Happy birthday to us, happy birthday to us, happy birthday dear uuuuuuuussss, happy birthday to us!! Yep, it’s our birthday. Eight years of churning out unparallelled rubbish for you lovely people for absolutely nish of your hard earned money. Can’t be bad. The cover this month, by the way, is a subtle hint to anyone who’s appreciated eight years of us churning out unparallelled rubbish for absolutely nish of your hard earned money as to what you can buy us when you see us... As is customary at this time of year, we’ve consulted the child development website to find out how we’re doing and I’m pleased to say we’re spot on, for it doth say normal characteristics are thus: Is busy and active; has frequent accidents; Makes faces, wiggles, clowns; May frequently urinate as a result of anxiety; Has good appetite, wolfs down food, belches spontaneously - may accept new foods; Has improved health with a few short illnesses. Yep, [cough, wheeze] as I said, we’re spot on, although if you’re expecting us to accept new foods it depends what you mean by ‘new’, I mean, I was once served a sliced and sauteed bull’s testicle in Spain; doesn’t mean I ate it. Well, not all of it anyway, they’re quite hefty... Anyhoo... It’s June and the festival season is upon us, but we’re not talking Isle Of Wight, Reading and Leeds or Glasto, in fact, Glasto Schmlasto, no, we’re talking far more exciting than all of them put together, we’re talking Purley Festival! South Norwood Arts Festival! Caterham Festival! Bromley Literary Festival! Croydon Folk and Blues Festival! Oh yes, it’s all going on in June - in fact the only thing that’s missing is the build up to Croydon Summer Festival (don’t get me started). You can find details of all these wondrous events, and they actually are pretty good (and mostly FREE!), what are on your very doorstep, in the what’s on pages, and we’ll see you at the beer tents of at least two of them. Elsewhere, on the party front, I haven’t checked yet but you never know, I may have won the lottery, or those six donkeys I’ve just bet on might come in, in which case we’ll throw the biggest party in the WHOLE MILKY WAY. If not, which I suspect may be the case, we’ll just have a night down a boozer in July to coincide with my actual birthday and invite you all along. We’ll let you know. It’s not just us who are celebrating a birthday - say congratulations to Junk Time Party, 10 years old & still regularly tearing the arse out of Croydon’s live music scene...

Two carpenters, a roofer, a computer expert and a former all England schools shot-putt champion walk into a bar...” Not the start of a joke, readers, but the line-up of the eternally good fun Junk Time Party, the unlikely five-some who celebrated their 10th year of being a band in April with a big old knees up at The Oval Tavern - the busiest I’ve ever seen it, and the most concerned

by a beaten Band Battle finalist (which they quite liked), had many more than a few beers and a hell of a lot more fun than most bands, I’m sure, the key to which seems to be while they take the music very seriously, they don’t take themselves too seriously. Go to see JTP and you can expect banter, bad jokes and amusing pseudonyms, drunkenness, sex, drugs, and rock and roll (not necessarily in that order), a storming cover of Cameo’s

I’ve ever been that the floor might give way thanks to all the dancing. With an armoury of fantastic tunes, two singers with great voices and the sort of musicianship you can only get from 10 years of Monday night rehearsals (well, we say rehearsals, it’s more usually an hour or so of music and several hours of poker...) JTP remain one of the best bands around. They’ve won Battle of The Bands competitions (and been robbed in the national finals of one), came 2nd in Testing 123 and have supported both The Bluetones (who very much approved) and the mighty Chas and Dave. They’ve had lineup changes, fallings out, more than a few arguments, been called a ‘Cockney Rock Supergroup’

‘Word Up’, a big old singalong to the standard ‘You’re shit and you know you are’ and a vague befuddled memory of having your ears assualted in a pleasing rock / funk fashion, and all this from 5 blokes who look an unlikely bunch to even know each other, let alone be on a stage together, for a decade. But that’s enough from me, and, I think, enough of a big-up to earn me several free pints next time I see them, so it’s over the our intrepid interviewer with JTP founder member Andy P; When did you form? “We formed in 1996 after my first Reading festival experience. I was a soul boy before that weekend, it changed me... It was 4

