Reggie is an holistic therapist who has recently arrived in the UK from Hollywood, where he was working with clients such as Al Pacino, Halle Berry, Pierce Brosnan and Susan Saranden to name but a very few of his A list clients. After many years working with such stars, Reggie was placed under private contract with the Saudi Royal Family. Reggie has now arrived in the UK to get back to his roots of helping real people with real issues and has taken a residency at a leading health club in London four days a week and he will now be working at The Lansdowne Spa every Friday. T
he stadium team has really hit the ground running and we have already hosted over 12,000 people at our fantastic new facilities at the stadium since we opened for events on 8th July. The first was the St George’s Day luncheon for the Help for Heroes charity, followed by a big business gathering in support of Chestnut Tree House. We have also had a hugely successful club dinner with past players and managers enjoying a great evening remembering our Withdean years and looking forward to life at The Amex. Plus of course the football, and we have got off to a flying start this season. We have been really enjoying hosting our 1901 Club members, getting some great feedback from people on the facilities, décor and hospitality in the members’ lounges - and the comfort of the padded seats! It is great to see so many Sussex business leaders rallying behind the stadium, which is already the place to be in Brighton & Hove. TO RUSSIA WITH GLOVES! PJ, aka Peter Jarrette, Brighton’s favourite socialite, with the latest in great new venues, events and happenings
Dear diary It didn’t start with me chasing the Heathrow bus in a taxi dressed in my pyjamas with a hastily packed carry-on at 4 in the morning to make the early Aeroflot flight to Moscow. No, a more than hectic set of weeks started well before that. I was already moving fast trying to keep up with the streak of lightening that is Liz Brewer, the internationally famous society doyenne and ring-leader to the uber ladies-who-lunch (but on yachts and private jets) set. Like her close best bubbly-sipping girlfriends, Ivana Trump and Dame Shirley Bassey, Liz Brewer is an energetic and bright-eyed observer and pundit on all that is social prime party positioning. Wearing my events planning hat for Debs Lewis’ Grey Cell Events, I was charged with escorting Liz through the paces of a book signing at Brighton’s Waterstone’s for her latest hardback Liz Brewer’s Ultimate Guide to Party Planning & Etiquette. Liaising with local press at the shop, Liz was motored into town from Sedgwick Park House in Horsham, where she spent the previous night with amiable host and hostess Mr. And Mrs. John and Claire Davison. In fact Liz had been driven straight to the Davison’s mega manse from a date with her long time friend Tom Jones at his Sandown performance. Perhaps that is why she was so happy when I met her at the signing? Some of Liz’s chums travelled into the city too to catch-up with their favourite lady. One chap, a designer who created a memorable dress for Charlotte in the Sex and The City TV series, had plans after our Champagne sipping and signing to view property in our own sexy city immediately afterward. We all hit it off marvellously as Diana Frangi, who was photographing Liz, wrote some of the sound track for the SATC 1 movie. And, of course, as I use every opportunity to mention my NYC friendship with the institution’s creator, the original novel’s author Candace Bushnell, we all found common a topic to toast alongside Liz’s fantabulous information-packed book! The Liz party then moved back to sunny Sedgwick Park House where we entertained a clutch of Sussex’s own luncheon set including PR Queen Stephanie St. James, her gorgeous daughter Charlotte Elizabeth, and Jan Irvine, the very talented Brighton-based artist. Later that evening Liz hosted a delicious, glittering, black tie dinner for dozens of guests catered slickly by Sam’s of Brighton. In attendance were Brighton designer Toni Pickles of Get Waisted, Liz’s publisher David Hornsby, MD of Dynasty Press and escorting the dashing gent was the elegant, internationally-known author, socialite and Royal TV pundit Lady Colin Campbell who I hit it off with tremendously. In fact my wife Karin and I have been invited out to her permanent home. It is a substantial Chateau in sud de France where I will be conducting an in-depth interview for my editor at the foreign international glossy Caribbean Belle. The charming Mr. Hornsby of Dynasty Press made me an offer I cannot refuse. Guess what it might be... One day later found me in that awkward situation in the dark of morning chasing the Heathrow bus, bound as I was for Moscow with a connection to Ufa, the cultural city that gave birth to oil and the legendary God of the Ballet, Rudolph Nureyev. You see, in-between all of this I was made an offer from another quarter (a Russian talent management), that I found hard to resist. An all-expense-paid trip to Russia to perform live for 45 minutes on a stadium concert stage in front of hundreds of eager faces and media as the male lead in a popular Bony M tribute act! Yes readers... for a two-day turn-around tour I was greeted, treated, photographed and lavished, along with three lovely chanteuses, like a pop star! We were VIP from tip to tail, from UK to USSR, from cars to hotel rooms and all stops along the way, while surrounded by bodyguards, drivers, interpreters, managers and fans... a most surreal end to a very, very high profile month. It seems too I’m set to reprise this role in Russia later in the season when it’s colder. To Russia with gloves! An exclusive ‘club’
Have you noticed how death seems to suddenly bring out the rose-coloured glasses? It struck me recently after the untimely death of singer/songwriter Amy Winehouse. Her decline was reported with a kind of relish by the Sun, who always used to refer to her as Amy Winebox, and they seemed to delight in printing pictures of her out of her head and looking like trash. She was easy fodder; a talented wild child caught in the headlights of fame and fortune, who kept bad company and was always portrayed by the Sun as somebody to despise and laugh at. Interesting that the Monday after her death they printed an eight-page ‘tribute’ to her, which lead with a picture of Amy as an attractive (if eccentric) young woman. The pages obviously spoke of her downfall, but this time is a more sympathetic and non-gloating manner. Had she survived that fateful Saturday, and carried on her weekend reeling through Camden, reeking havoc, then they would probably be carrying the usual vitriolic reporting of her antics. Instead, her death has suddenly put a stop to that. Now it’s time to concentrate on her talent, and a reflective, but more sympathetic, musing about her downfall.
“Let’s remember their lives and how they enriched ours.” There has also been much talk about the fact that so many talented artists have died at the age of 27 - the so called 27 Club. Jimi Hendrix, Brian Jones, Janis Joplin, Jim Morrison and Kurt Kurbain. Perhaps too much has been made of it - the members almost being glamorised by being in the ‘club’. Winehouse joins an exclusive group of amazingly talented artists, but there is no glamour in this club. One member shot himself, another choked on vomit – all the deaths were fuelled by addiction, and the latest ‘member’ died alone. Death is inevitable, but the early demise of an artist - locked forever in youth - should not propel them to a new heroic level. Instead when we think of them, let’s play some of their music and remember how they used to thrill us when they were alive. Download some Jimi Hendrix or Nirvana today and finish up with one of Amy’s haunting songs. Let’s remember their lives and how they enriched ours.

