To mark 60 years of the Queen’s reign, we are all being given the opportunity to celebrate her Diamond Jubilee. With this being our May issue, and the Jubilee celebrations officially taking place on the bank holiday Accounts: Chris Pugh

recently staggered to learn of the Queen’s diary when watching a documentary that television presenter Andrew Marr officially made on her and her family for the Jubilee year. Every single day of the year is booked for her by her team to make her appearances, travel, publicly speak and talk to people (many of whom she has never before met); even Christmas Day (although, she does have a break with the family in the afternoon). Imagine, every day of your life is purely devoted to your

country, and you are expected to learn every aspect of the subject matter that you are visiting each day; she is said to have a briefing and then is expected to learn the business/charity/people inside out (usually in the back of a car en route to them). ABSOLUTE INTERVIEW “I never had a physio. When I was competing I had five massages in 15 years. I’d see all the athletes queueing outside the physio’s door and think ‘You’re all wusses. I don’t want to be like you’” get involved in or to go and watch. I’ve got a lot of friends there so it’s a country I spend a lot of time in. I must also say I took the kids to Mauritius and it was out of this world. The people were really friendly, the beaches were beautiful and uncrowded and there was plenty to do. Where would you never go back to? Kathmandu. It wasn’t that bad but the terrain was really hilly and we ended up doing so much walking, it soured my memory of the place. What’s the weirdest thing you’ve ever eaten? Fish eyeballs in Goa. They were like jelly and pretty foul but I got them down. I wouldn’t want to repeat the experience though. What’s the most adventurous thing you’ve done? About four years ago I did a couple of long walks up to Mount Everest base camp. That was really tough because we were walking 8-10 hours a day. I’ve also got a bunch of mates and we’re all around 50 so every 18 months we embark on a kind of life-affirming holiday. We’ve been on fishing, walking and canoeing holidays in Canada and it’s great because it’s always an experience thats going to challenge us, not kill us. I would like to write this month’s column in French to say “J’ai passé la soirée avec certains lapins luxuriants du Playboy variété...” because the slick team at Midnight Communication invited guests to the new rooms at Rendezvous Casino at our Marina, to be introduced to legendary and iconic hosts - Playboy Bunnies from the London club. I had never seen a live, life-sized Playboy Bunny, save for a retired one who was once the girlfriend of my art mentor, the late American architect and artist Ralf Broughton. She never showed up in the trademark ears, tail and swimming-style costume, Rob White and Peter have fun with a Bunny! though. I arrived with glee to be charmed by some of the current crop of London’s lovely Bunnies. They made us welcome in the new Big Red Lounge and Rendezvous’ Big Red Challenge gaming zone. All the cocktails were red, potent and never-ending and with waiting staff bearing trays of gorgeous nibbles it was like one of my own packed launch parties back in the day! Recent years have seen generous entertaining become rare and on that evening it made a comeback! I also attended the first Secret Geisha Party at The Jive Monkey this month. Guests dressed up and turned out for a drink and a dance and most of the ladies were in some form of Geisha dress, none more regal than Miss Nixon. Known as a leading Marilyn Monroe tribute act, Miss Nixon has secretly been studying the art and history of the Geisha. She is now steeped in the culture and its famous Tea Ceremony and has booked to perform it for visiting Japanese industrialists! I also went to a milestone birthday for Andrea Barker. TV chef, Momma Cherri held a tremendous buffet set out for guests and we were entertained by songs from the birthday girl, a pop star in Germany in her younger milestones. Down from London that night was Denise Pearson of 80’s group Five Star. You may know her from BBC’s talent showcase The Voice. Peter with Miss Pearson has become Tom Jones’ protégée Laura Nixon in the show’s format. Bunnies, Geishas, Miss.

