HISTORIC FIGURES WHO HAVE VISITED BATUMI John Steinbeck

In the summer of 1947, John Steinbeck, an American writer along with the legendary war photographer Robert Capa began their journey to the Soviet Union. In his “Russian Diary” Steinbeck describes Georgia with particular admiration and pays great attention to Batumi with its beautiful landscapes, tropical climate and natural diversity. Many health resorts were located in Batumi at that time and citizens of the Soviet republics had to work really hard to get a chance of spending their holidays there. “We have come to believe that the majority of Russians hope to go to Georgia, and not to heaven when they die, since Georgia has a wonderful climate, rich soil and a small private ocean”- he wrote.

Mikhail Bulgakov The famous Russian writer visited Batumi twice, first in 1921, when he came to Caucasus in search of more favorable conditions for his creative life. Bulgakov had even planned migration from Batumi to Turkey, but returned to his homeland in the end. The second visit took place in 1928 when Bulgakov arrived in Batumi with his wife, visited Green Cape, and decided to write his “Master and Margarita” novel. He is the author of a play called “Batumi”, which was written for the 60th anniversary of Stalin.

Since its founding, Batumi has often attracted foreign visitors and people of different professions, interests and social status visited it at different times. Among many such visitors, there are people of special interest. 18 AJARA Life Magazine

Sergei Yesenin

A well-known Russian poet lived in Batumi from December 1924 to January 1925, in a house located on Melikishvili Street. During these two months in the city, Yesenin, managed to fall in love with two girls - Shagane Talyan, whom he dedicated a poem “Shagane, oh my Shagane!” and someone known as Kabtsova, whom he jokingly introduced to his friends as his new wife . Evenings spent with his new friends in Batumi, had a very positive influenced on his creative work. A poem “Anna Snegina” and dozens of others were written here, including those dedicated to the city.

Nobel Brothers In 1873, the founders of “Branobel” company went to the Caucasus in search of cheap resources. Already in 1875, in Baku, they established Nobel Brothers Oil Extracting Partnership, which then became the largest company of the Russian Empire. Baku-Tbilisi-Batumi was chosen as a transit route for oil transportation which has contributed significantly to the establishment of the “free port” regime in the city of Batumi. Nobel brothers have made a noticeable contribution to the construction of the Baku-Batumi pipeline, railway and Batumi Oil Terminal and were the first to transport oil from Batumi to Europe. In 2007, the house that once belonged to the Nobel brothers was transformed into a Technological Museum of Nobel Brothers, where in addition to the Nobels’ achievements, one can also get acquainted with the accomplishments of the Rothschilds and Mantashev, tea and tobacco extension process in Adjara and development of printing industry in Batumi. BATUMI BOULEVARD HISTORY SINCE 1881 & BOULEVARD TODAY In the new millennium, the boulevard continued to grow at a more rapid pace, antique stile marble sculptures and colonnades project were brought from Italiy, the Summer theater were built, three colored fountains worked out. History since 1881 In 1881, the governor of Batumi district, A. Smekalov had appeared an idea of creating a seaside park. This is where begins the history of Batumi Boulevard. The first project of the boulevard was developed by well-known Prussian gardeners Ressler and Reier. In 1884, Reseller died, and the successful initiative was handed over to a French nobleman, a famous garden designer Michel D’Alfonse. His contribution to the boulevard planning is so great that in historical sources, D’Alfonse is referred as “Kind genius of Batumi seaside”. The next stage of the boulevard development is associated with the gardener-decorator Iason Gordeziani, who using the knowledge gained in the Versailles Agricultural National Institute, encouraged herbal cover, expanded old and created new nurseries. In the new millennium, the boulevard continued to grow at a more rapid pace, antique stile marble sculptures and colonnades project were brought from Italiy, the Summer theater were built, three colored fountains worked out. The history of the Batumi Boulevard includes this century-long, continuous cycle, in which all the stages

of the seaside park were enriched and gained the sacred significance. Today it is the most visited and characteristic sight of our city. Boulevard Today Batumi Boulevard is the main and most visited sightseeing of the city. Georgia, distinguished by its growing tourist statistics, hosts about 8 million international visitors annually and about 2 million tourists visit Batumi, named as the Black Sea Pearl. It is noteworthy that walking in Boulevard for an alien or Georgian citizen who is in Batumi is a ritual, without which no one leaves this beautiful seaside city. The recreation zone, which at the same time is a cultural heritage monument, for centuries, has unites the city’s guests or native inhabitants. It involves a seven-kilometer seaside promenade, 4 historic alleys, bike path, and more than 40 thousand tree-plants planted at different times on the area. Batumi Boulevard, with its historical meaning and continuous development cycle, became a visiting card of our city where everyone finds their place.

Michael D’Alfons

Iason Gordezian

The foundation of the Batumi Boulevard is associated with the French Gardener Michael D’Alfons. In 1885 he has assigned on the post of the main gardener of Batumi and he is the one who started to develop the boulevard in the French style. To celebrate his contribution to the development not only of the boulevard but also Batumi botanical gardens, he was often referred to as the kind genius of the Batumi seaside area. In 2012 the bronze sculpture of Michael D’alfons was installed in the boulevard. Facing the eucalyptus planed by himself, Michael’s sculpture features a satisfied expression on his face.

The gardener, decorator, Iason Gordezian has played a key role in development of Batumi Boulevard. Under his management, new species of plants were introduced and planted. After his success, he went abroad to continue his education. In 1911 he graduated from the Versailles national institute of agriculture. He gained experience of working in gardens in France, Belgium, Switzerland, and Holland. He also held a position of the gardener-decorator in the royal botanical garden in London. After returning to Georgia he brought extensive knowledge and expertise back to the country that he used in implementing number of large-scale projects. In 2012 the sculpture of Iason Gordezian was set up in Batumi Boulevard.