Martin Kaye, owner of The Classic Watch Company discusses his passion for Rolex watches, and how he built up his successful company
I
t all started about 1970 when my passion for Rolex watches began. Every Sunday morning around 7am come rain, hail or snow, an outdoor antique market in the east end of London called Cutler
Street was the place I looked forward to going to more than anywhere else - this was where it all happened for me during my early teens. Around 30 to 40 regular hardy stallholders used to show their vast and diverse array of antiques, jewellery, diamonds and watches. I was fascinated with the hive of activity and how huge sums of cash would change hands. I was hooked and became determined to learn how to buy and sell watches. I left school at 16 and took a stand there to learn my trade. A short time afterwards, I knew I had to find the finest watches at the best possible prices, so with money I had saved, and with a little help from my parents, I booked a passage to New York, my plan being to scour the pawnshops and jewellery shops - especially 47th Street and the Bowery. My method was to get the Yellow Pages, phone up the likely dealers who may have what I was looking for, hire a taxi for the day stopping at the places I had marked off. This proved a good system and I came back to the UK armed with around 20 or so watches. I stalled out on the following Sunday and was inundated by the dealers who were literally pushing and shoving each other to be the first in line to buy my watches. Rolex models such as Princes, early Oysters, Rolex bubble backs and others were snapped up in less than an hour. I have used this system numerous times since to great effect at many other cities around the world.

The benefit of having a wet room as opposed to a bathroom is mainly that one can splash about as must as one likes without the worry of making the room wet or damp; it is built for it. Consider mechanical treatments For many lawns, mechanical treatments are the only way to prevent the build-up of moss. Hollow-tine aeration alleviates compaction and involves punching out thousands of cores from the lawn to allow air, water and nutrients to reach the roots. Next season, your grass will look thicker and healthier. Scarification uses a machine with blades and knives to get rid of thatch. It’s a much more rigorous and effective process than raking. Getting rid of thatch will considerably reduce moss levels. You can also help reduce the build up of thatch which is the main contributor of moss, here are a tips… Mow it properly The best thing you can do for your lawn is to make sure you’re cutting it properly. Many problems are caused by not mowing it often enough, then cutting it far too short when you do. In autumn you’ll need to mow less frequently than in summer as grass grows less quickly, but don’t let it get too long. You may need to cut through the winter if weather is mild. If the grass is a little long as spring approaches, mow in a couple of stages – try not to take more than a third of its length in any
one cut. Ideally your lawn should be kept between 2cm and 3cm high. Collect lawn cuttings Dead grass lawn will starve your lawn of essential water and light, and encourage excessive thatch and a build-up of moss. Make sure your lawn mower is up to the job! Consider getting it serviced to ensure blades are sharp, the engine is running well and the power cable is free of any damage. Clear up leaves Sweep up leaves regularly. If left on the lawn, they reduce the amount of light getting to the grass and, left for too long, will smother the grass over the winter. This leads to bare patches that are vulnerable to disease in spring. Removing leaves also helps prevent moss as leaves allow water to settle on the lawn. Small but beautifully put together Whether your outside space is only a patio, courtyard or a tiny patch of land, make sure it is laid out to be right for you

