As you read our first issue of 2022, it’s hard to think we’ve navigated our way through yet another year of Covid and its restrictions, which is why I’m getting into a positive mindset full of hope and optimism for a brighter, better year.

6 Reasons Why your Heath will Thank You for Sticking with Dry January Ditching the alcohol over January has become an increasing trend over the past few years. We’ve asked our health experts to explore the benefits of saying no to alcohol this month…
1. Shed the post-Christmas food baby Research led by the University of Sussex, looked at over 800 people participating in Dry January and revealed that three in five lost weight. “Alcohol prevents the body’s ability to digest fats properly, so excessive amounts of fat may build up in the liver and temporarily stop your body from burning fat,” explains Dr Marilyn Glenville, the UK’s leading Nutritionist and author of Fat Around The Middle. Dr Glenville adds that, “alcohol prevents the release of glucose from the liver and can cause hypoglycaemia (low blood sugar levels). This drop in blood sugar often produces a craving for foods which will then raise the blood sugar, such as more alcohol or sugary foods – not good for anyone, especially those concerned about weight gain, especially fat around the middle!”
2. A more satisfying sleep In addition to the late nights that tend to follow from drinking, too much alcohol can disrupt the quality of your sleep. According to Drinkaware, when you drink alcohol before bed, you spend less time in a deep sleep as the night goes on and more time in the less restful, Rapid Eye Movement (REM) stage of sleep. This can leave you feeling tired the next day, regardless of how long you stay in bed. “To help get your body into a better sleeping routine, try to increase your intake of magnesium. Magnesium is needed to relax our muscles, which in turn can help us fall into a peaceful sleep,” explains Nutritionist Cassandra Barns. A happier state of mind Alcohol is often known as a depressant and can cause low mood levels. “Those consuming excessive alcohol may have lower levels of tryptophan (the amino acid that is converted to serotonin – also known as a ‘happy hormone’). Low serotonin, selenium and vitamin B levels are a major feature of depression, mood swings,
anxiety and irritation,” explains Dr Glenville.
4. Think of your liver Nutritionist Alix Woods explains, “Cutting out alcohol for a month means the liver becomes less fatty and functions better, which is so important for long term health as it has many diverse roles within the body; like digestion, detoxification and hormone balance. Having ‘time-off’ from alcohol… reduces the chances of inflammation and ultimately long-term liver damage.”
5. Prevent wrinkles “Repeated consumption of alcohol inhibits the liver’s production of digestive enzymes, which then majorly reduces the body’s ability to absorb proteins, fats and the fat-soluble vitamins (vitamin A, D, E and K), as well as the B complex vitamins especially B1 (thiamine) and folic acid. Many essential nutrients are not retained by the body and are ‘washed out’ rapidly through the urine. This means that alcohol consumption causes a major loss of valuable nutrients and antioxidants. Without these vital elements, we may not have the adequate ingredients to make collagen, meaning we may produce wrinkles more easily. With the loss of antioxidants, we may age much more quickly, losing our vitality and looks,” explains Nutritionist, Cassandra Barns. 6. Deter blood sugar imbalance "When you have type 2 diabetes, drinking alcohol can cause your blood glucose levels to either rise or fall, depending on how much you have eaten; how much alcohol you consume, how quickly, and the amount of carbohydrate present in the drink, or mixer. Beer and sweet wine can cause blood glucose levels to rise, for example. Alcohol can also stimulate your appetite so you are more likely to over eat; affect your judgement and will power so you are less likely to make healthy food choices and provides ‘empty’ calories that are readily converted into fat in the body, raising triglyceride levels and contributing to fatty changes in the liver and pancreas, which are associated with insulin resistance. The calories provided by alcoholic drinks also make it difficult to lose weight and alcohol can interfere with the beneficial effects of anti-diabetes medications," explains Dr. Sarah Brewer.

Train your brain to accept less stimulating — but more helpful — activities such as exercising, spending time with family, listening to a podcast or even mindfully making a cup of coffee.

