It’s been a rubbish winter, so as soon as the sun came out we went a bit funny and thought it would actually be warm. It’s not. Still, too late now, the mag is written, and, with the power of mind over matter, I reckon if we keep telling ourselves it is actually a balmy Spring day, it will be so. Or we could go and hide in pubs for another month until the weather catches up with us. Decisions decisions... Anyway, what’s been happening? Well, it’s been a busy old month at Deep Towers - Petal Dunwoody, like a debutante teetering down the palace steps, made his debut as a judge at Testing 123, and kept up our proud tradition of being slightly drunk as he did so, I managed to blag a pass the Cheltenham Gold Cup (you’ll hear a tedious amount more about this through the mag but if you knew the hoops I had to jump through to get it, and how excited I am, you’d understand), and I found out that I’m slightly allergic to hummous, which was interesting. Elsewhere, we hope you’re enjoying the cricket world cup as much as we are - England, eh? Never a dull moment with them. It’s been fantastic though, and we’re keeping our fingers crossed that we were entirely wrong and England get through to the knockout stage and (say it quietly) win the thing. And well done Ireland for kicking our arses and no mistake - most apposite given this month is St Patrick’s Day. Good on ya. Meanwhile in the mag, this month sees the return of Nick Razzo, turf correspondent, with his now annual Cheltenham preview, Petal’s page of nature, Auntie May’s always entertaining ramblings and the usual old rubbish as you’d expect. Oh, and we’ve also got an interview with Matt Smith. Just thought I’d drop that in there, casual-like, ‘cos that’s how we roll. I do apologise, I’ve never said ‘that’s how we roll’ before in my life and hopefully I never will again... And I think that’s about it from me for another month - it’s been nice to emerge from hibernation and get out and about in the world again, albeit still half-hidden beneath a warm scarf, but I can see the sun trying to poke its head out again this morning so things are definitely looking up. On which note I’ll say goodnight (yes, it is very early as usual and I’ve been at this typing lark all night). Have a happy National Pie Week, a craicfilled paddy’s day and a marvellous cask ale week (how topical are we?!?!), and we’ll see you next month, when it will be warm... it will be warm... it will be warm... Matt Smith talks to Deep about his forthcoming portayal of celebrated gay writer Christopher Isherwood in the BBC’s drama ‘Christopher And His Kind’

F

or anyone who doesn’t know who Christopher Isherwood is, we’ll start with a brief biography; Born in 1904, Isherwood attended St Edmund’s prep school in Surrey, where he met the poet WH Auden, a lifelong friend to whom he became literary mentor. Isherwood dropped out of Oxford and, being a gay man, was drawn to 1930s Berlin by its reputation for sexual freedom. He was a prolific writer throughout his life but is probably most famous for his novel ‘Mr. Norris Changes Trains’ and a series of short stories, written in Berlin and often published together as ‘The Berlin Stories’ which provided the inspiration for the musical and film ‘Cabaret’. After leaving Berlin he travelled around Europe and collaborated on 3 plays with Auden before they both emigrated to America. While there, Isherwood wrote (in 1964) what is widely regarded as his finest novel ‘A Single Man’ and also embarked on what would turn out to be a lifelong relationship with the much younger Don Bachardy - a relationship which raised eyebrows at the time. They were still together when Isherwood died in 1986, aged 81, in Santa Monica, California. The drama ‘Christopher And His Kind’ chronicles Isherwood’s formative years and begins with him escaping repressive English society and his suffocating relationship with his mother, Kathleen, for the decadent – and politically unstable – world of Thirties Berlin. The hedonistic Berlin cabaret scene is in full swing when a young and wide-eyed Christopher Isherwood arrives in the city, unable to speak a word of German. To Isherwood's reserved English sensibility, the city's thriving gay subculture is thrilling and intoxicating. But Christopher soon finds himself heartbroken after the failure of a hopeless love affair and so sets out on a process of self-

discovery... Matt Smith stars as Christopher Isherwood; Lindsay Duncan as his mother, Kathleen; Imogen Poots as Jean Ross, an aspiring actress and singer who provided Christopher with the inspiration for the Sally Bowles character of Cabaret fame; Toby Jones as Gerald Hamilton, a peculiar man who provided the inspiration for the title character in the celebrated Isherwood novel, Mr Norris Changes Trains; Pip Carter as Wystan Auden, the famous poet with a droll sense of humour who persuaded Christopher to join him in Berlin; and Douglas Booth as Heinz, a street cleaner who Christopher meets and falls in love

identity and self-discovery - I think we learn about a man exploring his sexuality and the arena in which he can do that freely." The popular actor explains why visiting the home Isherwood shared with his partner proved to be an invaluable experience. "For research I went to see Don Bachardy in the States at the house they shared. Don helped me understand his character – he said Christopher was very polite. Just seeing the love Don had for him, and to be in the space where Christopher had lived and written was very informative. "I also read Christopher's novels,