Back in 1952, Princess Elizabeth heard of her father, George VI’s death while in Kenya. She became Queen then. Her actual coronation took place more than a year later in June 1953 – after a period of mourning for George, so in fact the celebrations this year commemorate her actual time as Queen. When she first took on the role as Queen, the world was a different place! The great British Empire was in decline, and indeed after 1997, when Hong Kong was handed back to the Chinese, there were only 14 small outposts and islands belonging to the British. It is interesting, and relevant, that exactly 30 years ago, the sovereignty of one of those outposts was disputed by Argentina, and the Faulklands conflict began. At the beginning of the Queen’s reign, most families did not have a TV set. This changed the following year, when many bought their first small black and white set to watch Elizabeth’s coronation. It was a rather static affair, without the benefits of high definition pictures, no close ups and the whole thing was shot from one position. Still, there was nothing better to compare it with then, and the country was enthralled. Technology has made the most spectacular, and also frightening, advances in the last 60 years. We can now talk to – and see – people on the other side of the world instantly. We can communicate with anyone at any time, and social networking has made the world a much smaller place, but not necessarily a better one? Maybe there is too much twittering, too much sharing now. These channels of communication are also highways for abuse and threats. Many of the criminal cases reported these days involve one or more of these social sites being used for disturbing purposes. Still, who among us would be without their mobile phone? Not me, that’s for sure – and it was big news a few years ago when the Queen herself became the owner of a mobile!

Get the look Dishevelled hair Step one: Work some Electric Smoothing Cream into damp hair so you’ve got a smooth, glossy and malleable base to start off with. Remember that preparation is key if you want to remain on the right side of ‘dishevelled’. Step two: Create a rough centre parting and blow dry the hair using a Denman Head Hugger Brush to smooth the hair out and add volume. If you wish, keep the ends wrapped around the barrel before releasing to add a bit of kick. Step three: Break up the lengths up with your fingers - tease out and twist sections of hair to create more definition. If you struggle, apply a little L’Oreal Professionnel Super Dust to add volume and texture. Add a little to the roots as well for an extra boost of root lift.

ou pour oil in your frying pan and off you go, cooking your dinner in hopes it will nourish your body and tempt your taste buds. Unfortunately, a lot of oils can harm our bodies, especially when heated. So the question is, how can we cook our food while not causing harm? The answer, it seems is coconut oil. In fact, coconut oil offers a whole range of benefits and is considered a rare and important building block of every cell in the human body, and can actually reduce cholesterol and heart disease. It’s boost immunity, kills off unwanted visitors such as bacteria and viruses, protects against cancer and other degenerative diseases, and prevents osteoporosis by promoting calcium absorption. It also slows down ageing and adds an extra glow to the skin! What is the difference between coconut oil and vegetable oils? Common vegetable oils such as olive, sunflower and safflower oil are polyunsaturated oils, which means they are made up of a long chain of fatty acids. Virgin coconut oil, in contrast is made up of smaller molecules or medium chain fatty acids. Long chain fats are either deposited in blood vessels as cholesterol or stored around the waist, thighs and buttocks as energy stores of fat for emergencies. Medium chain fatty acids are used immediately as a source of energy.