here are many people living in apartments in the Brighton and Hove area, and if you are lucky enough to have a garden flat, you will most probably have just a small area outside. You could also be living at present in a property with a fair sized
garden, and considering downsizing, but you may be concerned at the prospect of a smaller garden. Whatever situation you are in, there are plenty of advantages to a small garden or courtyard, and whatever space you have available, you can transform it into your own little paradise, with as little or much work as you like. Most small gardens don’t have a lawn, and living without a lawn mower is a great advantage. Mowing is one of the most regular and high maintenance jobs with a bigger garden. With a small garden, you can organise it to your own requirements - do you like pottering about? If so, you can allow yourself to use every space, to place pots and plant containers etc. If you like the minimum of effort in a garden, then you can just place some chairs and some low maintenance bushes and plants, and it will look after itself. For those not too keen on doing up the garden, there are plenty of companies that can create a bespoke area for you, whatever the size. A first for this year was the Magnolia Cup, supported by Audi, for the benefit of the Great Ormond Street Hospital. The list of riders included Clare Milford-Haven, Kate Reardon and Emma Spencer. Top trainers provided the inspiration to the riders along with support form the owners of the horses. Frankie Dettori made it his week winning many of the classic races. Sadly due to a toe injury he did not perform his flying leap in the unsaddling enclosure. However, the support by the crowds showed that he is still a favourite for the racegoers.

Mothers find time on their hands when little ones start school for the first time. Parents experience the empty nest syndrome when offspring go off to University or take a gap year. These situations can be used as a bonus though. Now is your time to decide what you want to do. Embrace the extra free time you are unaccustomed to enjoying.
And think what your options are on your own – you could work towards that higher position at work, as you know the person in the role at the moment is unsettled and looking for change. You could, with your new found freedom, take up a hobby, something you have always wanted to do, but have never got around to it. Think seriously and concentrate on your desire Don’t be tempted to discuss it with others (you may be discouraged or even laughed at). This is your decision. Many great business ideas have started with people laughing at the idea. Some people see others only in the role they are familiar with and cannot imagine them in another role – they may even feel threatened by your change. HANDS ON HEALTH Known as the ‘Hollywood holistic guru,’ Reggie Lenney tells our readers why he relocated to our city from tinseltown and recalls when he first discovered he had healing hands
Reggie, you have recently relocated to Brighton. Please tell our readers about what it is that you do: After training in traditional medicine in Canada in the early days, l quickly became disillusioned and sought out a different path. I then travelled to India and studied under the world’s leading guru for seven years.The reality of alternative medicine really made sense to me and l went on to Eastern Asia and spent 10 years studying Ayurveda and traditional Chinese medicine. This is now my life. Essentially, I offer to heal. Not with any mumbo jumbo, calling on spirits or waving candles but with a common sense approach to the whole body, to what l call All Health. My clients tell me l have healing hands. l can certainly feel the pain and injury of patients through my hands but the healing is an approach to first treating the area of pain, and eventually the whole person. I’m a holistic life coach. There have already been whispers across the city about you being a Hollywood A-list therapeutic healer working with such names as Halle Berry,

Al Pacino and Pierce Brosnan (to name a few). How did you come to work with such big stars? When l returned from Asia, l was proud to be voted ‘Canada’s Best Therapist & Holistic Coach’ for three years running and was contacted by the actress Ashley Judd, who was on location in Vancouver making a movie. When the movie finished, she asked me to go to Los Angeles with her and l then found myself at the heart of Hollywood for the next 7 years. Many top names such as Al Pacino contacted me and following an initial session they insisted that l go on location with them whilst filming. I worked with Mr Pacino while he was making films such as Scent of a Woman, Insomnia, Ocean’s Thirteen, and Righteous Kill. Word went out and l was lucky enough to spend the next few years working with actors such as Robin Williams, Wesley Snipes, Brittany Spears, Pierce Brosnan, Halle Berry, Hugh Jackman and many more incredible people. Many movies these days are all action and can take an incredible toll on the body, especially on the un-prepared body. So, l spent a lot of my time getting their bodies prepared for the rigours of a long shooting schedule, and then maintenance throughout. When Halle finished the current
movie, she asked me to work with her to ready her body for pregnancy and to tone up rapidly post-natal. I went on to work with some of the best known American sports teams and then l was placed under private contract with many fortune 500 companies and even the Saudi Royal Family. With your therapies, you are bringing something new to Brighton and Hove.What aspects of what you do are unique? There are so many thing that l can help with. Certainly as a massage therapist, l can help with all forms of joints pains, back, neck, knee – wherever, but often the effects of that bad back or pain can be fixed in the short term but keeps returning. This is caused by another factor in the patient’s life and until that is resolved, the back pain will return. I look at the whole body and lifestyle and like nothing better than having a patient say that they don’t need to see me anymore. I also have many clients that need assistance preparing and strengthening their body and immune system leading up to giving birth, and then to rapidly regain shape and health following, all forms of sports injuries and pre-conditioning. Real value is added when a patient has a long term problem for which the only answer is surgery. Before surgery l ask everyone to come to see me, as in 8 out

