It’s all about preparation in November; preparing for the colder months, preparing for Christmas, preparing for entertainment and so on. And I am delighted to say that we have thought of all those points when putting this issue together for you. Ladies winter coats and jackets are always a talking point this time of the year. What’s on the

catwalks, the high street and what will be practical and warm. Our wonderful in-house team who put our fashion shoots together for you each month have scoured the shops seeking out the perfect and latest looks for the colder months ahead; from coats to capes and Barbour jackets, I am sure you’ll see one or two you deserve to treat yourself to (and what makes them even better, is that they

are all available locally, page 10). And for what goes on ‘underneath,’ we have put together a couple of pages, for him and for her, of beautiful underwear and lingerie for your perusal. Pages 20 and 23. A common problem that many of us suffer as the winter snap settles in is heating our homes! It’s this time of the year when many home owners discover that the heating system that worked so well in previous years is now not, or you promised yourself last year you would invest in that new heating

system this year. Sounds familiar? Then our heating feature of different ideas and ways to heat the home sufficiently and quickly may be just the stop for you. Personally, I have my eye on the stove fire’s where you can sit cosying up watching the dancing flames through the glass doors on the

it does still seem so early. However, one thing to guarenteed is that from now on we will see and hear Christmas and jingle bells everywhere we go (I’ve already witnessed two Christmas TV commercials!) Therefore now is the best time to book up those staff parties and dinners with friends and family before everywhere becomes fully booked. See page 58 where we have showcased some of the best restaurants, bars and hotels from across Sussex that have some great Christmas offerings this year. Fear not though, we haven’t been too premature; our Christmas gift guides, party wear and Christmas décor is all wrapped up for next months issue! We’ll look forward to seeing you then!