Christopher And His Kind, by acclaimed British playwright Kevin Elyot (My Night With Reg), explores Christopher Isherwood's formative years in Thirties Berlin in the run-up to the Second World War. Here, Matt Smith (best known for being the 11th Doctor Who, for anyone who’s been living under a rock for the past two years...) reveals why he wanted to play one of the 20th century's finest writers. "First and foremost as always it was the script that attracted me to the role. The story is such a fascinating one.” he expalins, “I loved the idea of playing someone so extreme to me, that different kind of vocalisation and physical shape. "Christopher Isherwood is such an interesting man. There's something very romantic about Christopher and Auden going off as young men to Berlin. At the heart of the piece is Christopher's acceptance of his own 4

and then spent a lot of time trawling through video footage, watching, listening and repeating his voice. I had a wonderful voice coach called Patsy Rodenburg who said: 'Look, just go for it. Don't worry about trying to imitate him. What's more interesting is trying to capture the essence of the man and then be yourself.' "I don't know whether I've managed to capture his voice exactly because I think that has to remain the invention of the actor; however, I hope there's an element of him in there." Playing Isherwood has given Matt a fresh perspective on the magnitude of the work involved in trying to characterise a real person on screen. "This has given me a great respect for people like Michael Sheen," continues Matt. "But I hope I've captured a moment – that little glimpse of glee in Christopher's eye you know he had; that mischief."

Having to make mental adjustments away from his Doctor Who persona was a hurdle the 28year-old was able to master. "Just thinking in a different way physically to The Doctor was also a very interesting challenge for me because one is based on movement and madness and the other on stillness and stiffness really. I hope that you look at this and quickly forget that you're watching The Doctor." Another challenge for Matt was taking part in the nude scenes ... and experiencing stubble rash for the first time, "Well, you've just got to commit to it, gung ho. It's different from when you're doing nude scenes with a boy than doing them with a girl, as you can imagine," explains Matt. "But I tried to commit to it and wholeheartedly go for it. Having to kiss boys, and finally understanding the nature of stubble rash, was interesting," he laughs. Filming took place in Ireland where sets were constructed to resemble Berlin in the Thirties, but Matt had no difficulties visualising the real Berlin because he'd spent some time there shooting another project prior to filming.

"I did a film in Berlin last year before doing Christopher And His Kind; I was there for three months. It's one of my favourite cities in the world. I would have loved to have seen it at that time in the Thirties because even now it has such a liberal sort of atmosphere, that's one of its great virtues. That's one of the things that drew Christopher there, I think." The Northampton-born actor, whose credits include Moses Jones, Party Animals and The Street, was a huge fan of his period costumes. "The costume designer has done a wonderful job; the costumes really fly off the screen. I think she captured the Thirties to Fifties brilliantly. It made me want to buy a three-piece suit from the Thirties!" laughs Matt. Having old friends on set made the experience even more enjoyable, he continues. "Working with Lindsay Duncan again, who's a great friend of mine, was wonderful. I could work with her on everything I do, every hour of the day. She makes me laugh, she's so much fun. Pip Carter [who also starred alongside Matt in Party Animals] is wonderful as Auden; he's a fabulous actor who really makes it all look very

effortless." Matt, who studied drama with creative writing for a time at the University of East Anglia, has aspirations of his own to be a writer. "Christopher was such a wonderful writer of prose. The other thing I learnt from Don is Christopher would always write in the morning, he'd get something done every day. "When I was playing Christopher I would write as much as I could every day. Being around Steven Moffat [Doctor Who writer and creative head] and working with writers like Kevin Elyot has been really interesting. I'm just trying to learn about structure at the moment." With Christopher Isherwood under his belt, would Matt consider playing another real person on the small screen if the role was right? "Well I'd quite like to play Ted Hughes. The Deep-London Guide to this year’s centennial Cheltenham Festival by Nick Razzo, turf correspondent

F

ANS of jump racing look forward to the second week in March like civilians look foward to Christmas or their summer holiday, perhaps even more so. That is no exaggeration. Unlike the Flat, which boasts many high class meetings run over several days, jumps has but one pinnacle: The Cheltenham Festival. The jumps, aka The Winter Sport or National Hunt, is always in a fever come February. The Cheltenham Festival is near and the jump racing circus and its many followers simply hums with wagers, theories and outright speculation. Horses set to do well often fail and horses you have forgotten about come out of nowhere to rob you of a

dollop of cash. For my money the Festival features the most exciting horse racing you will see anywhere in the world. It is a million times more dramatic than its flash cousin, Flat racing. I would say you stand more chance of winning a fortune through a multiple ante-post bet on Festival runners than anywhere else. It can and does happen - though probably not to you or indeed me. However, last year I picked at least half a dozen winners and had I put even four of them in a £2 yankee I would have been up £65,000. The editor of this esteemed organ had a nice fat double last year and was on course for seven grand when her third horse fell. That's Cheltenham unfortunately.

All is there, tragedy, comedy etc. The main thing to remember is that once you have acquired the taste for it you'll keep coming back... Golden Rules: 1) Pick four horses with chances at more than 10/1 and combine them into a multiple of your choice. 2) If you win any amount of money from £3 to £30,000 you have to, by law, put ‘All Around My Hat’ by Steeleye Span on the jukebox in the Dog and Bull - trust me, they love it! 3) Allow yourself as much stout and Irish whiskey as you feel you deserve. And I'll see you at the payout window.

dreaming big dreams about SIZING EUROPE, a great horse at 14/1. SCOTSIRISH at 100/1 is worth monitoring. Mad Max is a mad horse, quite literally. But assuming his wind operation has worked he could be lethal at 33s. Grand Crus is the big danger to knock Big Buck's off his perch in the World Hurdle. He is a legend in the making. Trouble is, they are both at prices only Lord Muck would want to wade in it. Looking at larger priced entries I see Zaynar and Oscar Whiskey have entries and they may be dangerous to ignore. I also notice that Khyber Kim has entries for the World, County and Champion Hurdles.