Actor Pierce Brosnan was quoted as saying that you are ‘a true healer.’ When did you first discover that you could ‘heal’ people with your hands? I have a long cherished saying by Thomas Edison ‘The Doctor of the future will give no medicine, but will interest patients in the care of the human frame, in diet and the cause and prevention of disease’. After working with Pierce, l was overjoyed when he wrote ‘Reg, there are many claiming to be healers, there are many wanting to be healers, you are the one of the few true healers. Here’s to the hands that heal – yours. I don’t consider myself a ‘healer’, I prefer to look at the common sense factors that create imbalance, pain and health problems, and educate my clients to take control of their health and life. Can you immediately sense upon meeting someone if they have an ailment or troubles? Most of the time, yes l can. When l met my first patient in Brighton, I immediately reminded her to breathe. She looked rather taken aback and then out came the story that she had already suffered neck surgery but it was no better and the pain made her tense and affected her breathing. This just exacerbated the problem. I have seen her twice and she is now 80% free of pain and will never ever go under the knife again. What aspects are you able to heal? That is difficult to say until I actually work with an individual; however I truly feel there are no limits. In all my years l can honestly say that l have never come across a condition that l could not eradicate or at the very least, remove the majority of the problem or pain. So, now you are in our city by the sea and are based at The Lansdowne Hotel. Tell us a bit about what you’ll be offering clients there?

ankind has used essential oils for healing and health for thousands of years, including extensive use by the ancient Egyptians. Today, essential oils are widely used in topical lotions, soothing baths, aromatherapy and in a great variety of herbal remedies. Essential oils are derived from the distillation of leaves, stems, flowers, bark, and roots of plants. They can affect the body’s physiological system directly or indirectly. For example, a couple of drops of peppermint oil taken orally can ease digestion, while inhaling lavender oil will have a calming effect. Some essential oils can be administered orally to help stimulate digestion, and many essential oils can be applied topically to ease inflammation and alleviate pain. Essential oils with antiseptic and antifungal properties are also used to disinfect and heal cuts, abrasions and other wounds and skin conditions.
One of the most popular uses of essential oils is in the field of aromatherapy. Their use in aromatherapy has been shown to be effective in treating physical, psychological, and aesthetic conditions. The sedating as well as stimulating effects on the nervous system by some essential oils can indirectly aid in lowering or raising blood pressure as well as normalizing hormonal secretion. Steam inhalation of essential oils is also effective in treating respiratory conditions such as a cold or flu. Oils effective for inhalation include angelica, eucalyptus, sage, myrtle, cypress, lemon, lemon grass, mountain pine, ocean pine, juniper, chamomile, tea tree, thyme, hyssop, niaouli, and cedar. Please note that steam inhalation is generally not recommended for asthmatics. Massage using essential oils is a classic aromatherapy treatment that triggers the body’s healing process by stimulating blood flow and lymph fluid. Careful Note should be taken though that almost all essential oils should be diluted before direct application to the skin, as direct application can cause severe irritation. Dilution usually consists of 15 drops of essential oil to 1 ounce of carrier oil. Carrier oil is a vegetable oil that is pressed from the fatty portions of seeds, nuts or kernels.
Examples are almond, hazelnut, jojoba, wheat germ, coconut, olive oil and aloe vera oil. Oils that soothe tight muscles and increase circulation include rosemary, lemon, lemon verbena, lemon grass, lavender, juniper, cinnamon, birch, and swiss pine. Calming oils are bergamot, Roman chamomile, petitgrain, rose, mimosa, lavender, balm, geranium, neroli, cedar, sandalwood, rosewood, orange, tangerine, and honey. Body and facial oils used on a daily basis nourish the skin. Sensuous body massage oils include jasmine, rose, cinnamon, orange, sandalwood, iris, and ylang-ylang.
Essential oils dropped in a bath will induce relaxation and lift spirits. Put 5 to 10 drops of the oil of your choice in the bath water. However, for sensitive skin, the oil can be diluted in the base oil. Make sure to wipe the tub after the bath, as essential oils can mark some tubs. There is nothing like a relaxing foot bath using essential oils. Four drops of peppermint, rosemary and thyme added to a large basin of water will bring those tired feet back to life. For an added bonus, after soaking, rub lavender oil on your feet. Essential oils are also effective for treating insomnia or inducing a peaceful night’s sleep. Just scent the pillow with 2 or 3 drops of the oil of choice. Lastly, handkerchiefs are a most convenient way to use essential oils. Inhaling a scented handkerchief with your favorite oil will ease the stress that accumulates throughout the day. Just 2 or 3 drops will do the trick. ABSOLUTE