Batumi Colonnades

Ali and Nino

For over decades as the Batumi Boulevard has been growing, new sculptures and landmarks have been added. However, the importance and the value of the colonnades have remained timeless making them one of the iconic symbols of Batumi. The local doctor Ivane Mtchedlidze is believed to bring the project from Italy in 1930 with the help of Maksim Gorki. The construction works were supervised by the chief architect of the town Pavle Nadareishvili while the works were executed by the honorable architect in Georgia Bogdan Kirakosyan. As the mosaic inscription on the colonnades says the construction processes were completed in 1934.

Created by the USA-based Georgian sculptor, Tamar Kvesitadze, a kinetic sculpture of Ali and Nino is undoubtedly one of the most popular tourist attractions in the Boulevard. 7-meter constructions of a man and a woman perform a circular motions for 8-10 minutes eventually merging into each other. The sculpture was inspired by the Azerbaijani novelist Kurban Said’s eponymous novel. The sculpture symbolizes eternal motion, love and convergence of cultures. However, each visitor can have his/her unique emotions and associations after attending this performance. AJARA Life Magazine 23

BATUMI BOULEVARD

WELCOME TO BATUMI BOULEVARD

Summer Theater

Central Dancing Fountains

In 1948-1949 a unique wooden building was constructed in Batumi without a single nail.

Thanks to joint efforts of the prominent Georgian architect Giorgi Erkomaishvili and the Armenian engineers, three colorful fountains were installed in the central entrance of Batumi Boulevard in 1977 bringing vibrancy and a new splash of life to the area. In 2007, the fountains underwent large-scale renovations as a result of which music was added to them. Nowadays these musical fountains dancing with rhythm and surrounded by lovely wax sculptures of the boys with pipes, represent the major attraction for tourists.

This was the summer theater hosting concerts, events and celebrations. In 1998 a devastating fire destroyed the building. In 2013 the exact replica of Batumi Summer Theater was constructed which continues to host events.

Cafe Fantasy Octopus

The Woman on a Bike

The café fantasy, also known as Octopus is a truly beautiful and magnificent sample of the mosaic art preserved till nowadays in Batumi Boulevard. Designed by the Georgian painter Zurab Kapanadze, the open air café fantasy was opened in 1981 and was functioning for 37 years. Currently it is undergoing major renovation works and a reopening is expected in the near future. The cafe fantasy is one of the symbols of Batumi.

The peaceful and romantic environment characteristic to the Boulevard has been formed over the years. Abundance of fountains definitely contributes to the creation of this mood. In 2012 the sculpture a woman on a bike was set up according to the Georgian architect, Irakli Zhvania’s project. The sculpture is beautifully located in a fountain making it even more peculiar

Alphabet Tower

Lighthouse

A 130-meter Alphabet Tower is located in the Boulevard right in the Miracle Park. The architecture of the Alphabet Tower was inspired by the Georgian alphabet which is performed in the shape of DNA alluding to the special importance the Georgian people adhere to the Georgian Alphabet. Two spiral lines go up to the tower carrying 33 Georgian letters 4 meters each. The Spanish architect Alberto Domingo Cabo designed the project celebrating the Georgian alphabet in a unique way. Guests of the Alphabet Tower can enjoy breathtaking views on the Black sea from the watching platform (called Panorama bar) which also serves snacks and beverages. The building also houses a rotating restaurant offering wide range of delicious Georgian and European dishes. One turn takes 60 minutes enabling you to have 360 degree views while having your meal.

The first building of the lighthouse was built in 1863, before the Batumi Boulevard was developed. In 1882 it was redesigned according to the project of the French engineers and since then already for 155 it has been guiding the ships entering the Black sea. The light coming from the lighthouse stretches far away for 14 sea miles. In addition, the lighthouse is located in a unique spot, where 41 degree parallels of the longitude and the latitude coincide with each other. The lighthouse also performs the function of a hydrographic center, where weather forecasters observe weather conditions for 24/7. Being an innovative sample of the engineering of that time, the lighthouse has become one of the symbols of Batumi.

Batumi Boulevard, with its historical meaning and continuous development cycle, became a visiting card of our city where everyone finds their place.

Dancing Fountains in the Lake Ardagani Japanese Garden Similar to Old Boulevard, New Boulevard houses number of tourist attractions. One of them is the French dancing fountains attracting visitors with its hologram shows. ou can watch this beautiful show from a specially arranged platform.

The Japanese garden is set up stretching over 1020 sq.m. nearby the university building. The garden features a miniature lake, decorative bridge and plants typical for the Eastern culture. Chr stmas Tree Long before the advent of Christianity, plants and trees that remained green all year had a special meaning for people in the winter. Just as people today decorate their homes during the festive season with pine, spruce, and fir trees, ancient peoples hung evergreen boughs over their doors and windows. In many countries it was believed that evergreens would keep away witches, ghosts, evil spirits, and illness. The tradition of ornamenting the Christmas tree and homes during Christmas arose from the Roman and Christian cultures. Early Christians believed that flowers of certain trees were bloomed irrationally on Christmas Eve as homage to Jesus’ birth. The impressive traditions of decorating the homes with angel tree toppers have emerged from the early Christian belief and Roman practices. The concept of Christmas tree was first introduced by Germany long back in 16th century. It was the time when Christians brought adorned Christian tree to their homes. Wooden Christmas tree and evergreens bedecked the new looking homes. Candles are also used to give the homes a better and different look. Eventually, people of the other places of Europe also had started to follow the traditions and cultures related to the Christmas tree. Christmas tree looked even more fashionable and attractive when the husband of Queen Victoria, Prince Albert, had bejeweled the first English tree at Windsor candle with candles, sweets, fruits and gingerbread in 1841.