TIPS CORNER

KHYBER KIM is my big tip for the Festival, as Imperial Commander was last year. You can still get a bit of 25/1 about him but I think he's going to come very good in one of those races. Punters and bookmakers seem to have forgotten what a great horse he is.

Deep racing tipster FLASH HARRY gives you a few live ones for the Festival. 'Allo Playmates! Well, here it comes. The Festival. If you ain't ready you'll have to be lucky and I don't trust my luck. Do you trust yours? First, some showing off. I tipped the winner of the Cheltenham Gold Cup last year at 16/1, ladies and gentlemen. Now, I knew that was a horse to follow over cliffs. All this old trap about Kauto Star and Denman! The pair of 'em were great chasers but they're ready for the Darby and Joan club! New blood. When it comes to the Turf, always be looking for new blood. So let's get down to it. What's gonna be buying the bubbles this year?

My tip for the RSA Chase is quite simply AITEEN THIRTYTHREE. Named after a brand of West Country cheese and out of the excellent Paul Nicholls' yard this horse is being quietly backed every day and its price is slowly contracting accordingly. I think we're in a for a bold show. He's 7/1 and falling... Coral Cup: GET ME OUT OF HERE, PIGEON ISLAND in the Kim Muir. OK, popkids. Now let's get down to the biggy. Who is going to winner the Cheltenham Gold Cup? Well, Imperial Commander will be giving it best shot. But at 3/1, I want value. Yeah, value is when a horse is threes and should be odds on. But I don't think the old Commander should be odd on. He'll have a lot on his place to win this twice in a row and, though I don't think Kauto Star will win I think he'll finish in front of Nigel Twiston-Davies' horse. So, what's it to be? I don't fancy Long Run for it, though you will see a huge effort from him and his rider the amateur Sam Waley-Cohen. I am going out on a limb for a horse that is a beast of a chaser, a horse that almost frightened me when I saw it win the Argento Chase back in January. He is a potential, excuse my French (and he is a French horse), legendary bastard. So for that reason i'm tipping up NEPTUNE COLLONGES for the Cheltenham Gold Cup at the handsome price of 33/1. And as my Old Granny used to say to me: 'Andsome is as 'andsome does'. I've always followed that, playmates, and I've never gone too far wrong. Good luck!

Let's kick off with the County Hurdle. The two I fancy for this are huge prices. SOLDATINO, a strong horse whose reeling in of Barizan last year from a seemingly impossible position was the highpoint of last year's Festival. He's a general 16/1 with bookmakers. I also quite fancy CARLITO BRIGANTE. He did some good work a while back on goodish ground but has been kept out the way by the looks of things. He has talent and at 20/1 his price needs monitoring over the next week. BOTHY's a hell of a horse as well and 10/1 seems a huge price. WEIRD AL at 25/1 is a massive price for the Ryanair Chase. KEMPES is my other fancy for that race at 10s. I think Cue Card is going to be very hard to beat in the Stan James Supreme Novice Hurdle, but the 9/4 about him doesn't get my punting chops drooling. My alternative would be ROCK ON RUBY, a good horse at a nice price, a general 20/1.

his year’s Cheltenham Festival is its Centenary, so there are plenty of past races to garner trends and tidbits from. As we all know, however, trends and tidbits are next to useless in horse racing. But, Cheltenham Racecourse itself posits some interesting theories as to the races at the festival, so we thought we’d give you a sniff of what they’re saying for most of this year’s races - take it or leave it. Also, remember that at time of going to print the final runners and riders haven’t been finalised, so expect a fair bit of moving and shaking before the festival actually gets underway - as Flash Harry pointed out there are a few horses entered for more than one race, and they’ve yet to decide which one they’ll take their chance in, so bear that in mind if you’re betting ante-post - if the horse doesn’t run in the race you’ve backed it in, you’ll lose your stake. Still, it’s all good fun speculating at the moment, so here’s what Cheltenham are saying so you can mark your card accordingly. We were going to put the rest of the Deepmassive’s tips in with this, but to be honest we don’t want you all going out backing Neptune Collonges because the price will drop. Oh, bugger, did we say Neptune Collonges out loud...?

Day One 15/03/11: Supreme Novices Hurdle - 1.30pm: The Supreme Novices' Hurdle is a popular race amongst punters as they try and get off to a winning start. The race is traditionally very competitive, boasting only four winning favourites in the past 20 years and an average SP of 14/1, including winners priced as big as 40 and 50/1. Current favourite = Cue Card at 9/4.

years's winner will be back again this season and is being well backed at this stage while the same can be said of Blazing Bailey who has taking to fences well after a good career of hurdles. Another potential runner in the Festival Handicap Chase is Quinz who after winning the Racing Post Trophy recently could now be heading to Aintree for the Grand National next month. Current favourite = Bensalem at 6/1.

Arkle Challenge Trophy - 2.05pm: A competitive race with seemingly several holding solid claims but it should be remembered that in recent years, several leading fancies have come unstuck at the fences. So there can often be some good value further down the field, we are now fast approaching the Festival and the Arkle is a mouth watering prospect. Current favourite = Medermit at 4/1.

