How Journaling Can Help our Mental Health Mental health problems are experienced differently by everyone and are therefore subjective, but there are some methods that have been shown to help us address and manage our feelings, and also help us to feel more positive about the future. Lockdown allowed many of us to take up new hobbies and pursue existing interests, but journaling was one activity in particular that the nation has maintained interest in - largely due to the wellbeing benefits that it can offer. Nostalgia increases our happiness Looking back at past memories and life moments has become commonplace over the course of the past year and a half, offering us a form of escapism from the pandemic. And while reflecting on the past can be an intellectual activity, nostalgia is also an emotional one. Memory is about recalling the facts of a past event; nostalgia is about recalling how it felt to be there. A 2013 study published in the Personality and Social Psychology Bulletin found that engaging in nostalgia led people to feel more optimistic about the future. Nostalgia is also related to higher self-esteem, happiness, and feelings of closeness to loved ones engaging in past memories evoke these feelings for us, boosting our overall mood.

The impact of journaling on our mental health The act of writing in a journal to record your innermost thoughts yields a whole host of benefits when it comes to our mental health. It can better our mood, increase our sense of wellbeing, and even lead to better working memory. In some cases, journaling is "prescribed" as a way to reduce PTSD symptoms or to help people suffering from depression and anxiety. However, you don't have to be suffering to benefit from journaling - any time spent writing your thoughts helps your brain to get better at regulating your emotions. And a biography is like a journal on steroids! Self-reflection is key to personal growth If there's one overarching condition of modern life and one we can all relate to - it's busyness. We move from email to email or meeting to meeting with little time to pause and think about our lives and their meaning — a situation that's only been made worse by the distractions of smartphones. Yet Harvard researchers have found that making time for selfreflection is a crucial component of learning. Writing a biography is the ultimate exercise of self-reflection, as you aren't just thinking about a day's work, but your life as a whole.

Midlife Madness Over the past few years, even before the days of the pandemic which has certainly increased it, we have all moved to doing much more of our shopping online. For many, online grocery shopping is a frequent occurrence and increasingly much of our other shopping seems to be done on line. If I’m honest I go to town less and less as there are fewer and fewer shops – if you take out charity shops and pound stores. But one of the essential elements of online shopping is that everything you order simply must be delivered. That is something in my experience that has its highs and lows. On the plus side we live in a pretty safe place so behind the bin, inside the back gate, behind a big plant pot all work pretty well. We have also found a few parcels which look to have been thrown a distance into the back garden but as long as they aren’t breakable I’ve no quibble with that. Frankly I’d rather retrieve items from our garden, even if left in slightly unorthodox places than have to trek to the post office!

When it comes to groceries the biggest issue I remember is the substitutes and occasionally the amounts – you know 2 dozen bananas instead of 2, or a white sliced loaf instead of a multi seeded, whole-wheat, sourdough – rarely have I seen the substitutes to be so extreme but you get the drift.

When it comes to the delivery though you have to be in to receive groceries so while I may have wished the delivery driver could step inside and put them all in the cupboards, I have never needed to have a garden treasure hunt to find the shopping. Our greatest near miss with deliveries was when a special (aka very expensive) item was to be delivered in a onehour time slot and it was the ‘Christmas Maker’ present for the grandson and we had been entrusted with receiving it. Yes, a weighty responsibility!

All went well and there we were patiently waiting at home

during the said hour when I had a text from a friend cancelling an arranged meeting and saying she’d pop over to drop off pressies. Problem was I hadn’t got hers (the arranged meet was following day so plenty of leeway). Well of course this new information somehow bumped the important job out of our brains as we hot-footed it to the car to go and buy gifties. Yes, you’ve guessed it barely a kilometre from the house we got the text that they’d tried to deliver it and taken it away again! We quickly did a u turn ready to accost any van driver we saw but to no avail! Despair – we might have spoiled Christmas! But all’s well that ends well and it was delivered the following day (Christmas Eve).