ABSOLUTE SOCIALITE DIARY
M
ABSOLUTE COMMENT
What’s going on....?
NAUGHTY BUT NICE! PJ, aka Peter Jarrette, Brighton’s favourite socialite, with the latest in great new venues, events and happenings
Dear diary I was recently the subject of a photo interview in a magazine by my long-time friend and media colleague Diana Frangi (‘La Frangi’). This was something I was proud to be featured in for many reasons… Not only had I something to promote, as is the way with these interviews, but I was always and will always be happy to be part of events, projects and exercises that my friends undertake. But beyond that La Frangi is my trusted friend. This is a point that I wish to highlight...the importance of friends and trust. You see, I have been shaken (as we all are from time to time) by a form of betrayal in very recent months. So... as steps are taken to reclaim what is ‘owed’ I will say little further than it has been a ‘rum do’. And on that note, the business email you have for me is no longer in my function. I am now contactable at rumshop21@gmail.com. Now, other jaw dropping things hanging over our heads have found their way to the city and none more eye-popping than the erotic chandelier that was on display at David Donno’s Naked Eye Gallery at 5 Farm Mews, Farm Road. Designed by Stephen John-Jarvis of Swallow-And-Bone, ‘Priapus’ is a quasi S&M creation boasting six preposterously large, clear, red-resin phalli that light up as they curve skyward. Guests were delighted by this illuminating installation as it took centre stage (or centre ceiling really) on the opening private view evening at the gallery. David (with whom a selection of my own artworks, some naughty, remain available), treated us all to his unparalleled brand of gallery entertainment with wines and scrumptious trays of a-bouche from Kate Alleston and her equally tasty looking team from Graze Restaurant. Swallow-And-Bone’s marvel of electric lighting hung in residence temporarily at the gallery through the month of October as it continues its tour of European cities and similar erotic exhibitions. One guest at this private view party suggestively claimed that this was the only chandelier that “sat six”! Ooh-er! If you think you can accommodate this phantasmagoria view it at www.swallowandbone.com. At £15,000 it would surely make quite a Christmas stocking-stuffer! There were many other dirty delights on offer as a host of talented titillaters displayed their wares too, up to and including the photographer Manel Ortega who has invited me to pose as an angel in another exhibition depicting winged nude forms to be mounted in the UK. I suggested that I pose as a fallen angel in a messy hotel bed surrounded by the remains of a raided mini-bar... and I know just where the shoot will take place - the city’s new, exclusive, hedonistic, one-room Harrington Hotel! It may seem a natural fit after an evening of hot, saucy scenarios that I attend a baby shower the very next day (my first ever) for my good friend Franke Darling; a BA cabin crew member who has had her own wings clipped as it were for the time being, as she welcomes her new addition to her life. Upon the invite, I must admit that at first I was afraid, I was petrified (as the song goes) but when I saw the beautiful spread of cakes, cookies and sweet treats laid out for the many ladies there, I calmed down some, and soon there was wine flowing to sedate the anxieties of the very, very few other men there. There were mothering games involving talcum powder and changing nappies on dolls, but I busied myself by wearing an outsized baby rattle made of balloons on my head. I will say that my introduction to baby showers proved to be no tame or sober experience and that the following day I had to take to my bed. Congrats Franke and passenger! You are one sterling flygirl who knows how, with effortless British hosting, to look after her guests. Well... Christmas is nearly upon us and my treat from Absolute’s editor Verity Craig is my assignment to interview the Wonder from Wales that is the recording star and performer Katherine Jenkins. Melodic quotes from this A-lister will be stuffed into your bountiful and festive issue of December’s Absolute Brighton. Regardless if you’ve been naughty or nice this year... Absolute will spoil you as ever. PJ Twitter.com/socialitepete facebook.com/peter.jarrette