me, Gary and Chunky, who was involved for about 30 seconds, and we gave performances in our living room on the dining room table with one acoustic guitar and a set of bongos. “And then we had ‘Ned with the gimpy leg’ join, but he always had ‘issues’ about life and money, and his leg, and we did quite well, then Ricky joined on the drums when he was 15 years old, ‘cos he was our mate. When was your first actual gig? “Our first actual gig was in The Grouse and Claret and I walked off stage...” You flounced off? “I did, I flounced off, ‘cos it wasn’t right. If it aint right, I don’t like it. It sounded poop. You can quote that - poop. How do you spell poop?” P.O.O.P... “No that’s pooop, I want poop” P. Ü. P? “Yeah, give it an umlaut, It vas fucking püp!” So the 10 year anniversary is of? “It’s the anniversary of this lineup” You are quite an unlikely lot. “We’re the odd squad. We’re like the Village People without the costumes. Which one am I?” The black one? “Ha, obviously! What did he wear? Was he the construction worker? Please, someone do you tube and find out if the black one was the construction worker! I don’t care about the hotpants, as

o paraphrase Lesley Gore et al, it’s our birthday and we’ll cook if we want to, so, to paraphrase Maria Von Trapp, here are a few of our favourite things...

June Sparkle: Wimbledon, blah de blah, strawberries, blah de blah. Actually we love strawberries, and they’re currently in season (‘Slow Food Week’ promotional mention (see listings) - TICK!) and we also like booze, especially champagne...

Pizza: Being a bit Italian and all that, we love a good pizza here at Deep Towers, but the base dough can be a bit of a pain in the arse to make when you’re the busy go-getters that we and all Deep readers are and don’t have the time to prove the stuff, so, what we do is pop down to Giorgio’s La Spezia Delicatessen, (Old Pharmacy, Swan and Sugarloaf, South Croydon) and pick up a packet of Barilla Pizza Kit. We only discovered this recently but it’s very cool, containing the flour you need plus a dinky tin of tomatoes, some oregano, a sheet of greaseproof paper and even a little pouch to measure the correct amount of water. You don’t have to prove the dough and it’s all done in 15 minutes. Add bufala mozzarella and whatever other toppings you like. The only possible drawback is that all the instructions are in Italian, but then so are mine, so it’s basically (if I remember rightly as I don’t have a packet in front of me): make a well in the flour, add tsp olive oil, gradually add the water to make a dough, knead knead knead until it’s elastic, roll roll roll (it doesn’t say ‘fling it about like they do in restaurants’ but if you’re feeling louche then please go ahead), bung on toms and oregano, shove in oven for 10 mins, remove, add mozarella, other toppings of your choice, drizzle of olive oil, bung back in oven for 5 mins. Remove, drizzle over patented chilli oil (see further over there on this page). Done. As a bonus, while you’re picking up your pizza kit, the deli also has great proscuitto ham, fantastic olives etc. Here’s a couple we made earlier...

You will need: • 3 and a half oz Champagne • Half oz strawberry liqueur • 1 oz pineapple juice • 1 strawberry & sugar for garnish (optional) Method: Pour into a champagne flute. Garnish with a sugar-dipped strawberry and serve. ................................................................................. Strawberry Daquiri: Oh, and rum, we like rum... You will need: • 4 fresh strawberries, plus half a strawberry to garnish • 2 tsp white sugar • 35ml / 1 and a half fl oz white rum • 1 tbsp strawberry liqueur • 25ml / 1fl oz lime juice • Cocktail shaker with strainer Method: 1. Place the strawberries, sugar, rum, strawberry liqueur and lime juice into the base of a cocktail shaker and mash (muddle) with the end of a clean rolling pin. 2. Place the lid onto the cocktail shaker and shake well. 3. Strain the mixture into a Martini glass and garnish with half a strawberry. ................................................................................. Chilli OIl: So you’ve been following our chilli growing guide in ‘Deep in the Shed’ and may now have a load of chillies to use up. Chilli Oil - it’s the way forward - fantastic on pizzas especially... WARNING! Simply dumping a load of fresh chillies into a bottle of oil is not a great idea as not only will they go mouldy, it can result in botulism, which is highly unpleasant. Simply boiling the oil won’t be enough to kill bacteria. The way round it is to reduce the PH level of the chillies before putting them in the oil. This is achieved in the below recipe by first boiling the chillis for ten minutes in vinegar. In order to further reduce the risk always use dried chillies, not fresh and make sure you sterilise the bottle first. You will need: • Quality Olive Oil • Chillies • Malt Vinegar Method: 1. DRYING YOUR CHILLIES: • The easiest and fastest way to do this is to puncture your chillies, then place them on a baking tray (ideally on baking paper to stop them sticking) and cook on a very low heat (100 degrees or less). • Timing is crucial as it can be easy to leave them in too long and burn. As a guide we would say to leave them in the oven 8

for about 10-15 minutes and if not fully dry then check on them every 2-3 minutes after that. • The exact time required to dry your peppers will vary enormously depending on the type of chillies and oven you are using. • As a general rule keep the oven temperature very low and check them very regularly. • If using this method it can be a good idea to dry your fruit in batches to avoid losing all of your crop should you make a mistake.