Incorporating hard and edgy styles to hair is a clear stamp of power and confidence but this can also be done more subtlety via the sexy but very controlled 1960’s volume created at Jean Paul Gaultier and Bottega Veneta. Hair was whipped up and moulded into a sleek and classic beehive with clean cut silhouettes, which kept the looks feminine but direct and authoritative.
Of course it is and this is the perfect season for those wanting to showcase shorter hair. If you’re feeling bold about styling you could try your hand at the slick and slightly androgynous updo. Day old hair usually lends itself better to such a look but using the right product can also give you a good base to work with. Scoop a generous amount of Electric Shaping Paste into your hands and rub with friction before working the product through the hair from the nape of the neck to the top of the head. Don’t be afraid to use as much paste as is necessary as the product has a non-oily texture, meaning you’ll only end up with a smooth, shiny and silky finish. Once all of the hair is coated, use a Denman Tail Comb to finely tuck it into place at the sides and back. You may wish to twist and secure the lengths at the back so it looks completely seamless. Now for the adventurous part - use more of the paste if you need to so you are able to lift the roots vertically at the front and sculpt into a loose side quiff with your fingers. Drape the hair as you wish but the finished look should be one

With over 100 people in attendance it was a day of fashion discovery from the trends for this autumn and winter from the Electric art team and models wearing Gresham Blake’s clothes. Shift your concentration to the inner corner of the eye to secure the ‘wow factor’. This will bring the focus and a sparkle to the eyes, and help to illuminate the centre of the face. On the outer corners of the eyes, crease, and along the lower lash line apply a mid shade in a

‘Rose Gold Shimmer’ then to refine and shape the eye, blend a darker shade in ‘bronze, rust or copper’ from the outer corner of the eye, up to midline. The lighter and darker shades should blend seamlessly. EYELINER: Line your upper lash line with the darkest brown or bronze eyeliner. Create a small delicate wing effect on the outer corner and smudge ( no hard lines here). To line the lower inside rim use a waterproof eyeliner with a light shimmer to help the look flow. LASHES: Remember to finish off and crown the look of your eyes, curl lashes using an eyelash curler before coating with lashings of mascara adding a rich texture with a big bold lash. BROWS: Strong brows are back in a big way for autumn/winter so fill in sparse areas. To shape and define the brow use an angled brush with powder or apply soft strokes using a pencil, apply a wax to unruly brows and lock into place. LIPS: Fill your lips with nude lip pencil. Guy is confident “the result is an elegant, listed building with an impressive interior where attention to detail and quality of workmanship is apparent throughout – factors that naturally synergise with our own core values of expertise and excellence.”

righton & Hove City Council has won a national award for its work to promote the use of electric vehicles. Electric vehicles produce zero emissions on the road, which is a huge advantage over conventionally powered vehicles in terms of air quality. The council’s electric vehicle charging point scheme, which began in February 2010, was the first project of its scale in the UK outside London. Four on-street electric vehicle charging points have been installed at Bartholomew’s in central Brighton and Ditchling Road opposite The Level. A further four have been recently installed, two at Withdean Stadium which will be up and running at the end of the week. The British native oyster season is upon us (1st September until the end of April 2012) giving us the perfect excuse to indulge in a great food pairings - the combination of freshly shucked oysters and Tabasco Pepper Sauce.
F
or your weekend barbecue, forget the usual sausages, burgers and chicken drumsticks. Instead try barbecuing succulent chicken pieces until cooked through and piping hot, then generously pour elderflower cordial over a selection of summer vegetables and roast until softened and lightly-scented, before serving with fluffy coriander cous-cous. The delicate elderflower flavour adds a delicious twist to this traditional summer dish, putting variety back into your alfresco dining experience!
Barbecue chicken with coriander cous-cous and elderflower roasted vegetables Serves 4
Oysters Tempura
Ready in 30 minutes
Freshly shucked oysters cooked in a thin, crisp, light tempura batter and ser ved with Tabasco Red Pepper Sauce for dipping, with finely chopped spring onions, garlic, ginger and coriander in a light syrup with just a touch of sweetness. Ser ves 2 For the sauce 50g/2oz caster sugar
For the batter: 100g/4oz plain flour
100ml/4fl oz water
1 egg
2 salad onions
100ml/1/4pt chilled fizzy water
1 clove garlic
Sunflower oil for frying
2.5cm/1in root ginger
12 oysters, freshly chucked, deep shells reserved
Few sprigs of coriander, chopped 6 drops Tabasco Red Pepper Sauce
Preparation: First make the sauce. Pour sugar into water and dissolve over low heat. Bring to bubbling for about two minutes until just coloured and slightly syrupy. Cool slightly then stir in peeled and chopped spring onions, garlic, ginger, coriander and Tabasco Red Pepper Sauce. For the batter. Sift flour into a bowl and add egg. Beat, slowly adding the water to make a batter the coating consistency of single cream. Heat oil in a pan until a cube of bread browns quickly. Dip oysters into batter, one by one, and deep fry until crisp and golden. Blot on kitchen paper. To serve, return crisply battered oysters to reserved, washed deep shells and serve with sauce on the side, or drizzled over.