The other deliveries we have found problematic are takeaways. Now when we order from our favourite curry house all works well but we tried a Chinese restaurant that we’d used before but not so much. On the particular night we rang, they said they were really busy and that it would be 3 hours – yes 3 hours. But we ordered on the app and it was only an hour! Sneaky right! It was just over the hour when I heard a car door and went outside just to see a box of Chinese in someone’s hand as they knocked at the house next door! In full on panic mode I shouted to the deliverer that that was for us. No! He replied it’s for number 12! To be honest I was ready to rugby tackle but he said he’d check and sure enough it was ours. Now that was close shave. I also had a very confusing conversation on the phone from a driver dropping off a box of wine, important delivery or what, and said he couldn’t find the house – a long confusing conversation followed until we managed to establish he was at the right number and street in the wrong town!

I guess like anything new there are skills we need to learn, remembering we are waiting for a delivery, identifying the hiding places in our garden and ensuring we establish which town we live in!

Learning Not to Settle The word settle has a couple of different meanings – paying a debt or due OR reaching an agreement of some sort. I’m referring to the latter but with a very specific content in mind namely the agreements we reach with ourselves. I started thinking about this after I read a particular quote ‘You get what you settle for!’

It leapt off the page at me as it seemed so very true. I’ve often talked before about mindset and I straight away saw this quote in the context of our mindsets. You see we so often settle for what we think we deserve but our view can be distorted. Many of us, as we have gone through life gather unhelpful mindsets – two very common ones are that we deserve what we get (especially if it is negative) and we are limited in what we can change.

Obviously, we’ll have to talk in a generalised way but the fact is that every single person deserves happiness. If we accept that, and if I’m honest that is often something that people have to do quite a bit of work on before they can honestly say they believe it, it can be life changing. Sadly, some people may have had all sorts of, often unhelpful ideas, given to them about what they do and don’t deserve or what they can expect from life. Of course, it doesn’t mean you will be happy all of the time, life can be unfair, challenging and difficult but if we can believe that we deserve to be happy that is a good start.

So, our underlying, subconscious mindsets exert a powerful influence on our lives and if any aspect of our lives is not as we wish then taking time to examine and in some ways unearth (the problem is they are subconscious) what our mindsets are, is a very good place to start.

But to get back to this notion of settling. There are some things in life that we need to accept – some things that barring mind blowing miracles we can’t change. But there are probably just a few of those and very many aspects of our lives can be changed to some degree – providing we decide we won’t settle or accept them.

Part of living in relative harmony with those we are surrounded by, means compromising and being tolerant BUT while that is obviously good it shouldn’t mean our own wants, feelings and needs are constantly put on hold or not attended to – it is not being selfish to acknowledge that you have hopes and dreams too. After taking a look at your mindsets and ridding yourself of any unhelpful ones then it should be easier to get a good picture of your value. When that sense of value becomes really embedded then the realisation comes that it is not selfish to look after yourself, to work towards goals that you want to expect to be treated in certain ways, because you are worth it and you deserve to be happy.

When you do that, it can help reframe how you see things, not many things are fixed or unchangeable, people sometimes do certain things because they are expected to but again complying with the expectations of others may rob you of the chance to do some things that are really important to you. I’m sure many will have had experiences where you have ‘gone along’ with things, Not done something so it keeps someone else happy and the impact if we do that all the time is not good. Not settling means staying open to your dreams, because it is never too late to change course. Remind yourself that you deserve to be happy so if aspects of your life aren’t as you wish then you can change them, but first you have to believe that is possible. Spend some time reflecting on where you are – is it where you thought you’d be? Sometimes it’s not but it’s a place you feel happy and fulfilled which is good. But if it is not, then taking some time to reflect can be helpful, are the dreams you had earlier in life still things you’d like to achieve, or have you changed? As it stands today what are your dreams? We only get one shot at life, and while it isn’t fair and stuff that we don’t like happens there is an awful lot we can do to ensure our life is as positive and happy as possible. 4 tbsp groundnut oil 1 aubergine, halved lengthways and cut into 1cm/½in slices 2 garlic cloves, finely chopped 1 tbsp grated fresh root ginger 1 red chilli, finely chopped 200g/7oz pork mince 1 tbsp Shaoxing rice wine or dry sherry 2 tbsp chilli bean sauce (available from Asian grocers) 200ml/7fl oz hot chicken stock 2 heads pak choi or ½ Chinese cabbage, halved and sliced lengthways 1 tbsp clear rice vinegar or cider vinegar 1 tsp toasted sesame oil 2 spring onions, chopped 1 tbsp cornflour, mixed with 2 tbsp cold water