Mo Hunter-Shine says it like it is
Jobs well done Much has been written and spoken recently about Steve Jobs, the CEO of Apple who passed away last month. As with most people involved in publishing, most of my work is produced with the aid of a trusted Apple Mac, a machine that not only has amazing functionality, but also looks stylish and cool on my desk. It epitomises Jobs’ passion for clean design and efficiency. Many people are surrounded by
igadgets – pods, pads and phones. The only gadget I have is an ipod, and I remember how smitten I was when I first held it in my hand. Such an exquisite item – so far removed from the Sony Walkman I once had strapped to my belt! Steve Jobs’ contribution to the developing world has been compared to that of Henry Ford, and there can be very few people in the world who have not been in touch with one of Apple’s magical creations. The world has lost a great innovator, but his legacy will go on forever. BBC News Recently I was lucky enough to attend a recording of Room 101, which now has a new format, at the BBC studios in White City. The laid back but quickwitted Frank Skinner is the new host, and there are three guests battling for him to choose their selections for the famous Room. Room 101 was the dreaded hellish room of torture in George Orwell’s novel 1984, and Orwell himself once worked for the BBC in – yes, Room 101. Just serves to make the visit more meaningful! It was interesting to enter the hallowed BBC building in White City, which at the moment seems to be on rocky ground, as the Beeb gradually makes its way up to a new base at Manchester. I do hope that this iconic building survives. It’s a genuine national treasure, and one of the most recognised buildings in London, and indeed the UK. You may not be aware, but you can attend these recordings in London free of charge. By registering with certain websites (in this case Hat Trick Productions), you are then invited to apply for tickets for various shows. Some take place at the BBC studios, and some at studios elsewhere in London (including Elstree). All you need is the cost of your travel, and to be prepared to stand in a queue, sit for over two hours (without leaving for any reason) and you can enjoy some exclusive entertainment. When you then watch the finished programme on TV, it takes on a new meaning. Why not give it a go?

Prime Minister Admits His Love Of ‘Angry Birds’ He may be an unlikely fan, but David Cameron has
confessed that one of his favourite pastimes is on his IPad playing the Angry Birds game. The game, which involves catapulting wingless and legless birds to destroy green pigs trying to eat their eggs, has a trendsetting ‘club’ of more than 20 million people who have downloaded the Angry Birds app to their IPhones and IPads and regularly play it. We wonder who the Prime Minister is imagining those little pigs to be…

Who’s going UP and who’s going DOWN this month…
UP Hot on the gossip columns last month, but elegantly so, was the wedding of Sir Paul McCartney and his new bride Nancy Shevell. We can’t decide if we are more stunned at beautiful Nancy’s age of 51 (she looks 20 years younger, but naturally so) or that Paul McCartney has finally met and fallen in love with someone who seems to be so grounded and, well, ‘normal.’ Good luck to the happy couple we say. DOWN Once again, our sportmen let us down. The England rugby team were uninspired on the field during the World Cup, but had time for plenty of high jinks off the field. It’s a pity for poor manager Martin Johnson, who probably thought he would be leading a team of talented players. Instead, what they actually needed was a nursemaid.