28 AJARA Life Magazine

The tradition was followed by many English families later on. All kinds of extravagant items were used to decorate the tree and homes. According to Charles Dickens the Christmas trees were well covered and adorned with the fine looking dolls, miniature furniture, costume jewelry, little musical instruments, toy guns, swords, candy and fruits in 1850. The particular practice was not liked by the religious leaders initially. However, it spread all over the world later on. By the early 1900s Offering gifts and the tales of Santa Clause became the integral parts of Christmas celebrations along with the Christmas tree decorations. Even though the popularity of Christmas tree was notable in Germany but by the 1890s Christmas ornaments started to arrive in the US market as well. However, the convention for both Europe and US was quite different. Europeans liked to use small Christmas trees of 4 feet height where as Americans preferred gigantic Christmas trees, length of which varied enormously. In the early 20th century Americans were inclined towards the homemade ornaments. Homemade decorations were mainly used to bedeck the Christmas trees but the German- Americans had continued their old and impressive tradition of adorning the Christmas trees with apples, nuts and marzipan cookies. Popcorns were the new items of decorations along with berries and nuts. The Christmas lights had helped the Christmas tree to beam when it is dark with the aid of the Electricity.

Christmas trees were on display across the country. The beautifully decorated edifices mark the onset of the Christmas holidays. In the early days, horns and bells were used to scare the evil spirits. Before that angels and fairies were used as signs of bringing good luck. Angels, peacocks, numerous birds and many stars were usually used during Christmas to decorate Christmas tree in Poland. Beautifully painted wooden decorations, animals and children figures were the chief items which were used in Sweden. Tiny Danish flags, mobile of bells stars, snowflakes and small hearts were hanged to decorate the Christmas tree in Denmark. On the other hand, tiny fans and paper lamps were used during Christmas in Japan. The awe-inspiring trees were covered with straw bird cages, stars and geometric shapes in Lithuania. In the forthcoming year everyone wishes for good crops from the almighty through straw. Ornaments of painted egg shells were portrayed on Czechoslovakian trees. To bring good luck in the daily life spider and web were used on the Christmas tree in Ukraine. According to a folktale an unfortunate and poor woman woke up in the early Christmas morning to find the branches wrapped with spider webs for decorating Christmas tree. She found out that the spider webs turned to silver by the bright sunlight of rising sun. The patterns of decorations have changed over the years. Today evergreens are used in large numbers to adorn the Christmas trees. Hand crafted and edible items were predominately used previously. Nuts, candles, fruits and colored papers were the commonly used items for decorations. Ornaments brought from stores are used more often than not. Chain of electric lights is used to decorate the branches of the trees now. The essence of the festival is in the congregation of the family members at one particular place. Exchanging gifts and love still are the central ideas of the majestic Christmas carnival. AJARA Life Magazine 29

Santa Claus TODAY, THIS MYTHICAL CHARACTER IS STILL ALIVE AND WELL AND IS KNOWN ALL OVER THE WORLD AS: NICHOLAS OF MYRA, SANTA CLAUS OR “SANTA” IN AMERICA. The American version of St. Nicholas, or Santa Claus originally came from the Dutch version called Sint Nikolaas or Sinterklaas. There are some legends about this Patron Saint of Giving known as St. Nicholas. As said by these legends, St. Nicholas was born in the city of Patara, and traveled to Palestine and Egypt when he was young. He was later imprisoned during persecutions of the Emperor Diocletian, but was fortunately released by the more humanitarian Emperor Constantine. It is said that he died on December 6, A.D. 342. December 6th is celebrated as his feast day, and in many countries this is the day he arrives with his presents and punishments. Today, this mythical character is still alive and well and is known all over the world as: Nicholas of Myra, Santa Claus or “Santa” in America. His popularity spread fast during the Middle Ages and thousands of churches are dedicated to him. His gift-giving role in Christmas rites probably follows from his fame as the friend of children. He was renowned for his extreme kindness and generosity – often going out at night and taking presents to the needy. The story also tells that he used to give anonymous donations of gold coins to persons in need. His cult spread in Europe and Christmas presents were distributed on December 6th when the celebration of St. Nicholas took place.

30 AJARA Life Magazine

In many countries this day is still the day of Christmas gift-giving, although there is a mounting pressure everywhere to conform to the custom of 24th/25th December. The relics of St.Nicholas are in the basilica of St. Nicola, in Bari, Italy (they were stolen from Myra in 1087 AD). For this reason he is sometimes known as St. Nicholas of Bari. > In the European countries, St. Nicholas is usually pictured as a bearded saint, wearing ecclesiastical robes and riding a white horse. He carries a basket of gifts for the good children and a batch of rods for the naughty ones. > In the United States and Canada, his name is Santa Claus. > In China, he is called Shengdan Laoren. > In England, his name is Father Christmas, where he has a longer coat and a longer beard. > In France, he’s known as Pere Noel. > In Germany, children get presents from Christindl, the Christ Child. > In Morocco he is known as Black Peter. Pã Norsk (in Norwegian) “Julenissen” arrives on the evening of the 24th. > In the Netherlands, he is called Kerstman. > In Finland, he is called Joulupukki. > In Russia, he is called Grandfather Frost that is “ded moroz”.

