Ajara Life magazine has visited Tinatin Zoidze, the Head of the Department of Tourism and Resorts of Ajara, for the reason to find out how the major summer vacation destination is quickly turning into the ‘Four-Seasons Vacation Spot’ for every category of tourists. Dear Mrs. Tinatin Zoidze, first of all, thank you very much for receiving us to interview you and know more from you also as a local resident of Ajara. Seasonal tourism always seemed to be a trouble, which was affecting the local business sector. However, today we already know, that it is about to change. The whole region is to receive the local and international visitors all year round, offering them lots of new and exciting touristic products. Could you tell us, what are the new things, that Ajara offers its visitors during this autumn season? That is true, that in the past, the Ajara region of Georgia, mainly had been perceived as a summer vacation destination, but today it is changing. At the Department

of Tourism & Resorts of Ajara, we have developed multiple exciting touristic products, which can satisfy the demands of all types of travelers. The branding of our region by “Colors of Ajara” is focused on a variety of activities, that exceeds the traditional swim-sunbathing vacation approach. Regarding the Autumn season, I would like to share the news with you, that there has been created a new adventure hiking route in the village of Kapnistavi. The village of Kapnistavi is located 26 kilometers away from the Black Sea city of Batumi. It is also known for its waterfalls, an open-air museum, old mills and beautiful hiking trails in nature. Tourists visiting the village can get acquainted with the local customs and traditions in the museum, which had been built by the locals. There is a family wine cellar, where visitors can taste local wines and dishes. This is a unique experience, a real authentic everyday lifestyle, that the visitors won’t be able to see or taste anywhere else.

We regularly organize several types of service improvement trainings in different parts of the whole region. We train new guides, guesthouse owners, tourist agents and some other representatives working towards tourism-related directions. 14 AJARA Life Magazine


During this winter season, Georgian and foreign ski lovers, snowboarders, snow activities enthusiasts will be able to hit the slopes in the high mountains of Ajara called Goderdzi Ski Resort.

Apart from that, Ajara is home to three National Parks out of four protected areas of Georgia, which recently have been granted the status of UNESCO as the ‘World Natural Heritage’. Mtirala National Park, Kintrishi and Kobuleti Protected Areas are very attractive in the Autumn Season due to their natural beauty and foliage. Also, these parks are great locations for watching the wild bird migration, called birdwatching, which is becoming highly popular among tourists. We have also created a special picnic zone at Jvarimindori, new hiking routes, and glamping areas. Tourists can experience the autumn harvests of grapes and citruses, tobacco gathering in the mountainous villages of Ajara, enjoy the local folk music and dance performances, meanwhile learn secret recipes of local cuisine.

What are the new tourist products being developed in the Mountainous part of Ajara? At the beginning of the next year, the mountainous part of Ajara will have three new touristic routes to be explored: 1. Chirukhi-Khikhani-Goderdzi route, 2. Goderdzi-Green Lake-Black Lake-Danisparauli route and Khulo-Tago-Skhalta route. There also has been developed a plan of the special trail to climb the Khikhani Fortress. Above mentioned routes will have family-guests houses, shelters and catering facilities. Individual tourist maps will also be prepared and tourists will be able to receive information at tourism information centers. An Alpine Garden located 1960 m above sea level, on the southern slopes of the Ajara-Imereti range, close to Goderdzi pass, has been opened. There, visitors will see a unique rock garden, subalpine characteristic plants and alpine zones. Goderdzi Alpine Garden includes 15 zones. Among them are lake and swamp zones, spring, picnic and beekeeping demonstration zones. Beekeeping is a special experience, due to reason, that it is the only place in the world, where wild beekeeping called “Jara” is being practiced, which also has been recognized by UNESCO. Along with the Goderdzi and Beshumi resorts, the Alpine Botanical Garden is one of the most interesting tourist destinations for travelers on the Chirukhi-KhikhaniGoderdzi tourist route. This site was once covered with a subalpine forest but today it is home to numerous

During the pandemic, we have created a special platform to support the guides. Our Department has a dedicated online platform for service development, where our training programs and materials are being published at www.serviceajara.ge. ecotypes. There is a very diverse Flora with six species of hardwood and 100 grass plants. How do you popularize Ajara in autumn and what are the new projects currently developing? Throughout the whole year, we have ongoing media campaigns for stimulating tourism and popularizing four seasons of Ajara. We have several evolving touristic products under development and the establishment of small infrastructure along the touristic routes.