The number eleven is said to be a popular lottery number. This results in the per-person payouts being a little below average when eleven is one of the winning numbers. This month we see a succession of these lucky numbers on 11/11/11, so make sure you put that bet on, buy that lucky ticket, or just enjoy the fun as all the figures turn to 1 on a digital clock readout. ALBION UPDATE Paul Rogers, former Albion captain and Head of Commercial Services at the American Express Community Stadium, gives us an update on the latest events and developments at the stadium This season continues to bring thrills, surprises and a lot of hard work for the team at Brighton & Hove Albion. The most exciting news this month is that the American Express Community Stadium will get its first taste of international football when England Under-19s meet Denmark in a friendly on 10 November. The game will be England’s first on home soil since February and comes on the back of next month’s mini tournament in France which sees Noel Blake’s young charges testing their mettle against some of Europe’s finest youth development teams. Blake said, “I haven’t been to the new stadium myself but The FA’s Club England setup thought it was very impressive when they visited recently and it looks superb from the games I’ve seen on TV, so our youngsters will relish playing there I’m sure.” We are also delighted to announce Texaco as a club partner for the 2011/12 season.
Brighton & Hove Albion first team
The Texaco brand are going to be fuelling Gus Poyet’s first-team coach travel across the breadth of the country to every fixture throughout the season. If any Seagulls fans want to follow Albion home and away they are encouraged to fill up their vehicles at a Texaco forecourt. Albion also made an impressive start to the Football League Youth Alliance Cup on Saturday, with a 4-2 home win over Aldershot Town. The Under-18s remain unbeaten since the opening day of the season and goals from Ben Gray, Calum Sherriff and a Shamir Goodwin brace secured victory from the first of five consecutive cup games. Off the pitch, we were also delighted to host a huge number of business and community events at the stadium, including Sussex charity Sightsavers’ Junior Painter of the Year Awards 2011 (see page 64), with budding young artists from across the county receiving prizes from Chief Executive Martin Perry and a surprise appearance from Gully.

for England schoolboys, but I was never focused enough to have made a career out of playing football. In truth, I was too lazy. I got tall very quickly too as a youngster, so seeing as I was 6ft and quick, I just used to hang around upfront as a bit of a gloryboy striker. These days I’m getting thicker round the waist so I have to sit in the middle of the park and just spray the ball around rather than do any actual running. The film features Liverpool stars Kenny Dalglish, Steven Gerrard and Jamie Carragher. You’re a big Liverpool fan so what was it like working with your heroes? Unfortunately I never got to meet Steven or Jamie during the filming but I did persuade Kenny to actually be in the film. I’d met him before at the charity Soccer Aid games so he asked me about the film. I told him that I was in it with Bob Hoskins so he realised then it was actually a proper film. I’m glad I had a hand in that because he’s great in the film! You went to boarding school here in Sussex, at Ashdown House, Forest Row, so how come you’re a Liverpool fan? I was 5 or 6 years old and Liverpool were the best side at that time and always on the TV so
30
Did that come naturally? Because I’m a Liverpool fan, my friends have always ribbed me about when exactly it was that I lost my ‘Scouse accent.’ But for the purposes of the film it was important that I got the accent right. I wanted to do it justice and didn’t want to come across as a fake so I spent a lot of time working with a coach and getting it as perfect as
finding an American actor to play him. They came to London and I got asked to read the part with about 150 other actors. Incredibly, within 48 hours I was on a plane to meet Tom Hanks in LA. I met Tom on the Friday, which went okay, but I still didn’t think I stood a chance of landing the role. So I went out on the town with a mate of mine until five in the morning. Three
I could. Did you always want to be an actor? The thought first occurred to me at boarding school. That was where I first discovered theatre. Each summer we’d stage a Gilbert and Sullivan operetta and I used to love singing the solos. Then when I was at Eton, we put on a production of Nicholas Nickelby. I must have been 16 and that was the moment where I thought, ‘I love this. This is what I want to do.’ I knew then that I wanted to go to drama school. Before you made it as an actor, what was your worst job? I used to sell car alarms on the phone! That was pretty bad. I’d have to ring up people out of the blue and try to sell them something they didn’t want. I was in a permanent bad mood because of that job.