> In Spain children leave their shoes under the Christmas tree the night of January 5th and presents from the Three Kings (Los Reyes Magos: Melchor, Gaspar and Baltasar) appear the next morning. Santa Claus is called Papa Noel and some children receive presents both days on December 24th (from Papa Noel) and on January 6th (from the Three Kings). > In Sweden Jultomten visits the evening before Christmas day, pulling a big bag of julklappar (Christmas presents) in the deep snow. > Sinter Klaas in Dutch. He is much thinner than the American Santa Claus. He rides a white horse and gets help from numerous Zwarte Pieten (Black Petes) handing out gifts and candy. He arrives the first Saturday in November by Boat. On the 5th of December Dutch households have a “Pakjesavond” (Presents night) and exchange presents. happy new year !

BATUMI ARCHEOLOGICAL MUSEUM ACCIDENTLY EXTRACTED UNDERWATER ARCHEOLOGICAL ARTIFACTS In 2012 a fisherman from Rize, Zeki Achildiz, was fishing near Cholok-Natani when his fishnet extracted some unusual items. The accidentally extracted items turned out to be archeological artifacts of unknown warship or merchant ship , items of which he handed to Batumi Archeological museum. The ship sank 10 km off the coast at a depth of 119m above sea level. The artifacts date back to the final stage of Hellenism. These are unique Colchian amphoras, clay pottery used on ships. Along

34 AJARA Life Magazine

with the wares, the artifacts collected by fisherman represent separate details of warship or possible merchant ship. Among the artifacts are warship Trier’s main and auxiliary rafters, masts, rumples, stringers, hull planks, iron shovels and even a stone ballast. Today all these artifacts are on display at Archeological Museum (Amiran Kakhidze, Merab Khalvashi., Underwater Archeological Monuments of the Eastern Black Sea,Batumi 2021). It is known that ship building and navigation reached its development in the classical era (V-IV centuries BC). The same chronological framework includes the findings of underwater archeology of the Eastern Black Sea, including Georgia, which are mainly presented in the form of transit ceramic container amphora from the Aegean world (Amiran Kakhidze, Nugzar Mgeladze, Remains of a Late Neolithic Shipwreck - Adjara Past and Present, Batumi, 2013, pp. 127-163., Amiran Kakhidze., Merab Khalvashi., Eastern Black Sea Basin , 2021).

Amphoras occupy one of the leading places far beyond the accidental findings of underwater archeology. Ancient Greek imports are represented by this kind of goods. Ceramic containers, as a means of transporting liquid or dry products, were widely used in sea and river transport. The same can be said for other areas. All this was due to the adaptation of their specific form to specific conditions. Many types of liquid or dry products were transported by amphora. Wine, olive oil, olives, salted fish, grapes, plums, peaches, figs, dates, nuts, chalk, resin, lime, oil, etc. are used in various production centers. In addition, in everyday life they were used as kitchen utensils, flowers, piggy banks, and building materials. To manage sewage, drainage and water supply, to determine the capacity of ships or other large vessels. All this led to the existence of about 50-60 production centers for the production of ceramic containers in the ancient world.

The ship sank 10 km off the coast at a depth of 119m above sea level. The artifacts date back to the final stage of Hellenism. These are unique Colchian amphoras, clay pottery used on ships.

Among the ancient artifacts found on the seabed in the eastern Black Sea coast are products created in the Aegean world. Among them, the amphora of the island of Chios and Tazos, famous for their high quality wine trade, are noteworthy. It dates back to the VI - V century. It is from this time that the import of the island of Chios to the Pontic Islands increases sharply (Amiran Kakhidze, Merab Khalvashi, Underwater Archaeological Monuments of the Eastern Black Sea, Batumi, 2021 pp. 16-18, Catalog 1-5). The underwater treasures are on permanent display at Batumi Archeological Museum (address: 77 Chavchavadze st. Batumi, From 10.00-18.00) www.ajaramuseums.ge AJARA Life Magazine 35

A small region of Ajara is a thriving economy of the entire country of Georgia. With more than dozen international companies operating in various fields of economy it’s no surprise that its city Batumi became headquarters of Georgian International Investors Association -a non-profit (non-commercial) legal entity, which gathered the biggest investors in Georgia.

Mr. Osman, thank you for having us. Your story is very unique, since you combine two countries and an incredible project that unites these two countries, isn’t it so? Indeed, Georgia and Turkey. Since I was born in 1972, as of Georgian origin, a Georgian compatriot (Chveneburi) in city of Ordu, Republic of Turkey. Later I worked at the Consulate of Georgia in the city of Trabzon but my desire was to promote Georgia, so the next step was to return to Georgia where I started to work in the Department of Tourism and Culture of Adjara AR.

the Georgian International Investors Association. The association currently has 15 member companies operating in various fields, such as: textile industry, construction and building materials, banking, insurance, hotels and more.

“Ajara Life” journalist met with the Chairman of the Georgian International Investors Association, the founder and head of the “Leading, Global Consulting” Agency in Georgia, GeoNet Expo founder and Director Mr. Osman Chalishkan Mzhavanadze.

Tell us about the association and its work? The association was established in 2009 and in 2011, I became the Secretary General of the Georgian International Investors Association. In 2018, I was elected Chairman of

That’s an incredible amount of investment! And how many people have been employed so far by member companies? Around 16,600 people have been employed by member companies of the association.

36 AJARA Life Magazine

What is the total investment by member companies to the country of Georgia? To this date, $ 850 million has been invested by the member companies of the Association. The cost of future investment projects of the member companies of the Association would reach approximately $ 600 million.