Chilli Chutney: We’ve only tried making this recently, to use up our chillies, and it’s lovely. Ours is also incredibly hot, but in a nice, rounded way, if you see what I mean. Anyway, give it a go, it turns out looking like Branston, but with a lot more poke. We also did a version adding pear pieces toward the end of the cooking time, just long enough for them to soften, and that was brilliant too... You will need: • about 7 small chopped chillies (dried or fresh) • 2 large onions, quartered or chopped • 100ml of malt vinegar • half a teaspoon of garam masala • 4 table spoons of brown sugar • 1 clove of garlic • 500 ml of water

2. MAKING THE OIL: • Take a handful of dried red chillies. About 7 or 8 medium size chillies should do the job – it all depends how hot you like it! Add them to a pan of hot malt vinegar and simmer, stirring occasionally to make sure all the chillies are submerged. • After 10 minutes remove the chillies and allow the vinegar to drain off by placing on some kitchen roll. • Next, add the chillies (you can leave them whole, or chop them, or have a mixture of both) to a pan of olive oil and gently heat (don’t bring to the boil) for about 5 minutes. • Leave the pan and the chillies to cool.

Method: 1. Add all of the ingredients except the vinegar to a saucepan and bring to the boil. Cover and simmer for about 30 mins. 2. Add the vinegar and simmer with the lid off for a further 20 minutes to reduce down some of the liquid. 3. Sterilise a glass container as per chilli oil recipe, when dry, add the chutney. Particularly nice when snaffled with ham!

STERILISING YOUR CONTAINER: • Always use a glass container, obviously, whether it be the original bottle your olive oil came in, a pretty bottle, even a jam jar or old pasta sauce jar etc. If you are reusing old bottles or jars, check for cracks - if there are any, chuck the thing out. • Wash in hot, soapy water and rinse in freshly boiled water, then turn upside-down on a clean tea towel to drain • To heat sterilise your bottles or jars, preheat the oven to Gas3/170C. Stand them on a baking sheet and heat in the oven for 10 minutes. Obviously if your container has a plastic lid, don’t cook that, it’ll melt - just wash in hot soapy water. • Or put the clean bottles / jars in a deep pan and cover with boiling water. Bring to the boil and boil for 10 minutes. • It is also possible to sterilise in the microwave. Half-fill bottles / jars with fresh water and microwave on full power until the water boils.

‘Deep Chilli Chutney’. There was more of it, but we ate it.

4. FINISH: When your oil is cool and your bottle / jar is dry, simply bung the oil complete with all the chillies into it. Done. If you can get a pouring spout even better. Store in a cool dark space.

................................................................................. Granita al Limone: A traditional Italian palate-cleanser / dessert / breakfast (with brioche), and possibly the simplest thing on the planet to make, assuming you have a freezer. Think swish Slush-Puppy, but a million times nicer. (Serves 6-8). You will need: • Water - 3 cups • Sugar - 1 1/2 cups • Fresh lemon juice - 1 cup Method: 1. Bring 1 cup of the water and the sugar to a boil in a saucepan, stirring to dissolve the sugar. Continue boiling for 8 to 10 minutes. Remove from heat and let to cool. 2. Stir in the remaining water and lemon juice. Pour the mixture into a glass baking dish (or tupperware) and set in the freezer for one or two hours until it starts to get slushy. The shallower the dish, the quicker it’ll freeze. 3. Stir well with a fork, breaking up any large chunks of ice or ice crystals. Repeat this process every 20 minutes or so until the granita is frozen solid. 4. Place scoops in small glasses or dessert bowls and serve. NB. If you want, garnish the granita with some lemon zest.

