BATUMI BOTANICAL GARDEN Michael D’alfons was the first to introduce new plant species in Adjara which he started in 1881 in order to embellish his garden nearby Chakvi. Later, in 1892, a geographer, botanist and traveller Pavel Tatarinov created a so-called acclimatisation garden on Batumi shoreline which is known as the Upper Garden of Batumi Botanical nowadays. In 1912, the professor Andrej Krasnov from Kharkov University founded the Botanical garden itself. It is located only 9 km away from Batumi city, between Chakvistavi river and Green Cape. The garden occupies about 1 km of the coastline and grows 0-220 m above sea level. Once this territory was covered by Colchian forests,

BATUMI BOULEVARD Batumi Boulevard is one of the main attractions for the town’s visitors. The wide boulevard follows the seaside and is full of beach bars, café-lounges, restaurants, amusement rides for children and various colorful and dancing fountains. In addition to unique vegetation, you will find in Batumi Boulevard many interesting sculptures and architectural monuments. Batumi Boulevard has a history of over a century. Its construction began in 1881. Its creation was the idea of Batumi district governor Mekalov, who commissioned the coastal boulevard to be built to a famous Prussian gardener named Reseller. Later, the planned development of the boulevard was

handed over to a French gardener and designer invited to Georgia, Mikheil d’Alphonse, who is referred to in historical records as the “Kind Genie of Batumi Seaside”. The development of the boulevard also owes much to Gordeziani, who studied in France and was appointed the manager of the City Park Boulevard in 1917. The first colorful dancing fountains of the Boulevard have been functioning since 1977. In 2009, the length of the Boulevard was significantly increased and now reaches 7 kilometers. The so-called New Boulevard was designed by a Spanish architect and built in accordance with the latest standards.

AJARIAN CUISINE Georgian cuisine is known for its colorful diversity, use of different techniques and traditional table layouts. There is no similar term or concept in the world for a Georgian Supra, a feast of epic proportions and diverse dishes led by a toastmaster or Tamada. Tamada, besides leading toasts to a variety of subjects, should also guide the evening and entertain the guests with song, poetry, and storytelling. Toasting tradition is prevalent throughout the Caucasian countries; however, the Tamada is a uniquely Georgian phenomenon. Traditional Georgian dishes such as Satsivi, Mtsvadi, Khachapuri, Mchadi, Khinkali, Chkmeruli, Pkhali with walnut, bean, etc. dominate in Ajarian cuisine as well. Apart from traditional Georgian dishes Ajara is also famous for its local cuisine. Resulting from the specific lifestyle in the highlands of Adjara, milk products represent the main component

TBILISI OPEN AIR FESTIVAL TO RETURN AFTER 2-YEAR PANDEMIC BREAK Popular Ukrainian rock band Okean Elzy is billed to perform at the Tbilisi festival in June. The popular Tbilisi Open Air music festival will return this summer for the first time since the Covid-19 pandemic hit Georgia, with organisers set to host Ukrainian rock band Okean Elzy and support the country with donations in the wake of the war. Set to run at the Lisi Wonderland area in the capital city’s recreational hilltop spot, the festival will also feature Cigarettes After Sex, Bedford Falls, Alt-J and Rhye in the roster of performers in the first edition in three years in the capital city. A particular mention in the announcement went to the Ukrainian band, which has seen its member Svyatoslav Vakarchuk involved in humanitarian support for those affected by the war in the country. Tbilisi Open Air team said Bez boyu, a 2005 song of the band, had “become a true anthem of the Ukrainian resolve and bravery” in the face of the Russian invasion that started on February 25. Organisers said the event would run across four stages in the Lisi area, with the main stage hosting both local and foreign headlining artists and bands, the electronic music and visual arts stage involving performers working in the genres, and the remaining two stages lent to

psytrance musicians and vocal performers. The festival will also seek to support Ukraine in the wake of the Russian invasion of the country that started last month, with a portion of “early bird” ticket sale funds donated to a fund for helping those affected by the war. Those planning to go to the event will also be able to make additional donations to the country when purchasing tickets. In their announcement of the festival’s 2022 edition, the event team offered solidarity to Ukraine by condemning the Russian attack on the country and saying the values of “freedom, diversity, human rights, equality” were “under a major threat” by the military action. Tbilisi Open Air editions had to be postponed and eventually cancelled both in 2020 and 2021 as organisers struggled to ensure safety amid the Covid-19 pandemic. The event hosted around 45,000 music enthusiasts with a line-up of locally and internationally sought-after artists in the years before the pandemic. This year’s festival is set to run between June 24-26. (Source: Agenda.ge)