4 small bunches cherry tomatoes 3tbsp elderflower cordial 2tbsps olive oil 250g cous-cous 400ml vegetable stock Handful of fresh coriander
Method 1. Pre-heat oven to 200c, gas mark 6. Core, de-seed and cut the peppers into wedges. 2. Peel and quarter the red onion, cut the courgette into thick slices. Place on a baking tray with the cherry tomatoes. Pour over the elderflower cordial and 1tbsp of the olive oil, toss until coated. Cook for approx 20-30 minutes until softened and beginning to char a little. 3. Meanwhile, barbecue or grill the chicken for approx 20-30 minutes until cooked through and piping hot. 4. Make the cous-cous by placing in a bowl with the remaining olive oil, bring the stock to the boil, pour over and stir, cover and leave to absorb the liquid. Fluff up with a fork. 5. Finely chop the coriander and stir into the cous-cous. 6. Serve the chicken on a bed of cous-cous with the roasted vegetables, spooning over all the lovely elderflower juices. Brighton is such a multi-cultural, cosmopolitan city with a fantastic tourist trade that makes it so exciting to work within. The Brighton clientele are so friendly and enthusiastic and ready to try new tastes and experiences, which means a wide range of restaurants can flourish here. What aspects of what you do uniquely, do you think are key to your restaurants quick success? I believe our success comes from the fact that we do not compromise in the authenticity and quality of our food. We are faithful to the cuisine of Thailand and source authentic ingredients to ensure we serve every dish as it would be eaten in Bangkok, Chiang Mai or Phuket! Is any of your produce locally sourced and if so, is that an important aspect to you as a chef? As much of our produce as possible is sourced locally – for example our meat and vegetables are sourced in Sussex and our ice creams are locally produced in Brighton. A summer evening on
Soldiers Point Tim Parker takes his first visit to Shoreham Fort, an historic area on Shoreham Harbour
O
n an evening in July, I visited the Old Fort at Shoreham for the first time. “It’s a splendid place” said Niki, my eldest grandson. “I have been there lots of times and there are hundreds of black lizards all over the place”. That sounded exciting. Just a few days earlier Verity, my edtior, had asked me to write about the fort for this month’s edition; I must confess that despite living in Brighton for 50 years and sailing in and out of Shoreham on numerous occasions, I had never seen the Fort. If I am honest, I never knew there was one. But the name of the piece of land jutting out to sea to the west of the harbour should have given me a clue. So, Misha, Deborah, Niki and Sasha took my wife Beth and I to Soldiers Point, a precious piece of open land just to the west of the harbour breakwater. That evening, there was little wind but the sea sparkled and the light northerly breeze was just enough to give a bunch of sailing dinghies from Shoreham Yacht Club a good start on their Wednesday evening
entrance causing many of the racing boats to alter course. But in the meleé, the dredger did not sound her horn and there was no shouting from the yachtsmen; both sides knew the rules. While I was watching the dredger and the yachts the two boys had climbed a grassy bank which shields much of the old fort from view. Turning round I was amazed by the size of the fortification, a formidable deterrent to any French ship wanting to land troops or cause trouble. I was intrigued. It would be fun to find out more - who built the fort and when? Were the guns ever fired in anger? An initial search didn’t dredge up much information, but help was at hand when it was suggested that I get in touch with Gary Baines. Gary has done a marvellous job in keeping the history of the old fort alive and helping with its upkeep and restoration. In June 1857 the fort was completed at a cost of £11,685 and ten shillings - the Victorians seem to have been very precise with their budgeting. The fort was to be armed with the
water tanks. Then there was the question of accommodation, the fort’s barracks were built to house two officers, one master gunner and 35 NCOs and privates. This was no seaside folly; it was a serious line of defence. Although Napoleon Bonaparte had been defeated and died in exile some 36 years earlier, the French were still perceived as a threat. Nevertheless, l wondered why it had taken so long for Shoreham Harbour to be protected. French ships had navigated their way into the harbour, captured a ship and caused alarm and commotion before sailing away as early as 1628. Gary told me that the reason Shoreham Harbour was not deemed worthy of protection before the fort was built was because the harbour had become so silted it was barely usable. The river too had become erratic with its entrance shifting so far to the east that it was opposite the Aldrington Church in Hove. The river continued to meander for many years until 1816 when it finally seemed to establish that its best exit was where the two breakwaters now
race. They made a pretty sight, flying their different coloured spinnakers as they nosed their way out of the harbour. As it happened, while the dinghies were making for open water a large rusty dredger appeared at the harbour