I am delighted to share some of them with you: The Chirukhi touristic infrastructure project envisions the development of distinguished, characteristic and unique touristic products; The Tourism Product Development Agency of the Department of Tourism and Resorts of Ajara is working to create a project plan about developing the touristic product on a Laz theme in the area of Gonio-Kvariati-Sarpi; There is also an ongoing laboratory study of the buried forests and the nearby mud baths close to Khulo municipality Goderdzi Pass and the adjacent territories to the village of Beshumi; Infrastructure project for developing the Chvana-Gorge touristic plan is in progress as well; The Ministry of Finance and Economy of Ajara is carrying out a work to build a visitor center as part of Machakhela-Gorge (Khelvachauri municipality) Ethno-village and to establish the infrastructure envisioned by the Zemo Chkhutuneti project; An updated version of Batumi Card, offers discounts from 15-50% over 60 touristic facilities.


It is already known, that there is a new project called “Get to know Ajara with Alphabet”, could you tell us more about it? We have recently launched a creative autumn campaign “Get to know Ajara with Alphabet” in order to popularize the region’s tourist products throughout the Georgian alphabet. Videos prepared on all Georgian Alphabetical 33 letters allow visitors to mark and visit desired tourist destinations. Beautiful videos display 33 main tourist attractions, products, sights and activities of Ajara in accordance with the Georgian alphabetic order. A-Alphabet tower, B-Botanical Garden, G-Gonio Fortress, K-Khulo, and so on. This is a part of the full list of tourist attractions, that the small videos have been created for promotional purposes. These videos are currently available on the region’s main touristic portal www.visitbatumi.com. A specially created Mobile App including a tourist map helps travelers allocate these places and even win special prizes if they manage to cover all 33 attractions. The Alphabet project is a new exciting touristic product to rediscover Ajara, even the locals will be amazing by exploring hidden areas, that this region has to offer to all visitors. How do you manage the improvement of service in the region? We regularly organize several types of service improvement trainings in different parts of the whole region. We also support guides with technical equipments such as binoculars for birdwatching and audio materials for sightseeings. During the pandemic, we have created a special platform to support the guides. Our Department has a dedicated online platform for service development, where our training programs and materials are being published at