Champion Hurdle - 3.20pm: The Champion Hurdle is many people's favourite race of the entire Festival and it is most certainly the feature race on the day 1 card at Prestbury Park, the betting is likewise with plenty of money wagered on one of the biggest races of the season. The winner of the race in 2010 was Binocular who simply bolted up to win by some margin, he of course is being well backed again this season to run well althouth his colours were lowered by Peddlers Cross in the Fighting Fifth Hurdle at Newbury earlier this season. Current favourite = Binocular at 3/1.

Festival Handicap Chase - 2.40pm: Despite being a fiercely competitive handicap, horses at the top end of the betting have done well in this race in recent years. Eight of the last Eleven winners have won at single figure odds, in 2010 though we saw Chief Dan George come in at a big price so there can also be some good value in this race. Last

Day Two 16/03/11: National Hunt Steeple Chase 1.30pm: Jonjo O'Neil has trained four of the last nine winners of this race so expect his runners to be well backed for the 2011 National Hunt Steeple Chase. It is well worth noting here that favourites have a poor record in the race so there can often be some great value further down the market. Current favourite = Chicago Grey at 6/1. RSA Chase - 2.40pm: The favourite has won this race for three of the last four years so the top of the market is generally where punters should be looking for the winner of the RSA Chase, that was not true last year though as Weapons Amnesty came in at 10/1 to the surprise of many. The betting for the RSA Chase is always fascinating and this season is no different with a number of horses being backed. Time For Rupert is perhaps the one to beat after an excellent debut season over fences so far, the former World Hurdle star has picked up two wins at Cheltenham and is the favourite to make it three at the Festival. Current favourite = Time For Rupert 9/4. Queen Mother Champion Chase 3.20pm: The Queen Mother Champion Chase Betting is one of the highlights of the entire Cheltenham Festival and at the moment the ante-post odds for the 2011 renewal look mouthwatering. Master Minded and Big Zeb have shared the past three races and they are the ones expected to feature again in 2011, Big Zeb was the brilliant winner in 2010 and he has to be well respected once again. Top Trainer Paul Nicholls says his best hope for the festival is Master Minded. Current favourite = Master Minded 11/4.

Coral Cup 4.00pm: A hugely competitive race looks to be on the cards and with attractive odds about all the runners this is always a popular race amongst punters. Several big price winners down the years points towards looking at some each way prospects further down the list in such a competitive race. We had 28 runners in the race in 2010 so it can often be a tough one for punters, the winner was Spirit Rivier for Nicky Henderson at 14/1 so there is most definately some value here for the shewd punters. This season there are some nice potential runners with perhaps the best of them being Aegean Dawn who is so far unbeaten over four starts. Current favourite = Aegean Dawn 8/1. Fred Winter Handicap Hurdle 4.40pm: With the winner of this race boasting an average SP of 18/1 from its five runnings, it may prove to look at a the chances of several runners. Horses who won last time out have won the last five and we had another favourite in Sanctuaire claim the win last year for Paul Nicholls and Ruby Walsh. There is always a decent size field for this one which means that there is always some great each/way value on offer for punters making an excellent betting heat. Current favourite = A Media Luz 7/1. Day Three 17/03/11: Ryanair Chase - 2.40pm: Since it’s inception in 2005, five winners of the six runnings have all come from the top three in the betting. Three of those five were second favourites and only one the favourite, so in general the best place to find the winner of the race is at the top of the betting market. Current favourite = Poquelin 4/1. Master Minded - favourite for the Queen Mother Champion Chase

Ladbrokes World Hurdle - 3.20pm: The betting for the 2011 World Hurdle is really starting to hot up but of course there is a clear favourite at this stage, Big Buck's has won the race for the last two years and is a heavy favourite to make it a hat trick. He went off as an odds-on favourite in 2010 and he will do once again in 2011 for Paul Nicholls despite the emergence of one or two exciting young challengers. Current favourite = Big Bucks 5/6. Byrne Group Plate - 4.00pm: With no winning favourite and an average SP of 25/1 since the turn of the century,the Byrne Group Plate certainly looks like the kind of race for an each way bet. Only one winner since 1951 was trained in Ireland is also a fact worth noting before making a bet in this one. The winner last year was an 18/1 shot so punters are well advised to have a close look at the middle of the market here. Kim Muir Challenge Cup - 4.40pm: Irish horses are on the back of a 28 year losing streak in this race and it could pay to look at the British runners based on that stat. Whilst favourites have won two of the last eleven runnings, so there can be some worth having a look at backing the favourites here. One that looks to have a good chance here if he takes his chance at Cheltenham is Quinz who has some good form under his belt this season, the Philip Hobbs horse finished third behind Time For Rupert at Cheltenham in December and has to be taken seriously on that form. Current favourite = Galant Nuit 8/1. Day Four 18/03/11: JCB Triumph Hurdle - 1.30pm: The last six winners of the Triumph Hurdle have come from the top four in the betting so may pay dividends to concentrate on the market leaders in Friday's opener. In addition, Barry Geraghty, Richard Johnson and Robert Thornton have won this seven times in eight years between them so their mounts should be watched closely. We have not had a winner at bigger than 6/1 in this race since 2004 so punters in general should be looking at the well backed horses in this one. Current favourite = Grandouet 5/1. County Handicap Hurdle - 2.05pm: A race which has thrown up several big price winners down the years and given the way last year's Festival went, don't be surprised to see a double figure winner in this one. Paul Nicholls has saddled four of the last eight winners so expect him to have a good chance in 2011. 11