Midlife Madness As you read the title I imagine that at first you thought I was talking about the uncertainty the pandemic has brought us and while I acknowledge that this uncertainty is part of the big picture it seems lots of other uncertainties have started to creep into my life.
There are the obvious pandemic related uncertainties like when is a party actually a party, not a business meeting and when is socialising with friends something that is necessary!!!! In my book always – human connections are what keeps us all going and we have all seen the negative impact on mental health of not having those connections. Then there are things like holidays I used to love booking holidays, and actually going on them but honestly the lists, the tests the whole blooming uncertainty, the fact you could be turned away almost at the gate just puts me off altogether.
But there are other uncertainties – I’m not sure if it is the world that is changing or me. Like when do we call someone old? I know age is a relative concept and I remember when I was a teen, thirty seemed old then I when I was 30, 50 seemed old and so it goes. But nowadays I read that 50s are the new 30s and you are as old as you feel. Am I old or is joint aching and declining senses part of a new middle age? All I can say is that I am noticing certain signs – first Saga seem to contact me way too regularly – there is absolutely nothing I want from them …yet! I don’t even know how they got my name and address, but if my perception is that they work with older folk then someone somewhere seems to be defining me as old – maybe I am, it feels all sorts of defining lines are becoming blurred.
And is working still working when we are always
at home – well, yes obviously, but it feels very different and I have an entire wardrobe of clothes I almost never wear because it feels a bit beyond me to dress very smartly to sit in my study (converted bedroom) and of course at my time of life – however that might be defined, comfort is a priority especially when at home. I’m not even sure we’ll ever go back to how things were and maybe some of us wouldn’t want to – or maybe we would? AARRGGHH. Then there are the much simpler uncertainties like will I be able to open the bottle of wine, jar of olives packet of cheese? Simple tasks that seem to be getting harder. Or even will I be able to get down that escalator safely or even the stairs in the house - varifocals and darkness aren’t a good combo I have discovered when it comes to going downstairs. They are not brilliant for driving in the dark either – despite paying a fortune for antireflective lenses! The phrase that we never know what the future holds has certainly held true over recent years and perhaps we are all learning to live with greater degrees of uncertainty or maybe the uncertainty has always been there but we’ve not acknowledged it as much. I can say quite honestly that I’m not a fan – I’m a person who loves a plan and I’m not doing well with all of this.
But I don’t see my wish for greater degrees of certainty coming true anytime soon. So, I’ll have to hang on to the things that I know are certain- I’ll get older not younger, travelling is likely to be more complicated, plans may be cancelled at short notice, I’m probably more rather than less likely to fall over or be injured by the contents of some package that was proving so impossible to open! Now there’s a few cheerful thoughts.