www.serviceajara.ge. Through this platform, we cover the entire Ajara region with video and online lessons, where tourism representatives are able to register and attend several types of service development trainings. The online lessons approach has been very helpful amid the pandemic reality. The last question, what Ajara has to offer for the winter season? During this winter season, Georgian and foreign ski lovers, snowboarders, snow activities enthusiasts will be able to hit the slopes in the high mountains of Ajara called Goderdzi Ski Resort. There is a newly opened 5-star hotel ‘Ambassadori - Goderdzi’, the first luxury hotel in the center of Goderdzi Ski Resort. Its great location next to the ski slopes and hiking trails provides easy ski-to-door access, while the terrace offers stunning panoramic views of the surrounded area. The hotel features 122 contemporary rooms, a full-service spa, pool, sauna, nightclub, playground, ski shop and an ice rink. Each of its rooms includes an individual balcony with beautiful views of the snow-capped Caucasus Mountains and ski slopes. Dining facilities include a restaurant and a lounge bar serving Georgian and European specialties. There is everything, that a demanded traveler can request. We look forward to hosting many visitors to Ajara both local and foreign travelers. Note: The Marketing and International Relations services of the Department of Tourism and Resorts of Ajara continue to work with partners from target countries. The popular European travel platform European Best Destinations named Batumi in the Top-10 of Europe’s safest tourist destinations. Tbilisi, Corfu, Zagreb, Warsaw, Vienna, Vilnius, Gdansk, Riga and others are also named among the Top-20 safest travel destinations together with Batumi. Close by the resort, there is a favourite place of hikers – Green Lake. SKIING & SNOWBOARDING BAKURIANI Located at an altitude of 1,700 m. in the Borjomi region of Georgia, Bakuriani is nestled in the shadows of the breathtaking Caucasus Mountains, which is only a three-hour drive from Tbilisi. Bakuriani perched high on a sunny plateau in the center of Caucasus Mountains, promises to deliver an unique charm and essential skiing experience for both professionals and amateurs as well. Home to dozens of alpine slopes and cross-country trails, Bakuriani offers some of the most spectacular skiing and snowboarding in Europe. Originally developed as an Olympic training facility, unsurprisingly, Bakuriani is Georgia’s most popular and prominent winter sports and recreation destination. Enjoy the downhill ski runs, cross-country trails, horseback tours, sledding or simply take long walks through beautiful snowy forests. Kokhtagora Kokhtagora is located at an altitude of 2,155 m. and is served by a two-seat chair lift and two drag lifts- the so called Bugels. Red and black runs are located here and descend from the top of the peak down to the mid-level cable car, where blue runs and beginners nursery slopes can be found.

Kokhta 2 (Tatra) The mountain of Kokhta 2 (2,255 meters high) is known in Bakuriani as Tatra. The red and blue pistes here run for 1.8 km. 25 meter Twenty-five is an area of easy skiing located on the Circular, near the old 25-meter ski-jump which gives the area its name. Here beginners and children can learn to ski in a safe and pleasant environment, surrounded by the mighty Caucasus Mountains. You can also toboggan and sledge here, or take a horse drawn sleigh-ride through the ancient forests.


GUDAURI Located in the very heart of the Caucasus Mountains, Gudauri is surrounded by some of the Europe’s most dramatic peaks. While Gudauri is unrivaled in the diversity and challenges of its terrain, it is a top destination to unravel your skiing hidden talents. Gudauri is a resort for all seasons. Only a short drive from the Capital city of Tbilisi and even a shorter helicopter flight will eventually let you discover the magic of Georgian picturesque mountains. Gudauri is Georgia’s year-round playground.

During the ski season, which usually starts from mid-December lasting up to mid-April, it offers a full scope of services for all levels of skiers and snowboarders. So feel the sun on your face and the powder under your feet for the region can lay claim to 19 kms of ski pistes. WINTER IN GEORGIA Didveli Didveli, at one of Europe’s highest mountains, Mount Sakvelo, holds one on the most picturesque views. From here you can catch a gondola to the slopes of Mount Sakvelo, and ski down on a range of blue and red routes. The longest piste here stretches to around 4 km. Advanced skiers can continue further up the mountain by catching a chairlift at the top of the gondola to almost the very top of Mt Sakvelo itself. Here, you can enjoy stretching your ski-legs on very steep and difficult red and black runs. Skiing With dozens of slopes, Gudauri has pistes for all levels of skiers and snowboarders. IMMORTALITY FROM ART MUSEUM

