How to Stay Mentally Fit During the Holiday and Winter Season How are you looking after yourself today? Not just today but what about tomorrow and the day after that? Niamh McCarthy, founder of the newly launched music-meets-meditation platform, MINDFUL NATION, shares her guide on how to approach the holiday season carefully and consciously so you can provide yourself with all the tools for self-care to carry yourself through the winter season and beyond.
1) Think New Thoughts and Turn On the Light in Your Mind Up to 95% of daily thoughts are repetitive ones, of which 80% are negative. Taking power of your mind first thing in the morning in the moments after waking up has the opportunity to completely reframe your day and create new thought processes for a more positive outset. Of the 5% of new thoughts you have in the day, make sure there are good ones. The most powerful way of doing this is by repeating an affirmation or set of new affirmations each morning. These could be “Today is a good day” “I'm healthy” “I'm happy” “I'm safe”. Turning the light on in your mind is a process that only needs to take a couple of minutes each day with the Affirmations playlist on the MINDFUL NATION app. 2) Include a Short Meditation in your Routine Meditation is often thought of as something “if I only had time for” but a meditation practice only needs to take three minutes during the day, as an individual practice or as part of a series throughout the day - one in the morning, a pick-me-up in the afternoon and one before going to sleep. MINDFUL NATION works on the philosophy that implementing a tiny lifestyle change will change your life. A suggested starting point is trying one of the Daily Meditations on the app that you can choose according to what feeling you want to bring in at that moment in time from a choice of Powerful, Calm, Grounded, Focused, Positive and Elevated. 3) Get Good Quality Sleep As mammals, we crave hibernation during the winter months to rest and recuperate, copying the patterns of nature around us. However, modern lifestyle makes this very hard to do. One of the things that makes a massive difference to sleep patterns is minimising our exposure to the blue light from screens (television, computer, mobile phones). The problem with blue light is that it tricks the body into thinking that it’s daytime and prevents the release of melatonin, the body’s natural sleep hormone, which in turn affects our sleep patterns and natural
circadian rhythm. In the hour or two before going to bed, try to minimise all blue light and try a binaural beat sleep meditation before switching off your phone. Binaural beat technology is used in the MINDFUL NATION Sleep Meditations and uses drones and deeply ambient sounds to encourage the body to subconsciously go into a calm and relaxed parasympathetic state which directly correlates with better sleep quality. 4) Mindful Movement Release blocked energy in the body by implementing gentle movement each day to encourage deep breathing and a feeling of overall wellbeing. Walk and breathe in fresh air during the daylight hours to feel connected to the natural rhythm of the winter days. Try yoga to get the body moving and increase energy and vitality in your life while also reducing stress and helping sleep. 5) Essential Oils The use of essential oils are an age-old alternative wellness practice to encourage connection to the present moment with each essential oil having their own distinctive benefits. Lavender can be used for relaxation or sleep, either by rubbing onto soles of the feet, putting into an air diffuser or spritzing onto a pillow. Eucalyptus is another fantastic oil for the winter months, originally used by Aborigines in Australia for fevers and for healing wounds. Try it for clearing stuffy noses and alleviating colds by placing a couple of drops in hot water and inhaling it with a towel over your head, or trying a few drops in a hot bath. Essential oils used in harmony with a meditation practice by rubbing a few drops onto your chest help connect you to your breath and are a powerful way of improving your practice. “Prioritising wellbeing and peacefulness during the holiday season can often fall to the bottom of the list of things to do. It has never been more important to prioritise self-care to show up each day and find the ways of being the best versions of ourselves and shine that light to all those who cross our paths,” say Niamh McCarthy, founder of MINDFUL NATION. E F I L MID MADNESS Let’s be honest who doesn’t love a spa. I must confess I am more of an indulgent spa lover – not saying I wouldn’t do any exercise but if its gruelling and involves carrot juice for lunch its probably not the spa for me. I’m much prefer my carrot in the form of a cake and what’s wrong with a jacuzzi when it comes to exercise! But as with many other aspects of life a lot of our enjoyment of things is determined by how we frame them. When you talk about a long-haul flight many people are filled with horror – but actually if you have the mindset of it being a spa day with a difference its not nearly so bad.
Let’s be honest you are welcomed aboard the plane with a drink – orange juice or water for most of us or champagne if you are business class (I’ve not had that particular privilege myself… yet) often with a snack and then offered a blanket, pillow, eye mask and possibly a toothbrush pack. After the old safety briefing you’re left to relax for a little while. As someone who has done several long-haul journeys that is my chance to scroll through the entertainment on offer deciding on the movies or TV series I might want to watch or the music I may want to listen too. Having flown with several different airlines it is almost guaranteed there will be far more that I want to watch than I’ll have time to view. Then the fun really starts, round they come with the drinks – all free and yes, I know it might only be 10 am but why not – its free for goodness sake. So, I usually start with a wine and maybe while we wait for meal number 1 we’ll do a crossword or chat to other passengers. Then comes the meal - 3 courses at least and in my experience - pretty acceptable whilst not Michelin star standard and of course several top ups of wine.