What is the goal of the association? The main goal of the International Investors Association is to improve the business environment in Georgia, to better represent Georgia as an attractive investment country at the international arena, to lobby member companies in local and central government, to study and analyze problematic issues of member companies and submit them to relevant bodies. We also do PR of member companies in Georgia and abroad. The International Investors Association is a mediator between government and business. Association, together with member companies, implements various social assistance programs. -Mr. Osman tell us please more about your Geonet Expo company? -I’m the owner and director of such a large international exhibition company as “GEONET EXPO”. “EXPO BATUMI” is one of the first exhibition companies in Georgia, which by organizing exhibitions in Batumi helps to develop business activities in the region and attract more investment. It’s a big networking exhibition which helps local Georgian companies to partner or collaborate with foreign companies. Exhibition company Geonet expo per year holds 4 international exhibitions in Batumi in such fields as Tourism - “Expo Batumi travel” ;Construction - “Batumi Build”; in Agriculture field- “Agro Batumi” and in medical sphere “Expo Med”. Due to the pandemic and the difficult situation that has been created worldwide, with my company support, for the first time in Georgia , this year, we were able to to hold

the first virtual exhibition called “BATUMI BUILD VIRTUAL 2021” ,which helped the participating companies to establish communication with international companies. -Mr. Osman you are also actively involved in various activities for Georgians living in Turkey, what are these activities ? -I’m involved in activities to preserve the Georgian language and traditions among Georgian descendents living in Turkey .I often have contacts with Turkish associations and together we plan various activities that help to preserve the Georgian language and indigenous traditions for our “native” Georgians living in different parts of Turkey. Soon, I plan to establish a regional diaspora center in the city of Trabzon, Turkey, where it will also possible to study the Georgian language and taste traditional Georgian dishes. This will help preserve Georgian traditions and introduce our culture to the general public. “Whatever we do, it is important to do it with quality. Let’s get the job done right and understand the importance of what we do. We must each strive to be productive for the community and together we must contribute to the development of our region and country, together we must care for the development of our community and together we must all share the plight of the people around us. The Association and I personally always take care of people who need our help and we do it with joy because we believe that the most important thing is to make people happy and take care of them “ Osman Chalishkan Mzhavanadze. BORJOMI

MINERAL WATER

TRADEMARK HISTORY Borjomi mineral springs were discovered by people over one thousand years ago. This is evident in the existence of seven stone baths which date back to the beginning of the 1st millennium A.D. The baths suggest that in medieval times the water was more likely used for bathing rather than drinking. From the 16th century onwards the area fell into constant warfare; the springs were abandoned and their location forgotten. The Borjomi springs were to be rediscovered in 1829 by the army’s Kherson Grenadier Regiment. Soldiers who were camped out in the forests found a mineral water spring on the bank of the Borjomka River. Their leader, Colonel Popov, ordered that the spring be cleared and that swift delivery of bottled water to the camp be organised. Colonel Popov, who suffered from stomach illnesses, was impressed when he discovered the curative effects of the water and he subsequently ordered his soldiers to fence the spring with stones and build him a bath and house nearby. Less than ten years later, the Georgian Grenadier Regiment took over the area. The army’s Dr. Amirov undertook a study of the composition and properties

38 AJARA Life Magazine

of the Borjomi spring water and sent the first samples to St. Petersburg and Moscow. It didn’t take long for word of Borjomi’s mineral water to spread, and by 1841 the water had become so famous that the Viceroy of the Caucasus decided to bring his sick daughter to the area for treatment. Her illness is not recorded, but it is written that the water cured her. The springs were christened by the Viceroy, who named the first ‘Yekaterininski’ (known in English as ‘Catherine’s spring’) after his daughter, and the second ‘Yevgenievski’ after himself. The Borjomi Mineral Water Park was later founded in 1850 and construction of the first bottling plant began in 1854. As the springs became increasingly famous throughout the Russian Empire, Borjomi grew as a popular tourist resort; new palaces were built for royal visitors, and new parks, squares and hotels for the public. However, visitors found that travelling to Borjomi was no easy journey, as the horse-drawn phaetons of the time took at least eight hours to arrive from Georgia’s capital, Tbilisi. As a result, a railway connecting Borjomi to the nearest large town, Khashuri, was built in 1894, greatly improving communications and increasing the flow of tourism.

In 1890 the first “Borjomi” bottling plant opened at the Mineral Water Park. Every day the trademark dark-green glass bottles were filled by hand, sealed with wax, wrapped in hay and packed into wooden crates to be sent to all corners of the Empire. The first glass factory was opened in 1896, where manual glass blowing techniques were used to produce “Borjomi” bottles until 1950. In 1904 the “Borjomi” water production was modernised and became partially mechanised. Whilst glass-blowing remained a manual process, machines were employed for bottling. This allowed for large-scale production; in the same year a newspaper advertised that “Borjomi” water was now sold by the wagonload. The water bottling industry flourished: in 1854 “Borjomi” was exporting only 1,350 bottles. By 1905, after establishment of full-scale production, this had grown to 320,000. By 1913 total exports had reached the 9 million mark. Sovietisation of Georgia did not affect the popularity of “Borjomi”. Only the profile of the elites who arrived to enjoy the town’s climates changed as Stalin and his retinue replaced the Romanovs. After 1917 “Borjomi” water was made present at all events run by the Kremlin. The Khrushchev thaw of the 1960s gave “Borjomi” another chance to gain recognition abroad. In 1961, 423,000 bottles of “Borjomi” were exported to 15 countries, including the USA, France and Austria. In the 1980s “Borjomi” sales sky-rocketed to 400 million bottles as it reached its status as the most popular drinking water in the Soviet Union. With the collapse of the USSR in 1990 and the ensuing economic difficulties in Georgia, “Borjomi” bottle production declined significantly. In 1995 it bounced back with the re-launch of the Georgian Glass and Mineral Water Co. N.V.’s two bottling plants and production increased forty fold. Today, Georgian nature’s unique liquid gift is famous in at least thirty countries worldwide. (Source: borjomi.com) AJARA Life Magazine 39