A Notice to Notice The start of the New year is often a time for reflection and future planning – perhaps even some resolutions, which let’s be honest might last until February, or not even that long! This year sees us still in periods of uncertainty where planning can be hard and disappointments may need to be faced but there are certain steps we can take to help us cope with the challenges we are still having to face and steps that might help us be able to change or improve some of those aspects of life that aren’t working out the way we’d hoped. The first step is to notice where we actually are. Not where we thought or planned we’d be but where we actually find ourselves. This isn’t a reason to give yourself a hard time these have been very tough times for many of us and of course life simply doesn’t always go as planned.
At any point in life there are usually things we are happy about, relationship we love, jobs, hobbies friendships and much more that we enjoy and get pleasure and fulfilment from. It is so very easy to take for granted the things that are going well and focus only on the things we want to change. Noticing where we are also means being grateful for all the good things that are in our lives as well as the things we may want to change. But as well as noticing the good things it is also ok to notice the things we aren’t so happy about – in fact we owe it to ourselves to notice these things too. The first step to any change is to acknowledge that we aren’t happy with the way things are.
When you begin to notice which aspects of your life you are not happy with then allow some time for reflection to think how you would want it to be different. Meditation or visualisation exercises can help with the process. But perhaps the most important thing is to learn to notice your feelings – for a whole variety of reasons.
First notice how you feel around different people – obviously everyone has moods but if contact with a particular person always makes you feel negative then you can choose to see them less. Or if you feel someone consistently makes you feel inferior because of what they say or do not because you compare yourself to them, then why subject yourself to that? But it’s not just people, what other things seem to impact
your feelings in a negative way? There are aspects of any job or relationship that might occasionally make you feel negative but if you constantly dread going to work if you constantly get frustrated or stressed about a relationship then surely the sensible course of action is to think about a change. After all it is your life and you can make choices. I choose ….. To live by choice not by chance. To be motivated not manipulated. To be useful not used. To make changes not excuses. To excel not compete, I choose self-esteem not self-pity. I choose to listen to my inner voice. Not the random opinions of others
Remind yourself frequently that you can make choices. Secondly notice the good feelings – what things do you do, what places do you go, who are the people that you see that really make your heart sing. When we start to notice those activities, places or people then that or those are what we need to fill our lives with.
Noticing your feelings can help direct your path and help you to make choices. But the other aspect of noticing your feelings is that it can help you to deal with them in a healthy way. We all have aspects of our personality we may not be too happy about but accepting yourself for who we are (and knowing others do too) can have a powerful impact on our self-esteem. While they may not all be comfortable our emotions are a vital part of being human and trying to ignore our feelings or bottle them up often leads to problems. So, notice that feeling even if it is sadness or frustration or something that would be regarded as negative, just pay it heed without judgement. Emotions can hurt but also heal.
In times of stress and tension it can be hard to acknowledge feelings, to notice them, but in terms of emotional health that is exactly what we need to do.
We will all find different ways to soothe or regulate ourselves the important thing is to find those ways that work for each of us and add them to our wellbeing toolkit. Roasted Stuffed Cauliflower The perfect start to Veganuary, this filling cauliflower roast stuffed with kale and chestnuts
Ingredients
1 large or 2 small cauliflowers (about 850g) 5 tbsp olive oil 4 tbsp breadcrumbs
For the stuffing 250g kale , chopped 1 tbsp milled linseed 1 onion , chopped 2 garlic cloves , chopped ½ small pack sage , leaves chopped ½ small pack rosemary , leaves chopped 150g cooked chestnuts , finely chopped, plus 30g for the topping 2 lemons, zested Nutmeg
Method
Trim and discard the cauliflower leaves. Turn the cauliflower upside-down on a chopping board and use your knife to carefully cut out the stalk and core, leaving a cavity – the florets should still be holding together.
Bring a large pan of salted water to the boil. Submerge the cauliflower and cook for 7 mins, then remove with two slotted spoons and set aside to steam dry. Add the kale to the pan and cook for a min or so until wilted. Drain, then run under cold water to cool. Squeeze out the excess liquid and roughly chop.
To make a linseed ‘egg’ (this will bind the stuffing together), mix the ground linseed with 3 tbsp water and set aside for 5-10 mins until gluey. Meanwhile, heat 2 tbsp oil in a frying pan, add the onion and a pinch of salt, and cook until softened, then stir in the remaining stuffing ingredients, including the kale, and cook for a
min or so more. Remove from the heat and season, then put in a blender with 150ml water and the linseed egg and blitz to a thick purée. Transfer to a piping bag. Pipe the stuffing mixture into every nook and cranny of the cauliflower, getting in as much of the purée as you can – see our tip below. Transfer to a baking tray lined with parchment. Can be made up to this point in the morning and kept in the fridge.
Heat oven to 200C/180C fan/gas 6. Mix the remaining chestnuts with the breadcrumbs and some seasoning. Spoon the remaining oil all over the cauliflower, then pat on the breadcrumb chestnut mix. Roast for 45 mins until golden brown and tender (place under a hot grill for the last part of cooking time if it needs to crisp-up). Serve with any crisp bits that have fallen onto the baking tray.

Fettuccine with Brussel Sprouts and Hazelnuts “Use up your leftover Brussels in this comforting pasta recipe”
Method
Ingredients
400g fettucine 1 tbsp. olive oil 500g Brussel sprouts 2 cloves of garlic, crushed 1 tbsp. butter 1 tbsp. flour ½ cup dry white wine 1 cup vegetable stock (or chicken or bone broth if not vegetarian) 1/3 cup freshly grated parmesan juice and zest of ½ a lemon ¼ cup flat leaf parsley, finely chopped Salt and pepper 1/3 cup roasted hazelnuts, finely chopped Extra parmesan for serving
Bring a large pan of salted water to the boil. Meanwhile, chop the stalks of the Brussel sprouts cut in half lengthways and finely slice. Put a large heavy based frying pan on medium high heat and add half the olive oil. Once hot add half the Brussel sprouts and one clove of crushed garlic. Cook until they are just starting to get crisp and golden at the edges. If this isn’t happening you may have over crowded the pan, remove some and try again. Once a little golden and crispy remove and set aside. Repeat with remaining olive oil, sprouts and garlic. Remove and set aside with the rest. Add pasta to the water and cook according to packet instructions. Drain, reserving a coup of pasta water. Add butter and flour to the pan and whisk for a minute or two to cook out the flour. Add the white wine and simmer for a couple of minutes then slowly whisk in the stock. You do not want the sauce to be too thick just thick enough to coat the back of the spoon, if you’ve cooked it down too much add some pasta water to thin it out, you can do this from the pot while your pasta is still cooking. Stir through the parmesan. Add the cooked pasta and Brussel sprouts (reserve a few tablespoons for garnish if you like) to the sauce and stir through to coat the pasta. Add lemon juice. Add some of the reserved pasta water if it looks too dry. Serve the pasta topped with the parsley, reserved Brussel sprouts and hazelnuts, a generous crack of black pepper and extra parmesan.