I still felt drunk, so I had about four showers and poured coffee down my throat. But Steven couldn’t have been more charming and the three of us hung out all weekend like old friends talking about football and London… and I ended up getting the part. How did you come to twice host comedy quiz Have I Got News For You? It’s always been my favourite TV show and I guess I’m a sucker for punishment so I had to come back! Funnily enough, I’ve always enjoyed watching Boris Johnson host it. He’s outlandish, amusing and a little bit different, so he’s very watchable. You seem to be very popular with the ladies. Fireplaces When selecting a fireplace, the first thing you need to consider is how often it will be used. If this is going to be the focal point of a snug area in the home then it is critical that you choose a fireplace and surround that will look beautiful but will also cope with the constant use in the colder months. If, however, you are simply choosing it for a room where you know it won’t be used much but you want one that will look attractive, you may want to simply focus on the surround and mantle piece. Open fires instantly add character to a room. People love nothing more than to gather around a burning crackling fire watching the dancing flames before them. Just like wood burning stoves opposite, they simply require a room that has a chimney. Upkeep of an open fireplace isn’t too unmanageable; simply clean it regularly, and have it swept by a chimney sweep twice a year for safety.
Whether traditional or modern, fireplaces light up a room all year round

Wood Burners In recent years, wood burners (or stoves as they are often known) have become hot property (excuse the pun). Providing a warm focal point, these attractive and safe heaters also give peace of mind to people keen to help the environment by not giving off any harmful fumes or by using up energy. Classically looking, usually with a glass door for the beautiful flame view, wood burners can be integrated easily to a room containing a chimney adding a timeless look, but giving modern expectations of heat instantly. Wood burning multi fuel stoves bring a traditional heat source in to the home while being effortlessly practical and safe
Electric fires come in many modern designs that include pebbles, wood or simply coal
Electric Fires In a choice of designs to suit any taste, an inset electric fire can be fitted into a fireplace opening. Alternatively they can be secured flat to a wall using an optional spacer kit. They are ideal for replacing an old gas or electric fire within an existing fireplace, or being used in conjunction with a surround set. With a realistic flame effect, and real coal or pebble fuel bed, this is a perfect replacement fire solution.

BE AWARE OF YOUR MOUTH Sandy Bone, Hygienist at Marina Dentalcare on Mouth Cancer Action Month 1st - 30th November 2011
A
s I sat in the conference hall at the UK Oral Care Conference 2011, it occurred to me that the very middle aged lady that was presenting to us was talking about very young children. It was only then that I realised that her oral cancer must have been diagnosed and treated when she was in her very early 20’s - several decades ago! At first glance this lady looked no different or you or I. However, closer inspection reveals that the original tumour while being particularly vicious had been treated successfully and with the care from many professionals this lady had been able to not only bring up her three children but create and run a charity called ‘Let’s Face It’ which helps people who find themselves in a position similar to hers to deal positively with the situation. She was an inspiration. Cancer of any kind now affects one in three of us and that figure is set to rise. Thankfully the days of it being the ‘big C’ and not really discussed are long gone. This is good as open discussion can only improve the futures for patients and encourage people to seek help sooner. November 2011 is Cancer Awareness month. That means we are trying to raise awareness of all cancers but for us at Marina Dentalcare that applies particularly to oral cancers. Just what is cancer? Your body is composed of many organs all made up of millions of cells. The cells that make up an each organ all have a specific job to do. The cells that cause a cancerous growth are cells that have forgotten their purpose in life. All cells have a different job to do but all cells will exhibit similar characteristics while some will have variations which means that they have specialized in doing a particular job. Nerve cells for instance will have many similarities to skin cells but they could not function as a skin cell. They can only function and do the work of a nerve cell. All cells know how to replicate themselves it is one of their basic functions. But in certain circumstances they will forget their important specialized work of being part of skin, bone or maybe liver and just spend
their time replicating and growing at a much faster rate than they should. These cells become what we call a ‘growth’. Sometimes these growths will be just that, an extra bit that will just grow bigger and can be removed. However other growths exhibit different characteristics. These cells do not just form an extra lump and they will behave quite differently. As they grow they will make the organ that they are part of become smaller. So while the ‘growth’ is growing the number of working cells is becoming less and other organs may become involved as well.
Why are cancerous growths on the increase? There is still much that is unknown about that but we do know that certain types of lifestyle can increase the chances of developing cancers. Smoking is of course the one that is the most well known. In cigarettes there are many chemicals and pollutants produced in the process of making and smoking a cigarette. In small amounts our bodies can cope with these things but the drip, drip, effect of the carcinogens (i.e. pollutants that are known to cause cancers) over time can have the effect of creating changes in the cells which will eventually cause them to become cancerous. Please do not smoke. The numbers of cancers linked with alcohol are also on the increase. There is much conflicting evidence about the health giving properties of alcohol but its overuse is now known to be carcinogenic, particularly in the mouth. In recent years the use of mouthwashes has increased enormously. Many mouthwashes use alcohol as a preservative. If you are using one of these and you drink alcohol it may be wise to change to another brand of mouthwash that is alcohol free. There are several on the market now, e.g.
Fluorigard Alcohol Free, BioXtra Rinse . Oral Cancers like many cancers will be easier to treat if they are dealt with at the earliest possible stage. This is why your dental check up will now include a visual examination of not just teeth and gums but the palate, cheeks and tongue, both the top and underneath. Your dentist is looking for anything that should not be there. However we would like you to start being aware of lesions in your mouth that are new of different. When cleaning your teeth take the time to have a look at these soft areas of your mouth. It takes much experience for a professional to be able to spot something abnormal but you will notice a difference in your own mouth if you check regularly. Maybe that area of your tongue is usually dark pink and is now exhibiting white patches. That is almost certainly a condition that will not cause to many problems but anything that is different from your normal, get it checked. An ulcer that has taken more than two to three weeks to heal should always be looked at. Maybe a change of shape has occurred – get it checked. Look at the skin under any dentures any persistent soreness ? – get it checked. If you have small children take time to check their mouths and teach them to do it for themselves as and when they become able. Going to a conference was a good thing to do to further raise my own awareness of oral cancers and their effects. This November at the practice we will try hard to raise your awareness of the condition. The more people know and talk the greater will be our success rate be in helping people prevent some of the potentially devastating effects of this disease. Facts: • Mouth cancer has increased by 46% between 1997 and 2008 • 1,822 people died from mouth cancer in 2008 • Two-thirds of mouth cancer cases are diagnosed at a late stage, reducing the chances of survival. • For more information visit: www.mouthcancer.org For further enquiries please contact us at info@marinadentalcare.co.uk