Amazing white architecture of city Batumi has a treasure in form of an art museum with unique collections. This monumental building is distinguished by its functional structure and aesthetic appearance, characterized by sophisticated architecture and simplicity of the decor, building project of this Art Museum(1949) belongs to famous architect Kakha Javakhishvili. Back in 1955-1990’s current building functioned as the Museum of Revolution where various significant events of that era were held. In 1998 the building was turned into an Art Museum and was enriched by beautiful collections. The building itself is a work of art, monumental with cubic structure which strikes the passing by viewers with its perfection. The facades are paved with half-columns along the entire height. Among them, at the lower part of the building are incredible rectangular windows carved with semicircular headers. The entrance is arranged in a rectangular sloping portico of the plan with incredible decor. There is a carved portal in the center and a relife fries in

the upper part of the portico. The building is paved with concrete blocks, the decor is from white eclair stone, while the elegant plinth has been created with gray granite. The interior of the museum is a single large space. In the center there is a parade of staircase, which is illuminated by an ornamental stained glass ceiling. The interior is decorated on all four sides with open galleries decorated with arches on the I-st floor and a series of columns on the II-nd floor.The exterior and interior decorations of the building are inspired by the ornamental decoration motifs of medieval Georgian architecture. The facade is decorated with a relief frieze “Demonstration of Batumi Workers' ' (1951-52) created by sculptor Tamar Abakelia, one of the most prominent representatives of Georgian fine arts, this artwork turned out to be her last monumental creation. “Batumi Workers’ Demonstration” is dedicated to the turbulent past of the city, which reflects the events of March 1902. It is that historical moment that unfolds in a peculiar sequence on frieze.


We would like to focus on one of the most valuable exhibits- its Niko Pirosmani’s “Woman milking a Cow” (cardboard, oil 71x105), which was donated by the government and added ondisplay in the museum in 1998.

The art museum preserves 475 exhibits, out of which 353 are on display as permanent exhibitions, 78 from reserves and 44 temporary on display from the National Museum. We would like to focus on one of the most valuable exhibits- its Niko Pirosmani’s “Woman milking a Cow” (cardboard, oil 71x105), which was donated by the government and added on display in the museum in 1998. …..True artistic epos, amazing ability to perceive and generalize the essence, epic monumentality of the works, imprinted with the sadness and inner tragedy of the epoch puts Niko Pirosmanashvili in the ranks of genius artists of the XX century.

Niko Pirosmani was born in Kakheti, in the village of Mirzaani. He became an orphan at an early age and had to move to the capital Tiflis in the 1870s. He has not received any specific art education. At some point he has been doing hard labor at railway station, was involved in some commercial affairs such as painting entrance sign boards for local wine cellars and Dukhans (local type of pubs), which particularly explains the themes of his works: the theme of wine feasts, Tbilisi personages, specific naturmorts.Though Pirosmani art also covered specific portraits and he was the only artist of that time that painted animalistic themes. THE ART MUSEUM PRESERVES 475 EXHIBITS, OUT OF WHICH 353 ARE ON DISPLAY AS PERMANENT EXHIBITIONS, 78 FROM RESERVES AND 44 TEMPORARY ON DISPLAY FROM THE NATIONAL MUSEUM. In 1912 his art was “discovered” by avant-garde artists and collectors brothers Ilia and Kyril Zdanevich and Michael Le-Dantium. Avant-garde circles of Georgian and Russian high society got interested in Pirosmani art and started collecting and popularizing his works. Unfortunately Niko Pirosmani has passed away in poverty in 1918 in one of the dwellers of old town Tbilisi.

Despite the activity of young artists' associations of that period to recognize Pirosmani’s value during his life, Niko’s works received worldwide recognition and value only after his death. The genre scene depicting the nature and life of the village is brightly depicted in one of the famous works of Niko Pirosmani “ Woman milking a cow”, which from an artistic point of view is considered as one of