WEDDING IN GEORGIA

WEDDING TRADITIONS The real Georgian wedding is a bright bustling colourful event during which many of old traditions are respected. Traditionally, a huge number of guests is invited to the Georgian wedding – their number may exceed several hundred. Of course, not all modern couples follow all the old national traditions of their ancestors. But most of the young still prefer traditional weddings. Before the ceremony, the couple must go through three stages: the courtship, engagement and wedding ceremony. Earlier in the old days, parents were involved in the choice of the bride or groom. Now the young choose their life partners, following their hearts. The only important point is that marriage must be approved by the parents of both sides. On the day of the wedding, the beautiful ceremony of entering to the grooms’ house is held. First, the groom goes up to the roof of the house and releases a white bird. Then he goes down to the bride, and they are treated to the glass of wine. The groom makes a sip and then puts the engagement ring to the glass of wine and passes it to the bride. In the end, the groom gets the ring, hands it to the bride and says beautiful words of love and fidelity. Almost all couples get married at church and register their marriage the same day. The feast is often held in a restaurant because the house can not fit such a huge number of guests.

Furthermore, the marriage registered in Georgia is valid throughout the world. During the celebration, the tables burst from a variety of dishes and drinks. Tamada says beautiful toasts – the first in honour of the bride and groom. The guests present expensive presents or money for the newlyweds. In general, the Georgian wedding is a colourful funfilled memorable spectacle. If you manage to take part in it, you will definitely have a good time. Successful Franchise creator

Natalia Georgieva Natalia Georgieva- Founder of the international franchise of swimming schools “Krol” and the center for additional development for children “Batumi school club”, came to Georgia a little over two years ago from St. Petersburg and immediately fell in love with Batumi. “ There was no doubt - I realized that I want to stay in this country!” - says Natalia. -What is your business in Georgia? I brought here my main franchise brand - a swimming school for children. Today the “ Krol project” has 110 branches. Georgia has become the fifth country on our map. A year after the move, the “Batumi school club” was opened. In this center, children of expats from 12 countries of the world at the age from 1.5 to 13 years are engaged. I am proud that our project is so in demand in Batumi.

-Why this particular area? Sport and friendship should not know borders and nationalities. Perhaps this can be called one of the missions of my projects. Children all over the world deserve care and attention. And it’s great when business can help with this. Moreover, the business model of both a swimming school and a development center works perfectly in any city. -What was the most valuable lesson you have got in entrepreneurship in Georgia? Georgia pleasantly impressed me with the simplicity of starting a business and the absence of bureaucratic problems. This makes it very attractive to entrepreneurs from all types of business spheres to start their own businesses here. The fact that there is a saying of “ If something super hard to implement in Russia -is easily solved in Georgia!”

personnel issue is the pain of a leader anywhere in the world. Therefore, an effective team always has to be assembled bit by bit. It happened in Georgia as well. 80% of my team in Batumi are citizens of Georgia. And I am very happy with my employees. We are a big family, without exaggeration.

For example, I,as a foreigner without a residence permit, was provided with a large loan to purchase real estate in the shortest possible time. Subsequently, the bank repeatedly went on compromise due to the pandemic crisis, knowing about the difficulties that everyone was experiencing. It ‘s so nice when such institutions understand simple clients situations. There is a feeling that you are not alone. -What should you look for in order to be successful? I think in any business it is important to try to do it well. Respond to the needs of the client and be able to adapt to the situation. This is important in any country. In general, I strongly disagree with those who argue that it is impossible to find good employees in Georgia. So say those who do not have much experience in different countries. I have it, and I know that the

-What event triggered the start of your business? Leaving Russia, first of all, I wanted to protect my children from the school system. I wanted them to be educated in a friendly multicultural environment. In Batumi, I realized that I was not alone, there are a lot of such families, and they are all in search of an educational space. I am a person of action, so the idea of opening “Batumi school club” did not take long. -What was the most difficult period for you? The most difficult period was undoubtedly the lockdown. But I am glad that this stage has passed. -What is your most basic principle of work? For me, every day and every client is a lesson and invaluable experience. Our team are in constant interaction with the parents of our students, we try to respond to all requests, while observing the basic principle of our work - unconditional respect and acceptance of each child. What should you pay attention to when starting a business in Georgia? - I think it is very important to choose the right niche. THE HOUSE “SAKHLI”

What is “ Sakhli ” and how is it related to expats in Batumi ?!

“Sakhli” means “House” in Georgian. Precisely with a capital letter. A home for everyone who is looking for communication, new acquaintances, impressions and knowledge. Probably, all “expats” are faced with the problem of socialization in a new country. With an unfamiliar language, different traditions and mentality. I, too, was no exception. After the euphoria from the sea outside the window and the picturesque streets of Old Batumi passed away, I wanted to communicate. Civilized communication with people who speak the same language as me. And I found such a place here. A House for expats and others appeared in Batumi, and it was created by a Georgian woman named Gvantsa Kazaishvili. I absolutely sincerely admire how much this girl can do in 24 hours! It was she who found a house in Batumi with a hundredyear history, arranged a lease, made repairs (and in such a house it is not an easy task to do, to say the least). It was she who organized business breakfasts, allowing

56 AJARA Life Magazine

you to find business partners and just new acquaintances and friends. On November 1 of this year, “Sahli” was opened to everyone. And of course, I attended the opening, how could it be otherwise?) Firstly, it was very interesting to look at a real Georgian house with such an interesting history, secondly, to meet the guys whom I have already met at business breakfasts, and thirdly, to finally feel that atmosphere of Georgian hospitality, so much talked about. It really turned out to be a very emotional opening. When Gvantsa was giving a welcome speech, I almost shed a tear, to be honest. It was so sincere and from the heart, so supported by her husband and brother, that I involuntarily thought “what a friendly family they have and how they love each other. ” And the atmosphere is so homely, perhaps, relaxed. It’s as if they were waiting for you here, as a close relative ... “ We would like to express our huge thanks to everyone who helped us in the implementation of the Sakhli project.