ILIA CHAVCHAVADZE MUSEUM IN BATUMI
”
At Ilia Chavchavadze Museum located at 5th Alexander Griboedov Street in Batumi, you will find a pleasant environment and interesting expositions, where you will receive information about Ilia Chavchavadze’s work and its merits. You will get acquainted with the personal belongings, photos and paintings of Ilia Chavchavadze and his fellow public figures.
Ilia Chavchavadze was a Georgian public figure, publicist, journalist, politician, writer, who played an important role in the formation of civil society in Georgia in the nineteenth century. He made a decisive contribution to the creation of the Georgian National Liberation Movement and the spread of liberal values. Because of these merits, in 1987 the Georgian Orthodox Church declared Ilia Chavchavadze a saint and called him “Ilia the Righteous”. Zurab Tsuladze’s painting on this topic is preserved in the museum. The Chavchavadze family has been mentioned in Georgian historical sources since the 15th century. Ilia’s ancestors in the XV-XVIII centuries are all prominent

historical figures. The exposition presents a photo-copy of the Chavchavadze genealogical branch. The author of the original is the famous Georgian artist Lado Gudiashvili. The photos of Ilia’s parents, father - Grigol Chavchavadze and mother Mariam (Magdalina) Beburishvili occupy a prominent place in the museum exhibition. The exposition presents a model of Ilia Chavchavadze’s Kvareli house, where he was born and raised. (Author: Sculptor - Zurab Tsereteli.) Here you will see exhibits related to graceful traditional clothes of Georgian women of that time. They knew how to sew, embroider and often made their own clothes. In 1848-52, Ilia first studied at the “Khake” boarding school, then at the Tbilisi Gymnasium. In 1857 he traveled to St. Petersburg for higher education. The museum also features photos of his student years. On April 10, 1863, Ilia Chavchavadze married Olga Guramishvili, the daughter of the richest landowner of Kartli, Tadeoz Guramishvili, and inherited the Saguramo estate in Mzitevi.
The museum preserves a painting by artist Z. Gogolashvili, which depicts Wardrop and Ilia. The artist is inspired by the scene of Ilia’s dinner in Saguramo on July 20, 1896, where the famous British scholar and translator Marjorie Wardrop is a guest with Ilia. Theatrical performances were staged according to Ilia’s works; Among them are “Gandegili”, “Man-Man ?!”, “Glakhis Naambobi”, “Otaran Widow” and others ... The exposition preserves the statue of “Man-Man” characters “Luarsab and Darejan” (author D. Bolkvadze). Also photocopies from the play. “Man-man ?!” This is a work that does not lose its relevance today, and its character Luarsab has a prototype at all times, the existence of which is a problem and sets a bad example.
Ilia Chavchavadze has done a lot of important work for Adjara and Batumi. Under the leadership of Ilia Chavchavadze, the Society for the Promotion of Literacy among Georgians founded the first Georgian Public School for the Promotion of Literacy in Batumi on
March 23, 1881, where Christian and Georgian Muslim children sat at desks together, which was a sign of great tolerance and love. The exposition presents artist Martinov’s painting “Ilia in Batumi”. Ilia prepared Batumi for successful self-government elections. With the care of Ilia Chavchavadze and the tireless work of the local intelligence society, including Grigol Wolskiy, Davit Kldiashvili, Ivane Meskhi and others, the Georgians really won the elections. On August 30, 1907, the enemies of the country killed Ilia. The museum preserves the artist V. Gulisashvili Painting | “Tsitsamuri Tragedy” and Ilia “Mask” - author Iakob Nikoladze. Ilia’s death was a national tragedy. Today, the Ilia Museum continues the tradition of developing the Ilia educational direction. Ilia Museum has become an educational hub, where daily educational programs are held for school children, public lectures for students, and a readers’ club is functioning. Ilia Chavchavadze Museum is distinguished by special hospitality and is always ready to offer unforgettable excursions to visitors.