While the Artillery were technically volunteers, they were a professional outfit and won prizes for their accurate shooting, achieving an ‘Excellent in practice handling a 40 pounder gun Award.’ The splendid picture (right) shows how smart the troops were on parade in their blue cork helmets and distinctive badges and armed with Martini-Henri rifles. The Shoreham Fort, or Redoubt as it was called, was to see short service and the answer to my question was, no, its guns were never fired in anger. After many years of conflict by the end of the century, inconceivable as it must have seemed just a few years earlier, France and England were friends; well allies of sorts, united in trying to resist the German menace. I can’t tell you enough how much I enjoyed my visit to the Old Fort that Wednesday evening: The fantastic views from Soldiers Point, Brighton bathed in sunshine and beyond, to the white cliffs, Seaford Head, clearly visible. Looking to the west was Worthing Pier and, just visible, the low strip of land stretching on to Selsey Bill. Looking down into the clear water we saw large grey mullet round the boats and fishermen trooping down to the west breakwater to try their luck on the incoming tide - would the mackerel be in? Pilot boats ploughed in and out of the harbour and the lifeboat was out at sea from its new station in the mouth of the river. The weather was beautiful, calm enough even for a coxless four to row along the coast on a channel sea. I will certainly return to the Fort and Soldiers Point. It’s a marvellous open space with a sense of history and lots of sea kale, if you like that kind of thing. Sadly, I didn’t see any black lizards; perhaps next time. ABSOLUTE

A new vision Luke Harvey of Chailey School in Lewes, enjoyed a week of work experience at Norman Hobbs in Haywards Heath. Here he talks about his time there, and what it meant to him
F
rom the minute school told us that we would be doing work experience this summer, I instant knew where I would like my placement to be. Having been interested in gadgets and technology since Primary School I immediately approached Norman Hobbs in Haywards Heath who specialise in flat screens, Hi-Fi and multi-room systems and was thrilled when they agreed to my placement. Excitement overtook my nervous on my first day, and once I had met the team at Norman Hobbs, shown around the building and ‘Health and Safety’ discussed, I learned about the makeup of the company and how there was the retail shop together with the custom installation side of the business. At this point I was even more intrigued about my week ahead! I thought a TV was a TV, well I certainly know there is difference now! There are so many screens on offer but I hadn’t realised how both the picture and sound quality differs. As I observed the sales staff guide their customers through this minefield, I was amazed at their product knowledge. I was then introduced to the world of 3D. Awesome!
My feet didn’t touch the ground the next day! With the Heathfield TV transmitter being 62
switched off next May, and a large area of Sussex being affected by this, Norman Hobbs have already started to make their customers aware that the only way to receive TV will be from a digital source and although people may already have a digital TV, will be their secondary screens and recording devices that may need assessing.
I received training from Freesat on how satellites are put into space, how they are positioned and how the signal is reflected back to earth. I also had extensive training from digitaluk and was thrilled when I scored 100% and received a Certificate Of Achievement. The following day was a day of house calls; digital upgrades to TV’s, software upgrades to audio systems and the effect that a recent lightning strike had had to electrical equipment. I was shown the internal repair process and visited the repair centre. I was given training on how to make up leads and had plenty of practice with aerial and satellite cables. The next day I spent the morning in one of the demo rooms where I was introduced to 2 channel Hi-Fi and I was blown away! I had been asked to bring in some of my own music from home and listened to the
same track on different Hi-Fi systems. I had no idea that the same piece of music could sound so different depending on the type of system and speakers it was player on. Even the interconnects and cables made a big difference and it is all down to personal choice. There was such clarity in the music and I now understand ‘serious’ Hi-Fi! Thursday afternoon I was able to observe and in-store meeting with a customer who had bought in their plans for a new house that they were having built and wanted to discuss various aspects of their proposed audio visual requirements. A number of systems were discussed to establish which would suit their needs the best as well as future proofing the property. I was shown how to work off plan and was fascinated about the detail involved. All the information was gather from the customer to enable Norman Hobbs to prepare a detailed estimate to supply and install the equipment.
The last day was all about shop and business presentation. I even got involved in the dusting and cleaning of the equipment, something my mum would be proud of! I met Nellie and Norbits who are the company mascots that help with brand awareness on promotional events, local village days etc. The elephants are well known locally and Nellie has even been part of ‘show and tell’ at school!

