the X6 make its appearance as the most unashamedly roadbiased of the BMW off-roaders. The X1 continues the trend for BMW 4x4s that shun the joys of getting back to nature in favour of excelling where most 4x4 owners actually drive; in towns and cities, on motorways and B-roads. With rear-wheel-drive versions on offer as well as full fourwheel-drive models, could this be the purest sporty 4x4 yet? BMW has noted the overwhelming dominance of diesel engine sales in its other 4x4 models and has come up with a diesel-only engine range for the X1. Buyers get to choose between three versions of the acclaimed 2.0-litre common-rail diesel engine that’s featured so prominently in its 3-Series and 1-Series lines. With the two less powerful units, they must also decide whether to specify xDrive four-wheel-drive or sDrive rear-wheel-drive. The entry-level option is the sDrive18d which has the 143bhp version of the third-generation common-rail turbo diesel engine. The xDrive18d has

X Marks the Spot four-wheel-drive and the same engine. Then came the sDrive20d and xDrive20d which use a 177bhp version of the same powerplant. The range-topping model is the xDrive23d which has twin turbochargers and generates 204bhp as a result. A sixspeed manual gearbox comes as standard but the xDrive23d is also available with a sports automatic featuring wheel-mounted paddle shifters. The rear-wheel-drive versions of the X1 are between 0.5 and 0.3 seconds faster than their four-wheel-drive counterparts as a result of their reduced weight. The entry level engine manages the sprint from 0-60mph in 9.6s in rear-wheel-drive guise, while the sDrive20d takes just 8.1s. At the top of the range there’s some serious performance on offer from the xDrive23d which takes 7.3s to reach 60mph and uses its twin turbos to great effect in producing a flat torque curve with a powerful 400Nm maximum available between 2,000 and 2,250rpm. The model naming policies perused by BMW aren’t always what they seem, hence the three two litre diesel engines being badged 18d, 20d and 23d and the X1 being based on the 3 Series platform rather than that of the 1 Series hatch. Despite its underpinnings originating from the larger car, the X1 is a diminutive proposition that’s noticeably smaller than mainstream compact SUVs like Land Rover’s Freelander. Its long bonnet, wide stance and small glass area help create the sporty look that BMW is aiming for but there’s nothing truly remarkable about the X1’s appearance. This is the manufacturer sticking to its tried and tested formula. It’s a similar story inside the cabin with another of the marque’s classy interior designs in evidence but
little to excite those who’ve ventured into a BMW before. It’s immediately clear that the X1 is not the car for buyers who get their tyres dirty on a regular basis. The xDrive 4x4 models have no additional modifications to improve their ability offroad and with modest ground clearance, the X1 will soon start dragging its belly on moderate off-road terrain. There are five seats but the rear bench isn’t the most generous from a leg room point of view and the hatch-backed boot can be extended up to a useful 1,350 litres with all the seats folded. The X1 could prove a timely introduction to the BMW range. It marries the desirable characteristics of a 4x4, such as the bold looks and the elevated driving position, to BMW’s excellent diesel engines and a road-biased chassis. Just when 4x4 vehicles are being routinely frowned upon for their environmental impact, here’s one that’s compact and economical too. Is it sporty? Well, it looks like coming as close as any 4x4 yet.