3. HISTORICAL AND MODERN ARCHITECTURE Batumi is one of the oldest cities in Georgia founded as before the Common Era. The initial settlement “Batus” is mentioned in sources from the 4th century BCE. The city’s unique history has contributed to the city’s vast architectural diversity. In the 19th century, during the “Porto Franco” period, European architects completed a number of interesting architectural projects. 2. THE CULTURE OF GEORGIAN SUPRA AND TRADITION OF TAMADA The Georgian Supra (a traditional feast) has no equivalent around the world. The culture of toasting does exist in many cultures; however, the Georgian “Tamada” or toastmaster has no parallel. The role of the Tamada is to lead the Supra. The Tamada is considered to be the most honorable member of a traditional Georgian Supra. The ideal Tamada is well educated, has extensive knowledge of Georgia’s history and culture, is eloquent, is sociable, has a good sense of humor and has musical ability. The Tamada should be able to lead a series of toasts on a variety of topics. He should also be able to entertain guests with poems, songs and interesting stories. The Georgian Supra is a fundamental element of Georgian identity, which is why the tradition has been preserved to this very day. In total, there are approximately 300 different toasts, some of which are obligatory for each Supra, regardless of its duration.

10 PLACES TO VISIT IN GEORGIA THIS SPRING & SUMMER Don’t tell us that you thought that Spring and summer in Georgia is seaside vacation only! Yes, you can have pretty much fun in Batumi, swimming, dancing and tasting awesome local food. You can relax in Gonio, Kvariati, Chakvi and Kobuleti, a bit far from loud music and discos. Beaches of Ureki can improve your health with their magnetic sands. But no, no, it is still too few! Here you have some tips how to make your spring and summer really incredible. Just travel to these places, enjoy the diversity of nature and store great memories in your mind. 1- Martvili Canyon (Samegrelo) Located at river Abasha, this canyon is a great place for those who are tired of heat. Take a boat trip, swim in transparent water between small cliffs or take a bath in waterfalls, look how beautiful are rays of light falling from above. The closest town is Martvili. You can also see Martvili monastery on the way to or from canyon. 2- Prometheus Cave (Imereti) Another place to escape from summer heat. Discovered in 1984, now this cave offers a 1 km long walking route through colourful caverns and a boat trip through an underground lake. It is even possible to get married in one of the halls!
54 AJARA Life Magazine
The closest town to Prometheus cave is Tskaltubo. Take into consideration that the cave is closed on Mondays! 3- Shatili (Mtskheta-Mtianeti) A small village in North-Eastern Georgia, Shatili amazes with it architecture: the houses are situated on the cliffs, as birds’ nests. Mountainous landscapes there are simply breathtaking! You can go there from Tbilisi with a minibus or taxi. On your way, make a photo stop near Zhinvali reservoir. 4- Uplistsikhe (Shida Kartli) In this cave town not far from Gori and Tbilisi you can see how people have lived here several thousand years ago. Stone hewn streets and around 150 caves for different purposes (residential, ritual) remained till our days. 5- Okatse Canyon (Imereti) Spectacular views and well maintained routes will make you enjoy your hike. In 4 km from canyon, there is also waterfall Kinchkha, one of the tallest and beautiful waterfalls of Georgia. You can definitely see it all in one day! The closest city to the canyon is Kutaisi. You can take a minibus to village Gordi, and from there reach the visitor center of Okatse on foot.
Most resorts in Georgia during Spring & summers are generally packed with tourists. Be warned however, that coastal areas will be awkwardly humid for those not used to tropical climates.