the most valuable exhibits of the museum. The work shows characteristic features of Pirosmani’s handwriting: iconic composition and conditionality of the transmission of space, prontality of the figures, strict and intense coloring. This painting makes us feel the immortality of art! In 1998 Ajara Autonomous republic government also handed to the museum two more significant paintings such as a painting by Elene Akhvlediani, People’s Artist of Georgia, Laureate of Rustaveli Prize - painting “The view from the balcony” (canvas/ oil. 47x51) and painting “Winter in Telavi” (canvas/oil. 79x60) 1959. Elena Akhvlediani studied at the Tbilisi Academy of Arts in 1922, was a student of Gigo Gabashvili, the founder of the Georgian “realistic painting” genre. In 1922-27 she continued her studies at Académie Colarossi in Paris, where she also participated in exhibitions at “Independent Salons''. She was incredibly talented and worked not only as an artist but also in graphics,theater and film painting. Elene Akhvlediani’s artistic beliefs are fully reflected in her landscape painting. She is a prominent representative of the “mood landscape” genre. Elene Akhvlediani’s intimate landscapes are characterized by a diversity of aspects of perception of nature, poetry, and subtle colors.

THE INTERIOR OF THE MUSEUM IS A SINGLE LARGE SPACE. IN THE CENTER THERE IS A PARADE OF STAIRCASE, WHICH IS ILLUMINATED BY AN ORNAMENTAL STAINED GLASS CEILING.

The landscape painting “The view from the balcony” is depicted as a view from above. Nature-infinite mountains and valleys,the roofs of adjacent houses are an expression of a romantic mood and are imbued with the inspiration of the artist. The artist was attracted by the colorful places of Georgia, the views of historical cities at different times of the year. Landscape painting “Winter in Telavi” is a cycle of winter landscapes, which are characterized by special animal paintings. Among exhibits and paintings by well-known Georgian artists (Niko Pirosmani, D. Kakabadze,L. Gudiashvili, E. Akhvlediani, the museum offers a collection of marble monuments of foreign artists such as S. Bakalovich, Zomer, A. Terni, N. Ignatov, A. Zankovski, ceramics, wood, glass, stamping, tapestry of different kinds, and sculptures by E. Fantareli and many more interesting exhibits.

Enjoy the downhill ski runs, cross-country trails, horseback tours, sledding or simply take long walks through beautiful snowy forests. There are several main trails in Bakuriani: Kokhta 2 (2,255 m high) is known as Tatra. Twenty-five is an area of easy skiing located on the Circular, near the old 25 meter ski-jump which gives the area its name. Here beginners and children can learn to ski in a safe and pleasant environment, surrounded by the might Caucasus mountains. You can also toboggan and sledge here, or take a horse drawn sleigh- ride through the ancient forests.


Didveli has one on the most amazing trails. From here you can catch a gondola to the slopes of Mt. Sakvelo, and ski a range of blue and red routes. The longest piste is around 4 km long. Advanced skiers can continue further up the mountain by catching a chairlift at the top of the gondola to almost the very top of Mt. Sakvelo itself. Here, you can enjoy stretching your ski-legs on very steep and difficult red and black runs. Other activities: Bakuriani’s cross-country trails attract experts as well as beginners. Two of the most challenging runs begin on Mt. Kokhta (2,155 m) and Mt. Didveli.

If skating is your winter pastime, Bakuriani offers plenty of opportunities, among them at Bakuriani Park and the rink at the Hotel Edem.

The hills and valleys around Bakuriani are ideal for snowmobiling, but if you prefer to get around the old-fashioned way, horse- drawn sleighs are the traditional mode of winter transportation in Bakuriani, so for a romantic treat, take a romantic sleigh-ride around the picturesque village. Gudauri is the best ski resort in Georgia with well-developed infrastructure, the greatest difference in altitude, and unlimited possibilities for freeride and back country (ski touring).

The resort is the highest settlement on the Georgian Military Road (the old name “Heavenly Gorge”) at the altitude of 2000 m. An equally pleasant place for walking is the “square of Europe”, which is decorated with singing fountains and an imposing statue of “Medea with the Golden Fleece”. It is on these lands, according to legend, Jason extracted the Golden Fleece. Batumi is famous for it and its surprisingly beautiful architectural sights.