ABSOLUTE MAKE UP Celebrity make-up artist Jeni Dodson is our independent beauty advisor bringing to you the latest beauty buzz and hot tips straight from the red carpet!

Eyebrow envy It’s bye-bye thin and hello bushy! Strong eyebrows have been making a steady comeback this year and now with some of the most beautiful women in Hollywood currently sporting the new, fuller brow, there can be no mistake. Anne Hathaway, Keira Knightley, Megan Fox, Kate Winslet and Natalie Portman all have brows that are thick and defined, not to mention Emma Watson, who recently graced the cover of Elle magazine, and is reining supreme in the eyebrow department! It’s a pretty easy trend to follow, but are you ready to embrace the ‘Power Brow’; a look that Brooke Shields wore back in the day. Well-shaped eyebrows can do wonders to frame your face and Brooke Shields’ brows even defined her look! Whether you prefer to have them waxed, threaded or to have them tweezed, if you’re too nervous to take matters into your own hands, see a brow expert. They can help you assess what you need to do in order to get the most flattering brow shape for you. Then you can simply maintain the shape at home.
First: Step away from the tweezers and let your eyebrows grow out as full as possible. This sounds scary and may take a while, but when you stop obsessing over those tiny hairs, they won’t bother you as much. And you’ll finally see that your brows do actually grow - when maybe you thought they didn’t. Beef up your brows: The eyebrows should never be neglected, and thicker eyebrows will enhance the natural beauty of your eyes over thin eyebrows. Thick brows are a sign of youth and thin brows can actually appear to detract from your eyes. Shape still matters: When shaping your eyebrows there are a few rules to follow. Brows start where the curve of your brow bone meets the top of your nose and then ends wherever it stops growing naturally. The brow arch or highest point of a brow shape should be directly above the outer rim of the iris. The arch is usually 2/3 of the length of the eyebrow. Perfect plucking: After a bath or shower when the skin is clean and smooth, start plucking in a good natural light using a magnifying mirror. Try to keep the shape even and alternate between brows as you pluck. Pull the stray hairs away in the direction of growth to avoid breakage and to create a smooth, curved line from end to end. Filling in: To formulate naturally thick eyebrows use a sharp
48
eyebrow pencil but avoid waxy ones as these can look unnatural. Draw in hairs with light and subtle strokes from bottom to top using a neutral shade and follow the natural structure. Fill in parts that are not covered with hair using a brow powder and choose a lighter colour than your natural hair colour. To softly enhance eyebrows, choose a powder shade that’s one or two shades lighter than your hair colour. Dip a firm, slanted angle brush in the powder and use light, short strokes to fill in brows. To blend the powder into your brows, brush the hairs with spoolie or a clean mascara brush. Seal in the colour with a clear brow gel. Sparse brows: When applying make-up to your brows less is generally more. You should never be able to see where the make-up starts and where the hairs stop. But if you have very sparse brows, fill them with pencil first, top that with powder then finish with a tinted brow gel, this look does require practice, but it will definitely put your face back into the frame!
High Brow Revitabrow - Eyebrow Conditioner Utilising the power of peptides and botanicals for strengthening, conditioning and nourishing, eyebrows are left thicker and fuller. f you’re aged between 7-11, love dogs, and are based in Sussex, you could win a fantastic opportunity to go behind the scenes at Dogs Trust – the UK’s largest dog welfare charity - and be a star helper at one of its rehoming centres for a day. Dogs Trust has teamed up with Nintendo to launch a new Junior Canine Carer competition. Five lucky people will get a rare chance to be a part of the team of canine carers at Dogs Trust Shoreham or Canterbury rehoming centres. After meeting some of the resident VIPs (very important pooches) you’ll get to help primp and preen the dogs and take them for a stroll. You’ll pop in to the vet clinic and hear all about the dogs we’re helping to mend, get an insider’s peek at a dog training session, and if you’re lucky, even get to name and cuddle some puppies! To top it off each winner will take home lots of goodies, including a Nintendo 3DS console and the new nintendogs + cats game, which lets you choose and care for your own virtual pet. To enter, all you need to do is design an advertising poster to show why a dog is not a toy. It can be as simple or as colourful as you like, with words, photos, drawings or all three! Pop princesses, The Saturdays, will pick out the five winning posters that they think are the most eye catching and thoughtful. You have until the 1st December to enter so hop to it! oger Clifton-Moore, self-appointed director of bike ‘Tours de Sussex’ for the Hove Squash Club Golfing Society, had a great idea. Worried about some of his fellow golfers’ lack of condition, he invited them to bicycle from Hurstpierpoint via scenic country lanes to Sheffield Park, and from there to take a ride on the Bluebell Railway. For a modest fee of £8 each for a single train ticket plus 60p for each bike in the guards van (unlike much of today’s rolling stock, the Blubell Railway is bike friendly) they enjoyed the sounds of the old steam railway and the ribbon of smoke trailing behind the engine as it travelled north. Having their first much needed beer of the day in the buffet, they then arrived at the end of line at Kingscote (just south of East Grindstead). From there the six heroes biked to the Cowdray Pub near Balcombe where they sat outside and had a long lunch before
the long ride home back to Hurst. “We only did thirty-five miles,” said Roger. “Seemed more like fifty,” said the bikers! The Hove Squash Club Golfing Society and its members do much for charity and recently helped, along with many others, to raise £6,500 for the Martlets, the profits of a golf day at the Dyke Golf Club.

3. To make the dip combine the tomatoes, coriander, Worcester sauce and shallot, season and set aside. 4. Pour the oil into a large, deep frying pan, to a depth of about 4cm, and place over a medium-high heat. Fry the croquettes until golden all over for a total of 5 minutes – you may need to do this in 2 batches to avoid overcrowding the pan. Drain on kitchen paper and serve immediately with the dip. For the potato rosti: Mix the potato, shallots, flour, sea salt and freshly ground black pepper in a bowl. Add the oil to a heated pan. Using a teaspoon, spoon out heaped teaspoons of the mixture into the hot pan, turn to a low heat and flatten down, creating separate small discs of rosti. Fry until both sides are crisp, remove from the pan and remove excess oil on paper towels. Place to one side. For the crispy fried shallots: Heat the oil, test it is hot enough by dropping a piece of shallot in and checking it bubbles and crisps. Separate the shallot slices into rings and place them in a medium bowl. Make cer tain the shallots are not moist, otherwise they may splatter when they go into the oil. Sprinkle flour over the shallots and toss them lightly to coat evenly. Working with a small quantity, sprinkle the shallots into the oil and stir gently to keep them separated. Fry until golden brown, about 5-6 minutes. Remove with a slotted spoon, thenput on paper towels to drain