Albert Bartlett Novices Hurdle 2.40pm: We have had two favourites winning this race since its inception in 2005 so the top end of the betting market should be watched closely, having said that in 2010 we had a 33/1 winner in Berties Dream claiming the win for Ireland so there can be some value here for the shrewd punters, in general though that is not the case with every other winner of the race coming in under 9/1 or shorter. Current favourite = Back In Focus 7/1. Foxhunter Steeplechase 4.00pm: Six of the last ten winners of the Foxhunters Chase have been priced at

14/1 or bigger in the betting and in what looks a very competitive race again, another big price winner could be on the cards in the Festival's penultimate race. Last year though we did see a short priced winner in Baby Run for Nigel Twiston-Davies, he came in as a 9/2 Joint Favourite. Current favourite = Baby Run 5/1. Cheltenham Gold Cup - 3.20pm 3miles 2 furlongs Chase: The Gold Cup is obviously the stand out race of the entire week at the Cheltenham Festival and the ante-post betting is looking as competitive as ever. Imperial Commander won the race in some style last year and he is not surprisingly being well backed to achieve back-to-back wins in the race. Kauto Star has won the race twice but faces a tough task if he is to claim a third having come unstuck behind Long Run in the King George on his last outing. Denman ran an excellent race in 2010 to finish second behind Imperial Commander and ‘The Tank’ can never be ruled out of running a big race, he may be slightly past his best but will still come in for some good money as the Gold Cup betting suggests. It’s National Pie Week in March. All those in favour say...

Y

es, you read that correctly, it’s National Pie Week from 7th to 13th March! So what else could we do for our monthly food spot than a shed load of pies? It’s also, oddly, Bacon Connoisseurs' Week (Monday 21st - Sunday 27th March) and National Cask Ale Week (Monday 28th March - Sunday 3rd April), so we’ve incorporated all of that too. Topical, see. And pie-ey, mostly pie-ey. If you don’t like pies, you’re out of luck, is the basic point we’re trying to get across here... As ever with us, we’ve tried to make at least one of the recipes we pass on to you, to try it out, and so far we’ve made the chicken, bacon & mushroom pie twice, once with lumps of chicken that we pre-cooked on the day, and once using leftovers from a sunday roast chicken, and we have to say the leftovers version was tastier. Also, the first time we made it we discovered a distinct lack of pastry in the house but - and never say we’re not ingenious - we did have some vol au vents left over from Christmas so we bunged them on, upside down. Yes, I know it’s wrong, but it looked, er, interesting (see pic below) and it tasted quite nice, but the filling did dry out a bit due to all the gaps in the ‘pastry’. Keith Floyd would be spinning in his grave, except that we drank copious amounts of wine while making both. So there... chicken, bacon & mushroom pie mk I, with avant garde pastry

Chicken, Bacon & Mushroom Pie: Serves 4 You will need: • 1 packet of ready rolled puff pastry or short crust if you prefer. • half a cooked chicken (or turkey) • 1 leek, chopped (or 1/2 a finely chopped onion) • 1/2 packet of smoked streaky bacon cut into little pieces • 1 oz (30g) sliced mushrooms • 1/2tsp dried thyme or 1 tsp fresh • 1 chicken (or vegetable) stock cube dissolved in 1/2 cup (120ml) of water • 1/2 cup (120ml) white wine • 1/2 cup (120ml) milk • 1 oz (30g) plain flour • 1/2 oz (15g) butter and a little oil (vegetable or olive) Method: 1. Strip carcass of chicken, cutting meat into large pieces. If you prefer you can buy uncooked boneless chicken but you would need to pre cook it at this stage. 2. Saute leek (or onion), bacon and mushrooms in the butter and oil. When soft, add flour & thyme. 3. Add stock and wine, stirring continuously then add the milk so that the sauce is rich and creamy. If the sauce is a little thick, add more liquid (we add more wine, unsurprisingly). 4. Add the pre cooked chicken, and stir carefully until meat is completed coated then empty contents into a large pie dish. Again if you prefer to make this like a more traditional pie you can line the pie dish with the rolled out short crust pastry before putting in the filling. 5. Cover with your chosen pastry, making a vent in the pie top, and brush with milk. 6. Bake in oven on a high temperature (200C/400F/gas 6) for around 25mins or until golden. Tip: With the stockcube and bacon, there is no need for extra seasoning. 14

Hobgoblin Steak & Ale Pie: Serves 4 You will need: • 1 kg braising steak • 500 ml Hobgoblin • 500 ml water (approximately) • 3 beef stock cubes • 2 1/2 heaped tbsp plain flour • 2 large onions • Cooking oil or beef dripping • 2 heaped tsp Dijon (or English) mustard • Ready made puff pastry (ready rolled preferably, for less work) Method: 1. Peel and chop the onions. Cut up the braising steak into small cubes. 2. Heat some oil in a large and deep saucepan. Add the onions and sauté gently for about five minutes until soft.

3. Add the meat and cook to seal.

5. Continue to cook to cook out the flour, adding the beer gradually to prevent sticking to the pan until all the beer has been added. 6. Add beef stock cubes and stir until dissolved. 7. Add water to thin down the gravy. The amount will vary according to how much juice has come out of the meat so add gradually until the right consistency is achieved.