Septuagenarian agony aunt cum rock mutton Auntie May goes gnome sweet gnome. . .

ello, good evening and welcome. Following a distressing spate of garden thefts (what is the world coming to?), Edith and I have been spearheading a nationwide campaign to return our pet gnomes Trumpton and Camberwick Green to their rightful home. This has involved an extensive flyering exercise covering the length and breadth of the country. Edith has been holed up in the attic with the printing press running full-tilt and I have been relentlessly flyering every major city in a bid to keep the situation at the forefront of people's minds. Trumpton and Camberwick Green, for reasons best known to themselves, are committed football fans so, with this in mind we’re logging our progress in the form of a football themed competition. Email me at mayharbinger@hotmail.co.uk with a list of all the football teams featured in my report, and anybody who gets them all correct will go into a draw to win a “Grow Your Own Nigella” kit and other random goodies. Competition closes at the end of July to be safe, as I haven’t the faintest idea when your favourite listings rag will hit the streets [Me neither - Ed]. “Last week, my crew Stanley Black, Paul and I headed to Manchester, united in the knowledge that this was a key location. We started up West, ham sandwiches and Everton mints safely stowed in Stanley's back pocket, until he fell, his jeans torn asunder, landing on his arse and all our lunch got squashed. So we stopped at a café to stoke up - I chose the liver, Paul opted for turnips which he loves, and Stanley nibbled on some red Leicester. Unfortunately Stan had a panic attack in the gents because the door had no bolt on – wanderers kept opening the door so he had to go outside for some fresh air. Later we pressed on towards the ports, mouths watering at the thought of some Lincoln sausages and Dundee cake. The next day, we headed south and as we neared Wycombe, wanderers tagged along with us. By evening more came and swelled our ranks. Donations to our cause started to come in, but the loot only weighed us down so we had to bury it. 12

Today I am heading off to Accrington. Stanley is going to meet me at the station at the south end en route from Plymouth, Argyll socks flashing beneath his cycling shorts, barnet blowing in the fierce wind, on time hopefully. He'll be equipped with a huge satchel, seeing if he can beat his pasting record each day. If not, I send him to Coventry - this really spurs him on. I'm then planning to do Sheffield Wednesday, hoping this leads to more publicity. Stanley is going to put his wig on, athletic though he is, as last time he was in Queens Park, rangers tried to arrest him for torching some barns, leaving him with a black

irthday greetings from the Deep Shed! We’ve put up bunting and everything...

What to Plant Now: Strawberries! Contrary to popular opinion, strawberries are pretty easy to grow, and can be grown inside in a windowbox, thus avoiding problems from slugs, birds and frost etc. To grow indoors in a windowbox you will need: a window box (well d’ur!), potting compost (if possible with fertiliser already added), some gravel, pebbles or hydroponic material, and either strawberry seeds or strawberry plants. You really want to use the deepest window box you can find, to avoid too much moisture being lost - the deeper the box, the more water it can hold and the slower the compost will dry out. Put a layer of gravel, pebbles or hydroponic material at the bottom of the window box, approx. 1 inch thick, to help drainage (we use the hydroponic stuff). Fill the box with compost until you reach about 2 inches from the rim. Firm the compost down lightly and refill with more compost if necessary. Ensure the compost is damp, but not wet. We REALLY recommend you include hydroponic balls in the compost, as these will help the water retention. Just sprinkle a handful or so with the compost while filling below the planting level. Pop your strawberry plants into the box, spreading the roots out evenly if

transferring from a different part of the garden. If you are growing strawberries from seed, fill the compost to about 1 1/2 inches from the rim and spread the seeds out evenly along the edges. The plants don't want to be backed up against the side of the box, but appreciate a space of about 1/2 inch between themselves and the window box wall. Add compost to about an inch from the top of the box, firming each plant in gently as you go along. Water generously and don't worry if the plants look a bit wilted to begin with - they will pick up within a few days. Remember to water VERY regularly and add liquid fertiliser after about 6 weeks. If you have planted seeds, keep the box or basket in a warm place until the seeds have germinated and the young plants have established themselves, then slowly acclimatise them to living outdoors - unless you intend to continue to grow strawberries on the inside windowsill. The plant will benefit from being placed on a windowsill or balcony where they receive a lot of sunlight.