ABSOLUTE LOCAL HISTORY
Fall in love with the
Seven Sisters Tim Parker takes a walk around East Dean and the glorious Beachy Head at Seven Sisters Country Park ithout doubt it is one of the most remarkable places in the world. An area of great beauty, full of history and yet Beachy Head itself has a darker, even frightening side. On a bright, sunny day rolling fog banks, cold and wet, can in a matter of minutes reduce visibility to a few yards. Then from the bottom of the cliffs the Beachy Head Lighthouse will start its mournful warning. With the fog, there will be a sudden drop in temperature and it will become all too easy to lose one’s sense of direction. “Am I walking towards the edge?” Still, there were no such worries when, on the last day of September, my wife Beth and I set out to show her sister and brother-in-law the Seven Sisters Country Park, the large patch of marvellous downland that backs from the sea cliffs. Autumn, I am told, is meant to begin in the second week of September, but it was like a summer’s day. Only the browning of leaves and fields gave a hint that summer was over. We entered the park by car from Seaford,
W
glistened in the sun, calm and peaceful. But there’s controversy here. The river south of the bridge is kept in hand by manmade banks and The Government Enviromental Agency would like the valley to return to its natural state: to do away with the banks and let the Haven flood. It would be good for bird life and for the natural environment, but the plans for the Haven do not meet with universal approval; there are fierce arguments for and against. Many of you will know Drusillas, the much loved Park and Zoo in Alfriston. What is less well known is that before the last war the creator of the Park, one Captain Ann, used to offer boat rides on the Cuckmere from the river’s bridge to his tea rooms. Sadly, such a voyage would not be possible today. After crossing Cuckmere Haven we continued on the A259 towards Eastbourne passing Friston Forest on our left. It is not possible to see much of the forest from the road except for a line of weatherbeaten trees at the
leads to East Dean. Take the turning to the right and visit The Tiger Inn, an excellent pub with good food and refreshments at reasonable prices. We did, and were able to sit outside and enjoy the sun while admiring the village green with its surrounding houses and old buildings. Leaving the Tiger Inn we carried on south, passing Birling Manor, home of the Davies Gilbert family, who have farmed the Beachy Head area for over two hundred years. Finally we passed the Sheep Centre which holds one of the largest collections of rare sheep in the world. You can stop for tea, learn something about the history of sheep on the Downs, and buy a fleece to take home. A few minutes later we parked at Birling Gap which affords remarkable views of the Seven Sisters, including Seaford Head. Controversy swirls round Birling Gap as well. The National Trust wants nature to take its course here too, but many of the locals want to save the row of Historic Coast Guard
motoring down the steep hill and crossing the bridge over the Cuckmere River to Exceat and then up the hill on the other side of the valley which gave us a marvellous view of Cuckmere Haven. The river and lakes of the Haven
crest of the hill. But the forest is substantial with some good walks. It was planted with a mixture of beech and pine, the pine to give the beech some protection from strong winds. After Friston Forest there is a steep hill which
cottages from falling into the sea. Who will win? Well, my money is on the sea. The day we visited was a day of spring tides and when we looked down from the cliff at high tide the sea, eating into the chalk white cliffs, was

ABSOLUTE LOCAL HISTORY With the fog, there will be a sudden drop in temperature and it will become all too easy to lose one’s sense of direction. “Am I walking towards the edge?” more white than blue. The weather was so warm that many were swimming from the narrow strip of beach. It looked fun and I was envious. For the next part of our tour, we took the coast road to Eastbourne which runs alongside the South Down Way to Beachy Head, and passed close to Belle Tout Lighthouse. Belle Tout was built in 1832 to warn Channel shipping away from the dangerous rocks and tides which lie off Beachy Head. Its splendid tower is built of Aberdeen Granite, dragged across the Downs by teams of oxen. Unfortunately Belle Tout was not the success that was hoped; it was badly sighted with sea mists and fog obscuring its lights. In 1902 a new lighthouse was built below Beachy Head and that lighthouse is still operating, casting its light for some 25 miles. As for Belle Tout, well these days it is the most marvellous B&B offering bed and breakfast and magnificent sea views. Leaving Belle Tout we drove to the very top of Beachy Head and enjoyed the views. Eastbourne and Hastings to the east and below a sparkling sea. Back in the car the road takes a loop inland and rejoins the A259. We were soon back where we started in East Dean. Time for another at the Tiger Inn?