BATUMI PUPPET AND YOUTH PROFESSIONAL STATE THEATRE Since January 14, 2016, Batumi Puppet and Youth Theatre has resumed its creative activities in the reconstructed building. With supplementary floor and a summer hall added to the main structure, this historic building bears the status of the monument of cultural heritage. COLONNADES The idea to construct Colonnades in Batumi belongs to the local doctor Ivane Mchedlidze. He brought the project with him in 1933-1934 from a professional trip to Sorrento city, Italy. The project was completed under the supervision of Bogdan Kirakosyan, an architect from Batumi. This structure used to serve as a gate to the seashore which used to be closer to it than today. Years later, the shoreline receded and the sea moved back further from the construction. Despite this, colonnades remain one of Batumi’s most frequented landmarks and a popular meeting place in the city. You will meet similar colonnades at the entrance of Batumi Central Park.


BATUMI ARCHAEOLOGICAL MUSEUM

ADJARA MUSEUM OF ARTS

If historical artefacts are things of your interest that Batumi Archaeological Museum is for you. There you can examine ancient cultural monuments that were unearthed on the territory of Adjara. In 2007, a permanent popular science exhibition was opened. It introduces visitors to the ancient history epochs. Since 1998, the joint expedition of Batumi Archaeological Museum and Oxford University Ashmolean Museum enriched the museum with new artefacts.

Niko Pirosmani, Lado Gudiashvili, Gigo Gabashvili, Davit Kakabazdze, Elene Akhvlediani, Merab Berdzenishvili, Rusudan Petviashvili – these names are only a small part of world-renowned Georgian painters whose works are presented in Adjara Museum of Arts. The museum building itself is a work of art and one of Batumi’s historical buildings on top of it all. Ajara Museum of Arts hosts personal, group and retrospective exhibitions as well as music and theatrical performances.

THE STATUE OF MEDEA On the Europe Square stands the statue of Medea, princess of Colchis. Created by Davit Khmaladze, the monument symbolizes the wealth and strength of the country. According to antique mythology the youngest daughter of Aeets the legendary king of Colchis fell in love with the leader of Argonauts’ crew, Jason, and helped him to steal the golden fleece. Medea had in-depth knowledge of herbs and possessed healing gifts. As the legend has it, she could rejuvenate a person which is why Medea was perceived as a goddess and temples were dedicated to her. The term ‘Medicine’ originates from the name – Medea.

BATUMI ILIA CHAVCHAVADZE STATE THEATRE OF DRAMA Batumi Theatre of Drama which opened its doors in 1952 (Architect I. Teplitski) was named after Ilia Chavchavadze seven years later. The first theatre performance ever staged in Batumi dates back to 1879 when Zurab Antonov’s play “Has the Uncle Married?’ was performed by amateur stage actors. The venture was initiated by Batumi Policemeister’s wife, Ketevan Zhuruli. Like in other theatres of Georgia, plays were held for charity here. Those engaged in the drama art moved from building to building but hardly ever lacked the attention of the audience. AJARA Life Magazine 51

GONIO-APSAROS FORTRESS-MUSEUM KHARITON AKHVLEDIANI STATE MUSEUM 12 km south to Batumi city, on the left embankment of river Chorokhi, Gonio-Apsaros fortress is located which dates to the I century A.D. One of the oldest settlements in Georgia existed around this fortress. Gonio-Apsaros fortress had unique strategic function and protected entrances to Chorokhi and Acharistskali river valleys that connected South-West Georgia to the Black Sea coast. Due to its favourable location, Gonio fortress became the citadel of Roman Empire, later of Byzantium and then the Ottoman stronghold in Eastern Black Sea region. Gonio-Apsaros history is closely linked to the myth of Argonauts. It is widely known that the King Aeetes buried his son Apsaros there after he was killed by the escapee Jason. According to the legend, one of Christs 12 disciples-Matatha is buried there as well.