he original Porsche Cayenne became a poster child of the luxury 4x4 sector. Towards the end, however, environmentalists and people against 4x4 use in urban areas were also putting up the Cayenne’s poster; being the brashest, most imposing model in an area of the market built on being brash and imposing had its advantages and drawbacks. In typically astute fashion though, Porsche spotted that the tide of public and political opinion might have been turning against the luxury 4x4 and moved to set the record straight with the latest Cayenne. The mighty German off-roader has embarked on a charm offensive and the Cayenne S Hybrid model is leading the charge. A Guilt Free 4X4 The Cayenne S Hybrid is a great option for people who want to drive a powerful and commanding luxury 4x4 and not feel too guilty about it. 380bhp and 34mpg will sound like a great combination to many but if cutting costs is your primary goal, the diesel will make more sense. Massively powerful V8 models are great fun but Porsche knew that it needed strong diesels and a hybrid if the second-generation Cayenne was to continue the success of the first in a changing
marketplace. UK buyers seeking power, refinement and manageable running costs should find that the Cayenne S Hybrid, which shares technology with hybrid versions of Audi’s Q7 and Volkswagen’s Touareg, delivers the goods.

“There’s quite a bit of versatility built into the back of the car with those seats able to recline into three different positions and slide forward or back by 160mm…” performance that’s on a par with the V8 Cayenne S model, so this hybrid isn’t just an exercise in tree-hugging. The system is governed by all kinds of clever electronics which allow it to run on the electric motor alone at speeds of up to 40mph. There’s also the ‘Sailing Mode’ which doesn’t involve hoisting the mainbrace or shivering your timbers but does allow the combustion engine to be disengaged during high speed cruising to eliminate the drag effect and improve efficiency. Design Differences between the Cayenne S Hybrid and the other Cayenne models are difficult to spot. The luggage floor is a little higher to accommodate the bank of nickel-metal hydride batteries and ‘Hybrid’ legend is spelled out on the tailgate but otherwise, it looks like a standard Cayenne. The task of integrating traditional Porsche sports car design cues onto a high-riding 4x4 body wasn’t straightforward but this second generation model looks a successful blend of elegance and sportiness. The bonnet curls downward sharply to where the shapely intakes with their integrated fog lights create a more nuanced look than the flat aggression of the old car. There’s a pronounced sporty edge to the profile thanks to the elongated nose and the steeply raked rear screen.
This model is 48mm longer than the old Cayenne with 40mm of that contained within the wheelbase and Porsche has put it to good use. The boot space is reasonable despite the presence of the Hybrid’s batteries below the floor and can be extended by fiddling with the rear seats. There’s quite a bit of versatility built into the back of the car with those seats able to recline into three different positions and slide forward or back by 160mm. The boot area itself is accessed by a powered tailgate and a range of cargo management options are available to hold items in place.

ravel is inextricably linked with architecture but interestingly you don’t necessarily need architecture first for a place to become a tourist destination, and Brighton historically is a good example, tourists initially came for the water. In the 18th Century Dr Richard Russel claimed that sea water had healing benefits either by drinking it or by bathing in it. This led to the aristocracy following the latest health craze and heading to Brighton which then developed architecturally; initially with bathing machines and then later by hotels as others followed the trend. This link between water, travel and architecture entered my thoughts a few weeks ago whilst amongst a mountain range in Switzerland, my destination a sublime spa hotel encapsulated in a piece of architecture that stuns me every time I visit. As the only thermal springs in the Graubünden canton in Switzerland, Vals, too became a destination through its water. The architecture came in the 1960’s via a huge hotel complex of 1000 beds built around the spring which by the 1980’s had gone bankrupt. Interestingly the whole complex was then bought by the village and they commissioned architect Peter Zumthor to redesign the baths. Even when the baths opened in 1996 Zumthor was still relatively unknown as an architect. However, only two years later this seminal building became a protected building by the Canton Graubünden which is an incredible achievement. The Hotel and the Therme are now probably one of the greatest spa destinations in the world. The building is a stunning experience of calmness, wonder, and discovery that affects all of your senses. Fortunately cameras are banned in the spa but do visit www.therme-vals.ch for more images and information. Alternatively if you’re feeling brave view Janet Jackson’s video of the track Every Time on Youtube as it was filmed in the spa! The hotel has also been redesigned by Zumthor and I would recommend a stay in the yellow stucco suites and also a meal in the adjoining Red Restaurant. For me the water and the architecture is the biggest draw, it simply has to be experienced to be believed. Peter Zumthor is the architect for the current Serpentine Summer Pavilion in Hyde Park, open until 16 October.