The long-chain fats nearly always go to fat storage. Coconut oil on the other hand is a medium chain fatty acids. Rather than being stored as fat in the body, they are burned for energy. This means less fat on the thighs and greater zest. Coconut oil also stimulates the metabolism so that food is quickly assimilated. Coconut Oil for Improved Health Coconut oil is rich in lauric acid, which is a compound found in breast milk. In fact, there are few foods on the planet that are as similar to our mum’s nutritious milk than coconut milk. It boosts immunity and destroys harmful bacteria and viruses. In fact, there has even been research to show that coconut oil can have a beneficial effect on the HIV virus. Coconut oil has been shown to kill the Candida Albicans yeast, which is caused by antibiotics, birth control pills, and modern living. This nasty yeast can cause a whole range of undesirable illnesses including bad digestion, foggy brain and chronic fatigue. Yet many sufferers have claimed that their health has dramatically improved when using coconut products. This could be due to the fact that coconuts are a dense source of caprylic acid, which has anti-fungal properties. Substituting your normal cooking oils with coconut oil can be a tremendous remedy for diabetes, and, along with avoiding sugar and getting plenty of exercise, can help prevent people who don’t suffer from this dangerous disease from suffering later in life. A
new study proves that your ‘Pearly Whites’ affect how you are perceived by others. When it comes to smiles, it doesn’t take hard research to convince us that a beautiful smile will make you more attractive. But does a gorgeous ‘Hollywood’ smile really make you look smarter; make you more desirable; and will those gleaming teeth give you a competitive edge over the ‘other guy or gal’ who smiles with their mouth closed? According to new research, radiant, natural looking smiles will make you appear more intelligent, interesting, successful and wealthy. This recent study proves that teeth alone can affect how you are perceived by others. HRH has been echoing words since she was a young princess, and makes a strong case for investing in your smile to ensure the best first impression which is really important when it comes to securing the right job, finding the ideal flat, and landing a date with ‘the one’. Facial attractiveness plays a key role in social interaction. It influences mating success, kinship opportunities, personality evaluations, performance, and employment prospects. Furthermore, attractiveness is suggested to influence personality, development and social interaction. Empirical evidence for this relationship is given by a meta-analysis of facial-attractiveness studies. These showed that attractive children and adults are judged and treated more positively than unattractive children and adults, even by those who know them. Attractive children and adults also exhibited more positive behaviours and traits. Facial attractiveness correlated with extroversion and self-confidence/self-esteem. In most domains, attractiveness was found to be equally important for men and women. Other studies showed correlations between selfreported attractiveness and personality traits such as dominance, emotional stability, and selfesteem or with inhibition, health anxiety, and lack of self-esteem.
Facial attractiveness and smile attractiveness appear strongly connected to each other. The fact is that in social interaction, one’s attention is mainly directed toward the mouth and eyes of the speaker’s face. As the mouth is the centre of communication in the face, the smile plays an important role in facial expression and appearance. This has been demonstrated in studies with photographs, where higher intellectual and social abilities were attributed to individuals with aesthetic smiles. They were also judged to be more attractive than the same individuals on photographs with modified lowerlevel aesthetic smiles. A person’s teeth may influence whether they will be successful in life, say a team of social psychologists. In another study the researchers from King’s College London found volunteers rated the same individual less favourably when their mug shots showed visible tooth decay. Those with rotten teeth were deemed less clever, less popular and less well adjusted, as were crowded teeth.
Hollywood Professor Tim Newton who carried out the research said: “I would have thought that people would prefer natural looking teeth, but actually they don’t.” The difference was even greater when the pictures were of women, suggesting people judge women more than men based on looks alone.
A majority of celebrities, such as Tom Cruise, strive for the perfect smile and have cosmetic dental procedures such as teeth whitening, teeth straightening and veneers/crowns. Expectations It also appears that people’s expectations about what makes a beautiful smile have changed. Professor Newton said people today associate perfectly straight, white teeth with beauty because of the Hollywood images they see in magazines and on TV. In the 100 or so volunteers he tested, he found when people had been looking at pictures of others with these so-called ‘perfect smiles’ they were likely to be less satisfied with their own facial appearance as a result. It has changed the general public’s expectations substantially and what we perceive as normal. “If we went back even 15 years ago, footballers often had bad or even no teeth. Now footballers, such as Ronaldo, have had dental makeovers”. Indeed, manufacturers of porcelains and other dental materials used to make artificial teeth have had to produce new whiter shades to match these trends and expectations. In some ways it is quite positive because it encourages people to look after their teeth. I see people every week in my clinic who want something done to improve the appearance of their teeth, and it’s not just young people. I recently had an 82-year-old lady who wanted orthodontic treatment to straighten her teeth, and a 96-year-old gentleman who wanted teeth whitening. 1. Bold coloured lips. Apply a bold lipstick over the top of a lip-liner and leave your eyes soft and neutral. Choose an eyeshadow with a glamorous sheen to it and add lashings of mascara. Keep your cheeks soft and pretty and leave out the heavy bronzer. 2. Long and lucious lashes. Define the eyes with a soft smudgy dark blue eye-liner, curl your lashes and add a gorgeous fake set then re-apply mascara - keep the blush natural and the lips nude, but defined. 3. The smokey eye. Line your eyes inside and out with a soft black eyeliner, then sweep an accent eyeshadow to wrap around your eyes and blend outwards - try a shimmery purple or an alluring blue. Finish with a light gloss on the lips.
4. Retro-glam. It’s all about clever contouring and precision. Shade your cheeks and highlight the cheekbones, follow the natural eyelash line with a back eyeliner and enhance the eyes in shades of vanilla, champagne and light warm brown. Eyebrows should appear perfect, with pronounced arches. Finish with a strong semi matte red lipstick. 5. Cat-eye. Exaggerate the shape of your eye by extending the eyeliner outwards for a powerful and dramatic effect. Keep it strong and defined and the rest of your complexion polished. 6. Natural sun-kissed. Apply a neutral, bronze eye shadow, with a coral blush and a natural lip. Keep your complexion dewy by choosing creamy formulations.