Which means you approach your first film in a nice mellow mood. I usually get through one film before asking for a cuppa and a snack – which you can do at any time and they are brought to your seat – before feeling that a small nap might be in order. Sometimes it’s a long nap sometimes a short one but if I wake up I simply resume the film, start a new one, read my book – play a game listen to music – plenty of options to be honest. Every so often I’ll decide to opt in to exercise – a walk up and down the plane a bit of chair yoga or a few exercises that are usually available on the entertainment console. One of my other pleasure is brushing up on a bit of geography by looking at the flight path and seeing all the places we are flying over. Then it is usually time for more booze another meal and so it goes on.
Now there are key things missing from my usual spa no sauna, no pool and maybe massages are available in business class but not usually in the seats I’ve been in but there are definite similarities. I think the key thing is adopting a chill out attitude before you ever get on the plane. Wear comfies, treat it as a duvet day and how many times do we wish for one of those. Another huge benefit which may be changing sadly is no bothersome calls and messages on the phone – you can now buy data on the plane but I ask myself ‘why’ the whole point is getting away from it all – and that means any games are automatically ad free – another win! Anyway I’ve got to go now they are about to serve another meal – which means more wine and I still have several more films to get through and at least 6 chapters of my book and plenty of tea, coffee, chocolates and fruit to consume- oh and a few more aps!

Real Tree
Nothing beats a real tree at Christmas. The smell alone conjures up images of mince pies, Christmas stockings and Santa. It is the centrepiece of all your decorations, and no matter what your personal style or interior scheme you can’t beat a real tree, and with a real tree comes a little TLC – We caught up with Samuel Lyle, owner of Pines and Needles, who told us “despite Christmas trees being a longstanding tradition, millions of Britons are still unsure how to look after them.” With this in mind we asked him to share his top tips with us:
Prepare the trunk - Just before you install your tree, saw off the bottom 1” (3cm) of the trunk. This creates a fresh cut and opens up the pores in the bark, which otherwise can block up with sap within a few hours of being cut. The tree is then able to drink water through these pores via capillary action. We do this to all our trees so you don’t have to! Keep it away from any heat sources – Position your Christmas tree away from any heat sources such as radiators and fireplaces. Heat dries out your tree faster, so the further from potentially damaging heat sources the better, and the fresher your tree will remain. They need routine – Do not expose your tree to sudden changes in temperature. Trees like most people are creatures of habit and prefer steady conditions.
Water your tree – Place your tree in plain water – not soil or sand which would block the pores in the bark. This is best achieved by using a specially designed Christmas Tree Stand. Many precious hours can be wasted trying to make a Christmas Tree stand up straight in an ordinary bucket using just bricks or stones! Then keep on watering it! – Keep the Christmas tree stand topped up with water. Your Christmas
tree may drink 2-3 pints (1-2 litres) of water per day, depending on its size and your central heating settings. This is very important as once the water level drops below the tree’s trunk, sap will re-seal the bark within a few hours, preventing the tree from drinking any further water even if you then re-fill the Christmas tree stand. Timing is everything – These trees are natural living things, and once they are cut they begin to die, sad as this is apart from artificial trees we are still without a solution to this simple fact of life. Time the arrival of your tree with this in mind to increase longevity and get the most out of it.
What About Decorating? It may sound obvious, but two people are better than one if that’s possible – even if it’s just for the lights. Lights go on first and it’s great if one person can feed them to the other as they wind it round and round, starting at the bottom. Embed the lights in the lush greenery and then move out as you go up.
The heavier the decorations the more you’ll need to keep them away from the tips of the branches. Everyone has a different way of decorating but themes look good, whether that’s a colour or a certain style such as Scandi (sparse; red and white) or Victorian (wooden decorations, dried fruit, pine cones). Tinsel has been dying out for a while but ribbon is en vogue but go horizontally rather than at an angle – it’s a much cleaner look.