Khariton Akhvlediani Adjara State Museum is one of the oldest museums in Georgia. It was founded in 1908 after Batumi city council approved the initiative of then Pushkin school teachers and decided to open a museum for children. The renowned scientist and public figure, Khariton Akhvlediani served as the Head of the museum in 1938-1989. This interesting museum invites visitors to three places at once: Mehmed Abashidze museum-He was a respected persona in Georgia; Personal items, documents and photos of t. Ilia Chavchavadze, Georgia’s greatest public figure; and a science library where a rich fund of old books is represented.


THE NOBEL BROTHERS BATUMI TECHNOLOGICAL MUSEUM This museum is set up in the same building where Nobel brothers’ crude oil refinery partnership ‘Batumi Kantora’ was located around a century ago. Up to 2,000 museum exhibits depict the examples of technological innovation introduced by Nobel brothers, Rothschilds and Mantashev in Batumi, at the end of XIX and in the beginning of XX centuries. These technological artefacts mainly represent tea, tobacco and printing development dynamics in Georgia. At that time, Nobel brothers also introduced latest technologies for oil transit in Batumi.

ETHNOGRAPHIC MUSEUM ‘BORJGALO’

ILIA CHAVCHAVADZE MUSEUM

Folk crafts and lifestyle museum which was created and founded by the native of upper Adjara, Kemal Turmanidze, is today the ethnographic museum which covers 3,000 m2. Once you get to the museum, you plunge into the old Georgian traditions.

Another museum worth your visit is the museum of Ilia Chavchavadze, who was one of the most distinguished sons of Georgian nation, later sanctified and declared a saint by the Georgian Orthodox Church.

Pottery, metal, stone and wood processing, beekeeping, fruit farming, viticulture and agriculture is displayed at the level of the work process. Mannequins dressed in traditional attire, props, folk music – all this paraphernalia will animate your imagination. You can find residential, worship and agricultural buildings here too, both in the form of small models and in life-size.

The writer, the publicist, the philanthropist, the public figure and the leader of Georgian national-liberation movement was shot and killed in 1907 by the opponents of the liberation of Georgia. The museum was opened in Batumi in 2001 where you can examine personal belongings of Ilia Chavchavadze and his Adjarian peers. There are 289 exhibits kept in the museum, including a table, a closet, small and big samovars (tea-kettles), a sewing machine belonging to Ilia’s wife, Olga Guramishvili and many other items. The export of fresh and mineral water reached 137 million USD, which is 17% of total agricultural export of Georgia. INVESTMENT OPPORTUNITIES IN GEORGIA Greenhouses Average farm size in Georgia is 1.55 ha and most of local farmers produce products on open-fields, which causes seasonality supply. Most agriculture products are cheap during harvesting season and quite expensive during non-harvesting season. During non-harvesting season Georgia imports some main products from neighboring countries (mainly from Turkey), such as tomatoes, cucumbers, onions, garlics, potatoes, egg-plants, belly peppers etc. Additionally, demand for different greens and berries (blueberries, raspberries etc.), which aren’t quite traditional and Georgia produces only small quantities, is increasing yearly. Most local producers are plagued by prevalent inefficiencies in their production, caused by lack of know-how, adequate technology and capital. Apart from growing internal market, Georgia has an opportunity to export fresh vegetables/fruits to Middle East and Europe. Therefore there is a clear need for new modern greenhouses, which reduce dependence on

seasonality and provide products during the whole year. Meat and Poultry There are many small farms in Georgia, which are managed by individual households. Because of the lack of modern and efficient approaches in breeding, species selection, resource management and in other factors, many of them just remain small household with small scale production. The demand on meat consumption in country has an increasing trend. Around 25% of beef, 50% of pork and 80% of poultry consumed in Georgia is an imported product. There is a need and capacity to build modern farms, to supply local market in the first stage and to distribute through the region as a next step. Farming in Georgia has many advantages, e.g. ecological clean environment, cheap land and labor, easy access to different resources and so on. Achma