The Implant Centre team launched their new flagship surgery in Brighton & Hove recently with a celebratory evening of champagne, dinner and surprise shenanigans. Over 280 guests attended the official opening of the state-of-the-art dental implant practice on Hove’s prestigious Palmeira Square. Local dental teams and other colleagues toured the recently renovated practice, sipped cocktails in the grand reception and took part in impromptu entertainment. The vast basement of the building on Holland Road became the stage for some exciting and nerve wracking immersive promenade theatre with guests becoming participants in a murder mystery staged by the 368 Theatre Company. The new flagship premises incorporates spacious, light filled surgeries with glass atriums above, state of the art imaging facilities, ultra-modern sterilization areas and an on-site laboratory, designed and restored by local architect, Kevin Thornton of KTA Ltd in conjunction with the Powells Group. Interior design is by Brighton-based Georgina Gibson, the result is a stunning restoration of a beautiful listed Regency building. The Implant Centre specialises in placing dental implants and associated treatment as a permanent solution to missing teeth, failing bridges or uncomfortable dentures. The new centre complements the successful Haywards Heath practice established over five years ago by Guy Barwell, Bill Schaeffer and Jonathan Murphy. The Implant Centre would like to thank their sponsors and colleagues for helping to ensure the evening was such a success.

righton Film School has been relaunched under new management to offer a more extensive range of flexible, competitively priced courses leading to nationally recognised qualifications. The Film School has been running successful courses for over 10 years and the new owners – Brighton Film Productions - want to build on that foundation and offer a wider range of courses in film production, screenwriting and acting for camera. The extensive range of film equipment already in the school has been expanded to include a brand new suite of the latest Apple Macs which will be installed with all the latest industry standard software. These new resources will complement the impressive range of existing film equipment in the school, such as the Mitchell Super 35mm camera from Hollywood. Brighton Film School is located in the Brighton Forum building on Ditchling Road, a central location that is close to public transport links and all city centre amenities. For further information about Brighton Film School, visit www.brightonfilmproductions.co.uk or contact Andrew Green/Gary Barber on 01273 607020.

The eco juggernaut is heading our way
ast month I had the pleasure of taking tours on some of Brighton’s Eco Houses as part of the Eco Open House event. Eco Houses often have a particular aesthetic that ranges from looking rather handmade to looking very earnest. However the house at 15 Lloyd Close (pictured below) by Koru Architects really stood out, for not following that aesthetic at all. The view from the street is of a contemporary white render house with a striking zinc roof - it certainly doesn’t scream eco house at you. Owners, Mark and Abi gave a very interesting tour around the building which internally is also very modern and to a very high specification. The house feels like a family house modelled in a European style and reminds me of houses I’ve visited in France and The Netherlands. At the rear of the property the roof-mounted solar panels and solar thermal panels reveal themselves and are all connected into a multitude of systems in the garage. It is quite evident from talking with Mark that assembling the package of renewables, water harvesting and the wood pellet boiler has been a complicated undertaking. Specification, installation and maintenance have all needed extensive research by Mark. All of the components have come from countries such as Germany, Austria and Switzerland. We simply don’t have the manufacturing capabilities yet in the UK, which is rather worrying as all new build homes in the UK will have to be zero carbon by 2016, the same specification as Mark and Abi’s house. The UK is very late in adopting a more sustainable approach to building, the insulation requirements of the 2010 Building Regulations are similar to Sweden’s requirements from the 1930’s. With energy costs rising and also the Government’s commitment to reducing carbon admissions by 80% by 2050, the greening of our housing stock will affect us all. The evidence is upon us already with most streets in Brighton having at least one roof with solar panels on. Fortunately there are various initiatives that will help us save energy, which I will focus on in next month’s column. THE REAL COST OF HEATING
Heating specialists, Sunflow, discuss the economy of electric heating
T
he recent cold winters have caused considerable heating problems as well as huge bills. Those of us enjoying warm comfy homes have to sympathise with people suffering through the cold amid burst pipes, faulty boilers, lack of oil or fuel poverty. All of us should re-think the way we keep warm. In Germany, there is a big move towards ‘individual time-switched’ heating, that is fully heating rooms just before and during use and either turning the heating down or off when not used, setting temperatures and timings on a room-by-room basis rather than using a single central programme. The Germans have developed a special type of chamottebased heater ideal for this sort of use. (www.germanelectricheaters.com) Standard electric heating, such as fan heaters or day-boosted Economy 7 systems are very expensive to run, but German heaters such as the ‘Sunflow’ range are much more efficient, are cheap to run, require no maintenance and last decades. The effect compares very favourably with oil and gas and just think, eliminate burst pipes, annual servicing, noisy airlocks, boiler insurance, boiler replacement and oil delivery problems to name but a few. Furthermore, thanks to the long lifespan and zero service requirements of these heaters, you could reduce your carbon footprint too. Electric, a real alternative heating solution.