Mushroom Nut Roast Tart with Pesto ‘This easy vegan Christmas dinner alternative is piled high with delicious flavours’
Ingredients 500g parsnips, trimmed and peeled 1 large red onion, cut into 2cm chunks 2 tbsp maple syrup 5 tbsp olive oil, plus 1 tsp 150g pack Portobello mushrooms, sliced 250g pack chestnut mushrooms, quartered 200g pack baby button mushrooms 50g blanched hazelnuts 50g blanched almonds 50g pine nuts 15g fresh chives, snipped 15g fresh flat-leaf parsley 30g pack fresh basil 2 garlic cloves, crushed For the pastry 200g wholemeal spelt flour, plus extra for dusting 100g vegetable suet 80g wholefood 4-seed mix
Method To make the pastry, use a cutlery knife to mix the flour, suet, seeds and a pinch of salt in a large bowl. Add 125ml cold water and, still using the knife, mix to bring the pastry together into a ball. On a lightly floured surface, roll the pastry into a rectangle to line a 30 x 20cm baking tin; trim to fit, discarding any trimmings. Chill in the fridge for 30 mins. Preheat the oven to gas 6, 200°C, fan 180°C. Line the pastry with nonstick baking paper; fill with baking beans. Bake on the top shelf for 25 mins. Remove the beans and paper; set aside to cool. Peel 50g parsnips into ribbons and set aside. Chop the remaining parsnips and put in a large roasting tin with the onion. Drizzle with the maple syrup and 1 tbsp olive oil; season and toss to coat. Roast for 30 mins, stirring halfway, until soft and lightly golden. Set aside to cool. Heat 1 tbsp olive oil in a large, deep frying pan over a high heat. Add the mushrooms; season and cook, stirring frequently, for 5 mins until soft and well coloured. You may need to do this in batches. Transfer to a bowl to cool. For the pesto, toast the nuts in a dry pan over a medium heat for 1-2 mins, tossing until lightly golden. Set half the nuts aside and tip the rest into a food processor; pulse until fairly fine. Add the chives, parsley, basil, garlic and 2 tbsp olive oil; season. Blitz until well combined. To assemble, spread half the pesto over the base of the pastry. Strain and discard the liquid from the mushrooms, then arrange over the pesto, followed by the roasted parsnips and onion. Add 1 tbsp each olive oil and water to the remaining pesto, then spoon it over the tart. Roughly chop and scatter over half the nuts. Toss the parsnip ribbons with 1 tsp olive oil and arrange them over the top, finishing with nuts and 2-3 tsp pesto. Bake on the middle shelf for 20-25 mins until the parsnip ribbons are lightly golden and the tart is heated through. Slice into squares and drizzle with the reserved pesto. Recipe from Tesco

Turkey Chelsea Buns ‘Do more than sandwiches with your Christmas leftovers this year and bake a batch of these hearty turkey Chelsea buns.’
Ingredients 320g sheet ready rolled puff pastry 3 heaped tbsp cranberry sauce 200g leftover roast veg 100g leftover stuffing 175g leftover cooked turkey, cut into small pieces 60g mature Cheddar cheese, coarsely grated Butter, for greasing Fresh thyme leaves, to serve
Method Preheat the oven to gas 6, 200°C, fan 180°C. Unroll the pastry sheet on the work surface, spread with an even layer of cranberry sauce, then scatter with the roast vegetables, stuffing, turkey and grated Cheddar in an even layer. Season well, then roll up from the short side (making sure you tuck the first 2.5cm of pastry right into the middle) like a Swiss roll, trying to keep the roll as round as possible.
Put in the fridge and leave to chill until firm – at least 20 mins. Cut into 8 equal-sized pieces with a sharp knife. Find a metal baking tray that fits the 8 rolls snugly side-by-side. Butter the tray before arranging the rolls in it. Bake for 25-30 mins or until puffed up and golden. Sprinkle with fresh thyme leaves before serving. Recipe from Tesco

CHOCOLATE ORANGE CAKE
Looking to add some extra magic to your Christmas celebrations? It’s time to enjoy the festive flavour combinations of this Chocolate Orange Cake
Ingredients 2 oranges (for the caramalised oranges) 200g sugar 5 tbsp water 50g cocoa 75ml boiling water 1 tsp vanilla extract 175g caster sugar 3 eggs 100ml olive oil 1 tbsp orange rind from above 150g Doves Farm Organic Self Raising White Flour Oil for tin 75g plain chocolate 25ml cream
Method For the caramalised oranges, peel some orange zest strips into a small bowl, and finely grate the remaining rind into another bowl. Thinly slice the oranges and half the slices. Put the sugar and water into a saucepan, over a medium heat and stir until the sugar is dissolved. Add the orange halves and boil gently until translucent and soft, about 15 minutes. Carefully lift the orange slices out of the syrup onto a plate. Put the orange zest into the syrup (reserve the grated rind for later) and cook for 45 minutes. Remove the caramelised zest onto another plate. For the cake, insert a cake liner in a 20cm/8" deep, round cake tin and pre-heat the oven. Lay the prepared orange slices in a circular pattern in the bottom of the tin. Measure the cocoa into a bowl, add the boiling water and vanilla extract and stir until smooth. Put the sugar and eggs into a mixing bowl and beat until smooth and creamy. Beat in the prepared cocoa followed by the olive oil and reserved grated rind. Add the flour and stir to combine. Tip the mixture onto the oranges and smooth the top. Bake for 45-50 minutes. Leave the tin for 20 minutes then carefully turn the cake out onto a wire rack, remove the cake liner and leave to cool. For the chocolate drizzle, break the chocolate into small pieces. Measure out the cream and bring just to the boil. Add the chocolate, without any heat, stirring until smooth. Using a spoon, icing bag or bottle, drizzle the chocolate over the cake. Transfer the caramelised orange zest onto the cake and leave to set. Recipe from Doves Farm

An Evening of Festivity Onboard the
Spirit of Christmas The Steam Dreams Rail Co. have announced the launch of their exclusive festive train, The Spirit of Christmas, departing London Paddington on the 20th of December at 18.00 for a magical evening of celebration aboard the only evening vintage steam train departing London this season. Passengers will be transported to a bygone era of Christmas past as they are warmly welcomed onto festively decorated vintage carriages for a five hour round trip amidst the twinkling lights of the capital as the train makes its way out through Berkshire and Wiltshire before returning to Paddington. There will be four classes of travel available, including a new elevated Pullman Dining class, The Helicon Club. Pullman Dining, First Class and Premium Standard are also available.