Little Bay restaurant has made a big impact upon its arrival in our city. Our editor Verity Craig discovers why
W
ith this being our Jubilee issue, it seemed very apt that the restaurant to review this month was Little Bay; with an interior full of opulence and grandeur most striking, this restaurant has a regal air about it. I was amazed by the décor upon stepping in off of the busy seafront road where it is based. Yes, there are many beautiful restaurants in our city, but there are not many that have taken such a brave step in their interior design as Little Bay; someone has certainly had fun creating this place! I am sure that former Royal Pavilion resident King George IV would approve. The world of the arts is the theme throughout. Numerous theatre boxes have been created high up within the ceiling where diners enjoy their meals looking down upon the rest of the restaurant (where a few regular tables are situated). In keeping, the boxes each have red velvet curtains, complete with gold tassels, and gold surrounds. And each box is dedicated to an influential person from the arts, including such names as Mozart and Shakespeare, and their faces have been hand painted on the front of the relevant box. This is the perfect pre theatre restaurant! The boxes seat tables from two to twelve diners; great fun for a party or very romantic for two. Act 1 So seated snug in our intimate box for two, my husband Paul and I began our meal. The European style menu is a variation of fish and seafood dishes with some meat and vegetarian dishes also. Our friendly waiter informed us of the daily specials too. For my starter course I chose the Choux de crab with ginger, chillies and a citrus hollandaise sauce, while Paul chose from the daily special menu, the asparagus with
smoked salmon, poached egg and hollandaise sauce. Both were beautifully presented and extremely tasty. For my main dish I selected the roasted fillet of salmon that was served with roasted potatoes, green beans and a dill sauce. The salmon skin was crispy with a tasty seasoning and the roast potatoes perfect. Still on the specials menu, Paul then opted for the fillet of seabass; being one of his favourite choices of fish, he could light-heartedly be called a connoisseur of seabass. So it was a great compliment for Little Bay’s chef that Paul thoroughly enjoyed this dish.

However, we have learnt since that the company policy (there are also four Little Bays in London) is to keep the prices low but create an atmosphere that people will want to return to. We thoroughly understood that, for we are both looking forward to sharing the experience with friends next time and sitting up in one of the boxes for six or possibly twelve. Not only is Little Bay value for money with the above mentioned appeals, but there is also live opera and such performances four nights a week, bringing your theatre box even more to life. What a fun place this is! Curtain Down So with a spring in our step, like you often have when you’ve been to the theatre, we left Little Bay planning our next visit. If you are seeking somewhere new and exciting to eat in Brighton with a bit of flare and fun, we thoroughly recommend a visit to this restaurant; I have every confidence you won’t be disappointed.