Creature-Watch: We’re always on the lookout for interesting animal based stuff here in the shed, so we’re happy to tell you all that you can go walking with wolves near Reading. Yes, really. Pop along to http://wildlifewatching.org/ and select wolves from the dropbox (or basking sharks, badgers, edible dormice or a host of other animals). According to the site it’s “a unique experience of walking with socialised wolves through beautiful woodland. The wolves are handled by an experienced team and will interact with you as you walk, often walking in amongst you.” How very, very cool. The walk costs £30 and the next available slots are in September, so if you fancy it it’s probably best to book now as they fill up fast. The event is run by the UK Wolf Conservation Trust, so you’re in good hands, and they also have open days (next one 29th August) and other events throughout the year. Visit their site at http://ukwct.org.uk. 14

Watch The Skies! This month’s main event is a total eclipse of the moon on June 15th. The Moon rises during the total phase of the eclipse as the Sun sets. Moonrise time varies with location, with observers in London seeing this at 2113 BST (2013 GMT). The total eclipse ends at 2203 BST (2103 GMT), when the Moon begins to leave the darkest part of the Earth's shadow or umbra. By this time it stands only 5 degrees above the southeastern horizon from London. The Moon then moves into the penumbra, the lighter part of the Earth's shadow and will likely have a yellowish hue. The eclipse comes to an end when the Moon leaves the penumbra at 0002 BST on 16 June (2302 GMT on 15 June). The Moon's low altitude in the sky during the total phase of the eclipse means that observers will need an excellent horizon and clear skies to see it well, but if it is visible it could be a spectacular opportunity for photographers. And unlike their solar counterparts, lunar eclipses need no special equipment and are perfectly safe to watch with the unaided eye. We want the finest wines available to humanity! We want them here and we want them... in about 4 weeks!

xcitement abounds in the Deep Shed this month as our adventure in home-brewing has begun! Well, I say home brewing, it’s more home fermenting as we’ve eschewed the beer brewing option, as we don’t drink that much beer, and gone straight to wine-making, as we drink a lot of wine. Unfortunately, a quick search on t’internet reveals that not only does winemaking require more equipment than beer making, but that it’s also a bit more technical (cue outrage from beer brewers everywhere, but we can only tell it as we see it). Happily though, as Ian Dury once sagely opined ‘there aint ‘alf been some clever bastards’, and the good people at

100% of all the sterilising I’ve ever done) after which, and after a brief hiatus as we try for about half an hour to get the lid off (the instructions need to be MORE idiot-proof) it’s time to add the grape juice and various other sachets including oak chips (we’re making a Sav Blanc, btw), fizz up the yeast and add that, then bung it all in the airing cupboard (it needs to be in a warm, dark place) to let it do its thing for 7 days. In just 4 short weeks, we’ll have wine, you know. To say the concoction looks pleasant in this 7 day stage would be overstating it. It looks like off milk with bits of

And lo, a couple of days later a big exciting box arrives containing widgets and grommets, pots and potions, sachets and intriguing glass measuring devices, all of which look very much like a nascent mad scientist set and a little bit daunting, but, bolstered by Petal Dunwoody’s revelations about getting a ‘C’ in O’Level Chemistry we plough on and discover that the kit also contains pretty much idiotproof instructions - hurrah! As with most other things in the mag this month (see chilli oil, chutney etc), the first task is sterilising our demijohn (seriously, since May 15th I’ve done exactly

black stuff floating in it, and is, in quite a sinister way, ‘breathing’ through it’s little fermentation lock lid as the gas escapes, and making a constant quiet hissing noise. After about 5 days, the mists are starting to clear and we’re left with what looks very much like a distressing urine sample with a lot of magnolia-tobrown tinted sediment at the bottom. Lovely.

After 7 days it’s time to try out our hydrometer, like a big thermometer which measures specific gravity. The instructions tell us what parameters we should be within and... we are! Time to sterilise the second demijohn and the syphon and get the wine from one to t’other sans sediment. A bit of a tricky job, and I leave the actual sucking of the syphon to get the wine moving to Petal, as I really don’t want any of the gloop in my mouth. Petal duly obliges and reports that it tastes like very weak wine (yes, I know that’s what it’s supposed to taste like, but we were still surprised that it actually did), or maybe one of those Schloer grape drinks with vodka in it. When the small amount of sediment we didn’t manage to syphon out settles, the stuff looks like, well, wine, and it’s back into the airing cupboard for another 12 days until stage three, when we have to add ‘finings’ and other odd sachets. But that, I’m afraid, will have to

wait as this is where we have to leave you, on tenterhooks no doubt, as the next stage doesn’t start until after we’ll have gone to print, but suffice to say by the next time we see you we’ll either be sitting in the shed sipping a young and fruity Sav Blanc or writing the mag from the gastro-intestinal unit of the nearest A&E. Either way, we’ll let you know next month...