9. Once boiling reduce the heat, cover and simmer very gently for at least two hours.

11. To serve your Steak and Ale Pie ladle the meat and gravy on to each plate and top with pastry. Note: You can prepare and part cook your Steak and Ale Pie on the one day and then complete the cooking on the following day which will allow the flavours to come out even more. ................................................... Vegetarian Parsnip Pie: Serves 4 You will need: • 1 packet of ready rolled puff pastry or short crust if you prefer. • 750g parsnips, boil and puree then add: • 1 tbsp honey • 1/4 tsp ginger • 1/4 tsp nutmeg • 1 tbsp grated lemon rind • 1/2 cup (120ml) lemon juice • 2 egg yolks lightly beaten. Method: 1. Mix well, pour into large pie dish. Again if you prefer to make this like a more traditional pie you can line the pie dish with the rolled out short crust pastry before putting in the filling. 2. Cover dish with your chosen pastry, making a vent in the pie top, and

8. Get your remaining pastry and place on top of the dish. Tuck the pastry down at the edge and remove the excess pastry using the blunt edge of a knife. Using both hands, 'crimp' the pastry round the edge of the pie to obtain an attractive finish. Finally make 2 holes in the top of the pastry to allow the steam to come out during cooking and prevent the top going soggy. 9. Lightly brush the top with a little milk to give it a light brown colour when cooked.

8. Add Dijon mustard (English mustard can be used if preferred).

10. Once cooked, cut your preprepared pastry into rounds or squares (the shape and decoration is down to your imagination) and bake for approximately 10 minutes on a tray.

Apple Pie: Serves 4 You will need: • 1 packet of short crust pastry (or you can use short crust for the bottom and puff for the top - see below) * 3 to 4 medium Bramley cooking apples • 3 oz (90g) normal white granulated sugar • 1 medium sized over-proof dish

10. Put the pie in the pre-heated oven (220°C / 425°F / Gas Mark 7) and leave it cooking at that temperature for 10 minutes. Then turn down the heat to 190C / 375F / Gas Mark 5 and cook for a further 40 minutes. 11. When it is cooked, dust the top with a little more sugar and leave to cool for at least 15 minutes before serving. 12. Serve with cream, or custard, or straight up. Can also served cold. Tip: The size of your apple slices will determine how firm or mushy they become - we like ours firm, but if you want mush, slice the apples thinner, or do a mixture of sizes.

Method: 1. Cut roughly 2/3 of your pastry and roll until it will comfortably line your oven proof dish, with a bit of an overhang round the sides. 2. Trim round the edge of your dish using the blunt side of a knife (to stop tearing). 3. Roll out the rest of your pastry until it will amply cover the top of your dish and leave to one side. 4. Peel and 16th your apples (halve them, then halve those bits, then halve them again, then again). 5. Turn your oven on now so that it's pre-heated ready to cook. Heat settings are 220°C / 425°F / Gas 7. 6. Place the apple slices into the pie bowl on top of the base pastry. Do this in three layers, scattering a third of the sugar on each layer. 7. Using water and a pastry brush (or 16

1, 2, 3, Out...

February saw the last ever Testing 123 competition. Here’s what happened...

F

or the past seven years, Testing 123 has been beavering away throwing up nights of eclecticism, moments of pure genius, and the odd cringeworthy car-crash, all in the name of finding Croydon’s hottest unsigned music act, so it was a bit of an emotional night for Jenny and Davina, seemingly Croydon Council’s only two people who actually know what the hell they’re doing, as the curtain fell on the last ever event (thanks to the arts cuts don’t get me started) in February. Even with the huge amount of goodwill and support garnered by punters and local businesses (us included), it couldn’t survive the cuts (don’t get me started) and so we wave goodbye to a genuinely interesting night out. But it did go out with a bang - this years final was one of the strongest and most eclectic line ups, and one of the most difficult to judge, in the competitions history (Deep-judge Petal reports also that his heat, the band night, was equally tricky to whittle down). Usually you could pretty much tell who was going to win as there was usually one standout act, but this year was exceptionally tight. The judges, Beano’s record store legend David Lashmar, festival photographer and journalist John Bownas and former Morcheeba backing singer Pegy Gaile were in heated debates over the winners due to the quality of the acts, but were united in eventually crowning LoveLife6958 the winners. A trio of rapper, Christopher Syrus, acoustic guitarist David Wehinm and amazing soul singer Randy Valentine, they peformed one of the most stripped back and beautiful versions of the Doors’ ‘Light My Fire’ (covered by all the artists), with the rest of the band’s show stopping set written around Chris’ experience in jail and his dedication to stop others offending. The runner up prize went to Mark Bishop with his powerful guitar driven songs including the memorable ‘Last Bus Home’. The other finalists on the night, who all acquitted themselves

admirably, were bands Soapy Jefferson and MKIII, urban artists 6VI and singer songwriter Josh Mills, and well done to everyone who entered this year’s competition (I particularly enjoyed Fakebit Polytechnic). Goodbye then, Testing 123, thanks for the last 7 years, you will be missed... 18

A new strand shining a light on some of the people we’ve put on t-shirts as being Croydon’s finest. This month:

Cecily Mary Barker

W

e’re carrying on the general Spring theme in this month’s issue in the first of our new articles on Croydon’s finest. Basically, we’ve done these t-shirts, and they’re great, but we suddenly thought that some of the people featured aren’t exactly household names or faces, and so it’d be a good opportunity to shine our little torch on them and at the same time give you lot even more reasons, as if you didn’t have enough already (cough!) to be proud of Croydon. Hurrah! Cecily Mary Barker was born in Waddon Road, Croydon on 28 June 1895. All her life she was physically frail and as a child suffered from epilepsy. Apart from bouts of illness, Cicely’s childhood was happy and secure, but she was unable to attend school due to her health, so was educated at home and spent much of her time on her own, drawing and reading. The Barker’s were deeply religious and Cicely herself was a devout Christian who used art to express her spiritual beliefs. It was Cicely’s father, an accomplished artist himself, who encouraged her artistic talent, enrolling her at Croydon Art Society when she was thirteen years old and paying for a correspondence course in art which she continued until 1919. She was only sixteen when she had her first work accepted for publication as a set of postcards, and from that time she devoted her career to painting. Cicely's art reflects several strong influences. She greatly admired the work of the Pre-Raphaelites and her own work echoes their philosophy of being true to nature both in her meticulous depiction of flowers and plants and in the way in which the fairies represent their spirit. In creating her Flower Fairies books, she painted from life whenever she could, sometimes enlisting the help of staff at Kew Gardens in finding and identifying plant specimens. The Fairies too were painted from life, modelled on the children who attended her sister’s nursery school. When the paintings were complete, she wrote the accompanying poems. The first of the Flower Fairies books, Flower Fairies of the Spring, was published in 1923, and was well received 20

by the war-weary public, who were fascinated by fairies and charmed by her vision of innocence. In the foreword to Flower Fairies of the Wayside, the seventh book in the series, Cicely wrote: “So let me say quite plainly, that I have drawn all the plants and flowers very carefully, from real ones; and everything that I have said about them is true as I could make it. But I have never seen a fairy; the fairies and all about them are just ‘pretend’.” This unique blend of accuracy and fantasy had by then established a popularity for the Flower Fairies books which endures to this day. She also painted panels and triptych

on 16 February 1973, aged 77. Her ashes were scattered in Storrington churchyard. Though she published Flower Fairy books with spring, summer, and autumn themes, it wasn't until 1985 that a winter collection was assembled from her remaining work and published posthumously. In Croydon, the herb garden in Park Hill Park is dedicated to Cicely, and a blue plaque adorns her house in the Waldrons. Her Flower Fairy books remain as hugely popular and enchanting as ever and she definitely deserves her place as one of Croydon’s finest...

She restored a maisonette in Storrington, Sussex, bequeathed her by her friend Edith Major and named it St. Andrew's. After taking up residence, her health began to deteriorate. She was in and out of nursing and convalescent homes, and tended by relatives and friends. Cicely died in Worthing Hospital

I

t’s been a cold hard winter. Only recently it was a surprise to see the green grass rather than deep, cold, albeit pretty, snow. Spring is upon us, almost, so there is a wealth of stuff we can be doing in the garden (allotment / window box etc)...

What to plant now:

N

ow that we can venture outside with some confidence and hope for the future there is lots to prepare in the garden. The range of veggies to plant now is wide enough for everyone’s taste. Here are some of my favourites: • Basil, Brussels, Leek, Mint, Celeriac, Onion and Cauliflower – start undercover in seed trays and plant in 4 – 6 weeks. There are a number that are ready to be planted now in the garden (let’s hope for no late frosts): • Beetroot, Broad bean, Burdock, Carrot, Kohlrabi, Parsnip, Peas, Potato, Radish, Shallots, Spinach and Turnip. For the adventurous and those with sizeable gardens this is also the time to plant out Cantaloupes (rock melons). You can also get various soft fruits in the ground including: • Strawberries, Blueberries (phhhuuuuuurrrrtttt - that’s for anyone who watches ‘Sorry I’ve Got No Head’ by the way) Currants, Loganberries, Boysenberries, Grapes and fruit trees We at Deep have already seen snow drops coming up, hyacinths are out in hot houses and conservatories smelling heady, crocus and daffodils should be coming into profusion in the next few weeks. It is time to plant primroses and pansies, usually out in pots or barrels. If you have a bit of grass then it’s now time for the first cut of the year, though wait until it’s not too wet otherwise you can damage the new growth. March is the last chance to trim back your shrubs and untidy bits in the garden - be careful not to cut off the new buds.

Good choices of plants that will flower in March are • Azalea, Berberis, Camelia, and Clematis (did you know that there is a strain of clematis called Willy?). Cyclamen is also a pretty bush which can be bought from the garden centre. Forsythia will be out if you are lucky to have one in your garden – very colourful intense yellow shrub. Others that can be bought or will be out in your garden are • Helleborus, various strains of Heather, Iris, Jasmine, Magnolia, Primula (not the cheese), the various Prunus and Rhododendrons Other jobs to do in the garden now • Start a compost heap or bin, Put out twigs, logs or rock piles for animal shelter

Creature-Watch:

A

s the weather gets better the birds and other garden animals will have an easier time. It is important to keep feeding them as there could be a cold snap and in any case they are all knackered having had to survive the harsh winter. If you want to maximise the number of bird species in your garden you should give a variety of foods in different locations – hanging fat balls or nuts for tits, finches and sparrows, food on a table for robins, sparrows, doves, bullfinches and chaffinches. Feed spread on the ground will attract dunnock, blackbirds and thrushes, including the fieldfare, Some insects will be emerging now, especially welcome being the butterflies. The earlier ones are usually the comma and brimstone. If you can, try to plant buddleia (butterfly plant) as the butterflies and other insects love it. The demise of bees has been well documented and we at Deep would encourage everyone to do what they can to help the furry buzzers. You can get bee homes for either hive forming species like the bumble or honey bees or for individual bees like the Mason Bee. There are mixed reports as to the effectiveness of these but anything is 22

better than nothing. You can even make them at home by cutting the end off of a tin can and filling it with straw. Ideally, they should be south facing and hung at chest height or above. It’s time for frogs, toads and hedgehogs to come out of hibernation. Frogs and toads should start breeding about now. They will head for ponds anywhere. Goldfish will eat frog spawn so if you want to help them out, take the fish out of the pond for the time being. You can also make it a wildlife pond by getting rid of the fish altogether, putting in steps and various water plants. Have a look at this excellent website for further advice and an idea of the fantastic range of creatures you might see.. ww.wigglywigglers.co.uk/life/makepond Foxes, badgers and hedgehogs need top be fed appropriately. Do not feed hedgehogs bread and water; this is not their usual diet. For all three species dog food is fine. You may not see much fox action as they are likely to be having their cubs around this month. Good luck to them I say.

Twitcher-Alert:

W

e are getting some winter visitors at the moment so keep your eyes open for odd looking birds. The most famous one is probably the waxwing – very beautiful buff crested bird slightly smaller than a starling. Groups of 30 or more have been seen around Croydon in the last few months. If you want to encourage them plant berry bearing shrubs: they can eat up to three times their body weight a day before they travel back to north Germany to breed. One you are likely to have in your garden is the Redwing, like a song thrush but with a red flash on the wing and yellow around the eyes. Also, happily, the Deep-Massive have spotted at least two Sparrow-Hawks nesting on top of the Nestlé tower in Croydon. We spied them at the George Street end, while having a smoke outside the George, in fact, so keep ‘em peeled for those too. • Shed of the month & watch the skies return next month...

Septuagenarian agony aunt cum rock mutton Auntie May returns with a spring in her step. . .

H

ello, good evening and welcome. Welcome to spring that is. In my head, winter is now dead and buried and it’s now spring which means I immediately become much happier. We just need to move the clocks forward to something sensible and the days magically become longer which means far less fumbling around in the dark. To celebrate this momentous event, Edith and I ventured into Croydon to update our winter wardrobe. For some reason Edith started (briefly) in House of Fraser but I was put off by the fact that a tiny bikini top cost £75 - they wanted even more if you wanted bottoms to go with it, and, not surprisingly, I did. We quickly moved on to Allders (ooh lovely, a sale) and I decided to go for the red Indian look this season, although Edith reported, rather unkindly I thought, that it made me look as if I had excessively long underarm hair. On to Boots - and a product test. We'd seen an advert for kiss-proof lipstick. Haha, we thought, that sounds just up our street, and Edith had a 'celebrity moment' lined up (more on that later). All the colours looked rather lovely so we carefully divided our lips into four equal sections and commenced a military precision colour-test. Ten minutes later, we couldn't tell our marshmallow from our rosehip and the initially helpful assistant was becoming exasperated and was frantically scrummaging around for more make-up remover and wipes. Edith's lips resembled a massacre in an abattoir and I couldn't see mine in the mirror as I was crying from laughing so much. We finally settled on a delicate shade of pink

and agreed to report back later on the kiss-proof-ness of our purchases. I took my lips down to the Ship to see the debut performance by local boys Beneath the Tide, supported by Sweet Ether who popped up from Brighton for the night. Pete’s overzealous use of the smoke machine made Sweet Ether’s singer cry a bit and the drummer had a very dodgy shirt on (although things improved when he took it off). As I’d arrived at 5.30 (in order to partake of the Ship’s

gorgeous array of burgers), by the time Beneath the Tide got on stage I was feeling a bit wobbly (and had tested my lipstick on practically every teenager in the pub) and they sounded quite good. Their cover of “Fxxk” made me wonder whether they’d invited their mums – they had. Actually the singer looked worryingly like I imagined his mum would look. Edith took her lips to the Fairfield

Halls and, since it was her birthday, I had treated her to tickets to see her hero, Gilbert O’Sullivan. Apparently he was wonderful, managing to jump on top of the piano, even at his great age, and when he announced that he was signing CDs in the foyer after the show, Edith headed off clutching her 1972 vinyl copy of Back to Front. After climbing over a gentleman at the end of her row who was wedged in his seat, she was queuejumped by an extremely inebriated old harridan with her skirt stuck in her arsecrack and who had clearly wee-ed herself. Poor Gilbert visibly recoiled when faced with this atrocity, allowing Edith to conduct a quick ‘lipstick test’ on his unsuspecting cheek and push her record into his hand for autographing. In other music news, I bussed it to Brixton to see the magnificent and long-awaited Rob Zombie. Most of Croydon seemed to be there and I seemed to spend most of the time waving and talking to people I hadn’t seen for ages. I also saw covers band Camel Toe at Scream along with Faith No Man – if you love Faith No More, don’t miss them next time. On the way out I was fascinated to see from a poster that Shoegaze appears to be having a bit of revival, although personally I feel that that particular genre is better reflected by Nu Gaze these days, if you like that sort of thing (which, before you ask, I don’t). And on that note, I’m going back to my pint. See you next month and live it loud. Auntie May returns next month...