Fit for a Queen! ABSOLUTE RECIPE
Rosemary Hume, founder of Le Corden Bleu cookery school, created the first Coronation Chicken for the banquet following the Queen’s coronation. Over the years, the dish has rather lost its standing, and gone from royal favourite to a rather banal sandwich filler. However, in the fifties it was an instant hit with fashionable hostesses; and we still love the original recipe
Coronation Chicken Based on the original by Rosemary Hume Serves 8-10 Ingredients: 2 free-range chickens 2 large oranges, 2 bay leaves 2 cinnamon sticks Olive oil For the stock: 1 large onion, chopped, 2 cloves garlic 1 cup medium dry white wine 1 tsp ground coriander,1 tsp ground cumin 1 tsp curry powder 1 finely chopped, small, dried, red chilli pepper For the marinade: ½ tsp saffron threads 1 tsp ground turmeric 4fl oz/115ml milk, 4fl oz/115ml white wine 1 tbsp finely chopped fresh coriander 2 tbsp finely chopped mango chutney 2 tbsp sultanas 2 tbsp finely chopped dried apricot For the dressing: 2 tsp curry powder 1 tsp ground coriander 14fl oz/400ml crème fraîche 7fl oz/200ml mayonnaise Method 1. Preheat the oven to 200F/400C/gas mark 6. Quarter the oranges, crunch up each bay leaf and cinnamon stick and stuff everything into the chickens, with a little salt and black pepper. 2. Brush the chickens with olive oil and sprinkle 54
with more salt and pepper. Roast them for 20 minutes per lb/500g. 3. Leave to cool, then strip the meat from the carcases, chop roughly into bite-sized pieces and put in a wide dish. 4. Put the skin and bones into a saucepan along with the stock ingredients and cover with water. Bring to the boil and simmer gently for two hours. 5. Strain the stock and skim off the fat. Reduce the stock down to about 1 pint/500ml. Leave to cool. 6. Meanwhile, make the marinade. Heat the saffron and turmeric gently in a dry saucepan for a few seconds, then add the milk and bring to the boil. 7. Stir in the wine, coriander, mango chutney, sultanas and apricots. Simmer gently for about 10 minutes. Leave this mixture to cool too, then add it to the cool stock. 8. Stir the stock/marinade mixture into the chicken. Cover and leave in the fridge overnight. 9. Heat the curry powder and coriander in a dry pan until fragrant. Put the crème fraîche and mayonnaise in a bowl and stir in the spices. 10. Fold the dressing into the chicken and marinade, which will have set to a light jelly. 11. Bring to room temperature before serving piled on salad leaves and scattered with chopped coriander and paprika. Serve with a salad made up of white long grain and wild rice, accompanied by a spicy white wine or dry rosé.
TOP TIPS Try not to serve the dish fridge cold. Let the meat come close to room temperature before folding in the dressing. ■ Opt for a whole bird. Meat cooked on the bone, and especially leg and thigh meat, is more succulent and better tasting, even if it doesn’t slice into such perfectly even pieces as a boneless breast. ■ Resist the temptation to add grapes, nuts, and all the dried fruit leftover from last Christmas. Less is more. ■ Cook dry spices, by heating them in a frying pan until fragrant, before adding them to the sauce. ■

here’s some very good reasons why the Lady Boys of Bangkok have the longest stint at the 2012 Brighton Fringe Festival
– their popular performances pack more glitz, more glamour and more giggles into their 105-minute running time than probably any other cabaret show in the UK. Returning to Brighton for their ninth year - this time with an all new show called ‘Carnival Queens’ - the Lady Boys have firmly established themselves as fringe festival royalty and now, due to phenomenal public demand, are booked here for a four week stay in 2012 – outlasting the festival itself by a full seven days. Should You Opt to Adopt Adoption is back in the news as the Government is looking at ways of speeding up the process. The vast majority of children adopted are those who have been removed from their birth parents by a Local Authority (LA) through care proceedings. However, adoption equally applies to couples adopting a child from outside the family and step-parents. If a child has been in care, the court must approve a plan for adoption and make a Placement Order, giving permission to the LA to find a suitable placement. The Government is seeking to alter the criteria