10 PLACES TO VISIT IN GEORGIA THIS SPRING & SUMMER
6- Vardzia (Samtskhe-Javakheti) Imagine: all this complicated system of caves has been established in the XII century (around 900 years ago!), used to be inhabited by around 30.000 people, and the whole town actually belonged to glorious Queen Tamar. Now you can see her face at well preserved fresco in a monastery which is maintained by several monks. The closest town is Akhaltsikhe. On your way to Vardzia you can also see Rabati fortress, which has been recently renovated, and Khertvisi fortress, which is well preserved. Make sure you are not planning your trip on Monday, because both Vardzia and Rabati are closed! 7- Kintrishi Protected Areas (Ajara) Located near Kobuleti, this protected area offers you several beautiful trails, where you can discover typical Ajarian arch bridges, waterfalls and enjoy the coolness of forest. Very nice idea for a day trip, if you are somewhere in Ajara and want to see more than beaches.
8- Kakhetian wine towns The whole region of Kakheti is famous for its wineries. If you are confused and don’t know where to go, we’d recommend you to visit at least one or two of those sites: Telavi with its medieval fortress and 900-yearold sycamore, Ikalto Academy – alma mater of Shota Rustaveli, Alaverdi monastery and its wine cellar, Tsinandali and house-museum of Georgian poet Alexander Chavchavadze (wine cellar is still in the mansion!), Kvareli and wine tunnel there, or Sighnaghi, city of love, which is famous not just for wine, but also for well preserved city walls and monastery Bodbe.

9- Mestia and Ushguli (Svaneti) Svaneti is one of the most beautiful regions in Georgia. You will be fascinated by Caucasus peaks (the highest peak in Georgia, Shkhara, is there with its 5193 m of awesomeness). Mestia has recently become a good destination for skiers, but in summer it all looks very attractive for hikers, trekkers, campers and those who want to escape from any rush. Ushguli is considered to be one of highest constantly inhabited settlements in Europe. It amazes with its authenticity, and is actually reachable for tourists just during several month per year, so hurry up to visit it this summer! Waterfalls, glaciers, medieval towers in each household (towers of Upper Svaneti are under UNESCO protection, by the way) – does it sound like an interesting place to go? 10- Borjomi Yes, of course, we all know that you’ve heard of Borjomi water. Maybe it even saved you after a night out. But Borjomi water from a natural spring is something different (and also healing, no doubts). You can have a nice walk through Mineral water park, or hike in Borjomi-Kharagauli National Park (there are trails for one day trip and for several days as well). SPA-treatment in one of hotels can also be one of the greatest things to try this summer. Give your body and soul a break: bring them to Borjomi!
Here you have some tips how to make your spring and summer really incredible. Just travel to these places, enjoy the diversity of nature and store great memories in your mind.

AKHALTSIKHE ‘NEW CASTLE’ IN GEORGIAN Akhaltsikhe is a town in Southern Georgia, founded in Middle Ages. Its name means “a new fortress”, because the town’s fortress used to be the most important landmark of the region. In 1579 it was a center of a region of Ottoman Empire, then, during Russian – Turkish war in 1828 – 1829, it was brought back to Georgia, which used to be a part of Russian Empire.
part of Rabati includes touristic objects as hotels, cafes, restaurants, an information center, and even a marriage hall. It is a very beautiful place for a wedding ceremony and a romantic photo shooting, indeed!
Now, the huge freshly renovated fortress of Rabati remains the main landmark of Akhaltsikhe. Its upper part includes the castle of Jakeli family, where the Museum of Samtskhe-Javakheti region is situated; there are also an Akhmediye Mosque, an orthodox church, an amphitheatre and a citadel. The other
If we talk about important landmarks of SamtskheJavakheti region, we can’t avoid mentioning Vardzia, an impressive cave town founded by King George III in the XII century. During its golden time it accommodated around 50.000 people. The infrastructure included living quarters, wine

cellars, religious places like churches or monasteries, and even a library. There was even a sewerage system in the town! Hard to believe, that already in XII century far in the mountains people could live in such a developed town hewn in rocks… That’s why you have to go to Vardzia to see it with your own eyes!