Guests in The Helicon Club will start their evening in the stylish Hippocrene Bar, which strikes the perfect balance of history and contemporary spirit, accommodated in the beautifully restored Bar Car 6708, Mt Helicon. Guests can mingle and enjoy bespoke entertainment, whilst delighting in an intoxicating prelude of Champagne and canapés before being escorted to their sumptuously appointed dining carriage, for the evening’s repast. Liveried stewards will attend to their every whim as they savour each morsel of the delectable four-course Pullman Dining carte du jour including a Great British Cheeseboard, paired with a bottle of wine per couple from our sommelier’s selection, at tables laid with crisp linen, and embellished with fine crockery, fresh flowers, and glassware. Created with a pastiche of seasonal delicacies, the menu is artfully created on-board by Executive Chef Nicholas Allen and his culinary team. After dinner passengers can make their way back to the Hippocrene Bar to wind down with a digestif and freshly brewed coffee before disembarking. As a result, the only way to access the chalet is by private helicopter which is exclusively offered by the Sheldon family - the only people permitted to land in the Denali National Park. Prior to Sheldon Chalet, the only way to experience Denali overnight was as a climber, sleeping in a light fabric tent. Never before has anyone been able to experience the majestic setting of Denali National Park whilst being enveloped in pure luxury.
Located on five private acres (the only privately-owned land in Denali), the chalet runs largely on a combination of solar and generator energy created and stored for use in a new green technology known as super capicators. Designed to emulate the Sheldon Mountain House, the clever hexagonal structure means it is able to deflect the strong Alaskan winds, whilst providing ultimate insulation and warmth. Heated by a wood-fired masonry heater, combined with its specialised insulative exterior envelope system, the Chalet offsets its low diesel consumption via a high-efficiency turbine generator. The five-bedroom chalet accommodates just ten guests at a time on an exclusive-use basis, and provides a truly intimate, one-of-a-kind experience for travellers, with each room providing spectacular views of the Denali mountains. The chalet has a sauna located beneath its helipad, a central wood-burning stove in the living area, and a balcony providing breath-taking panoramic views of the surrounding slopes.
Unsurprisingly, there is no wi-fi at the chalet, meaning guests are truly disconnected from the outside world; left to immerse themselves in the natural outstanding beauty that surrounds them.
The wonder of a stay begins on the private helicopter flight over the valley, when guests can marvel at the beautiful wildlife that roams beneath them in the Denali National Park, including moose, bears, caribou and coyote. Once landed, guests are greeted with a specially prepared Alaskan seafood extravaganza, paired with Champagne.
After the first cosy evening in the chalet, the true adventure begins. The day starts with a gourmet breakfast cooked by one of the chalet’s resident chefs (there are two chefs who alternate) who create delectable dishes using locally sourced Alaskan ingredients and tailor bespoke menus for every individual guest.
After a delicious start to the day, guests embark on a series of incredible experiences to explore the surrounding slopes. All guests are given a glacier training course to ensure they are fully prepared to encounter the wonders of the national park. From March to June, the Don Sheldon Amphitheatre becomes a skiing paradise, with endless untouched powder to enjoy. Glacier guides lead guests through the vast terrain via backcountry skiing, glacier mountaineering and summit climbing. Other unique, once-in-alifetime activities that are exclusive to chalet guests include full-moon glacier trails, gourmet glacier picnics, ice climbing and meteor shower gazing.