Method

Heat a wok until smoking and add two tablespoons of the groundnut oil, then fry the aubergine slices with a splash of water for 3-4 minutes, or until softened and golden-brown all over. Transfer to a plate and set aside.

Wipe away the excess oil from the wok, reheat and add the remaining groundnut oil. Heat until smoking. Stir fry the garlic, ginger and chilli for a few seconds, then add the minced pork. Stir fry for one minute, then add the rice wine or sherry. Cook for 34 minutes, or until browned, then add the chilli bean

sauce and hot chicken stock. Return the aubergines to the wok and add the pak choi.

Season, to taste, with the vinegar and sesame oil and bring to the boil. Cook for 3-4 minutes, or until the pork is cooked through, then stir in the spring onions. Add the cornflour paste and stir until the liquid has thickened. Spoon the fragrant pork and aubergines into a serving bowl and serve immediately. RECIPE: Chinese Food Made Easy

Squid, Chickpea & Chorizo Stew

“This easy one-pot Spanish-style stew gets most of its flavour from the chorizo, so buy the best you can find. Add an extra pinch of chilli if you like things a bit hotter”

Ingredients

1 tsp olive oil 80g/3oz cooking chorizo sausage, finely chopped 1 onion, chopped 2 garlic cloves, thinly sliced Pinch dried chilli flakes ½ tsp sweet smoked paprika 1 rosemary sprig, leaves stripped and finely chopped 50ml/2fl oz red wine 400g/14oz tin chopped tomatoes 250ml/9fl oz fish stock 300g/10½oz medium squid, cleaned 400g/14oz tin chickpeas, drained (240g/8½oz drained weight) 50g/1¾oz baby spinach Small handful flatleaf parsley, roughly chopped 1 lemon, zest only Sea salt and freshly ground black pepper

Method

Heat the oil in a small sauté pan over a medium-high heat. Add the chorizo and cook for 2–3 minutes, or until the chorizo releases its oils and begins to turn crisp. Add the onion to the pan and sauté for 2–3 minutes, then add the garlic and sauté for another 2 minutes. Add the chilli flakes, paprika and rosemary and cook for 3–4 minutes, adding a splash of water if the mixture starts to stick.

Increase the heat to high, add the wine and let it bubble uhtil the volume of the liquid has reduced by half. Add the chopped tomatoes and stock, bring to a simmer and cook for 10 minutes.

In the meantime, prepare your squid. Cut the pouches into 4cm/1½in pieces, scoring the inner surface, or slice into thick rounds. Cut any long tentacles in half. Add the chickpeas to the pan and cook for 3–4 minutes, stirring occasionally. Add the squid, stir gently to submerge, and put a lid on the pan. Leave the squid to cook gently for 3–4 minutes. Season with salt and pepper, remove from the heat and stir through the spinach and half of the parsley. Ladle into warmed bowls, grate over a little lemon zest and sprinkle with the remaining parsley before serving. Recipe by: Tom Kerridge

No-bake Strawberry Cheesecake

“This strawberry cheesecake is a Valentine dream. Made with plenty of white chocolate, strawberries and cream” Ingredients

2 tsp sunflower oil 200g/7oz digestive biscuits 100g/3½oz unsalted butter ½ tsp ground cinnamon 100g/3½oz white chocolate, roughly chopped 400g/14oz strawberries, trimmed, plus extra to decorate 300g/10½oz full-fat cream cheese 1 tsp vanilla extract ½ unwaxed lemon, finely grated zest only 1 tbsp runny honey or maple syrup 200ml/7fl oz double cream

Method

Brush the inside of a 20cm/8in springform tin with the sunflower oil, and line the base with a disc of baking parchment. Put the digestive biscuits into a sealable freezer bag. Push all the air out and seal the bag. Crush the biscuits with a rolling pin, until they are reduced to sand-like crumbs.