Elene Kakabadze Chef Elene has 7-years experience as a cook. She has worked not only for famous local hotels and cafes like Litera, Kikliko and Hotel Terrace, but also for international brands as well, like Biltmore and Ladurée. Elene currently works as the Executive Chef for Ruebush Hospitality Group, which operates cafes and bars such as Blue Elephant Café and Popeye Craft Bar in Batumi. Achma is a type of Khachapuri, Georgian cheese bread, from Adjara and Abkhazia, the western regions of Georgia. Achma is often compared to lasagna for its texture and appearance. This kind of Georgian cheese bread has both a crisp top crust and tender cheesy, buttery layers inside.

Ajarian halva Adjarian halva is typical Adjarian staple that differs from the Turkish one. It melts in one’s mouth and it is extremely delicious and tender. So try it once you have a chance and judge for yourself.


Sinori Sinori is a very rich Ajarian dish prepared using lavash that is combined with Georgian cottage cheese and butter. This dish is largely unknown outside Ajara but is very popular in Georgia’s western seaside region. One will rarely come across it in Tbilisi or other parts of the country; so once you have a chance to visit Ajara, don’t forget to try this delicious dish. It is ideal to start your morning with.

Chirbuli The dish is made with eggs and a peculiar sauce combining walnuts and tomatoes. Such a mixture of flavors might sounds strange, but it is definitely worth tasting. Once you have a chance to visit Adjara, make sure to try this dish at any cost. Chirbuli is usually served as a breakfast meal. AJARA Life Magazine 71


Here, Chef Elene shares her recipe for Ojakhuri. Ojakhuri is a Georgian dish consisting of roasted meat (pork, chicken, lamb, or beef) and potatoes.

OJAKHURI with pork

The name of the dish means family meal in Georgian, so every family has their own recipe, variations, and they all use different seasonings for the roast.

The dish is usually garnished with slices of pickled vegetables and served with accompaniments such as tkemali or ajika sauces.


So, prepare your apron and kitchen tools and here we go: The generic name for meat and fried potatoes. Ojakhuri is a popular Georgian dish with roasted meat and potatoes. In translation from Georgian ‘Ojakhuri’ means a ‘family meal’.

Ingredients 500 grams of pork, 400 grams of potatoes, 3 medium sized onions, 2 tbs sour cream (or mayonnaise), 2 tbs white wine vinegar, 60 ml of white wine, 50 ml of oil, half tsp of powdered Berberis berries, 1 tbs tomato puree, quarter tsp of dried coriander, 4 dried bay leaves, a pinch of salt and a pinch of pepper.

Instructions Make a marinade: Do this at least 12 hours before cooking so that the meat becomes soft and full of flavor. Cut the pork into medium sized cubes – do not cut the fat off. Cut 2 onions into thin slices. Put the pork and onions into a bowl, thoroughly stir ingredients or use hands to mix. Add powdered Berberis, sour cream, tomato puree, coriander, bay leaves, 10 ml of white wine, 2 tbs white wine vinegar salt and pepper. Mix thoroughly and place bowl (covered) in the refrigerator. Leave for at least 12 hours. When the marinade is ready and you are ready to cook remove the marinade from the refrigerator and add to a pan. Do not remove bay leaves. There is no need to add oil as it will fry in its own fat. Fry at a low heat for 10 minutes then add 50 ml of white wine and 30 ml of water. Stir occasionally and then more frequently as the wine and water reduces. Peel and cut potatoes into small pieces. Put oil into another pan and add potatoes when the oil is hot. Fry at a high temperature for 10 minutes until the potatoes become crispy. When the meat looks like the meat in the picture above, fry for a final 3 minutes on a high heat and stir continuously. This will make the outside of the meat crispy but the inside will remain soft. Congratulations, you have made Ojakhuri. Remove bay leaves and serve with a garnish of one thinly sliced onion.