WHY INVEST IN GEORGIA?

INVEST IN ENERGY Over the last decade electricity consumption has grown largely in line with real GDP growth rate and reached 10.2 TWh in 2014. This trend is expected to continue. Electricity generation also grew significantly between 2004 and 2010 as a result of renewal and rehabilitation of existing HPPs. As consumption continues to rise not only in Georgia, but in neighboring countries as well, there is great opportunity to develop new power plants to keep up with this ever increasing demand. According to estimates, Georgia has potential to generate up to 33 TWh electricity from renewable sources. Mostly from hydro resources (24 TWh), but also from wind, solar, Geothermal and biomass sources as well. In 2014, Georgia’s electricity generation reached 10.4 TWh, of which hydropower accounted for 80% (8.3 TWh). Because of 60 AJARA Life Magazine

seasonality of electricity generation, Georgia imported 0.8 TWh during winter months, but still managed to export 0.6 TWh to neighbors. Currently, 15 hydropower plants are under construction, eight of them, with total annual

generation potential of around 1.5 TWh, are expected to be completed in 2015-2017. By the end of 2015, a 230 MW gas-fired combined cycle Thermal Power Plant will also be commissioned and works on first Wind Power

Plant in Georgia are already underway. Georgian Energy sector is developing rapidly and with all the competitive advantages that Georgia offers, it’s not too hard to see why. Source: investingeorgia.org AJARA Life Magazine 61

WHY INVEST IN ENERGY? INVEST IN GEORGIA

Growing domestic demand From 2007 to 2011, Georgia was net electricity exporter, but since 2012, the country has become a net importer of electricity. In 2014, Georgia imported 0.8 TWh and exported 0.6 TWh of electricity. With the completion of the HPPs currently under construction exports are expected to grow in the summer period, however without additional Power Plants Georgia’s generation capacity will not be sufficient to meet domestic demand in the long term, as per capita electricity consumption continues to grow. Estimated deficit by 2025 is more than 5 TWh. Guaranteed PPAs Government of Georgia can offer 10 year Power Purchasing agreement (PPA) for up to 100% of total generation, definitely in winter months. Investor has an option to export remaining generated electricity, and considering Georgia is surrounded by countries that have higher generation cost of electricity, export is clearly an attractive opportunity. Liberalized and deregulated market Starting from 2008 Georgia has liberalized and deregulated energy market. Renewable 62 AJARA Life Magazine

projects are based on Build-Own-Operate (BOO) principle. There are no tariffs set for newly built HPPs, investor is free to choose market and negotiate price. No fee is required for the connection to transmission grid. No license is required for export and new HPPs have priority access to the capacity on the new interconnection to Turkey. Generation and export activities are exempted from VAT tax. Perfect Export opportunity Georgia is surrounded by countries that either have higher electricity generation cost or electricity deficit. With abundance of high mountains and fast-flowing rivers, Georgia has competitive advantage over neighbors in terms of generation cost. Most attractive export market is Turkey.

Turkey is ranked first in Europe and second in the world after China in terms of electricity demand increase. Turkey experiences electricity shortage during summer months, while Georgia has generation surplus. Over the last decade, Turkey’s electricity consumption has increased by 6% annually on average, reaching 250.38 TWh in 2014, with deficit of 5.1 TWh. The Turkish Electricity Transmission Company (TEIAS) forecasts that Turkish electricity consumption will grow by 5.5% on average annually, reaching 415.7 TWh in 2023. As a result, Turkey will need to nearly double its current generation to meet the demand. Out of the 250.38 TWh electricity generated in Turkey in 2014, 48.1% was generated by gas-fired plants, 29.2% by plants burning coal, 16.1% by hydro plants, 3.3% by wind plants, 2.3% from plants burning liquid hydrocarbons and 1% by other renewable energy plants.

Even with lower oil and gas prices, it’s expected that electricity prices in Turkey will remain high. 2014, prices fluctuated in the range of 10.2-16.8 USD cents per KWh (Source: TEDAS). In 2013, a new 400 KV line with HVDC back-to-back substation connecting Georgia with Turkey was commissioned, bringing transmission capacity to 860 MW. Plan for construction of another transmission line to Turkey, with capacity of 350 MW, is already in place. Georgia already has well developed transmission network with all neighbors, but by the end of 2022 Georgia’s transmission capacity will rich 5,000 MW. ENERGY INVESTMENT OPPORTUNITIES INVEST IN GEORGIA

Hydro Power Plants Georgia has more than 20,000 rivers and almost 300 of them provide excellent opportunity for hydropower generation. Georgia is one of the top countries in terms of water resources per capita and it’s logical that today 80% of total electricity is generated from Hydro Power Plants (8.3 TWh). Despite this, there still is vast untapped potential, as only 25% of economically feasible Hydro potential is exploited today. Georgia could produce additional 24 TWh annually with hydro resources alone. There are approximately 90 potential HPP projects (less than 100 MW) on the Pre-feasibility Study Level with Financial and Technical projection, the list is public and can be downloaded here or can be seen on the website 64 AJARA Life Magazine

of Ministry of Energy. All hydro power plants with installed capacity of 13 MW or less are totally deregulated, licenses for generation and export are not required, investor is free to choose the market and negotiate the price. They can sell generated electricity to direct consumers. Currently there are 6 big HPP projects with the Provisional studies already in place (up to 670 MW). Because of the high importance of these projects Government of Georgia has flexibility in negotiations with investors. These ready projects are just a drop in the ocean of Georgia’s Hydro Potential. Any investor is welcome to identify new opportunities by themselves.