Melt the butter in a large saucepan. Stir in the biscuit crumbs and cinnamon. Press the crumbs into the bottom of the tin. Chill in the refrigerator for 30 minutes.Chop 150g/5oz of the strawberries in half from top to bottom and arrange around the edge of the prepared tin, cut side-up. Chop the remaining berries into small pieces. Melt the chocolate in a heatproof bowl, either over a pan of simmering water, making sure the bowl doesn’t touch the water, or in a microwave. Beat together the cream cheese,

vanilla, lemon zest and honey in a mixing bowl. Stir in the chopped strawberries.

In another bowl, whisk the double cream until it holds a floppy peak. Fold the melted chocolate into the cream cheese mixture, followed by the double cream. Add more honey if needed. Spoon the filling into the tin, being careful not to move the strawberries on the edge. Spread level with a palette knife or the back of a spoon, cover with cling film and chill overnight, until firm. Carefully remove the cheesecake from the tin and put on a serving plate. Jersey Boys are Beggin’ to Entertain Us Jersey Boys are ‘working their way back’ to Milton Keynes this February and we were lucky enough to catch up with Michael Pickering (Frankie Valli), Lewis Griffiths (Nick Massi), Blair Gibson (Bob Gaudio), and Dalton Wood (Tommy DeVito) who talk nostalgia, gambling and Covid. What can audiences expect when they come to see the show? Dalton: They’re in for a fun-filled night with amazing music, on top of which, there’s a true and gritty story. It’s all-round entertainment. Michael: It’s one of those shows where if someone says ‘My husband won’t come see a musical’ this is the one you bring them to because they’re going to love musicals after seeing it. Sometimes men get dragged along to it and they leave going ‘Oh my God that was amazing’. It’s a wonderful night out.

Is it just what audiences are craving right now, after all the lockdowns and restrictions? Michael: Absolutely. It’s got such a great story, everyone loves the music, and it kind of relates to the world we’re living in at the moment because the Four Seasons went through such hard times yet they kept going. It’s an inspiring story and we all need that at the moment.

Lewis: With the greatest respect to Jersey Boys I think faithful theatre audiences are craving anything they can get their hands on. But Jersey Boys just happens to be one of those shows that puts life into perspective and makes you smile at the same time.

Why do you think there’s still such nostalgia for the music? Michael: No-one has come close to touching it since. They had the four-part harmonies and Frankie’s unique falsetto, and they were a group - they were a team and a family, not some manufactured band. They loved what they did and they worked hard to get to the top. Dalton: Frankie is still out there and still going strong, which helps keep the music alive as does the show. Beggin’ is a hit all over again, which is amazing, and all their music is just incredible. That’s why it keeps coming back round again and again.

Blair: The songs are classics. As Dalton says, Beggin’ is now one of the bestselling songs around the world and it originally came out in 1967. Their music is timeless. How would you describe your respective characters in the show? Michael: Frankie Valli has the biggest heart and a wonderful talent. What he lacks in stature he makes up for in heart and I think he falls on hard times because of how much he gives to his family and friends. Lewis: Nick is the band’s bassist and arranger, a musical

genius and the strong, silent type. He’s incredibly enigmatic, with his quirks and his isms, and he’s dealing with his demons - which really resonates in this day and age where there’s more awareness of mental health.

music again. We’re dancing around. [Laughs] The good old thigh slap.