Welcome To
Mtskheta

“
Mtskheta is a UNESCO World Heritage Site. It has been inhabited since before 1,000 BC and was once the capital of the early Kingdom of Iberia (today’s Eastern Georgia).
Just 20 km from Tbilisi, at the confluence of the Mtkvari and Aragvi rivers, the city is located on an ancient trade route. Archaeologists have unearthed evidence of Mtskheta’s status as a major trading post. Glass perfume bottles, Greek and Aramaic writings, pottery, metalwork and jewelry have all been unearthed in abundance here, and many examples are on show in the town’s museum. The ancient geographer Strabo described Mtskheta as a highly developed city with a water supply system, markets and stone houses. Mtskheta was also the religious centre of the country, with a number of major shrines to Georgia’s pagan pantheon; these would later be replaced by churches when St. Nino converted the country to Christianity in around 337 AD. Although the capital was moved to the more easily defended Tbilisi at the beginning of the VI century, Mtskheta continued to be the coronation and burial place of Georgian kings, and the seat of the Patriarch, who is also known as the Bishop of Mtskheta. Today, the lovely old town has a laid back, village feel, especially compared to the more hectic pace of Tbilisi. - See more at: http://georgia.travel/en/ mtskheta#sthash.G435bsO2.dpuf

Here, Chef Elene shares her recipe for Dolma.
DOLMA ტოლმა
Dolma (Georgian: ტოლმა), known as Dolma in Armenia, Azerbaijan and Turkey, is a popular meal in Georgia and many other countries and there are many variations. It usually describes a filled, hollowed-out vegetable or a filling wrapped in a leaf. Fillings can include meat and vegetables.
78 AJARA Life Magazine
In Georgia, fillings wrapped in cabbage or vine leaves and stuffed peppers are very popular. In this recipe we will show how to make a meat and rice filled tolma wrapped in a vine leaf, served with a matsoni, garlic and cinnamon dip/sauce.
So, prepare your apron and kitchen tools and here we go: TOLMA ( DOLMA ) – STUFFED VINE LEAVES Ingredients (5-6 servings): For the wrapping: up to 60 Vine leaves (new leaves will be more tender). half Kg of pork/beef mix mincemeat, 120 grams of rice, 1 tsp of red pepper, half tsp of dried coriander, salt (quantity dependent on personal preference), 4 cloves of garlic, 2 white onions. finely chopped basil, parsley and coriander is also used.
Instructions Wash the leaves in cold water and add (individually) to a pot of salted, boiling water. Arrange the leaves so that they lay open and flat in the pot. Boil for 3-4 minutes. When the leaves have boiled, pour the whole pot (water and leaves) into a sink full of cold water and let the leaves cool. It is not necessary to cook the rice at this stage but we prefer to parboil it before adding it to the tolma filling. After parboiling, pour the rice into a sieve and pour cold water onto it to prevent it sticking. Add the parboiled rice, together with the mincemeat, to a bowl. We used a meat grinder to add crushed garlic and onions. Add 1 tsp of red pepper, half tsp of dried coriander and salt (quantity dependent on personal preference). Mix the ingredients. To make an individual tolma, take a small amount of the filling and mold it by hand until it is oblong shape (5-6 cm long). The aim is to create a bite sized tolma. Carefully place a wet vine leaf on a flat surface (we used a large wooden chopping board) and place the molded filling at the base of the leaf. Wrap the sides of the leaf over the mixture (see picture below). Fold the base of the leaf over and repeat until you have completely wrapped the filling (see picture below). Placed the wrapped filling on a clean surface. We stack ours as it makes them easier to pick up. When all of the tolma have been made, place them in layers in a deep pot. Ensure that they are placed close to each other. Cover them with a plate and weigh the plate down with a suitable heavy object. Pour slightly salted, boiled water into the pot up to but not covering the plate. Cover the pot and cook the tolma on a lowmedium heat for 30-35 minutes. serving Dolma with Matsoni, garlic and cinnamon dip/sauce.