Peaches and Cream Pie
“The combination of peaches and cream make this more luxurious than your average fruit pie” Ingredients
225g cold unsalted butter , plus extra for greasing 500g plain flour 100g icing sugar, plus extra to serve 4 large free-range eggs 175ml semi-skimmed milk , plus extra for the dough 1 teaspoon vanilla extract 1 tablespoon cornflour 175g fat-free Greek yoghurt 275g caster sugar 2 x 410g tins of peach slices
Method
Cube 200g of the butter and pulse in a food processor with 400g of the flour, until it resembles fine breadcrumbs. Pulse in the icing sugar and 2 eggs, then bring it together with a splash of milk. Form the dough into a ball, wrap in clingfilm and chill in the fridge for 20 minutes. Preheat your oven to 180ºC/gas 4. Grease a 30cm pie dish with butter. Roll out the dough to a 40cm circle, then place into the pie dish, firming it in place. Prick all over with a fork, cover with greaseproof paper, fill with baking beans and pop in the oven to blind bake for 10 to 15 minutes, or until cooked. Crack the remaining eggs into a bowl with the vanilla, cornflour, milk and yoghurt. Add 200g of the caster sugar, 1
tablespoon of the remaining flour and 1 pinch of sea salt. Whisk until combined and leave to one side. Drain and arrange the peaches in the bottom of the baked pastry case, then pour over the custard. Return to the oven and bake for about 40 minutes, or until the custard is set to the touch but still has a slight wobble. Cover the pastry edge with foil if it colours too quickly. Make the crumble topping. In a bowl, rub the remaining 25g of butter and 90g of flour with your fingers until it resembles breadcrumbs, then stir in the remaining 75g of sugar. Sprinkle over the pie and return to the oven for a further 15 minutes, or until golden. Leave to cool completely before dusting with icing sugar and serving. RECIPE: Jamie Oliver

Fry’s Footie Corner I would like to take this opportunity to wish everybody a Happy New Year. Let’s hope 2022 is better than 2021 around the globe and we can start looking forward with a bit of optimism. When I look back on 2021, in football terms, I do so with a smile on my face though. At Peterborough United, we secured automatic promotion to the Sky Bet Championship and I will never ever forget that day for as long as I am on this Earth.
It was already a challenging campaign with no supporters in the stadiums, but after putting ourselves in a wonderful position, we faltered against Doncaster Rovers, throwing a 2-0 lead away to draw 2-2 and set up a tense afternoon against Lincoln City.
I think the lads forgot that I have a history of heart problems, because I don’t think I would do that day justice in this column. 1-0 down, 2-0 down and then 3-0 down with just over half an hour to play. Not just to anyone either, against the team that fancied their chances of overhauling us and securing promotion for themselves.
Then out of nowhere, Siriki Dembele pulled a goal back and then Jonson Clarke-Harris scored a deflected free-kick to set things up for a crazy finish. I have to be honest, I couldn’t see the equaliser coming, but in the 95th minute, we got a spot-kick.
It is a good job VAR was not implemented in League One, let’s leave it at that.
You certainly need big (insert your preferred word here!) to step up and take a penalty in the 95th minute to get your team promoted, but Jonson puffed out his chest and put the ball in the back of the net. What a feeling that was! It was just a shame there was nobody there to witness it, bar the lucky few.
It set up a wonderful summer. Everyone knows how passionate I am about the national team and it was a joy to see England reach the final of the European Championships. I was there when they won it in 1966 and I thought we were going to be successful again, but we just can’t seem to get over the finishing line, particularly when penalty kicks are involved.
As we look forward to 2022, we have a World Cup in Qatar at the end of the year and hopefully we can go one better. For Peterborough United, our aim is simple, stay in the division. This time next year, I don’t want to be reflecting on what might have been, I want to be reflecting on another positive 12 months on and off the pitch. Stay safe and see you soon!