It’s not just a jukebox musical, is it? Lewis: Absolutely not. It can easily, mistakenly be labelled a jukebox musical by people who aren’t familiar with the terminology but it’s actually a play. Jersey Boys has always been a play where this incredible back catalogue of music is interwoven through the story chronologically. Dalton: It’s a play with songs because it tells their story. You get all the music everyone still loves and wants but you also get a gripping true story.

Blair: Bob is the composer who wrote all the songs for the Four Seasons as well as for other artists. He also had a role in the production side of things, especially later on in their careers. He’s very pragmatic and very logic-driven, which is what the group needed at the time, and it’s part of the reason they’re still big and still successful today. Dalton: Tommy is the one who started the band. He has his issues; he’s a big gambler and gets into money troubles. But he’s the one that brought them all together and he’s such a big character to play. There are so many great songs in the show. Do you have any favourites to perform? Dalton: I love the big three, so that’s Sherry, Big Girls Don’t Cry and Walk Like a Man. Those were the group’s first big hits. We perform them one after another. The dance moves and the harmonies come out - they’re such fun to perform. Michael: For me it’s Cry for Me, which comes quite early in the show. It shows the boys coming together one by one and it’s the first time they hit their harmonies and go ‘This is it’.

Lewis: Beggin’ is so infectious. It’s groovy but it’s dark and gritty. It’s an uplifting pop song but with a deep meaning to it in terms of the lyrics and where it falls in the story. I also love Stay because it comes after a really intense, explosive scene and it shows them lacing up their shoes, straightening their ties and stepping out in front of a crowd. It’s like ‘We’re still here, we’re thriving, and we love what we do’ and that’s kind of a metaphor for myself and people who are striving to work in the theatre industry at the moment. Kudos to anyone that’s doing it. Blair: I love Let’s Hang On because it’s when they’ve come out of a period of darkness and angst and it’s all about the

Blair: People come expecting the songs they know and love but they go away having learned something because not everyone knows the ins and outs of the plot. It’s almost like a documentary told by the band themselves. You get different points of view on the same story from these four people who are four very different guys. It’s a very dramatic narrative but also has that feel-good element. I feel good just doing it. How have audiences been so far? Lewis: It’s been such a pleasant surprise. Theatre has been a long-suffering victim of the pandemic and there’s some apprehension but they’re coming back to theatres in droves and loving it. They’re showing their approval by having a great time.

Dalton: We’ve had standing ovations every night so far and fingers crossed that carries on. The reaction has been so positive and for us as performers it’s just nice to be back out there again after so long.

What do you hope people will feel when they leave the theatre? Dalton: We end the show with such joyous numbers everyone knows, even if they weren’t around at the time they first came out. They’ll leave upbeat and happy. They’ll have had a fun, energising evening whilst learning a bit more about the Four Seasons’ story along the way.

Blair: It has peaks and valleys, with fun moments and some really dramatic ones. It gives you feel-good moments then brings you back down to earth before ending with Who Loves You – a song that everyone knows and which has everyone on their feet. I think they’ll leave feeling ecstatic but also surprised by what they’ve learned. We’ve had so many people say ‘We had no idea about the story, we just came for the music’. There’s a lot of appreciation, which is always nice to hear.

The Fellows HoUSE A Cultivated Retreat

T

here’s something for everyone when it comes to Cambridge, whether it’s history or culture, coffee shops or boutiques, idyllic streets and of course punting. The choice is endless it is a city that some even say ‘changed the world!’

And now amongst the many places to stay, there’s a new kid on the block, located a short walk from the city centre, and a stone’s throw from the River Cam and Jesus Green, is The Fellows House part of the Hilton Hotels ‘Curio Collection’ and the perfect base to explore and unlock the history of this famed city. From outside, the building is unassuming, but walk through the doors and you are met with a unique luxury and distinctive combination of contemporary and classic elements all inspired by the city’s colleges, specifically of course, the fellows.

A rich, deep colour palette of walnut, burgundy and metallic tones intertwined with artwork that includes a stunning oil painting of Dr Davidson Nicol (the first black African fellow at Cambridge) and you know that a lot of thought has gone into creating an ambient, historic aura.