Thermal Power Plants TPPs are source of guaranteed electricity supply. Usually, TPPs are in standby mode, ready to supply the system when needed, typically in winter period. Last year TPPs accounted for 19.6% of total generation, meaning they are vital to Georgia’s electrical stability. Because of this, even when in standby mode TPPs receive payment to cover maintenance and fixed costs. Tariffs are set by regulator. 2 new TPP projects are under way. First, 230

MW combined cycle TPP, which will be first of its kind in Georgia, is being developed by Georgian Partnership Fund and will be built by Turkish Company Çalik Enerji. Second project is being developed by Georgian Energy Development Fund. Installed capacity of power plant will be 250 MW and will be commissioned by 2019, with another 250 MW is being considered for the future. Both of these projects are open for investment. Source: investingeorgia.org AJARA Life Magazine 65

ENERGY INVESTMENT OPPORTUNITIES INVEST IN GEORGIA

Wind Power Georgia has estimated achievable potential wind power of up to 4 TWh. Georgian Energy Development Fund is working on Wind Power projects, they have already started Kartli wind farm project, which will have 20 MW of installed capacity and expected generation will be of between 80 and 85 GWh/yr. Another wind farm project is being developed in western part of Georgia, in Zestaponi, with projected installed capacity of 150 MW and generation of 480 GWh/yr. SOLAR Due to the geographical location of Georgia, the emanation of the Sun is rather high. In most regions of the country there are 250-280 sunny days in a year, which is approximately 6,000-6,780 hours per year. The annual radiation of the Sun varies depending on regions from 1,250-1,800 KWh/m2, while the average sun radiation equals 4.2 KWh/m2. The total annual solar energy potential in Georgia is estimated to be 108 MW, which is equivalent to 34,000 tons of standard fuel. 66 AJARA Life Magazine

GEOTHERMAL According to modern hydro-geological studies, the Georgian geothermal water reserves reach 250 mln m3 per year. At present there are more than 250 natural and artificial water channels where the average temperature of geothermal waters ranges from 30 to 110 C, while the total debit is 160,000 m3 per day and night. These water channels are grouped into 44 deposits. Within the territory of 3,500 km there are bore-hole wells with the water temperature of 85 C and more. Up to 80% of the geothermal deposits are in Western Georgia. In the Zugdidi-Tsaishi geothermal area, there are now 9 productive, 7 reinjection and 3 observation borehole wells which are considered to be exploitable. BIOMASS Thanks to an advantageous geographical location and a climate favorable to forest and agricultural development, Georgia is endowed with major potential for biomass power plants, especially for producing heat and hot water. Biomass could be of the most important sources of power supply in rural areas, given that forests cover 40% of the country’s total territory.

Steamed, roasted, or boiled vegetables or leaves stuffed with minced meat, herbs and rice. Though we don’t especially associate dolmas with Georgia, our friend Rusiko’s rendition — featuring stuffed fresh grape leaves from her garden — was something special and tasty.

Nigvzinai badrijani The favorite and most frequently ordered Georgian vegan dish among tourists is Nigvziani badrijani(Eggplant stuffed with walnut), so leaving Georgia without sampling it will be a real crime. Many dishes are made with this vegetable; however eggplant with walnuts is considered the king of Georgian cold dishes.

Lobiani (Bean-stuffed bread) Lobiani is similar to khachapuri-, except that it is stuffed with bean paste rather than cheese. Lobiani is typically quite moist and is just slightly healthier than its original cheese cousin, khachapuri.

Jonjoli To taste jonjoli, you will have to visit a market or a homestay - this appetizer is only rarely served in restaurants. This dish consists of pickled sprouts from a bush called “Caucasian bladdernut” - locals often collect them and pickle them with salt and onion. Jonjoli has interesting bitterish, but quite pleasant taste.

Here, Chef Elene shares her recipe for Chakapuli.

CHAKAPULI ჩაქაფული

Chakapuli (Georgian: ჩაქაფული) is a popular Georgian stew made with lamb or beef, dry white wine, tarragon leaves, unripe (sour) green plums, green onions, green peppers, green coriander, garlic and salt. It is popular in the Spring when the plums are unripe.

72 AJARA Life Magazine

Chakapuli is a very popular lamb stew which we traditionally prepare for Easter. It requires tkemali (sour plums), which gives the dish its tangy flavor.

So, prepare your apron and kitchen tools and here we go: Green plum with Meat stew and greens. Georgian dish “chakapuli” Ingredients 700 grams of diced lamb or beef. 150 grams of wild sour green plums. 200 grams of tarragon. 200 grams of green onions. 150 grams fresh green coriander. 2 green peppers, 200 ml of white wine, 30 grams of garlic, 1 liter of water, salt (according to taste). Do not add black or red pepper as this will affect the overall taste. 200 grams of green onions, 150 grams fresh green coriander, 2 green peppers, 200 ml of white wine, 30 grams of garlic, 1 liter of water, salt (according to taste). Do not add black or red pepper as this will affect the overall taste.

Instructions Add the diced lamb or beef to a deep pan. Pour in 200 ml of white wine and cook on a low heat until the wine reduces (usually 15-20 minutes). Stir occasionally with a wooden spoon. Whilst the meat is cooking, pinch off the tops of the tarragon and strip leaves from their stalks. Chop the tarragon leaves (not too finely). Finely chop the onions, coriander and green peppers. Crush the garlic. Add the chopped ingredients, garlic and plums to the pan containing the meat once the wine has reduced. Add 1 liter of water, cover the pan and cook on a low heat for about one hour. Stir occasionally and add salt (according to taste) near the end of cooking.