Behind the Cipollino Ondulato Rosso marble reception desk is a floor to ceiling wooden pigeon hole cabinet (the kind once popular in colleges). Each pigeon hole is labelled with a word in an old typewriter font, which on their own are meaningless, but put them all together and they form a poem by a Cambridge fellow.

The Fellows House houses 131 rooms from standard through to apartments and duplexes. The majority though are apartment-style rooms and of course they are named after influential Cambridge graduates. We were staying in one of the apartments – A large space with a fully kitted out attention to detail kitchen with fridge, hob, dishwasher, pans, crockery, cutlery, even a cookbook, in case you feel like becoming the next Nigella Lawson during your stay! Adjacent to the kitchen is the living and dining space, where earthy grey tones, muted neutrals and sleek furnishings create a relaxing, luxurious ambience.

There’s a Flat screen TV in both the living area and bedroom, with a King- Sized bed, soft pillows, crisp white sheets and the fluffiest of gowns. The little details are what makes a stay extra special, a gift bag of goodies that included bottles of fruit juice, gin, tonic water and a copy of Thomas Hardy’s ‘Far from the Madding Crowd’ were all a welcome treat and the White Company toiletries in the bathroom were the icing on the cake. You can’t have all these treats and not indulge, so after an invigorating rainfinity shower it was time to curl up in the corner wrapped in a fluffy gown, slowly sipping a Gin & Tonic! Before getting too comfortable and not moving from my spot it was time to explore the pool. The lift takes you directly down to pool level so no need to change out of your

fluffy gown. The pool is small and intimate surrounded by comfy loungers with a sauna and steam room off of it. There’s even a separate gym if you’re feeling energetic – I wasn’t - chilling by the pool was enough for me.

Dinner was served in The Folio Kitchen, a combination of contemporary and classic décor within a fresh and invigorating colour palette. Walls and columns are clad in whitewashed brick with original artworks adorning them, there’s even a romantic poem written nearly 100 years ago by a Chinese student and a leader of China’s New Culture. With splashes of burnt orange, sage green and brown leather upholstery set against antiqued mirrors and a geometric black and white tiled floor, The Folio Kitchen is another nod towards the fellows and their history.

The cocktail menu is a dream, it has all the classics along with specially themed cocktails, all encapsulating the theme of the hotel through their names and ingredients ‘The Day Dream’ Alfred Tennyson (Linden Leaf 8 Gin, rhubarb syrup, lime, strawberry and soda) and ‘The Enigma’ after Alan Turning’s Biography (Dark and White Rums, pineapple, passion fruit, tikki bitters and absinth) were our choices and what great choices they were, our taste buds were suitably tempted and we were ready to dine. The menu was full of tempting dishes but after much deliberation we opted for the Avocado accompanied with a Rice Bowl and Scallops with Celeriac, both dishes were impeccably presented and were infused with flavours and textures that had our taste buds wanting more.

The mains consisted of Lamb served with vegetables, spiced cous cous, lamb jus and a tomato & mint relish creating a real explosion of tastes - perfection on the

palette. Rib eye served with all the trimmings was another treat, cooked exactly as requested and well rested it literally melted in the mouth.

Dessert was an indulgence too far for me, I was full, but hubby had no such problem and delved into the Berries & Meringue, light and refreshing and the perfect way to end a delightful dining experience. But the evening didn’t end here, it would have been sacrilege not to indulge in another cocktail at ‘The Folio Bar’ and soak up the atmosphere of what can only be described as a ‘Private Members Club’ that surrounds itself with soft low lighting, sumptuous sofas and armchairs (Sherlock Holmes wouldn’t look out of place here), a cosy log fire and a pool table that just sat perfectly within the curios and history of this unique hotel. After a peaceful and restful night sleep breakfast the next morning was a laid back relaxed affair, which set us up perfectly for a full day of exploring.
